A Tale of Two Skippers As global sports news was being dominated by the fall from grace of cyclist Lance Armstrong, just to the south east of the Azores in the little known sport of solo ocean racing Alex Thomson was emanating the spirit of sportsmanship and integrity by shadowing his opponent, Jean-Pierre Dick, who had run into trouble. January 27th witnessed a historic moment in the world of sailing and yacht racing as for the first time, two men solo, nonstop and without assistance, completed the Vendee Globe race by sailing around the world in less than 80 days. François Gabart (Team MACIF) came first, breaking the world record by completing the race in less than 78 days at sea. His breakneck pace meant that in the final stretches of the race, he forfeited food and sleep to cover 450 miles in 24 hours. Just 93 miles behind, Armel Le Cléac’h (Team Banque Populaire) was gaining on him, reaching even faster speeds of 20 knots in the final stages - spurred on, he said, by the thought of steak and chips when he reached land. But it was the effort for third place which presented the most inspiring story. Third runner Jean-Pierre Dick was 550 miles south from the Azores when his keel broke off, posing great danger and handing over his third place to Briton Alex Thomson. Dick was managing to handle the effects of the damage well, but the wind rose to 30 knots from the southwest, making

the situation much more difficult – and dangerous. Dick was around less than a hundred miles from the British sailor when Alex Thomson (Hugo Boss) of his own volition decided to change his course and stay close to Jean-Pierre Dick, to ensure his safety. The Hugo Boss skipper proved once again that there is a great solidarity among competitors in the open sea. Both these sporting heroes conducted themselves with humility and dignity as they progressed forward, slowly, waiting for the weather to dictate their destiny.

Alex Thomson explained his position to Vendée Globe LIVE: “I came to the decision to stay close to Jean-Pierre Dick: there were strong winds forecast, I was 90 miles away from JP and I knew I wouldn’t have been able to help if something had happened. I felt uncomfortable leaving him in those conditions on a boat with no keel. “To me, it’s no big deal, really. We’re all part of the IMOCA class, and I believe this is part of our values. I’ve been rescued before by Mike Golding, it’s just a completely normal thing to do. I will accompany JP until he feels 100% confident.” And on the French version of Vendée Globe LIVE Jean-Pierre Dick said: “What Alex Thomson is doing is so nice and brave. The third place is very important, I want him to take very good care of it. What he’s doing is a nice gesture, a true sailor’s gesture. I thought I had seen his lights last night but it must have been a star.” The sportsmanlike gesture of Alex Thomson is welcomed and applauded by many. It demonstrates the true solidarity of the fleet. Solo sailors may endure solitude in the middle of the ocean but learn in the face of adversity that their co-sailors have got their back. Breathtaking Dubai

Sample a taste of Arabic luxury, with surprises around every turn and beauty that will astound the most seasoned traveller. It is always unbelievable and fascinating to see a desert and a highly developed city immediately adjacent to each other, which is perhaps what makes Dubai such an amazing destination. A heavily tourismoriented city, the local government has made it a point to have most of the best structures in the entire world built in Dubai alone: world famous structures such as the steel structure called Burj Khalifa, the sail shaped Burj Al Arab and also the artificial island of Jebel Ali. Dubai, which until relatively recently was a small-time trading and fishing port, has literally risen from the sand, creating a vibrant and developed city to rival Las Vegas. Today. Dubai’s most distinctive features are its fabulously over-the-top hotels and shopping malls. For those expecting an exotic taste of the Middle East, its uber-modern elegnance can be something of a shock, but it must be remembered that Dubai is a major port of embarkation for cruise travellers embarking on increasingly popular Middle East itineraries. As such, it’s gently accommodating: all sign postings are first in Arabic then in English,

then thirdly in German, so Arabic lessons won’t be needed, although CruiseCritic.com helpfully notes that attempting “shukran,” for thank you, is always appreciated. Outside the cosmopolitan thrall of Dubai, the sand of the surrounding desert make a welcoming getaway for locals and tourists alike. Companies such as Dubai by One World Travel offer Desert Safaris, which specifically aim at introducing tourists to the thrilling and adventurous fronts of the desert in Dubai by providing fun-filled desert activities to all in the form of dune drives, dune buggy safaris, overnight desert safaris and camel rides in Dubai. The desert really comes to life towards late evening, when it’s time for music and feasting. Traditional Middle Eastern entertainment is found exclusively in desert camps and comes in the form of fire dancing, Tanoura dancing and belly dancing. The method of food preparation used in the desert is very

traditional and therefore different from the fast food or processed food that the people living here usually consume, mostly consisting of rich barbecued meats and greatly enjoyed by locals and visitors alike. When packing for a trip to Dubai, many western visitors are concerned about “appropriate” wear, and there are laws about revealing clothing and immodest behaviour, but CruiseCritic lists long-sleeved tops, neat slacks and long cotton skirts for women were comfortable and acceptable solutions. As first-timers’ foray into the Middle East, Dubai, which straddles both the worlds of the West and the East, offers a comfortable transition with familiar luxuries and indulgences but with exotic tastes of Eastern mystery close by. Many Dubaitrips are customisable so that you can choose your own balance of these delights and visit Dubai on your way to many Arabic destinations, or stop and experience the fascinating duality of Dubai in its own right.

Whether you are making your first trip to Abu Dhabi, or are on a return visit, the Emirati city of Abu Dhabi is full of varied, appealing and sometimes unexpected delights. The architecture of the Sheikh Zayed Grand Mosque is just one popular highlight of an emirate dotted with ancient forts and historic sites – several of which have been listed as official UNESCO World Heritage Sites – and steeped in rich history. From pristine, untouched nature reserves to championshipstandard golf courses, Abu Dhabi offers the attractions of many resorts in one, so should not be missed by anybody travelling to the UAE! MSC cruises will be taking travelers to the UAE this year, with a programme of seven night cruises from Dubai that take in Abu Dhabi, Khor al Fakkan, and Muscat and Khasab in Oman, with an overnight stay in Dubai. With a rapidly-growing tourist trade, Oman is one of the most popular destinations on the Arabian Peninsular. It’s lined with amazing beaches, classed amongst the best in the gulf. Not only do they offer reliably enjoyable weather, but the local geography makes them ideal for swimming, kitesurfing, diving, snorkelling, boating, surfing, beach combing and shell collecting. The world-famous Intercon Beach is popular for family holidays, whereas the popular Al Sawadi Beach offers a luxurious escape with facilities for watersports and swimming. For those who prefer the natural aspects of the coast, the region is ideal for turtle and dolphin watching, as several species swim the length and breadth of the Indian Ocean and return every year to lay their eggs on the beaches of Ras al Hadd, Ras Al Junayz and Masirah island. It’s also a great area for rock climbing enthusiasts, with routes of all grades encompassing mountains, cliffs, paths and canyons with breathtaking scenery. The culture and history of Oman also adds to its appeal as a destination. For instance, nearly every Omani city and town has a fort, most of which were built during the Al-Yarubi and represent the fine Omani architecture and prosperity at that time. You can also see the five Omani falajs, which were created by the Omanis over 2,000 years ago and are the oldest irrigation structure in the region, still standing as a major source of irrigation in the Sultanate and a water source that can be relied on in most Omani cities and villages. For those looking to take home a souvenir of their trip, Souqs (local markets) are a popular place for tourists and locals to purchase handicrafts, including precious metalwork, textiles and local specialities such as daggers, all of which are made with historical artistry, passed down through families and embody the region’s bright and delicate aesthetic.

Black Forest Traybake The sponge kicks off with the best of intentions, dutifully light and airy, but from there it is all downhill – or uphill depending on your take on the liberal drizzling of chocolate and orgy of Toblerone and glace cherries. Makes 15–20 squares Kit 30 x 23cm non-stick traybake tin, 4cm deep For the cake 75g cocoa powder ¾ teaspoon bicarbonate of soda 4 medium eggs 370g light muscovado sugar 180ml groundnut or vegetable oil 200g self-raising flour, sifted For the icing 150g dark chocolate (approx. 50 per cent cocoa solids), broken into pieces 2 tablespoons golden syrup 2 tablespoons whipping cream 100g Toblerone, finely sliced 75g glace cherries, halved

LITLE EXTRAS Unsalted butter or vegetable oil for greasing. Whisk the cocoa with 200ml boiling water, whisk in the bicarbonate of soda and leave to cool for about 20 minutes. Preheat the oven to 160ºC fan oven/180ºC electric oven and butter or oil a 30 x 23cm non-stick traybake tin, 4cm deep – there is no need to line it unless you are planning to turn out the cake whole. Whisk together the eggs, sugar and oil in a large bowl, then fold in the flour, and then the cocoa solution. Pour the mixture into the prepared tin and bake for 30–40 minutes until risen and firm and a skewer inserted into the centre comes out clean. Run a knife around the edge of the cake and leave to cool. To make the icing, gently melt the chocolate with the syrup and cream in a bowl set over a pan with a little simmering water in it, whisking until glossy and smooth. Drizzle the icing over the cake, scatter over the Toblerone slices and arrange the cherries here and there. Set aside to harden for a couple of hours before cutting into squares. French Iced Fancies These cakes are all about the buttercream filling. French rather than American, it is lighter and less sweet than our own, consisting of about two-thirds custard. And it’s great for all sorts of cakes, not just here for these pretty little squares. Makes 12 Kit 32 x 23cm Swiss roll tin Baking paper Electric whisk Palette knife Clingfilm For the sponge 3 large eggs 75g golden caster sugar 50g plain flour, sifted pinch of sea salt For the buttercream 3 medium eggs 150g icing sugar, sifted 50g plain flour, sifted 325ml whole milk finely grated zest of ½ lemon ½ teaspoon vanilla extract 180g unsalted butter, softened For the icing 225g icing sugar, sifted 2–3 tablespoons lemon juice, sieved LITLE EXTRAS Unsalted butter for greasing Mini white marshmallows for decorating (optional) Preheat the oven to 180°C fan oven/200°C electric oven. Butter a 32 x 23cm Swiss roll tin, line it with baking paper and butter this also. Place the eggs and sugar in a bowl and whisk for 8–10 minutes using an electric whisk until the mixture is almost white and mousse-like. You can also do this in a food processor using the whisking attachment, in which case reduce the time to about 5 minutes. Lightly fold in the flour in two goes, then the salt. Pour the mixture into the prepared tin and smooth it using a palette knife. Give the tin a couple of sharp taps on the work surface to eliminate any large bubbles and bake the sponge for 8–10 minutes until it is lightly golden and springy to the touch. Run a knife around the edge of the cake and leave it to cool. To make the buttercream, first make a thick custard. Whisk the eggs and icing sugar together in a medium-sized, non-stick saucepan until smooth, and then whisk in the flour. Bring the milk to the boil in a separate small saucepan and whisk it into the egg mixture. Place the pan of custard over a low heat and cook for a few minutes until the custard thickens, stirring vigorously with a wooden spoon to disperse any lumps that form. The custard shouldn’t actually boil, but the odd bubble will ensure it’s hot enough to thicken properly. Cook it for a few minutes longer, again stirring constantly. Pass the custard through a sieve into a bowl, stir in the lemon zest and vanilla, cover the surface with clingfilm and leave to cool completely. To finish the buttercream, beat the softened butter in a bowl until light and creamy. If it’s on the hard side, you can cream it in a food processor and then transfer it to a bowl. Using an electric whisk, gradually whisk in the cooled custard. Continue whisking for another few minutes, on a low speed to begin with and then on a higher speed, until the buttercream is very pale and fluffy. Turn the cake out onto a board and peel off the paper. Cut it in half widthways. Line a large plate or dish with clingfilm and place one of the cake halves on top. Spread with the buttercream, taking it up to the edge, and then sandwich with the other half. Use a palette knife to smooth the edges of the buttercream level with the cake. Loosely cover the whole thing with clingfilm and chill for a couple of hours. Remove the cake from the fridge and slice into twelve 4cm cubes – you may find it easiest to lift the whole cake first onto the work surface using the ends of the clingfilm. To make the icing, blend the icing sugar and lemon juice in a bowl – it needs to be thick enough to coat the cake and trickle down the sides. Ice the surface of the cubes with the icing, taking it up to the edge of the cake. Leave it to trickle down the sides for a few minutes, and then decorate the top with a few mini marshmallows if you wish. Set aside in a cool place to set for an hour. Cover and chill if not serving in the near future.

Red Velvet Cake A velvet cake is so stunning it makes a great celebratory offering – be it Christmas, Easter, a birthday or any other occasion. Legend has it the recipe was leaked from the kitchens of the Waldorf-Astoria some time in the 1920s, and it has held Southerners captive ever since. Makes 1x20cm cake Kit 2–3 x 20cm non-stick cake tins with removable bases, 5cm deep Baking paper Food processor Wire rack

For the cake 120g unsalted butter, diced 300g golden caster sugar 2 large eggs 300g plain flour, sifted 230g buttermilk 1 teaspoon fine sea salt 1 teaspoon vanilla extract 20g cocoa powder, sifted approx. ½ teaspoon red food colour paste 1 tablespoon white wine vinegar 1 teaspoon bicarbonate of soda

For the frosting 180g unsalted butter, softened 150g icing sugar, sifted 450g full-fat cream cheese 1 teaspoon vanilla extract LITTLE EXTRAS Unsalted butter for greasing Preheat the oven to 170°C fan oven/190°C electric oven. Butter two (or three if you have them) 20cm non-stick cake tins with removable bases, 5cm deep, and line the bases with baking paper. To make the cake, cream the butter and sugar together for 3–4 minutes in a food processor until really light and fluffy. Add the eggs one at a time, scraping down the sides of the bowl between each addition. Add the flour in three batches, alternating it with the buttermilk so you start and end with the flour. Next mix in the salt, vanilla and cocoa. Start to add the red food colouring, a knife-tip at a time, until the mixture is a dramatic dusky red – I find it needs about ½ teaspoon in all. Mix the vinegar and bicarbonate of soda together in a small bowl, they will fizz, and add to the batter. If using three cake tins,* divide the mixture between them, weighing them for accuracy to ensure you get evenly thick sponges at the end. Bake for 20–25 minutes or until shrinking from the sides and firm when pressed in the centre. Leave to cool in the tins for 10 minutes, then turn the cakes out onto a wire rack, remove the paper and leave to cool top upwards. To make the frosting, place the butter and icing sugar in the bowl of a food processor and cream together. Transfer to a bowl and blend in the cream cheese and vanilla extract, beating with a wooden spoon until smooth.

Use about one-third of the buttercream to sandwich the three layers and the rest to coat the top and sides. Place the finished cake on a plate or board, cover with clingfilm and chill for 1 hour until set. If chilling it any longer than this, remove from the fridge 30 minutes before serving. It keeps well in an airtight container for several days. *If using two tins, add a third of the mixture to each one, bake these, and then bake the third sponge while the other two are cooling.

It’s official - Malta has the best climate on earth. Malta was one of two countries that were tied for first place with the title of Best Climate, according to the Quality of Life Index issued by the International Living magazine last year. Sharing top honours was Zimbabwe. Yet a Mediterranean climate (over 5 hours of sunshine a day) isn’t all that Malta has to offer. Malta’s many other virtues in the 9 categories of the IL index combined to earn it 3rd place overall in the Index, pipped to the post by the U.S. and New Zealand. But overseas domestic buyers aren’t the only ones to recognise the reputation of the island’s property potential. COASTAL WALKING

Travelling on foot can be one of the most enjoyable ways to take in scenery, particularly in the British isles. Complete our checklist to ensure that you’re ready before you leave!

Fit to start?

You’ll need to be in decent health for your trip, for both safety and enjoyment. Practice walking similar distances to those you’ll be covering on your holiday over the months before you go, and set reasonable routes for your fitness. If you have any doubts, check in with your doctor before making any firm plans, especially if you have any long term conditions.

Pack it In

You’ll want to travel as light as possible, so your day bag should be a lightweight rucksack containing just lunch, a water bottle, waterproofs, first-aid kit and any other personal items you might want during the day such as a camera and phone. You may also wish to carry walking poles and other outdoor gear, depending on your routes and abilities. Most walking tour companies will transport the rest of your luggage between overnight stays, and for self-guided tours, luggage transfer services are available for your main suitcase. Within that, you will want ample clothing for whatever weather conditions you may reasonably expect to encounter – layers are advisable. Lightweight waterproofs are a must, and you want to ensure your footwear is comfortable and wear in new boots before setting out on your journey.
