We brew in Kemp Town in East Brighton and have a current range of 10 great beers. Every Saturday, from March to October, we will welcome visitors to take part in a cracking two hour brewery experience. We explain how we make our vibrant beers, from selection of malt and hops, to mashing, sparging, boiling, fermenting and conditioning. We also tell the story of how we got into this amazing business and what our future plans are. And, of course, there is plenty of beer tasting! Also, we have teamed up with the Great British Charcuterie at Brighton Marina to find perfect meat, cheese and vegan food pairings for each of our beers. Our first range of beers have been real ales, beautifully conditioned in casks and bottles. latest bill – ungagged!

AK HEH!

being,; optimism especially is hard to come by in a life which, let’s face it, is not really worth living.” They did a show called La Dolce Vita which was more what they really believed! Andrew came to Brighton after being brought up in St Helens and going to the renowned Chelsea School of Art and then working as a book designer for Weidenfeld & Nicolson using his style on book covers for Dory Previn and Dame Edna Everage but in the late 80s he moved to our city and soon he was part of that original gang of then unknown performers based around the early days of Brighton Fringe and centred around establishing The Pavilion Theatre and The Zap Club and the tents that made Brighton Fringe! And what a glorious era… George Dillon, Gavin Henderson and Christine Hase, John Roman Baker’s groundbreaking gay theatre group! AIDS Positive Underground and Icepick in 1990 at the fledgling Marlborough Theatre. And Stretching Frontiers which it so did with composer Michael Finnissy. Meanwhile Robert Cohen was reporting on Gloomy Sunday by Umbrella Theatre and Colin, Marina and David who then started Komedia! Later David started The Verdict for jazz! The World Turned Upside Down was on… well Brighton was anyway as the old conservatives ( small c ) were swept away by the surge of not angry at all young men and women. TWTUD ... the 1649 Diggers play was written by Chris Stagg and Paul Hodson and around them Steve North, Helena Uren and Peter Cleall. Roy Hutchins, JJ Waller, Luke and Steve and The Pookies (now Stomp) were developing comedy/cabaret/music performance and Brian Behan, when not writing Mother Of All The Behans, started the swimming madness in icy Brighton winters every morning. At The Pavilion Theatre there was the best play of the 80s (that’s the 1380s) James Poulter’s The Peasants’ Revolt and Graham Duff who became Ideal with Johnny Vegas and Tony Lidington and Simon Pascoe and Bright Red and Cliffhanger with Pete McCarthy and his bar, (now sadly deceased) I always loved his joke that went something like Red sky at night, shepherds’ delight Red sky in the morning, Hove’s on fire Hurrah!!! Also in Cliffhanger were the hilarious Rebecca Stevens & Tony Haase, and Robin Driscoll who wrote Mister Bean probably while the rest were at the bar having fun with Boring Bob and John and Paul from The Piranhas with Mike Lance serving them. I’ve probably missed a few but ask Andrew. He was at the scene and here’s the poster to prove it! Brighton;s just as good now as ever!!! There are wonderful young performers and now they are centred around new exciting venues across the city, The Warren is my favourite so Brighton Council for God’s sake look after them. Sweet!!! You haven’t heard of the performers but you will! Andrew has always kept up with new performers. Last night I left him in the studio working up a new show with young performers from Longhill School and I would lay any money there’s a future star or two in that show. Andrew went on to be Food and Drink Editor of The Latest. He started in 1992 and in 1993 he gave his first awards naming newish restaurant Terre A Terre as restaurant of the year. He knows you know! He’s gone on to be as knowledgeable on Food and Drink as anyone! He still writes that column and presents immaculately of course on TV every day. If you ever get the chance to go out with AK you’re a lucky person because he’s great company particularly unlike TV when he’s ungagged. If you already know him you know what I mean. Happy birthday Mr K! And many more!!! Latest Bill

Latest’s shameless creative director has never been backward in coming forward

“ He knows you know ! ”

oday as I write, it is the birthday of my good friend Andrew Kay. So let’s celebrate him! I just found out that he’s written a play and taking it to Edinburgh Festival. It stars Jason Sutton who everybody knows here as Miss Jason so chances of success are good. Its title is Morning Glory but luckily in that get up late Festival it’s on later in the day. Andrew has always been interested in performing and theatre. He’s a regular at Theatre Royal Brighton on first nights most Tuesdays and often interviews the stars who sometimes are not star like at all. That’s a compliment to them. If I had to pick one of his TV interviews out, I’d choose Andrew’s acting and interview with West End star Jodie Prenger recently. You can watch it on thelatest.co.uk – Have a laugh! And AK has been a theatre buff for so long… well he is 163… minus a century or two… he was Miss Alternative Brighton back in the early 1990s I believe! and here’s the picture to prove it. Not embarrassing at all is it! Actually no, something to take Pride in!!! Back then Andrew was working with wonderful theatricals like George Dillon who was the best ever actor in Berkoff plays which Berkoff himself recognised when George performed Master Of Cafe Society. Berkoff wrote in his autobiography – “His (Dillon’s) performance was a masterpiece of timing and observation, but most of all he let himself go. I was most proud of my written work when I saw him.” High praise. AK was also working with Louise Rennison, who sadly died a few years ago but found fame with her Georgia books and her Hollywood movie Angus, Thongs and Full Frontal Snogging. AK did a lot of design work for George and Louise but mainly he did a lot of socialising with her as she was a valued food and drinking companion and they shared the same biting wit. I always loved the promo for Louise’s Edinburgh show in 1988 as Etheldreda with “Barmy” Jane Bassett later to be Badger or was it Bodger. I don’t know and I also don’t know who wrote this promo, Louise or Jane or AK but it still makes me laugh. “Dear Louise and Jane, you have all the qualities that I admire in a human LATEST TV | VIRGIN MEDIA 159 | FREEVIEW CHANNEL 7

andrew kay dines out and when combined with the lamb and the tzatsiki it was truly scrummy. Under the meat was a leaf of bread that had absorbed the juices. It was so tasty that it deserved a place on the menu in its own right There was rice too, but I hardly ate any as I was afeared of peaking too soon. Around the table I saw glistening cubes of shished lamb, a fascinating stew on a shallow iron dish and a lot of very happy faces. CONSTANTINOPLE ittle Miss Muffet may well have been sitting on her tuffet, whatever a tuffet might be, eating her curds and whey, but recently I was treated to a delightful feast of Kurdish cuisine that my good friend Ms McD has been pestering me to go too. So for my birthday we went along as a group before our regular quiz outing to The Crescent. I love the dishes that come from

cabbage leaves to kick off and the dish of celeriac, carrots and peas. Both were truly delicious, generous but not dauntingly so as for my entree I chose the liver. Now don’t wrinkle your nose, I’m not making anyone eat liver if they don’t want to – but I love it and it’s so good for you, really it is! This was just delicious, tender cubes, nicely seasoned on a bed of sauté potatoes. I could eat it

CHAULA’S BRIGHTON

A second venue for this brilliant Indian restaurant is now open here in Brighton. Chaula and her team breathe fresh air into the idea of Indian food with authentic recipes served in stylish surroundings. “As tender as one might hope” the eastern extremes of the Meditteranean, dishes that cross borders and along the way change in often subtle ways. The evening started well as they sell Effes beer, a delight that I grew to love in Turkey – beer and birthday, the ideal combo. The menu is long but if you are familiar with this kind of eating you will know that there are all kinds of cold and room temperature dishes that make up a classic mezze. Most of us opted for the set menu at £14.95. Now let me say that for that you get an absolute feast. Each person choses two starters, followed by an entree and then a main course. I decided to have the stuffed

every day. Around the table my friends dined on hummus, tabouleh, babbaganoush and tiny meatballs all served with great flatbread. I was pretty full and by that point somewhat dreading what I had chosen as my main course – a lamb shank! Yes that delicious cheap cut that chefs made expensive. I love it, it’s full of flavour but it can be dauntingly large. When it arrived it was big but I was unphased as I had my hungry head on. It was amazing, grilled over charcoal and then shredded. It was as tender as one might hope, succulent and so so tasty. The salad of tomatoes on the side was generous and beautifully seasoned
