Greetings, The IA State Fair is over, which means summer is just about over, which means sale season is about to start, and that means hitting the road again. We have lots of good sales booked already. The Iowa State Fair Camp Grounds will be the setting for the August 2014 food review. There was an invite that I couldn’t refuse. I was asked what I wanted to eat and I just replied right back (and just kidding, of course) Spam will be just fine (sarcasm, as Sheldon would say?). So spam is what they smoked for supper. They carved, cut, sliced, and spliced the spam into the shape of what appeared to be a sheep. They went to a lot of work to supply my smart response. I really don’t mind spam, Dixie ’s grandmother could make a 4 course meal with spam. They also smoked a beef brisket that turned out almost to perfection. It was juicy and seasoned perfectly. Next the stuffed green peppers. I’m really not sure where these people come up with the stuff they make at the State Fair, but I do know that they do one heck of a good job of it. Stuffed green peppers 10 years ago would have been a “no” for me but in my mature state I will try almost anything and these were deadly. The next dish, I had real reservations about. I have never eaten brussel sprouts. I don’t even know what a brussel sprout is for sure.

I’m not sure I want to either, but I was assured that I would like them because they would have bacon and onion. Maturity must be getting to me because I just dove in like I had a real desire to eat brussel sprouts. By golly, those darn things were pretty good. I do believe that I would try them again. Next the potato’s. These people tried to trick me, potatoes with cream cheese, sour cream, and garlic. I’m not a cream cheese fan and I sure ain’t a sour cream fan, but as bad as I hate to say it, these potatoes were awesome. Then we had green beans with onion and bacon that topped everything off. Next to the desert, pineapple upside down cake with a bunch of whip cream, it was definitely not low calorie stuff. Many thanks to Doug, Kari, Dylan, Sidney Spence and Ross and Sandy for a great time, great food, and adult beverages. Best food on the Fair Grounds! On to the second best food on the fair grounds; The Pork Chop on a stick. Or should we say a pork chop on a Rib. I had probably four of these during the fair "Greetings" continued on pg 78

A Little Bit About a Whole Lot of Things
Open Class Beef Award at the International Livestock Exposition in Chicago. There were over 300 steers in open show that year. Shorty sold for $16,650 in the sale after the show. Before the show Janice and her father sought out help from Bud McBride, Benalto, Alberta, Canada cattle fitter, who was working for the J.C. Penney Angus show herd at the time. Bud is a long time friend of mine. Many newspaper articles followed the show, along with an appearance by Janice with Shorty on the Ed Sullivan Show in New York City. Shorty traveled in a crate by turboprop plane from Chicago to New York City with McBride caring for him. Sullivan was unsure of Shorty, asking McBride if he would bite. Hullinger, who’s last name is now Norris, said when they were in New York, they stayed at the Waldorf Astoria and ate at the Stork Club. Norris said she wore jeans and her green 4-H jacket to the fancy restaurant. The statue of Hullinger and Shorty is located 13 miles east of the last exit (214) off Interstate 35 in far northern Iowa, in the town of Northwood at the gate to the Worth County Fairgrounds. The Consitution only gives people the right to pursue happiness. You have to catch it yourself. ~ Benjamin Franklin I have now personally sampled Schmacon, the beef based replacement for pork bacon. The test location was the Beef Quarters during the Iowa State Fair. Sides to go along with it were: scrambled eggs, a couple of pancakes, and orange juice. I have to say, this new product made both the eggs and pancakes taste better. This is not the only good review Schmancon has received because everyone seems to like it. In addition, get this: a 12 to 15 gram serving size has 30 calories, compared to 60 to 90 for bacon; 1.5 grams of fat, compared to 5.5 to 7 grams for bacon; and a sodium level of 170 milligrams, compared to 190 to 360 milligrams for bacon. I would expect sales will go right off the charts, just as soon as production and distribution can be expanded to meet demand. Schmacon recently received the 2014 Food and Beverage Innovations Award at the National Restaurant Association trade show. The meat distribution giant, Cisco is going to promote it and I see where Hy-Vee is planning to retail it. Schmacon comes from the same beef cut as bacon comes from pork, the belly slab. Schmacon increases the value of that cut from 30-50 cents to $1.49. Happiness often sneaks in throough a door you didn’t know you left open. ~ John Barrymore

Iowa State University President Steven Leath has put the spring campus celebration, Veishea to sleep permanently. Frankly, after following how it has gone in recent years, I can’t blame him. I wouldn’t want to have to call parents to tell them their student was badly injured, either. As to whether it was students who were the core of the problem or outsiders who caused the riots, I don’t know. Guess it doesn’t make much difference who’s at fault, these sort of injuries seem to be bound to happen when a young crowd gets together for no good reason. For my part, I have always had good thoughts about Veishea. When I was a Junior at Iowa State, I somehow got stuck with the job of being Chairman of my departmental club’s open house at Veishea. It was a lot of hard work. This lead to my getting elected as Vice President of this same departmental club. My main job as V. P. was to find and introduce the speaker at each of these club meetings. I have always regarded this as my best experience at Iowa State. We can’t solve problems by using the same kind of thinking we used when we created them. ~ Albert Einstein A life-sized statue of Janice Hullinger and her steer, Shorty, meant to display the possibilities of 4-H for eligible youth, was recently unveiled by the Worth County, Iowa Beautification Committee and the Worth County, Iowa Fair Board. Back in 1954, Janice was a 16 year old member of the Lincoln Junior Farmers 4-H Club when her steer won the Grand Champion Junior and the Grand Champion

This summer has been one with mild temperatures and good moisture, although much of July, at least in our area, there was no rain. During August, good rains have been gladly received in our area. Only a couple of days have the temperatures made it past 85 degrees, but nowhere near 100 degrees. I thought the mild weather would help attendance at the Iowa State Fair, but so far it apparently hasn’t. The first Saturday, it was hard to even walk out in the streets at the fair. Did you see the 25 foot tall “American Gothic” reproduction? It seemed to be a favorite spot to take pictures, not so much of the couple 25 foot tall, but the person holding the camera’s own family. Thanks to a couple of prominent local citizens for bring this massive piece of artwork to the Fair. It was very nicely done. Another thing I noticed at the State Fair was the 4-H dormitory was put back in working order this summer and being used by both boys and girls exhibiting or working at the fair. Improvements are of a practical nature. Years ago when I stayed there as a 4-H boy (60 years plus) showing my pigs and being on the county 4-H livestock judging team, it was strictly a boys dorm and the girls dorm was up on the hill, where the Cultural Center is now. Several years ago the upstairs dorm area was split by a concrete wall so one half could be used by boys and the other half by girls. I’m sure a number of 4-H youth can come to the Fair with the availability of dorm, who couldn’t afford to do so otherwise. For many of these youth these would be their first nights away from home on their own. I assume this was a project of the State Fair Board. Good idea, guys. ■

Junior Exhibitors will be starting a whole new year this fall with a new set of prospects. Getting those calves off to a quick and healthy start is the goal of any starter feed program. Outlined below are some starter feed tips for you to use and some management tips to help you get ready for the new show year.
STARTING PHASE Feed: PreCon™ Complete (¼” pellet size with CTSM) How long: 7 to 21 days (according to stress level of calves. Usually has to do with whether the calves are used to creep feeding, which determines how quick they might get on feed). Day 1: Long Stem Medium to Good Quality Grass Hay, 1% of Body Weight PreCon™ Complete and Fresh Water Day 2: 7 or 21: Calves may consume up to 3% of Body Weight. It is OK to keep good quality free-choice hay in front of the show calves Why PreCon™ Complete? The right diet influences rumen microbe activity for optimum digestion. It is a complete nutrition pellet, which means the grain and roughage mixed together in a large pellet which gives them proper nutrition in every bite and helps prevent sorting. The pellet is 50% grain/50% roughage. PreCon™ Complete is important because if you feed too much grain, it kills off microbes in the rumen for proper digestion. The size of the PreCon™ Complete pellet provides a “Scratch Factor.” This is critical because cattle are designed to eat grass. You want to make them “grain digesters” and change the rumen microbe population. The large pellet size meets the scratch factor and also allows you to get more energy into your calves with every bite.

With calves no longer at their sides and the next calf only utilizing limited resources in the second trimester, cows can more easily utilize nutrients to move back to an ideal body condition score (BCS) of 5.5 to 6. To regain this condition, though, cows must be fed properly. Freeze Branding Cattle by Evan Rayl
In almost every state west of Iowa, branding is an annual ritual that takes place on virtually every ranch in the spring just before the bulls are put out to pasture. Cowboys rope the calves by their hind legs and drag them close to the fire where the brands are being heated and the calves branded. In Iowa, just 4000 brands are registered and worse yet, most are not used, resulting in a haven for cattle thieves. In the recent past, a farmer was arrested in Southern Iowa, who admitted to many thefts in the area spread over a period of ten years. If you protect your cattle by freeze branding, you greatly reduce the chances of being a victim. Thieves will automaticly look for an easier mark. Since July 1, 1995, freeze brands have been a legal brand in Iowa. The lady who took over leadership of our local 4-H club and I worked together to get this law in place while she was later in the Iowa legislature. Not only are these brands proof of ownership in a court of law, but livestock auctions and other cattle buyers will check ownership carefully if freeze branded cattle are presented to them for sale. Also, if your cattle get out, everyone in the neighborhood will know exactly where they belong. My neighbors all know who to call if they see a cow with a freeze brand out. In addition, if you also put number brands on your cattle, each animal is easily identified for production testing purposes. I only replace lost ear tags when cattle go through the chute for routine veterinary work. The big advantage of freeze branding is the brand is readable year round on black or red cattle. Good brands are easily seen from quite a distance and readable from over 50 feet. Cattlemen with white cattle have no choice but to hot brand because freeze branding kills the pigment in the hair, turning it white. I dislike hot brands a lot because I can’t stand the smell and hate the pain to the cattle, not to mention the hide is discounted at slaughter. The only disadvantage to freeze branding is the amount of time it takes. Try as we may, it takes at least twelve minutes for two of us to place my brand and four numbers on each animal. But at the same time, to hurry too much is a big mistake, since the brands will most certainly turn out bad. On the other hand, we placed over 1,000 brands and numbers (200 head) last year and they all are very readable, but we follow the procedure below as closely as possible. Fifty head in a long day is the most we’ve ever done. If you have a registered brand, all you need is freeze branding equipment and materials. If you do not, the place to start is by getting your own registered brand. unique brand for approval. The fee for first time registration is $25 and renewals are $25. Each is good for five years. Once you have registered a brand, the next step is to get an iron with your brand and also a set of number brands if you wish to individually identify your cattle. Excellent brands for freeze branding are manufactured by L & H Mfg., Mandan, ND. They are made of copper alloy and come in various sizes. I like 4 inch best. A set of numbers and a brand will cost around $250-350 depending on the size selected. At first you’ll think you are short one brand, but the six is used up side down as the nine. My personal brand was made at a local machine ship from cold rolled steel. It works just as well, but I want to change it from a five inch to four inch size, so it will be easier to hold on the hide. Equipment Needed 1. A good head gate and squeeze chute is a must to hold the animal as still as possible while the brand is being applied. If possible, move the bottom of the squeeze in to keep cattle from going down and better yet, mount a beast pipe in the center forward portion of the chute floor. It needs to be 17 inches high and at least 24 inches long. 2. A brand and/or set of number brands as needed. I have 9/16th inch X 4 inch number brands and part of a set of letter brands the same size. I believe they would be the most popular size for most situations. 3. At least one animal hair clipper with sheep head blades. 4. At least one animal hair clippers with the thin surgical blade (EA1-sur) made by the Stewart/Oster Co. Used with the regular top blade (83AU), it will clip real close. You should have a second clipper of each type on hand, in case of a break down. It is best to have several sets of each type of blades on hand or more if doing a large group. The better you clean the brand area, the fewer blades that will be needed. 5. Container large enough to set all the brands on the bottom at one time for cooling. A 96 can cooler made by Coleman will hold all the number brands. It costs just under $40.00 at Wal-Mart. We have a wooden lid on the container with rectangular openings to slip the brands down into the ice and alcohol with each opening identified with the same number as the brand. Also secure a smaller plastic cooler for it if you have a personal brand. 6. Container for storing dry ice. The number of cattle you will be freeze branding and distance to where you can buy dry ice are factors as to the size of container one should buy. I just bought the largest cooler I could buy. It will hold 137 pop cans. We have sometimes done over 200 head in more than one loccation. 7. Mister bottles. The best bottles are the ones costing about $2-3, normally used for misting flowers and sold by garden supply shores. Again, its best to have at least two on hand, because they wear out

sake of efficiency. Safety is very important, never let an iron, alcohol, or dry ice touch your skin for any length of time (it is 110 degrees below zero). Always wear good gloves while branding. Also, do not smoke because the alcohol is very flammable. Do not use a cattle prod or smoke in the work area. I also do not recommend using gasoline with the dry ice for a coolant. It is much more flammable than alcohol. One gallon of evaporated gasoline has the explosive power of 83 pounds of dynamite. I continue to hear of more people using gasoline because it is so much cheaper than alcohol. 99% alcohol is now $20 a gallon and is harder to obtain, but do not take the risk. I also do not recommend antifreeze because it will be too syrupy to work well. Plus, I also do not recommend using liquid nitrogen as a coolant because it is 373 degrees below zero and will kill the hair under the brand and leave a gray line around the edge of the brand. The gray line makes the brand a lot harder to read. Some have indicated that one can get a white brand if the brand is held on just the right length of time while using liquid nitrogen, but some brands do not turn out very good. It is even more dangerous to work with liquid nitrogen. I continually mention the possibility of having brands that do not turn out well. Nothing can be worse because one has to rebrand the animal or one can end up with a brand that can not be read very well, thus, defeating the purpose of what you are trying to do. Keep in mind, if the animal is still growing, the second brand will be smaller than the first one. So you will need to re-brand as soon as possible after the first time. The best way to get very readable brands is simply to take the time to do it correctly. Rushing or taking short cuts is the reason for most all failures. If one will brand all their heifers each year, in a few years, the whole herd will be branded. If you have a suggestion to improve freeze branding, please give me a call. Not only will it deter thieves, but you will appreciate the convenience of permanent, easy to read identification. Incidentally, both hot and cold brands are now accepted as replacements for tattoos on Registered Angus Cattle. ■

From the Tailgate, As we start to send our kids back to school and prepare for the fall harvest; whether it be that great calf crop or corn and beans, lets all be safe with our work. In last month’s article I brought up the topic of hard work and never giving up. Well, at the 2014 Iowa State Fair Open Angus Show the Grand Champion Bull was shown and bred by Mike & Jamie Wells of Wishing Well Angus, Columbus Jct. IA. This couple is the best example I can find and am proud to say fits that example of dedication, hard work and the never give up attitude. When Mike was getting his picture

taken with the champion bull, he said to me, ‘’not bad for a boy who never, ever, got better than 3rd with his 4-H cattle.’’ So, a big congrats to Mike & Jamie for making it to the top at the Iowa State Fair Angus Show! I am looking forward to this fall as we get into helping at the production sales and online sales. The prospect of finding the next great bull, heifer, steer or whatever livestock you love to work with, I do believe that the hunt can be as rewarding as the find. My friend, Jennifer Carrico, had a great post on Facebook the last day of the Iowa State Fair that summed it up quite nicely! She posted, “Pork chop on a stick, mini doughnuts, turkey tenderloin, strawberry shake, Stockman’s tenderloin, great friends, happy kids, friendly family, kids laughing, dirty laundry, purple ribbons, Cyclone tattoos, sky glider rides, Thank a Farmer show, Percheron horses, the Crazy Mouse and much much more. We love the Iowa State Fair. It’s hard to believe it’s over for another year. How many days until the 2015 Iowa State Fair?” I would only have a few additions to her list; Roast Beef Sundae, Rib Shack Mac ‘n’ Cheese and the Butter Cow! Our youth involved with livestock are just impressive in more ways than doing well in the ring. For example, the two young ladies that won the FFA Market Hog Show, Erin Schmidt - Van Horne, Iowa and Lexi Delaney - DeWitt, Iowa, seem to have it all together from school to handling difficult agricultural related topics in the public. I also truly appreciate their kindness and willingness to take the time with my kiddos. We (okay, Matt) actually took a York boar and gilt to sell at the Iowa State Fair. It was a learning experience for all of us! First, the kids learned we do indeed have to sell some of the pigs we work with, but it lessened the sting quite a little when they got to drive the gilt in the sale ring! Second, their mom does NOT take letting go of our pigs very well, either! Lastly, I’m pretty sure Matt is questioning why the heck he introduced us to hogs in the first place! The emotional attachment made with all of our projects is a blessing not all kids/parents get to experience. So, like Tucker and I discussed, isn’t it better to get to experience that kind of love for an animal and the hurt of letting go, rather than avoid it all together? I can’t imagine not being a part of, in my opinion, one of the best industries out there providing food for people all over the world! Tuck and Tay got to take Frankie on a walk and feed him marshmallows from their mouths!!! They fell in love with the barrow and with Lexi even more!! The kids got a good lesson in “market” hogs, too. A big congrats to Lexi on having the record high selling of all species at the Sale of Champions, $50,000! I have to say Frankie left quite the impression on the kids and myself.
The last night of the fair we went through our normal routine of showers and then a prayer before bed. Taylor had been very quiet and finally with her lip quivering asked, “Momma, do you think God could give Frankie marshmallows for Lexi?” She was trying so hard to be tough and not cry again. Well, this mom did cry for the lessons learned and because I’m so proud of ALL of our youth in 4-H and FFA and their projects! Please hold our nation and military in your prayers!
