2014 has arrived It is a new year. 2014. What will it bring? We cannot know the future, but only work toward making each today count. The new year brings opportunity for New Year’s Resolutions. If you are like most Americans, you will make at least one. Will it be to lose weight? There are plenty of places around town that offer workout opportunities to get healthier. Will it be to quit smoking? Try online support groups for the help you need to kick the habit. Maybe it is just to spend more time with the people you love. Try bundling up and going for a walk hand-in-hand through Colonial Williamsburg. This month’s magazine features the winners of this year’s Best of Williamsburg contest. The online balloting found thousands of people casting their votes for the best. Our featured chef this month is Tim Westby-Gibson of the recently opened Prime 46forty in Monticello Marketplace. Prime location for executive chef

Efimetz “Sometimes even the simplest things, if you use the right ingredients can be fantastic,” said Tim WestbyGibson, executive chef and co-owner of Prime 46forty at Monticello Marketplace. He was speaking recently about his desire to offer patrons a truly unique dining experience— from what they find on the menu to the décor— of the recently opened restaurant. The statement seems to pervade Westby-Gibson’s attitude in everything he does, as he and his business partner Caroll Bull have established a new dining venue which has been garnering rave reviews from locals and visitors. Bull is the former owner of A Carroll’s Bistro on Scotland Street where Westby-Gibson worked for seven years as chef. He has also used his culinary expertise as chef at Center Street Grill and Café Provencal at the Williamsburg Winery. Food is his passion. “What I try to do is find the best quality ingredients available and let them speak for themselves, “he said. “But I like to have fun, too. I try things that are different while still maintaining my roots in traditional cooking.” The restaurant menu is different from those people may find locally. Alongside steaks or crab cakes, patrons get to choose from grilled wild boar chop, real Hawaiian Mahi tuna and Tasmanian King Salmon. “We offer things nowhere in town does, “he said. “I try to get the best ingredients I can find and present them in ways that are unique, yet are still comfortable for our patrons. We do try to push the envelope, so there is something new and different for them to try.” He goes to great lengths to obtain the highest quality ingredients, whether it is eggs, produce or meat. “We feature Allen Brothers beef which is one of the finest Midwestern beefs available,” he said. “It is the best of the best. We have people who come to the restaurant just for the steaks.”
The more unusual menu selections, including boar and venison, are ordered from Broken Arrow Ranch in Texas, which he added, is one of the premiere game farms in the country. He said people are often surprised when they select boar, finding it very lean with only a slightly gamier taste. Same for the venison. “The venison is a very good tasting meat, “he said. “It is similar to beef with a gamier flavor, it tastes fantastic.” Seafood also takes high priority. “We do very well with our seafood selections, “he said. “We have local sources, and also ones from around the world. Our fish comes from the Honolulu Fish Company. I get fish from New Zealand and from the Mediterranean Sea.” Westby-Gibson doesn’t skimp on any of the ingredients. Everything on the menu is made by hand, from pasta to soup stock to ice cream. Westby-Gibson buys pork bellies to cure and smoke his own bacon, which gives recipes using it added zing. “It’s the little things people may take for granted that sets us apart,” he said. Westby-Gibson spends his days juggling the responsibilities that come with business ownership and being an executive chef while coming up with ways to surprise and delight patrons with specials. And when he is not at the restaurant, he cooks at home for his wife and two children. “The kids like daddy’s cooking,” he said with a laugh, adding they have tried many different foods. “Instead of having chicken, I tell them we are having chicken with a lot of cool stuff on it.” Westby-Gibson is happy at the restaurant, and is excited about the future, continuing to offer the best dining experience he can, while challenging his own skills. “Every day I learn something new,” he said. “Every day there is something I want to learn. That is what makes me work hard, because every day there is something new that I want to try.”

(Makes 10 portions)
Ingredients 3 cups warm water 1 tsp yeast 1 tbl sugar 8 cups all purpose flour 2 tsp fine sea salt 4 tbl extra virgin olive oil 2 tbl chopped fresh rosemary

Directions Combine 4 cups flour, sugar and yeast in a mixing bowl, add warm water, stir to combine, cover loosely with a damp kitchen towel, and allow to proof overnight in a warm place. Combine the remaining flour, salt and rosemary and stir to combine, add the extra virgin olive oil and the proofed yeast mixture and knead until a smooth dough is formed. Let the dough proof until double in size, about 3 hours in a warm place, and punch it down. The annual Virginia Gazette “Best of Williamsburg” contest has been tallied. The contest is now completely online. Hundreds of ballots were filled out and submitted. There were dozens of categories in more than 50 categories running the gamut from best pizza to best local nightspot. Here is a rundown of this year’s winners. Steakhouse — Voters again picked the Best Steak as Jefferson Steakhouse & Seafood and Kyoto Japanese Steak House & Sushi Bar placed second. Mexican restaurant — Plaza Azteca in High Street finished first for the fourth year running. El Sabroson finished second. Asian restaurant — Ichiban in New Town took first place in the category. Peking Mongolian & Japanese Restaurant at Kingsgate Greene shopping center near Kmart finished second and Kyoto finished in third. Barbecue — Red, Hot & Blue again finished in first. Second place went to Rocco’s Smokehouse Grill. Crabcakes —Seafare of Williamsburg finished first in the category, followed by Rocco’s Smokehouse Grill in second. Seafood —Seafare of Williamsburg finished in first place, followed by Jefferson Inn in second and Kyoto Japanese Steakhouse and Sushi Bar in third. Cover the legs with the melted duck fat, adding a little shortening if necessary to ensure the legs are completely submerged, and place in a 200 degree conventional oven. A TASTE OF ITALY AT
MAURIZIO’S By Ann M. Efimetz
For the past 20 years, Maurizio Fiorello has been providing visitors to his restaurant with quality Italian food and warm hospitality. The family-owned and operated business has grown over the years, serving thousands of locals and visitors, some who have visited each year for two decades. “One family has visited our restaurant every year for twenty years,” Fiorello said in a recent interview. “I know them by where they sit and the food they order. It is always a pleasure to see them and welcome them back.” The family atmosphere springs from Fiorello’s roots in Palermo, Sicily. He began his restaurant career when he traveled to the U.S. at age 15. He worked for his family’s restaurant, learning the secrets of fine cooking under the tutelage of his mother. Eventually, he opened Maurizio’s with his wife Rebecca, and since has established a name among local restaurants for its authentic Italian fare. “We make nearly everything from scratch,” Fiorello said. “When customers come to the restaurant, they know they are tasting authentic Italian cuisine. Nothing here is canned or frozen.”

Fiorello’s top priority is providing the customer with a place they feel comfortable whether they are celebrating an occasion, dining with their friends. The restaurant’s proximity to Busch Gardens makes the restaurant a favorite with families visiting the park. Fiorello prides himself on his knowledgeable and friendly staff. Some have been working at the restaurant for 15 years. “This is a place where you will be able to find delicious food, but also a place that has a friendly atmosphere, a personality of its own,” he said. “Many of those on my staff have worked here for years and are a valuable part of the restaurant family.”

Jane Wason is the owner and manager of Zaxby’s in Williamsburg Crossing Shopping Center. Zaxby’s opened in September 2010 and since has been gaining popularity among locals and visitors. That’s because owner Jane Wason and her husband, Wally, put the customer first, striving to make Zaxby’s a place to visit time and again. Wason said the restaurant has steadily drawing more customers who have heard by word-of-mouth about the menu and service offered at the restaurant. 38

“It is been slow developing brand recognition,” Wason said recently. “But we are growing in a good direction, people are discovering us and finding out what we are all about.” Wason has a good sense of humor when it comes to the challenges of owning a business while juggling the responsibilities that come with being a mother of three kids, ages 12, 14 and 16. “It is very much a challenge,” she said with a laugh. “It takes a lot of organizing and leaning on my husband to get it all done. Sometimes the whole family is helping out and it is group effort. I also have
some good employees who are very smart and very helpful. It is teamwork in every direction.” Zaxby’s is a franchised chain that features casual dining with fare ranging from chicken wings to sandwiches and salads. There are about 600 restaurants through the Southeast U.S. Wason said the Zaxby’s company is currently examining healthy options to add to the menu in the future, which could include fruit cups, salads and grilled options. Wason’s restaurant has made a name within the community, fulfilling catering requests for various sports teams, including William and Mary, doctor’s offices and special events. The best part of her job? “Meeting the people who come in and talking to them is the best part of my job,” Wason. “It is also great working with young adults and teaching them new skills in the store, mentoring them.” Wason said she enjoys her work, even when it gets hectic. “I do like what I do, it is very enjoyable. It can be overwhelming at times, but anything can be at times,” she said. “If you are willing to and really want to, you
can put your mind to it, you can do anything and be successful.” She offers advice to women who may want to own their own business. “You have to really want it. It is not always easy, it doesn’t always go the way you want it to be, but if you keep working on it, you can be successful.”

Catholic Schools Week celebrates 40 years By Ann M. Efimetz The theme for Catholic Schools Week 2014 is “Catholic Schools: Communities of Faith, Knowledge and Service.” The annual observance starts Sunday, Jan. 26 and runs through Feb. 1. Catholic Schools week was implemented in 1974. This year marks the 40th anniversary of the yearly observance.

Walsingham Academy, is the local Catholic School for grades PreK-12th grade, and it will celebrate the week with a variety of events. The school will hold an Open House, 1:30-3:30 p.m., Sunday, Jan. 26. “A Taste of Walsingham.” Families who are interested in learning more about Walsingham Academy are encouraged to attend the Open House to talk with students, administrators and teachers.
The week coincides with “Spirit Week” which celebrates a theme. Upper School students are invited to dress accordingly. The week also includes a celebration of Mass, and also encourages students the chance to participate in activities which highlight the nine Mercy Core Values of dignity, integrity, spiritual growth and development, respect, hospitality, appreciation of diversity, compassion, justice and service.

Grilled flatbread with duck confit, arugula and fontina serves 4 as an appetizer
Ingredients 2 portions flatbread dough, rolled into 8x12 rectangles (see page 13 for recipe) DPA673285
2 confited duck legs, skin and bone removed and meat shredded (see page 25 for recipe) 6 oz valle d’Aosta fontina cheese, shredded 2 cups baby arugula leaves 2 tbl extra virgin olive oil 1 tbl balsamic vinegar Directions Preheat the grill on medium high heat. Brush the flatbread dough on both sides with the olive oil and place on the preheated grill, allow to cook until the bottom has formed a crust and is firm to the touch and beginning to blister, about 2-3 minutes. Carefully turn the flatbreads over, reduce the heat to medium and quickly top with the duck confit and the shredded fontina. Close the lid and allow to cook for another 2 minutes. Remove the flatbreads to a cutting board and cut into 2 inch pieces. Sprinkle with the arugula and the balsamic and place on a serving platter.
