Designer for life Spotlight on Sonia Stradiotto The new store is adjacent and double the size of the Marina Mirage boutique Sonia ran for many years until December 2020, when she closed its doors to transform the space into a new appointment studio. Now clients can browse the new Sonia Stradiotto Couture store and visit the studio next door, depending on the level of style consultation they desire.
Hot on the high heels of last year’s pandemic retail flatliner, Australian designer Sonia Stradiotto is celebrating a renewed focus on fashion for glamorous women, with the opening of her second new Sonia Stradiotto Couture store at Marina Mirage on the Gold Coast.
The multi award-winning designer with over 30 years success in the fashion industry has built up a loyal clientele of women, particularly in the 30+ age demographic, who appreciate her specialising in cultural sensitivity and anti-aging body contour technology. This, combined with importing unique fabrics from all across the world, results in Sonia Stradiotto Couture delivering finely crafted and customised designs. The new store will house pieces from her four Collections for Winter 2021, which she created during her ‘creative sabbatical’: Cafe Couture, Date Night, Business Chic and the Eclectic Collection. Sonia is already preparing her Spring/ Summer 2021/22 ranges from these collection themes and is excited to announce a fifth new luxe lifestyle collection she will be releasing for the next fashion season, “La Dolce Vita”, or “the Sweet Life”. Here, Sonia shares her thoughts on her inspiration, motivation and how the support and love of her family are key to everything she creates. How have your brand and business evolved over time? Evolution over time comes from listening to what the clients want and understanding what the industry needs. After 30+ years I have also learnt from the economic changes which have tested the business and strengthened the Brand. How did you adapt to changes in 2020?

In 2020 I completely stopped to respect the request of the Australian
government when faced with a Pandemic. Until we knew what was happening, I decided that a full sabbatical was the best way to stop, stay safe, think, create and realign. I believe in the event of negative consequences beyond your control, you must observe and allow your creative juices to flow in order to rise above and apply your “Guts”, to invite new opportunity. Success comes from overcoming challenges and being a step ahead of the unexpected. What creative responses were you proud of in such a challenging year - any new inspiration or themes? I created a new way of doing business called SSC2U. It was very successful when borders closed using FaceTime, old fashioned service and parcels sent to your home. Our Social Media Team created a promotion where women sent in photos of themselves all glammed up doing household duties during lockdown. We gave away $10,000 of vouchers and it really was about women staying connected and lifting each other up. We had clients photographing themselves in ballgowns watering the garden to executives in glam suits spray and wiping with rubber gloves on. When we went back to doing our events, we turned our showings into small group hourly sessions that made up a Festivale. You had 55mins to do champagne socials and shop, then the bell rang and clients went to lunch on us. Something new – it was a hit! A lot of women (and men) threw in the towel when it came to fashion last year. How does what we wear impact our mood? During the pandemic there was a global crash in fashion trading with events and weddings on hold, a lot of retailers were forced to close or simply didn’t know how to make it through.
With people staying home in PJs, depression was at an all-time high, and we began to think outside the box as they say. I created Café Couture because women with substance and stamina and self-belief decided they wanted to dress up and go to Cafés that were still trading through. Cafés seemed to be the new outing and with holidays and overseas travel restrictions right through 2020, the #supportlocalbusiness concept went viral. Café Couture has made women that follow our Brand feel spirited and look sensational which ultimately made them and those they mix with feel positive vibes. We also released an ‘isolife’ collection of basic tops made from exotic fabrics to invigorate your jeans and designer runners. All sold fast and set tongues wagging. Your mum and family are great sources of strength, how have they influenced you throughout your career and your life? Family is everything to me. My husband is our Operations Manager and my children have grown up involved backstage for events which has been a small part of why
they have grown into incredible humans who I am most proud of. My Mum is my rock and my biggest fan, a great support and mentor during the ups and downs of life. One of my favourite quotes of hers is “I never tell anyone what to do I only advise them, and strongly suggest they take my advice.” You are renowned for your inspiration from your international travels - what inspires you about your home, south-east Qld? I’ve travelled the world and there’s no place like home and this great country. I take great inspiration from the beach and also the Gold Coast Hinterland and Scenic Rim. I admit I love Italy, but it’s a permanent postcard memory etched in my mind. Looking ahead, what can we expect from SS in 2021? Our best collection yet with five fabulous ranges. Each September, the US recognises the challenges of obesity in a nationwide “Weight Stigma Awareness Week”, aiming to end “weight hate” and help the community understand why weight stigma should matter to everyone.

Scientific studies have documented clear, consistent evidence that overweight people face discrimination in employment, education, and health care. In Australia, where 25 percent of young people and 67 percent of adults are overweight or obese, weight bias affects millions, at a steadily increasing rate. In Australia, according to ABS figures 2017-18, an estimated one in four (25 percent) children and adolescents aged 2 to 17 were overweight or obese – 1.2 million children and adolescents. An estimated two in three (67 percent) of adults over 18 were overweight or obese. That’s around 12.5 million Aussie adults. According to Felicity Cohen, CEO at WeightLoss Solutions Australia (WLSA), information compiled by the Obesity Action Coalition proves weight bias and weight stigma have adverse effects on people’s mental health their prospects in their careers and their lives. “The experts have found ‘weight hate’ is considered the last form of acceptable discrimination – but it shouldn’t be. It should be deemed as unacceptable as sexual or racial discrimination. “Obesity is no longer considered a cosmetic issue that is caused by overeating and a lack of self-control. The World Health Organization (WHO), along with international medical and scientific societies, recognise obesity as a chronic progressive disease resulting from multiple environmental and genetic factors. The stigmatisation of people with obesity is widespread and causes harm. Weight stigma is often propagated and tolerated in society because of beliefs that stigma and shame will motivate people to lose weight, however, rather than motivating positive change, this stigma contributes to behaviours such as binge eating, social isolation, avoidance of health care services, decreased physical activity, and increased weight gain. Weight bias can have a significant impact on social, economic, psychological and physical health. Social and economic consequences include social rejection, poor quality of relationships, worse academic outcomes and lower socio-economic status.

The reality is the numbers are growing. Its name is derived from the diminutive form of the Russian voda (“water”), but the origins of Vodka are a matter of debate. Some claim that it originated as early as the 8th or 9th century in either Poland or Russia. Chances are, some form of vodka distillation was going on in both countries for centuries. A distilled liquor, clear and colourless and without definite aroma or taste, Vodka was popular in Russia, Poland, Sweden, Finland and the Balkans. Soldiers returning from World War II exported the beverage to the United States and the rest of the world. Although legend states potatoes were traditionally used, potatoes didn’t make it from South America to Europe until the 16th century, so it’s likely cereals formed the basis of the beverage before that time. Today, Vodka is mostly grain-based, with a wheatbased vodka often lighter and whey or potato-based vodka slightly creamier. There are plenty of brands in the top echelon, such as stalwarts Absolut, Smirnoff, Belvedere, Stolichnaya and more recent addition, Grey Goose, and increasingly, vodka from boutique distilleries, including Southport’s own, Panezski Artisan Distillery and Granddad Jack’s at Miami.

The beauty of cannelloni lies in their versatile nature. They can be filled with a rich meat ragù or a wonderfully nutritious vegetarian alternative. In my experience Italians are pretty evenly divided into these two camps, but speaking for myself, if ricotta and spinach is ever on offer it will always trump any carnivorous option.
CANNELLONI
100 g (1 cup) freshly grated parmigiano or pecorino 150 g (1 cup) shredded mozzarella or torn bocconcini extra-virgin olive oil, for drizzling FILLING
1 tablespoon extra-virgin olive oil 1 garlic clove, bashed with the back of a knife 300 g baby spinach 400 g fresh ricotta 2 eggs 75 g (�⁄4 cup) freshly grated pecorino or parmigiano �⁄2 teaspoon freshly grated nutmeg finely grated zest of 1 lemon 3 tablespoons chopped flat-leaf parsley leaves salt flakes and freshly ground black pepper SAUCE
3 tablespoons extra-virgin olive oil 1 onion, chopped 600 ml Quick and Easy Passata (see page 29) 200 ml hot water salt flakes handful of basil leaves, plus extra to serve PASTA DOUGH
300 g (2 cups) plain flour 3 eggs salt flakes coarse semolina, for dusting SERVES 4–6

To make the filling, heat the olive oil in a large saucepan over medium heat. Add the garlic and spinach, then cover and cook until just wilted. Transfer to a bowl and set aside to cool. Discard the garlic, then mix through the remaining ingredients. Place in the fridge for 30 minutes. To make the sauce, heat the olive oil in a saucepan over medium heat, add the onion and cook until soft and translucent. Add the passata and water and bring to a simmer, then reduce the heat to low and cook gently for 15 minutes. Season with salt and stir through the basil leaves. To make the pasta dough, place the flour in a bowl, make a well in the centre and drop in the eggs and a pinch of salt. Combine using your fingers or a fork, then knead for 3–4 minutes to release the gluten and bring it together in a smooth ball. Add up to 1 tablespoon of water if it seems a bit dry. Wrap it (I use beeswax wraps) and let it rest in the fridge for 30 minutes. Dust your board with flour or coarse semolina, and cut the dough into quarters. Work with one piece at a time and keep the rest wrapped up to prevent the dough from drying out. Flatten the dough with the palm of your hand, then pass it through the pasta machine’s widest setting three or four times, folding the dough into three each time. Continue passing the dough through the machine (no further folding required), each time through a thinner setting, until you get to the second-last setting or the sheet is roughly 2.5 mm thick. Cut the pasta into 15 cm x 10 cm rectangles and dust them with semolina. Get your filling and sauce ready to start assembling the dish (you don't want to leave the sheets of pasta too long, otherwise they will dry out). Preheat the oven to 200ºC. To assemble, smear a few tablespoons of the sauce over the base of a 40 cm x 30 cm baking dish to create a cosy bed for the cannelloni. Spoon 2–3 tablespoons of filling onto each pasta rectangle and roll up to enclose, then place, seam-side down, in the dish. Spoon the rest of the sauce over the cannelloni so that each roll is positively drowning in it. (You can add a little water to the sauce if you don’t have enough.) Sprinkle the cheeses over the top and finish with a drizzle of olive oil. Bake for 30 minutes or until nicely browned on top. Cover with foil and rest at room temperature for 20 minutes, then scatter over a few extra basil leaves and serve.

Once you master this, you will have the confidence to attempt more complex risotto recipes. But don’t be fooled by the humble appearance of this dish – it is rich and flavourful, especially if you build on the solid foundation of a robust stock.
parmigiana 1 tablespoon extra-virgin olive oil 50 g butter 1 white onion, diced 350 g carnaroli or arborio rice 200 ml dry white wine 2 litres good-quality chicken or vegetable stock, brought to a gentle simmer 50 g (�⁄2 cup) freshly grated parmigiano, plus extra to serve (optional) salt flakes and freshly ground black or white pepper SERVES 4
Frittata
Heat the olive oil and half the butter in a large heavy-based frying pan over medium heat. Add the onion and cook until soft and translucent, but not caramelised. Add the rice and stir until well coated in the oil and butter. Add the wine and allow the alcohol to evaporate, stirring occasionally (this will take 1–2 minutes). Reduce the heat to medium–low and start adding the stock, a couple of ladlefuls at a time, giving it the occasional gentle stir. Keep adding the stock until the rice is al dente, about 16–17 minutes. Remove the pan from the heat and add a final ladleful of stock, the parmigiano and remaining butter. Taste for salt and adjust to your liking, then season with pepper. Stir vigorously to release the starch and create an all’onda texture. Cover with a lid and let it rest for a few minutes to create the perfect mantecatura (creaminess). Ladle into shallow bowls and serve with some extra parmigiano and black pepper, if you like.
Mamma’s frittata con scalogni (frittata with shallots) is one of the best uses of these small onions, gently stewed in good olive oil, salt and a touch of balsamic until they surrender their natural sweetness. A classic antipasto dish.

Heat 2 tablespoons of the olive oil in a medium non-stick frying pan over medium heat, add the shallot and a pinch of salt and cook for 3–4 minutes. Add a splash of water if the shallot starts sticking to the base of the pan. Pour in the balsamic vinegar and cook for a further 2–3 minutes or until the shallot is soft and caramelised. Season with salt and pepper, then transfer to a plate and set aside.

Wipe out the pan and heat it over medium–high heat. Meanwhile, mix the egg and milk in a large bowl. Season well with salt and pepper. Add the remaining olive oil to the pan and swirl to evenly coat the base and side. Drop in the egg mixture and swirl to spread it out evenly. As it starts to set, move it slightly with a spatula to allow the liquid mixture to get in contact with the base of the pan. When the egg mixture looks like it’s three-quarters set, arrange the shallot mixture on top. Cover with a lid and cook for 1 minute, then slide the frittata onto a plate and flip it back into the pan (see instructions on page 159). Cook for 30 seconds, then slide the frittata onto a plate to cool slightly. Cut into squares or wedges and enjoy. Any leftovers can be eaten fridge cold the next day.

You say tart, we say crostata, but what really matters is that we all love a good flaky pastry latticed over a sweet, jammy filling. Mamma’s recipe for this delicate pastry shell works every time; the trick is to freeze the butter and then whiz everything together in a food processor. It’s genius!

Gather up the remaining pastry and roll it out to a 3–4 mm thickness. Cut it into 2 cm wide strips and gently arrange in a lattice pattern over the berry filling. Brush with the beaten egg and sprinkle with some granulated sugar, then bake for 30–35 minutes until golden and gorgeous. Cool at room temperature and serve as it is or with whipped cream, if desired.

Born in 1990 in Louisville Kentucky, Jennifer, known as “JLaw” in the tradition of contractions, began on the path to acting in Church productions. “My nickname was ‘Nitro,’ as in Nitroglycerin,” she told British Vogue in a piece about her rise to fame. “I was hyperactive, curious about everything. When my mother told me about my childhood, she always told me there was like a light in me, a spark that inspired me constantly. When I entered school, the light went out. We never knew what it was, a kind of social anxiety.” She turned to acting as an outlet and it worked. “I begged my parents to take me to a casting. We went to New York, and that’s where I started acting. Just on stage, my mother saw the change that was taking place in me. She saw my anxieties disappear. She found her daughter, the one who had this light and joy before school. I finally found a way [to] open the door to a universe that I understood, that was good for me and made me happy, because I felt capable.” During the trip to New York at the age of 14, she was cast in an ad for fashion behemoth H&M. At the shoot, an agent spotted her and invited her to the studio for another audition. The agent encouraged her mum, Karen to allow Jennifer to spend the summer in NYC, and she appeared in commercials and scored a role in the movie, “The Devil You Know”. With opportunities coming in constantly, Jennifer and her family relocated to LA, where she was cast in a sitcom, “The Bill Engvall Show”, and a few arthouse movies. Her big break came in 2010, in the form of the role Ree in “Winter’s Bone”, which attracted the Academy’s attention and an Oscar nomination, Golden Globe nomination and a gig with the X-Men franchise. Then followed what Jennifer describes as “the role of a lifetime” when she was cast as Katniss Everdeen in The Hunger Games in 2012. The film was a global hit and propelled Jennifer to the A-list. Three Hunger Games sequels followed, and a flurry of critically acclaimed films such as “Silver Linings Playbook”, “American Hustle”, “Joy”, “Passengers” and “Red Sparrow” kept her in the public eye. After a couple of years acting hiatus, Jennifer is currently working on a star-studded Netflix series pitched as “a political satire disaster comedy” that totally captures the madness and chaos of 2020. “Don’t Look Up”, written and directed by Andy McKay the comedic team behind “Anchorman” and
“Step Brothers”, tells the story of two junior astronomers who undertake a worldwide media tour to warn mankind of a giant, approaching asteroid that will destroy Earth in six months, only to find an unreceptive populace. Alongside JLaw and her co-star Timothee Chalamet in what is definitely the biggest title on its 2021 Netflix slate are luminaries the stature of Leonardo DiCaprio, Cate Blanchett, Meryl Streep, Jonah Hill, Ariana Grande, Matthew Perry, Ron Perlman and many more. Jennifer explained her brief absence from the limelight as fearing fans were getting sick of the sight of her. “We were in Whole Foods and I was on a lot of the magazine covers. And I was like God, I’m going to be one of those people everybody hates, because it’s like, ‘Hey here I am!’ like all the time and it’s just like ‘Get out of my face’.” Despite the fame and the high-profile romances, luxury homes in New York and LA, her aim is to stay unaffected. “I want my life as normal as possible,” she said. “One of the dangers in the film industry is that things are too fast … I want to keep it simple.” And to that end, she says she tries to be as unincumbered as possibly with the trappings of the “celebrity lifestyle”. “I do not have an assistant!” Instead, her best friend of 22 years, Laura Simpson accompanies her on location. “At the end of a day of shooting, I can go home and hang out with her. Do what we do … and not share time with someone who works for me.” In October 2019, she married art dealer, Cooke Maroney, in a match-made by Laura. Said Jennifer at the time on podcast “Naked with Catt Sadler, “I definitely wasn’t at a place where I was like, I’m ready to get married. I just met Cooke and I wanted to marry him. We wanted to commit fully. He’s my best friend. I want to legally bind him to me forever. And fortunately, the paperwork exists for such a thing. Felicity Cohen, the dynamo behind WeightLoss Solutions Australia, is sharing the world’s collective wellbeing wisdom with a wider audience through her podcast, the culmination of two decades dedicated to combating obesity. Reflecting on her 21 years at the helm of WeightLoss Solutions Australia (WLSA), Felicity Cohen was overwhelmed with the impact of hundreds of patients and their individual journeys. “They shaped my career and the evolution of my business,” she says. “There are hundreds of stories of women and men making the decision to embrace lifestyle changes that benefit them for the rest of their lives. “For example, one lady underwent surgery 18 years ago and went on to achieve more than she could have ever dreamed. At 53, she walked the Great Wall of China. Some years ago she joined us in a combined staff and patients team event – in the 10km leg of the Noosa Marathon. She even went bungy jumping!” As the definition of wellness evolves and expands and more disciplines join the cause, Felicity was motivated to take her message to a broader audience through her podcast “Wellness Warriors”. As Felicity explains, “Wellness Warriors is a movement that exists to help you to improve your wellness, lose weight and grow the levels of energy and vitality that feed your life. I speak with experts in their fields in the worlds of health and nutrition to inform and inspire people to pursue a future of holistic well-being.” She continues, “I have seen so many changes over the past 21 years and want to share my interest in all strands of health. We know that weight gain is linked to so many lifestyle choices and health issues. I wanted a means to present them all and have experts to discuss them.”
The beauty of a podcast, according to Felicity, is that listeners can experience Wellness Warriors while driving, at the gym, at home or on the go. “Each episode is dedicated to delving into the research and advice of health professionals – surgeons, psychologists and leading experts in their respective fields. “I have interviewed a chef who focuses on nutrition, trends in food and food waste, a fertility coach, and a paediatric sleep consultant. We also feature the stories of many of our patients and how they went from barely surviving to thriving.” In 2021, Wellness Warriors will cover alcohol addiction, nutrition, mindfulness and meditation. “We have so much coming up! For instance, Dr Karen Coates has specialised in nutritional medicine for 20 years and works with clients in the areas of fertility, hormones and optimal wellness. She is leading the industry in how these areas overlap with obesity and weight-loss.” Tackling these issues with the same vigour as her work at WLSA, Felicity asserts her passion has only grown over the past two decades. “My objective is to help people change their lives – not just their image and self-confidence, but also their prospects and quality of life for their whole lives. It might be pretty obvious that being active is really good for you – it gives you more energy, increases your self-confidence and may even help prevent serious illness such as heart disease. Balancing the energy you eat and drink with the energy your body uses when exercising can seem fairly simple. But do you really know how long you need to work off that slice of cake? If you crunch the numbers, you can determine just how much exercise you'll need to do to burn off some high-kilojoule foods. For adults, the recommended exercise guidelines are: • Ideally, you should aim for 30 minutes of activity every day • Doing any physical activity is better than doing none. If you currently do no physical activity, start by doing some, and gradually build up to the recommended amount • Accumulate 150-300 minutes of moderate intensity physical activity or 75 to 150 minutes of vigorous intensity physical activity each week (or an equivalent combination of both moderate and vigorous) • Be active on most, preferably all, days every week • Do muscle strengthening activities on at least two days each week. A busy life can make it hard to stick to an exercise regime. There are several easy ways to build a bit of extra movement into your daily routine. Instead of sitting down to take phone calls, walk around, instead of social media or watching TV after work, take the kids or dog for a walk around the block, walk or ride a bike for trips that are short distances, take the stairs instead of the elevator. Performance meets efficiency The flagship Taycan Turbo S can generate up to 560 kW / 761 PS* (horsepower) of overboost power in combination with Launch Control. Charging the Porsche Taycan in Australia The Taycan is the first production vehicle with a system voltage of 800 volts, instead of the usual 400 volts for many electric cars. This enables consistent high performance, reduces the charging time and decreases the weight and installation space of the cabling. It also boasts a maximum peak charging capacity of 270 kW (Performance Battery Plus).
Australian models come with the Mobile Charger Connect as standard, providing intelligent charging functions as well as a Charging Cable (Mode 3) for use at AC public charging stations. For charging at 400 volt charging points, a 150 kW on-board DC-Charger is standard in Australia. In Australia, owners will have several ways to charge their Taycan, including High Performance Charging, Home Charging and Porsche Destination Charging. where the wild things are So, you’re a bucket list fanatic? Pick a number: five, 10, 101 things or more. The possibilities are endless when it comes to ticking off a “To Do” list on the Great Barrier Reef – an icon that tops its own list as the largest World Heritage Area on the planet. Enough said. For the ultimate bucket list of activities, look no further than where the richest concentration of wild things are.
Map your adventure: The Great Barrier Reef promises a whole lot of something for every visitor, whether a drool-factor luxury escape or windswept sailing, eco-adventure, lip-biting adrenalin rush or opportunity to dive into the realworld set of “Finding Nemo”, packed with more than 1,600 fish species. The only conundrum is where to start. First up, it’s important to mentally step through the Reef’s five distinct experience precincts: the Wild North – Cape York and Torres Strait (marine wilderness expeditions); Cairns and Port Douglas (adventure and adrenaline); Townsville North Queensland (history and learning); Whitsundays and Mackay (stylish island resorts and sailing); and Southern Great Barrier Reef (uncrowded getaway). Then, pack for every adventure. You won’t regret it. Great expectations: You know you’re onto a great thing when Sir David Attenborough says it’s “the most 58 / AUTUMN/WINTER 202 1
magical thing you ever saw in your life” and the United Nations Educational, Scientific and Cultural Organisation trips over its superlatives when defining the Reef’s outstanding universal value, topping all four natural criteria to make the World Heritage List. The traveller’s bible, Lonely Planet, in its Ultimate Travelist ranked the Great Barrier Reef at No. 2 in the world’s mustsee 500 destinations, behind Cambodia’s Temples of Angkor, but ahead of Peru’s Machu Picchu, The Great Wall of China and India’s Taj Majal. While these are all man-made wonders, the Great Barrier Reef, as the largest structure ever built by living things (and the only one visible from outer space), is the work of billions of tiny organisms, known as coral polyps and has evolved over millennia. Bucket List #1 – Pay it forward: Help keep the ‘Great’ in the Great Barrier Reef by signing up to citizen science projects and reef research encounters, not to mention taking action to adopt environmentally-
friendly initiatives at home. A good place to start is Townsville’s Reef HQ Great Barrier Reef Aquarium, the Great Barrier Reef Marine Park Authority’s (GBRMPA) state-of-theart education centre, which last year scooped TripAdvisor’s Travellers’ Choice Award for the second year running. Home to the world’s largest living coral reef aquarium, the centre also manages a turtle hospital, showing first-hand how human-created problems, like marine debris, can have a fatal impact. Out on the Southern Great Barrier Reef, Lady Elliot Island Eco Resort is as close as you’ll get to a carbon-neutral model, offering behind-the-scenes tours of its “green” infrastructure. The resort generates its own power, desalinates seawater for drinking, maintains a wastewater treatment plant, recycles and stopped selling bottled drinking water in 2012. It also developed the first dedicated Climate Change Trail and Tour.
Bucket List #2 – Big is beautiful: From North to South, the wild things are hard to miss when they’re as big as whales or take the form of inquisitive potato cod, weighing up to 110kg – found in the Wild North (don’t miss the Cod Hole, near Lizard Island, or a once-in-alifetime opportunity to swim with dwarf minke whales, which visit between June and July each year, representing the world’s only predictable aggregation). Down south, Lady Elliot Island stakes its claim as “Manta Heaven”. Indeed, PADI lists it in the Top 5 locations on the planet (alongside Hawaii, Galapagos Islands and the Maldives) to encounter manta rays; gentle giants with wing spans up to seven metres and the largest brain to body size ratio of any living fish. Renowned as being interactive with divers and snorkelers, mantas also perform a fascinating mating ritual, known as the “courtship train” – a bit like an underwater conga line, when males follow and mirror a female’s every move… sometimes for days. Other big personalities on the reef, taking their place in the ‘Great Eight’, include Nemo-like clown fish, 120-year-old giant clams, Maori wrasse, turtles and, of course, sharks. Most recently, the largest fish in the sea has cruised in – groups of whale sharks, the gentle giants of the sea and long-range cruisers. Bucket List #3 – Into the deep: SCUBA diving is the best way to explore the Reef’s underwater wonderland, representing the greatest example of biodiversity on the planet. And, as the father of scuba diving, Jacques Cousteau, proclaimed: “The best way to observe a fish, is to become a fish”. A big fan of the Great Barrier Reef, Cousteau named Heron Bommie (one of 16 dive sites within 15 minutes of Heron Island in the south) among the world’s top 10 dive locations, with SS Yongala wreck (off Ayr, near Townsville) also consistently rated in the top 10. For keen divers, a live-aboard boat is the best option, facilitating trips to outer reefs and, for the more experienced, plummeting Coral Sea wall dives, including the opportunity to witness a live shark feed on Osprey Reef (a beacon for many pelagic species including barracuda, dogtooth tuna and mackerel, and a stunning shiver of
sharks, from white-tips to Grey Whalers, Hammerheads and Oceanic Silver tips). SCUBA’s not your thing? Try a Seawalker tour (helmet dive) off Green Island. The Great Barrier Reef, as one of the world’s most accessible reefs, is also a snorkelling paradise. So, get out there and discover your inner Mermaid by diving and snorkelling every precinct on the reef. Bucket List #4 – Love actually: coral spawning, aka the Mount Everest of reproduction in nature, was first discovered by James Cook University researchers back in the early 1980s. One thing’s for sure: it takes the cake on Sir David Attenborough’s bucket list, erupting each year on the reef after a full moon in late spring or early summer. Cairns-based dive operators Tusa Dive and Quicksilver’s Silverswift offer special night diving and snorkel tours around the event. In the mood for love? Hollywood’s Kate Hudson reckons Lizard Island Resort is “the most romantic place in the world”. For something different, hop aboard Cruise Whitsundays’ Reefsleep adventure on a floating pontoon on Hardy Reef (maximum of nine guests) or pop the question on a scenic flight over Heart Reef. Bucket List #5 – Land ahoy: Coral reefs may have made the Great Barrier Reef famous, but only comprise seven per cent of the Marine Park and World Heritage Area, also punctuated by 600 continental islands, 300 coral cays and about 150 inshore mangrove islands. No bucket list is complete without a turtle encounter, with the reef home to six of the world’s seven species of marine turtles. While Raine Island, the largest green turtle rookery on the planet (on the Reef’s remote northern tip), is not accessible to the public, other popular mating and nesting sites can be found on Lady Elliot Island, Lady Musgrave Island, Heron Island, Green Island (the only one with a rainforest), Fitzroy Island and Bundaberg’s Mon Repos Beach (don’t miss a Queensland Parks and Wildlife Service rangerguided turtle encounter at Mon Repos Turtle Centre). November to March is turtle nesting and hatchling season. Bird watchers are also in for a treat
on the reef; home to 215 species of birds, including 22 nesting species of sea birds and 32 species of shorebirds. Accessible from Port Douglas, Low Isles is made up of two islands; Woody Island and Low Isle. Offering the best of both worlds, Woody Island is uninhabited apart from a large bird population, while Low Isle resembles a picture-perfect tropical island, hugged by coral reef that you can snorkel from the beach. Lady Elliot Island, Lady Musgrave Island and Heron Island (all being true coral cays or sandy islands atop the reef) offer a similar prêt-à-snorkel adventure. Still have energy to spare? For the adrenaline junkies, there’s reef skydiving from 14,000 feet; helicopter fishing expeditions; ocean kayaking; yacht racing; and Seabobbing… to name just a few. Golf aficionados: head to Dent Island, Australia’s only 18-hole championship golf course that occupies its own island. If camping’s your thing, pitching a tent on the Great Barrier Reef is a unique way to get back to nature. You can camp on several islands on the reef (most are national parks and require a permit). Alongside luxury resorts of the ilk of InterContinental Hayman Island Resort or Qualia on Hamilton Island (where pop superstar Taylor Swift chillaxed), there are close to a dozen idyllic camping sites in the Whitsundays. Other popular spots include the uninhabited Lady Musgrave Island, perhaps best known for its massive, protected lagoon (ideal for families and learner divers), Lizard Island, Orpheus Island and Dunk Island. For the ultimate cashed-up Robinson Crusoe escape, rent Haggerstone Island. Back to Nature Taking a break in the wilderness has long been linked with well-being. Now, new research published in the journal Scientific Reports used brain scans, heart-rate monitors, and behavioural experiments to uncover the physiological benefits of immersing ourselves in nature. Researchers at Brighton and Sussex Medical School in England tested people on their physical responses to various sounds to investigate the connection between the brain, the body and background noise, monitoring heart rates and changes in their breathing, blood pressure, temperature, metabolism and digestion. They noticed that the sounds of nature prompted slower heart rates and more “external-focused attention”, an optimal relaxed state. Lead author Cassandra Gould van Praag PhD says the study’s findings may have real-world impacts, especially for people with high stress levels. “I would definitely recommend a walk in natural surroundings to anyone, whether they're currently feeling frazzled or not,” she told Health via email. “Even a few minutes of escape could be beneficial.”

keeping pets safe from poisons Plenty of hazards lurk in our homes that can be fatal for our furry friends.
While we all know pesticides and metal objects such as batteries can poison pets, did you know grapes, sultanas, currants and raisins can cause kidney injury in dogs? The cause is unclear. It is possible that grapes either contain a compound that is directly toxic to the kidneys or that they result in severe fluid losses (vomiting and diarrhoea) that may predispose dogs to kidney failure. If your dog has a habit of stealing food off the table, be sure to put dried fruit out of reach (including, fruit cakes, hot cross buns and raisin toast). Then there’s chocolate, a staple of most households and appealing to both cats and dogs. Chocolate contains theobromine and caffeine, collectively known as methylxanthines which are responsible for chocolate’s toxic effects in animals. Unlike humans,

Coping with pandemic stress How did 2020 impact your productivity? Was “lockdown” or “iso” a period of incredible productivity as you adapted to the restrictions with creative solutions and positive impetus? Or did you barely manage to limp through the day, procrastinating on projects or anything that required planning and focus?
Experts studying the impact of Covid-19 have some insight into how the proliferation of stress affected us in different ways. Many successful people thrive on periods of stress. Operating with heightened adrenaline and cortisol, the primary stress hormone, is a common factor in driven people. But in times of chronic stress, for instance when a pandemic results in confinement, loss of job security, financial worries, home-schooling or relationship issues, our adrenal glands continue to release increasing levels of the stress hormone cortisol that is detrimental to our health, mental and physical. Prolonged stress can impact our sleep, energy levels, metabolism, and libido, and lead to declining productivity levels, fatigue, weight gain, constipation, poor concentration and even depression. Flooding your brain and body with cortisol has a knock-on impact on

white blood cells, which are our first line of defence in our immune systems. Essentially, your entire brain and body system is fighting harder just to regulate the basic functions essential to your survival. Add virtual meetings, more household chores and uncertainty, you can see why resources are diverted away from the higher functions of the brain and saved for our vital organs.

Neuroscientists have found procrastination is a battle between an ancient part of the brain called the limbic system, which controls basic behaviours such as the “fight or flight” response, as well as emotion and pleasure-seeking, and a relatively younger part known as the prefrontal cortex.
A study by the University of Southern California and the University of California found that 58 percent of insomniac participants showed significant improvements in sleep quality with regular meditation. At the end of the study, 91 percent had been able to come off or reduce the dosage of their sleep medication.
