he Walkers Club has designed individual journals for many of the long walks Scotland has to offer, including the West Highland Way, Southern Upland Way, Rob Roy Way and Great Glen Way. The journals describe the highlights of each route, as well as providing space for walkers to make their own notes and keep a diary of their experiences. In addition to the paper versions of the journals, walkers will also have the option to download an app. Through the app they can link the journal to their activity trackers,
as well as upload music and photographs. The journals give walkers a memorable keepsake that can be viewed and remembered by generations to come – and encourage others to visit the many walks in Scotland. At Our Little Outdoor Classroom & Daycare we offer complete wrap around childcare for three to twelve year olds from 7:30am, to allow that extra time for mums and dads to get to work in a more relaxed manner. The Classroom has been designed to be a relaxing space but also one that encourages children to take part in the day-to-day running of the Classroom. On a daily basis children will be encouraged to help with tasks such as daily bread making, helping maintain the animals and helping to tend the garden. There will of course be designated time for the completion of homework under the supervision of Classroom staff.

n exciting new photography competition, Park Focus, has been launched by Loch Lomond & The Trossachs National Park Authority open to young people aged 8 to 26 years old

To celebrate the Year of Young People the National Park Authority wants to find out how young people across the country experience the area and is asking 8 - 26 year olds to share their photographs of the National Park with a short description that explains the story behind the picture and what it means to them. Park Life’s Review of the newly opened Pizza at the Port Nick Nairn is known in culinary circles for a number of things; he runs a very successful cook school, he presents TV shows with cooking themes, he writes about cooking. And he has now opened Pizza at the Port, alongside his Port of Mentieth Cook School.
I
n an airy but still intimate room, pizza chef Paul prepares pizzas from carefully selected simple ingredients, and places them in the wood fired oven that takes centre stage. The menu is simple too, with the emphasis on well blended flavours in a small selection of pizzas. And these are real pizzas, with a thin base, cooked perfectly in front of you. We started by sharing olives with whole garlic pieces, and salt and pepper chicken wings, beautifully crispy and salty on the outside sealing in the moist meat inside. I could easily eat more of these as a main course! But we came for the pizzas, and they are exactly as billed. No overstuffed doughy bread herejust a handful of perfectly chosen ingredients on a thin base, with a hint of wood smoke. We had a garlic mushroom pizza, with a very obvious freshly prepared taste (it was so good that my companion had leftovers boxed to take home), and Nick’s Meat Feast pizza, with a taste of spice to tie the flavours together (no leftovers from mine to take home!). We didn’t have a dessert, tempting though the selection was (with gluten free options), so this will obviously require a return visit. And we only touched on the short wine list, with a couple of glasses of Prosecco to complement the Italian origins of the pizza. Nick was on hand as waiter, apologising profusely that he was filling in for the usual staff, but of course his easy manner and familiarity with the menu added to the experience. Check out the website for opening times, since they’re not the same every day. We’ll definitely be back, and I hope Nick has to fill in as waiter again! e love Christmas in our house, everything from the stockings to groaning with full tummies in front of the TV in the evening for the Christmas Specials. For us Christmas dinner is all about the bird with absolutely all the trimmings, every year I get resounding shouts of ‘it’s not Christmas dinner without bread sauce, cranberry sauce two types of stuffing……’ It’s not just about Christmas Day though is it? That feeling of togetherness, the indulgence, it all starts well in advance. For us Christmas Eve is just as special, everyone being home, the preparations and of course the food, and it’s always curry, something simple but flavoursome, savoury and spicy, a lamb keema or a prawn curry or maybe both if we can’t agree! Christmas Cobbler By Nick Nairn
A brilliant leftovers recipe for Boxing Day
P
reheat the oven to 220C. Chunkily chop up all the leftover meat, stuffing and veggies. You want good sized pieces.
Heat a medium saucepan and add the oil. Cook the onions over a medium heat until softened. Stir in the flour and cook for a minute then whisk in the stock and milk. Bring to the boil then simmer over medium heat for about 5 minutes until thickened. Season well, stir in the cranberry sauce, remove from the heat and set aside. Carefully mix the meat and veggies into the sauce then tip the whole lot into a large pie dish or steak pie ashet that will take the filling almost up to the top. Now make the cobbler dough. Rub the butter into the flour until it resembles rough breadcrumbs and add a pinch of salt. Stir in the herbs then pour in the milk and stir it together with a blunt table knife until it forms a sticky lump. Work quickly and tip out onto a floured work surface and knead very lightly until smooth. Working quickly, roll out to a thickness of about 1.25cm and using a 6.5cm biscuit or scone cutter, stamp into 15 rounds. Arrange these around the outer edge of the dish, half on the edge and half on the filling, overlapping them as you go. Brush with milk then set the dish on an oven tray and bake for 30-35 minutes until the cobblers are risen and golden and the filling bubbling hot (if they begin to brown too much, cover loosely with foil). Allow to cool for 10 minutes before serving with some peas or broccoli.

500g mixture of leftover cooked turkey and stuffing, ham, sausages wrapped in bacon 300g cold roast potatoes, cooked sprouts, cooked chestnuts, cooked carrots 3 tbsp sunflower oil 2 large onions, chopped 2-3 tbsp plain flour (or leftover bread sauce as a thickener) a blob or two of cranberry sauce about 500 ml turkey or chicken stock or gravy mixed with water and a stock cube 4 tbsp milk for the cobblers 75g butter 350g self-raising flour 3 tbsps chopped fresh herbs (parsley, sage, thyme) 225 ml milk plus extra for brushing sea salt and freshly ground black pepper

wner Mark Gibson is delighted to be finally adding a 01 December 2018 re-opening message on the signs at the end of the farm road. It’s been almost a year since the café, farm shop and soft play, which had been leased out to another business, closed its doors.
“Re-opening was always in the pipeline. I’ve been inundated with people asking me when, but this time I knew the only way forward was to take back full ownership and get in the right team”. A discussion in the summer with Brenda Anderson, who operates a consultancy service within her food tour & events business Tasting Scotland, resulted in the two forging a plan to put Edenmill Farm Shop, Café and Soft Play firmly back on the map. An extensive refurbishment of the property and furnishings using predominantly local trades people and interior designer Sheona McLaughlin is close to completion. The café interior is inspired by the landscape and sets the scene for hearty, healthy and home-made fayre. The soft play has undergone an upgrade and a new meeting/
events room provides a multipurpose space for anything from childrens birthday teas to business meetings. The butchery is returning with a shop area located within the café. Of course there’s more to come, with the Edenmill team looking forward to Spring 2019 and announcing the opening of a 43-bed hostel accommodation facility, ‘The Attic at Edenmill’. Providing six private rooms, three dormitory rooms and one accessible disabled room, each room will benefit from having its own private shower and toilet facilities. There is also a large kitchen, dining and lounge area and the café will provide quality food for visitors who prefer not to cook. The Attic is perfectly situated on and close by two of Scotland’s great long distance walks - The West Highland Way and The John Muir Way. Managed by Patrick Stevenson “The Attic will offer a comfortable stay with spectacular views over the surrounding hills and forests. The team will shortly be taking bookings for 2019 and we very much look forward to welcoming visitors to this fabulous new facility”.

It can be a simple twist of birch twigs tied with a white ribbon, a scented evergreen extravaganza with conifer clippings, oranges and berries or a traditional holly and ivy wreath. Themed wreaths are fun, decorated with whatever takes your fancy: baubles, feathers, unicorns, sweets, pompoms – you are only limited by your imagination. If you have an evergreen wreath, keep the foliage looking good by misting with water. If it starts to flop, you can revive it by submerging it in water for an hour, then draining it before re-hanging. Decorate your window sills with greenery, bows, candles and baubles. Make sure your plants are well staked and your decorations are firmly fixed – you don’t want them blown away in a gale!

his year has seen much planning and preparation for the completion by spring of building work to house their new showroom and community business hub.
The showroom will provide more space to display their everexpanding range of ground and garden care equipment. It will also be a welcoming environment for commercial and domestic customers to call in to get expert tips, demonstrations and advice on the best equipment for their needs. Above the showroom will be a new business hub. Drymen Business Hub, owned and operated by Fraser C Robb, will be a much-needed resource for start-up and established local businesses. The project is receiving funding support
from both Forth Valley & Lomond LEADER and Stirling Council. The Park Life area, in between the cities of Glasgow and Stirling, is home to many entrepreneurial business ventures and the hub will be a valuable resource to assist and support many of these excellent initiatives. Along with the business facilities the hub will also be a place to meet local agencies and other businesses. The hub and new showroom will both open in the spring of 2019. As well as using the winter to complete the building and fitting of these new facilities it is a busy time for Fraser C Robb, servicing customers equipment. Don’t forget to book in your equipment so that it is ready for the spring.

O
n Monday 29 October, Philip Hammond delivered his third Budget. I’ve picked out some key points that may be relevant to you: Higher Rate Threshold: whilst this has been raised to £50,000 in England , if you live in Scotland it might actually cost you money, here’s why: The Scottish high rate threshold (currently £43,430) is for income tax only, so Scottish taxpayers continue to pay National Insurance at a higher rate up to the UK threshold (up £3,650 to £50,000 for 2019/20). If the Scottish threshold is unchanged, taxpayers will pay between £256 and £365 more than they do now. Annual Investment Allowance: this is good news for farmers and businesses wanting to invest in machinery and equipment, the allowance is being raised from £200.000 to £1m p.a. from 1 January 2019 for 2 years. Structures and Buildings Allowance: for anyone building, renovating or refurbishing nonresidential property projects starting after 28 October 2018 you’ll get 2% p.a. tax relief on the cost. Private Lettings Relief: not such good news if you have at some point let out what was/ or is your main home as this is effectively being abolished so you could have tax to pay if you sell after 6 April 2020. Personal Allowance: much is being made of the increase in personal allowance from £11,850 to £12,500 the amount you’ll actually save is £130 tax in 2019/20.
