Passion Projects to Celebrate

H

ere in Coastal OC, we may not get that first snowfall or even a brisk wind to signify the onset of the holiday season, but we all feel it. Joy is in the air. Invites are pouring in and plans are being made. The holidays are when family and friends convene to celebrate and party. It’s also a time to relish and be thankful for all the blessings that continue to enrich our lives. As I put the finishing touches on this issue - the last one scheduled for 2018, I can’t help but pause for a moment to savor the personal

joy I get from all the wonderful people connected to my life. This year I helped my dear friend and longtime mentor, Jolie Adams, launch her newly designed magazine.Working alongside this powerhouse professional has been and continues to be awe inspiring. I feel fortunate to have Jolie in my life. As Editor In Chief, I have had the opportunity to meet and befriend some of the most respected and accomplished people in this community. I love finding out and then sharing how people have merged their talents and passions to bring their dreams to fruition. In this issue, we feature a number of businesses that have been created by talented locals who have launched their passion projects. If you haven’t already heard, one of this town’s most notable Chefs, Craig Strong, formerly executive chef of Montage Laguna Beach, opened his new restaurant, Ocean at Main. Be sure to read the review by Denise Molnar on this culinary gift to our community. Also profiled in this issue is Art Therapy OC, where founder and owner Diana Shabtai takes creativity to the next level. In her colorful and

cheerful art studio, Diana, a licensed Art Therapist, makes art a wellness outlet. Next time you need to de-stress, visit the studio in Lido Village and paint your cares away. Another talented creative among us is clothing designer Cece Leyton, whose seaside inspired creations grace the pages of this issue’s fashion spread. For the men, we have showcased the season’s finely crafted wardrobe pieces designed by Mark Pomerantz, who grew up in Newport Beach and designs his own exclusive line of men’s wear. And then there is Horst Noppenberger, whose one-of-a-kind, award-winning architectural designs are featured in this issue, along with the story of his journey to become an acclaimed, trend-setting architect. There is certainly no shortage of admirable locals who have made their mark on our Coastal hometown. And this issue is chock full - as is our community. I

f you’re in the mood for a monstrous martini with jumbo olives or to get up close to some iconic rock musicians (possibly Mick Jagger & Keith Richards), just take a stroll into RockStars of Art - Fine Art Gallery. Okay, okay – so you won’t be seeing Mick or Keith in person, but you won’t be disappointed. And, I’ll tell you why. But first, a bit about the gallery itself. I recently met with Cory Marie, owner/ director of RockStars of Art - Fine Art Gallery, located at 3555 East Coast Highway in Corona del Mar, just between Narcissus and Orchid. I asked her how she chose the location, a twostory, 2,200 square foot space ideal for a gallery. “I grew up in Corona del Mar. It chose us.” More specifically, she and her husband, Greg, were visiting from Las Vegas and she wanted to show him where she’d grown up. They were having breakfast at Rose Bakery when they saw a ‘For Lease’ sign on the window across the street. “Greg called the realtor and told me we had a meeting in ten minutes. The monthly rent was very doable. It was just one of those things, it found us. I’m a praying girl.We got in the car and said … and if this is not in God’s will, then you know…..” Marie and her husband are entrepreneurs who also have a very successful gallery in Las Vegas,The Michael Godard Art Gallery & Store, of which they’re independent owners, licensed to carry Godard’s work. At Rockstars of Art, in addition to Godard, they represent numerous other artists such as: Dale Mathis, Scotty Ziegler,Trevor Mezak, David Lozeau, Zedekiah, Jon Rouse and Trevor “Stickman” Stickel. Having well established relationships with them, she called them up, told them she was opening a new gallery in Corona del Mar and they simply said, “What do you need?” “We’re edgy and contemporary. One of our slogans is “Not your mother’s art gallery. We’re Rock ‘n’ Roll.” One of the artists,Trevor ‘Stickman’ Stickel, specializes in paintings of iconic 70’s Rock ‘n’ Roll musicians. Ah Ha! So that’s how you see them. Of course he also paints contemporary ones and other celebrities. Even Einstein.

His large, finely detailed canvasses capture the raw energy of the musician. You feel their presence. You hear the music. At least my nostalgic 70’s soul does. “Stickman’s” style is a hybrid of impressionism, realism, pop, and more and can be appreciated by both Woodstock boomers and the Coachella millennials. His art is timeless. Marie describes Stickman as the gallery’s Rock ‘n’ Roll icon artist. “He’s a Rockstar. He is so amazing. He’s like a character actor. He gets into the musician’s head and does his research to no end.” So, I reached out to “Stickman,” a Canadian artist, and he was very open in describing his process. While painting, he indeed does his research, always listening to the musician’s work, watching documentaries and reading biographies. He does his homework. He confessed that sometimes he immerses himself so much, he even dresses like them. All his paintings have his trademark Stickman signature – a stick figure with devil horns, and the inscription “Devil Inside.” The horns represent Rock ‘n’ Roll, once thought of as the devil’s music.

I asked Marie about her clients’ demographic - whether they’re Rock ‘n’ Roll wannabes, nostalgic boomers or simply collectors. “All of the above.” Although Corona del Mar has changed since her childhood, she thinks it still has its own unique character and energy, unlike the energy of Laguna Beach or Huntington Beach. “Yes, it’s important to have your demographic dialed in, but there’s no putting it in a box anymore.We have locals, past customers, the person who drives by, sees the lights at night and wants to stop in.There are collectors and Michael Godard is a big draw.” As you approach the gallery on the sidewalk, you may see a larger than life size cut-out of Michael Godard, known as ‘The Rockstar of the Art World.’ Indeed he seems to be larger than life. Imagine if Keith Richards and Elvis Presley had a love child. That’s Michael Godard. He’s tattooed from shoulder to wrist, with straight ebony hair, diamond crosses and colored lenses. Through those eyes, whichever color, and tattooed arms, Godard creates the paintings for which he’s famous, of extra-large glowing green

olives and large, luminous martini glasses on nearly exclusive black backgrounds. Each painting tells a story.They’re of funny and frivolous scenes.They’re comical and colorful and sure to draw a smile from even the harshest critic. His work is stylized, fine and totally original. It’s an homage to life’s moments with a comedic twist. I asked Marie how she chooses which artists to carry and whom to reject. “I’m a very intuitive person.When an artist walks in, it’s pretty obvious. I need to feel the energy. It has to connect with me. If an artist walks in here and doesn’t seem drawn to the art, I say, “tell me honestly whether you think your art fits in.” Nine times out of ten, it doesn’t.This is very niche art.” Rockstars of Art holds events for the unveiling of its artists’ new works and, as a bonus, offers well-established customers the opportunity to hold private events. Marie herself is not an artist. She’s a businesswoman. Having owned her own retail store for many years, she knows what sells. “You have a feel as a salesperson, someone in the business of selling and being your own boss. Bora Bora ENDURING LANDSCAPE, CHANGING REALITY BY JENNY PETERS

S

ay the words “Bora Bora” and for most travelers, an image of the bluest lagoon and the towering Mount Otemanu above it are what comes to mind. It’s a magical place and one that lovers have embraced for decades as the destination to celebrate their official unions. But there’s a bit of a sea change going on in French Polynesia’s most famous destination, the place that James Michener made famous so long ago when he wrote, “To put it quite simply, Bora Bora is the most beautiful island in the world. To see the setting sun illuminate the volcanic tower, massive and brooding in gold, is to see the South Pacific at its unforgettable best.” That change has been a long time coming, as couples have ruled in every resort in this unforgettable destination ever since the first resort opened in the 1960s.

Nowadays, however, it isn’t unusual to see kids romping on the white-sand beaches or groups of friends gearing up for a scuba dive with the sharks, manta rays and sea turtles that call the lagoon home. You’ll still see brides floating through, on their way to their wedding day; and honeymooners remain the most common tourist sighting here, but things have definitely changed. Multi-generations of families are often found vacationing here these days, as more and more luxurious resorts are making sure to welcome everyone (not just pairs of two) to their distant shores.

L

ooking at Christina Moore and John Ducey, Hollywood’s power couple on the rise, the word “nerd” wouldn’t be the first thing that pops to mind. She’s gorgeous, he’s handsome.This duo has been married for ten years and popular stars of television series and films for the past twenty, both separately and together. But that’s one of the many things they agree on, that the initial attraction (egged on by a group of mutual actor friends) between them was that “we are both nerds,” according to Moore. “Actually, one of the things we did on some of our dates was crossword puzzles, because we both really like crossword puzzles,” she says with a chuckle. “Or we talked politics! We really are dorks.” The Midwest (Moore) and East Coast (Ducey) transplants to Southern California each set their sights on Hollywood well before they met, both arriving in the 1990s and building careers separately. Christina is probably best known for her work on TV series including “90210,” “Jesse,” “Hawthorne” and, most currently, “Claws,” while John’s credits range from “Will & Grace,” “Sabrina, the Teenage Witch” and “Bad Judge” to “Jonas,” where he starred as the father of teen heartthrobs the Jonas brothers. As the couple cemented their relationship, married in 2008 and blended in John’s daughter Emma Ashton (they share custody with that high-school senior in a happy relationship with her mother, actress René Ashton) to the family mix, they were also developing a plan for getting some control of their Hollywood destinies. “I would say for the last 15 years I have been writing scripts, hoping to expand what I do in the business,” Ducey, who graduated from Harvard University with an engineering degree, reflects. “I would get on a TV show and then I would write an episode of that TV show, as kind of a writing sample, and then I had different pilot ideas and a couple movie scripts, and just sort of that thing writers do.You keep creating product to try to find that one thing that’s going to score.” Meanwhile, Moore had made a friend, one whose journeys made a circuitous way to the present day, with her involved all along. “I met Ali Afshar when I was waiting tables and his brother was a manager there, and he was a street racer,” she recalls. “I just happened to make money early as an actor in TV and so he and I started by buying classic cars that he’d refurbish and we’d sell, as business partners. He eventually became the factory-backed Subaru racecar driver for five years and then he ended up making

a movie about his drag-racing career in high school, called ‘Born to Race,’ and he called and asked me to be in it.” That was in 2008; cut to today and Afshar, Moore and Ducey are deep into making films together. “Now it’s 2018 and there’s 12 films behind us, and I’ve produced eight of them and John has now written four of them,” Moore says bemusedly. “And John and I have also starred in, to varying degrees, about seven of them, doing small parts or big parts or whatever. Making the movies really has become our real jobs, our day jobs.” These days, Moore serves in roles as producer, screenwriter and actor, while Ducey also writes scripts and acts in these ESX Entertainment/Forrest Films productions from their offices on the Warner Bros. lot, which include the Sharon Stone starrer “Running Wild,” “Pray for Rain” with Jane Seymour and “Dirt,”

which Warner Bros. released in 2018. “Ride,” featuring Ludacris and Sasha Alexander is the company’s next up, while “American Fighter,” “Motocross,” “Roped” and “Lady Driver” are all in post-production. “We called it ‘the experiment,’ when we started in on it, figuring we were just going to do this experiment,” Ducey adds. “Then it just kept going and going and kept tumbling and tumbling and here we are. Now our main goal is to try to keep everything, option wise, open.This is not, ‘Should we work at the bank or be actors?’ “It’s all related to the industry, so instead it’s, ‘Oh, should we act in the movies other people wrote, or movies we wrote? Should we act in movies other people produced, or we produced?’ The goal is to diversify, as opposed to try to decide which one or the other.We think of them as train tracks running parallel, not running in different directions.”

Wherever the Hollywood train takes John Ducey and Christina Moore, it seems pretty clear that they will be riding in the same compartment as they hurtle ahead into unknown territories. “It’s so the Wild West right now,” Moore says with gusto. “We’re making these movies and figuring out how to market them and figuring out how best to succeed with them. It truly is an experiment.” And together, the glamorously nerdy duo definitely plans to keep right on moving forward, no matter what role they take on in the Tinseltown firmament. “We both know that having our eyes open and being available to all things is the key,” Ducey adds. “Our representatives aren’t always thrilled when we get ourselves busy doing something that they’re not totally involved in, but the bigger you get, the bigger you can become.” n FALL 2018 | JOLI MAGAZINE

The Cannery In 1934,Western Canners Company was founded to take over the plant and it remains at the same location today. At that time, the canning operation was done by hand at the rate of 400 cases of fish per day. Better machinery and enlarged facilities later increased it to 5,000 cases per day, with automation in the 1950’s speeding up the canning process even further. Rebuilt by Bill Hamilton (the founder of Clean Harbor Day) as a waterfront restaurant in 1973, The Cannery regained its position of prominence in the community and once again was a focal point of interest and inspiration. In the fall of 1999, Mr. Hamilton sold The Cannery to a developer that had planned to tear down the restaurant and put homes on the property. n the heart of Lido, framed by the picturesque Newport Harbor and Pacific Ocean, is a gem of a studio, cheerful and inviting, devoted to nurturing our artistic souls.The enchanting art studio, adorned with colorful murals, hand-painted by owner and founder Diana Shabtai, and replete with an array of art supplies, is the inspirational space for those in want of creative mindfulness. Art Therapy OC is the local space for expressing yourself through art.The offerings are varied and tailored to the needs and desires of clients. Sometimes the studio will be packed with a group of excited children celebrating an art themed birthday party. Other times, through a swirl of colors, a single young child will be coaxed into expressing the feelings that may be difficult to articulate. Diana even hosts date nights for art loving romantics, workshops for youths dealing with common teen-related stresses, girl scout groups working on a badge, and corporate wellness events.The studio accommodates groups of up to 30 participants. “This is a creative space that is meant to be open to whatever sparks the imagination. I get approached by all types of groups asking about options that range from a social party to a team building event to a family bonding activity. Art lends itself to a diverse multitude of applications,” says Diana. “I have been painting since I was a child. Art is and always has been my personal self-care. The process of creating art is soothing,” explains Diana who obtained her master’s degree and board certification in Art Therapy so she could use her passion for creating art to engage participants with purpose. Diana also has a doctorate in psychology and her extensive education and training has enabled her to identify ways to use art as a coping mechanism and as a tool for emotional healing. She has been practicing Art Therapy since 2002 and has witnessed the successful use of creating art to foster self acceptance and promote better living. Diana sees her studio as a safe place where you can lose yourself in your art.The art projects that are offered are diverse, ranging from crafting wreaths out of succulents to canvass painted watercolors. She has even offered sessions that

incorporate the creation of personalized journals and hand designed yoga mats.Themes include nautical, nature and more. Mosaics, clay, and an array of materials for collages are also on hand. And if there is something in particular that a group requests, Diana is willing to make it happen. But it’s not just about the completed art project. For Diana, it is about the process of creating art. “I wanted to create an environment where the focus was about ‘creating’ and to provide an outlet for all those emotions we feel. This is a place that offers a healthy therapeutic form of expression. People feel better after an art session,” says Diana, who especially enjoys being able to use her education and training to elevate

the creative experience for children. “My young clients get so much out of these art workshops. Because of my unique training, I know how to use the art session to help nurture patience, focus, social skills, leadership, positive communication, and more. Children get so many benefits out of a well facilitated art session. I see shy children come out of their shells. It’s very rewarding and it’s also fun.”

Last year Tom Donovan joined The Resort at Pelican Hill as Managing Director. As the resort approaches its ten year anniversary, Donovan shares his thoughts on what makes for the best guest experience and how The Resort at Pelican Hill continues to offer vacationers the ultimate luxury stay. You have worked at world class properties including the Ritz Carlton, so what sets the Resort at Pelican Hill apart? The Resort at Pelican Hill represents all encompassing luxury.There are no other coastal luxury resorts that I know of in the United States that offer so many award winning amenities including golf, spa, dining, wedding venue and recreation on site. Since joining as Managing Director last year, what has been your signature impact on the resort? Let me preface my answer with the fact that this resort was pretty perfect when I was hired so there wasn’t much room for improvement. However, I am a firm believer in staff engagement and I have worked to establish a warm and personable employee culture throughout the property. Even the landscape staff are encouraged to lift their heads up from their work to offer a warm friendly greeting to passersby. I want everyone on property to feel noticed. It’s the small things that create a lasting impact. How would you profile today’s luxury hotel guest and compare to a decade ago when the resort first opened? The needs and preferences of guests who check into a luxury resort today are very different than they were ten years ago. Health and wellness has emerged as a prevalent culture and that orientation has brought forth new requests and requirements. Our chefs are all willing to accommodate any menu modifications to comport with guests’ dietary preferences.We have also expanded our fitness offerings to extend beyond our exercise facility. For example, we may offer more yoga classes with ocean views for that total zen experience. What else about the resort has changed since the original opening? The most obvious and important change has been regarding technology.We are a 500 acre property but we want to ensure that our guests

have wifi connection throughout. Our broadband width is quite robust.We also take advantage of technology to ensure the most efficient guest request accommodations. Guests can text our staff for anything and expect a prompt response. Of course, if they prefer to go their rooms and use the landline to call housekeeping or room service, that option is always available. But if you’re heading back to your bungalow or villa and want a chilled bottle of something waiting for you, it’s nice to be able to shoot off a text and know it will be taken care of. What is the most popular resort amenity? Although we have a two magnificent Tom Fazio designed ocean view golf courses and an award winning spa which are popularly enjoyed, the number one most used amenity is our circular Coliseum Pool. Everyone loves our pool scene. What aspect of the resort are you most proud of? T

he holidays are a joyous time with family and friends, but many homeowners face the challenge of how they are going to be able to entertain with limited space. Over the years, I have had clients confide in me that they had to skip hosting the holidays because they were not able to entertain large numbers of guests. After the holidays is a great time to assess your home and start jotting down ideas for your dream kitchen so you can make plans for the remodel you may have been putting off. When I take on a remodel, the homeowner and I discuss every situation that is going to happen in that space from day-to-day activities to yearly events. I always make sure we evaluate the space to its fullest maximum potential. This includes interviewing the client about how they live and how they want to entertain. The kitchen is the center of the home where all visitors gravitate to first when they arrive for an event.The Island is a very crucial element in the overall kitchen design because it needs to be multi-functional. For one of my clients, seeking to use the kitchen as the entertainment focal point, I designed an island that was over 13 feet long and 6 feet wide.The island was not only a place to dine and serve guests, but also a prep area while cooking and a cleanup area afterward. It also has a bar sink feature along with a built-in wine chiller that enables the host to stand at the Island and serve drinks.The surface is a very durable soapstone material that can handle a lot of use and can be refreshed by simply rubbing mineral oil into it. In another entertainer’s kitchen, I designed an Island that is 10 feet long and 5 feet wide. It not only provides a barrier between the cooking area and the sink cleanup area, but it also provides a prep area right behind the stove.The wine rack at the end of the Island gives additional storage and easy access to grab a bottle while entertaining.The exotic Brazilian blue granite surface of the Island matches the surrounding countertops and backsplashes. Granite is practically non-destructible, which is brilliant for entertaining be-

cause it can handle spills and stains. A multi-functional island in your kitchen is the key to success for your holiday season. For family style or casual entertaining, the kitchen is always the gathering hub so it is essen-

Insignia Mortgage’s Role in the Lending Landscape BY JEFF EDWARDS

A

fter years of near-zero interest rates, over the last few months, we have seen the Federal Reserve become more hawkish on rates as inflation has reached the 2% threshold and the unemployment rate nears what many to believe is “full employment.” As the Fed has raised short-term rates, there has been some concern as to how high interest rates would need to go before affecting both the real estate and equities market. October saw a very rough month for equities, even with strong corporate earnings, a high level of consumer business confidence, and still attractive interest rates. Housing starts, building permits, and existing home sales also slowed as fears of increasing interest rates are making homes less affordable for buyers. In a world that was accustomed to zero-percent interest rates for most of the past decade, the move higher in interest rates will present challenges as markets adjust to a more normal rate environment. However, inflation remains in check and many analysts believe the wonderful achievements in tech and automation have helped to keep prices in check. Wage gains remain muted even at what many believe is full unemployment. Even with the U.S. economy humming, global events such as Italy’s political and debt challenges, the slowing of China’s economy, trade tensions, and zero interest rates in Japan should keep our interest rates from running away domestically. Still, the move up in interest rates from historical lows has hurt some sectors such as auto sales and home sales, which are highly sensitive to interest rates. Given the change in market dynamics, my focus at Insignia Mortgage is on working with smaller more Boutique-lending institutions that can customize loan options for my client base which consist primarily of self-employed borrowers. My lending sources remain committed to the housing market and continue to make common sense decisions on qualified buyers looking to purchase either a primary residence, second home, or investment property. The slow-

Horst Noppenberger recalls visiting Laguna Beach for the first time when he was ten years old. “We had just moved to California and my father wanted to show me the city he described as the most beautiful place he had ever seen,” tells Horst during an interview meeting in his second story Laguna Beach office, overlooking the vibrant town he has called home for more than 35 years. Back then, he didn’t foresee that Laguna Beach would become the muse and homestead for his long-standing, award-winning career as one of this region’s most significant and sought after architects.

lthough Horst graduated with a degree in Architecture, his initial path led him to Europe as an aspiring musician. “I was playing gigs and pursuing my dream, when I caught sight of an image of a house in this book on architecture. It was a random sighting but everything about this home resonated. This was an example of the exact kind of architecture I wanted to do,” tells Horst, who reached out to Fred Briggs, the highly acclaimed architect who designed the home in the book, and landed a job offer. Horst made his way back to Southern California where he worked under the tutelage of his esteemed mentor, who introduced him to the concept of architecture as an art form and sparked his passion for creating his highly touted signature style of modern homes that are in harmony with their environments. “It’s all about the harmony,” explains Horst, in reference to the homes he designs. My homes are always designed with consideration of two very important factors: the natural environment enveloping the home and the client who will inhabit the home. Horst understands the importance of creating a home that is in synergy with its external surroundings and also contains the spaces and amenities within that pair with the resident’s lifestyle. ention Sabatino to just about any ingrained Newporter - or possibly even newbies - and witness that “eyes light up” recognition of the spot for authentic and delicious Italian fare. Add to that, charming atmosphere (think patio dining with checkered tablecloths), great service (regulars have bonded with the staff and even invited them to their vacation homes) and the to-die-for signature sausage dish, the most often requested menu item and available to take home and cook, and you will get the flavor of what is special about this favored Lido dining establishment. In an industry known for attrition (diners can be fickle), Sabatino has enjoyed a regularly packed house since opening 30 years ago. And in 30 years, little has changed. Chef Daniel Johns has been the back kitchen guru for three decades and for the same period of time, Esther Cammarata has been the front of the house Private Dining and Catering Manager. Also there, as an integral and long-standing part of the staff team, is Wine Director India LaRae. And of course, frequently on site to greet and chat with long time regulars, is founder and owner Peter Sabatino.The core team is more like a family than a group of coworkers and that family feel is evident in the warmth of this iconic restaurant.

ART OF THE PARTY So it’s not surprising that many regulars have invited family and dear friends to celebrate milestone parties and even wedding receptions at this venue that imbues such a welcoming vibe. For clients who book parties, Esther is at the ready to attend to every detail with impeccable care. The patio, which can accommodate 100 diners, is an ideal spot for large parties, according to Esther. Inside the restaurant, a guest count of 50 can be seated comfortably. And for more intimate events, the private wine room seats 30. “When working with large parties, we offer a wide range of menu and service options,” says Esther. “Some of our clients want family style dining, with pass around platters of all the popular favorites including sausage, bruschetta, salad, pizza and pasta dishes. Others request plated service of our house specialties, particularly the veal.We do it all and do it well.” Food is done extremely well at Sabatino’s. That is because proprietor Peter Sabatino grew up in the restaurant business in Chicago, where his family of Sicilian roots brought their authentic sausage recipe to their popular eatery. “Many years ago, my family in Italy made sausage for the Vatican.They used local goat cheese to flavor and cure the meat.To this day, we import goat cheese from Italy to use in our sausage,” shares Peter, who doesn’t compromise on any of the ingredients. Chef Daniel, that kitchen guru mentioned earlier, is also very finicky about sourcing and only allows food of the highest quality into his kitchen.Together owner and lead chef ensure that diners get what they keep coming back for - authentic Italian, fresh tasting, high quality, delicious meals. Sabatino’s also boasts a great selection of wines, domestic and international, offered at value based price points. “We don’t mark up our wines the way some restaurants do,” says India, who is responsible for the wine selection. “We like to honor our clientele with great food and wine at palatable pricing.” While hosting a party at Sabatino’s is a great way to enjoy a special celebration, for those wanting to entertain at home or another venue, catering options are also on the menu. Esther will show up at your home or selected location and set up warming trays of entrees chosen from a mouth watering selection of choices that include Pollo Sabatino, New York Pizzaiola, Swordfish Limone, Red Bell Pepper Sabatino, Eggplant Parmesan and more.The catering menu is comprehensive and includes that beloved sausage starter and caps off with homemade Italian desserts of Cannoli and Tiramisu. But a favorite form of giving back, near and dear to Peter’s heart is the “Sabatino’s Annual Salute to Marine Corps Birthday” bash. Peter is very devot-

ed to the Marines, having been a marine himself, and hosts this buffet each year in November to honor and commemorate their service. “My father, brothers, and I were in the Marines,” tells Peter. “We feed 300 to 400 Marines, including Officers, Generals and Privates, and the party is entirely free.We have the oldest and youngest Marine in attendance cut the cake together with my sword. It’s my favorite event - a true Sabatino’s tradition.”

I

grew up in a very small Italian village near Lago Maggiore, where I would spend my days helping my grandmother, mother, and aunts in the kitchen. I would watch my grandmother roll out the spinach pasta using the fresh spinach picked from the garden where it grew in abundance during the warm months. To this day I cherish the memories of spending those warm summer days in the kitchen beside my grandmother learning her recipes.The Spinach and Ricotta Tortino has been on the Prego menu for as long as I have been part of the restaurant.

SPINACH AND RICOTTA TORTINO INGREDIENTS Pasta 4 oz of re-milled durum wheat semolina 4 oz of white flour of type 00 2 medium eggs Spinach Cheese Filling 12 oz of spinach 8 oz of fresh ricotta cheese 6 oz mozzarella 4 oz grated Parmesan cheese 1 clove of garlic salt & pepper Tomato Sauce 2 tbs of extra virgin olive oil 12 oz of tomato sauce basil leaves salt & pepper Bechamel Topping 2 tbs butter 2 tbs flour 1 Âź cups milk, heated salt & pepper

Tortino Preparation Heat tomato sauce in saucepan. Add oil, salt and pepper, basil and cook for 10-15 minutes. Set aside. Mix the white flour, the re-milled semolina and 2 eggs. Let the dough rest an hour, while wrapped in transparent film. Leave the spinach to dry in a steam pot, then wring the natural liquid out and chop finely to form a cream. Season the spinach cream with a clove of garlic, oil, salt and pepper. If using frozen spinach, cook directly in the pan and seasoned with a little oil, salt, pepper and garlic. Pour the minced spinach into a bowl, add the ricotta and the parmesan cheese and mix well. With a rolling pin, work the fresh dough on a pastry board to form a fairly regular rectangle. Place in boiling water and cook until tender (3 to 5 minutes). Place the cooked pasta on a clean cloth and evenly spread the ricotta and spinach cream along the entire surface. Gently roll the dough, bending the ends inwards to prevent the stuffing from escaping during cooking. Cut the roll of pasta into 1-inch cakes place over half of tomato sauce in a dish and top with mozzarella. Bake at 350 degrees for about 45 minutes. Before serving, drizzle the roll with the remaining, heated tomato sauce, top with fresh bechamel and sprinkle with parmesan. Bechamel Preparation Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but doesn’t brown - 2 minutes. Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil. Salt and pepper to taste, lower the heat, and cook, stirring for 2 to 3 minutes more. Remove from the heat.

hen a new restaurant opens in the neighborhood, it is always cause for celebration. But when the chef is a highly touted and much loved figure in the culinary world, the excitement grows exponentially. Case in point with the opening of the much anticipated Ocean at Main, helmed by Chef Craig Strong. Chef Strong grew up in San Diego and lucky for us made his way back to Southern California by way of L’Academie de Cuisine Maryland, Hotel Arts Barcelona,The Ritz-Carlton Buckhead in Georgia, Stein Eriksen Lodge Deer Valley, and (what is now called) The Langham Huntington in Pasadena which earned a Michelin star for two consecutive years. However, most locals will know Chef Strong from Studio at Montage Laguna Beach where he oversaw the kitchen for the past nine years and which became a much sought after reservation for tourists and locals alike. The promise of a terrific dining experience starts the minute you walk into Ocean at Main’s beautifully redesigned space. The open and airy feel with the high white walls, soft color palette, distressed tables, wrought iron appointments and wooden beams are at once upscale and homey. One of the design highlights is the set of murals on the patio done by Laguna Beach artist Boris Buzan. The murals depict a family applying for a bank loan, harkening back to the building’s beginnings as a bank. Once you’ve taken in your surroundings, you can turn your attention to the craft cocktail menu, the wine list, or the selection of beers. The cocktail menu is seasonally inspired using fresh and local ingredients whenever possible. The wine menu, with over 50 offerings to choose from, will have something for everyone. Nearly half the wines come from California vineyards while the other choices hail from France, Italy, Australia, Germany and South America. The beer comes from Docent Brewing in San Juan Capistrano and is served from a Braumeister four-tap tower that sits prominently at the bar. The food menu, like the cocktail menu, is seasonally inspired. Chef Strong is passionate about using local purveyors, which enables him to create dishes that highlight the best of freshly procured ingredients. There are plenty of dishes for pescatarians, chicken lovers, carnivores and vegetarians alike. For appetizers try The Hawaiian Prawn Potato

This yearly event, held at the Festival of Arts Fairgrounds is organized by the Laguna Beach Chamber of Commerce as its largest annual fundraiser. Proceeds enable the Chamber to support and promote the local business community. More than 50 vendors were on site to serve food, drinks and interact with attendees. Attendees were treated to tastings from many of Laguna’s favorite eateries including Sapphire Laguna, Royal Hawaiian, Reunion Kitchen & Drink, Nirvana Grille and more.
