nicole

kidman Award winning actor, mother, wife, advocate for health and fitness, Nicole Kidman’s life has been one of aiming high and achieving dreams.

I

n a little over 30 years, Nicole Kidman has gone from budding child actor with stars in her eyes to becoming one of Hollywood’s most bankable performers. From curly headed moppet to superstar, the journey has been an amazing example of being in the right place at the right time and backing your own talent to see you through. This may come as shock to many but Nicole Kidman was not born in Australia. Her father and mother were studying in Hawaii on educational visas in 1967 when Nicole was born thus giving the future Hollywood star the rare distinction of having dual citizenship. At the age of four the family, including her younger sister Antonia, returned to Sydney to live on the North Shore. The intelligence, she reportedly has an I.Q. of more than 130, Nicole brings to her many roles can be attributed to her parents. Her father Antony is a noted biochemist and clinical psychologist while her mother Janelle was a nursing instructor who would help edit her husband’s books. Nicole’s love of performance shone through at an early age when she took up ballet and then included classes in what would become her life’s work – theatre and mime. Her striking red locks and vibrant blue eyes are a result of Celtic ancestry making her a stand-out as a child, even without her towering height. Although shyness, as with most young people, did play a big part in her developing years. “I am very shy – really shy – I even had a stutter as a kid, which I slowly got over, but I still regress into that shyness. So I don't like walking into a crowded restaurant by myself; I don't like going to a party by myself.” 6

label magazine autumn 2014

In Nicole’s middle teens she started to find work in movies and television productions beginning with a remake of the holiday staple ‘Bush Christmas’. Then came BMX Bandits, the film that is still remembered today because it set her squarely in the public’s eye as someone to watch. It was her fearlessness and ability to commit totally to character that started to make producers and directors sit up and take notice of the very tall (181cm) red head from Down Under. That notice earned her a Hollywood agent who pushed for her to get the role opposite Sam Neill in floating thriller Dead Calm in 1989. There are moments in a life that change irrevocably one’s destiny. For Nicole it was in 1990 and landing the role of Dr. Claire Lewicki in ‘Days of Thunder’ opposite Tom Cruise. An intense romance developed for the then 23 year old and soon she was swept along in the maelstrom of being Mrs. Tom Cruise. “My fame was by association,” she recalled years later. “I’m here, clutching on to his arm and it all feels a little strange and overwhelming. And I was shy. Deeply shy.” And later in a Vanity Fair interview “There is something about that sort of existence that, if you really focus on each other and you’re in that bubble, it’s very intoxicating, because it’s just the two of you. And there is only one other person that’s going through it. So it brings you very close, and it’s deeply romantic. I’m sure Brad and Angelina have that – because there’s nobody else that understands it except that person who’s sleeping right next to you.” It was a lot to deal with for a young Australian actress but the adoption of two children, Isabella and Connor, gave her a sense of home life away from the full glare of publicity.

Kidman as the first global ambassador for Swisse; behind the scenes on the Swisse shoot (above); glowing on the red carpet at the 2014 Golden Globes (right).

Nicole’s career blossomed partly due to her higher profile and an intense desire to be the best that she could be. As a result the range and importance of the roles she was asked to do increased. Billy Bathgate, Far and Away, To Die For, Batman Forever and Eyes Wide Shut were just some of the feature films she performed in during the 1990s. After 10 years her marriage to Tom broke down marked only by her witty comment, “Now I can wear heels,” a reaction to the 10cm height difference between the two. Despite the private and public problems caused by her divorce, Nicole continued to work and in 2002 her role as Virginia Woolf in The Hours earned her a coveted Oscar, the first Australian actress to be so honoured. Her relief at being honoured for her artistic ability rather than the man she married was palpable when she said, “Having your work be the basis of fame, that’s a far more stable feeling.” Despite the success and fame, one thing had always eluded Nicole – a successful long term relationship. By chance it was a fellow Aussie, Keith Urban, who fulfilled that wish when they were introduced in 2005 at G’Day LA, a promotion of all things Australian in Hollywood. Urban had left his native Queensland to find fame and fortune on the country music circuit in America and the combination of his laid back attitude and someone who ‘got’ Nicole and her life caused an almost instant attraction. They married 18 months later and their union has been blessed with two children. The first, Sunday Rose, was delivered by Kidman in 2008. Their second daughter, Faith Margaret, came via surrogacy in 2010. Their commitment to each other is manifested in the way they have described each other in interviews. “I waited 39 years before I got married. It means everything to me to be married,” said Keith. “Like everybody, I really want to do it only once. I'm very loyal in that respect, and committing to somebody means once that ring is on, 8

“I am very shy – really shy – I even had a stutter as a kid, which I slowly got over, but I still regress into that shyness. So I don't like walking into a crowded restaurant by myself; I don't like going to a party by myself.” I'm gonna stay.” Nicole is equally as effusive about the man she has described as her soul mate. “As long as he's there, he's my rock, everything's fine. I feel a little out to sea if he's not there. We can have a really cool life together because that's what matters. In terms of romance, for us, that's so much more important than any of this fame.” To the many facets of her life Nicole has recently added another that of the first global ambassador for Swisse. “I joined Swisse because I wanted to help bring awareness to the importance of living a healthy lifestyle in a busy, often stressful world,” Nicole said. “I love feeling healthy and fit.” It is a telling statement because while she does appear to have it all, Nicole Kidman, more than anyone, understands the things that are truly important – family, love and health. The journey has been long with many well-publicised ups and downs along the way but through it all she has remained ‘Our Nic’, the Aussie girl who took on the world and won.

material girl

Fashion is her world and for 24 years Sonia Stradiotto has carved a signature path in design and retail.

S

haring a birthday with Coco Chanel, it was almost destiny that Sonia Stradiotto would end up in fashion although the journey would be via music and entertainment. “The family moved to the Gold Coast when I was four. My father worked at the Chevron Hotel as a music manager and I used to watch the singers and dancers with their amazing costumes of feathers and rhinestones.” Not unnaturally Sonia’s early ambition was angled towards the stage, music and theatre. “It was my first foray into clothes design. My mother was a seamstress and at seven I would sketch out an idea and then together we would create these unusual pieces for me to wear on stage.” By the time Sonia was in high school she was earning extra money by hand making leather belts adorned with rhinestones, leather pieces and animal prints. That was the beginning. “I did very well at high school in dressmaking so decided to follow that and went on to T.A.F.E. to do pattern making. My way was to draft the patterns by hand, then cut pieces of calico freehand and then pin it over the dummy. The teacher disagreed so I went off to work for Myer where I learnt a valuable lesson. Who we are as person and how we treat people is more important than what the book says.” That was the catalyst for Sonia starting her own label. Looking back over her years in business, Sonia’s philosophy for staying afloat in the fickle world of retail fashion is simple. “Never look back at what you have achieved. Be proud of it but you are only as good as your next gig. The real trick to fashion success is knowing what is going to sell. I do not design for what the market dictates. I design for my clients who have aged with me and need to dress appropriately for their age yet still want to make an impression. After 24 years in my own business my clients that were 25 are now 49 or 45 then and 69 now. My job is them. I work for them and my look is interpreted

into each and every one of them. My background is Italian and romantic so I want to incorporate that into each and every one of my customers.” A birthday is not the only thing that Sonia feels she shares with the inimitable Coco Chanel. “She was a stayer and passionate about every line she produced and every client. She is my inspiration, however I will always put my family first which is why many opportunities have not come to fruition yet due to my responsibility as a parent. Those opportunities will come again when the time is right and will work better than they would have before.” After so many years tending to the diverse needs of her clients it is inevitable that friendships will have formed with those same clients. “Most of my friendships go back 10 to 20 years. Every day I learn a new morsel of knowledge and I try to teach a morsel of knowledge.” It is that burning desire to learn that keeps Sonia going. “When I am travelling overseas and buying stock or materials, the locals will say, ‘She has the eye!’ Which literally means that what I am selecting is a best seller. That reflects in my attitude to clients. I see what suits you and I will refuse your sale should you not believe me.” As for the future, Sonia is excitedly awaiting the national launch of a signature black jersey slimming range. “The test marketing we have done has been phenomenal so it is being distributed through a range of selected boutiques across the country. Fashion is my passion. I love every form of it.” Which sums up Sonia perfectly.

Behind the brand James Jeans has come a long way since its beginnings as a husband and wife team in a rented office inside a laundry house. Now, a cult favourite amongst celebrity clients Rihanna, Sarah-Jessica Parker and Nicole Kidman, we chat with head designer Suen Lim about her most desirable denim. Tell us about the first pair of jeans you owned. What inspired you to pursue a career in denim? When I first moved from the East Coast to LA, I went searching for a perfect fitting pair of jeans – after all I noticed that denim is all everyone was wearing at the time! As I searched though literally dozens of premium and even (gasp) non-premium brands, I grew frustrated as I felt there was always something missing, always something that just wasn’t right. Whether it was the back pockets giving my rear a strange shape, or the back rise being too low and leaving me semi-exposed when I sat down, or even slightly bent over. In my mind there were just so many fit elements that left me unsatisfied. This got my husband James and I thinking that I must not be the only woman who suffers from this predicament. From that point on, with my husband James’ encouragement, I decided to dedicate my time and efforts to creating the ultimate-fitting pair of jeans. Why are James Jeans unique in the market? Our fit truly is a standout amongst our competitors. I have heard from so many of our key boutiques and department stores that their customer may come in for a specific brand with a higher awareness factor, but ends up leaving the store with a pair of James, based on the fit alone. What goes into hand-graded jeans? Triple P: patience, persistence, and precision. We start off with a main block, which is adjusted to be a specific style – say a skinny. Once that skinny prototype pattern is complete, we then have to make a fit sample. From that point on, the prototype will go through many fit samples, pattern adjustments, and so on until it is perfected for one particular size. Keep in mind 26

label magazine autumn 2014

one size doesn’t fit all and a size 25 body is vastly different from, say, a size 28. A computer grades patterns with specific increments of growth per point of the pattern. But lets face it; women don’t get incrementally larger from size 23 to 36. This is where the grading technique comes in. I have my own special grade rules that I developed when I first created my fit block. This required me to test samples on a complete range of women with different body types and sizes – luckily I have a lot of female friends who wanted to pitch in with the fit sessions! Throughout this process I was able to examine the different points of growth per size, which I now apply to each and every pattern I make. How would you describe your personal style? Simple and easy with different textures, silhouettes and colours, but no prints or patterns – keep it simple! I guess you could say I dress easy and casual with one or two popping dressy pieces. It’s amazing what a gorgeous pair of heels does for a boyfriend jean and a plain white tee. What is trending this season? Denim! Finally denim is the trend. We went through so many seasons with the focus being on colours. Colour coatings, colour cords, colour, colour everywhere with minimal true “denim” and now we are seeing the re-birth of the jean. A jean which is actually made of denim. A jean with ageing, distressing and vintage wear marks. There is so much more fun to be had with a pair of jeans – especially when you take out an old pair and try your hand at DIY rips and repairs. Customisation is something that everyone can have fun with and the results are truly one of a kind.

The Brandenburg Gate lit up with luxury from January 14th to 17th as Mercedes-Benz Fashion Week rolled into Berlin, showcasing the Autumn/ Winter 2014 wonders of German talent and enticing over 200,000 retailers and journalists to view the new season. From evening to everyday, the designers of Germany make quirky glamour an art form; from angelic whites to liquid black, every drop of pigment is exacerbated by texture. Although the palette bared a neutral foundation, splashes of oceanic blues and cherry reds breathed life into autumn garments at Laurel. Achtland gave us demure elegance in peony pinks, while Marc Cain dabbled in classic beige with polished adornments for day, with a hit of wicked noir for after dark, featuring a peek-a-boo sheer panel. Berlin reminds us that we have not escaped the translucent trend as Lala and Kaviar Gauche inject power to barely-there designs, with a hint of winter white providing some innocence throughout their range. Metallics proved able to stun again, glossed over Lala’s suiting and Minx’s molten iron gown, with blurred lines and bow giving a girly edge to their grey style.

skin salvation

All Skinstitut products are $45 each, or $99 for three products at Australian Skin Clinics Robina, Helensvale and Ashmore. Visit ozskin.com

It is far too easy to fall into the holiday trap; late nights, naughty treats, sunny days and a few too many Christmas spirits will leave their calling cards on your complexion. We are taking your skin to rehab with Australian Skin Clinics Marketing Manager Leticia Hurst and her artillery of treatments. What are the tell-tale signs of too much summer sun? Too much sun can often cause an increase in pigmentation (brown spots or patches), freckles and sunspots. There are also few things worse for skin texture and ageing (think wrinkles and leathery skin) than sun exposure, so in our climate it is so important to protect your skin daily. How do you treat pigmentation at Australian Skin Clinics? For pigmentation and freckles, we offer laser treatments and skin peels. Laser treatments are fast and safe. A full-face treatment for pigmentation takes just 20 minutes. We generally recommend three laser pigmentation treatments for best results. Pigmentation peels are applied and left on the skin for nine hours, or overnight. The skin will then tighten and begin to peel away over about a week, taking pigmentation with it. A complimentary consultation is recommended so that a qualified technician can individually assess your skin and advise on the treatments required. How can you fix poor skin texture? To treat concerns such as loose, sagging skin, crepiness and lines caused by too much sun over time, we use a dermal stamping/radio

frequency treatment to firm the skin and create new collagen (responsible for the skins elasticity and strength). This is an advanced, yet affordable treatment, which combines technologies for noticeable results. We usually perform three treatments a month apart. What reparative products should we use at home? If you have pigmentation, Skinstitut Even Blend Serum combined with Vitamin C powder is excellent to clarify an uneven skin tone. During summer it is also important to keep skin hydrated. The Skinstitut range offers Moisture Defence for dry, normal and oily skin types, followed by SPF over the top. The new Skinstitut Multi Active Mist is a spray, which strengthens, hydrates and de-stresses the skin. We also advocate using the Glycolic Scrub 14% every 2 – 3 days to polish away the surface layer of dead skin cells. For full body exfoliation at home, use this product all over and leave for two minutes, then rinse off in the shower for smooth, refreshed skin.

Weight loss in a drop Label asks Zhanna from Slim N Healthy about losing 7kg in 26 days with the help of her Unique Support Drops. What are the benefits of the Slim N Healthy Program? Amazing, fast and real results! When followed correctly, our unique program will deliver you rapid and permanent weight loss, increased energy and a crystal clear mind. You will lose between 500-800g per day without exercise or hunger by simply placing our affordable drops under your tongue. It will even reset your metabolism and lock in your new weight for long-lasting results! How do your Support Drops work? Our Unique Support Drops trigger a response from the brain’s centre of hunger and thirst, called the hypothalamus. As a result, it will suppress hunger and greatly increase the fat burning process. The body then naturally begins to use the stored fats within your body, burning fat from within! Importantly, we provide you with the special program to follow, including clear instructions on what foods to eat and what to avoid. We are easily reached either by phone 1800 787 628 or email info@slimnhealthy.com.au at any time throughout the program. Our goal and vision is simply to give a better, healthier, happier life to all the people out there who need help. What are the active ingredients? My team of naturopaths, homeopath and I developed a formula that guarantees results fast,

unlike any other products on the market! Slim N Healthy Phase 1 & 2 Support Drops have added hunger control, digestion assistants, endocrine system care, appetite regulators and metabolism normalisers, with a mild diuretic to help shed water weight faster. Our Support Drops contain activators (non hormonal),
radionically prepared HCG, Hypothalumus, Pituitary, Thyroid, and homeopathic multiple potencies L-Carnitine, L-Ornithine, L-Arginine in Ethanol. Our Australian-made product is our unique formula and does not contain material of human origin. What are the different phases of the diet? Phase 1: You can eat all your heart desires, load up on sugars and carbs! Unfortunately, that only lasts for two days. This is the Fat Loading Phase, aided by Phase 1 & 2 Support Drops. Phase 2: Days 3-23 on a 26 Day kit and days 3-40 on a 43 Day kit involve a low calorie diet. Continue taking the Slim N Healthy 1 & 2 Support Drops. Phase 3 Maintenance Phase: After the first 2 Phases are finished, you’ll need to complete the maintenance phase to gradually re-adjust your body to a regular food intake. It’s essential you complete this phase as instructed in our Slim N Healthy e-Guide. The maintenance phase resets your metabolism and locks in the weight. It is important to stay away from sugars and carbs during this last phase. Who can use your Program? Our Unique Program works for almost everyone: young or old, male or female. This program is ideal for people who don’t have the time or ability to go to a gym, who are undergoing rehabilitation after an accident, women who are going through menopause and of course men – they tend to lose weight much faster! We always recommend consulting your doctor before beginning any weight loss program. This program is not recommended for pregnant or breastfeeding women. There is no miracle cure for weight loss, but the Slim N Healthy Unique Program along with the Support Drops are the next best thing.

Planning for Beauty Let Cosmedic and Skin Clinic help you create your beauty plan.

P

lanning for special events takes time and research so does planning for your beauty. Generally people do not plan for long term beauty, they will often only attend a clinic when there is a special event coming up and expect that one treatment will reverse years of sun damage, erase lines and wrinkles and turn back the clock ten years or so. Although some improvements can be made with short notice, the best results are those that have been achieved over time. A beauty plan can be tailored to enhance your natural looks and improve the texture of your skin, improve the lines and enhance the features of your face. A beauty plan should not only carry you through the special events but should be a plan to carry you through life. Life itself is a special event and we all want to look our best for every occasion. The first step for starting a beauty plan starts with a consultation from an expert in the field. The consultation will focus on your long term goals and then determine ways to achieve them. A personalised consultation will take into consideration any concerns you may have regarding your appearance and then offer advice tailored to your specific needs. The media often bombards us with so much information in the beauty industry it is very difficult to decide what is the correct treatment for us as an individual. Successful events always revolve around planning. Whether you are planning a trip to Europe, building a house, getting married or having a baby, all of these special events in life require a detailed plan for things to turn out perfectly the way you want them to be. Planning usually requires research and discussion with experts from each of these specialised fields. Assistance may be required from a

The planning and implementation can take up to twelve months to bring about the desired result on her wedding day. Our highly experienced aesthetic nurses can help you to plan what is right for you. The nurses at the Cosmedic and Skin Clinic have many years of experience in the cosmetic medicine profession and are highly experienced, caring, understand and will listen to what you want to achieve. Eat & Drink

Delicious bites about all the latest in food news.

From the cellars of fine wine experts Déjà vu Wine come three distinctly different offerings.

San Pellegrino Rising from an aquifer located deep beneath Monte Gazzaro, San Pellegrino Sparkling Natural Mineral Water is known globally for its tingling freshness and moderate acidity leaving a pleasant after taste. The second from the stable is Acqua Panna, renowned for being clear and luminous with a distinctive silky lightness.

The Pass 2012 Sauvignon Blanc showcases the best flavour characteristics of the Marlborough region in New Zealand. Once harvested, the fruit is gently pressed and the juice is fermented with select yeast strains to enhance the pulsating flavours. The vibrant fruit flavours from the vineyard were preserved in the bottle to produce bright lemongrass and citrus aromas. On the palate, intense citrus fruit flavours lead to a crisp finish. Travelling to Spain we have Aria Brut Nature produced by the team at Segura Viudas. A perfect balance between fruit, acidity and a refreshing finish, this is a wine with fine personality, making it a perfect match for grilled poultry or rich casseroles. It is also ideal with shellfish, grilled white fish and full flavoured river fish. Lastly we travel to The Alkoomi vineyards in the Frankland River district of Western Australia where climatic conditions are similar to those of Bordeaux. Alkoomi produces an elegant yet intensely flavoured example of cool climate Chardonnay. Harvested early in the cool morning, the juice is fermented with fine juice solids to build some texture and richness to the palate. A cool fermentation to dryness, some lees stirring followed and this lends the wine a creamy, vanillin depth of flavour. labelmagazine.com.au

KIDNEY BEAN CHILLI WITH CORNBREAD I’ve never been hugely into making bread — I get really impatient waiting for yeasty doughs to prove. Cornbread is different though; it has a great bready texture to soak up the chilli sauce, but it’s no harder to make than any mix ’n’ bake muffin. If you want to make this meal even more special, serve it with a batch of quick pickled cucumber and guacamole. KIDNEY BEAN CHILLI 2 tablespoons olive oil 1 brown onion, finely diced 3 garlic cloves, sliced 1 long red chilli, seeded and sliced 1 red capsicum (pepper), seeded and roughly diced 1 tablespoon ground cumin 1 tablespoon ground coriander 2 teaspoons smoked paprika 2 x 400g tins of chopped tomatoes 2 chipotle chillies in adobo sauce, finely chopped (optional) 1 x 400g tin of kidney beans, rinsed and drained Handful of coriander (cilantro) leaves

CORNBREAD (MAKES 10) Canola spray oil, for greasing 230g (about 1¼ cups) polenta 110g (¾ cup) plain (all-purpose) flour 55g (¼ cup) caster (superfine) sugar 2 teaspoons salt 1 teaspoon baking powder 250ml (1 cup) milk 2 free-range eggs 2 tablespoons melted butter or olive oil

PRAWN BANH MI

Preheat the oven to 220°C. Use canola spray oil to grease 10 holes of a 12-hole (60ml/¼ cup) muffin tin. Combine all the dry ingredients for the cornbread in one bowl. Put the milk, eggs and butter (or olive oil) in another bowl and whisk until combined. Make a well in the centre of the dry ingredients and gradually pour in the milk mixture, whisking as you go, until it’s smooth. Pour this batter into the greased muffin holes then transfer to the oven. Cook for 8-10 minutes, or until a skewer inserted in the centre of a muffin comes out clean. Turn out onto a wire rack and leave to cool. Heat a large heavy-based saucepan over a medium heat with the olive oil. Fry the onion for 3-5 minutes, stirring occasionally, until lightly browned. Add the garlic, chilli, capsicum, spices and a pinch or two of salt, to taste. Cook for 2 more minutes, stirring, until everything looks fairly dry. Add the tomatoes and chipotle (if using). Cook for 10 minutes, or until all of the excess liquid has evaporated and the sauce has reduced down. Add the kidney beans to the chilli, stir to combine and remove the pan from the heat. Cover and keep warm until ready to serve then roughly chop the coriander leaves, scatter them on top and serve with the cornbread, some pickled cucumbers and some guacamole (if you like). Serves 4.

Banh mi takes all of the awesome things about Vietnamese flavours (that sweet, sour and salty goodness) and sticks it in a convenient roll. The pickle can be made well in advance, and the rest of the dish only takes minutes to put together. It’s usually made with pork or duck, but I love how the prawns give you all those same flavours, but in a lighter, fresher way. sandwich 1½ tablespoons canola oil 16 raw prawns, peeled and deveined 4 long soft white rolls, sliced open with a hinge like a book 1 Lebanese (short) cucumber, thinly sliced Handful of torn mint or coriander (cilantro) leaves (or both!) 60ml (¼ cup) hoisin sauce (optional) Kewpie mayonnaise (Japanese mayonnaise) to serve (optional) Chilli sauce (such as Sriracha), to serve (optional)

PICKLED CARROT & RADISH 125ml (½ cup) white vinegar 125ml (½ cup) water 55g (¼ cup) sugar 1 carrot, finely shredded 4 radishes, finely shredded or grated Start this recipe at least 2 hours before you want to eat. To make the pickled carrot and radish, combine the vinegar, water and sugar in a saucepan. Cook over a medium heat until the sugar has completely dissolved then remove from the heat and leave to cool. Combine the carrot and radish in a glass or ceramic container, and pour over the cooled pickling liquid. Leave for 2-4 hours, or overnight if you can. Heat a heavy-based frying pan over a high heat. Add the canola oil, then the prawns. Season with a pinch of salt and cook for 1 minute, tossing occasionally until golden and just cooked through. Move the prawns to a plate. Drain the pickled carrot and radish. Stuff the rolls with cucumber, herbs, the carrot and radish pickle and the prawns. Add a few drizzles of the sauces if you like. Serve warm. Serves 4.

RECIPES

SALTED CARAMEL POPCORN FUDGE My birthday is the perfect time to request whatever the heck I want to eat. Every year, I ask Chloe to make me a batch of her signature fudge. It’s completely over-the-top and decadent, and I love it. It has a rich, butterscotch taste that’s cut by the salt flakes on the top, and the popcorn is the perfect foil to the fudge. I keep pestering her to open her own shop so I can have access to it more often. 125g (½ cup) butter 330g (1½ cups, firmly packed) brown sugar 1 x 395g tin of condensed milk 2 tablespoons golden syrup 180g white chocolate melts ½ teaspoon sea salt flakes Enough air-popped salted popcorn to cover the surface of the tin (about 2 cups of popped corn) Line a 21cm square baking tin with baking paper. Melt the butter over a high heat in a medium heavy-based saucepan. Once melted, add the brown sugar, condensed milk and golden syrup. Stir until boiling then lower the heat to medium-low and cook for a further 10 minutes, stirring constantly. Keep an eye on it throughout; if it looks too hot, take it off the heat and keep stirring for a few seconds before returning it to the heat. Don’t even think about touching or tasting it at this point, as caramel can burn pretty badly. The mixture will become thicker and darker in colour as it cooks. Once ready (when the sugar has all dissolved and the mixture is smooth, dark and has thickened slightly), take the pan off the heat and add the chocolate. Vigorously stir in until smooth then pour into the lined tin using a spatula or wooden spoon to help spread it out evenly. Working quickly, sprinkle the salt flakes all over the top, and scatter over the popcorn until the fudge is all covered. Lightly press the popcorn into the still-warm fudge. Place in the fridge to set for at least 1 hour. Once set, take it out of the fridge and slice into 16 pieces. Some popcorn will fall off during this process, but that’s fine. It’s best served at room temperature so put it in an airtight container and keep in a cool corner of the kitchen for a few days. It might last longer, but I’ve never seen it survive more than a couple of days! Makes 16 pieces.

Callum is on a mission to make Australia a healthier place, one course at a time. What was your inspiration behind your first book, The Starter Kitchen? When I moved out of home to go to uni, I was living with a guy who was a pretty rubbish cook and I think watching the sort of stuff he was cooking and spending a heap money on takeaway, I felt a little bit sorry for him, I suppose. So, I taught him how to cook a few meals for himself. He was probably the worst cook I’ve ever met so I was like, if I can teach him how to cook, then in theory I can teach other people how to cook.

Looking at your new book, I’d Eat That!, how has your style evolved? I think the first book was the sort of food I was cooking growing up and that’s where I got a lot of the inspiration for recipes from. I think the recipes now are the sort of foods I’m cooking right now and with Sprout Cooking School as well. If you have a look at the recipes, I’m pretty strapped for time as a lot of people are, everyone’s busy and everyone needs more hours in the day so a lot of the recipes are things that are really quick, fresh and easy to do. Tell us about the competition attached to I’d Eat That! If you’re anywhere in Australia, you can win a foodie tour of Adelaide with me. It’s a 25 words or less competition and the winner will get flown over to Adelaide and stay at the Hilton Hotel and I’m going to show them some of my favourite places to eat and find the good food in Adelaide. Which to be honest, will be just as much fun for me as it will be for them, I’m sure! Because the kitchen we use for Sprout is in the Central Market, I know Adelaide Central Market like the back of my hand. For people that haven’t been there before or have and don’t know it particularly well, I’ll definitely be taking them there to show them just what Adelaide has got. What is your go-to three course meal for company? I don’t think cooking should be a stressful thing at all, so my formula is always cold, hot and cold. I do an entree that doesn’t have to be cooked last minute and a dessert that doesn’t have to be baked, a panna cotta that sets in the fridge, or a crème brulee or something that you just have to serve. Then have the main as the thing that’s hot. If you follow those guidelines, you’re onto a stress-free dinner that’s going to make everyone happy.

What inspired you to start Sprout Cooking? I went to a number of universities around Australia and spent a bit of time teaching students how to cook and it was really fun. I’d just come back from doing that, pretty much doing my dream job, which is going from teaching one guy I was living with how to cook to teaching uni students how to cook and I really enjoyed it. Having met Themis Chryssidis, he was in the stage where he was sick of giving advice to his clients about what to do to improve their diet and them saying ‘that’s all well and good but I actually don’t know how to cook that, so I cant do it’. It started off as a side hobby, doing a class every fortnight and now it’s a full-time job for both of us.

What made you want to work with the Cancer Council and Wesley’s Food for Families Appeal? With the Cancer Council, my dad passed away from cancer a few years ago so that was a pretty obvious link to try and be supportive. Everyone thinks of cancer charities as trying to find a cure, but there’s a lot of other things to it, like the support services they provide for families going through cancer. Wesley are great as well and Food for Families is all about coming into Christmas time when it’s a great time for most people, but we’re trying to help people who are really struggling around that time.

This is everyone’s favourite in Turkey. I know it is another eggplant (aubergine) dish, but it is simply exquisite. Long, slender purple eggplants are ideal for this recipe, if you can get them — just leave them whole for the pan-frying step, rather than cutting them in half. Here I’ve used the round chubby ones; make sure yours don’t have seeds in them, as these can make the flesh taste bitter. You can also make this dish using boneless, skinless chicken thighs instead of the lamb or beef. 4 eggplants (aubergines) 125ml (½ cup) olive oil 2 onions, finely diced 2 small green capsicums, finely diced 300g minced (ground) lamb or beef 500g tomatoes, finely diced

6 slices ripe tomato 2 tablespoons tomato paste (concentrated purée) 15g (½ cup) chopped Italian parsley 4 garlic cloves, sliced Garlic yoghurt, to serve

Preheat the oven to 180°C (350°F). Using a small knife, peel each eggplant lengthways, in striped-pyjama fashion. Cut each one in half and set aside. Heat the olive oil in a large frying pan and fry the eggplants over high heat for 5 minutes, until evenly browned all over, turning them regularly with tongs. Remove from the pan and set aside. Add the onion to the pan and fry over medium heat, stirring until soft. Add the capsicum and cook for 2 minutes. Add the lamb or beef, diced tomato, tomato paste and most of the parsley, reserving some for garnishing. Season with sea salt and freshly ground black pepper and cook for a further 5 minutes. (The meat will continue cooking in the oven, so it doesn’t need to be fully cooked at this stage.) Place the eggplants on a baking tray, cut side up. Gently open the bellies, then sprinkle the insides with sea salt. Poke the garlic slices into the eggplant flesh. Spoon the meat filling into the belly of each eggplant, then cover each with a slice of tomato. Pour 125ml (½ cup) hot water over the eggplants, cover with foil and bake for 45 minutes, or until the necks of the eggplants are tender. Garnish with the reserved parsley and serve hot, with garlic yoghurt, a green salad and Turkish bread. Serves 6.

ummer has been and gone and what a spectacular holiday season has been enjoyed. In some ways I think that we have been rediscovered with so many families enjoying all that is great about the Gold Coast. The weather, the beach and theme parks have been great drawcards and Glass was packed every night. The Diamonds and Pearls New Year’s Eve celebration was another great night with regulars and tourists joining in the fun. Everybody got into the theme with some spectacular outfits on display. Nothing pleases me more than seeing our customers enjoying themselves and then taking the time to call and rave about the food and service. One of my favourite times of the year is the Magic Millions carnival. Each year Gerry Harvey and Katie Page-Harvey seem to take it up another notch and we were honoured to have many of the top racing people coming in to dine with us. Members of the Hawkes family enjoyed some Glass hospitality as did Melbourne Cup, Cox Plate, Caulfield Cup and Golden Slipper winning trainer David Hayes. Sadly they didn’t give us any hot tips for the big day. We were also thrilled to host Eddie Vedder, lead singer from Pearl Jam and his beautiful wife Jill McCormick. Jill, a former Vogue model, was touring with Eddie before the Big Day Out concert at Metricon Stadium. We pride ourselves that we have the best selection of cocktails in town but one that has really taken off is our McCracken Dark and Stormy cocktail. In short it has been going off with customers raving about the taste and mixture. With a combination of Kraken black spiced rum, muddled lime and topped with ginger beer, it is the

perfect refreshing cocktail for the warmer months. Another drink that is absolutely made for summer is Moët Ice Impérial. Very few restaurants on the Gold Coast meet the strict criteria that allows it to be served in-house and when it is presented with seasonal fruit and ice it certainly makes an impression. Not to mention that it is delicious and refreshing. On the food front our new tapas menu has been received wonderfully. The range and variety is, if I say so myself, quite spectacular. Everything from two way pork sliders to lemon roasted chicken wings or spanner crab balls with abalone sauce is available. The dishes are the perfect accompaniment if you and your friends feel like something light to share with a relaxing drink. If you haven’t visited us for a while you will notice some changes due to our renovations. It is a completely new look which makes the dining area look spacious and even more welcoming and gives our all-important view over the Broadwater greater emphasis. We’ve had love galore at Glass. Valentine’s Day was again packed out with lovers of all ages coming in to indulge in some special treatment with their loved one. There must be something in the air because we have been witness to proposals, celebrations and engagement parties galore at Glass. May your glass always be half full,

lea michelle – Louder

Jennifer Lawrence At 23, J-Law has become the toast of Hollywood via her talent, good looks and common sense. Jennifer Lawrence, in Hollywood terms, has the world at her feet. Awarded an Oscar for her searing portrayal as Tiffany Maxwell in Silver Linings Playbook, she is also a star in the phenomenon that is the X-Men franchise and an integral part of the runaway success of the Hunger Games. And despite receiving $10 million pay cheques, this golden girl is determinedly free of the well-coached, stick to the company line, response to the usual questions. Smart, sassy, ferociously under-educated by her own admission, she truly, deeply loves acting. Of all the bright young actors coming through the ranks she is the triple threat able to do drama, comedy and anchor a top selling franchise. She was ‘discovered’ as a 14 year old on a trip to New York when a model scout asked if he could take her picture. She duly handed over her mother’s number. The scout called her mother to say that he had all these agents wanting to meet and talk contracts. “At that stage I was playing field hockey or cheerleading and wanted to be a doctor. Within 20 minutes, in the cab ride from the hotel room, I decided I didn’t want to be a model, that, in fact, I wanted to be an actress, and I would only sign with an agency if they would let me audition for commercials and act as well.” One of the agents gave her a script and for the first time in her young life she felt as though she completely understood something. “I always felt like I sucked at everything, that I could never find the thing that I liked. I auditioned and I probably sucked, but I had decided 100 percent that this is what I wanted to do.” From there it is been a rocket trip with guest spots on television shows such as Cold Case and Medium before working in indie films such as The Burning Plain and her Oscar nominated role for best actress in Winter’s Bone. Then at the age of 22 the role that earned her an Oscar and a Golden Globe in Silver Linings Playbook. Cast against actors of the calibre of Bradley Cooper, Robert De Niro and our own Jackie Weaver, the young Jennifer more than held her own giving a searing performance. American Hustle followed in 2013 earning more rave reviews and award nominations. She is by any definition a success story but it is her ability to see what she does with a level head that has endeared her to the public. “Why would I ever get cocky? I’m not saving anybody’s life. There are doctors who save lives and firemen who run into burning buildings. I’m making movies.” Beautiful, talented but blessed with a clear eye for seeing what she does is a great job but let’s not take it all too seriously. Weird Hollywood Truth is stranger than fiction for Hollywood ‘A’ listers – behind their fame and fortune are some very odd tales. Christopher Walken Ever wondered where Christopher Walken learnt to look so cool on screen? It could be because he joined a travelling circus as a teenager and became a lion tamer. His favourite was a lioness named Sheba. “She was very sweet, almost like a dog. I would wave the whip, and she would run and sit up and roll over and do things.”

Nicole Kidman Her serene grace and ethereal looks would have you believe that our Nic doesn’t have anything to be afraid of but it is not so. She suffers from lepidopterophobia which has nothing to do with a fear of leopards. Mrs Urban is terrified of butterflies. Snakes, spiders and rats are all fine but show her a butterfly and it is instant melt-down.

Ryan Gosling and Justin Timberlake The two Hollywood hotties don’t hang out together these days but when they were younger they were roommates. Both were selected to be part of the Mickey Mouse Club so they relocated to Florida lived together for six months as Justin explained. “Ryan’s mom had to stay back in Canada and my mom was his guardian for a year so he could be on the show.”

Lady Gaga The Queen of all things pop is very superstitious when it comes to her art but in true Lady Gaga style not in the usual way. She believes that creativity is something you can lose if you sleep around with people you don’t really love. “I have this weird thing that if I sleep with someone they’re going to take my creativity from me through my vagina,” she explained.

Jessica Alba Superstitions take many forms but this one is up there as the weirdest. In 2008 when pregnant with her first child, Jessica gave all the guests at her baby shower special leather bracelets with a prayer on them. She instructed the recipients not to take the bracelet off until after the baby was born believing that if the bracelet was removed it could bring bad luck to the baby.

Alicia Keys Beautiful and a great singer but Alicia’s first big break in show business came through acting. The songstress starred as one of Rudy’s friends on “The Cosby Show”.

Kate Winslet Many is the actor who thinks they can cross over and make a career in music but most, due to lack of talent, fail miserably. Not so Kate Winslet who has a beautiful voice. She made her singing debut in 1994’s “La Boheme” and recorded her first single in 2001.

Julie Bowen If Julie Bowen who plays Clare Dunphey on “Modern Family”, looks familiar to you you may want to blame Adam Sandler. She played Adam Sandler’s love interest in “Happy Gilmore” in 1996.

Walt Disney Who doesn’t love Mickey Mouse? Everyone it seems except the man who created the most famous mouse in the world. Walt Disney had a particular fear in real life of mice!

Channing Tatum Next time you watch a video of Ricky Martin’s mega hit ‘She Bangs’ take a close look at one of the male dancers. It’s none other than Channing shaking his booty behind Ricky. Not that far removed from his hunky character in “Magic Mike”.

Jamie-Lynn Singer We’ve saved the weirdest for last. While she is not a household name, actress and singer Jamie-Lynn Singer has a number of superstitions connected with her successful theatre performances. The one that gets everyone’s attentions is she doesn’t change her underwear between the shows. Ewwww!

Pierce Brosnan Another star who got started in show business via a circus was the suave actor who played James Bond for many years. Pierce learned how to be a fire-eater and wowed audiences in a circus for years with his fire-breathing skills.

Did You Know? What do Yoda from “Star Wars,” Cookie Monster from “Sesame Street” and Miss Piggy and Fozzie Bear from “The Muppets” have in common? They have all been brought to life by one man – the famous puppeteer and director Frank Oz.

legal

Social media and

defamation Ben Strangman discusses the increasing perils of posting on social media and how it could affect you.

R

ecently we have noticed an increase in the number of defamation claims that we are dealing with at our firm. The majority of these are for comments made electronically, either on social media or email. Whether it is the effect of a bottle of red wine late at night or the person being defamed not being present, some of the statements that we have seen being made are completely disrespectful. We often question whether or not those comments would have been made if the person they had made the comments about was sitting directly in front of them. People should understand that defamatory comments that are made on social media are not immune to legal proceedings for defamation. We are seeing the number of people complaining about defamatory comments made about them on social media or other electronic forms, such as email, is steadily increasing. We are also seeing an increase in the number of defamation complaints in the area of Body Corporate law. Bodies Corporate are always a hotbed for disputes where there are, in some circumstances, hundreds of people attempting to share the same facilities. The laws that govern Bodies Corporate in Queensland are established in part to help facilitate the resolving of tensions between lot owners. Unfortunately, sometimes those laws are ignored and people take matters into their own hands. Whether it is an agitator in the Body Corporate constantly attacking (sometimes quite personally) volunteer committee members or a runaway committee who attack lot owners for standing up for their rights, the level of vitriol never ceases to surprise us.

Fortunately for those living in Queensland, the Queensland government passed legislation in 2005 that is intended to operate as a guide for dealing with defamatory comments. A very successful part of that legislation is the ability to issue a Defamation Concerns Notice. This notice can be issued by a person defamed, in accordance with the Defamation Act, in an attempt to resolve their grievance without having to progress the matter to Court and incur the costs of that Court action. The effect of a Defamation Concerns Notice is that it provides an opportunity for the person who made the defamatory comments to apologise and make amends. An offer to make amends may include an offer to reimburse any legal costs so far incurred, an apology and/or a publication of a correction of the matter. If that person fails to make amends, then they are at significant risk. This is because if the matter does proceed to Court and the claim of defamation is successful, then the successful party is entitled to their costs on an indemnity basis. This can substantially increase the award made by the Court against the defaming party. At OMB Solicitors we have developed a process which allows us to cost effectively meet with our clients, listen to their concerns and issue a Defamation Concerns Notice. In addition to this, our litigation department stands ready to progress any unresolved matters through to legal proceedings if necessary. If you have been defamed, or have perhaps said something which you need some assistance reconciling from, then OMB Solicitors would be pleased to assist.
