eather is a bit of a recurring theme in this column, but of course it is central to everyone’s activity around the Park. So no exception this time. The hot weather has brought record numbers to visit, and it is relentless, for now. So make hay! It’s been a very busy time for us, with the changes we’ve been making to the magazine and our increased circulation. We have a number of new faces joining our regular customers, and some new editorial contributors too. Not that we’re sitting back yet- the feedback we are getting will keep shaping the way we deliver the best local business and activity information.

RECIPE
Two Season Tofu Salad Serves 2-3
This is a versatile dish which can be served chilled in summer as a light, refreshing main, or warm in autumn for a comforting but healthy dinner option. It's suitable for vegan and gluten free diets, but also easily adaptable for omnivores by marinading chicken or pork instead of the tofu.
Recipe from The Soup Dragon at Tir na nOg
Ingredients:
Salad:
750g Firm Tofu (Alternatively substitute chicken or pork strips/cubes for tofu)
1 Cucumber (Noodled with a peeler/ or julienned) 2 Large carrots (Noodled) 1 Bunch Spring Onions or 1 Red onion finely sliced 10g Wakame (or any other sea vegetable, available from health food shops or online)* 1 small red chilli, finely sliced
Marinade: 1 small onion/shallot 1/2inch of ginger 4 cloves of garlic Blend these ingredients till smooth then add: 1 tbsp toasted sesame oil 1 tbsp Rice wine vinegar 1 tbsp Red miso paste 1 tbpn soy sauce (or tamari for gluten free) Juice from 1 lime Once you have marinated overnight (or longer) then brush off excess marinade (and reserve) and then bake the tofu cubes at 200C for 30mins turning regularly. Reserve the remaining marinade to add to the salad dressing.
Cook 2 portions of noodles (rice for gluten free) 1 Romaine lettuce (shredded) (or alternatively 2 pak choi, sliced and added to noodles at last minute of cooking, for a warmer salad base) *This is optional but very nutritious as it high in fibre and contains calcium, magnesium, iodine and iron. Follow instructions on packet, you will need to soak and rinse in cold water at least twice.
Method: Tofu gets a bad press as a 'tasteless' veggie/vegan protein replacement, but it can be delicious if you treat it right! In this recipe, to help it absorb flavour you first need to press the tofu to remove as much water as possible. Slice the tofu into steaks about 1.5/2cm thick, then press between 2 plates and weigh down with tins or jars and leave refrigerated overnight. Once the tofu has stopped releasing water you can drain it, dice into large cubes and marinade for as long as possible (ideally overnight).

Make the marinade by blending the shallots, garlic and ginger together, then add the vinegar, oil, miso paste and soy/tamari. Cook the noodles lightly to retain an al dente/firm texture. Serve straight away for a warm salad or refresh under cold running water to use later in a cold salad. If reserving for a cold salad you might want to add a little sesame oil to stop noodles sticking together. Combine all the salad ingredients with the noodles, top with the tofu/meat and serve with dressing on side.

Andrew Barrowcliffe, former owner and chef of Venachar Lochside was himself drawn to West Moss-side, moving quickly from just visitor to resident chef, basing his own new business in the West Moss-side kitchen, and introducing exciting collaborative offerings with Kate. He said ‘I was so impressed with the seasonal, natural, wild, organic and nutritious food available on the farm, that I immediately saw amazing new opportunities to provide my clients with something unique and special’. Andy has won many awards for his skills of combining incredible flavours with outstanding presentation. As well as offering great food to the people staying at Trossachs Yurts, Andy provides catering for occasions and businesses at West Moss-side and around the area. REVIEW The Old Bank, Callander S ituated conveniently on the Main Street, The Old Bank, an attractive traditional building, offers a comprehensive food service. Breakfast is served from 9am - 12noon. Lunches. Afternoon tea is also available from 2.30pm - 4.30pm. Fish Tea served from 2.30pm - 6pm. Traditional High Tea from 4pm - 6pm. Dinners from 6pm. The restaurant recently decided to offer evening meals on Thursday, Friday and Saturday from 6pm - 8pm. A new menu has been created for this. We sampled this menu and were very impressed with the selection of starters , mains and desserts. My dining companion chose Monkfish scampi served with chilli jam, saffron aioli and side salad. It was so good to taste the monkfish instead of the usual thick batter. Excellent. I chose the spiced duck breast with crispy black pudding, pickled watermelon, butternut purĂŠe, coriander, chilli and ginger.again an excellent starter. For main courses, as with starters, a fantastic selection to choose from. My partner decided on beer battered Haddock, homemade tartar sauce and crushed minted peas. The Haddock was very good and not covered in thick batter as is so often served in other premises. I chose Loch Duart Salmon, chorizo, orzo pasta, peas and salsa verde. Again presentation and taste were excellent. We were unable to tackle any of the delicious looking homemade cakes including meringues which looked amazing. The wine list is uncomplicated but interesting and very well priced. Finding this gem in the heart of Callander is rare and staff led by Jackie provide an easy to enjoy evening. A worthy stopping point to sample good cooking and hospitality. Review by Ken & Mona Killearn

Delicious Summer Cake Recipe from Sugar Boat
Vanilla Slice, Elderflower Stawberries Serves 6 Ingredients Custard
Puff pastry
500ml milk 6 egg yolks 100g caster 40g cornflour 1 vanilla pod 1 1/2 gelatine leaves
1 block of puff pastry 1 egg yolk beat
Elderflower syrup Make 2 days before use 1 litre water 1kg sugar 1 star anise 700g fresh elderflower 5-ml lemon juice
Method Line a loaf tin 30cm by 7cm with cling film. Bring the milk to the boil in a heavy bottomed pan. Mix the yolks, cornflour, sugar & vanilla seed in large. Once the milk has boiled pour over the egg. Mix while mixing. Add all back into the pan and cook over a low heat whisking constantly. Soak the gelatine in cold water to bloom. Once the custard is thick and coats a spoon whisk in the gelatine and pour into the lined mould. Leave to set for 3 hours. Roll out the puff pastry on a floured on a floured surface till 1cm thick place on a baking tray with parchment and brush the top with the egg yolk. Place another piece of parchment over the top and press with another baking tray. Bake at 170c for 20-25 min until golden brown and cooked fully. Once cooked trim ti the size of the custard with a serrated knife. Sandwich the custard between the pastry sheets and leave for further hour before cutting. Place elderflower in a large plastic tub. Bring the sugar and anise to the boil. Pour over elderflower. Cling film straight away making sure its tight. Store in the fridge for 3 days, shaking daily. On day 3 pass off and season with lemon juice. Wash and trim strawberries and dress with the syrup. Slice the custard and serve with a generous helping of strawberries.

THE AIZLE celebrates 25 years T
his month The Aizle celebrates 25 years on its current site at the Ballat Crossroads. The business was actually started by Jane White 40 years ago in Blanefield, before moving to its current location. Now there’s an even bigger celebration for the business, as the road outside the business has at last reopened following the on-going bridge repairs by Scottish Water. The Aizle, which means burning ember in lowland Scots, features a coffee shop, picture framing studio, a shop selling fashion items, gifts and children’s toys, there is also a popular gym.
As Jane says ‘New customers are often surprised by the size of the shop and the wide range of the items we sell and services that we offer. It has been difficult with the road closure and we are really keen to spread the word and encourage people to pay us a visit and see The Aizle for themselves’.

Whilst giving us a tour of the gym Jenny McMillan told us of the growing popularity of her husband Kerr’s fitness classes, ‘the spin bike classes are especially popular, as are the personal training and Gracie Jiu-Jitsu classes’. announces event programme An exciting mix of local and international acts are lined up to entertain residents and visitors at Festival 2018: Balloch Loch Lomond this August to help celebrate the European Championships coming to Loch Lomond A free family friendly event, Festival 2018: Balloch Loch Lomond is taking place in Balloch on Saturday 11th August as part of Festival 2018 – the cultural programme for the Glasgow 2018 European Championships. The festival programme brings together a fantastic range of local artists, community groups and international performers who will entertain local residents and visitors in a world-class setting. Scottish Opera will be showcasing a new piece of work at the event called ‘Be a Sport, Spike!’ for 4 -7 year olds and their families and the street theatre company Mischief La Bas will be on hand to provide hilarious sponge wrestling and a Great Selfie Hop Challenge. Pop up orchestra, Nevis Ensemble, will be making an appearance at the festival playing a mix of music and interactive theatre company Oceanallover will be performing ‘Orographic’ a new piece of promenade drama. A diverse range of local acts are also taking part in the festival programme including performances from Urbaniks, an award winning urban dance group from Balloch, samba drummers from Awestruck Academy, Clydebank, Singer Station from Alexandria and local singer Christy Hawkins. The stars of the day are the 150 participants who will take part in the carnival parade through Balloch in the morning to create a true festival feel. Gordon Watson, Chief Executive of Loch Lomond & The Trossachs National Park said: “We’re excited that Loch Lomond has been chosen to host the open water swimming competition at the inaugural European
Championships in August. The competition will bring a worldwide audience to Loch Lomond attracting thousands of visitors to the area. “Festival 2018: Balloch Loch Lomond has been created with businesses and the local community to combine sport and culture and provide a fun, festival atmosphere for everyone, encouraging spectators to spend more time in Balloch and boost the local economy. “We’ve got some great acts lined up to entertain people and shine a light on local talent.” Glasgow 2018 Championships Director, Colin Hartley, said: “It’s brilliant to see Festival 2018: Balloch Loch Lomond launch. We are delighted the iconic shores of Loch Lomond will host the Open Water Swimming events as part of the first ever European Championships. “The 11th August looks set to be a fun-filled day for the whole family to experience with an amazing mix of cultural and sporting events - we hope locals and visitors alike enjoy an unforgettable event.” There will also be food and drink stalls from local producers and a bar serving locally-brewed beers and ales. The event will start at 10.00am on 11th August with performances taking place throughout the day in various locations until the early evening followed by entertainment and special offers in local bars and restaurants. The European Championships, part of Glasgow 2018 – is a brand new multi-sport event being co-hosted with Berlin this August. Ben Lomond Start Rowardennan Car Park Distance 7.5 Miles | Time 4.5 - 5.5 Hours Climb steadily, through oak woods to start with and then through an area of cleared forestry where only the few silver birch trees remain at present. After a short while cross a track and continue on the uphill path.
STAGE 2 Ben Lomond is one of the most popular Munros, rewarding the 30,000 people who make it to the top each yeaR with fantastic views of the length of Loch Lomond and far into the hills to the north and the Trossachs to the east.
Cross a small bridge and soon there are the first views of part of Loch Lomond. Pass through a gate onto the open hill where cattle and sheep graze. The path continues to climb at a steady gradient, the views of the Loch becoming more impressive with each step. Pass through another gate. The ground becomes less steep and the final peak comes into view with the prominent zig-zag of the path visible on the right hand side.

Starting point is Rowardennan car park where there is an information centre and toilets. The mountain is not in view from the car park but can be seen from the metal jetty on the loch shore. The ascent starts from a clearly marked path at the back of the information building.
Keep following the path as it sticks to the broad ridge of the mountain. There are good views of the islands in Loch Lomond behind. The path climbs steeply on the final ascent to the summit ridge before levelling off to curve to the left around the rim of the very impressive eastern

From the summit trig point there are stunning views in all directions, particularly of the southern end of Loch Lomond and its islands. It is rare to be alone at the top, as this is one of Scotland’s favourite mountains, popular with visitors and locals including fell runners who make numerous ascents in a year. The easiest and most usual route back is to retrace your outward route, but there is a rougher alternative which is not recommended unless experienced climber especially in winter.
STAGE 5 For the alternative, harder descent, take the rocky path north-west from the summit to descend very steeply to a col before climbing south-west to Ptarmigan at 731 metres. From here the route follows the nobbly ridge for much of the descent with excellent views down Loch Lomond. Approximately half way down the ridge, the distinctive shape of the Cobbler comes into view alongside the other peaks of the Arrochar Alps on the far side of the Loch to the west. There is a clear path although it is narrow and rocky in places. The wettest areas have been improved with large stepping stones. About two-thirds of the way down the path leaves the true ridge to descend below crags and continue on a
direct route towards Rowardennan.
STAGE 6 The path passes through a gate and descends more steeply. Before reaching some trees at the top of the woodland bear left to go through another gate and descend alongside the burn. After an open gateway there is a good view of a waterfall. Continue down through the woods until the road is reached. Turn left here and walk along the road passing behind the Youth Hostel. For the last section it is possible to take the path to the right along the shore. This passes a modern war memorial sculpture by Doug Cocker of Dundee. Ben Lomond and its slopes going down to the loch have been dedicated as a Memorial Park to commemorate those who have lost their lives for their country. From the memorial continue round the shore a short distance to return to the car park.

The 154Km (96miles) Route starts at Milngavie passes through Mugdock Country Park, follows the shores of Loch Lomond, passing Ben Lomond, through Glen Falloch and Strathfillan, crossing Rannoch Moor, past Buachaille Etive Mor to the head of Glencoe, climbing the Devil’s Staircase, descending to the Loch Leven before entering Lairigmor and Glen Nevis and finishes at Gordon Square in Fort William.

Every Monday, Tuesday and Wednesday at 10.20am Trust in the Park health walks take place in the beautiful and nurturing surroundings of Loch Lomond & The Trossachs National Park. How to progress in the gym. I’m always promoting how important it is to lift weights when it comes to losing body fat and getting stronger and the many other health related benefits of doing so. In this edition I’ve detailed some simple ways on how to progress in the gym. One of the ways is to start lifting heavier. It is probably the most common way to progressively overload the muscle but there are lots of other ways to add volume to your session without going heavier. Some of the other ways are: 1. Increase the number of reps on a certain weight 2. Increase the number of sets on each exercise
3. Reducing the Rest Period between sets is a very simple way of progressing yet very overlooked. 4. Execution is another variable. If you fail to complete the set with perfect form but do so the following week, that’s progression! 5. Increase Time under Tension (TUT) of each set by slowing the eccentric portion of the lift, this is also progression. awn Haldane and her husband, Davie, have now been running their shop in Callander for over 2 years now and are going from strength to strength. They have a wide range of animal feeds in stock, from hedgehogs to horses, pigs to poultry. Anything you don’t see in the shop they can order in quickly and can also provide a delivery service. They also have a selection of stoves, accessories and firewood products within the shop and they recently launched their dog grooming salon which is building a up a steady clientele. We have certainly diversified over the past 5 years to provide an all year-round service for our customers. The purpose-built biomass kiln now dries all our timber and is proving to be very popular within the domestic and trade customers. We are in the process of becoming Wood sure and Ready to Burn accredited. This gives our customers the confidence to know they are buying “ready to burn” firewood which has reached a low
moisture content. We also provide a wide range of “add on” products from kindling, firelighters, smokeless coal, peat and various forms of briquettes. Our kiln dried firewood is also perfect for domestic biomass boilers as we are BSL accredited. We can design and install solid / multi fuel stoves and Davie is HETAS registered as well as being a fully qualified chimney sweep registered with the Institute of Chimney Sweeps. Every year you should get your fuel appliance swept and we provide a certificate after every sweep, which some insurance companies now ask for. Dawn is fully qualified at City & Guilds level in Dog Grooming so can keep your pampered pouches looking good! With the expansion of services, we now provide employment to 5 full time members of staff and 2 part time. New for 2018 - This year we invested in a new mini sawmill, called a Woodmizer. This machine can take 6-meter lengths of logs and make them into beams, mantle, planks, fencing. We can cut and produce our own mantels for customers, who can come to our yard and pick which piece of wood they would like to hang above their stoves making it a more personal and bespoke service. We can also cut and plane wood for customers who have their own wood.

GARDENING TIPS With the summer we’ve had, it’s a good idea to raise the blades on your lawn mower and keep the sward a little higher and greener. Any scorched patches can simply be raked and re-sown but make sure you water well while the new growth establishes. August is a great month to sow direct in the garden leafy greens such as spinach, chard, rocket and lettuce as well as late sowings of parsley, chervil and coriander which should provide some autumn pickings and then plenty next spring. Cut bunches of herbs and dry them for winter use or peppermint tea
and trim lavender. Prune wisteria and rambling roses Trim back hard geraniums, nepeta, alchemilla mollis in August to encourage a second flush of leaves and flowers. Collect seeds from your perennials and annuals to sow in the spring or immediately (with some winter cover later). Get ahead of the game and sow sweet peas now. Support heavily laden fruit branches with cleft sticks to take the weight of the fruit. Remember to harvest before the wasps and birds!
