Rebel with a cause With more than just a hint of ageing rock star and looking like he definitely knows one end of a drum stick from the other, Paul Spencer is the driving force behind Maverick, an Americana music festival that has got feet tapping both sides of the Atlantic. Paul set up Maverick in 2008 after a trip to the legendary Jazz Fest in New Orleans sparked the idea that Suffolk could be just the place to host his very own music festival. Paul has been involved in the music industry for years; prior to moving to Suffolk in 2003 he had spent more than a decade making music videos in Hollywood for the likes of The Stones, Bowie, U2 and The Kinks, and having just completed a series of BBC4 music documentaries was looking for something new. At the time 4

a music festival next to his house seemed to make perfect sense, and when Easton Farm Park said the weekend of the 4th July was free, Maverick was born! Now in its ninth year, the festival has grown from an audience of 400 to just over 2000, all drawn to this sleepy corner of Suffolk to enjoy the boot stomping, yee-hawing music that is Americana. Paul admits that in the beginning it was not all plain sailing as understandably some people were apprehensive as to how

a music festival would affect the village. Luckily over time this fear has receded and Paul is proud of the fact that there is now a large local following, including a team of tireless volunteers who give up their weekend every year to help marshal the event. So what is Americana? I have to admit that the first year I went, I had no idea what to expect and was just excited about having an excuse to don a straw hat and sleep in a tepee, so I was pleasantly surprised by this lively fusion of sound that incorporates different styles of American roots music, including country, bluegrass, rock and roll, folk and R&B; all with the same joyful beat that makes you want to get up and dance. As well as the great music there is also a fabulous selection of regional food stalls, real ales and local cyder, and a whole farm park for the kids to explore.

Even though the festival has grown, Paul has always been true to the integrity of the music. The genre is attracting a loyal following, especially in East Nashville, and it is amongst this hot bed of cowboy boots and harmonicas that Paul hunts for emerging talent. There have been a few big names such as Rich Hall and Billy Bragg, and even a very young Ed Sheeran, but it is these new discoveries that make the festival exactly what it is – a maverick. It is a big family hug of a festival, where the children run a little bit wild, the dogs wear spotty neckerchiefs and you find yourself seriously contemplating buying a pair of vintage dungarees. Nothing quite like wearing big sunglasses whilst playing loud music on a sunny day during an English summer; it just feels so good! Combine this with fresh fashion ideas and I am buzzing. Stripes are everywhere: skinny, wide, wavy, horizontal and vertical. Add this to the revived ‘off the shoulder’ look, dish out some quirky hemlines with mismatched stripes and it becomes one of the novel mixes for S/S 2016. Shoes and sandals continue to be a huge source of pleasure for me and I am not disappointed this season. My favourites include low-heeled sandals with a buckle across the toe and sparkly pointed flats, as well as the wooden wedges you know I love. It is, however, still so cool to wear trainers or flips flops with dresses; a look I will never tire of. Another new look to try is a loose top with some lace and a hint of ruffles. Accessorize any of the above with delicate jewellery or chunky bangles – wooden, plastic, metal – take your pick, and you will instantly be on trend for this season. It is all too easy to stick with favourite outfits and I know I am guilty of this too. So despite the fact that I have never found it easy to wear stripes, ruffles or go strapless, I am going to give it a go, even if I just try them on in the changing room. As they say, what goes on in the changing room can stay in the changing room .....

Sarah Markham of Olivie, a new interiors shop in Framlingham, invites us to explore the delights that lay hidden behind the sweeping faรงade of her home on Double Street. Double Street in Framlingham has always held a certain intrigue. The assortment of houses on either side tower over the narrow street; each one unique but none of them offering a clue as to what lies behind the painted front doors and netted windows. As you walk along, the houses all seem to blend one into the other, never quite allowing you the chance to glimpse through to a sheltered courtyard or an imagined secret garden. The street was actually built upon the boundary ditch of the outer courtyard to the castle, and up until the last century it was the bustling main shopping street of the town. So it is with some excitement that I raise the heavy knocker and wait for Sarah to answer the door.

I am not disappointed. Inside the rooms are light and spacious and hallway stretches back to a wonderful open plan kitchen-cumbreakfast room that has doors out to a sunny walled garden. Sarah explains that she only moved here in September last year, having lived on the outskirts of Nairobi, Kenya for the past eighteen years, and is still getting used to the low ceilings and beams. It was actually her twin sister Lucy who discovered the house was for sale, and knowing that Sarah was hoping to return to the UK suggested she should have a look. One look was all it took, and before they knew it Sarah and her husband David were packing their lifelong belongings into a container ship bound for Suffolk. 19

Dating back to the 17th century, the property is full of charm and character with uneven floors and sloping ceilings, and Sarah has decorated throughout with subtle shades of Farrow & Ball, such as Skimming Stone and Elephant’s Breath, which perfectly compliment the exposed timbers. It is a wonderfully bright house and the large windows overlooking the street that would once have been the shop frontage, flood the main reception rooms with natural light. Off the central hallway there is a formal dining room to the right and a cosy snug the to the left that David has commandeered as his ‘man cave’, and as Sarah shows me around I can hear the gentle stilted commentary of the cricket from behind the closed door.

The sitting room is utterly delightful, and there is a calmness and a serenity in here that makes you want to sink down into the deep sofas and lay your head on one of the plump floral cushions. Heavy linen curtains sweep the floor, low tables are festooned with silver picture frames depicting special family moments, and a large vase of fresh lilies, hydrangeas and silvery grey foliage creates a stunning centre piece. Around the walls hang an interesting collection of artwork, and here and there I recognise a few of the ottoman textiles and ceramics that Sarah sells in her shop Olivie, and in the huge inglenook fireplace a beast of a wood-burner readily rises to the task of heating the whole house once the weather turns colder.

As Sarah tells me about her time in Kenya, Lily the labrador wanders over to say hello; another of their cherished belongings who made the long journey to the UK, and who it would seem has settled in rather well, loving her morning walks around the Mere. Outside in the sunny walled garden I spot some African sculptures amongst the raised beds; a pompous warthog and an endearing family of guinea fowl fussing through the undergrowth; just small reminders of how all their surroundings have changed over the last year. On our way back inside Sarah pauses by a vase overflowing with stocks and sweet peas and admits that the scent of these quintessential English flowers is one of the things she really missed and is now relishing the chance to fill the house with their heady scent.

Upstairs, the bedrooms echo Sarah’s same simple style and the neutral palette is enhanced by vintage textiles, luxurious sheepskin rugs and pretty painted furniture, some of which Sarah sourced locally at Two Peas and Marlesford Mill. The vaulted ceilings in the main bedrooms make them light and airy and there are two further single bedrooms tucked up under the eaves; one of which is so adorable one of her daughters opts to sleep up here when she comes to stay. Collecting my bag from the kitchen I ask about a rather striking painting that had caught my eye earlier. “Oh I picked that up at Portobello Market in the 70’s.” Now that sounds like a story for another time! Ain’t no mountain high enough! On May 29, 2016 two young local lads, set off on a 6,500 mile trek from the UK to Kathmandu, Nepal, all to help raise money for Annie’s Challenge, a charity set up to fund research into brain tumours. It is an organisation very close to their hearts as it is run by Henry’s family and named for his sister who passed away earlier this year. The walk will take them up to a year to complete taking them through Europe, Turkey, Iran, India and finally arriving in Nepal in early 2017. The British bee population has been on serious decline over the last decade, so it is very reassuring to meet Penny Robertson, who together with other members of the Suffolk Beekeepers’ Association, is on a mission to get our gardens buzzing again. Penny has been a beekeeper for over twelve years and her well stocked garden at Saxmundham is home to over 100,000 busy honey bees. She actually has sixteen hives in total which are spread across five apiaries carefully located within the surrounding villages. She is a member of the Suffolk Beekeepers’ Association and is currently the secretary for the Leiston branch who, united by their love of the humble honey bee, Apis mellifera and a passion to stop it disappearing from our summer borders forever, have a teaching apiary where budding beekeepers can gain invaluable hands-on experience before committing to their own hive.

It is a wonderful idea and so sensible, as even though there will be many people like myself who quite like the idea of wandering down the garden on a balmy afternoon to tend to their bees and to proudly hand out pots of honey at Christmas, do we really know how we will react once we get up close and personal to thousands of slightly cross bees? That being said, the art of beekeeping is hugely rewarding and offers an insight into one of nature’s most fascinating creatures. Each colony contains a single queen, around 50,000 female workers who are the ones you see out gathering the pollen and nectar, and 31

a few hundred male bees known as drones. When a new queen hatches she is escorted from the hive on a maiden flight by a small squadron of workers who take her to a special congregation area. Here she will mate with around a dozen or more drones before returning to live out her days being pampered by the workers. Easily recognisable with her long slender abdomen and larger size, the mated queen is now capable of laying up to 1000 eggs a day and is able to control the sex of the eggs; fertilized eggs will turn into the workers whereas unfertilized eggs become the larger drones. On the surface these select male bees have quite the life, no hunting and gathering for them, instead they are waited on hand and foot by the busy workers, their only goal in life being to

mate with a queen. But there are disadvantages to all this decadent living; those drones that are lucky enough to mate die straight afterwards, and those left behind at the end of the summer are literally booted out of the hive by the female workers who are a little fed up by all their avarice and greed. Penny explains that being a beekeeper comes with a certain level of responsibility. In the winter, when numbers within the hive have reduced to around 20,000, all huddled together for warmth, you should make sure they have enough reserves of honey to survive, and in the spring must check and treat for the dreaded varroa mite. In early summer the colony will naturally start to expand and now the beekeeper needs to make sure they don’t swarm.

Bees communicate via pheromones, and the queen has her own ‘queen pheromone’ which attracts the workers to her and unites the colony, but if numbers are too high the workers will create a new queen. This forces the old queen to leave, taking half of the colony with her, and I can remember as a child these humming dark clouds that would momentarily darken the sky and have us running for cover. Sadly, they are not such a common sight these days but Penny says that the association is always very happy to come and collect a swarm if you do see one, and that they have a special isolation apiary where they keep them for a few weeks to make sure they are healthy before finding a home for them.

Her enthusiasm is infectious and she is a passionate advocate who, together with other members of the association, regularly visit schools, gardening clubs and shows in order to share their knowledge with others. I for one leave inspired and know that even if just for now I only manage to plant a few bee-friendly flowers in my garden, in the not too distant future I will be the proud owner of my own hives and that for once Christmas presents will be sorted well ahead of time.

PhotoEast is a new festival in Suffolk showcasing a range of exciting and contemporary photographic images that is hoped will inspire a new audience and prove that the power of photography is as important now as it has ever been. Over coffee at her home just outside Framlingham I chat to Jo Bexley, who set up PhotoEast with her husband Adrian Evans, the director of Panos Pictures – a London photo agency specialising in global social issues – to learn more about the festival and how they see it developing. Jo explains that prior to moving to Suffolk she had worked in PR and marketing for large international development organisations such as UNICEF and ‘Diana, Princess of Wales Memorial Fund’, so together with Adrian they have always shared an interest in photojournalism and the way it can shape perception and understanding. She retrained as a

languages teacher around five years ago in order to fit work in around the family, but when the opportunity arose to become involved in a new photographic festival, she jumped at the chance. Visual Arts festivals have always been very popular across Europe, especially in France, and many have become huge cultural events which have both a socio’ and economical benefit to the region. To be able to bring such an event to Suffolk was an exciting prospect and Jo and Adrian were keen to be involved; helping to develop the concept and plan how the festival would take shape. This was back 37

in 2014 when initially Halesworth was the chosen location, but as plans and ideas started to expand they soon realised that they needed to centre the festival in a more urban environment so that it could appeal to a larger demographic and have a greater impact. They teamed up with other local artists and arts entrepreneurs including Eamonn McCabe, a renowned photographer who has worked for The Observer and The Guardian over the years, and together they decided that the historic architecture of the Ipswich Waterfront would make the perfect backdrop for the newly named PhotoEast. The team approached University Campus Suffolk (UCS), who has just invested in amazing new state of the art photography facilities and whose BA (Hons) Photography course is already gaining 38

a growing reputation that is attracting students from across the country, and they could immediately see what a fantastic opportunity this was. Jo explains that PhotoEast is really only the beginning of what they are hoping to achieve and they are already working with UCS to set up a mentoring programme for students, allowing them to gain experience working with Adrian at Panos Pictures and arranging for guest speakers such as Eamonn to come in and share their invaluable experience. They also gained the full support of Ipswich Borough Council who has been instrumental in the rejuvenation of the waterfront and were delighted to welcome such a dynamic and visionary event to the town, and also Ipswich buses who have laid on fourteen specially designated festival buses that will transport people to the different venues.

The festival launched at the end of May and will continue through to the 25th June, with events taking place across a range of venues at Ipswich Waterfront and other locations along the East Suffolk railway line, such as The Cut at Halesworth and Darsham Nurseries. Under the theme ‘Of Time and Place’ the festival plays host to some of the world’s most renowned photographers, as well as artists with a connection to the area and Photography students from UCS. Looking through the programme what I love most is the enormous range of work on display. I can’t wait to see ‘Face of the Century’; a series of 101 chronological portraits by Julian Germain, whose birthdays span every year of the 20th century, and ‘Eyes of War’ by Martin Roemers, which is a moving tribute to those who lost their sight during WWII.

There are also a number of exhibitions which are dedicated to telling the story of how our local towns have changed over the centuries; a pop-up studio where you can bring your dog to be photographed by the creative Bill Jackson; a series of projections outside the Cult Café in Ipswich; cuttingedge story telling from Panos Pictures with billboard shows along the Ipswich Waterfront and a collaboration of dance and movement by DanceEast. The vision of PhotoEast is to establish Suffolk’s reputation as a centre for excellence in photography, and as Jo continues to list everything that is taking place over the four weeks I would say that this inspirational festival really could be the start of a cultural revolution that is about to take Suffolk by storm. There’s so much joy to be had in the garden right now, as plants blossom, bees and butterflies flit from flower to flower and a whole myriad of tiny insects weave a path through the foliage. It is easy to think that living in the countryside we don’t need to make any special provision for these welcome visitors but there are many simple things we can do to create a wildlife-friendly garden. Having a selection of nectar-rich flowers is one of the best ways to attract pollinators such as butterflies, moths, bees and hover flies. Plant them in drifts so that their colour and scent are easy to detect and prolong the season by selecting a variety of plants that flower at different intervals. Early-season favourites include the English bluebell, primroses, & wood anemone, followed by a burst of colour from buddleia, lavender & verbena, and finally the autumnal hues of honeysuckle, sedums & Michaelmas daisies.

Don’t forget that herbs are also very popular with insects, and as well as being wonderful to grow, there is nothing better than being able to pick a few stems of rosemary for your roast lamb or nipping off some fresh mint leaves to add to buttered new potatoes. You can also help wildlife by leaving a simple log pile in the corner of the garden. This creates a cool damp retreat in the summer and protection from frosts in the winter, and the rotting wood is manna to beetles, whose grubs also make a tasty snack for birds, hedgehogs and frogs. Bee and bug hotels make an attractive feature on a sunny wall and are a fun project that can involve the whole family, and by just leaving a small patch of your lawn uncut you can provide a refuge for small mammals, reptiles and insects. Getting ship shape Westerly winds return to bathe the countryside this month, bringing many hours of sunshine and the chance to look around the garden and enjoy the work put in earlier in the year. June brings delicious treats of early sown salads and vegetables and the promise of ripening tomatoes. If you are lucky enough to be on light friable soil instead of heavy clay, then the opportunity for an asparagus bed is well worth the long wait until you harvest the crop. It is such a treat to cut, and simply dressed with butter or a vinaigrette makes for a fine supper within minutes. If you have box or yew to shape make sure your clippers are nice and sharp, avoid

Both evergreens bring a solidity to a garden, especially in winter, and yew is best clipped in August while box, although traditionally should be cut by Derby Day, any time up until mid-July is now common practice. June and July are the season of roses and many gardens will be full of their heady perfume. One of my favourites is the deliciously named Rosa Mundi, which dates before 1580 and has a perfect flower in deep pink with white stripes on the petals. Like a pot of their freshly produced Chermoula, Mark Robinson and Victoria Monaghan of new food company Taste Collectiv are full of zing and zest and the promise of future adventures. We meet upstairs at The Cookhouse Restaurant at the Suffolk Food Hall where Mark and Victoria have recently rented a unit, and with the expanse of the River Orwell glittering below, talk about their new venture. Victoria, who many of you will know from Leo’s Deli in Framlingham, wears the apron and with her expert knowledge of flavours and specialist ingredients, has spent the last year in the kitchen refining the recipes, whilst Mark, who comes from a business background, has the strategy, planning and route to market very much under control. Their newly formed company Taste Collectiv produces freshly made bases for dishes inspired from their combined love of travel and authentic food experiences.

Their personal paths crossed a few years ago, but it was whilst they were enjoying a road trip around Italy in 2014 that the idea started to take shape. At the tables of unassuming restaurants hidden down back streets and bursting with locals; at rustic market stalls and at cafĂŠs that lay way off the tourist trail, they fell in love with the real taste of Italy: simple, honest, homecooked dishes that were soothing and satisfying, and yet oddly sophisticated in their mix of flavours and seasoning. Victoria knew that the key to this style of cooking was the use of a freshly prepared base, fragrant and flavoursome, and from which a whole number of dishes could be created, and also that so far nothing she had tasted in the UK was even coming close.

They started with a pesto, and quickly decided that the only way to create one that was creamy and smooth enough, was not only to use quality ingredients, but also authentic ones. They sourced a delicious Pecorino Sardo – a hard cheese made from sheep’s milk, ripened in the cool cellars of central Sardinia – and combined it with Suffolk sea salt and freshly grown basil from a young producer in Essex, whose new aquaponic growing system will allow him to supply them year round. The result was a little taste of Italy born right here in Suffolk. Over the following year they then set about producing a range of five different bases, all using carefully sourced ingredients and all designed to transport you to their country of origin in a single mouthful.

The peppery warmth and buttery richness of their Romesco is all about long lazy lunches along the coastline of the Mediterranean. Mark tells me that it is a traditional sauce from Tarragona in north eastern Spain, and that the sherry vinegar they use is from a small family-run vineyard out there, while Victoria adds that it is amazing spread over white fish or as a dip for prawns or kebabs. The Chermoula is full of zesty freshness that comes from the preserved lemons, and its North African mix of earthy spices will have you reaching for the tagine the moment you open the packet. Travelling south to Mozambique we then try its rather hotter cousin, Piri Piri. Literally meaning ‘pepper pepper’ in Swahili, it certainly packs a punch but is perfect used as a marinade for spicy BBQ chicken. Finally, the Harissa, a hot aromatic

paste made from Mexican ancho chilies that give it a lovely liquorice undertone whilst the fresh mint cuts through the heat. While Victoria has been hard at work balancing the flavours, Mark has been balancing the books. Producing a brand new product and bringing it successfully to market is a very complex and costly business, and together they have had to jump through many hoops, but with everything now in place, the launch date has been set and the Taste Collectiv range with be in selected retailers from the start of July. The packaging is bold and striking, each label telling a tale of the sauce’s origin, with iconic buildings and mountain ranges forming the backdrop, reinforcing their belief that through travel and exploration we can rediscover great food.

I feel privileged to have been allowed an insight into the start of their journey. They are excited about the road ahead and their enthusiasm and passion for the product is infectious. As I leave, they load me up with some samples to try at home and a few hours later I find myself serving up a large pot of fresh pasta and pesto, happily lost in my memories of a few sun-filled weeks spent in Tuscany. Job well done I would say! Marinate the diced chicken in the Piri Piri sauce for a few hours, or overnight if you want them really spicy, then thread onto BBQ skewers and put aside. Add the Chermoula sauce to the cooked and cooled orzo pasta and stir thoroughly. Chop the tomatoes into 1cm pieces and add to the pasta along with the raisins/apricots and finely chopped coriander. Cover until ready to serve. Put the beer on ice, chill the wine and light the BBQ. When you are ready, cook the chicken skewers on BBQ (or under medium grill) for 15-20mins or until cooked through, and serve with generous helpings of pasta and a well-dressed leafy salad.

Under cover of darkness Over the last few years camping has become such a glamptastic experience that if your yurt does not come with duck down duvets, matching Emma Bridgewater crockery, Cath Kidson furnishings and free WiFi, then you have every right to jump in your immaculate 4x4 and head to the nearest boutique hotel! A little harsh I admit, but when I found myself frantically packing the car for a weekend camping trip recently, I did wonder if we really needed the cafetière and if both red, and white wine glasses where entirely necessary, and why the kids needed their phones, tablets and a laptop. Wouldn’t life be so much simpler if we just grabbed our sleeping bags, a disposable BBQ and headed for the open hills – or at least the garden? 62

Camping in the garden as a child always felt like such a treat; a spontaneous decision that turned a perfectly normal night in to a magical family adventure. It didn’t seem to matter that you were only just outside your back door, you were still sleeping outside and once the sun had faded and the darkness settled all around, you could imagine you were anywhere. Wriggled into your sleeping bag with your socks still on and your pillow already feeling a little damp it was never long before you heard the hoot of a lonesome tawny owl or the rustle of something closer that almost sent you scuttling back inside. It is an experience that the RSPB are keen for us all to try again as for some years they have organised the ‘Big Wild Sleepout’,

which encourages everyone to uncover the nocturnal goings-on of their own back garden. It is taking place over the weekend of the 29th-31st July and you can register online for some great ideas on how to get the kids to connect with nature, such as torch lit mini-beast safaris and basic bush craft skills. The website also gives details of planned events at some of their reserves, including Lakenheath Fen and Havergate Island in Suffolk, where you are invited to camp out in slightly wilder surroundings. We do try to camp most summers and together with a group of friends will take over a corner of the farm. And yes we will pack the kitchen sink and yes there is lots of muttering as the tents go up and the airbeds won’t inflate as we have lost the bungs – again – or we realise we have forgotten the corkscrew, but to see the

kids wandering off through the meadows and sat around the smouldering fire in the morning, still wrapped in their duvets, is priceless. A few years ago a rare balmy summer’s evening did catch us completely off guard. One minute we were merrily grilling steak on the BBQ, the next thing we knew we were lying out on the trampoline with the kids for an impromptu night under the stars. With just our sleeping bags, a few blankets and a couple of dogs to keep us warm we watched as the stars slowly circled overhead, and after working out that the best way to sleep on a trampoline is with all our feet pointing to the centre, drifted off into a gentle bouncy sleep. It was fantastic; silly and spontaneous and thankfully there wasn’t a cafetière in sight! www.rspb.org.uk/sleepout 63
