Welcome to 2011 and the 21st edition of Shine magazine. Like all 21st birthdays, this edition marks a “coming of age” for both the publication and the people involved with it. My belief is that Shine magazine reflects the identity of people from the Sutherland Shire and part of that identity is our health and lifestyle. Let’s celebrate it! People from the Cronulla Sutherland area are different. I’m not saying we are particularly better or worse but we are different from our neighbours. We are shaped by our environment and that environment is bordered by rivers, parks, beaches and the ocean. We are relaxed and at home here and it is this environment that shapes our lifestyle. I love it. I would especially like to pay tribute to our founding editor, Melissa George. This publication would never have come into being had it not been for her drive and enthusiasm. Having watched the publication double and then double again in size over the last two years I can vouch for that enthusiasm and drive firsthand. Melissa now moves on to focus on another great project – her son Juan. There is no doubt that Melissa will nurture Juan with the same care that she has put into Shine and he will grow accordingly. We hope to stay involved with Mel as our “editor at large”. Best wishes Melissa from everyone at Shine. During 2011 you will see Shine magazine increase in frequency from four editions per year to six or bi monthly. This will allow us to publicise the many local events happening in our area throughout the year in a more timely fashion. I look forward to 2011 and working to promote my beloved “Shire”. It’s December 31st, 11.59pm and the count downs begun, meaning the New Year’s resolutions you have decided to implement and adhere to for the coming year are about to come into play. Not only have you promised yourself to lose weight, start a business and learn a foreign language, you are adamant that this is your year to finally get your financial position in the shape you desire. Why not? Arguably there is no better time do so.You are fresh from finally having some time away from work and there is a clear timeline you can follow when setting your financial goals (i.e. the calendar year). Within the next 5 days, you have set yourself a budget, promised to pack your lunch each day when you return to work and set up an on online savings account. You are on your way. Australia Day has arrived before you know it, you have been back at work now for a week or so and are already sick of your colleagues and even yourself, of saying “I can’t believe how fast this year is going” but worst of all the credit card bills start arriving in the mail. The realisation that this is the year you will get on top of your finances begins to seem unachievable at best.Those frenzied weeks of shopping, dining and partying just before, and just after, Christmas Day have come back to haunt you. February kicks in, the gym sessions have reduced to 2 per week (from the 6 you were at before Australia Day), you eat lunch at the local deli every day because you simply don’t have time to make lunch before work and you have said “au revoir” (goodbye) to the idea of enrolling in those French lessons because the business you have started has sucked up all the money that was going to pay for the enrolment fee.

So, the budget is blown, you weigh the same as last year, your 1 month old business already has cash flow issues and you can still only speak English. You feel that the financial (and physical) goals that you set and promised yourself that this time you would “no way” break, are slipping away from you. Well guess what? It’s, not too late, if fact it’s the total opposite. It’s possibly the best time of all to get yourself into shape financially and this applies equally to your physical goals. Towards the end of last year I asked a financial planner friend of mine if his firm intends to market heavily straight after the New Years, in anticipation that his clients will commit to become financially emancipated as part of their News Year’s resolutions. His response is precisely why I believe that there is no better time than now to get back on the bike (excuse the pun) and get your finances into shape. He told me his firms marketing starts in February because it is only then that people have truly settled back into the routine of work, the realities of their often unrealistic New Year’s Eve resolutions have sunk in and basically clients are willing to listen as a result. Best of all he told me that it is at this time when people TRULY COMMIT to achieving their financial goals hence why there is no better time to start. Goals require commitment. It is never too late to start setting financial goals or re-evaluate the ones you have set, yet feel you may have broken. There is nothing worse than looking back at your finances in retrospect and saying “if only I had….” To put it simply, set yourself goals, commit to these goals and you will never look back. Yes, life is busy, the cost of living these days is high and unforeseen expenses do seem to arise more often than we like. This should not however deter you from beginning, or continuing, in your quest to become financially and physically content. 4 simple ways that may help you on your way to achieve this are: • See an accountant and/or a financial planner: a good advisor will guide you through your finances, help you set targets and most importantly follow up on your progress. • Set yourself a (realistic) budget: ensure you allow for a contingency in your budget for unforeseen costs such as medical expenses, gifts and weddings. Most importantly of all, be realistic, don’t try and save more than you can afford only for your credit card balance to be building up in the background. • Manage your time: effective time management will help you get a better balance between your physical and financial goals. • Review your debt: explore ways of reducing your liabilities such as refinancing your home loan, consolidating debts and shop around for cheaper insurance.

Living the good life and sticking to the basics with Pam Latta When I phoned Pam Latta to ask her if I could pen a story on her in the next issue of Shine Magazine she replied. “Oh I don’t do anything special, just play golf, garden and do some charity work.” I told Pam our feature ‘Someone in the Shire’ doesn’t focus on Olympic medallists or famous people and that it is more about everyday people doing everyday things that may inspire others, so Pam agreed. Next minute I was put on hold whilst Pam attended to the stove to put some herbs into the tomato relish she was making for the St.Andrews Church and Cronulla Golf Club Charity Days that are held in August every year. I met Pam about 10 years ago at a family gathering and back then she impressed me with her zest for life and genuine warm ways. Now at 79 years of age I must admit she hasn’t changed a bit, her home is her castle and her garden is her oasis, it is lush and blooming all year round and her work of art. “I garden every Saturday and do bits and pieces when ever I can and mostly when it’s not too hot,” commented Pam. Her Cronulla home housed her husband and two children along with her parents, Pam has lived in the Shire for 58 years. “I have always had Mum and Dad with me, I’ve been a very lucky woman to have all those years together along with a husband that was also very accepting of us all being together. It was kind of like a bonding,” said Pam. Pams father lived until he was 83 and her 12

mother 94. Pam has lived on her own for almost nine years. Sadly her mother and husband passed away within months of each other, which was very sudden as they all lived together for such a large part of their lives. “ I had to keep going it was such a huge loss,” said Pam. When Pam was caring for her blind mother and unwell husband the only time she had to exercise was at 4.30am in the morning, so Pam would get out the door complete her walk and then start her day caring for her family. Nowadays Pam attends a regular ‘stretch and strength’ group exercise class at Gunnamatta hall and plays golf three times a week at Cronulla Golf Club. “I took up golf at 44 and worked hard at it, years ago my handicap was 12 and now it is 23 and my ambition is to get it to 22 so I can play in A grade.” In between Pams love for gardening and cooking, playing golf and exercising she manages to give up every Monday morning to volunteer for the ‘Friendship Group’ at St.Andrews Church. Where the elderly come along from retirement homes by the church bus and do little activities and exercise and enjoy morning tea and lunch. “I enjoy doing this each week and it makes them happy too”. Living the good life and sticking to the basics of early to bed, early to rise and eating a balanced diet has kept Pam free of medication and given her a healthy and happy life. By Melisa George

Creatively You’ve worked your younger years in a chosen career, later met the love of your life, married and had children. For some mothers stepping back into the workforce can be quite daunting after some precious time off raising children from finding care for your children, juggling the work-life-family balance and Trina Johnson still finding time for yourself. I spoke to two very talented and creative women who have run successful home operated businesses without even having a business plan. Trina: I had previously worked for other design agencies, but found myself not being creatively satisfied with some of the work and with my eldest starting school I needed to be around before and after school hours. Lisa: I had a baby! I photographed my daughter and my friend’s babies, and people liked what I did. I just loved taking photographs and was inspired by people’s reaction to the images I had taken of their children 2.How do you find (or make the) the work/family balance running a business from home? Trina: People often say “Oh I don’t know how you do it – I would get distracted and do some washing..” I am strict with my schedule - I have a dedicated home office, I have the kids off to school and I’m at my desk by 9am. I also have a fortnightly cleaner which helps immensely. Lisa: Hectic at times but I have deliberately kept the business low scale so not to take over my family life. I schedule appointments around my family and work on post-processing at night after the children go to bed. I run the business from home and see clients here and in their own home too. 14

3.Did you start with a business plan and set goals to achieve what you have so far? Trina: Not really, although I know I should! My goal this year is to set some goals... Lisa: Not really, I just started slowly and it grew from there. Word of mouth has been my best advertisement. 4.Do you have any formal training in your field or business or what do you think prepared you the most for where you are at now in your business? Trina: I have a certificate in Graphic Design and I have simply done some training courses on web design. Nothing beats hands-on experience for learning. your own – for any type of business! Lisa: I did a course early on but experience has been my best teacher. I just grew with the business and really enjoy what I do. 5. Anything else you would like to add? Trina: If you’re going to start up your own business, make sure you have a budget for things such as logo design, web site, stationery etc. And don’t forget marketing. You can have the best looking site/ product/service in the world, but you need to tell people about it. Lisa: I am so fortunate that I do something that I love. It’s not as though I have a huge business or had to outlay enormous amounts of money to set up. I started small and keep it manageable so I can enjoy a sense of achievement but not have it impact too much on my family life. By Melisa George

Then it’s back to base to watch the sun set with maybe dinner that evening overlooking the bay. It’s the life we lead here in “The Shire”. Walk of hope Help toward rebuilding the basics for the Rwandan people on April 2 Living the good life and getting back to basics is easier said than done when we reflect on places such as Rwanda known as “the land of a thousand hills” in East Africa. The Rwandan genocide of 1994 saw the murder of over 800,000 lives with the scale and speed of the slaughter leaving its people reeling. Women have played a pivotal role in reconstructing Rwanda since the 1994 genocide and international peace experts say their leadership has been critical to recovery of a nation that lost one-tenth of its population in 100 days. Michele Black, a local pre-school teacher and director is one of the many that has travelled to Rwanda over past years to help improve education in the country. Aussie teachers, such as Michele, have been working with the Rwandan Government to retrain Rwandan teachers as a practical means of support. For the past 5 years, teams of teachers have successfully trained over 1000 teachers and

this year hope to train a further many more. Education is the key to rebuilding the nation and lifting Rwandans out of poverty.The ‘Walk of Hope’ is designed to increase awareness of the Rwandan plight. The ‘Walk of Hope’ is held every year and open to the general public. It commences at Inaburra School at Bangor, and finishes up at Dunningham Park at Cronulla. It kicks off at 8am in the morning and takes about 3 hours to complete. It costs $30 to enter, and these funds go towards resources purchased for the Rwandan teachers such as pens, bags, notepads etc. This year the walk is scheduled for Saturday 2nd April. Seafood Restaurant The “SEAFOOD” restaurant is a genre that does not get much attention from the gourmet crowd, yet for those who consider fresh fish and crustaceans cooked with imagination or just very simply then Bayblu is a standout. Bayblu, situated on Shipwrights Bay at Blakehurst is a familiar face to the dining scene in Southern Sydney. Owners Jack and Sam Petrides are highly regarded restaurateur’s who bring a wealth of experience and afford the diner, upon arrival and throughout their time at Bayblu, their personal attention. Arriving in the early evening you are seated comfortably in a dining room flooded with plenty of natural light, clean crisp interior and a lovely view of the bay, its altogether easy to enjoy Bayblu. Fish and chips definitely taste better when eaten in sight of a large body of water and moored boats. As the name suggests, Bayblu specialises in seafood, there is of course a selection of dishes for the carnivores, stand outs include the King Island Beef char-grilled served with a béarnaise sauce ($33.00) or Roast Duck with black cherries ($35.00) The “all day” dining menu is comprehensive to say the least with all the usual suspects, Sydney rock oysters au natural ($17.50) and salmon sashimi ($23.50) a personal favourite.

Mains are again extensive and include fish such as snapper, kingfish, John Dory and Bayblu’s famous platter for two ($165.00). My personal favourite being live lobster from the tank simply grilled with butter, lemon and a little garlic. (Market price). All mains are served with seasonal vegetables but my preference is the Greek salad, the fetta cheese I am told, is Danish and has a remarkable flavour and creamy texture. Golf is more than just a walk to

Frank Hockings “I’ve got the best of friends playing golf ”

During a round of golf a person walks about five kilometres. It can take anywhere from two to five hours to complete eighteen holes depending on ability, group size and how busy the course is. Playing sport in the fresh air is good for any person especially a low impact, less physically demanding sport like golf and is something that can be played through out life. Frank Hockings who recently turned 86 has been walking golf courses for over 60 years saying, “The atmosphere is the best in the world”. Recently being inaugurated as a lifetime member of Cronulla Golf Club I caught up with Frank to find out his secrets of living the ‘Good Life’. “I’ve got the best of friends playing golf,” said Frank. I play twice per week and take my wife to the club for lunch on Fridays and go practice

A quick 9 with Frank Hockings 1. When did you start playing golf? I started playing golf some 60+ years ago. 2. What is the best thing about playing golf? You can play on your own, with the worst or best players and still have a good game, you can play with your friends & family. It is the best atmosphere playing out in the fresh air and you can play in the rain or sunshine. 3. How do you feel after 18 holes? When you have a good round you want to play again as you don’t think about anything but hitting the ball without much effort and 34

What would your suggestion be to someone starting out at golf? Head down to the driving range, get a bucket of balls and hit as many as you can. Golf is 90% confidence. Ask a (golf) pro how to hold the golf club properly to get the right grip. Every golfer needs to practice and to have the confidence to hit the ball.


The Mental Benefits of golf

Golf clubs are great places to meet new people and mix with friends. It’s a game that can be played by the whole family. Being a stationary ball sport it can be easy to learn the basics. But to become good at golf requires some effort to understand the swing, and mental discipline to ingrain the lessons learned into your game. Even the simple arithmetic of counting up your score and calculating handicaps can keep the mind stimulated. Most golf clubs, although much more relaxed than they used to be, have a casual dress code. Turning up relatively smart each time means a slight effort is made with regards to appearance. Taking trouble about the way you look sometimes requires effort. That’s a good thing. More than anything else golf teaches someone to keep going for the full round. Whatever we do in life, if we can learn to keep going, and keep trying, it can only be good for our mental health. Overall it will add to our happiness.

6. Who do you aspire to as a golfer? I always liked Von Nida he won the Australian Open three times and was runner-up six times along with being an honest player. 7. What’s your secret to being healthy at 86? I have the best cook in the world ‘my wife’ so I don’t have a need to go out, although we still do anyway. I have a healthy balanced diet, don’t drink alcohol and a big tea drinker. I drink English breakfast and can have up to five cups in a row and have my own large pot at Cronulla Golf Club. 8.Your Handicap? In my earlier years my handicap was +8 and now its +20. 9. Goals for 2011? Well I am just pleased to be here!

Muz & Hardos Fishing Tips This month we've gone North again into the warmer waters of Queensland, the home of the elusive, "Mangrove Jack". Whoever has been lucky enough to catch a, "Jack" definitely won’t argue that pound for pound they are up there as one of the most aggressive fighting fish in Australian waters. The Jack use an ambush style attack where they hit the bait or lure swimming hard and fast, and head straight back into their snag (home). With about half of all hook-ups ending in a bust off or becoming snagged they can be a very frustrating target species. I hooked 4 this day only coming home with one as I was fishing off rocks. Live Poddy Mullet rigged with a double hook snell rig, 20lb main line, float on top of swivel and nothing under 40lb mono leader is probably the best way to go, though lures are also an irresistible treat. Just remember never leave your rod unattended and be prepared for a great tug-o-war. On top of all that Mangrove Jack are regarded as one of Australia's top table fish. Tight lines. Muz and Hardo

Your risk of melanoma is exposure to ultraviolet (UV) radiation from the sun. 65% or more of melanoma is caused by exposure to the sun, especially during childhood. Do the following to help prevent skin cancer:  Stay out of the sun during the midday hours.  Wear protective clothing. This includes a hat with a brim to shade your ears and neck.  Use daily a sunscreen with an SPF of at least 15.  Set an example for your children by using sunscreen and wearing protective clothing.  Avoid sunbathing and tanning salons.  Examine your skin regularly. BEACH life Going to the beach is a pastime which is loved by many Australians and especially people from “The Shire”. It is a great way to spend time with family and friends. Many people are unaware of the safety precautions that must be taken so I have included a few of the simplest to consider when visiting any beach this summer. Look for and understand the signage on the beach. This will help you understand where the safe and unsafe swimming areas are. The safest place to swim is BETWEEN THE RED AND YELLOW FLAGS. • It is important to always swim with someone else. • Check the depth of the water before you dive in. • If you feel that you are in trouble raise your hand and don’t panic. This will alert a lifeguard to come and assist you. • If there are no flags this means the beach is not open. It will usually be indicated by a sign in their place saying BEACH CLOSED. If this sign is not up and there are no flags this usually means lifesavers are not present.

Therefore I recommend choosing another beach to swim. • Be sun safe. Australia has an alarming rate of skin cancer and it is a major health issue. Protect your self and other family members or friends with the following measures: • Remain in the shade as much as possible • Wear clothing unless in the water where it is advisable to wear a rash shirt • Wear a hat and sunglasses to protect your face and eyes • Sunscreen must be applied 1 hour before you enter the sun so it can be absorbed in the skin and reapplied every 2 hours • Drink plenty of water to stay hydrated. with a new baby Preparing for the arrival a new baby can be expensive. Here are some tips on how you can reduce the cost: Breastfeed – if possible. Not only is it free and convenient, but it’s the perfect food for your baby. Use cloth nappies – these have come a long way in the last few years. Even if you can’t use them all the time, try using cloth nappies at home and disposable when you’re out. Share clothes – babies grow so fast, why not share clothes amongst your friends. Make your own baby wipes – use a cotton wool ball with some warm water for a newborn baby, or a soft washer for bigger babies. Save the packaged baby wipes for when you are out. Ask for advice – ask other parents what they bought and did/didn’t find useful. This will save you buying things you don’t need.

“the coast” Ever since I was a boy living in Cronulla, weekends were spent “down the coast”. When our beaches become crowded with weekend visitors, it’s time to slip away “down the coast”. Easily accessible from Cronulla, the unspoilt natural beauty of the south coast of New South Wales unfolds in a series of bays and coves. Little townships, many with interesting histories, are known for their fine food and wines, and great country markets. Superb local cheeses are a speciality as the area is rich in dairy farms. Marine mammals take pride of place – pods of dolphins and migratory whales cruise past secluded white-sand beaches, and Australian fur seals thrive on Montague Island. There are two marine parks here - at Jervis Bay and Batemans Bay. From Sydney head south through the Royal National Park and along the Sea Cliff Bridge, a beautiful drive that is flanked by the Tasman Sea on one side and the richly forested Illawarra escarpment on the other. Lately Mollymook has become a favourite destination. It is a quiet, leisurely, coastal town with protected beaches. Set on hills rising from the

coast into pastureland, it is only 224 km south of Sydney. Mollymook Beach is a strip of golden sand and a long stretch of clear water for body surfers, board riders and fishermen to enjoy. Headlands offer protection on windy days while the coastline also provides safe swimming at places such as Narrawallee Inlet and the Bogey Hole. Dolphins are often seen off the beaches or whales migrating along the coast. The town has plenty of accommodation options. Mollymook has two fine golf courses. One is the 9-hole Beachside Course located on the southern end of Mollymook Beach. The other is the 18-hole Hilltop Course, in a bushland setting yet still within earshot of the waves. A beautiful garden need not cost a lot of money. In fact, there is a lot of pleasure to be gained from creating a garden masterpiece from scratch. Propagating your own plants can be done in many ways. Collecting seed, dividing plants, taking cuttings or layering, even a lawn can be grown from ‘runners’. Learn more about propagating in books, from the internet or by asking your local nurseryman. If in doubt, just have a go, what have you got to lose? Plants that can be divided include many of the ‘strappy leafed’ plants such as clivea, agapanthus, liriope, kangaroo paws and many orchids just to name a few. When growing from cuttings, it is advisable to use a rooting hormone powder and also water with a weak dilution of seaweed extract. Use a propagating

mix to plant into until the cuttings take root and then transfer them into a well prepared garden Dracaena deremensis bed or into a pot using a ‘Lemon Lime’ premium quality garden mix. Popular plants such as yucca, cordyline, dracaena and agave will grow very easily from cuttings, if you take the top off not only can you make a new plant from the cutting you will also get more plants growing from the remaining stem of the plant. Other plants such as bromeliads actually grow babies at their side, these are called pups and can be separated from the mother plant when they reach approximately a third of the size of their mother. Soft tip cuttings are easy to grow in the warmer months such as lavender, rosemary, lilly pillies and daisies. Everyone knows someone with some gardening experience. Gardeners are usually very generous in sharing their knowledge. Talk to your neighbours and friends or join a local garden club, where members are only too keen to share or swap cuttings and plants. by Karen Smith

But what does this actually mean? There are a lot of things you should check before you book. • Is your dog really welcome there (or merely tolerated if well behaved and housetrained.) • Are dogs of all ages and sizes acceptable? • Is there a secure enclosed fence? • Is your pooch allowed inside the house? • Is a doggy bed provided? It’s vitally important to call the property and ask lots of questions.That way you can be assured to find the perfect place for the whole family including your dog.
