50 years and growing strong By Ann M. EÀmetz Where were you 50 years ago? The answer to that question will vary, depending on your age and geographical location. But that’s when the Original Williamsburg Magazine had its genesis, published by the Virginia Gazette, under the name, “The Public Observer.” The magazine has undergone many changes and has adapted to the ever-expanding Williamsburg population. It was eventually renamed, “The Williamsburg Magazine,” and has become one of the more recognizable publications available on newsstands, in hotels and area businesses.
One change that has given the magazine a new following with locals was when, in 2007, it was inserted into home delivery copies of the Virginia Gazette. In October, the magazine will celebrate 50 years with a special issue geared toward its golden anniversary. There will be a look back and a look forward, with fun and informative articles about life in Williamsburg then and now. Colonial Williamsburg has unveiled a new program showcasing the foundation’s chefs and giving visitors a chance to sample some savory recipes in a fun way. Recently, Colonial Williamsburg Executive Chef Rhys Lewis regaled participants of Taste Studio with his culinary anecdotes and delicious recipes. The studio is located in the former Craft House between the Williamsburg Inn and Lodge. The space has been entirely renovated and is home to the program which showcases the chefs of Colonial Williamsburg through lively cooking demonstrations. Sessions are held on Friday and Saturday and incorporate the use of fresh fruits and vegetables, many of which are grown in the Historic Area gardens. The plan for the program is to continue to diversity, eventually incorporating other hands-on type learning experiences. The premise is for the chefs to give participants an up close look at how to create some spectacular dishes using common ingredients. Prior to the sessions, the chefs take participants to the gardens tended by the chefs for an up close look at the burgeoning vegetables and herbs. “The things we grow here are from seed,” Lewis said. ”We grow things like Swiss chard and kale. The question is how do you make these things something special?’ A recent program paid homage to the carrot, as Lewis presented three recipes using the popular vegetable. Once back
in the kitchen, the amiable and humorous Lewis prepared CarrotAlmond Soup, Kings Arms Garden Carrot Potato Pancakes and Carrot-Cardamom Ice Cream. The chefs take the participants through the steps to take to create the dishes. Then everyone is given a small portion to taste for themselves. The big hit of the carrot program was the soup, which Lewis admitted was the first time he created it. The consensus was he had a winner. The same comments were heard regarding the chef’s carrotpotato pancakes and the different tasting carrot ice cream. The repartee was lively throughout and questions ranged from the types of pan Lewis was using to the timing of adding ingredients. Future programs will incorporate the use of various fruits and
vegetables, all readily available at stores or in gardens. “We look at things that are known to us, but we are taking a different look at it,” Lewis said. Want to go? A gem of a location By Ann M. EÀmetz On any given day you may find master goldsmith Hank Viccellio sitting on a bench outside his shop at Riverwalk in Yorktown, sketching an idea he has for an original piece of jewelry. Since 2005, Viccellio has been creating distinctive pieces at the location overlooking the York River. The picturesque shop in Yorktown is the apex of more than 40 years of jewelry making in a location that he said provides him with daily inspiration. “This location makes a big difference,” Viccellio said in a recent interview. ”It is the first time that I have windows that look out on something besides downtown streets. I get to sit outside the shop with a sketch pad and then come inside to the jewelry bench and make what I just drew.” He lives only a mile from the store and takes his scooter to the shop each day to see a different perspective on the ever-changing river scape out two of the shops windows. A new location for New Concept Sports & Gifts By Ann M. EÀmetz New Concept Sports & Gifts, owned by Henry and Joanne Wan, spent 13 years at the Williamsburg Outlet Mall. When the mall closed at the end of last year, the Wans decided to relocate to the growing retail community at Settlers Market. That move has proved beneficial for the store that specializes in sports team collectibles and apparel. The new location, which opened in April, has given the Wans more space to showcase their products. Clients who frequented the former store have found them again, and new customers come in daily. “Some people thought we had gone out of business,” Joanne Wan said recently. “But they have found us and are very happy. They love the new store.” The new digs are about the same square footage of the former store, but has higher ceilings, allowing the Wans to hang more and create a different, fun feel. There is an even wider selection of team jerseys, hats and gift items of NCAA, MLB, NFL, Collegiate and NASCAR. The store still carries a variety of Williamsburg souvenirs and a variety of military hats. Wan said customers from the college and nearby timeshares now frequent the store. Loyal customers of the former store who hail from Richmond, Washington and Norfolk still make the trip to peruse the expanded inventory. 1 cup Carrot, peeled & finely shredded 1 cup Yukon Gold Potatoes, washed & finely shredded 1 Small Onion, peeled & finely shredded 2 Eggs 1/4 cup Clarified Butter or Olive Oil Kosher Salt and Fresh Black Pepper to season
1 cup sour cream 2 tbsp. fresh Basil, stemmed & chopped 1 tbsp. Fresh Rosemary, stemmed & chopped ½ Lemon, squeezed for juice Kosher Salt and Fresh Black Pepper to season
Carrot Potato Pancake Directions Combine the shredded Carrots and Potatoes in a mixing bowl and season with Kosher salt and allow to sit for 3-4 minutes. Take a small amount of the Carrot Potato mixture in your hands and squeeze out the moisture, and place in a separate bowl. Add the shredded onion and the eggs and black pepper and mix to incorporate the ingredients.
Herbed Sour Cream Directions Combine the Sour Cream, Basil, Rosemary, Lemon Juice, and season with Kosher Salt, blend and reserve chilled. These pets, along with elderly or overweight dogs and those with heart or lung disease, should be kept cool in air-conditioned rooms as much as possible. Rinse well-- Dogs who swim in pools or rivers should be rinsed to get off dangerous chemicals. Water only-- Don’t give sports drinks or electrolyte supplements to pets.
Makes 5 cups
Ingredients 3 cups(16oz) Carrot, Peeled shredded 3 Tbsp. Butter- Un Salted 4 cups Whole Milk ¾ cup Sugar 3 tsps. Cardamom ground
4 Egg Yolks 2 ½ cups Heavy Cream 1 tsp Vanilla ¼ cup Pistachios –chopped fine
Directions Melt the butter in a small heavy bottom sauce pot and add the shredded carrot, cook over low heat until the carrot begins to soften. Add 2 cups of the Milk to the carrots and bring to a very low simmer until the carrot is tender and much of the milk is absorbed, and reserve. In a separate heavy bottom sauce pot, combine the 2 cups remaining Milk, Sugar, Cardamom and the Vanilla, bring to a simmer. Place the egg yolks in a Stainless Steel Bowl and add a portion of the hot milk mixture to the yolks while whisking. Continue to add the hot milk to the yolks and then pour the mixture into the sauce pot and place it over a low flambé, while whisking continuously. Bring the mixture up to 170 degrees and remove it from the heat. Add the cooked carrots, the 2 ½ cups heavy cream to the yolk mixture and chill in an ice bath while stirring. Place the chilled liquid into a blender and puree until smooth. Pour the mixture into an Ice Cream machine and turn it until frozen. Reserve the ice cream frozen until service. Scoop into the desired dish serving dish and dust with the chopped pistachios.

Frieda Charron realized her talent was hair styling when she a youngster. In high school, she quickly became the “go-to girl” for hair. After 45 years in the business, she still is. Posh Salon in Monticello Marketplace opened in June 2009. Since, it has gained a loyal clientele of regular customers. “Some people can’t do their own hair, which is good for us,” Charron laughed, mentioning that 36
WILLIAMSBURG MAGAZINE / AUGUST 2014
some clients come in three times a week. Customers can be assured that the staff won’t overbook to ensure appointments remain on time. But if a regular has a hair issue, there is a special effort to fit them in last minute if necessary. “The best part about owning a salon is that you’re in charge,” Charron said. “You can direct the shop in what direction you want it to go.” She describes her business as a family salon and sees clients of all ages, with whom she enjoys developing relationships. “You’ve got to know who you’re
women in business working on,” she said. “I cut your hair. I’m cutting your personality.” Charron said the hardest aspect of owning a salon is maintaining an excellent team of stylists who work toward the same goal. Her stylists complement each other, communicate regularly and overcome any challenges together. They even have staff celebrations monthly. Charron has been a Williamsburg resident since 2001, and she speaks fondly of the locals. “Hairdressers live their life through the people that sit in their chairs,” she said. “You hear all these stories. If you know a hairdresser and you have a problem, I bet that hairdresser could answer it.” Before opening Posh, Charron had owned Frieda Michael, which was located at Five Forks. However, she was aware of the property at Monticello Marketplace and when it became available several years ago, she thought it was ideal fit for a salon.
“Be careful what you wish for,” Charron said. “I can’t tell you how many times I came in here and said ‘What a great place for a hair salon,’ so when I saw it for sale one day, I thought I was going to have a heart attack.” After considering quirky names ranging from Snobs to The Hairpin, she found Posh most suitable. That decision has proved auspicious. A new chapter has opened in Charron’s life and soon she will be moving out of state. However, the business will continue under the ownership of Nadia Duncan, one of the salon’s current stylists. “The staff here is well-trained,” she said, adding she is confident about the future of the salon. “They are constantly going to hair cutting classes and continuing their education.”

This month the series will feature music from the U.S. Air Force and U.S. Army ensembles that have become local favorites. Here is a lineup of what’s in store for August. Summer lasts through August at Colonial Williamsburg New performances have been added to the Charlton Stage on Duke of Gloucester Street through Aug. 30. The performances will be held at 6:30 p.m. Two of the performances feature Mr. Hallam’s Traveling Players, an ensemble of professional actors from around the country. “Scapin” is a famous 18th-century French play by Molière. “Sword Play” is a daring spectacle of blades and fisticuffs featuring 18th-century weapons. Additional evening performances on the Charlton Stage include: “Great American Sing-along.” Before radio, TV and video games, Americans entertained themselves by gathering to sing popular songs. Guests learn the stories behind some traditional favorites and sing along with the chorus. “Dance to the Drummer’s Beat.” Guests explore the diverse nature of African-American musical culture in colonial Virginia as they help keep the rhythms, sing the song and dance the dances adapted from West Africa. “The Art of Fifing and Drumming.” The Colonial Williamsburg Fifes and Drums present the life of the military musician during the American Revolution. “Legends and Tales of the 18th Century.” Colonial Williamsburg storytellers weave fascinating narratives from more than 200 years ago. Tickets for Charlton Stage evening programs are $19 and must be purchased in advance. Annual Pass holders have a 25 percent discount. Other Colonial Williamsburg ticket holders receive a 10 percent discount. Guests of the Williamsburg Inn, the Williamsburg Lodge, Providence Hall Guesthouses and the Colonial Houses enjoy free admission to the performances. Trendy and timeless By Sally Grace Holtgrieve The Spice and Tea Exchange on Prince George Street is trendy while offering timeless products. The Williamsburg franchise, owned by Alan and Laura Sullivan, opened in April 2012 and offers salts, herbs, powders, grinders, rice, infused sugars and oils along with a variety of spices and teas. The Sullivan’s said their spices are fresher and less expensive than what customers may typically find at grocery stores. They have created their own spice blend, Berbere, approved by the The Spice and Tea Exchange

headquarters, and available in shops across the country. Another original creation is their habanero lemonade. Fruit peels are used in spices and the Sullivans don’t waste the fruit. The concoction is made by adding a tablespoon of habanero infused sugar to each pitcher, which customers can sample in the shop. Salts offered at the store have an accent on cooking, with unique flavors, including bacon smoked sea salt, black lava sea salt flakes for soup and chocolate sea salt that Aromas, their neighbor on Prince George Street, sprinkles on their cookies. Tea is the store’s best seller. The loose leaves are arranged by black, green and herbal with various special edition blends during specific times of year including pumpkin caramel and hazelnut cookie. Last year the Sullivans sold 1,100 pounds of tea. The most popular? Blueberry black tea. One of the aspects Laura Sullivan likes best is inviting customers to sniff the aromatic blends. “We try to be very customer service oriented,” Laura Sullivan said. “We will customize anything. People will come in and tell us what they’re looking for and we’ll put it together for them.” The Sullivans are from Arizona, and have both have a background in education. While vacationing in Charleston, S.C. they discovered The Spice and Tea Exchange. “We bought all kinds of stuff and loved it,” said Laura. “We started ordering from the
company and giving it as gifts.” When they decided it was time to retire, they put in an inquiry about opening their own franchise. “We spent a year researching, visiting stores around the country and talking to owners, then picked a location,” said Alan. “Williamsburg won out hands down for a variety of reasons. It stood out as a comfortable, friendly place.” The couple agrees the best part of the job is the people they get to meet every day. “No one comes into the store in a bad mood,” Laura Sullivan said. “Either they’re looking for something because they want to cook it and they’re excited about that, or they’re on vacation and they’re already in a good mood. You meet the neatest people.” The majority of those who shop at the store are visitors, but there’s also a solid base of locals. “We are now getting return tourists,” Alan said. “They’ll come in and say ‘We were here two years ago, and we know exactly what we want.’”

Karen Spivey-Sladek uses the word “treasures” when referring to the items for sale in Elegantly Eclectic. In only the first two weeks, the Norge consignment store saw approximately 100 people sign up to sell home goods and 500 who came in to shop. Spivey-Sladek spent eight months looking at properties for sale. “When I walked into this one it took my breath away,” she said. “I could just picture how it was going to look.” Though she began hunting for items at estate sales 18 months before the grand opening, Spivey-Sladek had imagined running her own store for more than 15 years. Before her mother passed away, she promised her she would open a shop by age 51. She was true to the promise. The store opened on May 20—Spivey-Sladek’s 51st birthday.

different tastes look good together,” she said. “So you add something like a piece of material, and suddenly it blends.” The average customers are middle age, but she sees a growing clientele of younger and older shoppers. “I like to see older women pick up a piece, and know the piece,” Spivey-Sladek said. “You see they’re remembering something about their childhood. One woman picked up a gas lamp and explained she’d had them throughout her house as a little girl.” People selling items are also asked to write a notecard about the history of the treasure to be given to the future purchaser. “Every piece has a history, and that’s what I like,” Spivey-Sladek said. Some days she is at the store by 6:30 a.m. because she can’t wait to start the day. “I’m focused, I know what I want, and I work until I get it,” Spivey-Sladek said, crediting her father for her character. “I think everyone should have what they want. Maybe not everything, but something.”

The Toano native credits her “old soul” and love of items with a history to her parents. “My dad was always fixing things,” she said. “My mom would get mad and ask him why he didn’t just go buy something new. But then she would see the piece and become so excited she’d be speechless, and he’d smile and say, ‘That’s why.’” The store primarily features accent pieces. She gives old chairs new paint jobs, turns trunks into coffee tables, and will put an old lock on a new chest for a unique look. “I like anything you can reuse and put a new spin on,” Spivey-Sladek said. “I don’t like to see anything thrown away.” Spivey-Sladek’s talent for interior design comes from years of cutting pictures out of magazines. She keeps a stack of them behind the counter to look through every day. Each time a treasure sells, she must rearrange the other items, but keeping things looking fresh is her favorite aspect. “Items that came from ten different people means I’m trying to make ten

Add the ginger, garlic, thyme and the Bay leaf and sauté another 2 to 3 minutes. Add the vegetable or chicken stock and bring to a simmer and cook until the carrots are tender. It is something he has dreamed about doing his entire life. “When I was a kid of about seven, I used to think, ‘Wouldn’t it be great to make tiny things that people would admire?’ I vividly remember having that thought,” he said. “A big part of the pleasure of what I do is when people admire what I have done.” The admiration has grown, and some of his pieces have become extremely popular, including the Yorktown Bracelet he has created from gold and silver. The popularity of the item has paved the way for expansion into necklaces, earrings and pendants. He recently trademarked the name. “It has taken on a life of its own,” Viccellio said. “When I decided to make a Yorktown Bracelet, I took a pretty design and then I give it a meaning. I just made a pretty piece of jewelry and assigned a value to it, so now it is the Yorktown Bracelet.” Viccellio said his business is the ideal blend of his skills and personality. He derives great satisfaction from all facets of his job. “I think I am basically half introvert and extrovert,” he said. “I get to spend hours by myself creating the jewelry, and then I get to interact with the customers, it is really a nice combination.”

Michelle Swain-Clauberg By Ann M. EÀmetz Title: School Director at King of Glory Preschool. How long have you been at your job? 18 months, and have worked at King of Glory for seven years. How many children are enrolled at the school? 150 children enrolled two year olds-through Kindergarten. What do your daily duties entail? Every day is a little different than the last. Some days it’s developing curriculum, schedules for playground time, e-mails, and making copies. But consistently every day I interact with teachers and families. These interactions create a loving, quality Christian education for children. What do you like most about what you do? I enjoy the partnership that we have with families. Research shows us that parents hold the most influence in a child’s life. At King of Glory we walk with families, in their journey with their child. We support, empower, and equip them to help their child grow, spiritually, cognitively, and emotionally.
What do you think influences education most? I think parents have a great deal of influence, when they take advantage of the avenues put in to place to have influence. As children grown into public school settings there are so many opportunities for parents to both be involved and to help influence their child’s education, starting with communication between school and home. Parents be involved! Be the influence, it starts one child at a time. What is different about education now than 20 years ago? There are many differences, some very positive while others can be pretty scary. Twenty years ago few schools had high tech security, now almost all do, including ours. On the positive side, technology is being used to help children create, to help them understand their world in meaningful ways and to prepare them for the future. What do you think is the most surprising thing children can teach us? Children can teach us so much. The most amazing thing is to be present—in the moment. Children operate right now, not yesterday, not tomorrow, but this very moment. If we can as adults all children to, they can teach us how to be in the now.

Any new programs, initiatives planned? We are continuing to offer a full day program for 3 and 4 year olds, implemented last year. New this year is a two-day program for two year olds. In October we are going to be holding a parent workshop as well as a full day educators workshop on Conscious Discipline. Starting in September the school, along with King of Glory Lutheran Church, will be embarking on “The Story,” to teach us all more about God’s story, learning The Bible through 31 weekly chapters.

The summer season of theater has closed and a new, exciting lineup of shows is expected for 2014-15. There are local venues and those that are only a short drive away that can provide audiences with solid theatrical entertainment. The Williamsburg Players new season will open with the long-running Broadway smash
musical, “Cats,” opening Sept. 11 and running through Sept. 27. Performances for all shows are Thursday-Saturday at the James-York Playhouse. Evening performances are at 8 p.m., Saturday matinees are at 2 p.m. The rest of the season features “Mousetrap,” Nov. 6-22; “Run for Your Wife,” Jan. 15-31; “39 Steps,” March 12-28 and “Guys and Dolls,” May 28June 13.
