Awards for Meet the judges...

Moray Business Women’s Awards The annual Moray Business Women’s Awards Ceremony was held at the Stotfield Hotel in Lossiemouth on Saturday 17th November. The hotel was wonderfully decorated for this prestigious event by Gill of BeeDeck Balloons. Attending the event were many of Moray’s Business Women and their guests along with representatives from Moray Business Women’s Charity of the Year, Moray Defibs.

our Moray-based business women, representing three different businesses, were announced as the winners. Clare Lock of Portknockie-based graphic design company Clockstudio was awarded Business Woman of the Year. Clare recently completed the rebrand for Moray Chamber of Commerce. Speaking after her award Clare said “I was very proud to win Moray Business Woman of the Year. Being self-employed and working by yourself can be a challenge, so it’s

great to get this kind of recognition. 2019 will see me celebrating 20 years in business, and this award makes that even more special. I’m looking forward to what the future will hold for Clockstudio!’ Picking up their second win of the month was Beverley Alexander and Caroline Byrne of Forresbased Wild Blossom Floristry. They were awarded Most Enterprising Business. Earlier this month they were awarded Most Promising Enterprise at the Moray Chamber of Commerce awards. Caroline said: “We were delighted to win the Most Enterprising Business Award this year from MBW. This group of interesting and dynamic ladies have been such a support to us over the last few

We are looking forward to a busy festive period and have some exciting plans for 2019.” Kirsty Watson of Watson Wood Financial Planning was voted for by fellow Moray Business Women to win Member of Achievement. Kirsty is a lead campaigner in the group Keep Mum which is putting pressure on NHS Grampian to resume the full consultant led service to Women’s & Kids’ services at Dr Gray’s Hospital in Elgin. Kirsty said: “I was very happy to be nominated for the award and delighted to have won. This award is particularly special to me as it was voted for by my peers and to have that recognition is a great honour.” Sharon Whiteley, president of the Club said “the quality of entries for the awards was high, it was a great pleasure to recognise and award our winners for this year, They have all worked tirelessly, excelled in their businesses and are glowing examples of Moray Business Women. Kirsty has also been in the forefront of the MUM campaign.The awards ball also raised £1610 for our charity of 2018 Defibs for Moray.”

Moray Chamber of Commerce awards Each year Moray Chamber of Commerce hosts two events at which it presents a number of awards; Moray Chamber Awards Dinner and the Moray Chamber Awards Lunch. This year was no different with both events seeing a fantastic turn out, fabulous locations and delicious food.

t this year’s Awards Dinner at Gordon Castle, the Main Business Award for Moray, sponsored by The Macallan, was presented to Gordon & MacPhail for their outstanding contribution to the Moray economy over the past 12 months. Stuart Urquhart of Gordon & MacPhail commented that “…it is a particular privilege to be given the Moray Business Award.” Following the Awards Dinner we celebrated the Moray Chamber Awards Lunch as the launch event for Moray Business Week 2018. This year it was held in Forres at The Mosset Tavern. This event saw three 3

Moray Chamber of Commerce 2018 finalists awards given. Firstly, Most Promising Enterprise which, due to the high quality of applicants, was awarded to two companies, Falcon Building Supplies Ltd and Wild Blossom. Beverly of Wild Blossom commented that “We were delighted to be finalists but did not expect to win. Caroline and I have had a terrific year and this is a fantastic achievement to finish 2018”. Following this award, SME of the Year was awarded, this year to A J Engineering & Construction Services Ltd who commented on Twitter that they were “absolutely thrilled” to have won the award.

Lastly, The Moray Export Award was presented to Speyside Cooperage, not only for their own personal exporting efforts, but what they facilitate for our whisky industry, one of Scotland’s greatest exports, creating their casks! Moray Chamber are extremely grateful to their award sponsors at this year’s Awards Lunch who were Business Gateway, MFR and Walkers Shortbread, respectively. It has been a fantastic year for awards at Moray Chamber and we wish the warmest congratulations to all our award winners.

Recognition awards 2018 Grampian Scottish Association of Volunteer Local Sports Councils Award for voluntary Transport contribution to local sport over a long period (minimum 10years) six nominations in this category and the winner was Hamish McBain of Rothes for 50 years of dedication to the sport of Tennis in Rothes and across north Scotland.

Driver of the Year at the Grampian Volunteer Transport Awards is Alan Shaw of Speyside Car Share. Alan has volunteered as a driver for 10 years. He was nominated by a very grateful 83 year old recipient of the service. Speyside Car Share was also nominated for Organisation of the Year Award.

The carefully made lists will have had many entries ticked off; most of the dry provisions will now be safely stowed in the kitchen cupboards; wrapping papers and decorative tags will be neatly put away in the “Christmas Preparation Drawer” awaiting the evening when the carpet is strewn with rolls of paper, piles of presents and perhaps the odd glass of wine to help things along.

Remember; lights on first - warm white in colour and keep them still and twinkling - no flashing lights, they are so yesterday! Dress your tree dripping it in sparkle leaving no branch uncovered. Here’s a tinsel-tip: keep it in the bag for another time as it belongs in the 1990s. Go for a mix of expensive and inexpensive baubles - there is no need to spend a fortune to make your tree look absolutely fabulous. Have a mixture of large and small baubles making sure you balance your tree by putting all your big baubles near the bottom of the tree and work up finishing with your smaller ones near the top. Get the best effect by choosing different textures: glossy, glittery, matt, felt... and this year’s trend is shiny baubles embroidered over the top. It’s a fishy business To the uninitiated the name has a peculiar ring. What, you ask, is ‘skink’? It does not sound enticing; there is no musical cadence to it and it conjures up images in the negative.

T

here are many foods and dishes that divide opinion. Take Marmite or peanut butter for example; there is no middle ground – you either like them or loathe them. The same can be said for this unique fish soup. Those who have never tried it will probably tell you that it is not for them whilst those who are devoted fans will defend it to the last. But how did it come about? The name Cullen Skink is said to come from the Gaelic word “Essence”. Initially, Cullen Skink referred to a type of

broth made with the scrapings of beef from the front legs of cattle. Hard times in the early 1890s left the Northern people unable to buy this product. By this time, Cullen Harbour (completed in 1819) had become the thriving centre of herring fishing and the village also specialised in the production of smoked haddock. With many families in the local villages having a fishing background, they turned to smoked haddock which was in plentiful supply.


By using smoked haddock and various other products all put together, a distinctive delicious soup was made. Cullen Skink was born. Simple really. Just a few chosen ingredients and you have a dish that is both hearty and heartwarming. It’s the perfect soup to have after a long walk with the dog on a blustery day. There are many and varied recipes out there and each one will purport to be ‘the definitive one’. The obvious solution would be to hold a competition and let blind tastings be the judge. And this is what has been happening since 2012 at the Cullen Bay Hotel. The Cullen Tourist Initiative has run the competition since 2012 and has only missed once, in 2016. This year it was held on Sunday 25th November. There were two distinct competitions, starting with the traditional Cullen

Competitions mean judges and the panel of independent judges this year were Lady Clare Russell, Lord Lieutenant of Banffshire; Jimmy Buchan from Amity Fish Company Ltd/Star of the BBC series ‘Trawlermen’; Peter Cook, Director of Food, Drink & Agriculture at Opportunity North East (ONE); Alistair Fowlie, Deputy Head of Curriculum at Moray College

New to the judging panel for 2018 was Jimmy Buchan, owner and skipper of the Amity Fish Company Ltd. Jimmy says “Well done to Cullen activists and if I can help as an ambassador for the industry in both catching and processing of Haddock, which is a key ingredient, then we are all winners and playing an active role.” The competition was split into two distinct halves, each half adhering to a strict table of events: CULLEN SKINK TRADITIONAL 11.30 All competitors must report in to the Organisers by this time 12.00 to 12.45 during this time each competitor will prepare their soup dish 12.45 Each competitor must serve up two bowls of the completed soup dish 12.45 to 13.15 Judging will take place.

Both local and more far-flung entries were received and there were four entries in each class.. Lynne from Lily’s Kitchen in Cullen only entered the traditional competition. This was her second year, having been placed second last year. Lily (after whom the kitchen is named) is Lynne’s daughter. Darren Bate of Lossiemouth’s new business NLB Street Food entered both the traditional and the Skink with a Twist competitions. This was Darren’s first time at the Championship. Ian Watson, the reigning champion and coowner of the Cullen Bay Hotel, also entered both the traditional and Skink with a Twist. This is the third year Ian has taken part. Margaret Macrae from Buth Bheag - Kyle of Lochalsh - had travelled the furthest to enter both the traditional and Skink with a Twist. Bob Harper was the fourth entrant to the Skink with a Twist competition. He had also entered last year but with a different twist. Bob is retired and stays in Cullen and just entered to support the event and because he enjoys it. Considering that there are so few basic ingredients, it was astounding that four completely different dishes were produced for each of the two sections of the competition. In the ‘traditional’ section Lynne used the recipe that had been passed to her by her mother; Darren used organic fish and added bay leaves; Ian used fish he smoked himself and Margaret used a mix of fish sourced locally. For the ‘Twist’ - anything goes... Darren chose to smoke his own fish... he was sent outside for this in fear of setting off the smoke alarms. He also added Pernod and black pudding Bon Bons; Margaret was using the recipe she used last year and the one she makes for her customers at Buth Bheag - her added ingredient is leeks; Ian’s recipe was different from last year. This year he added a lobster and shrimp bisque, adding tomato purée for taste, until perfection was attained; Bob was the most adventurous with his recipe, adding

Method Cook your onions in butter, add milk, poach the fish in the milk. Cook your tatties in a separate pan, add your tatties to the fish when ready, add cream. Season with salt & pepper and enjoy! Ian told them to stop and plate up. Four identical plates taken through to the judges for their blind tasting. David McCubbin announced the winner of the Cullen Skink with a Twist first as Ian Watson from the Cullen Bay Hotel – according to members of the public who attended and had the opportunity to taste all the dishes, Ian was a worthy winner. You could almost hear the roll of drums as the winner was announced: Cullen Skink World Champion 2018 was Lynne Watson of Lily’s Kitchen. Lynne was runner up last year and was over the moon to have managed to reach the top spot this time. All in all, it was a marvellous afternoon for both competitors and members of the public. Well done and hearty congratulations to the winners and may their businesses go from strength-tostrength. Same time next year, everyone?

The Christmas table Easy turkey crown 50g butter softened 2kg tukey crown on the bone 1tsp Chinese five spice or a punch of ground cloves For the glaze... 4tbsp honey, 1tbsp Dijon mustard, 1tbsp red wine vinegar Heat oven to 170c fan gas 5. Smear butter all over turkey. Season with salt and half five spice. Put in roasting tin skin side up. Roast for 30 mins. While crown roasting mix all the glaze ingredients in a bowl with the remaining five spice. Remove crown from oven and brush the skin generously with half the glaze. Continue to roast for another hour. Glaze twice more during cooking. Cook until cooked through and glaze is sticky and caramelised. Leave to rest for 20 mins before carving. Use juices to make gravy.

Winter warming COCKTAILS With the festive party season in full swing we have been out to try some new Christmas cocktails and winter warmers to inspire you for your festive gatherings. Try one of these and everyone will be in the holiday spirit.

Mulled Wine Cocktail 100g light muscovado sugar, 1 star anise, 1 cinnamon stick, 4 cloves, 150ml water, 1 lemon, 2 clementines, 150ml Cointreau, 750ml bottle light red wine such as Beaujolais, Twist of orange zest and a star anise to serve Put light muscovado sugar in a pan with 1 star anise, cinnamon stick, cloves and water. Bring slowly to the boil, stirring to dissolve the sugar. Simmer for 2mins, then pour into a large jug and leave to cool. Add lemon and clementines, both thinly sliced, to the jug along with Cointreau and Red wine. Stir well, then cover and chill for at least 2 hours or overnight if possible. Serve chilled over ice, with a twist of orange zest and a star anise. If you’d like to serve a traditional warm mulled wine, there’s no need to chill – warm through without boiling and serve in heatproof glasses.

Gordon James & The Power have made a name for themselves in and around Moray but that strong local reputation has now grown into something much bigger - what do you put that down to? A. We think the reputation we have is due to the hard work and determination we try and put on for every show. Always striving to make it a show to remember from an audience perspective. Q. What’s your biggest recollection of music at school? A. The biggest recollection was how strong the music scene in moray was. With great venues, acts and bands. It’s still very strong and the music that is coming out of moray right now is unbelievable. But venues and bands need more support. Q. Where do you see yourselves in 5 years time? A. We are very happy with how things are going, we just need to keep creating new music and if something exciting happens that would be an added bonus. Q. How important have digital music platforms and social media been for the band in getting your music out there? A. It’s very important but we wouldn’t be where we are today without everyone’s support. Q. Who have your biggest influences been? A. There’s too many to list. However, our biggest influences are each other as a group/friends. Q. What’s your favourite gig been? A. There have been so many great shows! We were honoured to open the main stage at Party at the Palace this year for the likes of James and Gabrielle. That was definitely the one with the most butterflies. Q. If you could sit down with a beer with anyone living or dead, who would it be? A. To absent friends A

t this time of year our thoughts are often with the loved ones that are no longer with us. It is not always easy to share how you feel with those around you at what is supposed to be a joyous time. To Absent Friends is a national event that takes place across Scotland from the 1st-7th November. Events are varied but all have the key aim of bringing people together to talk about their loved ones who have passed away. This year, the Whyte Family Trust and Forres Area Community Trust (FACT) came together to host the first Afternoon Tea of Remembrance in Forres. The afternoon teas were held over two days, Friday 2nd and Saturday 3rd of November. Everyone had a chance to share stories, photos, put a tribute on the memory board, light a candle or have a song played.

Those who attended the events commented on how nice it was to be able to talk about their loved one and share their stories with other people who had an understanding. Debbie from FACT said, ‘It was a very special couple of days.’ The Whyte Family Trust is working to ensure the provision of comforting and compassionate family bereavement suites across Scotland and is currently fundraising to improve services at Dr Gray’s hospital in Elgin. The Trust is also striving to encourage research into the development of services for the bereaved which will aid appropriate training for the professionals who support them. It is good to know that there are organisations working to make a difficult time at anytime time of the year easier.

W

hat are you doing for Christmas?” he asked. My stomach turned. “I am not one of those overexcited people!” I spat back unable to tell him that I dread this time of year. I miss my family, who live far away. My friends feel distant, not so close as they once were. I am finding my way after a divorce and moving to a new area. I feel empty inside. I notice the decorations and abundance of fare available to purchase as gifts. I long to have someone to spoil. Most days I avert my gaze, scared to look closely, trying to avoid the heartache. At times, I say something spiteful about the commercialisation of the festive season. Meanwhile, I know the reason for my anger: I feel lonely. The festive season is the most difficult time. Surrounded by people, I feel even more isolated. Am I bound to wish the festive season away again? To count down the days until it is over? What if there was a possibility of the heartache not feeling so severe? Here are some steps, which I would like to take and recommend to others this year: 1. Be kind to yourself 2. Let friends know that this is a difficult time for you. 3. Could you spoil yourself a little?

4. Could you volunteer somewhere? 5. Could you attend a Christmas celebration organised by a charity or community club? 6. Is there an advent carol service or concert, you could attend? 7. If the heartache gets too sore, the Samaritans are a free phone call away. 8. What do you enjoy doing? Could you do more of this? 9. Try to speak to people, friends, on the phone if they are far away? 10. Could you find something to be grateful for in your life right now no matter how small you may feel that it is? To those of you, who are celebrating Christmas with enthusiasm: 1. 2. 3.

Could you help someone who is alone? Could you include others in your festive plans? Could you call someone to tell them you were thinking of them?

What are you doing for Christmas? Spare a thought for those less fortunate than yourself. 45

Go turbo! So, the weather’s fifty shades of dreich, and it’s dark long before you get home from work. With hints of Seasonal Affective Disorder and the urge to hibernate also competing to take over, it’s no wonder you’re struggling to get out and do some exercise! But rather than resign to feeling sluggish till New Year, fight back and try cycling indoors.

ll you need is your normal road bike and a turbo trainer – a stand that enables you to pedal while stationary. The trainer clamps onto the axle of your back wheel, which is still free to spin on a roller. Some resistance is provided by either magnets or an air-friction flywheel. You can control the level of resistance through the mechanism of the trainer, or by using your gears. Top tips for first time turbo trainers Go light – A lighter resistance and faster, steady cadence will enable you to get your heart rate up faster than grinding away as if you’re struggling to climb a steep hill. Start short but frequent – Try a wee 15 minute session to start with, but return to the bike the next evening, or at least more than once a week. Gradually build up the duration of your ‘rides’ to a longer time that is sustainable in your everyday routine. Bear in mind that half an hour of exercise every day is better than a solid hour once a week. Stay hydrated – Have water handy in your bottle cage, just as if you were cycling outdoors. Start bold, start cold – You’re going to get hot, so unless you want a full sauna sweat effect, you might want to start in a cool room. Focus on something else – You won’t have a changing landscape to distract you from the work you’re putting in, so if you’re in a corner of your living room, try the TV with subtitles on. If you’re in a shed or garage, listen to some motivational music. Vary your intensity – Have a clock or stopwatch handy, or use audio tracks to give you a hands-free guide to segmenting your time. Go at a steady quick pace for say, 5 mins, then crank up the pace or resistance for 2 mins. If it helps you to gauge your effort level, most of the time give it 60-70%

Many folk find it’s easier to stay motivated by exercising in a group. If this is you, try a Spinning class. Spinning is indoor cycling on a specialised spinning bike, which is sturdier than an outdoor bike on a turbo trainer, allowing you to stand up on the pedals and explore different positions which vary the muscles being worked. Classes will also give you the benefit of being led by an instructor, pushing you through those 100% effort bursts! Try your local gym or community health centre for a Spinning class near you.

Warm up and cool down – As with any exercise, gently stretch and rotate your limbs, back, neck and hips to avoid any sudden pulls or twists. When you get on the bike, spend the first minute going easy and slowly building up your pace with little resistance. Once you’ve finished your workout, pedal freely for 2 mins, gradually slowing down. Remember to stretch deeply, especially your leg muscles, after you’ve dismounted. 47

Lonely this Christmas? As we all courie in for the festive period and to see out the bleak midwinter, we might want to reflect that others are less fortunate. That there are lots of people still working hard, making sure we have food to eat, that beasts are tended, that water pipes don’t freeze, that trains still run and that roads are gritted. And also that while most of us have friends and family to courie in with, there are some who are alone, and who find the festive period a lonely and isolating time. So if you have a neighbour or an elderly person in particular you know, and can set an extra place for dinner on Christmas Day or at New Year, please think

of inviting them. There is no doubt that we are living in uncertain times with a very unclear path ahead. Things are likely to be tough and might even become harder. As the Rural Economy Secretary, I am absolutely focused on doing all I can to support rural Scotland to get through these times. I am heartened in the task ahead by knowing this – that we have abundant skills, determination, experience and resilience in communities, families and businesses all across Moray. We have a strong quality base upon which to build: a highly educated population; entrepreunerial skills; decent infrastructure (which can
