goal to be Professor of Radiation and Oncology? Tell us about your journey.

DR. M: I wasn’t sure what I wanted

to do in medical school and, as often occurs, I changed my mind a few times depending on the attending physician who inspired me. The day I met Dr. Rodney Million on Court 9 of the 300 Club in 1977 changed my life! He was the Chief of Radiation Oncology at the University of Florida in Gainesville. Dr. Million was an outstanding clinician and very academically productive. I really liked taking care of cancer patients. I decided that I wanted to be like him. I met my wonderful wife Nancy when I was an intern and Nancy was a medical student in 1979. We did our residencies together, joined the faculty, and have been blessed to have been at UF ever since.

BUZZ: You were recognized at the Legacy of Leaders dinner and in

the Portrait of Leadership Gallery that was held at Ocean 60. What does being a “leader” mean to you?

DR. M: I was honored because I don’t think about being a leader. Leadership

Arts Unleashed Be On The Look Out For

Nicole Trimmer

Nicole Trimmer is an artist with an unapologetic vision. She aims to use her art to highlight the lighter side of life. She likes to create relatable pieces of art to be appreciated by her audience. Her gritty painting technique is balanced with eyecatching color combinations. Some of her more popular pieces show animals and their skeletal structures. “I like painting what you don’t get to see every day; what’s underneath.” As a young artist at St. Augustine High School, Nicole was inspired by artists who broke the mold of dreamy beach landscapes that were a popular subject given her surroundings. Derek Hess was a major inspiration of hers. He showed her that she didn’t have to paint like the other fine arts students. “Here was an artist that was doing something totally different,” says Nicole. Nicole’s family has always been supportive of her art. The night of her most recent art show opening at BREW in Five Points looked similar to a birthday party. Nicole was completely surrounded with family and friends that are proud of her amazing work. They aren’t the only ones – Nicole’s work flew off the walls at BREW. Born in Havana, Cuba, Paco moved to the U.S. and then attended the University of Salamanca in Spain. He finished his M.F.A. at Emporia State University in Kansas. Paco currently has work on display at The Art Center.

In “See Jane Sing,” Emmy and Golden Globe winner Jane Lynch takes audiences on a musical journey through a world of songs from Broadway to cabaret that delight the crowd. Not your typical Broadway narrative, Lynch, accompanied by a five-piece band, builds the evening around her musical chops and comedic wit and charm. BUZZ spoke to Lynch in March in the middle of her tour. BUZZ: What do you get out of a live performance vs. the iconic roles you’ve played on TV and in movies? JL: I started out in theatre and sketch comedy in front of an audience – the audience is part of the experience. The relationship is a very intimate relationship between the performers on stage and the people in the audience. That energy is exactly why I’m in this business. BUZZ: What advice would you give to someone trying to start a career in the industry? JL: I never started a career, I started doing what I loved. Keep your eyes and ears open for

opportunities that come, because sometimes you don’t see them right away, they have to slap you in the face for you to see them. It’s all about doing what you love and giving something a chance. BUZZ: Who is your personal inspiration? Who inspires you or motivates you? JL: I motivate me. I think looking at someone else’s path can limit you and get you frustrated with yourself. I will say, when I was growing up I was a big fan

of Carol Burnett’s. One of the things I loved about “The Carol Burnett Show” is that it was called “The Carol Burnett Show” but it was a true ensemble. She allowed everybody to shine. So, here I am, it’s called “See Jane Sing,” but I have these terrific people who are great in their own right - the band, Tim [Davis], and Kate [Flannery]. Players By The Sea Side-splitting comedy! Players by the Sea premieres a recent Broadway hit on the Main Stage. Players by the Sea is the first to bring the wildly funny 2013 Tony award-winning comedy “Vanya and Sonia and Masha and Spike” to local audiences. Its author, Christopher Durang, is famous for his absurdist farces and twisted comic takes on theatre classics. Here, he borrows characters and themes from Chekhov and gives them a modern American spin. The New York Times called it “a sunny play about gloomy people.” Mopey, middle-aged Vanya and Sonia are too busy nursing childhood grievances to bother growing up. They’re in for a rude awakening when their sister Masha, an aging screen diva, breezes in with her newest boy toy, Spike. She threatens to sell the family home in Buck County, Pennsylvania, out from under them. Masha ends up dressed like Snow White and starts losing the upper hand. You don’t need to know anything about Chekhov’s plays to enjoy the fast-paced comic mayhem. Directed by Jason Collins, the cast features Rob Banks as Vanya, Simone Aden-Reid as Sonia, and Hillary Hickam as Masha. Rakia May is the allseeing maid Cassandra and Robert Boaz is hunky Spike. Lovely next-door neighbor Nina, played by Jayme Hillyer, adds to the complications. Performances are April 10, 11, 16, 17, 18, 23, 24, 25 at 8 p.m. on the Main Stage. Theater in the River City By Tamara McClaran, Northeast Florida Theater Enthusiast “The Color Purple” at Stage Aurora The hit Broadway musical “The Color Purple” returns to Jacksonville’s Stage Aurora Theatrical Company in April. Based on the Pulitzer Prize-winning novel by Alice Walker and the popular motion picture, the musical tells the inspiring story of a woman named Celie who finds strength to triumph over adversity. Stage Aurora Executive Director/CEO Darryl Rueben Hall, who recently performed in “The Color Purple” at the Milwaukee Repertory Theatre, is directing. “The message of ‘The Color Purple’ is very powerful and enlightening; full of faith, hope and love, that out of such a dark circumstance comes the brightest of light,” Hall said. “The story connects two sisters who were torn apart but find their way back to each other and a better way of life.” It’s been nearly three years since Stage Aurora produced “The Color Purple.” Anthony Felton returns as musical director and Wilfred “Dubbie” Reddick and Hall are the choreographers. Drickus Horne and Kai Smith are assisting with vocals. The musical score features gospel, jazz, pop and the blues. “The cast is all local,” Hall said. “They are extremely talented and come from a variety of occupations, from hair stylists to teachers to stay-at-home mothers to students.” Elana Elmore and Felecia Ewing share the role of Celie. Kristal Stallings plays Nettie, Sam Brown is the Preacher and Tyrone Lennon plays Harpo. CATHEDRAL ARTS PROJECT ENRICHING LIVES THROUGH ART

The mission of the Cathedral Arts Project (CAP) is to enrich the quality of life in Northeast Florida through unleashing the creative spirit of young people. By providing access to instruction in the visual and performing arts, CAP empowers underserved, school-aged children to succeed in all areas of their lives. CAP annually serves more than 2,000 students twice-weekly during the school year, providing quality, standards-based instruction in dance, media arts, music, theatre and the visual arts at no charge to its students. In CAP’s rigorous and stimulating programs, students learn the various elements of an artistic form, participate in character-building exercises, and learn effective means of communication – transforming not only their academic and social performance, but also their overall lives. Results indicate CAP students outperform their peers at district and state levels on standardized tests, show radical improvement in a variety of social skills, earn higher grades, attend school more regularly, and advance to the next grade level. Cultural Fusion Celebrates 2015 as Year of the River The St. Johns River is a spectacular community resource that helps drive our economy, recreation, and tourism, and enriches our quality of life. Cultural Fusion is celebrating the St. Johns River as the “cultural current of our city” with an entire year of special programming. Cultural Fusion is dedicated to heightening expectations for valuing culture in our community while strengthening the impact of the member arts and culture institutions. Through collaboration, these organizations are creating unique events and programs to advance awareness of the importance of the St. Johns River. A FEW OF THE YEAR OF THE RIVER EVENTS IN THE COMING MONTHS: “Reflections: Artful Perspectives on the St. Johns River” continues as an exhibit at the Cummer Museum through October 18. The Art Center Studios and Gallery present a special Year of the River exhibit “Beneath the Sea, Under the River” through May 11. Earth Day Jacksonville will take place at the Jacksonville Landing Saturday, April 18, and the Jacksonville Zoo & Gardens will celebrate Earth Day with a “Party for the Planet” on April 25. “Music of Florida and the St. Johns River” with award-winning songwriter Al Poindexter will appear April 4 at the Mandarin Branch of the Jacksonville Public Library and April 11 at the Beaches Branch. Both performances are at 2 p.m. with additional performances throughout 2015. “City of Bridges,” a documentary that traces the growth that resulted from the construction of Jacksonville’s railroad and automobile bridges across the St. Johns River, will air on WJCT at 8 p.m. April 16. “Springs Eternal: Florida’s Fragile Fountains of Youth” opens at MOSH April 4 and is a 30-year retrospective exhibition of Florida nature photographer John Moran’s love affair with the springs of Florida. Jenny Adler’s “Illusions” exhibit continues through May 3 with a focus on the theme of illusions and water. The students of Cathedral Arts Project have been CAPturing the St. Johns River in a touring exhibition called “Lobby for the Arts.” Hundreds of CAP’s performing arts students will be featured in “Showcase of the Performing Arts” on April 25th and 26th at the Lazzara Performance Hall at UNF. SAVING LIVES AT LARGEST PET ADOPTION EVENT IN THE NATION

The mission of First Coast No More Homeless Pets (FCNMHP) is to end the killing of dogs and cats in shelters in our community, northeast Florida and the nation. As a nonprofit that collaborates closely with the entire community, FCNMHP strives to dramatically improve the welfare of animals and promote the valuable bond between humans and their pets. In the United States, approximately 3.5 million pets are euthanized every year. While euthanasia can alleviate suffering in some cases, healthy pets make up the majority of these figures. FCNMHP’s combination of aggressive spay/neuter efforts, adoption initiatives and pet retention programs has resulted in significant improvements for animals. This past fiscal year, FCNMHP performed 31, 125 spay and neuter surgeries and more than 180,000 since 2002! The euthanasia rate in Jacksonville has decreased by an astounding 90% since First Coast No More Homeless Pets’ inception in 2002. FCNMHP provides comprehensive services designed to reduce overpopulation. Pairing homeless pets with new families is a big part of FCNMHP’s life-saving work. FCNMHP plans and implements large-scale adoption events called Mega Adoption events. These Mega Adoption events are the largest of their kind in the nation, finding homes for up to 1,000 dogs and cats per event and attracting up to 8,000+ individuals looking to adopt a pet. As of March 2015, through these events, 8,132 homeless dogs and cats have been placed in new homes. FCNMHP invites up to a dozen shelters and rescues from northeast Florida and beyond to adopt their homeless pets, providing much of the transportation, crate set-up and a team of staff and volunteers to run the logistics during these weekend-long events. In addition, FCNMHP assists other communities plan similar events, helping to save thousands of dogs and cats from potential euthanasia nationwide.

“FCNMHP provides a great adoption experience with the Mega Adoption events. I knew before I volunteered I wanted to adopt two kittens. There were so many animals in need of homes it was easy to find a great match. Bella and Bacchus have brought much joy and many smiles to my home,” said Michelle, who found her two kittens at a previous Mega Adoption event. Without all of these vital services and the collaboration between FCNMHP’s partner groups, the community risks returning to the way things were before these groups started - when more than 23,000 pets were euthanized each year in Jacksonville. Jacksonville foodies, your taste bud-induced prayers have been answered! Give your spoonable spirit a glorious slice of the divine at Pie Heaven. Just off Mayport Road sits a tiny, bright blue shop serving up five variations of delicately crusted and chomp-able pies. The smell of meat, custard, quiche and fruit pies wafts over you as you walk into this small space and immediately indecision on what to purchase takes over. Luckily, brightly colored “Status Boards” are in the shop so you can see which of your favorites are still available for slice or wholepie purchases. These beautiful, handmade disks of deliciousness (created by owner and master pie baker Anita Hyde, working partner Linda “Socks” Holfinger and an angelic team of beautiful bakers) are a bit better for you than a store-bought brand. Delightfully, the staff at Pie Heaven doesn’t use any hydrogenated oils or phonetically challenging ingredients in their copious culinary creations.

I chose to sample two savory pies, one fruit and one custard selection on my visit to this dreamy spot. The quiche was light and flavorful; the individual pot pie had a phenomenally flakey crust and equally scrumptious chicken and gravy inside; the organic blueberry pie was perfectly sweetened with no tear-inducing tart aftertaste; and I definitely could taste why the Key Lime is a staple on Pie Heaven’s generous menu. All slices were completely and utterly drool-worthy.

The aTmosphere I’d never been to this franchise before but was curious to what all the hub-bub was all about. Normally it is my practice to keep my gilded fork away from these kinds of spots when reviewing, but BURGERFI has some really cool things going for it that folks who appreciate food will love:

This little spot for bountiful burgers preps their kitchen like any 5-star restaurant would. • The Angus beef is antibiotic and hormone-free. • The veggie burgers are handmade every day. • French fries are hand-cut and soaked for starch removal every day. • The hotdogs are all made with actual meat (Wagyu Kobe beef to be exact). • BURGERFI carries a selection of craft beer plus some local favorites such as Intuition and Dukes. • There is an awesome selection of shakes, floats, frozen custards and concretes (dense frozen custard ice cream blended at high speed). • Mmm… fresh-squeezed strawberry lemonade! A deal at $6.97, the Breakfast All Day Burger was truly a treat! With cheese, bacon drizzled with maple syrup, a f ried egg, hash browns, grilled onions and ketchup, this 3-napkin bite made my soul happy! Most importantly, the quarter-pound burger was seasoned and cooked properly.

The Waygu Kobe Beef Dog was equally as impressive at $4.97, but I suggest a spot of the BURGERFI chili to really top off your bun-cradled pup. Delish! Overall the service here is friendly, the space is lively and clean, and the food is tasty and fresh. There is plenty of yum here, so bring a foodie friend for a BURGERFI frolic because two can definitely eat for $20 at this Town Center treasure!

The Blood Alliance Donates Retiring Bloodmobile to Haiti The Blood Alliance, Northeast Florida’s only provider of blood to all area hospitals, has partnered with the Rotary Club of South Jacksonville and Rotary Club of Deerwood to donate a retiring Bloodmobile to Zanmi Lasante in Haiti. The bus will be used as a Mobile Health Clinic, covering areas that will touch the lives of more than three million people.

Donating the Bus to Haiti

The idea to donate the bus was fostered by The Blood Alliance’s public relations spokesperson, Odette Struys, when she learned her community blood bank was going to retire the bloodmobile. As a volunteer and service-oriented Rotarian working in public relations, she saw an opportunity to extend the life of the bus if donated to a country that could desperately use its services. A few years ago, she helped provide a tour to a Rotary Vocational Training Team made up of phlebotomists and physicians visiting Jacksonville from Haiti. When showing them a bloodmobile, she remembered how impressed they were with the mobile unit. More impressive to the visitors was that the bus was air conditioned as they drew comparisons to the hospital they worked at in Haiti that had no cooling system. Given those hard-to-forget memories, Struys proposed donating the bloodmobile to Haiti and was given the green light by The Blood Alliance’s chief financial officer, Jack Wolcott.

About the Recipient, Zanmi Lasante Haiti

Zanmi Lasante is part of Partners In Health, headquartered in Boston, MA, and has served Haiti for more than 25 years helping to build and strengthen the country’s public health system. With Haiti suffering considerably in recent years – nearly 300,000 people died in the 7.0 magnitude earthquake in 2010, while a half million people suffered from a cholera epidemic in that same year – the bus will be a welcome addition to Zanmi Lasante’s current healthcare landscape. In the past, Zanmi Lasante had to use available space in churches and schools to provide healthcare to remote communities, but with the Mobile Health Clinic Bus, they will be able to see patients with greater frequency and have access to communities in a catchment area that serves more than three million people. Zanmi Lasante works closely with Haiti’s Ministry of Health. As part of Partners in Health, it is the largest non-governmental provider of health care in the country, operating clinics and hospitals in 11 sites, with a staff of more than 5,000 Haitians. Sister Hazel is composed of five gifted, seasoned musicians whose wellspring of natural talent has been called “one of the Top 100 Most Influential Independent Performers of the last 15 years” by Performing Songwriter Magazine. Their unbreakable bond with fans is demonstrated annually at their innovative ‘Rock Boat’ excursion, the world’s largest floating music festival. Pioneers in the ‘full-on fan experience,’ Sister Hazel has been hosting their own cruise ship fan party for more than a decade, introducing their followers to developing talent at the same time they are spending quality time and having fun with their captive audience. The band itself is named after a now-famous nun from the Gainesville area who has dedicated her life to making a difference in the lives of her fellow humans. Sister Hazel the band is true to their namesake, having taken on two major charitable projects with Feed The Children and Lyrics For Life. Lyrics For Life is a charity founded by singer Ken Block as a memorial for his younger brother, Jeffrey. It unites musicians and celebrities for concerts and auctions to benefit cancer research and patient-care charities. The dream for all musicians is to find a way to use their gifts to support themselves and their families at the same time they are enriching the lives of others. BUZZ: How important is music to children and in what ways can being in chorus improve their lives? CC: Music has been proven to enhance learning during childhood. It has been recognized as an important influence on cognitive development with several research studies demonstrating students who participate in performing arts score higher on intelligence tests.

BUZZ: Have previous members of the chorus followed music as a career? CC: Yes, we have many; one JCC alum is currently performing with the Saratoga Opera, another young man is a composer, and yet another is currently pursuing a singing career. BUZZ: Is there anything that you wish Jacksonville residents knew

about Jacksonville Children’s Chorus?

CC: The Jacksonville Children’s Chorus is a professional children’s choir experience. That means that our singers and artistic staff are held to a much higher standard of performance and conduct. Many who see the children perform for the first time are amazed by their professionalism and musical abilities. This explains why the group has been invited to perform at such places as St. Peter’s Basilica at the Vatican last summer. Also, it is important for parents to know we do offer scholarships. It is our firm belief that no child who wants to sing is ever turned away due to a family’s inability to afford tuition.

BUZZ: When did you realize that music was going to play a major role in your life? JL: When Reggie Wayne from the Indianapolis Colts told me while at a University of Miami Football camp that “You have to love this [playing football],” I immediately realized that football was a hobby, and music was my love. BUZZ: Out of all the places that you have played in Jacksonville, what stage has offered the best sound? JL: By far, Friday Musicale. BUZZ: In a series of words that rhyme, describe your new CD. JL: Bold and in motion, pursuing the devotion. BUZZ: Some of your songs have spoken word in them. Is that something you plan to continue to do? JL: It’s not in the plan, but it is an option. Your eyes are an amazing, important part of who you are. These tips will help ensure you see your best. Get a comprehensive, dilated eye exam. A dilated eye exam allows your eye doctor to see the back of your eye and detect common eye diseases such as cataracts, glaucoma, and macular degeneration (AMD). Systemic problems such as high blood pressure and diabetes may be detected, sometimes before your primary care doctor can diagnose it. Wear UV protection. Look for sunglasses with UVA/UVB protection (UV 400 or 100%UV) along with a wide-brimmed hat. This will decrease effects of harmful UV damage to the eyelids and eyes such as basal cell carcinoma, melanoma and cataract growth. Take care of your sight during pregnancy. Vision changes are common during pregnancy. Minor prescription changes can happen because of changing hormone levels and fluid retention, but reverse within a few months of delivery. Sometimes these changes can be from diabetes or high blood pressure that develop during pregnancy. A complete eye exam is important for early detection. Know your family’s eye health history. Many common eye diseases have a genetic component. Women are more prone to getting autoimmune disorders such as Lupus, Rheumatoid Arthritis, and Sjogrens, and they are often passed down. Maintain a healthy diet. A diet rich in lutein and zeaxanthin (macular antioxidants,) shows health benefits and, in AMD patients, it may reduce risk of progression. Kale, spinach and corn are just a few foods that are rich in these vitamins. Grumman St. Augustine Manufacturing Center of Excellence as an Aircraft Integration Center. Plans are underway to enhance our facility with new construction. Specifically, we are increasing hangar space so that more aircraft production can begin. As a Center of Excellence, we bring our company’s best capabilities in each designated area to a facility like St. Augustine, enabling lower operating costs, increased collaboration across our workforce, alignment of complementary skills and talents among our teams, greater interaction and opportunities for innovative approaches. We are growing our footprint in St. Johns County, and the entire region has been very supportive of our growth. CM: Today’s women have great opportunity. There are numerous

What stirred your curiosity for cooking? In kindergarten, I lived in Germany. My teacher took our class to an apple orchard to pick apples. We returned to school and learned to peel, core and chop apples, then cook them and season with sugar and cinnamon to make applesauce. The experience made a deep and lasting impression.

My style is expressed through my teaching and my food. I practice what I teach, which is “innovative classicism.” I have a deep respect for classical food and cooking techniques, but I don’t believe in being confined by them. It is important to teach students the basics, or the classic methods and techniques, but modifying ingredients and making it your own style can express creativity. I remind students recipes are called formulas because that’s what they are, and the variables can be adapted according to taste and style.

Tell us about your team’s delicious success at the Chocolate and Beyond Gala? Yes! We just won 3 awards at the “Chocolate and Beyond” gala event! We took 2nd place – Best in Show, 2nd place – Savory Award: Mayan cacao, and 1st place – Most Creative Display: Chocolate Showpiece.

CROP Creative Media recently produced a new national commercial for Firehouse Subs, shooting in Jacksonville both on location and in CROP Creative Media’s studio on Kings Avenue. Firehouse Subs, based in Jacksonville, has more than 850 stores and is rapidly expanding. Co-founding brothers Chris and Robin Sorensen were instrumental in keeping this production in their home city. Keeping production local to Jacksonville translates into a significant investment in the local economy. This particular job employed experienced and talented film industry professionals based in Jacksonville and the surrounding Northeast Florida area. The shoot employed a local producer, director of photography, audio engineer and several grip and lighting professionals. The art department featured a local set designer and builder, props and wardrobe specialist, make-up artist, caterer and food stylists. The head food stylist was a long-time Jacksonville resident who was flown in from Texas for the job. What is Operation New Uniform (ONU)? ONU is a nonprofit organization that understands many veterans are frustrated by the lack of real opportunities accessible to them after they transition from the military. Although educated, trained and skilled, these veterans often find themselves less competitive in the professional marketplace compared to those who took a more traditional path.

What has ONU accomplished? ONU Veterans have a success rate of 85%, and an Engagement Rate of 95%. ONU Veterans are now employed at Wounded Warrior Project, Crowley, FIS Global, Florida East Coast Railway, Vistakon, Big Brothers Big Sisters, Emergency Services and Homeless Coalition of NE Florida, and a variety of other organizations. 2015 goals include expanding to other markets and hiring more veterans to grow our organization.

ROGUE FARMS MARIONBERRY MOLTEN CHOCOLATE PEPPER BEIGNETS WITH HONEY GLAZE A Marionberry is actually a variety blackberry, and Rogue grows their own. The Rogue Marionberry Braggot (don’t let “braggot” turn you off; it’s a beer/mead combo) also has honey from Rogue’s own honeybees. With my first sip, I was filled with delight and reminded of renfaires. You’ll notice that Rogue Marionberry handles heat well, so the heat from the cayenne in the chocolate in the Rogue Farms Marionberry Molten Chocolate Pepper Beignets with Honey Glaze pairs extremely well with this braggot. ¼ cup vegetable shortening Oil for deep frying Confectioners’ sugar for dusting

Filling

1 package active dry yeast 1 ½ cups warm water ½ cup granulated sugar ½ tsp white pepper 1 tsp salt 2 eggs 1 cup evaporated milk 7 cups all-purpose flour

1 ½ cup heavy cream 1 tsp cayenne pepper 16 oz high-quality bittersweet chocolate 2 Tbs Rogue Marionberry Braggot

Glaze

1/3 cup softened butter 1 cups powdered sugar 1/3 cup Rogue Marionberry Braggot 1 Tbs honey

DIRECTIONS Put water in large bowl; sprinkle yeast and 2 tsp of sugar. Stir until dissolved. Let proof for 10 mins. Add rest of sugar, salt, eggs and evaporated milk. Gradually stir in 4 cups of flour and beat with a wooden spoon until smooth (or mixer with paddle). Beat in shortening. Add the remaining flour, 1/3 cup at a time, beating (you can use stand mixer with dough hook for this step) until it becomes too stiff to stir; work in rest with your hands. Cover bowl with plastic wrap and refrigerate overnight (or freeze until stiff) in a greased bowl. Roll dough out on floured surface to a thickness of 1/8 inch; cut into rectangles 2 ½ x 3 ½ inches (I use my pizza wheel). Place teaspoon of filling on dough. Cover with another dough piece. Make SURE you pinch and fold these well. Heat oil in pan to 350 degrees. Fry the beignets about 3 or 4 at a time until puffed out and golden on both sides, about 2 minutes/batch. Drain on paper towels. Keep warm in low oven. Dust with powdered sugar before serving. Filling: Heat cream and cayenne in heavy pan until very hot – not boiling. Break chocolate into pieces in medium bowl. Pour cream over and stir until chocolate is melted. Stir in Rogue Marionberry Braggot. Glaze: Whisk all glaze ingredients in bowl until smooth. Drizzle over cooked beignets.

What was the inspiration to begin a brewery?

When we originally opened Zeta in the spring of 2013 our concept was a casual, beach friendly bar and restaurant. We knew we would evolve and really wanted the consumer to help dictate our direction. In September of 2013 we found our niche in craft beer. We offered 24 guest tap handles and the response of offering a strong selection of local, state, and unique craft beer told us we needed to make our own. With the addition of our own beers, we still have 16-18 guest taps at all times. Offering a full liquor bar and a full menu along with the brewery has made us a unique option in Jacksonville.

We’ve created some unique cocktails with our signature beers. Our best seller is the Banana Wheat, which has our Ruby Beach with banana liquor. What compliments do you hear most often from your customers? They love the environment – and the food, of course! Have any local Jax celebs stopped by for a drink? David Gerrard and Richard Nunn. Busiest night of the week?

What makes your beer unique? With our brewer’s culinary background, we like to incorporate fresh, local, seasonal ingredients into our beers when possible.

Our brunch is amazing so it makes Sunday our busiest day.

Dopplebock Style Rooted In Lent Traditions This time of year is special to Christians world-wide. From Fat Tuesday to Good Friday, Christians celebrate the season of Lent when Jesus went into the desert to fast and pray before his crucifixion. It is a serious time that is revered by both lay persons and those who have devoted themselves to the service of the Lord. So, what is the connection to beer? It seems that the German Paulaner monks at Cloister Neudeck ob der Au in Munich took their fasting serious during Lent and ate no solid food during the Holy time. Therefore, instead of making bread with their grain, they brewed beer – what they called liquid bread – to sustain them through the long season. The beer they brewed has gone by several names, including Fastenbier or Starkbier, but is more commonly known as Doppelbock. According to the Beer Judge Certification Program guidelines, this brew should be very rich and malty with a touch of chocolate, but still crisp and smooth. Doppelbock, literally “double bock,” is generally relatively high in alcohol at between 7 and 12 percent. In the higher alcohol versions, there is usually a mild burn from the alcohol. The monks eventually named their brew Salvator after the savior. In deference to that original brew, when imitators began making their own versions, most were named with

Brewed in Idaho Springs, Colo., Butt Head is characteristically sweet from Munich, carapils, caramel and chocolate malts, and is fermented with Bavarian lager yeast. The resulting caramel sweetness and rich mouthfeel are complimented by mild hop bitterness. Pair this sweet treat with chocolate cake or terrazzo.
