When Science Meets Beauty What’s even better than clean beauty? Clean Science® skincare and makeup, by Australian cosmeceutical company,

In a growing clean beauty market (where certain ingredients are ‘banned’), Synergie products are notable for an even better feature: Clean Science®. Synergie’s founder, cosmetic chemist Terri Vinson, decided right from the start that her products would benefit skin by combining the best of botanicals with the latest cosmeceutical science – but without compromising anyone’s safety (animals included!). Terri developed Synergie Skin ‘Clean Science’® skincare, which we believe is a step beyond clean beauty, because it doesn’t exclude laboratory-derived ingredients (if they’re shown to be safe and sustainable) but does leave out a host of ‘nasties’ (ingredients with questionable safety data). Certified cruelty-free, Synergie skincare and makeup produce proven benefits, as they protect, change, nurture, and beautify your skin. “I’ve always had a passion for the science behind beauty.” Biological scientist and cosmetic chemist

Peter Blake Gallery Caters to Collectors BY RITA GOLDBERG

L

aguna Beach is world renowned for its thriving art scene. The seven mile long coastal town boasts more than 100 art galleries and artists’ studios. In the heart of it all, founded by Peter Blake, is a standout gallery that caters to avid collectors seeking to build their cultural legacy. The artfully designed modern space that houses the Peter Blake Gallery is known for representing Abstract California Minimalism. Provocative artworks, that speak to light and space, are on display in this stark yet elegant environ. Light and Space is an art movement that started in Los Angeles in the 1960’s, partially inspired by the California car and surf culture. Artists who popularized this form of art used unusual materials that included metal, resin and car paint to create works that captured light to create transparency and reflection. Lita Albuquerque, Peter Alexander, Larry Bell, Mary Corse and Joe Goode are among the notable artists who pioneered this art form and have been represented in Peter Blake’s personally curated rotating exhibits. In its 25th year, Peter Blake Gallery has secured the trust of the serious art collecting clientele, thanks to Blake’s ability to identify and showcase the mid-career rising stars in the art world.

26

JOLI MAGAZINE | WINTER 2019

“I have a knack for spotting artists who are very talented but still on a growth path so the artworks I sell tend to appreciate in value,” says Blake. He has represented artists whose works sold for $20,000 and are now worth over $200,000. “I cater to clients seeking to acquire a collection that will become museum worthy. I can discern the difference between an average painting and an extraordinary one.” Blake is well ingrained in the art scene and participates in some of the most respected art fairs in the country including Miami’s Art Basel, New York’s Armory Show, EXPO Chicago, Dallas Art Fair, and the Seattle Art Fair. But Blake’s success didn’t occur overnight. He admits that in the beginning business was tough. “I was in my 20’s when I walked passed a for lease sign here in town and thought, ‘this could be my gallery.’ I had so many friends who were artists who needed representation. Signing that lease at such a young age was a bold move.To be truthful, I may have had one too many cocktails empowering me when I committed to the idea,” recalls Blake. “I worked in a restaurant for years to help pay the bills of maintaining the gallery,” says Blake. “Usually, wealthy people invest in a gallery and that was not me 25 years ago when I opened the gallery.” It took five years for the Peter Blake Gallery to turn a profit but once Blake earned the respect and trust of art collectors he was on his way. The Peter Blake Gallery, located at 435 Ocean Avenue, is actually the third and hopefully final space. Blake has completely remodeled the gallery to imbue a modern minimalist feel that reflects the art genre represented. “I think I’m a frustrated architect,” says Blake, in reference to his hands on involvement in the gallery’s recent redesign, which was executed by local architect Anders Lasater. In addition to specializing in California Minimalism, Blake also procures period furnishings and has secured valuable examples of modern design from the 1930’s through 1970’s. “Collectible furniture as an art form is my other specialty. I am very proud of the design furnishings I represent,” says Blake, who sells these items to collectors around the world through platforms specializing in this category such as 1stdibs and auction houses that include Sotheby’s. Blake is currently planning an exhibit to mark the gallery’s 25 year anniversary. I plan to host a special exhibit featuring 30 of the artists I have represented over the years to celebrate this milestone. It will be a great show. n

JOURNEY

Take a deep breath in. Close your eyes. Bring your palms together at heart center. Exhale, release. Feel the supportive energy as you breathe in the clarity. Exhale, as you gently let go of anything you no longer need.

Thailand:

Travel with Intention BY SHANA BLAIR

These might sound like words you hear within the four walls of your local yoga studio, eight minutes away from home, situated between your go-to dry cleaners and a Starbucks. This could also sound like what you might hear on a remote Southeast Asian island, 8,000 miles away, amidst a symphony of gently crashing waves and swaying palm trees, while staring out at a sparkling, sunkissed ocean beneath a swirling, pink and orange cotton candy sky. 28

JOLI MAGAZINE | WINTER 2019

JOURNEY If you’re passionate about yoga, chances are you’ve entertained the idea of deepening your practice in some far away, exotic locale. For those looking to check all the boxes of a destination spiritual retreat, but hold a deeper desire to push personal boundaries and engage in a transformational experience with lifelong benefits, look to Global Vinyasa, a true East meets West, yoga teacher certification program on the tropical Thai island, Koh Pha Ngan. Global Vinyasa, founded by Candace Welch and Phillip Bryden, offers a 12 day long, registered yoga school teacher certification on this tucked away island in the Surat Thani province of Southern Thailand. The two expats (Welch, hailing from Seattle and Bryden, a Los Angeles native) split their time between training professional athletes in the Barcelona region of Spain, and offering their immersive yoga teacher training program in Thailand. During the Global Vinyasa certification training, students spend mornings practicing yoga on serene beaches around the island, followed by transformational workshops and discussions around topics spanning from the history and lineage of yoga, anatomy and physiology, ayurvedic and holistic nutrition, and teaching methodology. Workshops and practices are taught throughout the island giving students an opportunity to explore beaches less traveled and discover local gems. Each day caps with a rotation of guided sunset meditations, introspective rituals, and stand up paddleboard yoga sessions. And of course, Thai massages. The most unique part of the program? It’s completely donation based. The ethos behind the donation structure? Simply put, these two are the real deal when it comes to embodying the yogic lifestyle. They believe yoga should be accessible to everyone, and that sharing their philosophical knowledge and holistic practices helps strengthen a foundation for deeper connection on an individual, societal, and universal scale. Disclaimer: if you’re looking for five-star accommodations and 1000 thread count sheets, this may not be the journey for you. Instead, expect beachy bungalows, bare feet, and bonding with locals. And plenty of fresh papaya salad and spicy pad thai. You’ll quickly discover that the luxury of giving yourself time to connect with your higher consciousness and the universe around you on a deeply profound level, far outweighs any extravagant resort. Not to mention, the added bonus of leaving as a certified yoga instructor.

With all that said, there’s still plenty of free time during the training for fine dining, jungle spa sessions, and luxury beach resort living. It is highly recommended to extend your stay to reflect and enjoy all the wonders Thailand has to offer. In Koh Pha Ngan, be sure to check out Cocohut Resort (a must visit), Fisherman’s Restaurant, The Sanctuary Spa, and Orion Healing Center. After all, yoga is all about balance, right? Beyond the deeply rewarding experience of the training program itself, the ability to leave with a Yoga Alliance teacher certification opens doors to professionally guide yoga classes when you return. And while teaching back at your local yoga studio after training in Thailand may be a tough act to follow, rest assured, the honor of continuing your spiritual journey and guiding others in theirs will take you right back to those swaying palm trees and swirling cotton candy skies. Namaste. Global Vinyasa currently offers their donation based certification program twice a year, in April and December. To learn more and reserve a space in their upcoming programs, visit www.GlobalVinyasa.com.

Former Raiderette Cheers for Christmas and Canines BY JENNY PETERS

A

ny conversation with Lisa O’Day DeMuesy, the Orange County-based interior designer, starts and ends with two things: Christmas and dogs. Both are her year-round passions; and while neither one completely eclipses her love for her husband Rick and grown daughter Janel, they come in a close second. The all-year-round-is-Christmas angle in DeMuesy’s life came about as a result of her past life as a Los Angeles Raiders’ cheerleader, a journey she began in 1983. “In ‘82 I was cheering on my high-school football field; and in 1983, my first year with the Raiders, we went to the Super Bowl!” she recalls with a hearty laugh. “So I went from wearing this innocent cheerleading skirt to this uniform that was all sex-kittened out and my parents were cracking up. I used to tell my dad that I got as far as I could to the NFL.” And she really did go far with the NFL. “I ended up staying with the Raiderettes for the entire time they were in Los Angeles, which was 13 years. It’s the longest anyone has been a cheerleader in the NFL,” DeMuesy reflects. It was while she was cheering that her design career took off, in a completely unplanned way. “That is how I ended up with interior decorating, because of the Raiders. One year, one of the players asked me to decorate his condo. I did and

it snowballed from there. Literally snowballed, just by word of mouth,” she says. Doing interior makeovers for pro NFL football and NBA basketball players became her full-time job, and she soon launched her own firm, Designs by DeMuesy. But then, in recent years, things took an even more interesting twist. “I decorated one of the athletes’ homes one year for Christmas, and it snowballed. Now my main job is I decorate people’s homes for Christmas. It just took over. It completely took over. Last year I did 22 trees. Believe it or not, the first trees go up in October.” DeMuesy roams from Calabasas to Rancho Santa Fe to do these installations, for which she charges $120 per foot of tree (and more to do the rest of a home’s interior). It’s almost a full-time job, one that goes all year, not just at the holidays. “In January, I’m already shopping and researching for the next year. I am constantly at the design centers and trade shows, picking out things for the coming year. I am the Christmas dog lady!” she says with a laugh. Her “dog lady” moniker is hard earned, as Lisa DeMuesy has also devoted herself to animal rescue for the last dozen years. “That’s the biggest thing I do, helping with dog rescue. I work with five big organizations here in Orange County, in-

Location Sherman Library and Gardens, Corona Del Mar Photographer Tony Florez Hair Lois Kinsey Make up Christy Koperek Assistant Annie Coates Fashions Novecento Boutique Jewelry Winston’s Crown Jewelers

cluding Promise 4 Paws, and I also work with The Greendog Foundation, the Kris Kelly Foundation, Paw Prints in the Sand Animal Rescue and Dream Fetchers.” DeMuesy devotes countless hours to the cause, as she describes. “I go wherever I can help. Mainly what I do is a lot of transporting. I will go as far as taking dogs to San Francisco, Las Vegas. I’ve driven dogs to Arizona. I do a lot of transporting and pulling from the shelter. You go and you pull the dogs from the shelter for the rescue. What happens most of the time is you end up keeping them for a couple days until you find a foster home. But if that foster is me, I end up being a total foster failure, and I end up keeping the dogs,” she jokes. Her two favorite doggie children are Lacy (a Shepherd/Chow mix) and Bella (a Chihuahua), but at any given time, her household is full of other foster dogs that she successfully finds homes for, using social media as a catalyst. “That is what I do and I absolutely love it.What is so important about it is people have no idea how just giving a dog a home for a few days helps, because sometimes it’s just those few days that a dog needs, until somebody sees their picture and says, ‘I want to adopt that dog,’” she explains. “I’ve been doing this nonstop for the last 12 years and just seems to get to be more and more. It’s funny, because I tell my husband, ‘Just one more dog!’ all the time.” Lisa DeMuesy really is the champion of dogs in need and she wants the world to know that it isn’t hard to join in the cause. “People who cannot adopt a dog, that’s fine, but they can foster or simply donate. People have no idea how much one dollar helps. One dollar can help go get that dog spayed and neutered. Blankets are so important to give your shelter, bedding for little dogs in the shelters that have no hair and they’re freezing in the winter. So when people say ‘What can I do?’ there’s so many little things that they could help with and all of it is so important. It’s really everybody working together, helping in some way. It’s such a cool feeling at the end. Seeing that little dog’s face that you helped, posted with its new family with a big smile on its face, it’s like Christmas morning every time you have that win.” n WINTER 2019 | JOLI MAGAZINE

Dialogue with Gregg Schwenk EXECUTIVE DIRECTOR OF THE NEWPORT BEACH FILM FESTIVAL BY RITA GOLDBERG

with in-kind sponsorship. Fashion Island hosts the opening night post party on their site. Hotel Fashion Island, Newport Beach Country Club, Balboa Bay Resort, Muldoon’s Irish Pub, Newport Beach Marriott Resort and Spa,Via Lido Plaza, Sherman Library & Gardens and Lido Marina Village are among the other generous partners that host prominent events. Over 70 local restaurants participate.Tito’s Handmade Vodka provides hosted bars. Most importantly, we have over 1,000 volunteers working behind the scenes and on the front lines. That’s a payroll value we could never afford. With all this support, we are able to screen 300 films each year, offer free seminars featuring film industry notables and host lavish post screening parties for networking, mingling, and an elevated cinematic experience.

ard to believe that it’s already been 20 years since the illustrious Newport Beach Film Festival made its debut in this tony beach community. While many festivals have come and gone, the Newport Beach Film Festival has proven to be a classic mainstay. And for those wondering how the Festival grew into a world renowned, international event, drawing over 55,000 attendees annually, well…. It takes a village. That village, is the City of Newport Beach; not just the governing body, which came forth with overwhelming support, but also the business community, including Fashion Island and the restaurant and hotel communities. Even the residents, fueled with passion, came on board to serve on the executive team and volunteer. But one resident, Newport native Gregg Schwenk, was the consistent force behind this local feature presentation, which is now the largest film festival in Coastal Southern California, including Los Angeles, Orange County and San Diego.

Joli Magazine: Tell us how you launched the Newport Beach Film Festival. Gregg Schwenk: While serving on the Economic Development Committee, the idea of film festival in Newport Beach swirled around. So I sat down with the Mayor and City Council, the Conference of Visitors Bureau, and other major stakeholders of our city and everyone loved the concept. Next I approached Todd Quartararo, who had impressed me with his marketing skills and he got on board.Todd is our co-founder and a tremendous asset to the Festival. JM: What was the first Newport Beach Film Festival like? GS: It was very successful for an upstart festival. We paid tribute to the 50th anniversary of Sunset Boulevard and chose the Academy Award winning film as our premiere screening. Hollywood Film Producer A.C. Lyles attended and read a letter from the movie’s director Billy Wilder. It was a very special night. The festival screened 150 films that year.

56

JOLI MAGAZINE | WINTER 2019

JM:How did you get films for the festival during the early years? GS:Todd and I leveraged our contacts in the industry to bring in films. Back then, limited internet capabilities and primitive technology existed. Submissions arrived on VHS tapes. Scheduling was done with sticky notes on a white board. We traveled to other festivals and film events to connect with filmmakers and distributors. JM: How did you get funding to create an event of this magnitude? GS:We have a large amount of local support. The City of Newport Beach allocates financial support. We also have businesses that recognize the value of aligning with the festival, such as Pacific Sales Kitchen and Home, Karma Automotive, Celebrity Cruise Lines, Experian and Compass Real Estate. Our audience profile is comprised of affluent, well-traveled, early adopters. Local venues help defray costs

JM: What is your favorite film ever screened at the festival? GS: We have screened Oscar winning films, such as Crash, which was great. What festival wouldn’t want to premiere an Academy Award winner? However, my personal favorite screening was To Kill A Mockingbird. I love the classics, especially that one. And we had cast and film crew members in attendance. I am also proud of our screening of The Sting, where we had the largest cast reunion turn out. Like most film festivals, our focus is on independent films but we like to intersperse retrospective programming into the mix. JM: What is your favorite part of the Newport Beach Film Festival? GS: I get excited when filmmakers come up to tell me what a great time they had at the festival. Some of the filmmakers showcased their shorts as film students in the festival’s early days and now are back with successful feature films. That’s also very gratifying to see.

The Newport Beach Film Festival is scheduled April 25 through May 2, 2019 www.newportbeachfilmfestcom

Bringing the Zen-Like Feel of the Beach into your Home BY JULIE LAUGHTON

D

uring the winter months, it’s important to have a Zen-like retreat. Since the sun is lower in the sky and sets earlier, the sunlight and energy that comes into your home is completely different. If you are not living at the beach and only go in the summer, it is easy to bring the feeling of the ocean into your house during the winter months. Having a beach-like atmosphere in your home adds a sense of calm, which brings on a feeling of tranquility. The first thing to do is to clear the home of any clutter and try to use minimal neutral colors to evoke the feeling of the beach. The use of colors can be done through painting the walls or simply changing the accents like pillows, throw blankets and rugs. The more extreme makeover would involve remodeling and changing the flooring and countertops. These photos show a complete remodel that was one hundred percent focused on the beach feel with tropical accents. The countertop is a magnificent gemstone of deep blues with real amethyst accents. The magnitude of its beauty is mesmerizing. The backsplash was done in an iridescent glass tile to resemble the sunlight shimmering on the ocean. The nook area was the original kitchen space, so I turned that into a usable work area.Where the kitchen sink used to be, I put the breakfast banquet, which is a study and reading area. The flooring is mango tree wood with a grey driftwood stain. This wood was picked because of its tropical exotic grain. Just the idea of wood from a tropical tree finished the space overall to complete the organic beach feel. At the client’s request, we used jewel-toned paint colors throughout the home and down the hallways that are derived from the colors in the Island countertop. These paint colors added a tremendous amount of warmth in hallways and rooms with little natural light. When you walk in the door of this home, an automatic feeling of bliss and tranquility come over you as if you stepped onto a tropical island. It was a pleasure doing this job in a vintage home. While the original home had a well-done craftsman style, it lacked openness and natural lighting, which are crucial to having a beach feel. This transformation was a complete success because now the home is bright, light, airy and filled with tropical ocean colors. www.julielaughton.com.

Fashion Designer’s Journeys Lead to Unique Styles C E C E ‘LA ISLA VIDA’ CREATES ISLAND INSPIRED DESIGNS BY RITA GOLDBERG

ake a drive along Newport’s Pacific Coast Highway and you are bound to notice the stretch of yachts and waterfront estates that imbue the luxury of coastal Orange County’s lifestyle, particularly along Newport’s iconic nautical stretch, Mariner’s Mile. Amidst the rows of glamorous vessels that line the Newport Harbor, there is an inconspicuous atelier offering island inspired attire, providing the perfect complements to wear at sea. Meet Cece Leyton, founder, designer and proprietor of C E C E ‘La Isla Vida’ a line of seaside resort wear. In the third story atelier, located at 2801 West Coast Highway, with the shimmering Newport Bay as its backdrop, shoppers will find fashion born of Cece’s favorite vacation destinations. Within the elegantly appointed space, clients are greeted with swirls of colors, reminiscent of Caribbean hues borrowed from the sky aglow, a luminescent blue river, and even the whimsical patterns of tropical fish. A collection of flowing silk fabrics pop against the minimalistic all-white interior. The intimate boutique houses the vibrant collections of Cece’s dream-come-true, journey-inspired fashion business, founded five years ago at the urging of husband Ezra Leyton. After 20 years in the mortgage industry, Cece was ready to embark on a new business venture. With the encouragement of her husband, who she acknowledges as her greatest supporter and the love of her life, Cece circled back to her earliest passion and true calling to pursue a career in fashion design.

64

JOLI MAGAZINE | WINTER 2019

CREATIVE PROFESSIONALS As a child, as young as age seven, Cece recalls escaping into the pages of fashion magazines. “I loved looking through the pages to see what was on trend and ended styling many of my friends for special occasions, such as proms and even weddings. I would put together their outfits and do their hair and makeup. I had a gift and friends always sought me out,” she tells. “It was my travels to quaint and exotic islands that helped crystalize the vision for my clothing line,” shares Cece, alluding to her use of fabrics inspired by visits to exotic escapes such as Costa Rica’s Guanacaste River and Turks & Caicos pristine beaches. But while her jaunts to South America and the Caribbean may be credited with the porcelain rose and turquoise colors that claimed her signature style from the onset, it is Cece’s personal journey that set her on course for the creation of her coveted collection of flowy, eye-catching resort wear. “I didn’t have an easy childhood,” admits the soft spoken fashion designer, who was raised in a gang-dominated Southern California neighborhood, where violence and drugs permeated the streets. Cece’s belief in a better life and strong work ethic helped her escape the fate of many of those she grew up with, including her siblings. She became a top producer in the mortgage industry, the career path she pursued for 20 years, until a hand injury forced her to step back and reevaluate her life. “I was a highly competitive, workaholic, driven to success. But when I suffered from an excruciatingly painful hand injury and could no longer perform required every day tasks of my job, I knew I had to change the course of my life. It was my wake up call,” tells Cece. “I am strongly aligned with my faith and believe God has a plan for all of us.When I couldn’t work in the mortgage industry, I knew it was for a reason. I also garnered strength from my family. My husband, children, and grandchildren are my biggest blessing. With their love and support, I knew I would emerge successfully.” Armed with same hard working principle that she applied to her earlier career, Cece developed a plan which quickly materialized into her current fashion venture. First, she enrolled in fashion courses and even secured a job in a local boutique owned by a designer she admired. “That experience validated my chosen path and reinforced my desire to own a boutique filled with my self-created brand of clothing.” Five years later, Cece embraces her journeys. turquoise ocean and crimson sunset streaked locales - re-created in her line; the journey of her life, where she overcame a background that could have put her on an entirely different path; and her faith-based journey, which gave her the strength to rise above difficulties and emerge powerful and successful in her chosen endeavors. “My designs are not merely articles of clothing,” says Cece. “My designs are meant to inspire wearers to connect with their inner beauty and to frame the beauty of their individuality.” Cece firmly believes that fashion has the power to transform one’s entire self image. That is why she has gotten involved in “Women Helping Women,” a philanthropy that provides wardrobes for women seeking to enter the workforce. “I love using my fashion and styling talents to help employment-seeking women obtain the right look for the interview. I work with

women who have low self-esteem but desperately need to get a job. When I finish dressing and styling them, their confidence level is significantly boosted and they are poised to ace the interview.” Cece also enjoys the gratification of dressing her clients, who wear her fashions aboard yachts, on vacation, and even locally. “My clients inspire me to design the luxurious pieces that comprise my collection. My fashions imbue the essence of the women who wear C E C E ‘La Isla Vida.’They are strong, encouraging, passionate and one-of-a-kind, just like my creations and just like my personal journey.”

midst the bounty of art galleries along Laguna Beach’s Coast Highway, tucked in the back corner of the Laguna Art Gallery Contemporary, resides an inviting studio space where self expression meets self exploration. A blank canvas, propped up on an easel, along with a blank journal to pen inner thoughts, headphones for an audio meditation, and a selection of paints and brushes await. Mantras like “This Moment is More Precious Than You Think” and “Inhale Confidence, Exhale Doubt” are prominently displayed. Rather than the smell of fresh paint, akin to most art studios, expect the aroma of lavender, or the scent of your chosen aromatic oil, wafting throughout the space.

Painting Your Soul, offers a unique opportunity that redefines our connection to art. Founded by Karen Hanlon Grove, this masterpiece experience is not your typical art class. It is the opportunity to rediscover yourself and pour your soul into your art. When life dealt Karen a personal blow, that is exactly what she did. “For 22 years I lived what I thought was a dream life. I was married to my high school sweetheart, a prominent doctor, proudly raising two amazing children. I had a beautiful home and was strongly ingrained in my community. Then it all ended and my world changed,” shares Karen, who turned to painting as a healing mechanism. “My marriage fell apart and my privileged life became emotionally difficult. I had nowhere to turn except inward to my spiritual core, a place I reached with the help of painting. Art paved the way for the most important voyage of my life.” For Karen, it was not about the finished artwork but about the process of creating that helped her get through her darkest time. “All my emotions came flooding to the surface with each stroke of the brush.Through streaks of color I gained insight, processed my emotions, and was able to move on.” Now Karen is ready to guide others to an

elevated state of self-awareness through her painting sessions. These sessions, typically private but also offered as small group workshops, entail a multi-sensory approach. Music plays softly in the background and the scent of your chosen aroma permeates. A cup of calming herbal tea is presented. Karen will ask clients to write exactly what they are feeling at the moment in their journal and to select a card with an inspirational quote. A guided meditation gets clients to decompress and engage in the present. Paint colors are selected and squeezed onto the palette. In this unique environment, you are primed to paint. The idea is to paint freely, allowing your intuition to guide you.You paint what you feel and continue painting until you are ready to stop. The artist connects with the finished product on an emotional level. The process of creating is soothing and healing, according to Karen, who knows first hand, and has witnessed the effects of her painting sessions on hundreds of clients. Before opening her studio, she workshopped her vision at rehab centers, battered women’s shelters, hospitals, and other facilities throughout the country. Participants found the process transformative, inspirational and healing. Karen proudly displays a packet of testimo-

nials, with insights such as, “Sometimes you need to stop, stop and enjoy life,” and “This allowed me to look at my soul and discover it is beautiful.” These outcomes reinforced Karen’s conviction that her painting sessions were special and helped crystalize her plan to create Painting Your Soul. “People hold on too much and worry about making mistakes,” observes Karen. “But when you allow yourself to immerse in the moment, you open up the gateway to your inner feelings. You are never more connected than when you allow yourself to be still. That is why I start with the meditation.” The stillness embodies a blank canvas within. And when this inner blank canvas is met with the blank canvas in front of you, anything is possible. The canvas is meant to represent your life. The painting is your journey. And the finished artwork will always be what you need to see and will lead to continual insights and self-awareness.

CREATIVE PROFESSIONALS As a highly respected, Newport Beach-based Gastroenterologist, she has helped thousands of patients achieve better internal health. As the lead practitioner of Dr. Katie’s Beautiful You Aesthetics, opened six years ago at the current location, she helps her patients and clientele get desired results using the latest, state-of-the art, scientifically proven methods available, as well as all the favorite “tried and true” treatments. “I opened this practice because I love seeing my patients happy as they come into the office as well as when they leave,” says Dr. Katie. “As a gastroenterologist, I often treat patients who are ill and need guidance with diet and medical management as well as psychological care. But usually patients are not looking forward to seeing their gastroenterologist for a colonoscopy; it’s about as popular as going for a root canal.” For patients with more serious issues, such as debilitating colitis, a visit to the doctor’s office is not their happy place. “Here, patients love coming in for their treatments and they are delighted with the apparent results. Almost everyone feels better and gains confidence when they look their best so it’s been a wonderful experience. I love helping my patients get healthier, feel better and look great too!” Dr. Katie and her staff, which includes a medical aesthetician, provide a wide array of beneficial treatments. The offerings range from anti-aging facials, IPL, liquid face lifts and peels, to sophisticated technologies that came to market as recently as six months ago including body sculpting, skin tightening and noninvasive bladder repair. She attends medical and aesthetics conventions regularly to stay abreast of emerging trends and newly FDA approved equipment and products. With her medical training and experience, Dr. Katie can weigh the science behind new products and technology and choose those she believes will have the most benefit for her patient population. Case in point:The LightStim LED Bed. Imagine laying on a bed with over 18,000 LEDs in 4 different wavelengths (colors) working to rejuvenate, repair and energize every cell in your body. The treatment is FDA cleared to decrease the inflammation and pain and increase circulation throughout the body. It also boosts nitric oxide, the “Miracle Molecule” in our bodies to relax the heart and increase circulation. At the same time, the patient gets an anti-aging LED facial treatment that boosts collagen and elastin. The 40 minute treatment is relaxing as well as therapeutic. “I had a non-surgical frozen shoulder for over two years but after a few LED Bed treat-

ments, I was back to free range movements,” she tells, as she gracefully swoops her arm overhead to demonstrate her restored agility. There is also an at-home treatment with the LightStim pain belt which has the same four healing wavelengths of light. If you think CoolSculpting is on trend, then you may be surprised to learn that heating of the fat cells can literally melt some inches away in a few comfortable sessions using the Vanquish ME. The non-invasive device can tackle those bulges and tighten the tummy and thighs. The procedure disrupts fatty cells through selective heating, leading to shrinkage and permanent elimination of those dead fat cells with good hydration and diet. Dr. Katie offers treatments to tighten your body from and head to toe - and in between. The BTL Emsella, another one of her state-ofthe-art, new to market devices, is FDA cleared to tighten and lift the pelvic floor muscles and significantly improves bladder function.Through electromagnetic impulses, clients achieve the same results in a single 28 minute session as doing 11,200 kegels. For both men and women with issues, six non-invasive treatments typically results in noticeable improvement in 95%. The comprehensive approach to optimal health and wellness also extends to nutritional guidance. Dr. Katie explains the value of introducing some supplements, probiotics, some herbs and sometimes even adaptogens into your daily regimen. “Not all supplements are created equal,” she explains, showcasing those that are of medical grade to improve the digestive and immune systems, metabolism, bones, joints, even hair and skin as they slow down the natural effects of aging. As a Fellow of the American Academy of Anti-Aging Medicine, Dr. Katie is well versed in this arena. She states “Combining allopathic medicine with nutrition and some alternative medicine can lead to improved health for many people today.” For detoxifying and weight elimination she offers the only diet to have FDA clearance as being safe and medically beneficial for blood pressure, glucose metabolism and cholesterol as well as other medical problems. The FMD, Fasting Modified Diet combined with the Longevity Diet, was developed by Dr.Valter Longo, Director of the Longevity Institute at University of Southern California, and it is based on 25 years of research. The Prolon diet is easy to follow as it comes as an all inclusive 5 day modified fasting diet that not only facilitates weight loss, but is also muscle and lean body mass sparing. A doctor’s supervision is suggested for anyone on

prescription medications. Although it is safe for most people, Dr. Katie warns that it should not be started without your doctor’s approval. “My philosophy is based on the value of optimizing health, weight and beauty and slowing or reversing the effects of aging. Our motto is “Beautiful You, Inside and Out,” says Dr. Katie. “I believe in a total approach to wellness and I strive to provide the best available treatments and combine traditional medicine with aesthetics and nutrition to achieve desired results.” Many of Dr. Katie’s patients see her in both her GI and medical spa offices and they look and feel great. And that makes them and Dr. Katie very happy.

Support and Empowerment Shape Vision for Innovative New Product BY RITA GOLDBERG

E

very so often, a new product is developed that is simple yet brilliant. From mascara to tin foil, we use them regularly and occasionally think, “How did anyone live without this? Now there is one more product to add to that elite list. Tulifts is the patent-pending, sports bra insert that is specially constructed to hold its contoured shape and offer much needed support. It is available in cup sizes A through DD, in wired and nonwired versions. Most women have experienced the discomfort of a bunched up, thin sports bra-pad insert that is usually yanked out and discarded after several failed attempts to flatten and re-insert. The result is an annoyingly, non-supportive activewear top that makes high intensity fitness activity, or any workout, uncomfortable or result in injury, particularly for well-endowed women. Tulifts offers a pair of well constructed bra cups that easily slide into any top with interior slits, and stay in place. The product is comfortable, firmly supportive, and easy to insert and remove. It can also be used with bikini tops, and halter dresses or in lieu of a strapless bra. The brains behind this new launch is Debra Corley, a vivacious 60-year-old woman whose road to self-sustaining, emotional support parallels the vision for creating this supportive product line. Looking at Corley now, she is the essence of centered empowerment. She sports 8 mindful mantra tattoos, fashions her own oneof-a-kind embellished clothing and has posed nude in photographs that have been featured in international fine art exhibits, Faces of Silver and UNDERCOVER - What Lies Beneath. And, she is busy launching her new business. But enroute to her path to success, Corley traversed some bumpy roads.

CREATIVE PROFESSIONALS Before telling the story about the new product launch, the petite, silver haired, stylishly attired, entrepreneur is compelled to share her personal story, which entails overcoming physical and mental abuse, dealing with a physical disability, and enduring financially dire circumstances. On the surface, Corley’s childhood seemed like a typical, privileged Orange County upbringing. Her father’s business was prosperous. The family lived in a well appointed Anaheim home. But behind the closed doors, there was terrorizing, domestic violence. Both Corley and her mother were victims of physical abuse and esteem-debilitating verbal tirades. Corley was also diagnosed with scoliosis (curvature of the spine), which further contributed to her feelings of low self-worth. “I had a rough childhood,” shares Corley, who left home at age 17 to escape her frighteningly domineering father. But several years later she met and married a man who was also abusive, mostly verbally, and terrorizing. She remained in this marriage for 28 years. “Leaving him was hard,” Corley shares. “I was terrified and had no source of income.” Corley garnered strength from Laura’s House, an organization that assists battered women. To support herself, she worked at a local retailer. The pay was nominal and life was difficult for her. During this time she continued to pursue her “feel-good” passion - fitness. “I always exercised because of my back condition. I wanted my body to be strong in spite of my disability,” tells Corley, who works out daily. But with her weak back, she had to be mindful of her posture during physical activity. That is why Corley started fiddling around with bra cups, which eventually led to the creation of her innovative new product. “I would cut around the cups of a bra and insert them into my sports bra to try to get better support so my back wouldn’t have to bear the weight,” she says. “Then I started constructing my own cups to insert. My original homemade version featured recycled Chinese food cartons and was sealed with the use of a hot glue gun. Eventually I met with an engineer who was able to design a sophisticated version of the product that I envisioned.” The end result is Tulifts, featuring 63 patent-pending embodiments. It has already had its first production run of 5,000 units and has garnered interest from activewear companies such as Lululemon and Alo Yoga. The product, sold with its own bright pink mesh storage and laundering bag, is available in several local bou-

tiques that include Summer Daze, in Newport Beach, Smith & Angie Boutique in Aliso Viejo, and Camelia’s in Dana Point. It is also available on Tulifts website www.tulifts.com along with two styles of tank tops. For Corley, bringing her dream to reality is about much more than her impending success in business. It is about the power to free yourself from the cycle of abuse and everything else that holds you back. Corley shares this message as a spokesperson for battered women. She is actively involved in Laura’s House, the organi-

zation that empowered her with the tools to deal with her situation. “I want women to know that even at age 60, they can do amazing things and still be relevant,” she shares. “And no matter what you’ve gone through, it is possible to change your circumstances and create something unique and special.”

Flowers with Passion A WOMAN’S LOVE FOR ART AND DESIGN TRANSFORMS LIFE AROUND HER BY SUSAN IRBY

A

s a young girl, she sewed dresses for her Barbie dolls. As an adult, she became a world class ballroom dancer. She is fluent in four languages and has a natural talent for interior design.Today, Russian-born Katya Gross nurtures the artist inside through hand-sculpting foam and silk flowers, some nearly five feet in diameter. As owner and lead designer at her thriving business, XXL Flowers in Costa Mesa, Katya’s inspiration flowed from Europe where she observed spectacular floral designs crafted by artists who creatively and skillfully utilized a special material not used for such purposes in the U.S. Coming from the glamorous ballroom world, Katya made the natural connection to create impressive and elegant flower designs for weddings and other significant events. Her creations are more durable than paper and hold up perfectly in all types of weather, from morning dew to direct sun. “Our flowers are used to create backdrops for photo shoots, fashion runways, wedding arches, elaborate receptions, parties and corporate events,” explains Katya.“The flowers must be durable and long-lasting yet maintain the flow and elegance one expects from them.” One key technique that plays a primary role in the creation of these enormous flower designs involves the use of a lightweight, eco-friendly foam which Katya sculpts by hand into strong, adaptable patterns of all kinds including roses, lilies, orchids, poppy seed flowers, poinsettias and

CREATIVE PROFESSIONALS more. The flower is then painted using a special technology, or pre-colored materials are frequently used as well. Each flower is individually sculpted and then staged as a stand-alone piece or arranged with other flowers to form larger flower walls. A natural instinct for both design and business runs in her family. Katya’s mom was an interior designer and university professor, her dad, a doctor. “I’ve been designing all of my life,” shares Katya.“I have always had a mind for business and loved working with my hands whether it was embroidery, sewing, knitting, and now sculpting flowers. Some flower designs take me nearly five hours to sculpt. One of my greatest passions is creating art that inspires others. Katya’s unique floral creations, all of which have a 3-D effect, reveal her passion. Katya first draws out the concept, then photoshops the design before moving on to making by hand the finished product. “Each is a custom design,” adds Katya,“depending upon what the client envisions, the size of the room, space and design integration with the flow and purpose of the event.” Old world European architecture and culture were Katya’s inspiration as she has spent time in several different countries including Denmark, Germany, and Italy while competing in ballroom dance. She lived in Paris, France, where she studied at the Sorbonne University and also owned a boutique selling, sewing, and designing ballroom gowns. This design expression and daily hands-on creation set the foundation for the elegance and romance of her flower designs. “Every different country added a layer of cultural approaches, history, and perspectives,” says Katya thoughtfully. “Each of these layers weaves its way into the designs, creating that movement, flow, grace and elegance – much like a ballroom dance.” When she is not designing flowers, Katya can be found teaching ballroom dance, which has always been a passion for her and is what brought her to the United States. “I moved here to compete,” she adds,“and I fell in love with the weather and found everyone so welcoming.” Katya further pursues her passion for transforming people’s surroundings through interior design. She currently works on projects ranging from interior home construction design to seasonal staging during holidays. Just last year, Katya, in designing a nursery room for a client, incorporated a floral theme in the design. “Most designers would not necessarily think about floral art for a nursery, but the concept

for the flowers was a natural addition. They are just so beautiful and adapt into most any space,” Katya shares. Her vision is to expand into a larger scale production company for various types of significant events. When asked what drives her, Katya responds,“It is all about creating art that has the power to transform people’s lives. Hopefully, what

I do brings out the artistry in others, creating not just beauty but also happiness from within.”

here’s something institutionally cool about the moment you step inside A Restaurant. It’s been that way my whole life. Growing up in Newport, when it was the Arches, it was a familiar place my family would come to celebrate distinctive life moments over incredible food. Updated and more versatile, A Restaurant still holds up as a special setting I come to with family to celebrate milestones, or to simply catch up on the week with friends at the bar over dirty martinis and a killer charcuterie plate. A Restaurant embodies that subtle, inexplicable feeling of handsome nostalgia, infusing Newport Beach with a sense of New York iconicism. And while restaurants have come and gone over the decades, A has stood the test of time; feeding locals for over nine decades. The appeal spans generations and has staked its reputation as a Newport Beach institution. Beyond the sweeping crimson booths and dimly lit cocktail tables, the unshakable authenticity of A has always rooted itself in the quality of its menu and spectacular cuisine. For that, we have Chef Jonathan Blackford to thank. Blackford is Executive Chef at A Restaurant and the highly touted, newly opening restaurant CdM. Hollywood producer McG and restaurateur Jordan Otterbein, River Jetty Restaurant Group partners of acclaimed A Restaurant and A Market, are bringing the brand new dining concept, set to unveil in March. Having acquired the popular location at 2325 East Coast Highway in Corona del Mar, River Jetty Group will be welcoming ‘CdM’ an American inspired culinary concept courtesy of Executive Chef, Jonathan Blackford. I was fortunate to pull Chef Blackford out of the kitchen and sit down with him during an afternoon, as large orders of farm-fresh produce rolled in for his kitchen to prep for the evening ahead. “I really enjoy California produce,” he genuinely stated.“The fact we can get stuff year round, the different quality and the different farms out here. The time, effort and work to grow something. I really appreciate the whole process.” A kind respect for the life cycle of a vegetable isn’t what you typically expect to hear from the executive chef of an acclaimed steakhouse, but I learned quickly that Blackford isn’t your typical chef. A Pittsburgh native, Blackford brings a refreshing element of East Coast hustle to the Orange Country restaurant scene. Starting out his culinary career with

76

CREATIVE PROFESSIONALS a very brief stint as a dishwasher when he was 15, Blackford quickly developed an appreciation for the kitchen and got hooked on the adrenaline of performing backstage at a restaurant. When his parents moved out West, a visit to California led him to a job opportunity at the Hilton Waterfront Hotel in Huntington Beach. Gaining exposure to the California restaurant scene raised the bar and deepened his appreciation for the culinary world, ultimately motivating him to advance his professional training at the eminent, Culinary Institute of America in Hyde Park, New York. Since then, Blackford has worked in kitchens of renowned restaurants in New York City, California, and now, marking his eighth year at A, he’s embarking on his next frontier, CdM. “I just love the industry as a whole. I like what it’s about and what it can do for people. The instant gratification of watching somebody enjoy a dish that you created; it’s something special.” For A Restaurant regulars and fans anticipating the opening of CdM this Spring, don’t expect a second A in the heart of Corona del Mar. From Blackford’s take, it’s intentional. And for good reason. “One conversation that comes up from outsiders looking in, is that you should replicate A,” Blackford says.“It’s really difficult because this place is so nostalgic. Running since 1926, it’s become such a part of the community, that if you take it somewhere else, you don’t have that.We could do the same food, have the same service, we could decorate it the same way, but you don’t have that nostalgia of people coming in saying they came here 50 years ago.” So what can you expect from CdM? A high bar of consistency, for starters. Simply put, diners can expect spectacular food in a comfortable, inviting atmosphere. While A is set up as more of your classic, 3 course, steaks & chops fine

dining experience, CdM will incorporate a more accessible gastronomic experience built around communal dishes and collaborative dining. The innovative approach to familiarity, and quality of globally and locally sourced ingredients is a consistent theme you’ll see amongst the two menus. If A has established its name in history and tradition, CdM is laying the foundational bricks for generations to come. “My style tends to lean more towards classical pairings of flavors, so you’ll see a lot of that throughout the theme of the menu,” Blackford explained.“Each dish can be broken down to something familiar and relatable. Even if some of the ingredients might sound a little intimidating, it’s going to be comfortable, familiar flavors.” One example playing to that concept is the “Dirty Pasta” at CdM. An inspired take on Bolognese, a favorite dish of Blackford’s, prepared with in-house made rigatoni using an Italian imported pasta extruder, ground duck, ricotta salata, sage, and aromatics. Circumventing the concept of ‘chef-driven’ to describe his menu, a term Blackford finds derivative to communicate CdM’s cuisine, the chef puts it in accessible terms.“It’s the food I love to eat, with inspiration and ingredients from all over the world.” CdM will embody the culinary experience of an authentic, chef owned and operated restaurant where you are tasting that chef’s experience throughout the years, what he likes to eat, and his genuine style of cooking. At CdM, Chef Blackford will offer a signature inspired menu featuring hand selected ingredients in an elevated dining experience with a warm and welcoming atmosphere. Here’s to experiencing food in a way that reminds us why this talented Newport chef got into this game in the first place, and establishing a beloved institution for the next nine decades. We’ll drink to that!

Anders Catering Satisfies Foodies and Party Goers BY SUSAN IRBY

H

e’s the coolest guy on the planet. In a blue tie dyed shirt and 501s, one might say he is down and dirty. Yet, he is really clean and chill. One would ask, “He is in the catering business?” And the answer is Big Time, for over 30 years. From the stage to the football field, a former Miami-based music instructor and choreographer, Larry Anders moved west and landed in Orange County in 1982 where he went to work for well-established chefs, event and catering companies such as the Four Seasons and The Main Event which emphasized what he calls “Martha Stewart-style Catering,” classic, elegant and sophisticated. Soon, Larry parlayed his talent for design, his passion for music and his food survival instincts into founding the Orange County Art and Jazz Festival, a nonprofit organization supporting music and art education. The festival welcomed “first call” musicians from top Los Angeles studios, with names like Grammy Award Winning Poncho Sanchez,Tierney Sutton and Eric Marienthal. The Festival was held at esteemed locations around the county including the Fullerton Arboretum, Santa Ana Zoo and the Irvine Spectrum.

“Producing the festival,” shares Larry, “meant collaborations for an elaborate two day event filled with musical and visual artists, sound stages, styled posters, marketing and multiple food vendors.”The OC Art & Jazz Festival production required a lot of “colorful balls in the air,” explained Larry, and led to his focus on special event catering centered on “top of the line” full service event production. And thus, Anders Catering was born, earning a reputation of being one of the best caterers of the best in Southern California. “Anders Catering goes beyond what the customer is expecting,” Larry explains. “As with the festival, we strive to be ‘Your First Call Caterer’ – meaning, when someone needs a caterer, Anders is the first one that gets the call.” What separates Anders Catering from the rest of the crowd? Simply Larry’s personal service, overseeing each event, the food styling, the way the food is served, transporting and delivering it with the utmost confidence in quality, seasoning, texture, flavor, and temperature… hot food is hot, cold food is cold, the breading stays crispy. Anders gourmet chefs work together, creating recipes from scratch on site, in the professional kitchen that resides within a tucked away strip center in Santa Ana that also happens to serve EATS BBQ. More on his new BBQ in a moment. Anders Catering has been a leader in the industry for decades serving many of Southern California’s Fortune 500 companies, and when asked what was the pivotal factor in his success, Larry responds simply, “Our Website.” Suddenly the boutique caterers and event designers could get more eyes on their products and services.

PHOTOGRAPHY BY TONY FLOREZ

Adds Larry, “The internet was a game changer for all business. We could be seen professionally, compete against larger companies… it evened the playing field and made it possible to stand out through design and implementation online.” But, the good ‘ole web is no replacement for quality and design. You won’t see Larry donning a chef coat and hat and leather portfolio presentations are a thing of the past. Today, it’s all click, click, click, design, design, design, create, create, create and wow the crowds, which is what Anders Catering does best, “Making A Culinary Statement.” Whether it’s Larry’s truly amazing “Ceviche de Mango Martini” or his signature “Southern Surf & Turf ” starting with his house made dry rubbed Angus Filet Mignon wrapped with Smoked Applewood Bacon and topped with Crispy Cajun Fried Shrimp, the food has to pop off the plate visually and please the palate with every bite. From menu design to theme parties, food to staff, service with excellence in the industry and always performing at the highest level is what Anders Catering is all about. Corporate and Private Events are their specialty; from his own custom-made RED pit-crew “service staff ” jumpsuits for car events to booking national name entertainment, Anders will orchestrate your perfect party. No event, location or theme is too broad or elaborate for Anders. “The best aspect of our event catering,” says Larry, “is we meet the most interesting people and we make them happy, pleased and smiling with our tasty foods

and service. Life doesn’t get much better than that in the catering world.” And on EATS BBQ, the classic Killer Sloppy Joes recipe is from Ms. Helen, Larry’s Sweet Southern Belle Mom. Over the years, clients would ask, when are you going to open a restaurant? Great question, and after reviewing the orange county culinary landscape Larry decided to put his personal spin on one of his favorite foods - Southern BBQ. “I wanted the best of both BBQ worlds, traditional and beach style BBQ.” Yes you will find tender Smoked Baby Back Ribs, and you will also discover four delicious flavors of mouth watering smoked pulled pork sandwiches. Opened two years ago, EATS BBQ began serving a different style of BBQ. They are open for lunch Monday through Friday from 11am to 2pm and it’s worth the trip in. Not solely for the BBQ but for the iconic history and artifacts to peruse while you dine. Indulge in the comfort of EATS “Smoked BBQ Pot Roast piled over Creamy Ortega Mac N’ Cheese”WOW! and who knows, you may find yourself booking your next themed party with them and it will be quite the enjoyable, delicious tasty ride. Oh, and yes Larry still keeps in step and in tune by playing his beloved jazzy trumpet.

Fine Cuisine, Art and Culture THREE GENERATIONS OF CULINARY EXCELLENCE AT BISTANGO AND BAYSIDE BY SUSAN IRBY

hen restaurateur John Ghoukassian arrived in Southern California in 1983, a glimmer of inspiration spun from a history of working with his father, a thriving hotelier in Iran in the 1960s. From hotels and restaurants to nightclubs, the end goal has always been the same, shares John, “to create a unique experience where all senses are satisfied.” This feeling has been proven time and again as John’s first California restaurant, the Los Angeles-based Bistango, was wooed in 1987 to the then new Atrium Building adjacent to John Wayne Airport for its fine cuisine and avant garde style. “Opening Bistango in Orange County was an honor,” says John with a broad smile. “Infusing my passions for art and music into the restaurants was something I learned from my father,” John continues, “to always provide

unique qualities setting them apart from the rest.”The restaurant’s interior was conceived by John and designed by internationally renowned Venice-based architect Michael Carapetian which created a dramatic gallery-style setting for the restaurant’s rotating art exhibitions. As well, lending to John’s passion for music, Bistango partnered with the Saddleback College Jazz Studies Department last summer to provide students a place to perform weekly. Expanding upon the Bistango concept, John opened its sister restaurant, Bayside, in 1999. “Bistango’s visual appeal is its timeless elegance, in both design and cuisine, its beautiful interior filled with the revolving art, its intimate seating arrangements, all amidst the impressive space in the one-of-a-kind Atrium Building,” explains John. “Bayside is a destination location with views of the waterfront and close proximity to the beach and Balboa Island.” Chef Paul Gstrein started at Bistango Los Angeles, moving with John to the Irvine location, where he eventually became Executive Chef. In the early 1990s, Gstrein worked with the culinary pioneer Jonathan Waxman to design a menu that would become a true experience for every diner. The menus draw upon inspiration from French cuisine, as well culinary experiences led by John through top food destinations, including New

York, Chicago, San Francisco, Los Angeles and Spain. When Bayside opened, Chef Javier Montoya was tapped to helm the kitchen at Bistango after having worked under the tutelage of Chef Paul for many years while Chef Paul focused on creating the Bayside menu. “The quality of the ingredients is essential to our menus,” shares Chef Paul whose favorite dish is the Octopus but highlights that one of their most popular dishes at Bayside is the Chilean Sea Bass with Exotic Mushroom Crust. “We pride ourselves on locally sourcing the best ingredients and promoting the farm to table approach.” Adding to the international influences from both chefs, Chef Javier incorporates a simple yet refined touch to his dishes using different flavors to “leave a statement with the diner.” This simplicity originates from his family in Mexico. “I remember the joy my grandmother shared while spending all day cooking for her children and grandchildren,” reflects Chef Javier. “In a sense, that is what a chef does… share the joy of cooking for others.” Both restaurants boast live entertainment featuring a myriad of genres from Latin Jazz to R&B, live piano, contemporary music and more. Each takes advantage of the Southern California weather with al fresco patio dining, and an inviting bar. Both Bistango and Bayside feature

private dining areas for special events. With similarities, each restaurant has distinguishable attributes from the diverse menu of outstanding international cuisine at Bistango and a wine list boasting over 400 wines from around the world to the award-winning culinary creations from Chef Paul at Bayside and the ever-popular Sunday Champagne Brunch. Known throughout Orange County as a “dining dynasty” for well over 30 years, the Ghoukassian family continues to bring its cultural influences to each of the restaurants. “My son, Marc and daughter, Karyn were born in Iran, of Armenian heritage, and raised in France,” shares John. “Today, they are highly involved in the day-to-day operations and overseeing all aspects. We are three generations and they are the future of our business.”

Chef Istvan’s Global Culinary Journey Leads to Davio’s BY DENISE MOLNAR

stvan Toth knew at a young age that he wanted to be a chef. Growing up on his grandparents’ farm in Hortobagy, Hungary near Ukraine and Romania, he learned how to butcher a pig by the age of eight. Everything that his family ate was prepared from scratch with fresh ingredients. The fruits and vegetables were grown in their own garden, and the meat came from their own livestock. Nothing ever came out of a can, and the only boxed items that were purchased were products such as sugar, salt and pepper. As his passion for the culinary arts turned into a clear career path, his family was less than supportive in all the ways you might assume that a traditional Eastern European family would be, 30 plus years ago. (Spoiler Alert: Everything turns out just fine)! But he persisted, and began his formal training at Le Cordon Bleu in Hungary, where he studied for three years. Leaving his native Hungary at age 19, he traveled to destinations such as Mexico, Thailand and even Northern California. Surfing and working, board under one arm, paring knife in hand. Along the way he discovered he had a taste for Asian fare and it remains his go-to meal for a night out. At 31,Toth found himself in New York where he settled down for a number of years. He worked at notable restaurants such as Catch and Mario Batali’s Eataly. While working at Catch, celebrity chef and restaurateur Steve DiFillippo did his best to try to lure him to Davio’s, his Northern Italian Steakhouse in Midtown. It wasn’t that easy. Toth wasn’t that enamored with Italian cooking, and instead recommended

That was almost 7 years ago. Istvan Toth takes on a very reverent tone when talking about Davio’s and Steve DiFillippo. He likens the whole team to a family. He emphasizes that the idea of family is steeped into every decision involving staff, menu, décor and patrons. With that in mind, Toth approached DiFillippo several years ago to tell him that he and his wife were beginning to think about starting a family of their own and he let him know that when that happens, he will be moving to California. He had spent some time here and wanted a different quality of life for

his new clan – beach, surf, great weather and no need to haul a baby stroller in-and-out of the subway. When the time came to let the team know that they were indeed expecting, the reply was (something like) “Great! We’re opening a restaurant in Irvine!” One of the benefits of working at Davio’s is that each Executive Chef has the autonomy to design his own menu. There are, of course, Davio’s favorites that are consistent at all locations (Massachusetts, Pennsylvania, Atlanta and New York) under the menu heading Davio’s Classici, as well as the Bolognese Sauce, Hand Rolled Potato Gnocchi with Organic Mushrooms, Basil and White Truffle Oil and the Prime Brandt Beef. In addition to those standards, Chef Toth likes to change his menu seasonally, and enjoys

the creativity that comes with incorporating new flavors and preparations. He loves a good challenge and takes each guest’s dietary restrictions very seriously. Whether a diner is gluten free, vegan, vegetarian, or is all about the meat, he takes pride in making sure each customer’s experience is delicious and satisfying. If you’re looking for a special night out, I suggest booking the Chef ’s Table. Chef Toth welcomes the opportunity to please every palate. For those of you who are looking for a great lunch or dinner out with friends, but don’t want to throw all dining caution to the wind, try Davio’s Awaken 180 menu. You’ll find smaller portions, lower calories, less sodium, a bit less guilt, but the same high quality fare that guests have come to expect from the Davio’s brand. What’s next for Istvan Toth? Right now he’s living the California lifestyle, and loving it. Spending time with his growing family, making delicious food and catching some waves when he has time.

Kitchen in the Canyon DIALOGUE WITH CHEF JENNY MESSING BY STEFANEE FREEDMAN

JOLI MAGAZINE | WINTER 2019

C

ontinuing the renaissance of great culinary experiences currently taking shape at new and revived restaurants around Laguna Beach, Kitchen in the Canyon and Terra’s head chef Jenny Messing is bringing her own style of healthy fine dining to Laguna Canyon. Chef Messing was brought in last June to lead the diverse menus of both restaurants owned by The Laguna Beach Company. Using her passion for healthy comfort food and a love for aesthetically pleasing dishes, she focuses on awakening the taste buds, nourishing the body and exciting the eyes on every plate served. Joli Magazine was able to catch up with Chef Messing to learn more about the inspiration behind her menus. Joli Magazine: Where did you grow up? Chef Messing: I was born and raised in

Southern California. I grew up between Orange County and San Diego, born in Anaheim and lived in Brea, and in San Diego. I lived in Encinitas. JM: Who inspired you to cook? CM: I would say my dad and my grandmother;

both were really great cooks.

have braised short ribs added to the menu.

JM:What were some of their traditional dishes they would make? CM: My grandmother was a really good baker. She was always baking around the holidays. My dad was the type that could throw anything together. He could make a meal out of anything.

JM: What types of dishes do you prefer to prepare? CM: I love cooking meats, and that is what we are going to do a lot of at Terra. For Kitchen in the Canyon, we do meats like grilled chicken and steak. We will be focusing more on the healthier side for the café.We are billing it as ‘Healthy Comfort Food’ is more what we are going towards for Kitchen in the Canyon. I really enjoy putting together salads and making new smoothies.Very fresh fair, Californian-lifestyle inspired food.

JM:Where did you go to cooking school? CM: So this is my second career. I didn’t go to

a traditional cooking school. I took some crash courses at the Culinary Institute of America (CIA) in Santa Helena in Napa. I went through three different sessions there and that was really it.The rest is all self taught. I was in sales and marketing for a long time. I have always loved cooking and entertaining, so I started a Supper Club at my house. I would sell tickets and people would come and eat at the Supper Clubs. From there, people started asking me to cook for them. So I ended up starting my own catering company called Kitchen Vibes. After a few years running my own catering company, I was hired by Kitchen in the Canyon to be the head chef here and at Terra in the Pageant of the Masters. JM:What are some of the new equipment in the

remodel you are excited to cook on? CM: Terra is getting a braiser so we will be doing a lot more braised meats, for example we will

JM:What are some of the signature dishes at Kitchen in the Canyon? CM: Our breakfast burrito and breakfast sandwich are very popular menu items. For lunch we have our southwest chicken bowl and the California bowl. JM: What are some of the signature dishes on Terra’s menu? CM: Terra has a faster, smaller menu.We will still have the braised lamb shank there that has been a part of their menu forever and is very popular. We have a pork chop with a peach, bourbon sauce that was also one of our top sellers.Terra is a faster passed restaurant. On an average night at Terra we turn around about 300 plates in two

hours there. Because of the quick turnaround it is a limited menu. All entrees come with the same sides, which are mashed cauliflower, herbed rice and roasted carrots. JM:Why the mashed cauliflower over the more traditional mashed potatoes? CM: We just felt it was a better mix for us since the cauliflower is lighter than having the full on mashed potato. JM:What are some other new additions coming to the restaurants? CM:We are currently working on turning Kitchen in the Canyon into a completely organic café.We are slowly starting to switch out our non-organic items to organic. We will be opening up our new back patio by the summer, and are getting our beer and wine license. So we are really looking forward to filling up that back patio and serving beer and wine.We also have a really great Taco Tuesday with $2.50 tacos. We offer four different types of tacos with all organic ingredients.

CHEF UGO’S ITALIAN ROOTS SERVE AS MAIN INGREDIENT AT

Prego Mediterranean BY ERICA EVANS

A

s the face of Prego Mediterranean, Chef Ugo Allesina isn’t letting shoulder surgery stop him from coming into the restaurant to oversee culinary operations and visit with the clientele. Although one arm is still temporarily in a sling, Chef Ugo is on hand to share his passion for food and tell the story of his roots, which emanate from a small village with a population of 250 in the region of Piemonte, Italy. Chef Ugo recalls coming home from church on Sundays to his Grandma’s homemade pasta. He grew up in a traditional Italian family, where everything was made from scratch. As a child, Chef Ugo would help in the kitchen where he learned traditional recipes. “It was mostly the freshness of the ingredients that sparked my earliest passion to start

86

JOLI MAGAZINE | WINTER 2019

CREATIVE PROFESSIONALS cooking,” Chef Ugo says. “But I thought as a professional cook I could travel the world.” At 14, when traditional school ended, Chef Ugo left to work at a small hotel and restaurant near his village. He gained hands-on experience in the kitchen. From there, Chef Ugo went on to work in prestigious hotels and restaurants in Italy and Germany, using his Grandma’s influences to create his superb Northern Italian dishes. Armed with his Grandma’s authentic recipes and experience as a chef in Europe, Chef Ugo arrived in California. For him, it was the beginning of a new world. “When I landed, I kissed the land, like Christopher Columbus, and decided I’m not going to go anywhere else.” Although Chef Ugo fell in love with California, he never abandoned his Italian roots, especially in the kitchen. At Prego Mediterranean, Chef Ugo’s recipes are still influenced by his Grandma’s cooking style. He uses fresh ingredients and makes everything by hand. He even changes the menu seasonally to reflect the availability of local and fresh produce. As his own biggest critic, he tests each dish on the menu to ensure it is worthy. Coming from the north of Italy, where the winters are longer, Chef Ugo creates a menu that reflects the traditional dishes he learned to cook while growing up. Gaining inspiration from the earthy stews, and wild boar he ate as a child, Chef Ugo curates an array of authentic dishes combining Northern Italian and Mediterranean cuisine to create a menu different from most restaurants in town. These include traditional recipes his family would make in Italy, such as risotto with mushroom and fontina cheese and stuffed chicken breast. But the menu also features traditional dishes with a twist. One of the specialties is chicken served over baked risotto that’s marinated in ‘Tony’s Secret Marinade,’ which consists of 13 spices from India. His desserts, like his savory dishes, are also created with fresh, seasonal ingredients. “I don’t have a dessert list because I want everything fresh,” Chef Ugo explains about his menu. Making a handful of desserts each day ensures they are fresh and available until they run out. So, when you come to Prego, don’t think too long on your dessert selection or it may be gone before you have the chance to order it. In addition to the food, Chef Ugo ensures the Italian traditions of family are present in the restaurant. Chef Ugo procures his sausages from his cousin’s meat shop in San Luis Obispo guaranteeing they’re handmade with the best ingredients while keeping it all in the family. However, his family traditions aren’t the only thing that

makes Prego Mediterranean unique. “A key difference between Prego and other restaurants is that I have the freedom to engage in conversation with customers. I’m always on the floor, talking about my food.” Throughout the day and evening, you can see him welcoming familiar faces and befriending new customers. His friendliness towards his customers makes Prego Mediterranean an ideal environment for someone with dietary preferences.

Chef Ugo is quick to make accommodations to any meal to fit the needs of his guests. Next time you’re at Prego Mediterranean, say hi to Chef Ugo and enjoy his dishes from his childhood with their Mediterranean touch.

T

he inspiration for this recipe came to me while living in Hawaii and working at the Fairmont Orchid in Kohala. The property had a chef ’s garden featuring exotic fruits, including three distinct varieties of bananas. There were actually 18 banana trees so it made sense to flambé them in rum. It is a favorite on the brunch menu at Monarch Beach Resort where, as Executive Chef, I oversee the culinary operations for all the on-site dining.

TASTE

BY DENISE MOLNAR

T

he Montage brand has always been synonymous with luxury and nowhere is this more evident than at the Montage Laguna Beach. The sweeping views of the Pacific from the lobby do more than just hint that a special experience awaits. As you meander through the lush grounds toward the sound of crashing waves below you will arrive at the resort’s warm and inviting Forbes Five-star restaurant, Studio. Chef Benjamin Martinek is the new creative force behind this delicious and innovative dining experience. Growing up in Colorado, Chef Martinek knew from an early age that he wanted to become a chef. Making his way to California, he trained at the California Culinary Academy, Le Cordon bleu, San Francisco. After his time in the Bay Area, Chef Martinek moved down the coast to South Orange County where he spent some time at the Ritz Carlton Dana Point before arriving at the Montage. Although Chef de Cuisine is a new title for Martinek, he has been part of the culinary team at the Montage for the past eight years. Starting as a cook at Studio, he moved to The Loft, the resort’s casual dining restaurant, where he became executive sous chef, then back to Studio as executive sous chef until he was given the opportunity to take the helm. Chef ’s culinary creativity is immediately evident at first glance of Studio’s seasonal fare. He likes to elevate each item on the menu by showcasing fresh ingredients from the resort’s very own garden whenever possible. The amuse bouche of toasted brioche, Jamon iberico, pickled fennel and fennel pollen, and the hors d’oeuvre of abalone with black trumpet potato puree and golden chanterelle mushroom are among the must-try farm fresh delicacies. If it’s seafood that you love, then the roasted Morro Bay sablefish with smoked brandade espuma, golden char roe, crispy hen of the woods mushroom and kombu is amazing. If meat is calling to you, the Superior Farms lamb loin with Swiss chard subric, chanterelles, charred onion and lamb brodo is superb. Can’t decide? I recommend the tasting menu so you don’t have to! Studio also has an extensive vegetarian menu, which can accommodate vegan diners, and it is next level. The confit root vegetables with coconut curry was almost enough to make this carnivore convert. Definitely the most creative offering on the vegetarian menu is the tiny crudite, which arrives in a mason jar surround-

ed by greens. A selection of miniature carrots, radishes, turnips, and the like with their greens popping out, sit in hen of the woods mushroom espuma and kalamata olive “top soil” with puffed grains. No flatware necessary as you pull your vegetables out of that delicious “soil” to enjoy. The black sesame pave with aquafaba meringue, cassis, pomegranate seeds and coconut sorbet was an exquisite topper to a delicious modern French gourmet meal – vegetarian or otherwise. Just as the food menu has something for every

palate, so does the wine list. With approximately 2,500 wine selections and 30,000 bottles in inventory you are sure to find more than one right choice to compliment your experience. Don’t save Studio for a special occasion…dining there makes any day special!

he Friends of CASA Holiday Luncheon, held at the posh ballroom of the Monarch Beach Resort in Dana Point, was a huge success, raising a record breaking contribution of $452,000 to benefit children in foster care. Over 500 guests in attendance got to browse and bid on auction items, mingle, sip champagne, enjoy a delicious lunch and watch a fashion show, featuring fashions by Tory Burch. But the highlight of the event was the eloquently told, first hand experience of Keynote Speaker Dimon Sanders, who shared her heartbreaking, personal experience as a foster youth who was taken from her home, forced to give up everything she cherished, and moved through 13 different living environments. Her savings grace was her CASA, who gave her a safe space and constancy, precious to children who can no longer rely on their parents. The event co-chairs were Melissa Rohani and Michelle Fisher. They were assisted by a team of over 85 Friends of CASA auxiliary group members, led by President, Lori Jackson.
