It’s difficult to talk about one person when discussing the operation of Henderson Haven, as it is run by a couple as a team. Lee and Sherri Henderson founded the organization after moving to Florida and finding the services for their own son lacking. After fighting for his rights for school inclusion, they started Henderson Haven to help ensure these rights are met for everyone in all aspects of their lives.
Maria Mark began her nonprofit career in 2006 as the Assistant Program Manager for Timucuan Trail Parks Foundation. She served as interim executive director from 2009-2010 and has been the executive director since 2011. Maria graduated from the University of South Carolina with a business degree and moved to Jacksonville in 1979. She is a 2014 Leadership Jacksonville graduate and also serves as commissioner of Atlantic Beach.

First Coast Connect Letson’s acclaimed program “State of the Re:Union” won a George Foster Peabody award with Melissa Ross for its 2014 season. It’s the highest accolade offered in the broadcasting business. Letson joins such luminaries as Bob Hope, Bing Crosby, Katie Couric and Julia Child at the very pinnacle of the industry. Sadly, “SOTRU” is sunsetting due to challenges involved with fundraising.

Don’t Miss A Beat (DMAB) was founded by Grammy Award-winning jazz musician Ulysses Owens, Jr. and his family in 2008. After graduating from high school he was invited to audition for the Juilliard School. Ulysses was accepted and became part of the Juilliard School’s inaugural jazz program where he was awarded with a full scholarship. After graduating from Juilliard in 2006, Ulysses traveled the world as a jazz drummer. The more he traveled, the more he kept thinking about home. “I saw so many arts programs for kids, especially in other cultures, and I thought we really need something like this back home.”
WJCT 89.9 FM became the national presenting station of “SOTRU” in July 2013. It is heard on hundreds of public radio stations nationwide, and new podcasts will come out later this year. The Peabody Awards ceremony will take place May 31 in New York City to honor outstanding work in television, radio, podcast and web programming. Al continues to live in Jacksonville and commutes to California where he works as the on-air host for “Reveal,” another great public radio show produced by The Center for Investigative Reporting. “A Leader focusing on ‘Outcomes Research & Treatment” with Proton Therapy’ Medical Director & Professor of Radiation Oncology, UF Health Proton Therapy Institute
BUZZ: Was it always your goal to be Professor of Radiation and Oncology? Tell us about your journey.
DR. M: I decided when I was 16 that I wanted to be a physician. I thought I would become a tropical medicine expert and do research and practice in third world countries. In medical school, however, I liked each of the 6 major clinical rotations. At the end of the rotations, I loved surgery most and was intrigued with the disease process of cancer. Radiation Oncology was the perfect fit for me. In 2006, the University of Florida provided us with the opportunity to bring proton therapy, a new radiation modality, to Jacksonville and the state of Florida, which has been challenging and extremely rewarding. For me, it has been a dream career.
BUZZ: You were recognized at the Legacy of Leaders dinner and in the Portrait of Leadership Gallery. What does being a leader mean to you?
DR. M: Being part of the Legacy of Leaders was an unanticipated honor. I am grateful for the recognition and hope that in some way I will be able to positively impact the Jacksonville community. BUZZ: What advice would you leave future leaders? DR. M: Look for problems in society that you passionately feel need to be solved. Listen more than you speak. Align your missions, goals, and strategy with others who are working on the same or different problems. If there are obstacles along the way find a way around, over, under or even through the obstacle!

ablo Rivera graduated from Cooper Union Art School in NYC and attended workshops at the School of Visual Arts and Educational Alliance in NYC. He has exhibited in New Jersey, New York, Connecticut, Rhode Island, California and Florida. Rivera is an accomplished artist in sculpture, painting and photography, currently teaching watercolor painting at The Art League of Jacksonville. Reproductions of his work have been used internationally as illustrations for book covers and magazine articles. Rivera is locally exhibited with St. Augustine Art Association, The Museum of Contemporary Art, Jacksonville, The Cummer Museum of Art and Gardens, The Cultural Center at Ponte Vedra Beach, The Art Center Jacksonville, The Coalition of Visual Arts and The Southlight Gallery.

INTERVIEW WITH BRADLEY AKERS Associate Director of Players By The Sea PLAYERS BY THE SEA 50TH ANNIVERSARY SEASON BUZZ: Tell us a little about the history of Players by the Sea. BA: Players by the Sea was founded in 1966 by 3 couples
who wanted to bring interesting and exciting theatre to the Beaches area. For a majority of our early life, PBTS existed in rented spaces until the acquisition of our permanent home in 1999. Since our inception, we have been known as the theatre to produce works that challenge, inspire and push the boundaries of traditional community theatre. Now, with our Mainstage and Studio Stage, we produce 10 shows on average per season and host a number of special events in an effort to support our mission of enriching the community through excellence in theatre.
BUZZ: What’s in store for your 50th season? BA: Our 2015-2016 season is going to be a lot of fun! The shows we have selected support our mission and provide multiple opportunities for all kinds of theatre artists. Our season includes: “La Cage Aux Folles” (flashy hit musical), “A Behanding in Spokane” (energizing dark comedy), “Godspell”
(inspirational musical), “Cotton Alley” (world premiere drama by local playwright Olivia Gowan), “Mothers and Sons” (drama), “Old Jews Telling Jokes” (hysterical comedy), “All The Way” (political drama about Lyndon B. Johnson), “Shipwrecked! An Entertainment — The Amazing Adventures of Louis de Rougemont (As Told By Himself )” (family-friendly adventure comedy), and “Memphis” (hit rock & roll musical). Did you catch all of that? It’s a bit of a mouthful! Additionally, we are unveiling our brand new flexible memberships, where it’s your theatre your way.

Players By The Sea Local Premiere of a New Cult Comedy Hit: The Simpsons Save Civilization at Players by the Sea! Players by the Sea presents the local premiere of one of the country’s hottest new plays on its Studio Stage May 8-23. “Mr. Burns, a Post-Electric Play,” by Anne Washburn, defies classification. Part dark comedy, part postapocalyptic thriller, and part pop culture spoof, it has quickly achieved cult status since its debut at the avant garde Woolly Mammoth Theatre Company in Washington, D.C., in 2012. What if, through a series of nuclear power plant catastrophes, the electrical grid went down all across the country, plunging us into a new Dark Age? Could a small group of survivors hiding out in the woods re-invent civilization from their memories of an old “Simpsons” episode? Of course they could! The beloved “Cape Feare” episode, a takeoff of the 1991 film “Cape Fear” (itself a remake of the 1962 classic), becomes a vehicle for creating meaning and order in a chaotic, lawless world. “Mr. Burns” is directed by Devlin Mann, with music direction by Stephanie Baston. The cast features Josh Waller, Alec Hadden, Alix Bond, Ashley Augustyniak, Myles Hughes, Maya Adkins and Kristen Walsh, all playing multiple characters as the play examines how the “Cape Feare” story develops into mythology over the course of 82 years. Theater in the River City By Tamara McClaran, Northeast Florida Theater Enthusiast The 25th Annual Putnam County Spelling Bee at The Alhambra Theatre & Dining The Alhambra Theatre & Dining is hoping a musical comedy about a middle school spelling bee will spell entertainment for audiences. “The 25th Annual Putnam County Spelling Bee” will open May 13. The musical has been a hit on Broadway and in productions around the country. It was nominated for six Tony Awards and won two in 2005. “It’s a fun show and probably not what it sounds like,” said Alhambra Managing Partner Craig Smith. “It’s much more of an adult show than a family or kids show.” The musical uses a witty approach and revolves around an eclectic group of teens who discover the spelling bee is the one place where they can stand out and fit in at the same time. “The story is funny and it’s something we can all relate to – competition, our relationships with our parents, expectations, and success and failure,” Smith said. Audience members are also part of the spelling bee, adding a unique and unpredictable element to the show. Cast members have to improvise parts of the show at every performance. “Once you bring an unscripted part of a show into a play, one never knows how it’s going to turn out,” Smith said. Although the title of the show contains the name of a nearby county, there are no references to North Florida in the show. “The 25th Annual Putnam County Spelling Bee” will be performed May 13 to June 14. Whether you brew on a full-blown home system or a simple kit, making your own beer can be a great deal of fun and a source of pride. There is simply nothing better than cracking open a cold brew with friends knowing that you put your own spin on how it tastes. Fledgling homebrewers have a plethora of resources available to help guide them through the trials and tribulations of zymurgy (creating fermented beverages like beer). To get you started, here are a few: C.A.S.K. – Budding brewers can join the Cowford Ale Sharing Klub (C.A.S.K.) and attend monthly meetings with other brewers. NEW BELGIUM SNAPSHOT WHEAT BEER LOBSTER RAVIOLI
24 oz. lobster tail meat, divided 3 bottles 20 oz. lobster tail meat 32 oz. seafood stock 32 oz. chicken stock 4 Tbs. butter 2 cloves garlic, minced 2 Tbs. finely chopped shallots 2 tsp. chopped fresh chives 1 tsp. chopped fresh parsley 2 oz. brandy 3 Tbs. New Belgium Snapshot Wheat Beer 7 oz. ricotta cheese salt pepper Your favorite fresh pasta recipe or wonton wrappers to form ravioli In large stock pot, bring the 3 bottles of New Belgium Snapshot Wheat Beer and stocks to a boil. Add lobster tails. Allow to poach for about 10 minutes, until just cooked. Remove from stock (save stock); cool. Remove meat from tail, chop lobster into small pieces. Place butter in large skillet. Add garlic & shallots; cook until soft. Add 20 oz. of lobster, chives and parsley and sauté for 2 minutes. Add brandy and 3 tbsp. New Belgium Snapshot Wheat Beer; reduce for several minutes. Remove from heat. Cool to room temperature. Combine with ricotta, salt & pepper to taste. Place ½ tsp. on each ravioli, fold and seal with egg wash. Boil reserved stock to poach the ravioli for 8 to 10 minutes. Allow to drain. Heat remaining butter in skillet and sauté ravioli until lightly browned.

Melt butter in skillet. Add shallots. Sauté until soft. Add lobster. Sauté 2 minutes. Add remaining ingredients; reduce over medium low heat for several minutes, until thickened. Serve with ravioli.

This family-owned-and-operated spot is not only delicious, but a cultural experience as well. With spices flown in from Ethiopia, handmade injera bread, honey wine, Ethiopian beer, Doro Wat (stew that takes hours to prepare), Ethiopian coffee, and service beyond compare, this unassuming spot definitely gets two forks up! All items are eaten with the hands here, as is traditionally done in Ethiopia. Menu items are served on or with a crepe-like, gluten-free bread called injera. Hungry customers rip off pieces of this bountiful bread and dip it into their meal, thus negating the necessity for spoon slippage and faulty forks. While flatware IS available upon request, I highly suggest engaging in this cultural experience with fingers flying as the food here is phenomenal. With suggestions from owner Hossana, I tried the Sambusa, a crisp, deep-fried pocket of spiced meat and veggies; the Veggie Combo, a gorgeous platter of cooked veg on top of injera; and Derek Tips, made with a spicy lamb, onions, and cooked jalapeño. The service was incredible, the price point is marginal, and the food is phenomenal! Pop on over to Powers Avenue and try this palatable palace of injera-covered platters.

Chef Jamey Evoniuk started his creative culinary beginnings at an early age and is one of the premiere chefs for a number of Jacksonville’s most noteworthy spots! BUZZ: When did you find an
interest in cooking? I have amazing memories of cooking in the kitchen with my grandmother as a young kid. I have always felt at home in a kitchen. How did you receive your training to become a chef? I went to UF for business, but realized that wasn’t my passion. After that, I went to the school of hard knocks. I started with Culinary Concepts in Orlando as a line cook and then moved to Sous Chef at Louis Chatham’s and K Restaurant. Then I became Executive Chef of Manuel’s on the 28th, which is a mobile 4-star, triple A, four diamond restaurant. BB’s and Biscottis brought me to Jacksonville.
Favorite dish to prepare: Any specialty game meat: elk, venison, wild boar, etc.
What are your favorite ingredients to use? Any kind of mustard, ginger, and fresh herbs.
Most unusual dish you have eaten: Sea urchin, Shad roe and crispy duck feet – not on the same plate!
What food is your greatest indulgence? Specialty oysters like Kumamoto or Belon.

Chili Garlic Salmon INGREDIENTS 4 7-ounce salmon filets 1 Tbs freshly grated ginger 1 Tbs Minced garlic 1 Bunch finely chopped scallions (green part only) 1 Cup Thai sweet chili sauce 1/4 Cup light soy sauce 2 Tbs Canola oil Fresh cilantro for garnish
What is your most memorable kitchen experience? Every month we host Dinner Club with a group of 25-40 adventurous eaters. The menus are always experimental. There is a mix of tasting, teaching and interaction; that is what I love about being in the kitchen. Do you have a specialty dish that your family and friends always want you to make? Either my Miso-Sake Glazed Sea Bass with Soba Noodle Sushi or my Chili Garlic Salmon. Favorite kitchen tool: A tasting spoon!
DIRECTIONS Lightly season salmon filets with salt and pepper. Heat a sauté pan over medium-high heat and add 2 Tbs canola oil. Place the salmon presentation side down and sear for 1 minute each side until crispy. Add the ginger, garlic and scallions. Agitate in the pan until aromatic and add the chili sauce and soy sauce. Add 2 Tbs of water so the sugars won’t burn and reduce for 1 minute.

The Ponte Vedra Concert Hall presents quintessential British alternative rock band The Psychedelic Furs If you were to dissect the alternative rock dominating today’s music, you’ll find that much of it pays homage to The Psychedelic Furs. Led by vocalist and songwriter Richard Butler, and his bass-wielding brother Tim, the Furs won over fans and critics alike by combining poetic lyrics, innovative rhythms and melodies driven by an aggressive, punk desperation. Born out of the late ‘70s, early ‘80s post-punk U.K. rock scene, the Furs’ debut quickly established the band in Europe and was a Top 20 hit in the U.K. The Furs found success in the U.S. with their next release, 1981’s “Talk, Talk, Talk,” which saw the band making its debut on the U.S. album charts. The album spun off two charting singles, “Dumb Waiters” and the original version of “Pretty in Pink.” The latter song served as an inspiration for the 1986 John Hughes film of the same name, and was re-recorded for the film’s platinum-selling soundtrack.

THE DEVIL MAKES THREE STORY BEHIND THE MUSIC:
“There’s a road that goes out of every town. All you’ve got to do is get on it,” Pete Bernhard says. The guitarist/singer and his cohorts in the raw and raucous trio The Devil Makes Three have found their way onto that road numerous times since they first left their picaresque rural hometown of Brattleboro, Vermont. Back then, they had no idea it would lead them to such auspicious destinations as the Newport Folk and Austin City Limits Festivals, Bonnaroo and Lollapalooza, and on tours with Willie Nelson, Emmylou Harris and Rodney Crowell and Trampled By Turtles. Along the way, they drew numerous accolades from a growing fan base and press alike. TDM3’s travels and travails serve as inspiration for their fourth album and their New West Records debut, I’m a Stranger Here, produced by Buddy Miller and recorded at Dan Auerbach’s (Black Keys) Easy Eye Sound in Nashville. With upright bassist Lucia Turino and guitarist Cooper McBean, Bernhard crafted a dozen tunes, part road songs, part heartbreak songs and part barnburners. While most bands are propelled from behind by a drummer, TDM3 builds exuberant rhythms from the inside out, wrapping finger-picked strings and upsurging harmonies around chugging acoustic guitar and bass, plying an ever-growing audience onto its feet to jump, shake and waltz. TDM3’s sound is garage-y ragtime, punkified blues, old n’ new timey without settling upon a particular era, inspired as much by mountain music as by Preservation Hall jazz. For a band that made its bones with dynamic performances, recording an album is almost like coaxing lightning into a bottle, but Miller and TDM3 succeed on “I’m a Stranger Here.” Now they’re continuing the journey that began when they found their way to the road that led them out of Vermont. “I can’t wait to get onstage, I love it,” Bernhard says. “Playing music for a living is a blessing and a curse, but for us there’s no other option.”

STANLEY JORDAN STORY BEHIND THE MUSIC:
Returning to the Ritz is four-time Grammy nominated, guitar virtuoso Stanley Jordan. In a career that took flight in 1985 with commercial and critical acclaim, guitar virtuoso Stanley Jordan has consistently displayed a chameleonic musical persona of openness, imagination, versatility and maverick daring. Be it bold reinventions of classical masterpieces or soulful explorations through pop-rock hits, to blazing straight ahead jazz forays and ultramodern improvisational works—solo or with a group—Jordan can always be counted on to take listeners on breathless journeys into the unexpected. Key to Jordan’s fast-track acclaim was his mastery of a special technique on the guitar’s fretboard. Instead of conventional strumming and picking, Jordan’s innovative “touch technique” is an advanced form of two-handed tapping. While a handful of other players were using similar techniques, Stanley’s fluid, multi-layered textures and sheer virtuosity raised the bar for excellence. But his technique, though impressive, is always a means to a musical end. His music is imbued with a warmth and sensitivity that has captured the imagination of listeners worldwide. A classically trained pianist before playing guitar, Jordan wanted greater freedom in voicing chords on his guitar, so he applied piano principles to do so. Jordan’s touch technique allows the guitarist to play melody and chords simultaneously with an unprecedented level of independence. It also allows Jordan to play simultaneously on two different guitars, or even on guitar and piano. To date, Jordan has performed in over 60 countries on 6 continents. He has performed at many festivals, including the Kool Jazz Festival, the Concord Jazz Festival, and the Montreaux International Jazz Festival. Today Jordan performs frequently as a soloist and with his band, as well as collaborates with other guitarists such as Kevin Eubanks, Sharon Isbin and Muriel Anderson. He’s also a frequent guest with jam bands such as the Dave Matthews Band, the String Cheese Incident, Phil Lesh, Moe and Umphrey’s McGee.

BUZZ: Do you have a song that’s hard to perform because of the memories attached to it? CD: From a memory standpoint, we generally compartmentalize our past memories and situations and can pull those feelings out when we need to, then put them away when we are done using them and experiencing them within a song.
BUZZ: What song(s) do you find stuck in your head? CD: If we are recording, our songs get stuck in my head, especially when I’m trying to fall asleep after
a late night recording session. But I constantly have tons of different music floating around in my head. Even if a catchy riff plays on TV, it will get stuck in my head for hours. I was recently watching SNL, and there was a skit with the chorus of the song “Brave” by Sara Bareilles playing over and over again, and the chorus got stuck in my head for a couple of days.
BUZZ: Do your instruments have names? CD: I give names to my guitars. I give names to a lot of inanimate objects but that’s just something I’ve always done. I have a system; it’s simple and it’s
quick. When I get a new guitar, I hold it and get a feel for it. I get out of the way and let my mind do the work. The first name that pops into my head is the name. No excuses, no do-overs. That’s how I name everything. The guitar my parents got me when I was 13 and really starting to seriously write music was a Jay Turser and I named him Malcolm, based on my no-fail naming system.

BUZZ: How would you describe your unique sound? RC: The most unique attribute about my sound is that it is nearly 100% me. On my first project EP
“Words On A Whim” (available in May), the only instruments I did not record were the drums on three of the tracks. My old drummer and good friend Bruce Dellasala did a masterful job on this EP. To me, each song has a life of its own, its very own story to tell, and my taste in music shows through in each melody and progression from each of the instruments.
BUZZ: Have you ever had an imaginary band? RC: I often dream of having five versions of myself to form my personal dream band, all thinking on the same page about everything! You could write a song in seconds with zero drama!
BUZZ: Who’s your favorite Jacksonville artist? RC: I admire and respect many of the local artists. The lifestyle to chase our dreams is increasingly more difficult with my generation and beyond.
When I first moved to Jacksonville eight years ago, there was one artist who blew my mind. Nathan Holley was the first person I ever saw using a loop pedal and I have certainly taken notes over the years! He showed me and many others you don’t need a band to make music, you just need innovation, creativity and drive. 36

Knee Injuries in Adolescents Acute knee injuries appear to be occurring with increased frequency in the adolescent patient commensurate with an increase in athletic activity in this age group. The most common injuries are meniscus tears, cartilage injury, and tears of the anterior cruciate ligament. MENISCUS TEAR The importance of the meniscus in the function of the knee joint has now been established, with the most important role of the meniscus being the transmission of compressive loads across the knee joint. Meniscal injuries in children younger than 10 years of age are extremely rare. In adolescent patients, up to 88% of meniscal injuries are caused by sports activities. Since younger individuals have a better healing capacity, a fair number of meniscus tears can heal without surgery. CARTILAGE INJURY Articular cartilage injury in adolescents may be caused by a traumatic injury or by recurrent trauma resulting in osteochondritis dissecans (OCD). Treatment of chondral lesions is dependent on the presence or absence of bone attached to the cartilage lesion. If bone remains attached to the cartilage defect, this can be reattached to the defect and allowed to heal. If no bone is attached to the lesion, the missing cartilage and bone may need to be replaced. ANTERIOR CRUCIATE LIGAMENT TEAR Anterior cruciate ligament, or ACL, tears are becoming more common in adolescents. It is complicated by open growth areas or plates in the growing bones. Reconstruction of the ACL must respect these growth plates or bone length or alignment deformities will occur. Often, reconstruction is delayed until bone growth has finished.

Nico Zaldana is one of the young guns on the Jacksonville Armada’s roster. Zaldana is a midfielder and just 18 years old. He’s one of the youngest players in the NASL, but he’s been playing high-level soccer around the world for several years now. Zaldana joined the active roster after being on the Armada’s development squad since last summer.

Stumbling Home Real Estate and Life in Northeast Florida
The Jacksonville residential real estate market continues to improve as we move closer to the summer. Active listings continue to hold steady with 9,000 homes for sale, while prices are increasing steadily. The median list price is now in the low $200’s for the entire Jacksonville area. What should really get you excited is the absorption rate is dropping, down from 5.9 to 4.9 months, which means homes are selling quicker than they were a year ago. All of this is great news for homeowners who haven’t had much to be excited about until recently. This month we focus on the Ponte Vedra Beach area, which is also steady in terms of actively listed homes for sale. The number of days homes are on the market has dropped from 190 to just 94 days on average. Slightly farther inland, Ponte Vedra itself is experiencing an overall increase in the number of homes listed, which has resulted in the average days on the market rising to a peak of around 80 days last month. So what does all this mean to you? If you are a homeowner looking to sell your home, head to the bar and celebrate with a round of drinks for you and your neighbors! Home prices are going up and selling faster. If you are looking to buy, do your favorite shot and get busy looking because you don’t have time to finish that drink before home prices get higher and someone else edges you out with a better offer on your next home. Then, I tutored him to pass his driver’s license test and fill out job applications so he could secure his first job in Jacksonville.

Adopt the attitude of a lifelong learner. 2) Consistently build and expand your internal network within your organization. The cake is light and tasty, but not too sweet. It’s the perfect complement to this flavorsome ale.

We offer 14 local brews with four flight options: Cigar City, Florida, hop and malt.

1 cup butter, softened 1 ¾ cups sugar 2 Tbs vanilla 4 eggs, room temperature 1 vanilla bean, caviar scraped out 2 ½ cups flour 2 Tbs baking powder ¾ tsp salt 1¼ cups buttermilk 1/3 cup Small Town Brewery Not Your Father’s Root Beer

1 cup butter, softened 3 cups powdered sugar 2 tsp vanilla 2 Tbs heavy cream 1/3 cup Small Town Brewery Not Your Father’s Root Beer
We offer 14 local beers. Additionally, we offer Palm Ridge Whiskey out of Umatilla, Florida, and would love to find other local and regional companies to offer to our customers. We also infuse a selection of liquors ourselves including gin, vodka and tequila.
What compliments do you hear most often from your customers? We get a lot of compliments on the food since everything is fresh and made inhouse. We work with local purveyors and growers to get the finest fresh regional and seasonal ingredients produced through sustainable methods for our menus. We pride ourselves on providing a stellar, one-of-a-kind guest experience. People love to sit outside on the patio or inside, especially when we open our garage door.
What’s on the libation horizon? We are rolling out a sangria menu. Fresh herbs from our herb garden are used as well as fresh local Florida fruit, and we even feature a few select beers in the sangria as well. We make every single one to order and serve it in a carafe, making it great for sharing.
Do you have music or any kind of events? We recently hosted an event for the Ronald McDonald House Charities of Jacksonville. As we continue to grow, we plan to expand our menu to offer brunch in May.

DIRECTIONS In large bowl, beat butter until fluffy. Beat in sugar, then stir in vanilla. Add eggs, mixing in one at a time. Mix in vanilla bean caviar. In separate bowl, combine flour, baking powder, and salt. Mix in flour mixture and buttermilk alternately in 3 batches, until combined. Add Small Town Brewery Not Your Father’s Root Beer, mixing just until combined. Butter and flour two 9” cake pans. Line bottoms with parchment paper. Pour mixture evenly into the two pans. Bake at 325 for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pan for 20 minutes on rack; then turn cakes out onto rack to finish cooling. Frost with Small Town Brewery Not Your Father’s Root Beer frosting. Frosting: In large bowl, beat butter until fluffy. Beat in powdered sugar. Beat in vanilla and heavy cream. Add Small Town Brewery Not Your Father’s Root Beer, beating just until combined.

In rocks glass, build 2 oz. cucumber-infused blueberry vodka, 1 oz. violet liqueur, and 1 oz. lemon simple syrup. 3. Garnish with cucumber.

Brewer’s has become a local favorite for those who live on the Westside of Jacksonville and a worthy destination for those who don’t.

The pizzas are handmade with fresh dough and marinara (both made on-site). This is pizza done right! My recommendation: order a Florida Smacker, a customizable personal thick crust pizza that is lipsmackingly delicious!
Homebrewers are passionate about their hobby. Get into a conversation with one of them and you will likely get an earful of terms like attenuation, specific gravity and Saccharomyces.
In addition to the handmade pizzas, Brewer’s is home to Pinglehead Brewing Co., where patrons have been enjoying “beer with attitude” since 2011. “Pinglehead beers are brewed for beer-lovers seeking aggressive beer flavors and styles,” said Chief Beer Officer, Steve Halford.
Homebrewing is about two things: ingredients and process. Knowledge of both is critical to creating a drinkable and enjoyable brew.
Suds: Ambitious Monk Ambitious Monk, a spring seasonal from Pinglehead, is a Belgian Tripel that clocks in at 10.4% ABV. It pours a straw-yellow in color and gives off a sweet candy aroma with hints of Belgian yeast. Ambitious Monk is dangerously drinkable. Notes of clove, apples and bubble gum coat the palate. As the beer warms, the alcohol comes through a bit more and some of the Belgian spices begin to pick up on the palate. The finish is sweet and tart with lingering yeast characteristics. Until 1979 it was illegal to brew beer at home. President Jimmy Carter put an end to the Prohibition-era ban when he signed a bill in February of that year. The new law set limits on how much beer could be brewed at home and how old one had to be to brew it.
INGREDIENTS Water – Tap water is fine, but if you live in an area that has distinctly hard water, you may want to opt to purchase bottled spring water. Malt –Malt is any grain that has been allowed to germinate, but not sprout. Malts provide sweetness to beer that offsets the bitter flavors provided by hops. Hops – Flowers of the hops vine are used to impart bitter flavors to beer and offset the rich sweetness provided by malt. Yeast – In brewing there are two main types of yeast: lager yeast, which ferments at cooler temperatures, and ale yeast, which ferments at warmer temperatures.
THE BREWING PROCESS The brewing process itself consists of several distinct steps each building on the one before to reach the ultimate goal of a refreshing adult beverage. Step 1: Sanitation Step 2: Mashing – Malt extract or actual malted grains are added to hot water to convert complex sugars to simple sugars. Step 3: Boiling: In the boil, hops are added to impart bitterness and balance the maltiness of the wort. Step 4: Cooling Step 5: Pitching – When yeast is added to the cooled wort, it is referred to as pitching the yeast.
