LIMONCELLO Spring is the best time to refresh your palate with the zing of lemon. This recipe, from All Day Cocktails by Shaun Byrne and Nick Tesar calls for loads of lemons and some patience, but it’s all worth it for the citrusy perfection that emerges. Makes approximately 1.5 Litres (6 cups). Ingredients: 2kg lemons 250g caster (superfine) sugar 700ml vodka 250ml white port 10g dried lemon

Method:

Peel the lemons and combine the peel and sugar in a sealable 1 litre jar. Leave to rest for 2 weeks in the fridge. Halve the lemons crossways and char, flesh-side down, in a dry griddle pan set over a high heat for about 1 minute. Combine the charred lemons with the vodka in an airtight container and leave to rest for 2 weeks at room temperature. Mix the white port and lemon balm together in a sealable jar and leave to rest for 1 day. Add 700ml water to the lemon peel and sugar and stir to dissolve. Tortellini at midnight

Sometime in the 1950s, Emiko Davies’ nonno-in-law began the tradition of ringing in the new year with tortellini al sugo. He served it along with spumante and a round of tombola, and sparked a trend; up until the 1970s, you could find tortellini at midnight on New Year’s Eve in the bars around the Tuscan town of Fucecchio. This is just one of the heirloom dishes in this collection, for which Emiko Davies has gathered some of her favourite family recipes. They trace generations that span the length of Italy, from the Mediterranean port city of Taranto in the southern heel of Puglia to elegant Turin, the city of aperitif and Italian cafe culture in the far north and, finally, back to Tuscany, which Emiko calls home. Tortellini at Midnight is a book rich with nostalgia, with fresh, comforting food and stunning photography. It is a book that is good for the soul.

PARMIGIANA DI MELANZANE EGGPLANT PARMIGIANA

Parmigiana is a layered vegetable dish that has nothing to do with parmesan cheese or the northern Italian town of Parma (as it is often mistakenly thought), and everything to do with southern Italian cooking. It has all the hallmarks of a true icon of Italian cuisine; it is resourceful, seasonal, economic and deliciously satisfying all at once. SERVES 4 AS A MAIN OR 6 AS ANTIPASTO 2 large eggplants (aubergines) (approx. 1 kg/2 lb 3 oz) 2 tablespoons extra-virgin olive oil 1 small onion, finely chopped 500 g (1 lb 2 oz) tomato passata (puréed tomatoes) handful of fresh basil leaves 500 ml (17 fl oz/2 cups) vegetable oil, for frying 1 large ball (approx. 200 g/7 oz) fresh mozzarella, sliced 80 g (2¾ oz) aged pecorino (or parmesan or caciocavallo), grated Peel the eggplants if you like, then cut them lengthways into 1 cm (½ in) thick slices. Layer them in a colander and sprinkle each layer generously with salt (don’t worry, you will rinse it off later). Finish layering and salting the slices, then place a plate on top followed by a weight (such as a tin of beans or tomatoes). Leave for a minimum of 30 minutes and up to 1 hour. During this time, the eggplant slices will weep a brownish liquid. Rinse them under cold water and carefully pat them dry with clean tea towels (dish towels). While the eggplants are draining, prepare the tomato sauce by heating the olive oil in a deep pan over a low heat. Add the onion and cook gently until soft and translucent but not coloured, about 10 minutes. Add the passata, along with a few basil leaves, a splash of water and a pinch of salt (try not to salt this sauce too much; it should be bright and fresh – also keep in mind the cheese, especially if using caciocavallo, which will add some saltiness too). Increase the heat to medium and leave to simmer for 15 minutes, or until the sauce is as thick as you like it. Set aside until needed. Pour the vegetable oil into a wide saucepan, preferably one that will fit three or four eggplant slices at a time. Set over a medium–high heat. The oil is hot enough when a cube of eggplant dropped into the oil sizzles immediately. Fry three or four slices at a time, a few minutes on each side, or until they are evenly golden brown. Drain well on paper towels and leave to cool. Change the paper towels as necessary and continue frying until all the slices are cooked.

Preheat the oven to 180°C (350°F). Assemble the Parmigiana by first spooning some tomato sauce in a thin layer over the bottom of a rectangular or oval ceramic or glass casserole dish (ideally, the kind that you can also present at the table). Top with a single layer of eggplant, then spoon over some more tomato sauce, a few torn up basil leaves and a handful of cheese – both mozzarella and pecorino. Continue layering eggplant, tomato sauce and basil, ending with a more generous layer of cheese, in particular the pecorino. Bake for 25–30 minutes, or until you can see the edges bubbling and a golden-brown crust has formed. It’s best to let the Parmigiana sit for about 15–20 minutes before cutting into it, and it’s also delicious served tepid rather than piping hot – a real treat on a hot summer’s night.

DITALINI CON COZZE E FAGIOLI

DITA LINI PASTA WITH MUSSELS AND BEANS This is a delicious, hearty and always satisfying combination: plump mussels from Taranto’s port and earthy, creamy legumes in a flavourful, fragrant broth, and you can find it in all of Taranto’s typical trattorie. The brothy sauce makes this something halfway between a pasta and a soup, and it is always served with a spoon. Instead of borlotti (cranberry) beans, you can also use cannellini beans or even potatoes, peeled, diced into 1 cm (½ in) cubes and boiled together with the pasta. SERVES 4 1 kg (2 lb 3 oz) live mussels in their shells, beards and any exterior grit removed 240 g (8ó oz) ditalini pasta (or other very small soup pasta) 2 tablespoons extra-virgin olive oil, plus extra for drizzling 1 garlic clove, finely chopped ½ onion, thinly sliced 125 ml (4 fl oz/½ cup) dry white wine 1 large ripe tomato, diced 200 g (7 oz) cooked borlotti (cranberry) beans, drained 1 hot red chilli, finely chopped (optional) handful of flat-leaf (Italian) parsley leaves, finely chopped Check over the mussels and discard any that are cracked or open and won’t close when gently prodded. Make sure the mussels are cleaned well in fresh water and, if necessary, scrub with steel wool. To open the mussels, heat them in a wide, shallow, dry frying pan over a medium–high heat. Cover, and shake the pan occasionally to help the mussels move around (the ones on the bottom will find it harder to open fully than the ones on top). After about 1–2 minutes, check them and, with a pair of tongs, begin pulling out the mussels that have already opened and transfer these to a large bowl. Continue until all the mussels have opened (any that are still tightly shut can be discarded). Turn off the heat. Strain the precious mussel liquid left in the pan – either using a very fine-mesh sieve or a regular sieve lined with a paper towel and set over a bowl – and pull out the meat from the shells (reserving some whole mussels to garnish), discarding the shells. In the meantime, bring a large pot of salted water to the boil (see page 17) and cook the pasta according to the instructions on the packet (minus 1 minute of cooking time). Heat the olive oil in a wide frying pan over a low heat and gently fry the garlic and onion for about 5 minutes, until the garlic is fragrant and sizzling but not coloured. Pour in the wine and increase the heat to medium. Add the tomato and simmer for a further 5 minutes (if you’re using a tomato that you think is probably not as ripe as one that you would find in sun-drenched Puglia, let it cook for 10 minutes, and add a splash of water if you find the liquid is reducing too much). Add the beans, the mussel meat and their liquid and taste for seasoning (this is important to do only after you add the liquid from the mussels as it can be quite salty). Add the chilli, if using, and some freshly ground black pepper. Bring to a simmer and cook for 2 minutes, then toss over the parsley as you take it off the heat. Drain the pasta (reserving some of the cooking liquid if you feel you didn’t have enough mussel cooking liquid) and serve with the rather soupy sauce (add a splash of the pasta cooking liquid if necessary) of mussels and beans and a drizzle of olive oil. It should be eaten with a spoon.

ZALIAH is the brand on everybody’s lips (and hips) this season and it’s helmed by a dynamic mother daughter duo, Tiarne and Monique Ettingshausen, who have invested their passion for fashion and creative flair into the luxe Australian label.

As Tiarne explains: “There was a gap in the market, for high quality pieces that didn’t break the bank. We are all about quality over quantity, and we are not going to be seen everywhere and anywhere. We are exclusive, and we make sure quality control is on point.

“We understand these pieces are investments and we personally make sure that they will stand the test of time and be worth your money.” Here, Tiarne sheds some light on the origin of the brand and what we can expect next.

What inspired you to start your own label? We found a niche in the market as we couldn’t find any leather pieces that were high quality, but still affordable for the everyday woman. Everything was breaking the bank, and the leather quality wasn’t even great! What does the name ‘ZALIAH’ mean? We just wanted something super unique, and we came up with ZALIAH! It has a cool edginess to it. What is your background before starting Zaliah? I studied fashion business and design, and then went onto styling for Cosmo Mag for a few years. Monique was in fashion retail owning her own retail store with her mum for 10 years. What specialties/skills do you and your mum each bring to the brand? I like the customer service part of it and running the social media, and mum is great with the designing elements and she’s also so great in sales. We both work hard and balance each other out. What are the hallmarks of the brand? We are all about high quality pieces; quality over quantity for sure! Customer service is also one of our strong points. What are some key pieces for spring we should invest in? A really great pair of linen shorts and a linen shirt. I played tennis for most of my childhood and even attended distance education from year 7 to 11 as I played tennis full time. It was a wild experience but I was injured too often to continue. Training six hours a day, you really learn to be motivated and determined which I feel has come across to our business.

etween 13,000-17,000 breast implant procedures are performed in Australia each year. Gel or fluidfilled pouches are inserted in the breast area for many reasons, including cosmetic enhancement or reconstruction after surgery.

According to the TGA, “Breast implants are not lifetime devices and need to be replaced after 10 to 15 years”. Here, Dr John Flynn demystifies the “explant” and answers some of the key questions about the procedure. Q: Why are “explants” trending? Many women present to their Doctors or Plastic Surgeons with concerns about their breast implants, the majority of them in the older cohort who had their implants 15 to 20 years ago. Most of them have decided they’re too big, too heavy, they’ve lost or gained weight, or maybe there’s an issue and they’ve decided to remove them. In some cases, there’s a complication such as capsular contraction, a leak or rupture. Is media hype around certain implants causing cancer leading to a spike in explants? There is a lot of misinformation on the internet and in the media and the truth is, the incidence of complications is very rare – something like one in ten thousand. There is no conclusive evidence surrounding implants and cancer, and it’s important to consult an expert who can advise you on your unique symptoms and situation. It all boils down to women around 45 years and over, wishing to reduce the size of their breasts, or something has occurred to cause them concern. What does the explant procedure involve? It’s very simple – remove the implant and associated capsule. Sometimes women decide to replace them with a smaller implant or go ‘au naturel’. What are the options then? BALTIC BLISS BY JULES INGALL

The Baltic states are a pocket of countries in the north eastern part of Europe bordering on Russia. Dating back hundreds of years to medieval times, they are rich in culture, history and beauty. Knowing pretty much nothing about this region of the world, I was invited by Canon Australia to experience a road trip starting in Lithuania, journeying up through five countries and ending in Finland. The great thing about road tripping is it offers you the opportunity to experience so much more of a country, see its rural region and engage in experiences often missed in our haste to tick off all the tourist destinations. An overwhelming thing about travelling to Europe (other than the 25 hours of travelling it takes to get there), is that a trip like this involves five countries. So that means five different cultures, five different languages and laws and etiquette that

piece of art, hundreds of years old, all different and beautiful. Of course, the churches in Europe are a strong theme. Historically, life revolved around religion and so in the Vilnius city alone, there are 40 churches, each with intricate detail, beautiful architecture and incredible stories of wars, destruction and life in medieval times. Don’t worry if you’re not religious. I was intrigued to see that most of the churches we visited were more of a tourist attraction than a place of worship that could be appreciated for its magnificence and design rather than its original intention of reverence. From Lithuania, we were chauffeured north to Riga, the capital of Latvia. Stops on the way included the legendary Trakai Castle where we wandered the old castle buildings before being treated to local traditional pastries. Each country has its own unique food customs, with beetroot, pork, dill, sour cream and pickled vegetables being a common theme. The food in Europe is so rich in flavour and always in abundance, there was never a time where we sat and just ate one meal. Every day was a gastronomical feast with three or more courses at every stop. Luckily with all the walking involved in the tour, there was no guilt in indulging in the beautiful foods.

Every detail right down to meals, money exchange, tours and more was taken care of, so all I had to do was pack my bags for two weeks in the European summer and let the experts take over. It’s actually exciting to visit a place for the first time with no knowledge or expectation and just be taken in by first impressions. Arriving in the town of Vilnius, Lithuania, is first stop on the journey and I’m immediately thrown back in time. The “Old Town” as it is known is the original castle and town erected inside the castle walls, that today has built into a quaint, cobble stoned village type atmosphere with endless churches, of course, and our first hotel located right on the town square. The best way to experience these places is by foot. Firstly, for someone like me, I am forever stopping to take a snap not wanting to miss one inch of this incredible town, but also you have the time to take in and absorb every detail. Small details like the old doors were my favourite. Every doorway is

The city of Riga is the biggest of the Baltic cities with a population of over 600,000. Founded in 1201, the old town city is another intriguing labyrinth of laneways, cobblestones and historic buildings, which is definitely becoming a consistent theme. In years gone by, Riga was a significant city in the Baltic region due to its location on the banks of the river Daugava making it a key player in trade. It has been occupied by Sweden, Russia and Germany in its history, so you notice the architecture is in layers of different styles created by the many different influences in the hundreds of years since its foundation. A bustling marketplace with fresh produce is a great place to sample Latvian delicacies and an ideal start to a walking tour of the old town city. From Riga, next stop was Estonia. To break up the long drive to Tallinn city, there’s an interesting stop to the town of Ligante. Home to a soviet bunker hidden nine-metres underground a


questioning whether it was worth the effort. Having said that, the design of the city is inspired by Amsterdam with canals and Baroque architecture. Only 300 years old, this vast city is fun to explore on foot where I had more fun roaming the streets than at some of the overcrowded tourist attractions like the Hermitage Museum, Peterhof Royal Palace and St Isaacs Cathedral, all which rate as ‘must dos’ on popular travel guide sites. Finally, after many miles walked and driven, last stop on our two-week tour was Finland. My expectations of Finland was all nature, forests and lakes, yet the city of Helsinki is a bustling vibrant city with so much to offer. Again, set on the waters of the Gulf of Finland, there are loads of waterfront markets and restaurants.

It’s fascinating to walk through the maze of tunnels and rooms and try and comprehend that this was only 40 years ago. Our guide through the bunker was entertaining, but there wa still a cold shiver trying to get my head around the history. It was the case with so many of the places we visited, soaking up the history but also walking the steps that so many significant moments in history occurred. It was fascinating hearing all the stories from the guides and locals. To lighten the mood after such an intense experience, we stopped just down the road at a small, family-owned winery. The wine tasting is set deep in caves built into the hillside which were originally used as food storage caves for the whole town pre-electricity. Now, they are cute, cosy wine tasting rooms boasting flavours like carrot wine and beetroot vodka. Showing their sense of humour, we were offered to purchase samples at the town “pharmacy”.

This is a very clean and modern city without the now familiar castles and gothic buildings. In history, Finland has been controlled by both Sweden and Russia so the influence of both is evident. It’s a little bit larger than some of the Baltic States with a population of five million people so it’s probably advisable to take a driving tour of this city to really take in the essence of the place. Having started this journey with mild enthusiasm, I now find myself struggling to try and convey what an incredible part of the world this is. From Australia, it’s probably not one of the more popular overseas holiday destinations but this is also what makes it somewhere that should be at the top of your list. Yes, it is popular with Europeans and there are plenty of people around, but it’s not overwhelming. The most enchanting thing about the Baltics is the fascinating history. Each city has its own unique culture, cuisine and story. Trying to get your head around the fact that you are walking paths where Kings and Queens once reigned, is almost eerie. Key moments in history happened on the exact places we stood making the journey all the more magical. The guides each provide their own tales and quirky stories, perhaps sometimes bi-

I’ve travelled a lot in Europe and Tallinn is my new favourite city. When most people think of Europe, it’s Paris or the Amalfi Coast, the Greek Islands, all of which are beautiful. However, more and more, I’m finding myself looking for somewhere new. Western Europe is becoming so busy and being a photographer, there’s not really any hidden gems left. Tallinn has it all. Situated on the Baltic Sea, the old Town inside the castle walls dates back to the fourteenth century and like previous countries on the tour, has an abundance of cathedrals, gothic medieval buildings, secret passageways and cobble streets to explore. There’s a certain charm to Tallinn and particularly in the summer, with the long white nights where the sky never truly goes dark, the city is alive at all hours of the day and night. It’s just a question of how little sleep you can survive on. From Tallinn, the tour headed east to Russia. To be honest, although I am glad to have ticked Russia off my bucket list, the whole process of visiting this country is a mission. Unlike all the other Baltic States, on an Australian passport you are required a tourist entry Visa into Russia which is not only expensive, but takes up to six weeks to process. The procedure to enter into the boarder of Russia by vehicle is a minimum two-hour exercise and once you reach the city of St Petersburg, you have to battle not only with their six million population, but also the 5.6 million visitors per year.
