Rollercoaster There was once a girl who really liked amusement parks even though she had never been to one. She talked about them constantly, dreamed about them regularly and aimed for them endlessly… Her parents had never let her go because they said they were very dangerous, but they made an exception on her birthday and took her to the biggest amusement park of them all. So on her birthday, her parents bought her an all-day ticket for the park. She was very happy about that, as you can imagine. When she got there, her jaw dropped in amazement at the amount of rides and just how big the park actually was. Just as they were about to get on, she felt a fluttering in her tummy that made her stop in her tracks. “Come on! Get on, it’s about to go!” cried her friends. “But… I’m scared! This rollercoaster is so big and it’s sure to go very, VERY fast!” said the girl in a trembling voice. “But if I missed it today, I might never ride it again.” Then she remembered something her friends had told her over and over: “Being afraid is the worst thing that can happen to you. Put it aside and bring out the courage and confidence you have inside you! You are so strong, so beautiful and your panic will vanish once you really face your fears. What’s the worst that could happen?! It will never be as bad as you think. Please do it! Go for it if you really want it.” Recalling these words, she stepped forward and got on the rollercoaster. And that was how she learned that her friends were right and that you must overcome fear in order to move forward. No matter what the cost is, courage is always the best outcome… Dedicated to my best friend Menna El Sweify… You are beautiful inside out, courageous, and above all strong. Hervé Léger

H

ervé Léger is a French fashion house founded by the designer who pioneered the creation of so-called bandage dresses, socalled “body-con” (body-conscious) garments made using materials traditionally associated with foundation garments to create bandage dresses that would mold and shape the wearer’s figure with its signature bandage-like strips. His dresses are made of bands of stretch fabrics, wool, or silk woven with Lycra or Elastene, wound around the body for a tight fit. At fashion shows his designs are one-of-a-kind, made to a couture standard, each one designed for the body that could wear it. Apart from dresses, he also designs dresses constructed of knitted cotton and viscose bands, easy, brightly colored T-shirts, suits made of both matte and shiny fabrics and minimal light-looking striped tops.

In September 1998, Hervé Léger was acquired by the BCBG Max Azria Group from the Seagram’s Group. This was the first-ever acquisition of a French couturier by an American designer. In April 2007, Max Azria relaunched the Hervé Léger brand under his own design direction with a capsule summer collection, which was offered at select department stores and specialty boutiques. In August 2007, the remodeled Hervé Léger boutique opened on Rodeo Drive in Beverly Hills. In February 2008, Max Azria presented the Hervé Léger by Max Azria collection at Bryant Park during the Fall 2008 New York Fashion Week. He is inspired by designers like Claude Montana, Azzedine Alaia and Gianfranco Ferre. He sells approximately 2,000 dresses each season.

Amanda Bynes Post-Nose Surgery: “I Consider Myself a Hero” In a few tweets, Amanda Bynes called herself a “hero” for her latest medical procedure. “I was born with a webbing in between my eyes,” she wrote. “That was a birth defect that I had surgically removed! I’ve never been more excited!” She continued, “I consider myself to be a hero to have suffered 27 years with a birth defect and to just now have it surgically removed!”

James Gandolfini Died of A Heart Attack in Rome The Sopranos star was on vacation in Rome with his son Michael, 13, wife Deborah and nine-month-old daughter Liliana Ruth ahead of the 59th Taormina Film Festival in Sicily. Gandolfini suffered a heart attack in his hotel room and was taken to the hospital where he died less than an hour later. His body was transported to New Jersey where the funeral was held.

1. Is hair gel or mousse better for defining and shaping curly hair? Gel is used for hold and for taming rebellious strands. Take a blob of gel and apply from the roots to the tips using your fingers. Be careful not to get clumps. Aim for even coverage over your whole head. There are also mousse-like gel products that volumize and define. Generally, for gel as well as mousse, your choice is based on preference as much as it is on what either product has to offer. You should always keep in mind that the overuse of gel or mousse can damage your hair. 2. How can I get the eye makeup look I want during summer without suffering from the consequences of hot weather on my makeup? You will need using melt-proof eye makeup. Opt for cream shadows. As temperatures rise, ditch your powder eyeshadow and swap it for a cream version. Our usual primping products just can’t stand up to summer’s blistering temps, which leaves us looking wilted, melted, and the personification of a hot mess. Fortunately, there are a lot of new beauty goodies hitting shelves right now aimed at helping us survive the swelter. From a mascara that won’t melt off to a hair potion that promises to give you surfer-girl waves, I’ve managed to round up the 10 new beauty essentials you need to conquer summer in style. Tell us a little about yourself and how you were attracted to the art of photography. I’ve always loved music. It’s been my passion since childhood. From the time I was at high school, I started composing and mixing music and DJing. In 2005 when I was still an IT student at the Canadian International College, my sister’s fiancé gave her a semi-professional camera as a present. My sister’s camera aroused my curiosity and it made me want to discover it and know more about it as to me, it was new and different. I did some research on the internet on the camera’s features and the difference between regular and professional cameras. Then I began to use the camera but only for personal purposes.

So you didn’t study photography at all? It was all done through self-study. I read books and I used the internet. Then how did you make the decision of taking up professional photography as a career? In 2011, I composed 3 out of 10 tracks that came out on a CD of pure house music composed mostly by Egyptian artists. Unfortunately, it wasn’t a great success because it was produced at the time of the revolution. At that time, I had graduated and I wanted to do my own business so I went towards the direction of photography. I opened my own studio and I got the needed equipment. My first step in professional photography was shooting the campaign of Ice-Watch in Egypt, it was called “Color Revolution.” At the 36 |

Then after some time, my work expanded, I had my own team and I started to work in all kinds of photography including events and weddings. Which kind of photography do you personally prefer? Fashion photography, conceptual photography and editorial photography. In editorial photography, you have a certain concept or message in mind and you try to convey it through your picture, which means there’s room for more creativity. I like to make short films too. What were some of your big projects? I shot the advertising campaigns for IceWatch, Marie Louis, BTM, and Coca Cola. I also made a documentary for El Orman School. Another big thing was that I was the photographer who represented Egypt in the education


What do you do in order to stand out among other photographers especially that the field now is full of a lot of talented photographers? My aim is to be unique. You won’t have a big name and your work won’t be distinctive unless you have your own style. I want people to recognize my work once they see it. I think what’s different about my pictures is that I do very minimal editing. I like to keep the pictures natural and spontaneous to retain the spirit and personality of the picture’s subject. issue of “United Fashion for Peace Magazine” last year. Egypt was one of the countries featured in that issue along with Tokyo, London, Los Angeles, Rome and Norway. The photo shoot was in Fagnoun here in Cairo. I worked with the Egyptian model Tara Emad and fashion stylist Maha Azab. We were all volunteers and the proceeds of that project went to charity. What is the most difficult part in your work as a photographer? Sometimes I have strange ideas for pictures that I can’t convince my clients of because people here in Egypt are afraid to try new things, they prefer traditional ideas and they tend to follow not lead, unlike people abroad. Also if you’re still a beginner photographer, it’s difficult to reach top clients and big names and work with them. They don’t appreciate a beginner’s work even if it’s very good. Another difficulty is that there are no copyright laws for photography in Egypt. Where do you get your inspiration? I get inspired mostly when I listen to music; it puts me in a stimulating mood. Or I can sometimes see something that triggers a new concept in my head. Also an incident that happens in front of me can help me come up with new ideas.

Who are your favorite photographers? Ayman Abbas and Joey L. In addition to being a photographer, you are a wedding planner too. How did this happen? As I’m a photographer and I’m into DJing, one day my cousin suggested that I offer both services at weddings. That was how I started to handle both the pictures and music parts. After that, a friend of mine was getting married so she asked me to do the decorations for her wedding in addition to the photography and DJ. Eventually I was responsible for planning her wedding. She liked her wedding very much and the feedback I got encouraged me to continue with the business of wedding planning. And today I have a team who is especially dedicated to organizing weddings. What do you still dream of doing? I’m still waiting for that big wedding and big advertising campaign that would give me the opportunity of implementing all what I have in mind and revealing all my creativity and talent. I also hope that I could serve my country one day by doing a campaign to raise the awareness about a certain problem.

mar Attia is an Egyptian young man who was able to achieve success and leave a mark through a flourishing business, an acknowledged book and a notable charity initiative. Having done all this at a young age, we’re sure he still has a lot to accomplish in the future. 38 |

Give us a brief introduction about yourself. I’ve always liked to break the norm even when I was a little kid. When I was still at school in Kuwait, I used to draw caricatures of my classmates and sell them their pictures for 2 Kuwaiti Dinar each. I wrote stories and poems and sold them to my classmates too. When I came to Egypt during the summer vacations, I sold pizza and pies at Happy Dolphin which belonged to my family. So work and business have always been important to me. I graduated from the American University in Cairo in 2005 with a major in Business Administration and double minor in Film and Psychology. Two years later, I did my MBA in Edinburgh Business School, Heriot-Watt University in Scotland. Now I’m a Board Member and Director of Sales and Marketing at ETAG (Royal Lily, Nile Lily and Happy Dolphin) that was founded by my uncle Mr. Yasser El Tagoury. What’s the story behind the success of Nile Lily and Royal Lily? I’ve always wanted to be different and be a trendsetter. After I graduated, I realized that all weddings are the same. This is in addition to the fact that I’ve hated weddings and events and tried to avoid attending them. So I thought of changing that and I founded Nile Lily in 2007. It included an indoor ballroom and an outdoor terrace and garden. Nile Lily was among very few places at that time where you can hold a westernized morning reception. We were the first to offer themed buffets. We wanted to make unconventional weddings, so we got a yacht that would bring the bride and groom from the middle of the Nile. By 2009, we had weddings everyday. We sometimes even had two weddings on the same day; a morning outdoor wedding and an evening indoor wedding. Unfortunately in the same year, we had a total loss fire that ruined the whole place. We relaunched the place in 2012 and we changed its name to Royal Lily. However, the name Nile Lily didn’t die; it became the new name for Happy Dolphin that was renovated in 2010. Today Royal Lily has a ballroom that accommodates 400 persons and a garden that takes up to 300 persons. As for Nile Lily, it has three restaurants; Ahlein, El Mundo and Sky Lounge. We don’t serve shisha at Nile Lily; we rather provide different food and a superb location on the Nile, and we offer our guests the unique opportunity of having their dessert while having a cruise in our yacht. How did you come up with the idea


day by day during the period from Jan 25th, 2011 until March 19th, 2011. It states and explains facts without being biased. The book is the work of a team including Monir El Shazly, Timothy Kaldas, Rehab K. El Dalil, Zee Mo, Sherif Assaf and me. Hopefully, the second part will come out by the end of this year. It will be dealing with the period after March 19th, 2011 until June 30th, 2012 when Mohamed Morsy became Egypt’s President. We want to complete a trilogy, so there will be a third part too to cover from June30th, 2012 onwards. Finally, who is your role model? And what are your hobbies? Dr. Mostafa Mahmoud. I always doubt things, I don’t take anything for granted and I always want to try. That’s why I consider him my role model. He doubted himself, his existence and his religion until he reached truth with conviction and confidence. As for my hobbies, I like squash, swimming, soccer, scuba diving, caricature drawing, photography, reading and writing.

Your book “The Road to Tahrir” is a bestseller; what is it exactly about? Yes, it has achieved a big success. It was nominated as one of the bestselling books on Amazon.com for 2011. Not only that but it also got direct accreditation from Dr. Galal Amin, Dr. Mohamed El Baradei and Dr. Alaa Al Aswany. “The Road to Tahrir” is a documentation of the Egyptian revolution. It’s basically a photo journal; it describes graphically what happened

of your charity initiative “Because We Do Not Walk This Earth Alone”? The fire incident was a turning point in my life. What I had built in three years was lost in five minutes. This made me look at things from different perspective. Furthermore, throughout my life I’ve always meditated and asked myself the question, “Why did God create us?” and I reached the conclusion that God created us to change the life of others, and during this process, we will change accordingly and be better individuals. I also became convinced that poeple with good circumstances have a responsibility towards their community or society. The initiative started with a visit I made with some friends (Aya Ezz, Kareem Abdel Latif, Eman Yosry, Ahmed Sobh, Sara Ahmed and Omar Kordia) to an orphanage in 2012. We gave children presents as most people do when they make such visits. However, we found out that what made the children happy weren’t the presents, but rather our mere presence. So we created a movement to retrieve our lost humanity at a time when everything has become a cheap commodity. My initiative isn’t about donations; it’s about being there and spending some of our time to draw a smile on the faces of those who need us.

The Unappreciated Sense of Smell or Taste

O

ur sense of smell is a primitive sense that deals with emotions. When we smell something, a volatile odor molecule binds to an olfactory receptor in the nose. Olfactory or odor receptors occupy less than a square inch area at the top of our nasal cavities. Nerve fibers directly link the odor receptors to the brain. When the odor receptors are stimulated, nerve impulses are sent to the olfactory bulb in the brain. An odor can reach the olfactory system in two ways: through the nostrils or through the channels that connect the top of the throat to the nose. In part, we enjoy the flavor of food because volatile molecules from the food in our mouth reach the olfactory receptors in the nose and link taste and smell. The senses of smell and taste let you fully enjoy the flavors of foods and drinks, and the smells of flowers. These senses also protect you from food poisoning and warn you of dangers like fire, polluted air and poisonous chemicals.

What happens when I have trouble with my sense of smell or taste? If you can’t smell or taste, you might eat too much and gain weight, or you might eat too little and lose weight. Kite Surfing!

I have just returned from El-Gouna, where I spent a couple of days on the beach. As the weather warms up, it was great to be able to practice water-based workouts. Did you know that El-Gouna, with its shallow waters and cooperative winds, is a kite-surf hot spot? I always particularly enjoy discussing local activities, as I know that these are readily available to you (yes… you). For some, kite surfing is only an extreme sport. And don’t get me wrong: it can be! However, that is not the end of it and you should not refuse to try on this account. If I can do it, there is no reason you couldn’t… or shouldn’t because it happens to be a great workout!

To convince you to try something new this summer, here are ten benefits that a continuous practice of kite surfing can bring to your body and mind:

It requires more than (brute) strength: surfing with a kite requires balance. And without spatial references such as walls and solid floor, the exercise is even more challenging. 58 |

Of course, as you can expect, manipulating a kite and working against the resistance of the wind will significantly strengthen your upper body: chest, arms, abs… But your lower body will not be left over! Indeed, lifting and directing the surf board as well as walking though the water and squatting for long periods will define your abductors and legs. It is a serious cardio training: it will get your heart pumping, your respiratory capacity improving and your venous system running.

Exercising in the open outdoors will allow you to breathe fresh air and tan rapidly (be sure to protect yourself from the sun, by the way).

Working against the wind and feeling the adrenaline rush of the ride is a true stress relief (and stress relief strengthens your immune system). And we all need that.

Your Savior Diet For This Ramadan! While fasting, it is important to eat healthy meals through the 30 day observance to avoid fatigue and potential medical issues due to vitamin deficiency.

Drink plenty of water Proper hydration is essential during Ramadan. Drink plenty of fruit juice and water during suhoor and bedtime to maintain proper fluid levels. This helps avoid common health problems associated with dehydration such as headache and fatigue.

Avoid overeating It’s a sad truth that the majority of Muslims gain weight during Ramadan, but there is no need to consume excess food at suhoor or iftar. This may result in indigestion, bloating, upset stomach or lack of sleep. There is no reason to vary your diet too much from your normal diet before fasting. During a period of fasting, our bodies are able to compensate so there is no reason to eat more than normal.

Replace sugar with fruit Sugar absorbs necessary vitamins and minerals from our bodies. During Ramadan, it is important to retain as many vitamins and minerals as possible. White rice and bread act in the same way sugars do in our bodies. Whole wheat and unpolished rice are a good substitute.

Ramadan Diet Suggestions Soup: Soup is a quick and easy way to get the nourishment your body needs. Soup provides two basic needs during a fast: nourishment and water. It is an excellent choice for iftar. Dates/Almonds: Dates are an excellent source of fiber, sugar, potassium, magnesium and carbohydrates (Sunnah). Almonds are low in fat and a good source of protein and fiber. Fruit: Bananas are a good source of carbohydrates, magnesium and potassium. We never keep in mind that our digestive system hasn’t been working on digesting any food for a little over 16 hours and the first thing we do is bombard it with the heaviest foods and loads of fats and sugars. Most people complain about gaining so much weight during Ramadan and start preparing themselves mentally and physically a couple of weeks before the month begins; is this LOGIC?

Ramadan is a great chance to shed some extra pounds. Your metabolism drops because of long overnight fasting as well as the daily fasting. Your metabolism resets and your body begins to change the way it does things. Once you stop eating for more than 3 or 4 hours your body thinks that there is no energy supply because there is nothing coming in the body to use for energy. The body then starts putting itself into starvation mode where it relies on energy stores which already exists in the body like glycogen, protein, and stored fats. The minute you start pigging out on food, that’s when the crisis happens and your body starts storing as much fat as it can because it doesn’t know when is the next time you will supply it with food. Eating small frequent meals throughout the evening and morning (after sunset) is the best way to maintain an adequate metabolism level and avoid the highs and lows of blood sugar associated with eating one massive meal. After eating a large meal, our blood sugar level increases. In response to this, our pancreas releases insulin to bring the levels back down. That extra sugar is stored as fat.

So how are we going to turn this Holy Month from a weight gain catastrophe to a weight loss regimen? The first thing that should be done when breaking our fast is reaching for foods that have a low glycemic index impact or in other words will not raise the blood sugar drastically. Some fruits, vegetables, nuts, whole grains, lean meats, and fish are the perfect choice for low glycemic index foods.You should always break your fast with something light and easy for the stomach to digest while supplying the body with good nutrients and energy so you won’t have an energy crash. Starting off with simple sugars like white rice, pasta, drinks that are loaded with sugars are the worst things that you can do to your body because most of it gets stored as fat. Having something light such as vegetable soup along with lean protein and some complex carbs are a great way to start out your evening. DO NOT EAT until you are full and can barely breathe, but leave some room for a snack a couple of hours after your first meal. Wake up for suhoor and have a veggie omelet with a slice of brown toast, and if you’re not a fan of eating late at night then have a fruit with a low-fat yogurt or even a few nuts to keep your body going. Ramadan’s Scrumptious Cream of wild mushroom soup

Ingredients: • 25g dried porcini • 50g butter • 1 onion, finely chopped • 1 garlic clove, sliced • Thyme sprigs • 400g mixed wild mushrooms • 850ml vegetable stock • 200ml tub crème fraîche • 4 slices white bread, about 100g, cubed • Chives and truffle oil, to serve Directions: Bring a kettle to the boil, then pour the water over the dried porcini just to cover. Heat half the butter in a saucepan, then gently sizzle the onion, garlic and thyme for 5 mins until softened and starting to brown. Drain the porcini, reserving the juice, then add to the onion with the mixed wild mushrooms. Leave to cook for 5 mins until they go limp. Pour over the stock and the reserved juices, bring to the boil, then simmer for 20 mins. Stir in crème fraîche, then simmer for a few mins more. Blitz the soup with a hand blender or liquidiser, pass through a fine sieve, then set aside. Heat the remaining butter in a frying pan, fry the bread cubes until golden, then drain on kitchen paper. To serve, heat the soup and froth up with a hand blender, if you like. Ladle the soup into bowls, scatter over the croûtons and chives and drizzle with truffle oil.

Shrimp kUnafa

Ingredients: • 1 kilo shrimps • ¼ kilo kunafa slices • ½ cup flour • ½ cup water Seasoning ingredients: • 1tbsp vinegar • 1tbsp lemon juice • 1tbsp soya Sauce • 1tsp fish spices • 1tsp salt • 1bottle Thousand Island Dressing • Wood sticks • Abundant frying oil Directions: Mix the ingredients of the seasoning in a bowl then put the shrimps on the mixture. Leave for an hour. Cut the kunafa slices according to the number of shrimps. Melt the flour with water. Put a stick in each shrimp, then wrap it with the kunafa slices until the shrimp is covered. Wet the edges of the kunafa with the flour, and then fry with hot oil. Serve in a plate with the Thousand Island dressing.

Osmanliya with cream and fruits

• 250g ready-made osmanliya dough (kunafa) • ½ cup (125ml) ghee butter melted Stuffing Ingredients: • 1tbsp orange blossom water • 1 cup (200g) fresh fruits mixture cut into slices • 15 squares of kiri • ¼ cup fresh cream • 2tbsp sugar Ingredients for Sugar Syrup: • 2 cups water • 1 cup sugar • 1tsp orange blossom water • 1tsp rose water • 1tsp lime juice Directions: Melt ghee, mix ghee with osmanliya dough until fully absorbed. Divide dough into two parts. Spread dough in a 1cm thick layer in two trays. Bake the two trays in the oven on 180ºC for 12 minutes then let them cool. Preparation of the stuffing: Put fresh cream and kiri in the mixer, Add sugar and mix it till it becomes homogenous. Put the first part of the baked dough in the serving dish. Spread cream stuff on top. Add chopped strawberries above stuff. Put the second layer of dough and serve osmanliya with syrup.

Fig and Lemon Chicken

Ingredients: • 12 chicken thighs by: Maha Alfy • 2 lemons, 1 sliced, 1 halved Professional Caterer • ¼ cup brown sugar For orders, check facebook • ¼ cup white vinegar fanpage: Home Made Catering • ¼ cup water • 1 ½ pounds dried figs • Salt to taste • 1 tsp dried parsley • 1 tbsp chopped fresh parsley Directions: Preheat the chicken thighs in oven to 200ºC. Squeeze juices from halved lemon into a small bowl, then stir in brown sugar, vinegar and water; set aside. Place figs and sliced lemon segments in the bottom of an 11x16 inch baking/roasting dish. Arrange chicken thighs on top, then pour vinegar mixture over chicken. Finally, sprinkle with salt and dried parsley to taste. Bake/roast at 200ºC for 50 minutes, basting frequently (turn figs if they begin to brown). With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter. Creamy Date Shake

Great, nutritious, easy suhoor idea! Ingredients: • ½ cup dates (pitted) • ½ cup whole-milk yogurt • 2 tbsp heavy cream • ½ cup whole milk • 2 tbsp honey (optional) Directions: Remove any seeds and stems from the dates. In a large blender combine all the ingredients and blend for at least one minute, or until the mixture is smooth or to the preferred texture. Pour into glasses and serve with a straw for easier drinking. Serves 2

Light and luscious suhoor idea! Ingredients: • 8 slices whole wheat bread, crusts removed • 2 packs cream cheese • 8 eggs • 1/3 cup maple syrup • 1 tsp cinnamon • 1/4 tsp nutmeg • 1 tbsp honey • 2 bananas Directions: Cut the bread and cream cheese into cubes. Place half the bread cubes in a lightly greased 9x13 pan. Add cream cheese cubes and top with remaining bread cubes. Beat together remaining ingredients and pour evenly over bread. Give a light sprinkling of additional cinnamon. Cover with plastic wrap and place in refrigerator overnight. In the morning bake at 375 F for 45 minutes. Ingredients: • 4 flour tortillas • 8 to 12 trimmed leaves of green or red leaf lettuce, washed and dried • 340g sliced cooked turkey breast • 1 ripened tomato, cored and cut into 16 wedges • 1 ripe Hass avocado, peeled, pitted and cut into 16 slices tossed with 2 tsp lime juice • Kosher salt and freshly ground pepper • 1 cup arugula or watercress, washed and dried • 1 spoon ranch dressing Directions: Wrap tortillas in barely damp, doubled layers of paper towels and microwave on high for 45 to 60 seconds. Alternatively, heat the tortillas individually in an un-greased large skillet over medium heat. Lay the tortillas on a cutting board and start to layer the ingredients. Fan the leaf lettuce on the top threequarters of each tortilla then lay the turkey slices on top, followed by tomato, and avocado. Season with salt and pepper, to taste. Top with the arugula and some of the dressing. Fold up the bottom quarter of the tortilla and then start to roll each sandwich into a cone shape. Secure the tortilla with a toothpick. n occasion of World Multiple Sclerosis (MS) Day, the MS Chapter urged better understanding of the disease affecting 2.5 million people worldwide.

MS is an autoimmune disease, in which the body’s immune system attacks its own tissues. It often begins in early adulthood and women are twice as likely to develop the disease as men. Nearly 50,000 Egyptians suffer from MS. Left untreated MS can devastate the body leading to the loss of the ability to write, speak, or walk. Although there is still no cure for MS, effective strategies can modify the disease course, treat exacerbations (attacks, relapses, or flare-ups), manage symptoms and improve function and safety. The most recent treatment milestone is the FDA’s approval in 2010 of a new oral treatment offering significant efficacy in the convenience of a capsule.

Seabass baked with fennel and jeweled cracked wheat Pilaf in tartlet with honey–ginger tomato sauce Ingredients: • 4x160 gram sea bass fillets with skin • 1/4 sea salt • Freshly ground orange • Blossom pepper white pepper corns • 40 ml olive oil • 1/2 small lime Directions: Preheat the oven to 120° c. scatter with fennel seeds and lime juice. season with sea salt and orange blossom milled pepper. Increase the oven heat to maximum in a heavy based oven proof pan, heat the olive oil and saute the seabass for 30-40 seconds. Saute for 30 seconds and then place in oven for 4-5 minutes. Remove from oven and rest for 3-4 minutes. Then arange on plate next to tarlet. Jeweled cracked wheat pilaf tartlet: 175 gram coarse bulgur wheat soaked in cold water for 5 minutes, sea salt and freshly ground black pepper, generous knob of butter, 30 gram currents soaked in 30 ml dry sherry for 30 minutes, ½ teaspoon all spice, zest of ½ orange/50 gram pine kernels, ¼ cup pomegranate seeds, 4 sheets brik pastry for pastry case. Honey-ginger tomato sauce Ingredients: • 2 tablespoon olive oil • 2 cloves garlic, finely chopped • sea salt • black pepper • 1 red bullet chili seed, scrapped and finely chopped • 400 gram chopped tomatoes • 1 teaspoon turmeric • 1 thumb of fresh ginger, finely grated • 1 teaspoon honey Directions: Tip the bulgur into mixing bowl when cooked, season with salt pepper, drained currents, all spice and orange zest then cover with snug fitting lid and leave in warm place for 10 minutes or until bulgur has absorbed all remaining juices and fill into brik cases and top with crisp micro salad before service. To make sauce heat oil in a pan and saute garlic and chili for a few minutes. then add tomatoes salt pepper turmeric and honey and simmer for 10 minutes. either blend or serve rough.

We Need A Break NOT A Break-Up!

Have you ever thought, “S/he is nice and just amazing, but is s/he the one?” Have you asked yourself, “Are we compatible?” When those feelings, thoughts or questions arise, a relationship break might be a good idea, as long as it’s taken in the right manner.

Taking some time apart from each other can actually help clear the confusions and frustrations internally, and help both of you focus on your own faults and desires in the relationship. If both of you love each other, and yet, both of you seem to have a few difficulties coping with a particular issue that’s bringing out the worst, a break from each other may be the need of the hour.

Every relationship varies and it is important that every couple understands that taking time apart is not a substitute for fixing or solving problems, because if you part when you are having problems, they will be waiting for you when you meet again, so it is essential that you talk about your issues first before you decide a break is needed and best for the relationship. Many get scared and paranoid when their partner asks for some time alone because they fear that their partner may not love them anymore or will not come back. Though it is always possible for your partner to change their mind during the break and decide not to continue with the relationship, there is no need to fear taking the break, because the two of you would eventually have broken up anyway, if your partner was already thinking of doing so before, so it is inevitable. Some couples get so excited when they enter a relationship, that everything moves so fast, which can get stressful, pressuring and scary, in which a break is then a good idea as well. Taking time apart can help a relationship build a better bond because you will both replenish yourselves during the break and will then be able to give the relationship the efforts and attention needed to keep it healthy. If you are afraid that you will lose the relationship if you take a break, just remember that you would have broken up later anyway, not because of the break, but because you grew apart, had irreparable issues or maybe your partner (or you) just wanted to move on.

So do not fear what is not in your control. Just stay calm and see what good a break can do for both of you and your relationship. Besides, you both owe it to yourselves to get back in touch with your individualities and learn more new things about yourself, so that you will be able to teach your partner more about you, and the more you know about each other, the more you will understand your differences and will be able to build the connection that works best for the both of you. Two of the most important benefits of a relationship break are to make sure that what you feel is love and to decide what you want to do with your love life. If you’re not sure you’re really in love with your partner, then a relationship break can be hugely beneficial. As they say, absence makes the heart grow fonder. If your heart does grow fonder, you’ll know your feelings are true. If not, then it’s better to know this sooner rather than later. Also a break is of great benefit when you realize that you and your partner look at marriage differently and you want different things. At this point it’s a good idea to stop and think whether your different needs have a chance of overlapping or not. How long is a good break? This is something that needs serious thought. Both of you have to decide how long the break has to be and both of you have to keep your word to not interfere with each other’s lives until then. Two weeks is the perfect break in the relationship to sort your issues and come back together for a conversation. Anything less feels like a little holiday from each other. Anything more and you’ll both end up forgetting each other and get used to living separately (unless that’s what you want). But then again, depending on how deep the wound is, you can spend more time apart if you’re willing to risk the relationship status and decide if you want to date someone else.

There are two kinds of breaks in love, one that’s good and one that does more harm than good. A break that leads to a makeup. Are you genuinely interested in your lover and want to hold the relationship together? If you’re taking some time away to calm down and sort the confusions in your head, it’s a good break to take. A break that leads to a breakup. Are you taking a break from the relationship to get away from your partner for a while because you can’t stand them anymore? Do you feel happier being alone than together with your partner? Your relationship may already be falling apart and you may be looking for a weak excuse to end the relationship.

The number of children and adolescents struggling with significant weight problems and obesity is growing at an alarming rate. In the past thirty years, the number of obese children and adolescents has more than tripled as nearly 22 million children around the world are classified as either overweight or obese. This dramatic increase has resulted in serious medical consequences with 45% of all newly diagnosed type-2 diabetes cases being children or adolescents and ever-increasing numbers of children being diagnosed with hypertension, cardiovascular problems, and sleep apnea due to overweight and obesity. Research has also shown that these children are at a high risk for becoming obese adults and overweight girls are more likely to quit school, live in poverty and suffer unemployment as adults.

The Causes of Obesity: Childhood obesity may be best conceptualized as a combination of family, social, and individual experiences that interact and impact one another.

A child’s early years are a critical period for his/her development, and the messages that the family provides surely shape and direct that child. Some developmental theories argue that obesity begins in infancy where food is used to reduce stress, which ultimately becomes a learned coping behavior used in childhood. For children overwhelmed by chaotic family dynamics and lacking resilience, food consumption becomes a means of emotional survival, which results in disturbed eating patterns throughout a child’s life.

Some theories explore the possibilities of why the family came to need and then maintain the overweight member. They believe an obese child is psychosomatic for deeper lying problems in the family and the child unconsciously takes on the role of diverting attention away from any dysfunctions in the interaction thereby protecting the family. In this model, the family is as responsible as the individual for obesity because the family is where basic development occurs and understanding of society begins.

The Family Scapegoat Family dynamics may be made considerably more complex by the presence of an obese child. Families with an obese child may be perceived as dysfunctional or emotionally detached. Parents may be exceptionally stressed with time and financial factors specifically related to having an obese child such as numerous doctors’ appointments and requisite medications. How the family copes with the emotional realities and possible psychological disorders of the obese child can also alter how the family functions. Obese children may even be assigned the role of the family scapegoat and receive a disproportionate amount of undeserved blame.

The Consequences of Critique and Negative Attention The comments that parents make related to weight may further enhance the problems of the obese child. The child may also believe that s/he is also at risk of being confronted if s/he does not conform to the verbalized norm. Parents who cling to stereotypical social standards of appearance may promote dieting for themselves and their children, which may result in increased body dissatisfaction in adolescence. Furthermore, studies has shown that overweight and obese children are nearly 300% more likely to consider suicide as an option in homes where family members tease their children about weight, regardless if they are also teased by peers.

So while the design and implementation of family-based treatments vary, family involvement and positive support remain a viable form of intervention.

Psychosocial Consequences of Obesity Overweight children and adolescents face problems related to stigma, including depression, teasing, social isolation and discrimination, diminished self-esteem, behavioral problems, dissatisfaction with body image, and reduced quality of life. It is not always clear whether depression is the cause or the result of obesity; both relationships may be true. Prospective studies have revealed that obese adolescents are at risk for major anxiety and depressive disorders later in life. When obesity becomes chronic, the failure to control weight gain over an extended period may predispose affected children to depression. The longer a child is overweight, the greater the risk for depression and other mental health disorders and the less is the motivation to change.

Negative Personality Traits

Have you ever wished that you acted (or reacted) differently? You are not alone. Nobody is perfect. In fact, we spend most of our lives learning how to become better versions of ourselves. Taking Ramadan as an opportunity to access your personality traits is a great thing to do besides fasting. If you wish to reinvent yourself, then the first thing you need to do is expect that it can be done. You cannot turn into a different person altogether, but you can choose to behave differently despite your tendency for a certain negative trait. Below are the most common traits everybody suffer from (one of them if not all) and how to beat them!

The Hulk: You instinctively react with anger. It empowers you to speak out and question what is wrong. Sometimes, however, you forget to look at the situation from another perspective and later regret lashing out when you’ve cooled down. If you feel angry all the time, find the source of your anger. Try to calm yourself, use the relaxation techniques in meditation to slow yourself down. Try to put yourself in the shoes of the person you are angry with. Only then should you attempt a solution.

The Vampire: You’re very dependent on other people’s support. You value how other people are there for you when you’re feeling low, but you also wish that you could be less needy and more independent. Look inside yourself and find the strength that would also make you return the favor. All you need to do is find what you are able to give in return.

The Professor: You have a knack for remembering information. Sometimes, however, people get tired of your lecturing, even when what you say is something that they need to know. They think you are condescending. Intelligence is an advantage, but it should be tempered with respect. You can help others, but you cannot think for them. Try to learn when to be forthcoming, and when to wait for others to ask your advice. 82 |

The Martyr: You take on other people’s burdens. They depend on you, and somehow you end up doing more work than everyone else. You are happy to be of help but sometimes wish that you could rely on someone else to share the load. Why not look at the strengths of the people around you? The Miser: You are a penny-pincher. You are very careful what you spend. Your constant budgeting, however, turns people off. Remember, not everyone shares your values or your experience. Allow people to make their own choices. However, if you can point out a bargain, by way of suggestion rather than insistence, they may just appreciate the advice.

The Vanishing One: People say that you cannot be relied upon. They think that you are being lazy or selfish for not joining in, or committing to something and then backing out at the last minute.
