who’s about

A trip down memory lane We ask Peter Purves, former time-traveller and Blue Peter presenter, about his career, his love of dogs and life in Suffolk. Q. As Steven Taylor, regular companion to the First Doctor, what was the most interesting place you visited? A. In reality, we did not travel very far, but some of the more memorable film locations were Frensham Ponds near Farnham for The Myth Makers (a serial about the Siege of Troy in 1965) and the very exotic Egham Borough Council Sandpit for my final serial (The Savages in 1966). However, on board the TARDIS my favourite place was Paris for the serial called ‘The Massacre of Saint Bartholomew’s Eve’. It was a fabulous script, with a wonderful cast 4

of extraordinary actors including Andre Morell, Leonard Sachs and Eric Thomson. Q. Are you still a Doctor Who fan and if so, who is your favourite? A. I always watch at least one episode of each new series, but for me, Bill Hartnell remains the best Doctor. Without his wonderful performance in the original series, none of the present excitement about the show would have happened.

who’s about

Q. Being a presenter on Blue Peter is often listed as everyone’s dream job – would you agree? A. It was the best job in television. For 10 ½ years I was privileged to travel the world, visiting places like Mexico, Thailand, Brazil, Ceylon, Morocco, Fiji, Tonga, Cote D’Ivoire and almost all of Europe. It was an unbelievably wonderful experience. Plus, in the UK we were able to drop into the best parts of people’s jobs and experience them for ourselves: driving trains, flying aeroplanes, rock climbing with some of the world’s best climbers, swimming with Dolphins and Orcas – you name it and we probably did it. Q. It was famously said that you should never work with animals and children – do you have any stories to back this up? A. To be honest, working with animals was never a problem, apart from the occasional moment such as when Petra’s puppies gathered for a birthday party and it all ‘kicked off’, and of course the famous moment when we enjoyed the company of Lulu, the baby elephant who took the studio by storm. I don’t believe there can be anybody in the country who has not seen the result of that! We didn’t work much with children back then, but there was the wonderful disaster when we had a group of Girl Guides and Brownies in to sing songs around a campfire and it actually caught

fire. Much smoke and choking went on until the studio fireman managed to put it out!! Q. With your long-term association with Crufts – what is your favourite breed of dog and why? A. In March I will be part of the team at Crufts for the 41st time! I currently have six dogs – two Standard WireHaired Dachshunds, a Miniature W/H Dachshund, two middle-aged Pekingese and an old Cocker Spaniel that we adopted. My favourite breed has to be the Mini W/H Dachs, but the gentle giants, the Newfoundland, come a close second. Q. What would be your perfect Suffolk day? A. Get up late, play with the dogs and then have lunch at one of the many excellent restaurants close to Framlingham. Maybe a saunter around the castle before a bit of shopping on Market Hill – Leo’s is a favourite – then back home to see to the dogs before an early supper with friends or movie at Aldeburgh or Leiston cinema. Q. What do you think makes Suffolk so special? A. We moved to Suffolk in 1999 and I love the peace and quiet. You can see why Constable and others found it such a joy to depict; the lovely rolling countryside, the pretty villages and rural lanes and the big Suffolk skies… what’s not to like? www.peterpurves.net Twitter: @purves_peter

Smile with confidence A plastic toothbrush takes about 500 years to decompose! Bamboo toothbrushes are a much better option but check to make sure they have nylon bristles. Try Humblebrush from The Humble Co. Doorstep delivery Get your milk delivered and wake to the reassuring sound of milk bottles clanking on your doorstep. Foulgers Dairy will also deliver raw milk and local cheese from Fen Farm. Takeaway coffee Most cafes are very happy for you to use your own re-usable coffee cup so keep one at the office, in your handbag or the car for when you feel the need for a caffeine fix. Straw poll Say no to plastic straws! It’s that simple.

Fantastic plastic revolution Love it or hate it, single use plastic is becoming one of the biggest threats to our planet, and there is no denying that it is now washing up along our Suffolk shores at an alarming rate. Do your bit for the environment and try to reduce your plastic footprint by trying one or all of these simple ideas.

Lots of bottle! Always carry a reusable water bottle that you can re-fill throughout the day. Either re-cycle an old drink bottle or treat yourself to one of the funky designs from Chilly Bottles. It’s a wrap Swap clingfilm for eco-friendly beeswax wraps for school pack-ups and for covering leftovers. The Cook Shop in Framlingham stocks a selection. You’re barred How many plastic containers line your bathroom? Deliciously scented soaps are a great alternative and some eco companies such as Lush now have shampoo and conditioner bars as well.

about interiors

Like something lifted from the pages of a glossy interiors magazine, Five Acre Barn is a stunning example of modern architecture. Commissioned by David Woodbine and Bruce Badrock, we head over to see why the award-winning design, with its distinctive zigzag roofline and dynamic living spaces, has been turning heads since 2017. Located between Leiston and Aldeburgh, just a few miles from the Suffolk coast, Five Acre Barn is first glimpsed through the trees, its striking sawtooth roofline all sharp angles and clean lines against the wooded backdrop. The new build consists of five beautiful guest suites whose interior is bang up to date with polished concrete floors and a prevalence for plywood, whilst the exterior is clad in cedar shingles that are already beginning to take on that characteristic silver shimmer. Each bedroom has doors out to a private sundeck where you can enjoy the delights of wildflower

borders in the summer and the structural beauty of various ornamental grasses throughout the seasons and, if you are lucky, hear the distant boom of a bittern as the sun goes down. David and Bruce stumbled across the original property, which consisted of a 19th century barn connected to a rather charmless 1970s annexe, in 2014 whilst searching for the perfect location to escape the rigours of South London. Having already fallen for the charms of Suffolk life after spending New Year at Snape Maltings, 19

about interiors

the possibilities and potential that the property offered were too hard to resist. After clearing back a row of ugly conifers and knocking down the existing annexe, they enlisted the help of London-based architects Blee Halligan who designed this striking contemporary extension. David and Bruce relished the opportunity to be involved and have done a lot of the work themselves, from the plumbing and plastering to the upholstery and furnishing. The completed project was received by the architectural world with wide acclaim, winning both the RIBA East and National Award for 2018 and also the RIBA Small Project of the Year Award 2018. Five Acre Barn first opened its doors to guests in Easter 2017 and since then David and Bruce have welcomed a steady stream of interesting and interested visitors to 20

this Scandi-style B&B. Guests also have the run of the original barn that has also been totally revamped in the same simple style to create a large area where guests can get together to swap stories around the communal table, read by the fire or pour themselves a sharpener before bedtime. It is also where Bruce serves up a homecooked breakfast and as guests chat, offers advice on the best places to go for coffee, fish and chips, some vintage shopping or a long coastal walk. Children over twelve and dogs are very welcome, and it is also possible to rent the whole property on a self-catering basis, perhaps just some of the reasons it has been voted one of the “Top 100 Best Places to stay” by the Sunday Times and one of the “50 best Hotels and B&Bs in the UK” by The Guardian.

about interiors

The barn and annexe are connected via a link that has been painted a gorgeously dark shade of blue, creating a contained area that is in perfect contrast to the floor to ceiling ply of the new extension and the white expanse of the barn. The bedrooms lead off a huge gallery where shelves are lined with work by a handpicked selection of local artists and craftsmen, including Jenkins and Will handmade lamps and ceramics by Sophie Cook, and a small table and chairs is arranged by the picture window for those wanting to take in the delights of the white garden to the front. The rooms are simply furnished with a mix of recycled Ercol furniture, classic high street designs and vintage pieces, but all have the same minimalist finish that is so restful and calming. Four of the bedrooms are splitlevel, with wooden staircases leading up to a mezzanine where king-size beds are plumped with cool crisp linens and a

perfectly positioned skylight allows you to watch the sky at night, whilst the fifth, which is the largest suite, is accessible to all and offers views out across the garden and the woodland behind and is flooded with natural light throughout the day. Five Acre Barn is a wonderful property, one that has been both restored and rejuvenated as well as created, and there is a genuine connection between the two spaces which is what gives it such warmth and charm. This is mainly down to the love and care that both David and Bruce have poured into the place and they should be enormously proud of this achievement. The Suffolk coast has long been a popular destination but this stylish new kid on the block has certainly broken the mould in terms of quaint places to stay by the seaside! www.fiveacrebarn.co.uk 21

Famous Five put pen to paper about town

The INK Festival – held at The Cut, Halesworth 12th/13th & 14th April – reveals five celebrity writers: Shappi Korsandi, well known as a regular on Mock The Week, 8 Out Of Ten Cats, Have I Got News For You, QI and I’m a Celebrity; Meg Rosoff, winner or on the shortlist for 21 international book prizes; Greg Mosse, a ‘writer and encourager of writers’; Scarlett Curtis, curator of the Sunday Times Bestseller Feminists Don’t Wear Pink & other lies, and Paul Heiney, a well-known writer and broadcaster but a first-time playwright. Each will be writing a short play that will be performed at The INK Festival along with over 20 other new short plays. www.inkfestival.org

Drawing on all reserves Art For Cure – the Suffolk charity founded by Belinda Gray – is thrilled to report that she and the other 42 participants successfully completed their charity challenge ride from Vietnam to Cambodia in November 2018, raising in excess of £130,000 with more money still coming in. That brings the total raised for national breast cancer research and supporting breast cancer services here in East Anglia in the last 4 years to over £650,000. This year’s fundraisers include Jelly Green with sculpture by Jeremy Moulsdale, June 14th-15th at Somerleyton Hall, and SHE, the charity’s first London exhibition, October 2nd-6th at Bankside Gallery, next to Tate Modern. Belinda is delighted to have been part of the EADT Suffolk ‘Inspiring Women’ awards this year, as well as recently receiving an award from the Prime Minister, Theresa May, for her unrelenting charity work. www.artforcure.org.uk 28

Year-Round Appeal Local artist Richard Nichols will be celebrating a great achievement later this year when he is set to publish a beautifully illustrated book revealing the stories behind ‘Phase One’ paintings of his unique ‘Around Britain’ project which features many works of lovely county locations, including Suffolk, as well as famous nationwide venues. Richard initiated this solo project 20 years ago, setting out to celebrate special places throughout the country. The concept was simple: invite people to request a painting of a place that holds real significance to them and thereby own one of a total of 366 works representing every day of the year. With many Suffolk folk eager to see their special paintings and stories in print, we are full of anticipation too! www.celebrationart.co.uk

Say hello, wave goodbye Chrissy Johnston is to perform alongside legendary tenor, José Carreras at Kenwood House in London on Sunday June 16th, accompanied by the Royal Philharmonic Concert Orchestra. The show will be extra special as José Carreras says goodbye to London as part of his farewell tour. He is one of the world’s most famous singers, having shot to super stardom as one of The Three Tenors, in the 1990s. A prodigious talent, coloratura soprano Chrissy Johnston has been performing worldwide since she made her operatic debut in 2012 with the Prague State Opera. She has also performed for various Heads of State and in 2018 was nominated for a Classical BRIT Award.

about the land

Hog & Hen is a joint venture that brings together three farming families and their goal to offer customers a choice of hand-reared chickens and turkeys, free-range eggs and top-quality local produce from their newly opened farm shop in Stonham Aspal. The farm shop is located at Mill Green Farm, on the road between Debenham and Stonham Aspal, and as I approach, the first thing I can see is a cluster of busy hens demolishing what looks like a giant pumpkin! I love to see hens running free, they are so nosey and inquisitive and the flock here at Hog & Hen is no exception as there is much clucking and head bobbing as I wander over to take a closer look. The shop was only opened in March last year but stepping into the warm I can see that the families have been hard at work. It is a fabulous space, with a meat counter selling their free-range chickens, local Red Poll beef and venison from Broughton and other

local estates, chiller cabinets are stocked with Suffolk Farmhouse cheese, milk, butter and trays of eggs, and to the centre, baskets are piled high with a wonderful selection of seasonal fruit and veg, some of which is grown in their polytunnel on the farm. Modern farming is all about diversification and this exciting new partnership was set up by Nathan and Naomi Wiffen, her parents, Mark and Rachael Howson, and cousin Anna Salisbury and her husband Luke. Anna is manning the farm shop today, so she explains how it all came about. “Mark and Rachael own the farm and Nathan works with them, helping run the 31

350 acres of arable land and managing the pigs, Naomi has her own floristry business, ‘Rose & Berry’, which has a workshop on the farm and Luke and I have reared game birds, turkeys and chickens here for the past two years. We started off just selling our free-range eggs from a small shed by the roadside and then taking orders for the hand-reared turkeys and chickens. It didn’t take long before we were selling out every day, so we decided it would be a good location for a farm shop.” Together they converted what was an old workshop into a light and spacious farm shop, which also has a walk-in processing room to one side which allows customers the opportunity to see for themselves how the poultry is processed. “We normally hand-rear about 400 turkeys for Christmas and then rear our fattening chickens in 32

small batches of between 200-250, only processing about 50 a week. For us the emphasis is always on standards of welfare and it is important that our poultry is reared, processed and sold on site so it is as stress-free as possible.” In today’s climate, in terms of food production and the importance of provenance, it is vital they offer this transparency and it is brilliant that visitors can go and see the free-range chickens in the meadow and understand the whole process from start to finish, as this way they can make informed decisions about what they decide to eat. A customer comes in for a tray of eggs, giving me time to discover the other delights on offer in the shop. Wooden crates are laden with a mix of well-known local producers such as hillfarm oils, Stokes, Betty & Miller Jams, Petite & Sweet

Chocolate, Munchy Seeds, Scarlett & Mustard and bread and pastries from The Cake Shop in Woodbridge; all small independents with their own story to tell. There is also a display area selling goods from local artisans such as painted ceramics, signed prints, and pretty beeswax wraps that Anna makes herself and one end of the shop has been turned into a small café. “We started the café a few months ago as visitors kept asking us if we served tea and coffee. It is great as it means the farm shop has become more of a destination. We serve homemade cakes and Suffolk Meadow ice-cream in the summer and have a children’s play area out the front.”

competition we want to hold an Easter event and roll out a summer programme. We’re also planting a Maize Maze and looking to set up a nature trail and more wreath-making and floristry workshops here.” It will be interesting to see how the business evolves, but one thing is for sure, they ‘all bring something to the table’ here at Mill Green Farm and we wish them every success. about design

Based over at Bridge Farm Brandeston, artisan crafter Sam Starke is carving out his living by forging a range of beautifully honed handmade knives; each one unique in size, weight and design. We meet him to find out more about this ancient art and his passion for working with traditional methods. It is a cold winter morning and as Sam puts the kettle on, I take in my surroundings. This is a workshop in the true sense of the word; concrete floors, wooden work benches with old fashioned vices clamped to their tops, sanders, grinders, off cuts of wood stacked in one corner and scrap heap steel piled in the other. The tea is builders and comes in a chipped mug and as I take a seat in a wonderfully tattered armchair, Sam drags over a wooden saw horse for a table. There are no fancy frills here, no tools arranged self-consciously for ‘Instagram gold’! This is a place for hard graft, whatever the weather, and for his age,

Sam is a breath of fresh air, with no interest in social media, the latest iPhone or the sensationalised lives of the celebrity world. He has chosen to live a much simpler life, one which connects with traditional rural crafts and he has a deep respect for the countryside and the environment. Creative from an early age, Sam did an Art Foundation course in Colchester before taking a degree in Literature and Creative Writing at UEA. As part of the course he travelled to California to study ‘Politics of Agriculture and Organic Food Production’; an interesting year where he mixed with 37

a group of American land rights activists who stirred up a passion in him to stand up for what matters and to try and make a difference. On his return he did a year’s placement with the fabulous ‘Calf at Foot Dairy’, an ethical micro-dairy producing raw milk from pasture-fed Jersey cows who are allowed to keep their calves, and in 2015 was embraced by the artisan community at White House Farm in the Alde Valley where he now lives and, together with Jason Gathorne-Hardy, is establishing a permaculture market garden. It was here on the farm that Sam met Tobias Ford, a sculptor and talented knife-maker. Over the winter – and a few whiskeys – they shared their experience and knowledge and Sam learnt the principles of metal working. Together 38

they resurrected an old forge that had been languishing in a hedge over at Butley for twenty years and Sam was able to perfect the necessary techniques needed to hand forge knives of the highest quality and character. In 2016 he moved to his current workshop at Bridge Farm where he continues to sharpen his skills. To forge his blades Sam uses both sheet steel and recycled steel, mainly picked up from the Friday Street car boot sales, and by his work bench a bucket is brimming with old blacksmith rasps, files and farm tools. Even the rusted circular sawmill hanging on the wall is a potential source and this means that each blade is quite distinctive, and the heat treatment gives them a wonderfully unique patina. Sam is also an accomplished carpenter and the beautiful wooden handles are an

intricate part of his designs. The steel blade goes all the way through the handle, which is what gives the knives such perfect balance. They feel lovely to hold, weighted firmly in your palm, and as you wrap your fingers around the handle you appreciate how much dexterity and versatility they give you. Sam uses a variety of wood, including local elm and spalted beech, olive wood from Italy, box wood from France and a gorgeously blackened bog oak from Norfolk, which is believed to be over 5000 years old. These all add layers of texture and character to the knives and Sam has also used recycled walnut from old shotgun stocks and bamboo from some floorboards that he found in a skip. The fact that the knives are crafted from recycled material only adds to their provenance and to the feeling that they have been made to last.

Although he doesn’t promote himself through social media, Sam’s work is already gaining momentum and he has been invited to exhibit at The Hand Sale, an exclusive gathering of less than fifty artisans who specialise in handmade goods, for the past three years. The majority of his work comes from commissions, and with prices ranging from £120 to £180, his knives make truly memorable gifts. In an increasingly throwaway society it is refreshing to meet someone so dedicated to keeping our traditional rural skills alive and it is great that Suffolk is at the cutting edge of this resurgence in British knife-making. If you are interested in commissioning a bespoke knife, please contact Sam on 07887 686411.

about gardens

Winter wonders The garden is a like an extra room in your home that you can dress up according to the occasion and the season. Delicate pastels and zingy greens in the spring, big shows of colour in the summer that slowly fade to give a softer, more mellow look for autumn. But what about winter? Should we get out the dust sheets and put the borders to bed? We think not, so here is a last flick of the flower chart to help you add some splashes of colour that will brighten even the greyest of days.

42

about gardens

Daphne Odora: intensely fragrant and with attractive evergreen foliage, this gorgeous shrub will flower through the winter and into early spring. Perfect for planting by pathways. Cyclamen: standing to attention with their red, pink or red uniforms, these winter heroes will flower from autumn to spring and are happy in pots or planted out underneath trees. Skimmia japonica: an evergreen shrub with dark aromatic leaves, producing clusters of small white flowers in the spring, flowed by berries that ripen to a glossy red or white in the winter – lovely for Christmas decorations. Winter Jasmine: allow this to scramble over your archways and arbours and the pretty, yellow star-shaped flowers will bring you endless joy through the winter months. Easy to grow, this is a real ray of sunshine.

Mahonia: with its delicately scented yellow flower spires and spiny leaflets, this stunning evergreen shrub is an impressive addition to any border. Heather: winter-flowering heather is a bonny little plant that bravely flowers all season long. Plant in drifts of pink, white or purple, or pot up and pop it by the back door. Japanese quince: with dramatic crimson buds and beautiful golden fruit, this is wonderful gown as a hedge or trained against a fence - the apple-like fruit makes fabulous jam and jellies too. Plan your winter makeover now and keep it simple, only decorating borders close to the house or by favourite seating areas, so you can catch glimpses of colour from your kitchen window or enjoy a moment with a cuppa on a frosty morning. 43

about gardens

Bare-faced beauty So far, the winter has yet to get its icy fingers into the garden and the valiant rose is still providing us with an occasional bloom – a welcome burst of colour in an otherwise brown and green landscape. Take advantage of these blue skies by getting outside and sorting your borders – those tempting new spring catalogues will still be waiting once the sun has set! Check your tree stakes are secure and that climbers are tied in against the rougher weather to protect their stems. Sharpen your blades and shape your wisteria, tying in any stems to ensure it grows in the right direction and prune your roses to ensure strong growth in the summer – any surviving flowers can now brighten the kitchen instead.

Tales from the potting shed 44

January Spike lawns for aeration Check plant supports and tie in your climbers Prune roses and wisteria

February arrives and the garden pauses as winter holds its breath knowing spring is just around the corner. Now you can really see the structure of the garden, its bare bones revealed. Examine the shape of your trees and shrubs and prune accordingly, fill gaps in your borders and give everything a good mulching. In bad weather, retire to the potting shed and bring your dahlias out of hibernation, sow a tray of your favourite annuals or pot up a new mix of sweet peas to enjoy in early summer. March brings longer days and the first stirrings of new life. As the birds give song above, shoots start pushing up below. It is a magical time of year when the garden is full of promise and you can delight in the re-emergence of old friends and the introduction of new ones, carefully chosen from your catalogue, all those weeks ago.

ASK THE EXPER T: DOES MY LPA LIMIT INVESTMENT OPPOR TUNITIES Barker Gotelee Solicitors is here to offer practical legal advice to help you and your family. Q. My mum’s health has been deteriorating and she has had to go into a home. Thankfully, she had given me Power of Attorney, so I’ve been able to manage her affairs on her behalf. It upsets me, seeing her hard earned savings deplete to pay for the care home fees. I’d really like to invest the money so as to provide an income that will help pay for her care, but protect the original sum. I read that as an attorney I cannot hand over my powers of investment to a financial advisor, is this correct? A. The Barker Gotelee Private Client Team is experienced in dealing with similar situations. The Office of the Public Guardian (OPG) is responsible for monitoring use of Lasting Powers of Attorney (LPAs) and provides guidance on what LPAs should contain. In September 2015, the OPG published guidance

appearing to prevent attorneys from investing the donor’s money in funds that give appointed fund managers discretion to make investments on their behalf. Many LPAs prepared before 2015 will not include the new wording and, as a result, some investment managers are now refusing to accept instructions from attorneys without specific wording in the LPA. This leaves attorneys with three options: 1. move to another fund manager who will accept instructions 2. move funds into a standard bank account 3. apply to the Court of Protection for specific permission to use a fund manager A practical alternative, where the donor still has capacity, is to put in place a new LPA that includes the recommended wording. If you would like your attorneys to be able to instruct a fund manager to help manage your

41 Barrack Square, Mar tlesham, Ipswich IP5 3RF Free parking

funds on a discretionary basis, or to continue to use your preferred fund manager, you should review your LPA (or EPA) and consider making a new LPA if the required wording is not included. DO YOU HAVE A QUESTION FOR OUR PRIVATE CLIENT TEAM? From inheritance tax, Wills and trusts to powers of attorney and care fee planning: our specialists are here to help. about food

Following the success of their Southwold café, in September last year Steve and Rebecca of Two Magpies Bakery took over a new premises in Aldeburgh and have already turned it into a place where great food, coffee and conversation can be enjoyed seven days a week. There was already an existing café on the site, but Steve and Rebecca have totally refurbished the space, giving it the distinctive look and feel of Two Magpies Bakery; the blue and white branding, the pendant lights hung from bright red cord and a Scandinavian style white-washed board counter – a counter that is piled high with a sumptuous range of cakes and pastries, including sticky ginger loaf, cherry and pistachio cake, their famously huge merengues and gooey chocolate brownies. The Allpress coffee machine is in constant demand, the rich aroma of freshly ground beans filling the air and the clinking of cups

rapping out the rhythm of the day. The café offers a warm welcome and many people are clearly already regulars, nipping in with a newspaper under their arm for a quick coffee or warming up after a walk with the dogs along the beach. Steve talks me through the hectic schedule of the past four months, an incredibly busy time that has seen the Two Magpies Bakery expand from its one flagship store in Southwold to a new café and take-away shop in Aldeburgh, and the acquisition of a premises in Darsham that, as well as becoming the third Two Magpies café, 49

about food

will soon be the new home of the bakery. At the moment, the bakery is situated at the back of the Southwold café, but once Darsham is completed, the production area will become part of the shop, doubling the size of the seating area. This original bakery was set up by Rebecca six years ago and Two Magpies quickly became synonymous with delicious artisan breads and fabulous pastries. Although Steve has been involved in the business for many years, mainly over the kitchen table and a bottle of wine, it was only when this opportunity to grow the company arose that he finally decided to become a partner, giving up his position as Chief Executive of St Peter’s Brewery. With Rebecca’s creative flair for presentation and eye for detail and Steve’s quick business mind and understanding of

50

the logistics required to manage three sites, they make quite a formidable team. They are both very involved with the day to day running of the cafés and understand that the success of this new venture will be due in part to the ethos and strong values they install in their staff. For them it is all about standards: the quality of the food they produce, the level of customer service, the visual experience and the honesty and integrity within the team. Steve and Rebecca send out an email every Sunday with a breakdown of the sales figures and an update of the week’s performance and this open communication is key to their core values. The life/work balance is also important, and they have a flexible approach to staffing, embracing the parttime culture and understanding that a little bit of give-and-take goes a long way.

about food

Taking over the Aldeburgh café in September was hugely demanding on the team as the café stayed open throughout the refurbishment which meant lots of long hours, even working throughout the night. Steve and Rebecca concentrated on the take-away shop first, changing the layout to create an inviting space. Stools are lined up along the breakfast bar for those looking for a quick caffeine fix, tempting pastries are stacked high in the window and they sell a range of sandwiches, sausage rolls and sweet treats. They also sell their bread, delivered fresh from the bakery every morning, and on a busy weekend can sell up to 300 loaves a day. The demand for quality produce is definitely there, both from locals and visitors alike, and the couple have been thrilled by the positive feedback they have received so far

With Darsham set to open this March, the team are ready for another busy year ahead which will see them grow from 18 covers to over 120 in just eight months. Steve admits it has been busy and there have been long days, but both are hugely passionate about their business and they are excited about what the next twelve months will bring. As I sit by the window of the Aldeburgh café scribbling out my notes, I think the results of all their hard work are already clear to see. A steady stream of customers comes and goes, the hardworking staff are quick to offer a smile and a refill and as for the coffee and cake … well, you’ll just have to come and try it for yourself. www.twomagpiesbakery.co.uk

Ginger, orange and cocoa nib shortbread A Two Magpies Bakery favourite, these deliciously buttery and spicy shortbread slices have just a hint of orange and a chocolatey nutty richness. Ingredients 550g unsalted butter ¼ tsp table salt 510g plain flour 150g coarse polenta 140g caster sugar 10g orange zest 25g cocoa nibs 90g chopped crystallised ginger Granulated sugar - small amount to decorate 56

Method Grease a square or rectangular shallow tin and line with baking paper – approx 20 x 20cm. Soften the butter and then beat very lightly until you have a creamy texture. Add the salt, caster sugar, orange zest and cocoa nibs, then gently combine. Add in the flour and polenta and beat until the dough comes together – do not overbeat or you will develop gluten and the shortbread will be tough.

Press into the tin and prick lightly with a fork then sprinkle with granulated sugar. Pop in a preheated oven at 155°C for 20-30 mins. Remove and whilst warm cut into approx. 15 bars/squares and then leave to cool before lifting carefully out of the tin. Best served with a cup of tea but it can be served as a pudding by adding a dollop of whipped cream and a handful of raspberries.

round & about

A fresh start Christmas is over and its not just the goose that has gotten fat, so it’s time to blow away the cobwebs with a post New Year walk around Laxfield. We park by the Low House and as we grapple with wellies and four excited dogs – joined for the first time by Albie, our new sprollie pup who is delighted to be welcomed to the pack – I recall many happy times spent at the pub back when my dad was one of the shareholders. Finally booted and suited and sporting a fine selection of new Christmas hats – although we decide not to tell Damian that he is in fact wearing a tea cosy – we set off for a 3 ½ mile hike that skirts around the village and conveniently brings us right back to the front door of the pub! For some 62

reason I decide we should walk the suggested route by AA’s ’50 Walks in Suffolk’ in reverse but don’t get far before some doubting Thomas grabs the book and turns us all around and we begin heading in the opposite direction, leaving me to explain that being left-handed, my brain is in fact upside down! With the pub behind us and the imposing All Saints Church rising up in front, we go left back to the lane, then left again and up the hill until we see a footpath sign pointing right. This takes us down a track to a gate that opens to a grassy path with post and rail fencing to one side and a line of willows to the other. At the end, another gate opens to a meadow and then a footbridge takes us out onto a quiet

round & about

country lane. We turn left and follow the lane past a riding stables and a field of rather inquisitive alpacas, who peer through the hedge at our motley crew. On a sharp left bend by a lovely old redbrick barn we turn right and follow this lane for about a mile. Here the countryside opens out just as the weather sets in and a fine mist whites out the view so that we can only just see the ghostly silhouette of the church towers on the horizon. We take another left turn where the road divides and just before Dowsing Farm, pick up the footpath again and turn right, tracking single file along the edge of an arable field. Dog and boy dare each other to some ditch jumping and Albie and Roo, the lurcher, have great fun bundling each other in the mud.

We pause at a small wooden bridge to try and show off our dog-training skills, making them all sit and pose. Lots of shouting, pointing and hand waving later we have success, by which time Martin and Damian have given up and decided it is nearing beer o’clock. Following in their muddy footprints we continue along the edge of the field and then duck through a small copse, over a bridge and along a narrow path that brings us out by the Baptist Chapel. We are on the home straight and tun left, back down to the church and through the graveyard to the pub. We soon dry off by the fire and raise a toast to happy memories and the year ahead.
