Running a successful hotel is like seeing your family achieve That’s the view of Jody Marshall, Resort General Manager at Macdonald Forest Hills Hotel & Resort. And he ought to know – hotels are in his blood as his mother is a chef and his father, a hotel maintenance manager. Jody, a South African, has only been in post for three months but already, he reckons he’s “Living the dream”. He was a linguist by profession – but has a strong pedigree in the hotel business, having twice won the coveted Scottish Hotel of the Year accolade run by Catering in Scotland – the only hotelier to do so. This is also his third position as general manager – a post he enjoys. Jody said: “Business has been really good – but we have to keep on building it. Our primary aim is to increase resort business in the local market. We’re aiming to attract a range of customers – families, couples and the corporate market.”

Let’s do Lunch! Recently opened in Buchlyvie Abi Reilly, Sean Lacon and their team have quickly got into full swing. A very friendly welcome from our waitress Lauren who explained the menu and dealt with each table very efficiently. The chef today was Jamie who also did an excellent job. There is a very comprehensive breakfast menu available from 10.00am until 12.30pm, comprising a tempting selection of morning rolls, continental breakfast selection of cereal, croissants. Various omelettes are also available. Homemade pancakes with various toppings. A full cooked breakfast is available from £ 6.50.
We had a selection from the lunch menu listing, one having smoked mackerel pate, salad and oatcakes, followed by Goujons of cod in very light batter - delicious. My partner started with Stornaway black pudding, salad and homemade apple chutney. This was followed by a classic macaroni cheese, toasted bread with garlic butter. Again delicious. The dinner menu has an interesting selection of meat dishes, fish dishes and pasta dishes. Vegetarian options are available. At present you can bring your own wine and pay £3.00 corkage. In the fullness of time this will be replaced
by an in house wine selection list. There is a childrens playroom adjacent to the dining area, enabling parents a respite while eating. A very pleasant lunchtime. We are planning to return for the dinner menu soon! Review by Mr & Mrs Archibald (Thornhill)

Free Range Chicken Breast Stuffed with Spinach and Katy Rodgers Crowdie Perfect for summer dining and it’s quick too. Stuffed chicken breasts are so simple to make and ready in just 30 mins. This recipe serves 4 people and uses award winning Crowdie from our local farm where we also get our Ice Cream.
• 1½ tsp olive oil • 1 large garlic clove crushed • Knob of butter

Method 1. Melt butter in a pan, add spinach and as soon as it changes to a dark green, take off heat and put in a bowl with crushed garlic and crowdie Mix together lightly.
Ingredients • 4 large chicken breasts, about 170-200g • 5 heaped tbsp crowdie • Sea salt and black pepper • 200g baby spinach

Cook in the oven for 12-15 mins, depending on size, or until the meat feels just firm when lightly pressed. 5. Rest the chicken, covered with foil, in a warm place for 5-10 mins. 6. Serve with new potatoes and salad.

Definitely not ‘pie in the sky’
When someone like David Stewart is at the helm ,his enthusiasm for what he does ensures the customer is well looked after. Clearly illustrated menus leave the diner in no doubt what will arrive whether sitting in or looking for a hearty takeaway in this beautifully refurbished Cafe/Restaurant in the heart of Callander. Stewart Tower Dairy Ice Cream is sold exclusively here with dozens of flavours to choose from, this Italian gelato-style recipe has a creaminess that is rare to find and is tantalising the taste-buds! After being made aware that David is to enter the world pie championship to be held in Dunfermline in November, it was of course necessary to sample one - for me a steak and black pudding creation. A good decision .David believes in using the best of ingredients and the end product surely reflects his policy. The friendly staff are on hand at all times and the service was superb. When it came to ordering puddings we were not disappointed
as David’s wife Rachel does all the tasty home baking and again the quality shows through, wonderfully fresh and luxurious, from a warm home made scone to a slice of cake Rachel knows how to entice her customers back with this standard of baking. Being a coffee fanatic, it was pleasing for me to see a professional coffee machine, fuelled with the finest Italian Lavazza coffee bringing a little taste of Italy to Callander! MugStock Festival It’s More Than Just Music… New festival at Mugdock Country Park, 7th - 9th August 2015 includes outstanding acts from the sublime vocal talents of Siobhan Wilson, laser harp extraordinaire Theremin Hero (Britain’s Got Talent 2012) to the contagiously delightful carnival sounds of Orkestra del sol. What is your gardening background?
Do you work all year round?
I have more than 20 years of practical gardening experience, which began with my organic market garden business. I set up and ran the kitchen garden at the Nick Nairn Cook School for 10 years, supplying veg, specialist salads, herbs and cut flowers.
Yes; there are always different seasonal tasks to do in the garden. Although most gardening is done between spring and autumn, October to February is a great time to design, plan and prepare new borders and do hard landscaping.
I’ve completed a number of garden makeover projects and recently helped Buchlyvie Primary School create an allotment and cookery school and I head up their garden team. I strongly believe that all children should have an opportunity to grow their own food and enjoy gardening. It’s been fantastic seeing the pupils have fun at the allotment and we hope to expand their “outdoor classroom”.
What made you turn to garden consultancy? I’ve spent the last 6 years creating my own 6-acre garden near Buchlyvie from scratch – there’s woodland, flower gardens, areas for cut flowers, a prairie garden, an orchid meadow, my veg garden and more. It’s been an amazing experience, full of costly and hard won lessons but I am proud that I have learned from my own mistakes. I now have an arsenal of knowledge about what will and won’t
grow in our climate and I want to help other people make wise choices, save money and enjoy beautiful plants that thrive in our local conditions. I have planted thousands of plants, many of which I have propagated myself from cuttings, divisions and seed. My joy of producing plants for free has steered me into wanting to help others discover the thrill of propagation.
How do you differ from a landscape contractor? Plants are my passion and my area of expertise, whereas other landscape companies tend to specialise in hard landscaping. I offer a very personal, one-to-one tutoring service as well as design – my aim is to empower people with the knowledge of how to care for their own garden. By providing an ongoing maintenance schedule tailored to each client, they can develop and improve their garden each year. As every woman knows, a makeover is nothing without a maintenance regime and aftercare!
Any other interests? I’m writing a book about my garden and have a vast photo library, as garden photography is another passion. Fraser C Robb is now celebrating 40 years in business. The family business is still based on the original Drymen site and has grown significantly over the years. Holly’s Top Gardening Tips for June & July Blue and purple Iris sibirica are wonderful early June plants, which enjoy a damp Scottish soil. Perry’s Blue is a great and reliable showstopper. With orange welsh poppies, it’s hard to find a better colour combination. Order mail order bearded iris now if you have a sunny, sheltered and well drained area (mine are in gravel by a south-facing wall) Plant out dahlias in June when frosts are over, put plenty of manure/compost in the planting hole and stake them. Cover the soil around the stems with sharp grit or a copper ring to prevent slugs nibbling. Plant out bedding plants. Ben View nursery always has a great selection of hanging baskets – order/buy them now the frosts are over. Keep picking sweet peas and deadhead repeat-flowering roses to encourage new by blooms. Sow peas, mange tout, beetroot, carrots and salads in the garden and basil in the greenhouse or kitchen window sill. I scatter fennel, coriander, chervil and parsley seed in any bare patches of my flower garden as they are a good green foil to flowers and have superb autumn seedheads; they also make weeding that bit tastier! The annual, Phacelia tanacetifolia is beautiful and loved by bees, sow this green manure in any bare spaces. Difficult Decisions Faced with ‘pension freedom’, people need sound financial advice more than ever. More than a quarter of all British people approaching retirement don’t know where they will put their pension savings after April 2015. This particular finding from BlackRock’s latest Investor Pulse survey* highlights a growing need for financial advice, given the recent changes to the pensions regime. This, the second of three articles on Britain’s savings habits, looks more closely at some of the survey’s results. The key change which has just come into effect is that pension savers are no longer required to buy an annuity – they have ‘pension freedom’. One direct result, as BlackRock’s research shows, is that fewer than one in ten future retirees now say they are likely to purchase an annuity. And 28% simply don’t know what they will do with their retirement savings. The need to take personal responsibility is growing, but the lack of retirement planning and financial knowledge means that many people

are reluctant to act. The majority of people say they do not know how much they should be saving, and 44% haven’t started saving for retirement at all.

How about a clock you can shout at to silence the alarm? Or one that you can throw at the wall with impunity? Things good to eat or drink are always welcome. A mini hamper of Continental meats, some wild boar or venison sausages, a selection of Scottish and foreign cheeses, pots of luxury preserves or honeys should keep his stomach happy for the following days. herbs and spices will add flavours to future meals, and a selection of sauces will add variations to his favourite pasta. Get him something that’s no use to anyone other than as a beautiful object - a small carving, a silhouette, an unusual pen holder for his desk, executive toys or a miniature watercolour or print. On the other hand, if your father is on the ’traditional’ side, he may well welcome socks, a tie, after-shave and the rest, only you will really know; but
do take the honest decision, don’t plump for the obvious just because it’s the line of easiest resistance. And if you really can glean no inspiration from the above, go to your local bookshop. Get him a book on one of his passions, interest or hobbies. If he doesn’t have a hobby, choose one for him. Beware though, be sure it’s something two can join in with. If he gets securely hooked, your mother will see neither hide nor hair of him, and she won’t thank you for that! It’s all a matter of thought and imagination. Sea & Surf... Sheila introduces New Collection to Loch Lomond Well-known Scottish jewellery designer, Sheila Fleet, has been watching the waves over the winter. Art forged in the furnace Two prestigious commissions for artist Elspeth Bennie Elspeth Bennie has a growing reputation as an artist and blacksmith highlighted by two recent prestigious commissions. The first, for the SANDS charity, is based on a large forged iron screen which incorporates butterfly and caterpillar-friendly plants. The butterfly is one of the symbols chosen by the charity, which now has a dedicated memorial garden in the New Dumbarton Cemetery. The second is for three large copper and brass pictures depicting various aspects of the whisky industry. The latter was commissioned by the Scotch Whisky Experience and the pictures now found in their corporate function suite in the Royal Mile. Elspeth, based in Glasgow’s Balfron area, combines the traditional blacksmithing methods of heating metal and forging it while hot with new techniques such as plasma and laser cutting. Best two one Act Plays in Scotland FADS is extremely proud to host a special evening of drama to be held in Fintry Sports club on Friday 26 June at which the plays placed first and second in the Scottish One Act Play competition recently held on Orkney will be performed. The FADS play ‘The Path of True Love’ was placed third. We reluctantly have to agree that while the FADS play was terrific, these two were just that wee bit better! Cabinet Secretary launches new architecturally designed viewpoint on the “bonnie banks” A new iconic landmark has been added to the Scottish landscape. ‘An Ceann Mòr’, Gaelic meaning large headland was unveiled by Richard Lochhead MSP, Cabinet Secretary for Rural Affairs, Food and the Environment, at Inveruglas on the banks of Loch Lomond. The eight metre high, pyramid shaped structure is the fourth and final installation in the first pilot project for Scottish Scenic Routes – a Scottish Government initiative designed to encourage visitors travelling along scenic tourist routes to stop and see much loved views in a new way, helping to boost the local economy. ‘An Ceann Mòr’ was designed by
Daniel Bar, Stephane Toussaint and Sean Edwards who formed BTE Architects after winning the architectural competition. The striking structure is clad in sustainable timber which, over time, will fade to a silver-grey to blend in with the landscape. With 31 steps, the iconic landmark offers elevated views, or, for those with limited mobility, a tunnel through the centre of the ‘pyramid’ opens up to reveal the same stunning vista. ‘An Ceann Mòr’ ’has been designed to the highest standards of accessibility including an all-abilities path from the car park, which is already a popular stopping point for coaches.
