There’s still time to make a regular IRA contribution for 2012! You have until your tax return due date (not including extensions) to contribute up to $5,000 for 2012 ($6,000 if you were age 50 by December 31, 2012). For most taxpayers, the contribution deadline for 2012 is April 15, 2013. You can contribute to a traditional IRA, a Roth IRA, or both, as long as your total contributions don’t exceed the annual limit. You may also be able to contribute to an IRA for your spouse for 2012, even if your spouse didn’t have any 2012 income. Traditional ira You can contribute to a traditional IRA for 2012 if you had taxable compensation and you were not age 70½ by December 31, 2012. However, if you or your spouse was covered by an employer-sponsored retirement plan in 2012, then your ability to deduct your contributions may be limited or eliminated depending on your filing status and your modified adjusted gross income (MAGI) (see table below). Even if you can’t deduct your traditional IRA contribution, you can always make nondeductible (after-tax) contributions to a traditional IRA, regardless of your income level. However, in most cases, if you’re eligible, you’ll be better off contributing to a Roth IRA instead of making nondeductible contributions to a traditional IRA.

Your maximum contribution is phased out if your income is between $110,000 and $125,000, and you can’t contribute at all if your income is $125,000 or more. Similarly, if you’re married and file a joint federal tax return, you can make a full Roth contribution if your income is $173,000 or less. Your contribution is phased out if your income is between $173,000 and $183,000, and you can’t contribute at all if your income is $183,000 or more. And if you’re married filing separately, your contribution phases out with any income over $0, and you can’t contribute at all if your income is $10,000 or more. Even if you can’t make an annual contribution to a Roth IRA because of the income limits, there’s an easy workaround. If you haven’t yet reached age 70½, you can simply make a nondeductible contribution to a traditional IRA, and then immediately convert that traditional IRA to a Roth IRA. Keep in mind, however, that you’ll need to aggregate all traditional IRAs and SEP/SIMPLE IRAs you own--other than IRAs you’ve inherited--when you calculate the taxable portion of your conversion. Finally, keep in mind that if you make a contribution to a Roth IRA for 2012--no matter how small--by your tax return due date, and this is your first Roth IRA contribution, your five-year holding period for identifying qualified distributions from all your Roth IRAs (other than inherited accounts) will start on January 1, 2012. Whether Congress addresses some or all of these issues over the coming weeks or months is anyone’s guess. So stay tuned. And pass the popcorn. Pop quiz: What do a liquor store and a travel agency have in common? Answer: Gina Simanton. Seventeen years ago, Gina had a short conversation in the waiting room of the eye doctor’s office with the previous owner HARLEM: of the establishment she now calls hers. Gina inquired about purchasing the travel agency, and learned that the deal for the sale Richman Insurance of the liquor store had fallen through. She saw a business owned by a woman who actually ran two enterprises side-by-side and thought, “I can do that.” Thus were born twins to Gina and Scott Simanton: a liquor store and a travel agency in Malta, Montana LEWISTOWN: on September 1, 1996. Snowy Mountain Motors Initially, the two businesses complemented each other very well. When there was a lull in liquor sales, the travel side would be busier and vice verse. As times and trends have changed, however, that is not so much the case, so Gina hired a fullLewistown Rental time employee in the liquor store while Gina operates the travel agency herself. Because Montana is a controlled state for liquor sales, the state provides The Liquor Haven with a franchise contract that allows them to purchase alcohol through CHINOOK: the state, then sell it to bar licensees at posted prices set by the state. Since that time, in spite of the increase in online travel purchases, The Travel Haven has gained more clients and cemented their trust with Gina. Amtrak is used heavily for short trips from Eastern Montana up the line to Havre, Shelby and beyond, and Gina helps her customers set up their train travel, and can even print tickets right in the office. RUDYARD: The biggest benefit to customers in using a travel agent versus purchasing travel on the internet, according to Gina, is the McNair Furniture personalized service one gets in selecting travel venues. She feels there’s a huge difference between seeing photos the travel agent took themselves at a destination, and seeing Photo-shopped images posted on the internet. Often, travel agents have actually been MALTA: to many of the locations they are selling travel to, and can offer first-hand insight on things like food, popular sights, cabs, shows, Radio Shack Malta and entertainment options. Cruises are a phenomenal vacation, and a travel agent can assist with air reservations to cruise ports, highlight things to do at port stops in Mexico, the Caribbean, Alaska and more. Amping Up the Flavor The flavors that we achieve through our food preparation are divided between perception, science and art. To try to understand the how and why of it all, let’s break it down individually. Perception is an individual opinion formed by the sensations delivered by the taste buds, the olfactory nerves and the mouth feel. Some favored flavor choices such as Piquant (hot chili peppers) and Horseradish are learned over time which suggests that perceptions can change. The taste buds on the tongue are equipped to perceive salty, sweet, sour, bitter and savory, also called umamie. The olfactory nerves identify aromatics such as Garlic, Horseradish and, of course, whatever Mom has cooking on the stove. The mouth feel tells us such things as smooth or gritty, hot or cold. Considering all of this, the more of these senses you can excite, the more flavorful our food will be perceived. Let’s take a well browned piece of toast, slather it with a good layer of butter and a thin coat of your favorite jelly. The warm toast and smooth butter will create a comfortable mouth feel. The browned toast will wake up the olfactory nerves and stimulate the digestive juices. The bread will provide a slightly salty taste and the jelly will open the sweet and savory taste buds, and you have just amped up the flavor of a cold stale piece of plain bread. Science tells us that cooking changes food and different cooking methods change food differently. Some recipes require the addition of acid to achieve the desired result, while others require an alkaline environment, and others require both. Fermenting different foods can create flavors and nutrients that can only be achieved with the help of other living organisms. Sprouting creates a totally new flavor and nutritional profile from the seed that was sprouted. Probably the least understood aspect of amping up our food’s flavor is the effect that glutamate and nucleotides have on flavor. I’m sure you all have heard the brew-ha-ha over MSG (Mono Sodium Glutamate). The thing many people don’t realize is that all food contains natural glutamates and nucleotides, more in some and less in others. This is why some food combinations work so well together. Case in point: eat a cheese burger with the cold cheese just laying on top of the burger, then eat one with the cheese melted deeply into the burger. By melting the cheese the glutamates in the cheese are released and meet up with the nucleotides in the burger to propagate a whole new generation of flavors. (You never realized all this was going on in your burger did you?) Foods developed with fermentation like cheese and soy sauce tend to have a greater amount of glutamates. That is why so many of the Chinese dishes utilize fermentation in one way or another. The Chinese have utilized MSG’s flavor enhancing capabilities quite extensively for many years, while we argue over whether it will kill you or not. My experience with MSG is that a light sprinkle will delightfully amp up the flavor of my food, a heavy sprinkle will give me a headache like three glasses of wine would. Moderation solves the problem (at least with the wine). The Art of Cooking comes mostly from experience. Recipes give you guidelines but only experience tells you when to turn the heat up and when to turn it down, when to add ingredients and when to wait, which flavors work together and which flavors don’t. The knowledge of these things is how experienced cooks amp up the flavors in the food they prepare. Some examples: salt has to dissolve in liquid to enhance the flavor of food, and longer cooking increases the flavor. (So, if you salt early don’t add too much.) Salt added to the surface of a steak pulls moisture from the steak to dissolve the salt and then is mostly lost to the grill. (Marinating in a salt brine is a better choice; we’ll do an article on marinating later.) Pepper is best added at the table if you like it for its bite, as cooking mutes its flavor. Most aromatic spices and herbs are best added late in the cooking process, otherwise the flavors will evaporate off. Browning protein (the Maillard reaction) and caramelizing sugar are two different cooking processes that produce a chemical reaction to enhance flavors, and, since sugar burns easily, it should be done with lower temperatures and longer cooking times (350* max). Browning protein works best with dry protein in a small amount of oil at higher temperatures (375 – 400*). Avoid overcrowding as it will rob the heat and steam the meat rather than brown it. French frying is best done in small batches to maintain high temps (375*) and even browning. Temps above 500* burn too quickly and should be avoided, as burnt carbon is cancer-causing. Dirty BBQ grills are the worst offender for this as the burnt food particles left on the grill are picked up by and served with the next meal. In early January, I mentioned the epidemic of writer’s block occurring prior to the legislative machinery kicking out intriguing news stories. By the middle of the session there is news everywhere, so the difficulty for reporters is separating the big story of the week from the chaff. Tuesday morning was the first of two days scheduled for floor discussions of Montana’s big spending bill, HB2, and the House chamber was packed with television cameras, microphones and journalists poised to record history. Typically, this is the biggest news day of the session, but this year it flopped.

In terms of investing some of the money she’ll make, a Roth IRA would be pretty cool. You would have to oversee it, of course, and you’d have to file a tax return, but starting something like this when she’s 14 would help set her up for some serious money later. I think the biggest thing, however, is to make sure you create lots of teachable moments for this young lady. There are three areas every child should learn about when it comes to finances: spending, saving and giving. If she’s working and earning money, she should be able to spend a little and enjoy the fruits of her labors—within reason, of course. Saving for the short term might include putting money aside for a car or even college. Longterm goals would include the Roth IRA, so she would have a head start on being able to retire with some dignity one day. Then you should always make sure to give some. Whether it’s tithing to your church or finding other good causes, giving helps others and it’s good for the giver. When we give, it helps us realize that we’re not the center of the universe. It also makes us a little more Christlike. This is a phenomenal opportunity for your daughter.
