If you would’ve told me twenty years ago that I’d eat—and enjoy—a black bean burger, I would’ve slapped you upside the head with a quarter pounder. Black bean burgers were for sorority girls, not a meat eater like myself. I was reintroduced to black beans while working in our restaurant, where we served them with crab cakes. I spent many a day hunched over the stove, tweaking the seasoning so that the beans had just enough bite without overpowering the crab cakes. These black bean patties are a twist on my mom’s old recipe. Growing up, she’d make us what she called bean-cake sandwiches. Come to think of it, Momma made cakes out of just about anything—corn, black-eyed peas, butter (y’all gotta try her Gooey Butter Cake)—so I guess it’s only natural for me to make a savory bean sandwich for my boys as well. I’ve added edamame to the mix for a pop of green and topped it all off with homemade Fresh Pico de Gallo, which is sure to earn Jack and Matthew some future points from the sorority girls . . .
