Progeny Test Registrations Reimbursement Scheme is sent via email (or by mail for those who don’t have email) to members advising them of any eligible animals that were registered during the month. Members have 90 days to send in an Application for Reimbursement form into the offi ce, or may confi rm their wish to apply for the rebate via return email. Reimbursements are only given on eligible registered daughters and take approximately 6-8 weeks. Jersey Australia will forward a cheque or direct deposit the funds into a nominated bank account. Due to the set up of our accounting system we are unable to hold the reimbursement money as credit for future registrations. For further details contact Cathy Watkins at Jersey House on 03 9370 9105 or via email rego@jersey.com.au

Jersey Australia has an excellent association with each of the AI Companies; (ABS Australia, Agri-Gene, Alta-Genetics, Semex, World Wide Sires, Genetics Australia and Bos Trading), and has been successful in negotiating with them to offer our members rebates for registrations of all jersey daughters sired by a nominated list of young bulls. The list of young bulls eligible for the PT Rebate scheme is updated each year and it appears in the Jersey Journal and on the Jersey Australia website www.jersey.com.au. To qualify for the $10.00 reimbursement (plus GST), members must register and pay for the animals in the normal manner. A Progeny Test Registration Application for Reimbursement form is then submitted to Jersey Australia for processing. As an added service and to ensure that no eligible reimbursements are missed, at the end of each month a notice

It was a fantastic day looking at some super cows, including some very good Elton heifers. Samuel Vagg, who works for Landmark in Leongatha, spoke about a range pasture trials that had been undertaken on their property with a lot of success, while also emphasising that proper pasture management was the key.

IDW Jersey Judging Day

by Rebekah McCaul from Alexandrina Cheese

Let’s Cook with Dairy… Warm Salad of Asparagus, Prosciutto and Alexandrina Fresh Cheddar Curd with Baby Capers

I have borrowed this recipe from the kitchen of South Australian chef Vicki Matchett. It incorporates freshly steamed asparagus, crispy oven baked Prosciutto and delicate fried morsels of Cheddar Curd. These three ingredients marry perfectly with slight acidity from Matchett’s Goddess salad dressing, with hints of lemon and saffron, finished with a touch of salty bitterness from the baby capers. This seductive salad will show off your inner Goddess. Serve it a barbeque to impress those who love to eat three serves of dairy a day.

Groundwork On the day you will need 25 minutes preparation time, allow 25 minutes cooking time. Serves 4

In South Australia at the Cittaslow Goolwa Food and Wine Group “How to” Cooking Demonstration, held on 20 November 2012, Matchett Productions’ owner and guest chef Vicki Matchett (pictured) chose to use the wonderfully savoury and squeaky Alexandrina Fresh Cheddar Curd in her recipe.

* Recipe courtesy of Vicki Matchett who presented this dish to members of the Cittaslow Goolwa Food and Wine Group in November 2012.

Elements • 2 bunches asparagus • 6-8 slices prosciutto • 60 ml of Matchett’s Goddess salad dressing • 125 gm Alexandrina Fresh Cheddar Curd (*you can substitute with good quality haloumi cheese) • 2 Tbsp Baby Capers to dress Method • Lightly steam the asparagus until just tender. • Refresh the asparagus in iced water to quickly stop the cooking process and this helps the asparagus retain a bright green colour. • Drain and set aside. • Gently fry the Fresh Cheddar Curd until light-brown and slightly warm, taking care that the pan stays on low, and it doesn’t get too hot.

• Allow Fresh Cheddar Curd to cool on a paper towel. • Grill or oven bake the prosciutto until crispy, taking care that it doesn’t get too dark. • Allow prosciutto to cool and chop roughly into strips. • Arrange the asparagus spears on individual plates, or on a salad platter. • Just before serving, drizzle the asparagus with Matchett’s Goddess salad dressing. • Scatter the Fresh Cheddar Curd over the asparagus steams, leaving the tips exposed. • Dress the salad with the capers. • Top with the prosciutto and serve immediately. Top Tip Matchett’s dressings are very high quality

made from mostly local South Australian and Australian grown ingredients, to order www.matchettproductions.com Calcium Hero of the Dish Fresh Cheddar Curd is simply a fresh, unmatured curd of the Cheddar cheese. It is made in an open vat using a traditional Cheddaring method, whereby the Cheddar Curd is stretched, milled and salted before being pressed in a special hoop. Alexandrina’s Cheddar Curd has a pleasant mild, salty and savoury flavour, with a unique squeaky texture. Not only is cheddar a cheese name, the term “cheddaring” describes a step in production where the large slabs of fresh curd are cut and stacked, and regularly hand-turned, to ensure maximum extraction of whey and even development of acidity. Alexandrina Cheese are among only three cheddar producers in Australia today include this important cheddaring process.

ow can we make registering animals easier? This was the question that was asked when developing iJersey. “How about some tutorials?” they said, ask and we shall provide. Online right now ready for your viewing are step by step video tutorials on how to use all the functions of iJersey. You can find these videos by going to www.jersey.com.au home page. If you find you’re having any troubleshooting, please call me at Jersey House and I am more than happy to talk you through the process. Classification tours have begun with linear type evaluations to follow. A big thank you for sending in your applications on time, it makes organising national herd visits much easier. Don’t forget to have your herd listing available to the classifier on the day. We’ve done things a little differently this year in the classification tours. To improve efficiencies on farm, classifiers won’t be collecting payment on farm. Instead your scores and invoice will come direct from Jersey House. Please be patient as I will be waiting for the data to be returned to Jersey House before I can send it all to you. If you would like to record your scores at the time of your class visit, you may do so on the score recording sheets available from the classifier. As many of you have Easy Dairy or Mistro farming programs, we are able to email you updated classification scores and herdbook details when your classification visit is completed. Please let your classifier know you wish to receive these files and they will pass this on to the office. Alternatively, you may contact Jersey House for these files at anytime. Just a quick couple of things of note... The Great Southern Challenge Luncheon will be held on 4th December 2013 and tickets are $49.00 per person. Don’t forget to book your tickets through Jersey House as seating is limited. Futurity entries are open for calves born 2013. Entry fee is $5.00 per calf with entry forms available to download from www.jersey.com.au Jersey House will be closed for Christmas break from December 24th and reopen on Monday 6th January. Have a wonderful Christmas and we’ll see you in the New Year!
