Remembering 9/11 I don’t normally get political. And I don’t spend countless hours reminiscing on bad event that have impacted our world. I am a firm believer that you need to learn from your mistakes, but then move on; not steadily dwell in the past. However, sometimes, things are just too big to ignore. 9/11 happened 13 years ago. I remember it as if it was yesterday. I was at my computer working and one of my colleagues called me to say “You have to turn on the TV! A plane just hit one of the twin towers!” I remember watching and thinking this was, in no way, an accident: in my mind, Americans were under attack. Then the second plane hit.
Bush won his second term. The first one, he had simply stolen from the American people. ISIL is a real threat to this world. They are ten fold what Al-Qaeda was. The Middle-East is nothing but chaos at this point. Everywhere you turn, there is conflict. All that to say that everything begins at home. We don’t have power, on a small scale, to change the issues of the world, but we have power over how our small town is operated. Our small town impacts our county. Our county impacts our province. Our province impacts our country and our country--you got it-impacts the world. We need to vote the right people in power. It starts at city level.

Little did he know the only thing this would contribute to, is further destabilize a country that already was pretty messed up, but who at least, had some sort of grip over their religious extremist groups. BLUU LITE BAND REUNION After many years of playing with some of the finest musicians in the area, Chuck Lalonde and his great friend Rick Ferguson sat down one day in the spring of 1991 and they came up with the idea of forming a band. And so, after more talk, they got together with their friend Brian (Bonzo) Leger and Roger Lalonde and formed the band Bluu Lite. The band was well-known for performing at many venues over the years they were active and most known for their 7 years performing at Chez Louise, a former local bar. Over the many years they have made many new friends and made many new memories. It has been almost 24 years Saturday night" I was like,you kidding me? You think we are ready? He said,sure,why not? And on November 8th Bluu Lite performed at Chez Louise for the first time,and for about 7 years,,we never looked back. We had met so many,many great people,made many more new friends, and played some great music and a lot of great memories. Its been almost 24 years since that day and the band recently reunited at the RCAFA hall to pay tribute to their dear friend and local musician Reg Boyer who passed away earlier this year from cancer. Proceeds from the event were raised for the Canadian Cancer Society and the event was very well-attended.

Modern Western Square Dancing is practiced and enjoyed by thousands of people all over North America and parts of Australia, Asia and Europe. It can give you one of the best cardio sessions ever, keep you mentally and physically fit and help you make new friendships. What is square dancing you may ask? “it is a dance form where groups of 8 people working as a team perform routines as directed by a person known as a caller". But square dancing is much more states past President Roger Frappier. "it is universal, easy to learn, a low stress physical exercise, music, entertaining, interactive, fun, friendship, challenging or easy, mentally stimulating, team based and it breaks down barriers". The great news is that you don't have to travel the world to experience Square Dancing - the Swinging B's have been dancing right here in Cornwall for over 40 years! This local club meets every Friday evening at Knox St. Paul's United Church (800 12th Street East, off McConnell) at 7:00 p.m. Lessons start this week on Friday, Sept 19th and the cost to join is $75.00 per person if you are a first year dance for the entire season from September to April. (This is a minimal cost of approximately $2.50 per dance since there are close to 30 dances in the season). The Swinging B's are open to anyone who would like to learn modern square dancing and it's good to note that singles are welcome and you do not need to have a partner. PATIO SERIES The local patios were quite busy this past month as well and there was no shortage of entertainment once again on the Kelsey's patio. Shown here are Alison Wonderland Band and Tyler Kealey and his band. Thanks to Wendy & Kevin for hosting this series again this year and I hope you are able to make it out next Summer when local restaurants here in Cornwall begin their weekly patio series entertainment again for the Summer season. Fantasy Realm owner Randy Sauve had the opportunity to chat a bit with David Finch at Fan Expo Canada (TM) 2014 this past weekend in Toronto mostly in regards to his new penciling project at DC, Wonder Woman, which will be written by his wife Meredith. Sauve mentioned to him that as a comic book retailer he always has concerns when a new creative team comes on to a title, especially a title that has had a strong direction for 3 years like Wonder Woman. Finch assured him that his wife has plot outlines for at least a couple of years and that she would be pretty upset if he were to leave the title any earlier. Sauve thinks this new creative team shows promise and could increase awareness on the character especially should they remain on the title by the time Batman v. Superman: Dawn of Justice opens in theatres. Randy will be at Montreal ComicCon this weekend representing the City of Cornwall and Fantasy Realm. Young chefs’ thumbs, that’s what! CURIOUS CHEFS… AGAPE’S COOKING CLASSES FOR YOUNGSTERS were a really big hit, and everyone benefitted from these classes. Mary Rose and I accepted invitations to the wrap-up meal served at The Agape Centre building at Fifth and Augustus Streets, on Monday, August 25. As we arrived, we could sense the excitement in the air. Young folks accompanied by parents and grandparents were rushing toward the entrance . We were greeted by young, smiling hosts and hostesses welcoming us at each doorway, then invited to sit where we wanted anywhere among tables long or small. Bulletin boards displaying photos of participants and their cooking projects were scattered around the room. Festive decorations were everywhere and the tables were set beautifully. Trays of veggies, fruit, crackers, cheeses and dips sat temptingly near the front of the room.
We were welcomed by Director Alyssa Blais, who explained the program to us, then introduced the Program Facilitator, Margaret Malyon and her team of volunteers. The Program was divided into 2 levels: Curious Chefs for 7-9 year olds, and Around The Table for 10 and 11 year olds. There were 5 classes per session with 8 sessions, and 8 to 12 students studying each session. This was all made possible by funding from the Royal Bank (RBC) and Food Banks Canada.
Classes focussed on healthy eating, eating local products, safe food handling, introduction of new foods, presentation, the importance of families preparing and eating food together, and lots of fun cooking and eating. When asked, the kids loved to explain some of their methods. One favourite seemed to be chicken nuggets they prepared from raw chicken breasts. They “team explained” it to me : “First we cut the chicken into small chunks and nobody got cut ‘cause we were really careful. Then we dragged these chunks through eggs we stirred with forks. No, we didn’t add milk to the eggs, but it was a little gross. Next we dipped the pieces into crushed up pretzels. Oh yeah, we smashed the pretzels with a coffee mug first. Then we baked them on a cookie sheet with some foil on top. If we didn’t eat it all we could bring some home to Mom. We got the recipe too.” They were so proud of all they tried and all the methods they learned.
Young people passed around trays of goodies before supper, and were proud to explain the different foods and how the dips were prepared. They also served water then fruit juice with special attention to the people at their table. We sat with Merrick and his grandmother, Karen; he took very good care of us! He was eager to answer our many questions and loved describing the food art they prepared with different ingredients.
Part of the excitement of the day was thanks to the chef who prepared the amazing meal with these young assistants. Chris Barque of Bar Q fame donated his time (an entire day), skills and energy to preparing an amazing meal of sausage-stuffed chicken breast, wrapped in Swiss chard, with a delicate sauce, couscous with 6 kinds of beans, and two types of carrots, and oh, yes the kids told me Chef Chris went to a farm to pick fresh “patty pans” for the dish. (Google tells me that’s pattypan squash!)
Our table host, Merrick, waited in line then served us our plates when ready. Later, he got back in line to get our marvelous dessert, peach and pear crumble with ice cream. The children were encouraged to take home any photos of themselves. They were in no hurry to leave, and seemed to treat everyone as friends. They would all come back next year if they can! Kudos all round; we were so impressed!

EASY SUPPER IDEAS In my humble opinion, one of the tastiest and flavourful meats to barbeque are porkchops. A couple of weeks ago, I prepared a brine to make our porkchops even juicier and tasty. Just allowing the meat to soak in a brine for several hours keeps it so very tender when cooking it. Whole chickens, turkeys, a pork roast or porkchops are improved when brined prior to roasting or barbequing. The first time I prepared a brine was for a 31 - 1/2 lb. turkey. It was so huge, I had a hard time to find a roasting pan to hold it. But the brine process before roasting kept the breast and leg meat dripping with juiciness when we sliced into it after roasting. It was almost unbelievable to see such juicyness dripping from the breast meat when we were slicing it. After that, I was hooked on brining. We sell Diamond Crystal Kosher Salt at my store Sharyn's Pantry. I would not use any other brand of Kosher salt. None compares to the quality. Back to our porkchops. Along with the chops, I roasted some potatoes which I sliced about 3/4 of the way through, brushed the sliced potatoes generously with garlic butter and stuck slices of red onions into each opening. My good friend Judy Butters served her potatoes this way when we were over for supper. Thanks Judy! They are pretty and taste as good as they look. Alongside of the potatoes, I made a large casserole of oven rice. The oven rice recipe comes from a very old and dear friend, Jane Anderson whom I have known since I was in diapers. This rice dish is so delicious. I always make a double recipe and then freeze portions in ziploc bags for future meals. I hope you try these recipes, I know you will love them! Have a great week!
A BRINE FOR PORKCHOPS Don't worry about the salt. It will NoT soak into the meat making it salty. All it does is allow the meat to absorb the moisture and keep it juicy while cooking. In a large ziploc bag, combine: -about 6 cups of cold tap water (You want the bag to be about half full of water.) -1/2 cup of Kosher salt -1 tsp. of whole black peppercorns

-3 or 4 sprigs of fresh thyme -several cloves of garlic, sliced or squished and pressed flat with the back of the blade of a chef's knife -a handful of brown sugar -Stir this mixture until the salt and sugar are dissolved. -Now add in the porkchops. The bag should be full at this point. Seal carefully. -Place this in your fridge for several hours. -When ready to barbeque, drain off all of the liquid, and discard the brine. Rinse the chops under running tap water and pat the chops dry. Barbeque as you would normally do. At the last few minutes of cooking, brush with your favourite barbeque sauce. Do this several times for best flavour. ENJOY!!
OVEN ROASTED POTATOES WITH RED ONIONS
Scrub but don't peel as many potatoes as you wish to eat. These can be re-heated for another supper. I made extras. What's new?
Slice the potatoes about 3/4 of the way through. Brush each of the potatoes where they are sliced with some garlic butter. To make garlic butter, melt about 1/2 cup of butter and stir into this about 2 or 3 tbsp. of minced garlic. You can add into this come rubbed oregano or basil or parsley for extra colour and flavour.
Into each slice of the potato, place a slice of red onion. Season the potatoes with salt and pepper. Place the potatoes in an open shallow roasting pan and bake them in a 350 degree F. oven until they are tender. This will take about 45 minutes to 60 minutes. Test for tenderness with the tip of a paring knife inserted into the potato. During roasting, brush the potatoes with the garlic butter that oozes out as they bake. ENJOY!!

OVEN RICE This casserole is cooked in just one hour. It uses sweet peppers, onions and celery for the vegetables. I use our (Sharyn's Pantry) no salt or no MSG French onion soup mix to keep the sodium level down and well as our low sodium soya sauce. If you wish, you may add leftover cooked chicken, turkey, roast beef or ham. I mix everything right in my casserole dish. You have to try this! It will be one of your favourite side dishes. It freezes well.
INGREDENTS: (I double the following recipe.) 2 cups of converted rice (no substitutions) 3 cups of cold water 1/4 cup of low sodium soya sauce (We carry this at my store, Sharyn's Pantry.) 1/2 cup of garlic sauce (I use my own homemade garlic sauce. I have given you this recipe last summer.) V-H Garlic Sauce would be my next choice to use. 1- 10 oz. can of sliced mushrooms, drained and rinsed and drained again 4 or 5 heaping tbsp. of Sharyn's Pantry No salt and NO MSG French onion soup mix 1/3 cup canola oil 1 large sweet green pepper, seeded and the core removed. You can use red or orange or yellow peppers, or all three. More is good. 2 large yellow onions, diced 2 or 3 ribs of celery, sliced 2 cups of any leftover meat or poultry, cut up into bite-sized pieces.
METHOD: -Choose the appropriate sized casserole dish or small roasting pan with a lid. I use a heavy porcelain coated cast iron baking dish, similar to a Le Creuset casserole dish. -Spray the pan with No-stick cooking spray. -Chop up the vegetables and add all of the ingredients asked for right into the casserole dish. -Cover the dish and place in a 350 degree F, oven. Bake this for one hour. -Halfway through the cooking time, stir the mixture to allow for even cooking. Cover with the lid and continue cooking for the remaining 30 minutes. Serve hot. -If you plan to freeze extras, allow the rice to come to room temperature, then spoon into ziploc freezer bags. Label and freeze. To use, just thaw and reheat in your microwave. It is a delicious dish to bring to work for your lunch. ENJOY!!

by Colin Lathe New Radio Stations Hit Cornwall!! It seems Cornwall is going to be blessed with yet more mainstream media music. News that Corus Entertainment will introduce 2 ‘new’ radio stations to our airwaves leaves me feeling, well, like the kid whose Christmas present is the same toy his older brother got last year. Or a Dad getting yet another tie.The gurus at Corus Corporate have decided that by changing--no, they’re not new stations--the content and branding of a couple of stations, they will “bring a vibrant, fun and exciting new sound to Cornwall listeners”. But dig a little deeper into it and you’ll soon find out that what we’re really getting is just more of the same sort of thing we already have plenty of.
It would be great to see the programmers at Corus actually “offer a boom and Fresh listening experience to this city”. Step out of the well-worn path you’ve chosen and open up markets dying to get the word out. I for one would love to add truly new music to my aural pleasures.

Do we really need another station (or 2) pumping out more ‘Top 40’ pop hits and classic rock music that was produced nearly half a century ago? If your sonic fix must include more “number one songs from the ‘70’s, ‘80’s and ‘90’s”, why not support original artists that put new spins on covers? Or, better yet, support the host of cover bands playing endless halfempty bar gigs and charitable open air venues that rarely keep the bills paid. Even local venue ,The Port, has a hard time filling the seats playing ‘ageless’ music from the past century. Perhaps I’m just pining for the ‘good ole days’ when radio stations pushed the music industry forward and allowed DJ’s the freedom to innovate. Once upon a time, it gave them the edge they needed to get their names out there – now they’re just ‘hosts’ to pre-selected playlists.
Is it any surprise that Internet radio, satellite TV and other sources of exciting new talent have become so popular? Take a guess at how ‘Jack FM’ got its namesake. There was a time when FM radio was the domain of independent stations that highlighted contemporary and often very local music that didn’t have to be mass-market ready to get airtime – university radio being one of the strongest proponents at the time. Even CBC has had the foresight to invest in this kind of formatting and a lot of quality CANADIAN artists have benefitted from these initiatives. When I’m held hostage by radio – think at work or at the mall - I’d like to be able to hear not only “yesterday’s best hits” but also some up and comers that have the potential to be the next hot ticket concert draw. In the words of one unhappy freelance broadcaster on the news of Corus’ cuts to the local newsroom, “Give your head a shake and open your eyes and ears”. There is so much new talent out there (and news too btw!) that never gets the time of day on radio and begs for your attention. Arts in the Park is a great place to start looking at what’s in Cornwall’s showcase. What are the odds that programmers at Corus will invite our ears to hear original artists like Graham Greer, Roxanne Delage, Keegan Larose and Rod Robillard… or even more commercially successful work from artists like the
open Saturdays from 9am to 4pm.

SEAWAY WINDS OPENS ITS 14th ANNUAL CONCERT SERIES
Seaway Winds Concert Band, directed by Barb Hunter , opens its 14th Annual Concert Series on Sunday , October 19, 2014 at 2:00 PM at Aultsville Theatre . Featured soloists are local artist Ken Johns, Clarinetist and Director, Barb Hunter on flugelhorn and trumpet. The Sunday 2:00PM concert is a change from Seaway Winds previous performance times , and will, hopefully, be a convenient time for all and encourage more families to enjoy concert band music.
The October 19th Series opener , “ Passport, Please” , includes music from destinations around the world.
Ken Johns will perform the popular British tune, “ Stranger on the Shore”. Barb Hunter will play the famous Adagio from the “Concierto de Aranjuez” from Spain on flugelhorn, and also play trumpet on the familiar “ Tico Tico “ from Brazil. Other countries to be visited, complete with a powerpoint presentation of each destination, include Ireland, Scotland, Norway, France, Austria, Czechoslovakia, Italy, Greece, Egypt and Korea.

Two Ontario Hockey Academy alumni to participate in NHL Rookie Camps
Cornwall Ontario — Two alumni from the Ontario Hockey Academy in Cornwall Ontario will be participating in NHL rookie camps this week.
The Montreal Canadiens announced 44 players will participate in the teams’s rookie camp this week, including Ontario Hockey Academy alumni Jack Nevins who signed a three year contract with the Habs last season.
Paul Swindlehurst is another OHA alumni trying out for an NHL team this week. He will be participating in the Chicago Blackhawk’s rookie camp.

I really appreciate you for doing such a beautiful piece of artwork on me, Brian. Thank you and your staff for making me feel so at ease. What’s up? Feathers are up; spirits, music, traditions…all are up at the AKWESASNE INTERNATIONAL POW WOW. Saturday, September 6 and Sunday, September 7 this year were the dates of the 14th Annual International Pow Wow, a cultural celebration of First Nations. Participants and visitors came from far and wide to enjoy the variety of drumming, ceremonial dancing and singing, and the beautiful display of regalia (never to be called “costumes”, please). The venue is wonderful; grassy fields sloping to the St. Lawrence River, the arena building on site, teepees set up for shade, picnic tables and grandstands for folks to gather and watch the ceremonies and competitions.
There were several rows of artists and artisans in tents, displaying their amazing works and products, everything from moccasins only 2 inches long to spectacular carvings and delicate beaded necklaces, many of these one-of-a-kind. Soothing fragrances of sweetgrass, sage and hand-made soaps drift around. If you could resist these smells, then the aromas from the food area might seduce you down toward the river. So many delightful items to try: strawberry juice, Indian tacos ( my favourite) , buffalo burgers, and so much more!
The Master of Ceremonies was so informative and very entertaining, sometimes explaining the protocol and etiquette especially before sacred ceremonies were to be performed. It was an occasion for families and friends to gather and enjoy traditions with respect, dignity, and curtesy. I am so grateful I was able to attend with friends who truly appreciate the pageantry. It was spectacular! See you again next year, the weekend after Labour Day.

Every Time I Die returning to Cornwall - Every Time I Die
(Epitaph Records) makes their return to Cornwall Ontario on Friday September 19th. Ryan “Legs” Leger, from Cornwall Ontario, brings the rest of the band from Buffalo on a Canadian Tour. The band played their debut Cornwall show about a year ago. The band recently released a new album his summer.

Cornwall born Steff Groulx, who was a contestant on Canada’s Next Top Model back in 2007, would also like to join the Habs organization.
The Montreal Canadiens are holding auditions for a new anthem singer, and Steff Groulx will be trying out Tuesday September 9th at the Bell Centre.
Carilyne Hebert Campaign Fundraiser - Live Music was the
entertainment provided at Carilyne Hebert's campaign fundraiser last Saturday. In addition to spaghetti, patrons enjoyed live music by Elly May and Alison Wonderland.
“My father actually, was the one who brought the audition to my attention. When I auditioned for Canada’s Next Top Model I never thought I would be chosen and that turned out quite well so I thought I would try for this also.”
Steff Groulx is very motivated to succeed, and she is following a strict regimen for her audition.
“Since I have had some vocal training before I am doing exactly what my previous music instructor told me. I’m doing scales and vocal training daily until Tuesday morning. No sugar, no grease and no fast food. Lots of water, lemon and honey”.
Steff Groulx has some experience singing and performing.
“I haven’t really had a very large singing career. I played in a band when I was younger but now it’s more of a hobby. My brother is a musician and every now now and
then I get to sing along with some of his friends who he plays with. But for the most part it’s just me at home playing around in his studio.”
If successful Steff Groulx could be singing “O Canada, we stand on guard for thee” 41 times this season in front of 21,273 people live at the Bell Centre and to millions more watching the games on television.
