The conceptual jewelry brand recently collaborated with the Ahl Masr Foundation to create its newest capsule collection, Cicatrix -“the scar of a healed wound”. Sandbox founder and designer Suhayla Al Sheikh was inspired by the scars of survivors of burn incidents. She sat down with four women, who suffered from burns and got to listen to their stories and know them on an intimate level. “It was very important for me to communicate to these women that the pain that left a physical scar is actually part of who they are, and it’s beautiful,” Al Sheikh said. DEFINED CURLS
Taking care of your curly hair takes time and a dedicated routine. You may have had this time in your life where you’ve experienced millions of products, changed your hair care routine to have perfect frizz-free curls. Maybe you haven’t found out the secrets to maintain perfect curls but once you get to know them, you’ll realize that taking care of your curls is a piece of cake. So what do you need to do? 26 | AUGUST 2017
MOISTURIZING: The road to Frizz-free curls. Imagine that you just wake up; you pass by a mirror only to see a gigantic set of rebellious curls! Well, just like every problem has a solution, so does your hair. In order to keep your hair in shape and control the frizz, your curls need to be moisturized. With that said, you need to deep condition it at least once or twice a week. Use any deep conditioning, apply it to your hair and leave it for 10 to 15 minutes maximum. Make sure to put a shower cap during the deep conditioning process so that your curls absorb the conditioner. After 15 minutes, wash your hair with cold water because cold water helps in decreasing the frizz. WARM AND COLD WATER CONCEPT Warm water opens the cuticle letting shampoo and conditioner in. Cold water closes the hair cuticle and seals in moisture leading to healthier hair. So wash your hair with warm water at first but at the end, rinse your hair with cold water. LEARN MORE ABOUT POROSITY: Porosity is your hair’s capacity to absorb moisture.
Low/high porosity test AVOID HARSH CHEMICALS Have you recently heard about curly heads going natural? Well, the road to healthy curls is going back to using products with natural ingredients. In order to do that, one should pick their shampoo and conditioner really carefully and actually read the ingredients. Most of the shampoos and conditioners contain harsh chemicals that strip your hair from its natural oils. Hence, you need to avoid certain harsh chemicals such as sulfates.
• Wash your hair with shampoo (so you can clean it one last time) • Take several strands from your hair • Put the strands in a glass of water (room temperature) • Wait for 5 minutes and see how your hair reacts.
Low Porosity: If your strands float Low porosity hair means that your cuticles are tight and that your hair
resists water and moisture. Build ups from products are likely to happen to low porosity hair since it doesn’t absorb moisture. If your hair falls in the low porosity category, then you need to use products without proteins. Shea butter, coconut and jojoba oil will also be good to this type of hair. As for leave-in, aim for light products that won’t build up on your hair.
High Porosity: If your strands sink High porosity hair means that your hair absorbs too much moisture. It looks dull and dry probably from heat damage and harsh chemicals. So make sure to use leave-in conditioners, moisturizers and sealers. This way, you will seal moisture in your hair and preserve healthy soft curls. HOW TO ENSURE HEALTHY DEFINED CURLS? Every curly head is looking for defined but healthy curls. To achieve this goal, there are so many routines that you should try to see what your hair likes the most. After knowing your hair type, choose your leave in accordingly. Below are some of the tips to protect your curls. • Only comb your hair when it’s soaking wet with a wide-tooth comb or detangle it with your fingers. • Use microfiber towels: they protect your curls and let it dry faster without causing frizz. • Apply your products when your hair is soaking wet and then scrunch. • Avoid brushes. • Wait until your curls are fully dry before you touch them. You don’t want to ruin the curl pattern. • Sleep on a silk pillowcase (other materials strip your hair from its natural oils). AUGUST 2017 | 27

NATURAL REMEDIES TO GET RID OF BLACKHEADS
1. BAKING SODA & WATER Baking soda and water are effective for treating blackheads as well as acne. Baking soda also helps in cleaning your face from dirt and impurities. Mix 2 tsp of baking soda with water until it becomes thick. Apply the paste on the affected area while massaging. Let it sit on your face for a couple of minutes before washing it off with temperature room water. You can use this treatment from one to two times a week.
2. OATMEAL Cook the oatmeal and let it cool off then use 2 tsp and mix it with 1 tsp of honey. Scrub your face with the paste and leave it until it dries out before rinsing it off. For better results, repeat this remedy one time a day for several days.
3. LEMON JUICE Blend 1 tsp of honey along with 1 tsp of lemon juice. Scrub the mask on your face while massaging and wait for 10 minutes. Rinse it off and repeat it once or twice every week. For more exfoliation, follow the same steps but add a small amount of sugar.
4. CINNAMON Cinnamon is a magical ingredient that removes blackheads and prevents them from reappearing. Mix 1 tsp of cinnamon powder and 1 tsp of lemon juice. Apply it on areas with blackheads. Wait for 10 to 15 minutes before rinsing it off. You can also mix one tsp of cinnamon powder and two tsp of honey instead of lemon juice for a thicker paste. Leave it for 15 minutes and then wash it off with water.

It’s holiday time and the sun is out, the Sahel is calling! Suddenly thoughts turn to belly rolls and how to avoid them while you’re on the beach! The holidays and family vacations are a particular problem. Junk food, desserts and sweets, it seems, will appear after every lunch and dinner, and you’re not particularly good at saying no when everyone else is partaking. But wait, you still can save yourself and maintain the flat tummy that you’ve been working on all year long by easily doing the following:
DON’T STOP TRAINING:
Twenty minutes every other day will keep the tire at bay. You’re not going to lose weight on a leisure trip, especially one focused on food, but you can come close to breaking even. Set aside 20 minutes every other morning, either in the gym or outside, to run, speed walk, do HIIT, yoga, etc. I won’t suggest every day since that’s an unrealistic goal given early morning departures or tours. And once you miss a few, discouragement sets it. Setting a goal to train every other day is achievable. Before breakfast, in the time it takes to scroll Facebook and post a few Instagram pictures you can have your limbs flexed and your heart rate pumping. You’ll feel better throughout the day, and eat healthier. When we feel bad or lethargic, we reach for the comfort of a chocolate croissant. Feeling energized, you are more likely to order a green juice with a side of fruit.
ALLOW YOURSELF A SPLURGE MEAL: Just about anywhere you go on the planet; you
can find indulgent local delicacies. And truly, you should get an opportunity to enjoy these things. One of the greatest things about a vacation is immersing yourself in local culture. Just don’t overdo it. Pick one meal, or one day, when you are going to allow yourself to splurge. Consider this splurge to be the 20 percent element of the 80/20 rule. If you are healthy 80 percent of the time, you can make room for an indulgence.
WATER, WATER, WATER! It is important to bring water with you when you head out for the day. Staying hydrated will help keep your metabolism humming but it can also prevent you from overeating. Dehydration often masks itself as hunger, leading you to eat when you don’t really need to. Besides, if you are spending your time in a sunny, warm climate, water will help you avoid the vacation ruining side effects of heat exhaustion!

ome people may believe that cooling down or stretching is just a waste of time, little do they know that cooling down can be as important as the exercises you do. The ideal workout should consist of a warm up, exercise, and cooling down. A proper cool down can benefit your body in various ways and learning about those benefits will help you find out what those extra minutes after exercising are all about.
WHAT EXACTLY IS COOLING DOWN? Cooling down means that your body is still moving, but at a slower rate. So if you are running, biking, or stair stepping; it means you should slow down below the rate of exercising.
HOW LONG SHOULD COOLING DOWN TAKE? If you are walking or jogging, 5 minutes of cool down should be enough. If you are performing more intense exercises including hard intervals, a longer cool down will be beneficial. It is also important to monitor your heart rate while cooling down, once it is below 120 beats per minute you can stop

Cooling down helps reducing muscle soreness and lowering lactic acids levels in the muscles that are produced during exercising as a byproduct. “Always keep your expectations low so you won’t get disappointed”; a well-known phrase that we always say to each other and sometimes to our own selves just so we make believe that if we adopt this concept we won’t get disappointed or hurt. Well, I hate to tell you this but after all these years we’ve been comprehending this concept the wrong way. Have you ever thought about expectations in a different way? Ok, when you start building expectations what actually happen is that you simply limit your infinite possibilities out there while in fact there can be much more satisfying to you other than those expectations or this “best case scenario” you have in mind. So when we keep our expectations low, we are actually not compromising or settling for less as we always tell ourselves. On the contrary we are setting ourselves free from our own limiting beliefs. Take for instance when you through tough times like having financial problems or facing some obstacles in your career when you start to build expectations regarding these problems and how they might end especially if you have some negative expectations, you fail to find more than one solution or way out and your minds will be set to resolve the issue in one way. By this our mind is unconsciously crossing out all the infinite solutions that might occur, unfortunately you will miss out on them and will not be able to see them even if they are crystal clear in front of you. We need to try to accept the facts as they happen first, this will allow us to observe the whole picture clearly without resisting the happenings. Acceptance doesn’t mean we are giving up or settling for something we don’t want, on the contrary it is the place where you get to break free of all the limitation by choosing to see all the available standards that you might have not known they even exist. It is when you decide to take a step backward and see through a wider perception. It is not only realizing that everything happens for a reason, but also that every reason is happening for your own good. POPS AND PUFFS: HOW TO THROW A TREATS PARTY STRAWBERRY CREAM PUFFS YIELD: 12 PUFFS INGREDIENTS: 1 cup grams flour 3.5 ounces milk 3.5 ounces water 2 teaspoons sugar 1/2 teaspoon salt 5 1/2 tablespoon unsalted butter 4 eggs 2 cups heavy cream 1/3 cup powdered sugar 1 teaspoon vanilla extract Fresh strawberries cut into slices DIRECTIONS: In a saucepan, boil the milk, water, sugar, salt, and butter. Remove from heat and add flour instantly and mix briskly with a wooden spoon until smooth. Return the saucepan over low heat and stir gently to avoid the dough from sticking to the bottom of the pan. Transfer batter to a large bowl and allow to cool slightly. Add the eggs one at a time, and carefully mix the batter using a stand mixer to create a homogenous batter. Fit a pastry bag with a large 1 cm round tip and pipe the dough into 3ÂŹ4 cm circles on a parchment paper lined baking sheet. Preheat oven to 350F (180C). Bake for 25ÂŹ-30 minutes until browned and puffed. Allow to cool on the wire rack. In a large bowl, whip the cream with an electric mixer and blend in the sugar and vanilla extract. Split the cream puffs in half and spread the cream mixture then top with the strawberry slices followed by the puff half. Sprinkle powdered sugar and serve.

BROWNIE NUTTY POPSICLES YIELD: 8-10 SERVINGS INGREDIENTS: Brownies: 1 cup butter 1 cup unsweetened cocoa powder 2 cups sugar 3/4 cup all-purpose flour 2 cups walnuts, chopped 1 teaspoon large-flake sea salt 4 large eggs 1 tablespoon vanilla extract 1 teaspoon instant espresso powder Dipping chocolate: Colored candy melts Dark chocolate candy melts Coconut oil Sprinkles for garnish DIRECTIONS: Preheat oven to 325 degrees. Grease and line an 11x17-inch cake pan with parchment paper. In a small pot set over low heat, melt butter and stir in cocoa powder until smoothly blended. Set aside to cool. In a medium bowl, mix together sugar, flour, walnuts, and salt. And in a different bowl, whisk eggs and add the cocoa mixture while stirring
slowly. Add vanilla and espresso powder, then the flour mixture and blend gently. Pour into the prepared pan and bake for 35 to 40 minutes. Let cool completely then chill for 15 minutes in the refrigerator. To make the popsicles, spread a 3x2-inch popsicle-shaped cookie cutter to cut out popsicles. Insert a popsicle stick coated in melted candy melts into each popsicle. Place in the freezer for about 15 minutes to set. Pour the melted candy melts into wide heatproof jars and dip the chilled brownie pops into the mixture. Lay the pops on a silicone baking mat or a piece of parchment paper to set. Once the colored chocolate has set, garnish with dark chocolate candy melt drips and coat with sprinkles of your choice.

We’ve all been there: You emerge from a tragic breakup, when suddenly, after one week you meet your soulmate. What are the chances! Back to reality: Of course you’re not in love, you’re on a rebound. After a big breakup, there is a deep black hole in the center of your emotional well-being. You’ve suddenly lost the support of your partner, something that your mind and your emotions have taken for granted. Days are suddenly so long and life is so boring. 52 | AUGUST 2017
“Every time I end a relationship, I tell myself that this time will be different—this time I’ll use all my new-found freedom to get more stuff done and learn something new. But instead, there’s an immediate need for connection and support, so I just shut my eyes and blindly walk into a new relationship, anything to avoid being alone with my thoughts.” After the trauma of a breakup, entering into a new relationship is always based on weakness where you are prone to an increased emotional dependency and psychological manipulation. There are two types of rebounds. Type one, is the “Traditional Rebound”, where you immediately start dating after a breakup like you just replace a random person into the space that your ex used to occupy in your life. Type two, is what I call the “Fury Rebound,” which is when you basically run as far as you can in the opposite direction of “serious” and just get intimate at a very early stage. The funny thing about a classic rebound is that, often, everyone can see that you’re rebounding—except you. WARNING SIGNS OF A REBOUND RELATIONSHIP 1. Determine if the breakup was recent. If the breakup was just a few days or weeks ago, consider the length of the relationship, and ensure that the grieving period is similar in length. The longer the relationship, the more time you'll likely need to recover. 2. See if your friends and family are shocked about your new relationship. If your closest friends and family can’t grasp it, it’s probably a sign you’ve moved on fairly quickly. 3. Ask yourself if love is coming too easily. Do you feel like you skipped the “like-stage” of the relationship? If you feel like you’re in love with
your new partner after only a date or two, that’s a rebound alert. 4. Slow your drive of intimacy. If the attraction is primarily intimate, it’s a possible sign of a rebound. n our search for an authentic experience of tantalizing Italian taste, we had our thoughts and senses going for a truly genuine Italian restaurant, Casa Mia at Sofitel El Gezira. Of all the cuisines in the world the Italian will always be one of the top favorites around the world and we’ve had a very interesting talk with Chef Carlo Frusciante to know what makes it so special.
1. Could you tell us more about your culinary career and how did it all unfold? Basically, the reason I’ve become a chef is that it runs in my blood. My whole family is in this same industry. Upon finishing high school I decided to pursue this career. The fact that the love of culinary industry runs in the family doesn’t mean I do it with lack of interest or because I grew up finding everyone around me in this industry. I was raised up to a concept that whatever you choose to do, you have to do it with a deep interest. I started then to follow this career professionally and to do it at my best. In addition to being a chef in my home country, I’ve run operations in Ireland, Singapore, Shanghai, India and many more countries. 2. Other than the cooking part, what qualities make a successful chef ? A chef is like the director of an orchestra that all work in harmony for the final artistic musical piece. Same is with chefs; a smooth operation at the kitchen is a very important factor that makes a chef successful. Quality
is about everything being tuned all together and to run the whole operation in the kitchen with the technical eye to the details. It is not only about the food, as a matter of fact, food that you serve to your guests is the final step of many procedures to reach that high quality dining experience. Actually a chef ’s job isn’t all about the cooking; it is about taking care of the many aspects of the whole operation run by the staff in the kitchen between the ingredients, taste, consistency and more till you achieve the final result of your dish. This is when you realize that final result is an outcome of a harmonious smooth operation within your orchestra. 3. What is the meaning of Casa Mia and what’s the concept behind this restaurant? Casa Mia in Italian means ‘my home’ and that is exactly the concept and idea behind this restaurant. What we want to do here is to make our guests experience the spirit of Italian hospitality. For us Italians, hospitality is about simplicity and authenticity. We want Casa Mia to be a place where you can dine in a chilled and relaxed atmosphere and indulge to a tantalizing dish with rich taste. The whole idea is about enjoying the beauty and the simplest things in life. 4. What are the efforts taken from your side to make Casa Mia different than any other Italian restaurant?
We aim at being on common ground where authenticity meets local request. Maintaining the authenticity of the taste is a very important factor for every chef regards himself as ambassador of his own country and its cuisine. When you get familiar with local guests’ taste and preferences that’s when you can introduce something that is authentic Italian, a new selection to them, yet at the same time appealing to their taste senses. That is what we focus on; fine taste, authenticity and introducing something new and different.

As we got seated we were welcomed with glasses of mango lassi along with papdum and three different mouthwatering dips. Moving swiftly to our appetizers, we’ve found a huge varieties and selection with a great share for vegetarians with a lot to choose between. For appetizers our choices went for Dal Makhni; a dish of butter black lentils and red kidney beans and we’ve had it with Nan garlic bread for an ultimate rich taste. As we’ve indulged our taste buds with the appetizers we got to the part where we were immersed with authentic Indian dishes. From tandoori to biryani and a lot more we couldn’t help but totally fall in love with the lamb biryani cooked to perfection making it a perfect choice for the main course. 68 | AUGUST 2017
We were delighted to know that Raj is introducing special dishes in their menu in celebration of India’s Independence Day starting August the 15th and till the end of the month. You don’t also want to miss trying Shrimp Tandoori Grill and Chicken Roll; two special dishes included in the menu. Raj will also launch a new menu in November in celebration in Diwali, and we can’t be more excited. What makes the whole dining experience at Raj really brilliant isn’t only the atmosphere or the authentic taste of Indian Cuisine, but also the very fine selection of ingredients. All the dishes at Raj are served artistically with very fine imported ingredients needless to mention in very good portions as well. We call all Indian food lovers out there; this is one dining experience you don’t want to miss.

THE AUTHENTIC TASTE OF EGYPT AT AL KHAL BY INTERCONTINENTAL CAIRO CITYSTARS

nterContinental Cairo Citystars has confidently lined up against the competition to attract lovers of truly authentic Egyptian cuisine with the recent opening of Al Khal. By the pool and so with the al fresco option, the main restaurant is well air-conned against the heat. Al Khal boasts cool tiled floors, shades of red, blue and gold upholstery set against table arrangements separated by attractive drapes hanging from the beamed ceiling.
No worries, there is plenty to explore and satisfy. Soups include Shourbet Lissan Asfour (pastina with clear meat broth and spices); there are five salads, plus cold appetizers featuring Gebna Adima (farm-aged cottage cheese with tomato and sesame) and hot appetizers. There’s assorted Mahshi, of course, Koushary and succulent Kebda Iskandaerani (stir fried veal liver) and Rokak bel Lahma with ground beef sandwiched between crispy layers of dough.
The meal began with sipping Kassab (from a drinks menu of hot and cold beverages, mocktails and cocktails) and then a pleasing touch for an appetizer, ‘Dokka’ served with bread rounds brought soft, fresh and warm straight from the oven. Taste buds and romantic notions equally stimulated; it was time to sample from the menu which will soon be extended with even more classic Egyptian dishes. As executive Sous Chef Ahmed Shaaban, emphasized: “We offer truly traditional Egyptian food, dishes from different regions of the country, dishes that are special to families in the Delta, in Upper Egypt and other parts of Egypt … Port Said, Ismailaya; we pull together the favourites from around the country.”
Tagens and main dishes include creations revolving around seafood, huge marinated shrimps, cubed lamb and lamb shanks, braised oxtail and pigeon, all with the perfectly matched herbs and spices to tease out the maximum flavour. And if you choose one of the three varieties of molokheya, expect to see the impressive Chef Nadia; the ‘mother of the kitchen’ emerge to cast an eye over diners appreciating her particular speciality.
