Caótica, extrema, intensa y voluptuosa, Lima es la puerta de entrada a Perú, especialmente para quien llega por vía aérea. Pero su interés para el viajero parece terminar ahí. Los operadores turísticos no suelen conceder demasiada importancia a la capital, ni a nada de este país que tenga menos de quinientos años. En las agencias de viaje europeas, Machu Picchu monopoliza el casillero dedicado a Perú. Y quienes buscan más, prefieren explorar la exótica selva amazónica. Lima es solo un umbral, un incómodo trámite previo al verdadero descubrimiento. Y sin embargo, en Lima confluyen o se estrellan todas las culturas que integran este país de contrastes. La capital alberga a millones de inmigrantes andinos y un barrio chino; centros de culto milenarios y la arquitectura colonial española más imponente de Sudamérica; cafés enclavados en precipicios frente al mar y restaurantes de fusión criollo-japonesa... En suma, un universo en el que pasado y presente forman un paisaje cultural y humano de inusitada diversidad. Los cinco destinos que propongo a continuación rastrean las fuentes de ese paisaje. El complejo rompecabezas que forman está hecho con materiales que se hallan diseminados por todo el país. Salir de Lima y continuar el viaje por el territorio peruano es enfrentarse a las piezas por separado, como quien degusta los ingredientes de un plato exótico, inesperado y, sin duda, muy picante. Ecos de África. Durante la colonia, la mayor parte de los trabajadores eran indios. Hacían falta pocos esclavos negros y los que llegaban no eran de la misma etnia. Congos y mandingas, carabalíes y mozambiques, angolas y yorubas iban a parar a la costa peruana sin compartir entre ellos lengua ni cultura. En esas condiciones, tuvieron que inventarse un lenguaje común con lo que tenían a mano, por primitivo

que fuese. Hasta hoy, los principales instrumentos de percusión negra son un cajón y la quijada del esqueleto de un burro. En el pequeño poblado de Chincha, al sur del departamento de Lima, aún viven los descendientes de los esclavos que cultivaban algodón en las haciendas de la costa sur. Los negros eran tan pocos que resultaban fáciles de vigilar. Las fiestas de sus barracas debían ser discretas para no llamar la atención de sus dueños. Por eso, la música negra peruana es menos bulliciosa que la cubana o la brasileña. Muchos de sus bailes se realizan con las manos y los pies juntos, como si aún tuviesen los grilletes. Pero menos bulliciosa no significa menos traviesa. En uno de los bailes negros más populares, el hombre trata de encender una vela que cuelga del trasero de la chica. Pero lo hace calladito, a hurtadillas, para no despertar al patrón. Catolicismo. El 13 de noviembre de 1655, un terremoto asoló la ciudad. La mayoría de viviendas se vino abajo. Pero en el barrio de Pachacamilla un frágil muro de adobe quedó intacto entre los escombros, sin una grieta siquiera. En la superficie del muro había una imagen de Cristo crucificado, un retrato tosco e imperfecto pintado por un esclavo negro. La población le atribuyó poderes divinos y lo llamó Señor de los Milagros. Espontáneamente se formó un culto popular que las autoridades no aprobaban. Pero cada vez que el virrey contrataba a un obrero para borrar la imagen del muro, algo ocurría. Hasta tres operarios abandonaron el lugar, presos de misteriosos ataques de pánico. Hoy el muro sale en andas cada mes de octubre, en una procesión de devotos vestidos de morado, color oficial del Señor de los Milagros. El equipo de fútbol Alianza Lima vuelve de ese color las franjas azules de su camiseta. Durante todo el mes se venden los tradicionales turrones de Doña Pepa y se sigue la

temporada de toros. Y, sobre todo, queda abierta la posibilidad de pedir un milagrito. Arquitectura del cotilleo. El casco antiguo de Lima está poblado de hermosos balcones que alcanzan casi el tamaño de una habitación. Sus complejos motivos moriscos, estampados de encajes y arabescos, no se repiten en ninguna otra ciudad colonial. Históricamente, el objetivo de ese diseño único era optimizar el despliegue de hipocresía. En efecto, durante los siglos XVI y XVII, las viejas damas de sociedad se pasaban el día en esos balcones asomadas a la vida de los demás. Las galerías cerradas les permitían mirar sin ser descubiertas. Desde sus elegantes atalayas observaban a la gente que asistía a la misa de la catedral; comentaban los vestidos de los nobles que paseaban por la plaza Mayor; se fijaban en quién entraba y salía de los edificios del gobierno, y a quién llevaban del brazo. Las galerías también podían abrirse ligeramente si la señora estaba sola y necesitaba hacérselo saber al amante de turno. Hoy la gente ha cambiado poco. Pero los balcones se han vuelto más caros. Cultura culinaria del desastre. Lima es uno de los mejores sitios del mundo para comer. Los peruanos concentramos en la comida todo nuestro ego. La política siempre es un desastre y llevamos 25 años sin jugar un Mundial de fútbol. Necesitamos un lugar para exhibir toda esa pedantería nacional reprimida. Ese lugar es la mesa. Paradójicamente, la cocina peruana es un producto de las desgracias nacionales. Para empezar, la pobreza. Durante la colonia, los indios se veían obligados a improvisar algo de comer con las sobras de sus patrones. Eso produjo un arte culinario muy sofisticado: ni un solo plato de la cocina peruana incluye un filete de carne. De hecho, la esencia del plato a menudo es la salsa -que puede incluir pollo deshilachado, picante, queso y nuez, puesta sobre unas patatas cocidas.

A finales del siglo XIX, Perú decretó la abolición de la esclavitud. Los ricos hacendados de la costa aceptaron liberar a los negros con una condición: esclavizar a los chinos. Miles de culíes desembarcaron para trabajar en las haciendas del sur. Más adelante llegaron los italianos que huían de Benito Mussolini y los japoneses que escapaban de la posguerra. El resultado de todo eso está en la carta de cualquier restaurante: mondonguito a la italiana, cebiche (una especie de sashimi con boniato y picante), lomo saltado (fajitas de carne al wok con verduras y salsa de soja),... En vez de inmigrantes, hoy el país recibe turistas gastronómicos: chilenos y colombianos llegan un viernes por la noche, comen todo lo que pueden y regresan a su país el domingo. Noches de neón. Los turistas suelen vivir exiliados en Miraflores y Barranco. Los operadores turísticos les aconsejan que no pongan un pie fuera de esos barrios y les amenazan con las peores calamidades. Pero el barrio más caliente es Comas. Y no figura en el plano de ninguna agencia. Hace cincuenta años Comas era un cerro pelado. Hoy, el barrio es reconocible por las extravagantes pollerías con luces de neón. Y por los tres pisos de la discoteca Calle 8. Los “lunes de ambiente”, Calle 8 celebra su noche gay que en realidad es una noche plurisexual. Los anfitriones son drag queens de piel cobriza que circulan entre adolescentes a la caza de su primer beso y parejas de funcionarios en noche de farra. La avenida Túpac Amaru, donde está la discoteca, fue bautizada en honor al cacique inca rebelde descuartizado por los españoles en el siglo XVIII. Algunas drag queens van vestidas como él, pero en traje de luces. La otra gran disco se llama Kapital, y los sábados reúne a 3000 personas. En cada rincón hay escenarios con grupos de bailarines practicando una especie de break dance que recicla pasos de todos

los estilos, desde Michael Jackson hasta la cumbia. Los bailarines son una alegoría de lo que significa el barrio. En una sociedad con grandes abismos entre las clases sociales, Comas es el único lugar donde a nadie le importa de qué color eres, cuánto ganas ni con quien te acuestas. Comas es un barrio de inmigración andina. Quienes han vivido aquí durante medio siglo son el rostro moderno de los antiguos dueños del Valle Sagrado. Pero la fusión de culturas está presente en cada rincón de Perú. En Cuzco, la arquitectura criolla y los símbolos católicos se fusionan con las murallas de piedra del Imperio inca. Y la piel de casi cualquier peruano refleja la mezcla de razas y culturas que forja lo que el escritor José María Arguedas llamaba el país de “todas las sangres”. Pero Lima es el lugar donde todas están juntas y revueltas, casi una encima de otra. Solo después de bailar aquí y de recorrer la historia de la ciudad con los ojos y el paladar, estaremos preparados para el des-cubrimiento de este caleidoscópico país.

Chaotic, extreme, intense and voluptuous, Lima is the gateway to Peru, especially for those arriving by air. But the traveler’s interest in it seems to end there. The tour operators do not usually give too much attention to the capital or to anything from the country under five hundred years. In the European travel agencies, Machu Picchu monopolizes the appropriate box devoted to Peru. And those looking for more prefer to explorer the exotic Amazon jungle. Lima is simply a barrier, an uncomfortable procedure prior to true discovery. Nevertheless, all the cultures that make up this country of contrasts converge–or crash–in Lima. The capital houses millions of Andean immigrants and a Chine-

se quarter; thousand-year-old places of worship and the most impressive Spanish colonial architecture in South America; cafes buried in cliffs facing the sea and Creole-Japanese fusion restaurants… In a nutshell, a universe in which the past and the present shape a cultural and human landscape of unprecedented diversity. The five destinations that I propose below, trace the sources of that landscape. The complex puzzle that they piece together is made with materials that are scattered throughout the country. Leaving Lima and continuing the journey throughout the Peruvian territory, is dealing with the pieces separately, like someone enjoying the ingredients of an unexpectedly exotic and, without a doubt, spicy dish. Echoes of Africa. During the colonial period, most of the workers were Indian. Few black slaves were needed and those who arrived did not belong to the same ethnic group. People from Congo and Mandingo people, people from Mozambique and Carabaelie people, people from Angola and Yoruba people ended up in the Peruvian coast without sharing neither language nor culture. Under such conditions, they had to invent a common language with what they had, as primitive as that was. Until today, the main black percussion instruments are a box drum and a donkey’s jaw bone. The descendants of the slaves that grew cotton in the haciendas (estates) in the southern coast still live in the small village of Chincha, south of Lima. The blacks were so few that they were easy to keep an eye on. The parties in their huts had to be discreet so as not draw the attention of their owners. For that reason, Afro-Peruvian music is less noisy than Cuban or Brazilian music. Many of their dances are done with hands and feet close together, as if they still had the shackles on. But less noisy does not mean less flirtatious. In one of the most popular afro dances, the man tries to light a candle hanging from the girl’s behind. But he does it

quietly, stealthily, to not wake up the master. Catholicism. On November 13, 1655, an earthquake devastated the city. Most of the houses collapsed. But in the neighborhood of Pachacamilla, a fragile adobe wall remained intact amidst the rubble, without even a crack. On the surface of the wall there was an image of Christ crucified, a crude and imperfect portrait painted by a black slave. The population attributed divine powers to the image and called him Lord of the Miracles. Spontaneously, a popular worship that the authorities did not approve was started. Each time that the viceroy hired a worker to erase the image on the wall, something happened. Up to three workers abandoned the site, gripped by mysterious panic attacks. Today, the wall is carried out every October, in a procession of devotees dressed in purple, the official color of the Lord of the Miracles. The football team Alianza Lima uses that color for the blue stripes of their jersey. Throughout the month, the traditional turrones de Doña Pepa (a type of nougat candy) are sold and the bullfighting season takes place. And, above all, there is the possibility of asking for a small miracle. Gossiping architecture. The old part of Lima is populated with beautiful balconies that are almost as big as a room. Its complex Moorish motifs, with arabesque lace, are not matched in any other colonial city. Historically, the purpose of that unique design was to optimize the display of hypocrisy. During the 16th and 17th centuries, the old ladies of society spent the whole day in those balconies, nosing around other people’s lives. The enclosed galleries allowed them to look without being detected. From their elegant watchtowers they would watch the people that attended mass at the cathedral; talked about the clothes of the nobles that would walk by the plaza Mayor (Main plaza); noticed who would go in and

out of the government buildings and who they were accompanied by. The galleries could also be slightly opened if the lady was alone and needed to let the current lover know. Today, people have changed little, but the balconies have become more expensive. Culinary culture of disaster. Lima is one of the best places in the world to eat. As Peruvians we focus our entire ego in food. Politics is always a disaster and we have not played in the Soccer World Cup in 25 years. We need a place to show off all that repressed national pedantry; that place is the table. Paradoxically, Peruvian cuisine is a product of national disgraces; to begin with, poverty. During the colonial period, the Indians were forced to improvise something to eat with their masters’ leftovers. That produced a very sophisticated culinary art: not a single dish of Peruvian cuisine includes a meat fillet. In fact, the essence of the dish is usually the sauce –which can include shredded chicken, hot spices, cheese and nuts – served over boiled potatoes. At the end of the 19th century, Peru declared the abolition of slavery. The rich landowners from the coast accepted to liberate the blacks with one condition: enslave the Chinese. Thousands of coolies landed to work in the haciendas in the south. Later came the Italians that were fleeing from Benito Mussolini and the Japanese that were escaping from the post war. The result of all this can be found in the menu of any restaurant: mondonguito a la italiana, cebiche —a sort of sashimi with sweet potato and hot spices—, lomo saltado —stir fried beef fajitas and vegetables with soy sauce—… Today, instead of immigrants, the country hosts gastronomic tourists: Chileans and Colombians arrive on a Friday night, eat all they can and go back to their country on Sunday. Neon nights. Tourists tend to exile themselves in Miraflores and Barranco. The tour operators advise them to stay within those neighborhoods and threaten them

with the worst calamities. But the “hottest” neighborhood in town is Comas, and it is not included in the scope of any of the agencies. Fifty years ago, Comas was a bare hill. Today, the neighborhood is easily recognized by the flamboyant pollerías (rotisserie restaurants) with neon lights and by Calle 8, a three story-discotheque. On “gay Monday’s”, Calle 8 celebrates its gay night, which in reality is a pluri-sexual night. The hosts are copper skinned drag queens that move among the teenagers hunting for their first kiss and executives (in couples) out partying. Túpac Amaru Avenue, where the discotheque is located, was named after the rebellious Incan chief dismembered by the Spanish in the 18th century. Some of the drag queens are dressed like him, but with light suits. The other great disco is called Kapital, and on Saturdays it gathers 3000 people. Each corner has stages with groups of dancers practicing a sort of break dance that recycles dance moves from every style, ranging from Michael Jackson to cumbia. The dancers are an allegory of what the neighborhood represents. In a society with a deep rift between the social classes, Comas is the only place where no one cares what color you are, how much you earn or who you sleep with. Comas is a neighborhood of Andean immigration. Those who have lived here for half a century are the modern face of the old owners of the Sacred Valley. The fusion of cultures is present in every corner of Peru. In Cusco, the Creole architecture and the catholic symbols fuse together with the Incan stone walls. And the skin of almost every Peruvian reflects the mixture of races and cultures which forges what the writer Jose María Arguedas called the country of “all races”. But Lima is the place where they are all jumbled together almost one on top of the other. It is only after dancing here and traveling through the history of the city with the eyes and palate that we are ready to discover this kaleidoscopic country.

´ CAMINANDO DE VOLCAN ´ EN AREQUIPA EN VOLCAN Walking from volcano to volcano in Arequipa

En Arequipa, si hablas de trekking, una de las rutas más conocidas es la que se dirige hacia los volcanes. Es importante contar con un buen estado físico para ir desde la montaña de lava Hualca Hualca, hasta el volcán nevado Sabancaya –ambos a 6 mil metros de altura– donde se puede observar la zona del vuelo del cóndor entre mayo y noviembre. La ruta termina en Ampato, otro volcán nevado, que en quechua significa “sapo”, pues se dice que su aspecto se parece al del anfibio en cuestión. Aquí un grupo de expedicionarios encontró una momia congelada conocida como la Dama de Ampato o Dama de Hielo, popularmente conocida como la Momia Juanita. Cuenta la historia que esta mujer, en realidad era una púber doncella de 14 años que fue sacrificada. Esta es una aventura que no solo se trata de físico y deporte, sino de conocer siempre un poco más de la cultura e historia de estos lugares.

If you are visiting Arequipa and talking about trekking, the most popular route is the one that leads to the volcanoes. It’s important to be in good shape to go from Hualca lava mountain up to the snowy volcano named Sabancaya –both of six thousand metres of height –where you can see the flight of the condor zone since May to November. The route ends in Ampato, another snow-covered volcano, which in Quechua means “Toad”, because it is said that its appearance resembles this amphibian. Here a group of explorers found a frozen mummy known as the Lady of Ampato or the Ice Lady, popularly known as Juanita the Mummy. CENTRO HISTÓRICO El 18 de enero de 1535, Francisco Pizarro fundó, en lo que hoy es la Plaza Mayor, la capital del Perú. Detrás de ella está la Alameda Chabuca Granda donde es posible degustar tradicionales platos criollos y disfrutar de diversos espectáculos. Con una importante muestra de arquitectura colonial, el centro histórico es también conocido como “Damero de Pizarro”, por la distribución de sus calles como tablero de ajedrez. En 1998 la zona fue declarada Patrimonio Histórico de la Humanidad por la UNESCO.

HISTORIC DOWNTOWN On January 18, 1535, Francisco Pizarro founded the capital of Peru in what is today the Main Square. Behind it, there is the Alameda Chabuca Granda where you can find typical Creole dishes for you to taste and also different shows to enjoy. Possessing important samples of Colonial architecture, the historic downtown is also known as “Damero de Pizarro” (Pizarro’s Chessboard) because the streets are distributed like a chessboard. In 1991, the area was placed on the World Historical Heritage list by UNESCO.

The interior is austere, although it shelters real historic jewels like the finely carved wooden pews of the Pedro de Noguera choir, different side altars, and the remains of Francisco Pizarro. El frontis principal del templo fue labrado en piedra y se caracteriza por sus columnas de tipo corintio. En la fachada destaca una cornisa abierta con arcos en la que se aprecia la Inmaculada Concepción. La zona de los claustros, decorados con azulejos, alberga el Museo de Arte Virreinal. Además, se pueden visitar las catacumbas (galerías subterráneas) que sirvieron como cementerio durante la Colonia.

It includes the church, the convent, and the square. The church main front was carved in stone and is characterized by its Corinthian columns. In the facade, there is an open cornice with arches with an image of the Immaculate Conception. The cloistered area, decorated with tiles, houses the Vice-royal Art Museum. Additionally, the catacombs, which was a cemetery during the Colony, can be visited.

Fue residencia de Francisco Pizarro (1535), quien la construyó sobre el terreno que fuera ocupado por Taulichusco, curaca del valle del Rímac. Desde entonces, el lugar es el centro del poder político del Perú. En la década de 1920 fue reconstruido luego de un incendio. Posee numerosos patios y salones dedicados a personajes insignes de la historia peruana y cuidadosamente decorados con notables piezas de arte. Diariamente, a las 11.45 horas, el Patio de Honor es escenario del cambio de guardia a cargo del glorioso Batallón de los Húsares de Junín.

Inaugurado en 1808 por el Virrey Abascal, el autor de sus planos fue el conocido alarife español el presbítero Matías Maestro. Cuenta con más de 766 mausoleos de estilo neoclásico, en los que destacan estatuas y esculturas inspiradas en figuras de santos y las virtudes teologales.

It was the residence of Francisco Pizarro (1535), who built it on the land that used to be occupied by Taulichusco, chief of the Rimac Valley. Since then, the place has been the center of the political power in Peru. It burnt down and was rebuilt in the 1920’s. It features many patios and rooms dedicated to important people of Peruvian history and carefully decorated with notable art pieces. Every morning at 11:45 A.M., the Patio of Honor is the stage for the changing of the guard, soldiers of the prestigious Húsares de Junín Battalion.

This was the first cemetery in Lima, inaugurated in 1808 by Viceroy Abascal and designed up by the famous Spanish architect Presbyter Matías Maestro. Jr. De la Unión Nº 621. Tel: (511) 4278199. Visitas: L-D 8-12 / 16-20h. Complejo arquitectónico colonial del siglo XVI. La iglesia conserva la fachada de granito que data de 1687. El techo está finamente decorado con figuras de yeso. En el interior destaca el altar mayor neoclásico en el que predomina la imagen de la Virgen de la Merced y una talla de San Miguel Arcángel y la capilla de fray Pedro Urraca con la tosca cruz de madera que, de acuerdo a los relatos, utilizó para huir del demonio.

Iglesia de tres naves en la que destacan la cúpula y una bella sillería de coro tallada en cedro. En 1551 se fundó en el convento la Universidad Nacional Mayor de San Marcos, primera universidad que la corona española fundó en América.

The church maintains the granite facade that dates from 1687. The roof is finely decorated with plaster figures. The Neo-classical upper altar with the image of the Virgin of La Merced and a carven figure of Saint Michael the Archangel is the most important interior piece. The Pedro Urraca Chapel is also found inside as well as the coarse wooden cross that, according to the stories, he used to exorcise the devil.

Museo de la Nación

Antiguo balneario que a inicios del siglo XX reunía a la aristocracia limeña. Hoy es el principal barrio bohemio de la ciudad, con acogedoras casonas y rincones que ofrecen espectáculos musicales y culturales, así como discotecas, pubs y cafés.

Parque Municipal Ubicado a la altura de la cuadra 3 de la Av. Grau. Inaugurado el 3 de febrero de 1898. Se pueden apreciar estatuas de mármol de Carrara, como La Danaide, Venus o ninfa. En sus alrededores se ubican la Biblioteca y la Iglesia de la Santísima Cruz.

Más allá de las peculiaridades regionales, una característica común a casi todos los lugares de la sierra es el ritual de la yunza, conocida como umisha en la selva o cortamonte en la costa. Consiste en plantar artificialmente un árbol cargado de regalos, en torno al cual se baila hasta tumbarlo con los cortes de un machete o hacha. La pareja que da el corte con el que se derriba al árbol queda emparentada y a cargo de la organización de la yunza del siguiente año. Ideó trabajar con las bordadoras, involucrarse en el proceso de producción para llevar sus bordados tradicionales a otro nivel y ayudarlas a obtener un mayor ingreso con lo que sabían hacer. Se sintió muy conectada con ellas y pensó en cómo integrar este descubrimiento a todo lo que había aprendido antes, en sus años como exitosa diseñadora de modas en su país natal. Compró bordados y otras cosas que ellas usaban en sus vestidos, y los integró a piezas que había creado. Nacieron así los productos de Puro Corazón.

PURO CORAZÓN

La aventura de la diseñadora Carolina Restrepo Al tercer día decidieron que se iban a casar, así que Carolina lo dejó todo y vino por amor al Perú. Ella había estudiado diseño gráfico y modas en Colombia, su país de origen, pero nunca imaginó que su trabajo iba a dar un giro de 180° cuando descubriera las técnicas de bordado tradicionales en Ayacucho. Ahí, bajo el cielo azul de los Andes, Carolina decidió que se quedaría con los colores brillantes de las telas, con esa manera de bordar que hasta entonces solo se habían transmitido de generación en generación.

En Dédalo de Barranco.- Las primeras carteras que Carolina Restrepo diseñó y tejió en el Perú, las llevó a Dédalo de Barranco. Se trataban de piezas hechas a mano, con las mismas técnicas tradicionales de bordado que había visto en Ayacucho. María Elena Fernández, directora de la tienda y galería, recibió personalmente los productos. Para el mes, ya se habían agotado. Fue la misma María Elena quien animó a Carolina a seguir produciendo carteras y accesorios. En vista de la demanda, Carolina creó la marca Puro Corazón. Hoy, siete años después, ella admite que las posibilidades de bordado que ha ido explorando son infinitas. “Las técnicas que utilizan, la combinación de colores, la riqueza en esas combinaciones… Tienen mucha fuerza. Los bordados ayacuchanos realmente reflejan una explosión de color y una creatividad muy impresionante”, afirma Carolina.

Sigue creciendo.- Aunque el fuerte de la marca siguen siendo las carteras, Puro Corazón ha incursionado en accesorios como pulseras, objetos para la casa, cojines, chalinas, broches y más. Las piezas siguen siendo hechas a mano, confeccionadas con bordado tradicional. Puro Corazón trabaja entonces de manera directa con bordadoras de Ayacucho y de otras partes del Perú, dependiendo siempre de la técnica que estas manejen. “Utilizamos bordados en diferentes puntadas: hay bordado punto de cruz, bordado relleno, bordado crespo. También hay tejido: tejido en telar, de cintura, tejidos en tela normal, trenzado, tallado en madera para el cuero, de todo…”, detalla Carolina en su showroom y taller (Pág. 48) Allí muestra sus más recientes colecciones y recibe a toda persona interesada en conocer de cerca su trabajo. Además, mantiene en Dédalo Arte & Artesanía (Pág.45) una habitación entera con productos y está por inaugurar un pequeño espacio compartido en calle Conquistadores 535, San Isidro. Aún en estos tiempos, Carolina Restrepo se sorprende de haber descubierto el bordado tradicional en los Andes peruanos. Habiendo trabajado antes en una importante marca de diseño en Colombia, admite que nada de esto hubiera ocurrido si no se atrevía a abrir su corazón al mundo y a sus posibilidades. Por eso, Puro Corazón siempre.

On the third day they decided to get married, so Carolina left

everything and came out of love to Peru. She had studied graphic design and fashion in Colombia, her country of origin, but never

imagined that her work was going to make a 180 degree turn when

she discovered traditional embroidery techniques in Ayacucho. There, under the blue sky of the Andes, Carolina decided that she would

stay with the bright colors of fabrics, with that embroidery technique

that had been handed down from generation to generation.

She began to work with the embroiderers, got involved in the production process to take their traditional embroideries to another level, and help them to obtain a higher income for what they do. She felt very connected with them and thought about how to integrate this discovery to all what she had learned before, in her years as a successful fashion designer in her native country. She bought embroidery and other things that they used in their dresses,

and integrated them with pieces that she had created. Thus were born the products of Puro Corazón.

To satisfy demand, Carolina created Puro Corazón. Today, seven years later, she admits that the possibilities of embroidery that she has been exploring are endless. “The techniques they use, the combination of colors, the wealth of those combinations... They have great force. Ayacucho embroideries actually reflect an explosion of color and a very impressive creativity”, says Carolina.

In Dédalo, Barranco Carolina Restrepo took the first handbags she designed and wove in Peru to Dédalo, in Barranco. They were of handmade pieces using the same traditional techniques of embroidery she had seen in Ayacucho. María Elena Fernández, manager of the store and Gallery, personally received the products. By the end of the month they were sold out. It was the manager itself who encouraged Carolina to continue producing handbags and accessories.

Growing Although the keystone of the brand are the handbags, Puro Corazón has expanded its portfolio and dabbled into the production of accessories such as bracelets, household objects, cushions, scarves, brooches and more. All of them are still being made by hand, and with traditional embroidery. Puro Corazón works then directly with embroiderers of Ayacucho and other regions of Peru, always depending on the technique they handle.

In addition, she stills have a room full of her products in Dédalo Arte & Artesanía (Page 45) and is about to open a new space in Conquistadores 535, San Isidro. She is still amazed that in these days she had discovered these embroidery techniques from the Peruvian Andes. Having worked in an important fashion brand back in Colombia she accepts nothing of this would have been possible if she hasn’t opened her heart to the world and its infinite possibilities. That’s why Puro Corazón, which means Pure Heart, forever.

Después de tener una formación en artes plásticas y arquitectura fue finalmente la fotografía la que capturó mi atención, en ella encontré un lenguaje que no solo me apasionó sino que además me ayudó a darle una oportunidad a la ciudad de Lima para presentarse nuevamente. La fotografía aérea es una herramienta indispensable para entender nuestra ciudad desde otro punto de vista. Desde el cielo, encontramos patrones y texturas que pintan la ciudad, leemos el crecimiento urbano y el comportamiento social, apreciamos la real dimensión de la naturaleza que rodea la ciudad y lo pequeños que somos cuando nos comparamos a nuestra frontera más grande, el Océano Pacífico. Lima nace nuevamente desde las alturas y busca ser descubierta nuevamente. After receiving a degree in architecture and plastic arts, I became inspired by the art of photography. I found in it a passionate language that allowed me to depict the city of Lima from scratch; aerial photography is a critical tool in understanding our city from a different point of view. From the sky, we can see urban patterns and textures that describe the city, we can read how it grows, and its social behavior. We are able to appreciate the actual dimensions of the countryside surrounding the city, and we realize how small we are compared to the biggest of our natural borders: the Pacific Ocean. Lima is reawakening from above, willing to be rediscovered.

Viajar, pensar, recordar Perú quiere decir sentir mil olores colores, cocina exquisita, historia, piedras, plazas, callejuelas estrechas, gente, ríos de gente vendiéndote diversos productos, mil festejos y la música y la danza que adornan los mismos. Quiere decir montañas, playas, lagos, selva... Pero, este artículo habla sólo de unos habitantes de este país, de todos los tamaños, que son libres i que llenan de color y de música todos los rincones, que se mueven por los aires y descansan en las ramas y que su recuerdo está lleno de magia, porque te hace volar con ellos: LAS AVES. Perú tiene el mayor número de especies de aves: 1842 , más que Norteamérica y Europa juntos.

Los amantes de la naturaleza son los principales observadores de tan rico y diverso tesoro . Por ello, se han llegado a batir récords mundiales de que las aves de nuestro país hayan sido las más observadas en un día. Existen tres diferentes rutas de observación que cubren gran cantidad de zonas de vida que atraviesan todo el país y que su variedad depende de la zona donde habitan: Ruta Norte, Ruta Centro y Ruta Sur. La ruta de observación de aves del Centro del Perú constituye una alternativa interesante a las rutas del norte y sur que necesita menos tiempo para explorar. Los diversos tipos de aves que se pueden contemplar y escuchar su canto en

las diversas zonas de la ruta, tienen nombres que en su mayoría describen su anatomía, su brillo, su mimetismo con la vegetación o sus características físicas para poder conseguir alimento. Los pies irán caminando por diferentes lugares y los ojos les acompañarán con la mirada curiosa buscando quién deja ir la música que armoniza el paseo. Según el paisaje irán descubriendo los diferents “personajes” que se adaptan a los diversos ecosistemas: las selvas bajas, las altas, los bosques de neblinas, bosques húmedos, bosques tropicales, zonas secas , estepas de los altos, bosque enano o monte chico, zonas acuáticas como las riberas de rios, y lagos, praderas i de esta manera iran descu-

briendo a esos espectaculares músicos: Pampero picogrueso, piquero común, playero manchado, tijereta, tordo parásito, tortolita, violinista, canario peruano,amazilia costeña, brujillo, camanay, choqueco, chorlo semipalmado, cucarachero, gallinazo cabeza negra, cabeza roja, gallareta, cuculí, búhos, lechuzas, chotacabras y ayaymamas, pavas de monte, codornices pájaro carpintero, atrapamoscas, hormigueros, cucaracheros, diferentes tipos de perdices (chica, grande, negra, cinérea, rojiza), garzas, águilas, halcones, rascón negruzco, avefría andina, chorlo de collar, becasina andina, playero coleador, paloma de nuca blanca, paloma plomiza, paloma

Para facilitar el acercamiento a uno de los maravillosos atractivos del Perú, el año 2012 tuvo lugar el primer acontecimiento mundial de observación de aves, “Birding Rally Challenge”, donde los equipos de observadores competían por el número de especies observadas. El año 2013, se ha vuelto a disfrutar de la misma aventura.. Debido al éxito de este Birding Rally, el mes de noviembre de este año, se realizará el “Big Day” evento en el que cuatro especialistas peruanos pasarán por una ruta diseñada en el Parque Nacional Manu. Esperamos que los cantos y vuelos de todas las aves del Perú no nos pasen desapercibidos y nos permitan disfrutar de las cosas grandes y pequeñas que nos rodean. A VOLAR !!!

FLYING BY THE SKIES OF PERU

Travelling, thinking and remembering Peru means feeling thousand smells, colors, exquisite cuisine, history, stones, squares, narrow streets, people, rivers of people selling stuff, thousand celebrations and the music and dances all around. This means mountains, beaches, lakes, the jungleâ&#x20AC;Ś But this article only refers to some inhabitants of this country. Those inhabitants are free and of all sizes, full of color and music flying with magic, because they make you fly along. Peru has the largest number of bird species: 1 842, more than North America and Europe species summed up. Nature lovers enjoy so much of this national treasure that Peruvian bird watching in one day has beaten all records.

There are three different birding routes covering lots of areas of the country and whose variety depends on the region they live: North route, South route and Central route. The Central route is an interesting choice because it takes less time to explore. The birds variety you can see and hear singing in the different areas of the route are named mostly by their anatomy, brightness, mimicry with vegetation and physical characteristics to get food. According to the landscape and as you walk you will discover many different characters that live in different ecosystems such as low and high forests, foggy forests, rainforests, steppes, elfin forests, river and lake shores where you

will hear spectacular musicians such as: Thick-billed miners, Spotted sandpipers, Magnificent frigate birds, Shiny cowbirds, Saffron finches, Amazilia hummingbirds, Blackish oystercatcher, Blue-footed booby, Semipalmated plovers, Black vultures, Turkey vultures, American coots, West Peruvian doves, owls, Lesser Nighthawks, Duskylegged guans, quails, woodpeckers, herons, eagles, hawks, Plumbleous rails, Andean lapwings, Collared plovers, Andean snipes, parrots, parakeets, Dark-billed and Mangrove cuckoos, Bluish-fronted jacamar, Gilded barbets, Kingfishers, Rufous horneros, Gray-throated leaftossers, Montane foliage-gleaners, toucans, tanagers, Bare-necked umbrella birds and the Peruvian cock of the rocks, among so any others.

To facilitate the approach to this wonderful attraction of Peru, in 2012 was held the first world event of birding, the Birding Rally Challenge, where the observer teams competed for the number of species observed. This year the adventure comes back. This month of November will celebrate the Big Day, event in which four Peruvian specialists will pass through a route designed in Manu National Park. Llego a Maido una hora antes de que abra sus puertas. Todo vibra. Hay movimiento. Personas suben y bajan, cruzan el pasillo. Sin embargo, reina el silencio. ´ conocido como Micha, y ´ Pronto aparece Mitsuharu Tsumura, mas Es como si guardaran un secreto. No espero mucho hasta que me invitan a pasar al salon. ´ distraen. Deseo cerrar los ojos , respirar profundamente e empezamos a conversar. Agradezco estar grabando porque los olores que salen de la cocina me imaginar el origen de esos aromas. Entonces decido preguntarle sobre su vida. “Cuando era chico me despertaba los sábados ´por la mañana con el olor de los aderezos que venían de la cocina. Era la señora Maura que estaba´ preparando la comida de la semana. Entonces me levantaba y me iba a cocinar con ella. Ese es el primer recuerdo que tengo de querer cocinar.” A los 15 años decidió que sería chef y con la ayuda de sus padres pronto empezó la aventura que ha llevado a Maido al 1er lugar como mejor restaurante de cocina japonesa y 2do de cocina Nikkei por la guía Súmmum 2013, y el 11avo en el Latin America’s 50 Best Restaurant, también este año. Volvamos a la piedra angular: lo que pasaba en su casa cuando era niño. “Mi padre comía únicamente comida japonesa tradicional y el resto de la familia, criolla”. El patriarca hacía excepciones con el ceviche, los chicharrones y los saltados solo porque su esposa, la ma-

dre de Micha, los preparaba con algún ingrediente oriental. En aquel entonces, la cocina Nikkei no tenía nombre. Con la bendición y apoyo de sus padres, ´ un joven Micha emprendió la aventura de convertirse en cocinero. “Viajé a EEUU para estudiar en la Universidad Johnson & Wales y salí como bachiller en Artes Culinarias y Administración de Alimentos y Bebidas. Luego, viaje a Japón y trabajé en uno de los mejores restaurantes de sushi de Osaka por dos años. Fue una época de mucho aprendizaje sobre cocina y filosofía del trabajo. Pero quería volver, y en cuanto me ofrecieron un puesto acá, en el hotel Sheraton, acepté sin siquiera saber cuánto iba a ganar. Fue una gran oportunidad para profundizar en la comida criolla”. Con todo ese bagaje, Micha decidió hacer realidad su sueño: tener su restaurante. “Lo más difícil fue definir un concepto que sea fiel a mi esencia pero que

no confunda a la gente. Que satisfaga los gustos japoneses más tradicionales y también a paladares peruanos. Por eso decidí dividir la carta”. I arrived at Maido one hour before it opens its doors. Everything vibrates there. There is movement. People go up and down, across the hall. However, silence reigned all over the place, as if all of them keep a secret. After a short while waiting I was invited in. Pretty soon Mitsuharu Tsumura, better known as Micha, appeared and we began to talk. I was secretly thankful for being recording because the smells coming from the kitchen distracted me. All I wanted was to close my eyes, breathe deeply and imagine the origin of those scents. That’s when I decided asking about his life. ”When I was a kid I used to wake up Saturday mornings with the wonderful smells that came from the kitchen where our cook Maura was cooking and seasoning the food for the next week. I ran into the kitchen to cook with her. That’s my first memory about wanting to cook”. When he was 15 he decided to became a chef and with his parents support he began this adventure that has lead Maido to be the first and most recognized Japanese cuisine restaurant, and to the second position in Nikkei cuisine according to the Súmmun 2013 guide, along with the eleventh position in the Latin America’s 50 Best Restaurants ranking. Let’s get back to the key, what happens on his house when he was a kid. “My father only ate traditional Japanese food and the rest of the family all the variations of our Creole cuisine”. The patriarch of the family made some exceptions with the ceviche and the chicharrones only because his wife, Micha’s mother, cook them adding up an oriental ingredients. With his parents blessings and support a young Micha set out on the adventure of becoming a cook. “I went to the

United States to study at the Johnson & Wales University and majored in Culinary Arts and Culinary Arts and Food Service Management. Then I travelled to Japan and worked for two years at one of the best restaurants in Osaka. It was a time of much learning about cooking and philosophy of work. But I wanted to return, and as soon as they offered me a position here, at the Sheraton hotel, accepted without even knowing how much I was going to earn. It was a great opportunity to delve into the Creole cuisine.” With all that knowledge, Micha decided to make his dream come true: having his own restaurant. “The hardest thing was to define a concept still faithful to my essence and not confused to people. A concept that satisfies both: Japanese and Peruvian cuisines palates. So I decided to split the menu”. A fair decision that ensured the happiness of everyone and the success of Maido. From a simple sushi or sashimi, to more adventurous dishes that combine Peruvian ingredients using Japanese techniques and wiith ingenious constructions and great balance, Maido offers a unique and indispensable experience.
