February is the shortest month of the year. Sometimes, the month can bring us the coldest temperatures and even some snow. But take heart! Next month is the official beginning of spring. Things are looking up. This month we celebrate St. Valentine’s Day. It is a day to tell those who are in your life that you love them. It’s not just for couples. You can tell those around you who mean the world to you that you are glad they are in your life. That can be children, family members and friends. Williamsburg has a variety of great places to shop for a special gift, restaurants to help celebrate the special day and services that can make great pick-me-ups for those you love. This month the Williamsburg Magazine begins a couple of new features. Head of the Class will be an ongoing series that highlights those in area education. The series could focus on administration, staff or even students. I am open for suggestions at aefimetz@vagazette.com. Gwen Martin, Head of School at Williamsburg Christian Academy is our first interview. Another feature, Women in Healthcare gets underway this month. Marcel Desaulniers, Mad About Chocolate

If scholarship money had been available for Marcel Desaulniers to go to mortuary science school, the culinary world would have been considerably less sweet. Desaulniers, who with his wife Connie Desaulniers, owns Mad About Chocolate on Armistead Avenue, originally wanted to be a mortician, not a cook. That changed when he was in high school when the money wasn’t there for him to pursue what he wanted to do. “As no scholarship money was available to go mortuary science school, I chose to accept my restaurant bosses’ offer of paying my tuition to a school that trained me to eventually become a chef, not just a short order cook,” Desaulniers said recently. That proved to be an auspicious decision. He graduated from the Culinary Institute of America in 1965 and concentrated on his new career, working in in New York City at the executive dining room of the Irving Trust Company, The Colony Club and the Hotel Pierre. Eventually, he arrived in Williamsburg and spent fourr years at Colonial Williamsburg, cooking for Carl Humelsine, former Colonial Williamsburg president, and his wife, fe, Mary. That is what he said, set him on a direction to open n his own restaurant in 1980, The Trellis, with partners John hn Curtis and Tom Power. After nearly 30 years, he sold The Trellis to David Everett in 2009. After only a couple of years, Desaulniers decided to enter the restaurant business again, albeit in a very different venue. He came out of retirement to open Mad About Chocolate. The restaurant features the desserts that madee Desaulniers famous, and artwork created by Connie. es The space has life with whimsical, vibrant art that gives the space a trendy, fun feel. 9 “Owning and operating a successful restaurant for 29 ng years was very rewarding,” Desaulniers said. “After retiring for two years, Connie and I decided to start our own littlee alplace, Mad About Chocolate. That has been the most challenging act in my 50-year career.” The business is an ideal melding of the couple’s creative talents. d. “Art and chocolate are a sweet combination,” he said. fe “The cafe has transformed itself a few times in its short life

in our quest to please as many folks as possible. It is somewhat like the seasonal menu at The Trellis that I changed each and every season for 29 years.” The response to the restaurant has been enthusiastic. Locals, visitors and students at the College of William and Mary have found it to be a popular place to meet and enjoy delicious food. “People seem to love just walking into the place,” Desaulniers said. “The atmosphere created by Connie’s design of the restaurant and her art, both paintings and sculpture, makes just about everyone happy to be there.” The recent completion of the Triangle area beautification project gives the restaurant increased visibility. The couple is excited about the coming season and more people discovering the unique qualities of the restaurant. Desaulniers willingly shares his advice to young people who may be coming up in the culinary world. “Work out at the gym, don’t smoke and when you come of age, drink good wine, wine,” he said.

Distinctive in history, beauty By Ann M. Efimetz Salt glaze pottery has a long history at the Williamsburg Pottery. The distinctive pieces are still made on the premises and are featured at the shops located on Richmond Road in Lightfoot. The Pottery is one of the oldest colonial revival potteries in existence. Since 1938 craftsmen have been making the fine quality handmade earthenware and stoneware pots. Each day limited quantities of the pieces are still made on the premises. Using techniques that have been passed down through generations, skilled craftsmen reproduce the ceramics that are believed to have been used by the first settlers. in healthcare By Ann M. Efimetz The world of medicine has changed exponentially over the years. Patients are now able to access medical information via the Internet and in many cases are more proactive regarding their own health. For the past two decades more and more women have trained to become physicians, with women now representing nearly half of the medical profession. Three area physicians, Dr. Jill Jertson, Dr. Krystal Ainsley and Dr. Sheba Mohsin recently talked about their experiences as women healthcare professionals and how medicine continues to evolve. Jertson has been practicing medicine for more than 17 years, with the first 16 years as an obstetrician/gynecologist. She is currently a full-time gynecologist with Riverside Partners in Women’s Health. “The biggest changes I’ve seen in medicine are surgical advances and electronic medical records,” Jertson said recently. “We have the ability to do minimally invasive surgery which markedly improves patient outcomes. We can remove large masses through tiny incisions, decreasing recovery time and risks. Electronic medical records allow better communication between all doctors who are treating the patient, improving overall care. I always strive to learn, and I look forward to seeing how technology will further improve over time.” Jertson considers the doctor-patient relationship as a partnership. “I believe it’s the physician’s job to listen to the patient, advise them, and support them in their decisions,” she said. “My main goal is to have strong relationships with my patients, support them and give them excellent care.” 22

The original smokehouse doors from Edwards’ grandfather’s business circa 1920 are located in the store. Customers also get a peek of family photos. “We are trying to tie in that my grandfather started the business and my dad learned from him,” Edwards said. “I grew up in the business and now I have my son Samuel and my daughter Stephanie in the business.” The former location was larger and had a more diverse inventory including several gift items. This store has a tighter focus. “We are focusing on items that people seem to want us to carry,” he said. “We have come back to our roots, to be a source of Virginia-based food products. Italian Film Festival By Ann M. Efimetz

For the past several years, the Colonial Italian American Organization and the Williamsburg Regional Library has co-sponsored the Italian Film Festival. The three-month festival began last month and continues in February and March. “The purpose of the festival is twofold,” said Carla Moses of CIAO. “First, it is meant to promote Italian culture through the medium of film. Second, it is meant to increase CIAO’s visibility in the local community and, ideally, serve to build the membership.” The Italian Film Festival began in 2008. Tony Albanese was the first chair of the event, followed by Gus Guastaferro and currently Bob Rescigno. “Fiorile” will be shown at 7 p.m. Feb. 13 at the

Williamsburg Library theater. It is the story of two children who are told the story of a family curse that has lasted for 200 years. The mysterious story of their ancestors is filled with forbidden love, passion, vengeance and betrayal. The film was released in 1993 and is rated PG-13. It was directed by Paolo and Vittorio Taviani and starring Claudio Bigagli, Galatea Ranzi and Michael Vartan. The films are presented in Italian, with English subtitles and are selected for adult audiences. A reception follows each film with light beverages and a chance for discussion. “The films are very well attended, and the festival has become more known,” she noted. “The Night of the Shooting Stars will be shown on March 13. The film was released in 1982 and is rated R. It is directed by Paolo and Vittorio Taviani and starring Omero Antonutti and Magarita Lozano.

When you walk into Ocean Palm in Merchants Square, you know you have arrived in a very different place. The store, owned by Janet Lane-Roberts , is a Lilly Pulitzer signature store and is a veritable pink and green paradise, overflowing with the clothing and accessories that have distinguished the brand for decades. Lane-Roberts has owned the store for five years, purchasing it when it was the Pink Cabana. For the past decade, she has operated another Ocean Palm in the Promenade Shops in Virginia Beach. She regularly travels between the two stores, working the counter, helping customers or updating inventory. Hers and her daughter’s affinity for the Lilly Pulitzer line was the reason she decided to open the first store. “I love the brand,” she said in a recent interview at the Williamsburg store. “I love Lilly. Each print has a story. It is so cheerful, so happy. When I first started, it was a more limited line, but it has really branched out.” The British-born Lane-Roberts, who recently became an American citizen, cites her husband Nicolas, for providing her with the support she needs to keep the business running smoothly. As a certified public accountant, he helps her juggle the administrative aspects of the business, freeing her to purchase inventory and keep the stores looking their best. “I have friends who are in small business and they can become so distracted by the business aspects they forgot why they started their stores,” she said. “I am lucky to have a husband who is a CPA.” Lane-Roberts recently renovated the Williamsburg store to give it a more open feel and to give more space to the products, which are popular among all age groups. “It is very generational,” she said. “Lilly appeals to all ages.” One of the greatest challenges of her business is keeping up with the Internet. More people shop online and are looking for the best prices, and Ocean Palm has followed the trend by

offering online shopping. However, for Lane-Roberts, the personal touch is something that people seem to respond to best. “One of the greatest things about having a small business is that you get to chat with the customers,” she said. “You talk about the families, the schools,” added Lydia Delgado, has been working at the store for more than five years. “This is so much more than just a sales job.” Lane-Roberts offered advice to women who may be contemplating going into business. “You have to be passionate about what you do,” she said matter-of-factly. “You can have a business plan, and that is fine, but you have to be passionate about it. It is an awful lot of work, you are the plumber, the painter, the taxi driver. In a small store, you have to wear a lot of hats.” As for Lane-Roberts, she can’t see herself anywhere else. “I love what I do,” she said.

Miss Junie Mae’s Peanut Brittle Make slightly more than 1½ pounds

Ingredients vegetable pan spray 1½ cups granulated sugar 3/4 cup dark corn syrup 2 cups unsalted roasted peanuts 2 teaspoons baking soda

Directions Lightly spray a baking sheet with sides with vegetable pan spray. Set aside.

Heat the sugar and corn syrup in a large saucepan over medium-high heat. When the mixture is hot, stir with a long-handled metal spoon to combine. Bring to a boil, about 1½ to 2 minutes. Reduce the heat to medium and stir occasionally while continuing to heat the mixture until it reaches a temperature of 330ºF, about 6½ minutes. Use a digital thermometer for an accurate temperature reading of the mixture. Remove the saucepan from the heat. Working quickly, but carefully, as the mixture is extremely hot, add the peanuts and stir to combine. Add the baking soda and stir until incorporated. Carefully pour this mixture into the prepared baking sheet and allow the mixture to spread out on its own. Cool at room temperature for 45 to 60 minutes until hard. Break the brittle by hand into desired size pieces. Store at room temperature in a tightly sealed plastic container.

Pet owners who need to travel have some options when it comes to caring for their dogs, cats or other animals. Pet sitting could provide a good alternative to boarding. Wags and Whiskers Pet Sitting Service is owned by Amy Buck and Connie Hudson. They have had years of experience caring for all types of animals and see the benefits of pet sitting firsthand. The animals are less stressed and seem to do better in their home environment. Buck said the animals they care for run the gamut from dogs, cats and rabbits to birds and a bearded dragon. “I am still waiting for the snake client,” she said in a recent interview. “I have two snakes of my own so I am still hoping.” Buck said the animals cared for get attention in their homes, cutting stress on the animal. “The number one thing that pet sitting can do is eliminate the stress factor,” she said. “They are so much more content in their own environment.” Buck’s background as a vet assistant has given her the expertise to care for pets that may have health issues, including diabetes. “We do a lot of special needs pets,” she said. “Because I was a veterinarian assistant, I can do some things that that some may not be comfortable with, like giving diabetes injections.” Clients seem to appreciate the care given. “The one thing that we have heard over and over is that when they come home from their trip, the dogs especially are calm and relaxed. They see a huge difference.” The women provide for emergencies and can take care of an animal if a client needs to leave for an emergency. “It is peace of mind, if you have to go away unexpectedly. They know we are here for them, she said.” Buck and Hudson are bonded and insured and are certified through the American Red Cross for animal first aid and CPR. For them, the job provides a lot of satisfaction knowing she is helping people and their pets. “This is my end of the rainbow,” she said. “I get paid for playing with other people’s pets.
