F
ood fashions come and go, of course they do, just like all forms of fashion. You can call it fad or you can call it progress, but without it life would become very dull indeed. For the last few years we have seen the rise of the set menu and it is often a fine way to dine and experience the talent of a good kitchen. But let’s face it, the set menu is often an expensive beast and one that we might indulge in once, maybe twice and usually in celebration of an anniversary or achievement. In Brighton The Set became a restaurant and a very good one, where the short selection of set menus gave the kitchen team the opportunity to create unified culinary concepts and I will say at not too terrifying prices. But times have changed and The Set team have regrouped and decided to go a la carte. It’s a brave move that goes against fashion so it was fascinating to go along and find out what their thinking is. Well I am delighted to report that this is no retrogressive move but a fabulous change that offers we the public the opportunity to dine at whatever level we choose, from a simple table of their simply brilliant small dishes to going the whole way of four or even five courses. I went along with a group of friends and between us we gave the menu (and the cocktail list) a good thrashing. We started by trying some of the small dishes, perfect oysters in a vibrant yuzu dressing, squid ink grissini with a stunning mussel sauce and divine chorizo croquettas amongst them. I started with the crab bao, a real delight, light bun, generous amounts of crab, sweet white meat balance with musky brown, my idea of heaven. I was not alone in thinking this although I was very drawn to a celebration of the carrot to my right and a fine terrine to my left. I was tempted to a bone marrow risotto served with braised beef cheek, and it did look good but I had a hankering for the lamb and I was not disappointed, each element of the dish beautifully realised and to my left a fish dish was putting a similar smile on a face. A la carte to me means at least three courses so puds were definitely in order. Miso tiramisu went down well as did a deep fried apple pie. My sticky toffee pudding was light as a feather but seriously lacking sticky toffee. This omission however was eclipsed by an incredibly good malt ice-cream.
