ritain laboured for many years under the impression that the only food worth eating was French, and in many ways it was. The austerity of the war and post war years had debased our own food to shocking levels and was not helped by the advent of Asian cooking. Then boom, the turn of the millennium kick started a revival of English cooking – all good you might say and who would not agree – but, and it’s a big but, what happened to that amazing French cuisine that we so loved? I am sure that I am not alone in missing those classic French dishes of my youth, the bistro food that sparked my passion for cooking and great

The ideas and ideals that came from the classic French kitchen before the advent of what the great AA Gill called Jaberwocky food, that blurring of lines and dumbing down of real kitchen practice. At the New Steine Bistro owner Hervé Guyat and chef Romain Martinet are passionate about the food of their home country and their childhood. Roman trained in the south of France and brings classic skills to their small but perfectly formed menu with dishes that bring a smile to my face. It’s not a huge menu but one that he is confident that he can deliver time after time and everything is made in the kitchen freshly each day. In a world where so many chain restaurants are buying in dishes or being supplied from central kitchens this is refreshingly good news. Hervé is equally passionate about this and insists that the kitchen uses only local fresh produce, sourcing fish, meats and vegetables from trusted local suppliers – “We choose to support local independent businesses, ones that uphold high standards and strong traditional values”. This passion shows in the food, in the quality of ingredients and the classic presentation, there’s nothing “trendy” here, good food, classic presentation and sensible portions too. Tucked away in the New Steine Hotel it has become a well loved secret with many loyal regulars, but it is well worth seeking out and not just for the food. When it comes to value for money it is second to none. There is an incredible set priced menu that is pretty unbeatable when it comes to value and an a la carte offering that is packed with great dishes at sensible prices. There are further deals too, special offers throughout the week that have to be seen, and tasted, to be believed. Here’s other passion is his all French wine list, filled with great wines and affordable wines too and how refreshing to see half bottles listed. Why more place don’t do halves is beyond me. gin gin! when paired with a splash of their own excellent birch based vermouth. The odder flavoured gins leave me cold as do the weird tonic choices that have flooded the market. I like my gin to taste of gin, the clean flavours of traditional botanicals. So when I was introduced to a new gin from Southwold brewers Adnam’s I was prepared to be disappointed by yet another trendy and weird potation. I was so very wrong. From a range of new small batch and limited edition gins I chose their Orange and Sea Buckthorn Gin. The colour was initially rather a shock, a vivid saffron yellow. My heart sank, was I about to taste another tinkered with spirit, heavy with fruit and sugar as so many flavoured gins are. But no, far from it, this was as dry as a bone with the bitter taste of orange and the sharp burst of acid that I assume comes from sea buckthorn, a spiky shrub that grows on the Norfolk coast. So first I tried it on its own, the best way to taste a gin, then with still water which, like with whiskey, brings out the flavours. I then moved on to sparkling water, I will often drink gin and soda and I urge you to give that a go too, it really does let the gin sing. All this before I moved on to a G&T, basic tonic of course. It was good, very good and that had me sold. Of course I am a tinkerer myself and I love a good cocktail so over the week I made a martini with it and then a longer cocktail with cloudy apple juice, Wobblegate if you need to know, and topped up with soda – and that was really delicious. Enjoy Brighton Cocktail Week and get out there to taste all the spirits on offer, but on the 8th let’s do gin and celebrate the most English of all tipples on International Gin Day. Bottoms up! n my 45 years of legal drinking no spirit has ever become as feted as gin is right now. And where once a barman would reach for the iconic “green” bottle these days he will confront you with a list of gins, from proprietary brands to the small batch fashionable gins of today. Not that this is a problem, after all it shows enterprise and inspiration. Sadly that inspiration can go crazy and some of these new gins go a botanical too far. I have one hardly touched bottle on my shelf that boasts coconut as an ingredient! Yes, coconut! On June the 8th it is World Gin Day, a clear sign that gin is THE spirit du jour, and an excellent way to find your gin of choice as many bars will be breaking out the most interesting gins that they can find. Here in
“The bitter taste of orange & the sharp burst of sea buckthorn” Brighton it falls in the middle of Brighton Cocktail Week, so it will be well worth while getting one of those £10 wristbands and heading out to sample the best that the city has to offer, after all we are the mixology capital of the UK. I have always been a gin drinker, a G&T is my tipple of choice and over the years I have swapped my allegiance one or two times. From not caring too much which gin I became a fan of Tanqueray, then Bombay Sapphire, both pretty good gins. In recent years I switched to Hendricks with its distinctive flavour of cucumber and the panic on the face of the barmen when you rejected lemon or lime and demanded a ribbon the green salad ingredient. Then came along the local independent artisan gins, here in Sussex so many and so many so good. I became a loyal fan of Blackdown gin, a finely balanced spirit that makes a great G&T and equally good martinis

LATEST’S ANDREW KAY TAKES A LOOK AT THE JEWEL OF THE SUSSEX COUNTRYSIDE & THE WORLD OF OPERA ne of the most timely reminders comes from Brighton Festival, when the doors of the country’s most beautiful opera house opens its doors for festival concerts, and this year’s two events were no exception. Around 13 miles from the centre of Brighton is the seat of brilliant opera, a theatre of extraordinary technical qualities and beautiful design and home to some of the most inventive and often innovative productions of opera both old and new. And all this set in truly wonderful gardens and grounds. So why have you not been? The answer for many is that the name Glyndebourne conjures up images of elitism and massive expense. Yes, yes, it can come at a price but since the opening of the new opera house a shocking 25 years ago things have changed. It’s bigger for a start, so there are more tickets available, and although top price tickets can be pricey there are so many far more affordable options available than ever. For younger people there are also great opportunities to attend for heftily discounted prices. I’ve been along on such a night, not pretending to be young of course, but I have to say that the atmosphere is brilliant and my word they embrace the glamour of the evening. It’s always worth looking on the website to see what is available, there you can often find last minute tickets, especially for the operas that are revivals. It’s easy to get there too, even without a car. Simply take a train to Lewes and then use the free coach service that they provide before and after each performance. Alternatively, if you are in a group of three or four then consider booking a taxi each way, divided up it can be surprisingly affordable. Do you need to dress up? Well in the season black tie is encouraged but not enforced these days but smart is the order of the day and for ladies and gentlemen what better opportunity to dress up. And do you need to picnic? Well plenty do but it’s not all linen and candelabras these days, many make do with sandwiches and stroll around the lake. There are three restaurants, all of which are very good, I can vouch for that! This year the season consists of La Damnation de Faust, until 10 July, Il Barbiere di Seviglia, until 14 July, Cendrillon, 8 June - 2 August, Rusalka, 29 June - 21 August, Die Zauberflöte, 18 July - 24 August, Rinaldo, 8 – 25 August.

We did fod and drink on the show from time to time but never enough. Just before Christmas last Latest Bill had a chat and suggested that I start a new series – “Go away and come up with a new format and title” he said. Well I’m good at titles so off I went and came up with the idea for my new show which is called Look Out! with Andrew Kay. The format is still chat and fun but it’s now going to be an hour long show with several guests, regular music spots and at last a load of food and drink. And right now we are making the first episode with a list of fab guests, some of whom you will know and love. In episode one I have Osaro Ogbeide, local celeb and brilliant creator of dance music. So brilliant in fact that he has written my new theme music and I love it. We will be talking about that of course but also about his inspirational new single which is already recieving acclaim globally – a real star.

ome of you will have noticed an absence on your Last TV channel over the last month. It’s not that he’s not been there, there have been lots of episodes of Queersay and AK Soufflé as well as Cook It! and International Chef Exchange, but AK has been concentrating on a new show that will start to screen at 9pm every Wednesdsay. We asked him what is going on and why the change. “I’ve been making programmes for the last few years. Cook It! was great fun and has been seen across the UK. International Chef Exchange went on to Amazon Prime and was seen around the world and Queersay has been very popular, so much so that I will be starting a new series of the global LGBT+ news review show very soon. There are already nearly 200 hundred episodes online that capture the changing world gay scene. AK Soufflé has been a real joy and I have had so many amazing guests from the world of TV, theatre and music as well as prominent business people, local politicians and social commentators – and some complete loons too. All of this has added up to nearly 100 episodes of pure joy for me as presenter and producer. When I originally came up with the silly soufflé gag, cheesy and full of hot air, I hadn’t thought it through but soon realised that as I am probably best known for my work with food and drink that it could be confusing.
He will be joined in the studio by Brighton Fringe award winner and comedy songstress Hannah Brackenbury. Hannah writes brilliant comic songs, satirical ditties in the comedy tradition of greats like Victoria Wood, her hero and the core of her award winning show, Victorious. She will certainly be bringing along her guitar so we can expect lots of laughs. There will also be one of my foodie pals in the studio to create some top nosh for us to try, well seeing as I have lost the food element in the show’s name why not put some in the actual show, how perverse is that. Over the weeks I will be lining up local stars and visiting ones too to bring you an hour of entertainment every week. And look out for my exciting new titles that have been brilliantly animated by motion garaphic wizard Daryn Moore. All in all it’s very exciting so thanks for wacthing so far and stay tuned, look out for Look Out! Look Out! with Andrew Kay stars on June ? at 9pm
