Summer Sizzle

S

ummer’s been extra hot this year, and we don’t just mean the Celsius readings. So who can blame us if our mind wanders away from Bangkok into where the palm groves are swaying along with the sea breeze, where the winds are caressing our face as we walk along a powdery white beach, and where the azure blue waters are inviting us to splash away the sizzle? But, we do not have to imagine going to a beach resort so far away. Just about two hours away, or even less, from Bangkok is a beach destination where we can get the respite we needed – Pattaya. Pattaya is many things to many people but you can visit the destination for reasons other than its infamous nightlife indeed. As a colleague puts it, Pattaya today is “simultaneously upbeat and relaxing, with endless entertainment and sporting opportunities.” Or, as a younger friend prefers to say it, “Pattaya is an exciting place to go, see, and do; a must-add on your travel bucket list.” Ah, how the city has changed. So much. From the sleepy little fishing town that became an American R&R camp town during the Vietnam War, it has developed into a truly world-class tourist destination; a cultural melting pot of a beach resort that attracts something like six million tourists each year.

Of course, some people might prefer Phuket, Samui, Krabi or maybe some other isolated Thai islands on either side of the peninsula, but it’s really different strokes for different folks. Each destination is unique, and Pattaya has many other endearing qualities that make it a great holiday spot besides its proximity to Bangkok. Anyway, this issue is not just about Pattaya. Besides our focus on Pattaya, we are delighted to tag you along on our travels around Thailand and beyond. From the fun neighborhood of Thonglor, we will take you to serene Luang Prabang. We will have you meet a hotshot hotel GM and an equally hotshot culinary master. We will have you taste some of the newest and finest hotspots in Bangkok. We will invite you to check in and try some great properties from Samut Songkram to Bali. And more. What: This competition follows on the heels of the first two successful Italian wine sommelier competitions in Thailand (2013 and 2014). What happens on this day and why it is important to the Thai people by Chris G. Mayya

H

istory has a limited record of people who were born and consequently died on the same date. Buddhists go a step further in commemorating the day of enlightenment of Buddha, as they also celebrate his birth and his death on the same day. Visakha Bucha Day or Vesak Day, as it is popularly known in other parts of the world, is one of the holiest days for devout Buddhists. The three events of birth, enlightenment, and death are the milestones in an extraordinary lifespan of 80 years. Although every full moon day is considered sacred, the full moon in the month of Visakha holds

special significance for Buddhists. The Sanskrit origin of the word is “Visakha,” which comes from India, and it symbolizes the period preceding the monsoon season. “Bucha” refers to the act of worship. For this year, Visakha Bucha falls on June 1 in Thailand. Activities for that day mostly revolve around the temples, as Thai-Buddhists consider it to be an auspicious day for “making merit” (acts of generosity that benefit others in line with the Buddhist religious doctrine and with the belief they will be given a positive reward after life). Among highest forms of merit making are the offering of alms to monks. Some Thai men consider it a sacred day for monk ordination. Young boys and teenagers

are encouraged, and in some cases compelled, by their family to take up short-term ordination. Other forms of making merit include releasing fish into water and freeing up the birds held in cages. All over Thailand, Visakha Bucha celebrations are conspicuous and hard to miss. Besides being a public holiday, several schools, colleges and public institutions hang out yellow Buddhist flags. Processions are held in the evenings and candles are lit up at most temples. Of course, some foreigners bemoan the fact that it is a “dry day,” since the sale of alcohol is barred for 24 hours. In Bangkok, the public square right in front of the King’s Grand Palace in Sanam Luang has traditionally held festivities in previous years. In Chiang Mai, the residents go on an 11km-hike up Doi Suthep Mountain. It is a nice group walk and a cultural orientation. Most Thais enjoy seeing foreigners join them on this hike as long as the religious norms are respected. Many local businesses offer food and drinks for free to the “hiking pilgrims.”

ne does not go to Mae Hong Son for its temples. But once there, few can resist visiting these wats (as Thais call temples) if only because they seem different from those found in other areas of Thailand. Many wats in Mae Hong Son show a distinctive Burmese influence, indeed. These wats, relics of a time long gone, are worth visiting if only to understand better how the present-day Mae Hong Son came to be. Here are some of the most important wats to visit:

Wat Phra That Doi Kong Mu Wat Hua Wiang Wat Phra That Doi Kong Mu, located some 1,500m up on Doi Kong Mu hill, overlooks a valley that in the morning rewards visitors with an exhilarating atmosphere: mists, fog, and a dreamy view of the Mae Hong Son town below. The impressive temple has two chedis and a large viharn, by themselves outstanding sights. The first governor of the province built this temple. A trip to this temple is usually combined with trips to two others - Wat Phra Non and Wat Muo Taw – that are both nearby. The three temples are best to visit in the morning.

Wat Chong Kham/Wat Chong Klang

These two temples are found on the southern Chong Klang Lake. Wat Chong Kham is an old temple built in 1827 by the Thai Yai of Burma, and houses' pillars covered in gold and a large Buddha image produced by Burmese craftsmen. Wat Chong Klang contains a copy of the Phra Buddha Singh and a number of interesting items such as wooden figures and stained glass. The figures are Burmese dolls bought from Burma 100 years ago. The dolls represent various stages of the Buddha’s life. These two temples are accessible on foot from the Mae Hong Son market. And the temple's image reflected onto the lake when the sun is up is simply a sight to behold.

Located next to the Mae Hong Son market, Wat Hua Wiang is a temple with a large compound featuring an impressive Burmese-style bronze Buddha that is said to be a replica of a Buddha image in Mandalay. Built in 1863, the temple's buildings are now a bit dilapidated but this only adds to its appeal.

This is a large, ornate Burmese-style (Shan) temple that features a gold colored, sphere-shaped viharn, a Burmese-style Buddha image, and a famed Shan tapestry.

Wat Kung Mai Sak

What makes this temple unique is the long bamboo bridge across the rice paddies that you have to walk through before reaching the temple. The bridge—2m wide and 500m long-- was actually built to help monks from Phu Sa Ma temple on their morning alms round to Ban Kung Mai Sak. Since it was built, the temple has become a big attraction. There are other temples all over the province, most reflecting the strong influence of the Thai Yais who for years were the predominant ethnic tribe in the area. While each temple has unique features on its own, all carry elements that give Mae Hong Son its distinct architectural and cultural identity.

Chiang Mai has a thriving artistic and cultural life and visitors should not miss those. Must-buy: Herbs grown in Chiang Mai, local herbal tea, spa and beauty services and products! Eat at: Bann Suan San Phee Saui; it’s something of a best-kept secret and I hope it stays that way. Drink at: Nimmanhaeminda Street. With o many hip places to drink and hang out here, this is where you go for happenings! Sleep at: Any boutique hotel on Nimmanhaeminda Street

I was in Bangkok for over 20 years and just moved to my new role in Phuket last year. It is so refreshing to be surrounded by the ocean and lush scenery, and I am also able to travel regularly to our properties in Krabi and Samui. The air is clear and I feel much healthier living an island life. Bring there: Your swimsuit, sunscreen, and flip flops -- you don’t want to miss out on the essentials while lounging on one of Phuket’s many beautiful beaches. Must-do: Snorkeling. Ask your hotel to book a tour where the guides will take you island hopping throughout the day. The best spot to snorkel near Phuket is Koh Racha. Must-see: The old charm of the Sino-Portuguese houses in Phuket's Old Town. Start your walk from the Central Post Office. If you are there in the evening, grab dinner and drinks at Ka Jok See and wait for the entertainment to happen. Must-buy: Pearls. Phuket is famous for its locally farmed pearls. These make great souvenirs for our female guests. Eat at: Loktien, a food center in Phuket Town for great local dishes at very affordable prices. My favorite dish is the Hokkien noodles. Drink at: Quip Bar in Phuket Town. It’s a hip and happening rooftop bar with great music and fantastic drinks. It's where I like to start off the night. Sleep at: Amari Phuket. attaya gets plenty of headlines as a naughty nightlife capital. But this characterization overlooks all of the amazing attractions and excellent drinking and dining along with fantastic resorts that now grace the star of Thailand’s Eastern Seaboard. Bangkokians head down to Pattaya for the weekend, and like them, with some careful planning, you can really pack in a lot in 48 hours. Here’s a sample itinerary with just some of the best highlights in the resort:

If you don’t have your own wheels, the minivans from Victory Monument or the express buses from Ekkamai are the next best thing, and will have you in town before dinner. From the Thai Polo Club, it’s a short jaunt up to Silverlake Vineyard (Tel. 02 261 6565, www. silverlakevineyard.com), a beautifully cultivated vineyard and winery that boasts the latest wine-making and juicing technology from Italy. Overlooking Pattaya Bay and the green countryside, it’s a great spot to relax in. The site is home to the famed “Silverlake Music Festival,” which takes place annually, not to mention other smaller jazz concerts and programs with international artists. There is also a restaurant and pleasant terrace from where to enjoy the lovely surroundings. For something a bit more adrenalin-flowing, head over to the Bira Circuit (Tel. 085 110 1000, www.bira.co), a full-service racetrack that features an FIA certified tracks, as well as an off-road test track and a full-service karting track. Everything from Formula series to international motorcycle competitions takes place here, and you can rent go-karts to join the fun. com), which has the tallest inflatable waterslide in the world, along with climbing walls, zorbs, water balls, and even a kids’ zone so the whole family can play. Alternatively, find something a bit more natural with an escape out to Koh Larn (http:// kohlarn.com), which is a short boat ride from Pattaya. Koh Larn has amazingly turquoise water, and there are nice beaches, with the biggest ones offering jet-skiing and parasailing to satisfy the adventure junkie in everyone. After this full day of exercise it’s time to unwind, and there’s no place better than Rimpa Lapin (Tel. 038 235 515, www.rimpalapin.com), situated on a cliff with spectacular circular views of the Eastern Seaboard. This celebrityrun restaurant specializes in fresh seafood, with dishes such as stirfried rock lobster and deep-fried sea bass leading the entrees. Many of the dishes feature fusion creations as well, with cream sauces and fine cheeses topping the fresh catches. If teeing off is not your forte, perhaps head off for some more lighthearted entertainment. One option is to go check out Ripley’s Believe it or Not! f he did not become a hotel concierge, Teerapol Kayongwaen, 37, says he would probably be running a small restaurant business in Pattaya or be selling some OTOP (One Tambom, One Product) goods in his hometown Chiangrai by now. But after his first job -- at Dusit Thani Hua Hin -- Teerapol has hooked by the hotel industry, and today, he is chief concierge at Siam@Siam Design Hotel Pattaya. Here, as can be expected from his position, Teerapol is involved in arranging guest transportation, giving flight information to and booking assistance for in-house guests, and providing guests with accurate and helpful insider knowledge on Pattaya attractions. "Being a great concierge means not only having a friendly, outgoing personality," Teerapol says. “You also must keep yourself up-to-date as far as new attractions and places to visit are concerned, and in my case that means not only in Pattaya but also other Thai cities as well.” To keep himself updated, Teerapol starts his day checking weather forecast, his Facebook timeline for the latest in world news, and then, throughout the day, does his best to impress guests -- “in unexpected ways,” he points out. For instance, by learning as much as he can about each individual guest so he can tailor his help and

recommendations to their needs. Here are some of his usual tips to Siam@Siam Pattaya guests: For the best Thai restaurant: I often recommend Cabbages & Condoms Restaurant in the Khao Phratamnak area to my guests. It’s near the hotel and it’s a great place to watch sunset. The menu is amazing too. Where to bring friends for chillout fun: There are so many places to chill out and party in Pattaya. I would suggest that guests start by simply taking a stroll along Walking Street in South Pattaya. For shopping: Mike Shopping Mall for both bargain and high-end items in one place. They have international brands as well as local products, so it’s a mix of regular indoor mall with fixed prices and a bazaar where you can bargain. I was there recently and saw many interesting metal and wood pieces. Easiest way to get back and forth the hotel: By minibus, no doubt, because it’s very cheap and they are parked right

in front of the hotel entrance; very convenient for guests. How to avoid pimps, hecklers and scammers: I always advise my guests to keep their valuable belongings locked inside the in-room safety box. As for scams, it’s a fact that Pattaya have many street touts who try to draw in people whether to a bar, a shop, or some other business. Not every place is dishonest, but as a concierge I make sure that I recommend only places which are reputable. Best way to enjoy their holiday: I would recommend Suan Nong Nooch Pattaya. There are many activities, sights, and performances here, such as elephant riding, rare flowers garden, traditional Thai culture show, tiger show, and fancy car display.

ven before TG2576 took off at 9:25 a.m. from Bangkok’s Suvarnabhumi Airport our mind was already in Luang Prabang. We haven’t been to this ancient Laotian capital before, but we have always dreamt of visiting it. Our excitement increased as we enter the Laotian skies, especially

by Percy Roxas when our destination revealed— below the puffy white clouds and between the rugged mountains—its simple treasures: the patchwork of traditional Lao houses; glittering golden-roof temples; lush, verdant greenery; and the Mekong River running through it. But Luang Prabang is more than these. Nestled beneath a temple-

topped hill at the confluence of two rivers, it is a destination that seems to have been frozen in time. Small and atmospheric, it is increasingly becoming a fixture in the radar of many travelers, attracted by the way Laos' first UNESCO listed World Heritage Site is jealously guarding its traditional ways and how it strives to preserve the echoes of its rich past.

Our discovery trip started simply enough: from the airport, we went straight to Tamnak Lao Restaurant on Sakkarine Road, one of Luang Prabang’s main tourist belts. Famous among locals and foreigners alike, this restaurant specializes in traditional Laotian dishes. Laotian food bears lots of similarities with Thai food but homogenous ingredients make it more exotic and distinct. The Lao khao soi, for example, is very much like the Chiang Mai specialty but with a twist. This culinary welcome gave us a glimpse of what’s to come in the next few days: a series of wondrous discoveries, an array of unexpected surprises. Right after lunch we went to the ancient Xieng Thong Temple, located just a few meters from Tamnak Lao. There was a drizzle but we braved the downpour to explore the temple, called Vat Xieng Toung by locals, the oldest monastery in

town. Even with its dated look, one can see a timeless beauty. No wonder this temple is regarded as one of the most beautiful temples in Luang Prabang. And this is just one of the many amazing temples we visited in this gracious little town of 452,900 residents. From Vat Xieng Toung we decided to go directly to Santi Resort & Spa (Tel: +856 71253470/9) just 10 minutes away from the airport. The sprawling resort, located at Ban Nadeuay, is said to be one of the most prestigious in town. Our room, a plush corner suite overlooking an open paddy, exemplifies the stark contrasts that are beginning to seep in into Luang Prabang. It was modern and gorgeous. The rain didn’t let up during

the night but the next morning, the sun shone like it had no memory of the previous gray day. We begin our program with a short stop at Vipassana Temple and Park, a golden temple frequented by those who practice Vipassana meditation. This temple embodies the serenity of the town itself and walking its grounds grant one a kind of inner peace. From there, we went to the Mekong River for a river cruise. Traveling to places like Luang Prabang means getting a feel of the authentic local lifestyle, and what better initiation than with a cruise on the Mekong, which has been a lifeline for many people in the region for centuries. Sights are relatively simple, even bland at some points, but as it was, the cruise provides visitors a

glance of the real Luang Prabang, its unspoiled landscape, and the simple lifestyle of its gentle people. After the half-day cruise, it was time for lunch—at Pak Huay Mixay Restaurant. This restaurant, located at Ban Xieng Mouane, was a delightful surprise. The steamed fish with spices, wrapped in a banana leaf, lived up to expectations. It tasted like an angel tiptoeing on your taste buds! From the restaurant, we took a leisurely walk in the immediate neighborhood on the way to our ride. A group of elderly women gathered on a street corner, enjoying lively laughter with Lao beer. A couple of elegant houses—both traditional Lao and French colonial style— lined the tidy road, and very few vehicles roamed the streets. There

Located just two kilometers south of the town proper, the center operates as a fair trade traditional weaving center and is very tourist friendly. Visitors can take classes in bamboo/ textile weaving, dye their own silk, draw their own batik, or just enjoy Lao coffee and relax at the garden café overlooking the Mekong. After an hour or so, we proceeded to the Night Market (Sisavangvong Road). Coming here is an eye-opener, at least about the culture that ASEAN peoples share. The products, the creativity, and the outlook of the life of the Lao people mirror that of their ASEAN siblings. At first glance, Lao silk may be mistaken for Thai or Burmese silk. Some items show Malay or Indonesian traces. Even the hill tribe's weaves and implements show similarities to those of their distant cousins from the Philippines. And yet, there is that distinct Lao touch. The next day started early. We woke up at 4 a.m. for the “Early Morning Sticky Rice Monk Offering” at Sakkarine Road, near Wat Sensoukharam. This alms ceremony is a traditional local ritual. It was quite a sight to see monks collecting alms of rice from kneeling villagers and tourists at the break of dawn. It has become such a major tourist attraction indeed, but even so, the authenticity of the moment

was still intact. Buddhist or not, participating in this alms ceremony is quite an experience. Still a few more stops, and then we were reminded that our trip is almost over. Going back to the hotel, the faces we saw, the smiles we received, and the wais we were given, were making vivid flashbacks in our memories. The sights and sounds, the flavors and fragrances—everything— were to stay there until we checked in at 10 a.m. for our flight back to Bangkok. As we boarded the TG2577 we thought about how short this trip was for a Luang Prabang exploration of discovery. There is still so much we didn’t get to see; there is still so much we didn’t get to do. But there is always a next time— and for us that will be soon!

was serenity and a seeming order in everything. We didn’t see any McDonald's or other international fast food chains. They have yet to surface in Luang Prabang, which perhaps bodes well for tourists who are after the local flavors. Lao street food is offered at bargain prices along an alley in the night market, and inexpensive food is easily available at numerous stalls and markets. Of course, other types of cuisine are available too. Next stop was Suwannap humaham Temple (called Wat Mai or Wat May by locals), said to be the largest and most richly decorated temple in Luang Prabang. We were awed by the intricate details in the temple's decor, carvings, and murals. Laos has had a tumultuous history, and it is amazing how they were able to preserve these edifices intact. Of course, one answer was the restoration work done on the entire city at one point in time. Then we went to Haw Kham, the former royal palace which is now a national museum. Nestled inside a big compound, the museum showcases the life and times of the Lao royal family whose fortunes ended in 1975. Luang Prabang rose to prominence from 1353 onwards as the capital of the first Lao kingdom, Lan Xang (Land of a Million Elephants). Luang Prabang reopened to tourism in 1989 after a sensitive citywide restoration, and in 1995, it was placed on the UNESCO World Heritage List. Today it is considered to have the most preserved cultural heritage in Southeast Asia.

I

n this sprawling, congested metropolis aka Bangkok, continuity and permanence would not be the first words to pluck from a dictionary and attach to the city. However, mention Soi Thonglor and most would rapidly refer to it as the place to be for entertainment in the capital. This embedded reputation, however, has been achieved in just over a decade. The lengthy street, which is also the name of the district, stretches from New Petchburi Road in the north to Sukhumvit Road in the south. It was previously more renowned for wedding showrooms -- quaint or corny, depending on your opinion -- and car dealerships. Both of those particular business sectors still flourish, but over the years the construction of numerous condominiums and serviced apartments has seen the character and appearance of the area markedly transformed. There are mini-shopping malls and art and design galleries, giving the location an almost unique boutique town within a city feel. Along the main soi and the myriad of smaller treelined alleys, new clubs, bistros, and restaurants seem to emerge almost every month. Entertainment embraces many activities, but an interesting venue to start with on your fun trail is situated at Liberty Plaza. Game Over is a clever combo of lounge, bar and

eatery. It is a funky, subterranean setting with high-end PC consoles, board games, including Super Mario Brothers, chess and pool tables. The mix of textures, colors, and materials adds to the atmosphere. And then there is the food, including jawchallenging burgers and tempting desserts. Step back onto the street and head for the corner of Soi 10 and Moodz one of the newest gastronomic kids on the block. It aims to be a mix between a casual eatery and a fine dining restaurant. A relaxing outdoor lounge area leads to an intriguing but equally calming interior with splashed hues of turquoise, green, and canary yellow. On the food front, the aim is European cuisine with global inspirations, a highlight is the spicy seafood, tomato, and saffron soup finished off with bottarga croutons. Move farther down to Soi 8 and your nose might start twitching as you approach the Perfume Bar and Restaurant. The heart of the establishment is the bar, where master mixers create their unique cocktails to stimulate the senses, including Bubble 52 and Burn in my light. You don’t need to travel to Mumbai as Bollywood meets Bangkok with Desi Beats, a chic dancing and cocktails venue which boasts both indoor and outdoor areas in the nightlife Opus building back on

Soi 10. It’s Moroccan themed, which means languid indulgence-carpets, pillows and cushions. Shisha pipes are in evidence, plus flamboyant cocktails and Asian fusion food. For once the hype proves correct as the much-discussed Iron Fairies is well worth a visit. It is the kind of place you could imagine director Tim Burton frequenting together with one of his characters Edward Scissorhands. A fantasy blacksmith’s dwelling with a narrow, twisting staircase and gothic interiors. Potent cocktails and food veering to the gourmet end and some good live music complete a fascinating venue. Are you keeping up? Weave your way back to Soi 10 enter Funky Villa and get up close and personal on the floor with the young, loaded and pretty set. Essentially, a large roof topped villa as the name suggests with an outdoor patio. Inside, it’s minimalist style, light and airy, with live music from popular bands like Thaitanium

and DJs producing some great beats. If you still have the energy then finish off by exploring Badmotel, but you might have to look twice as it’s tucked away between Soi 15 and 17 just past J-Avenue Mall. What did the owners do when deciding on a property? They saw an abandoned three-storey former shop house and left it well … almost abandoned, with fractured walls and barren concrete floors. Half of the building is rubble, so bemused passers-by get a view of young artists daubing graffiti on the upstairs walls. Don’t be put off, as there is more than meets the eye. Downstairs an impressive bar serves highly praised cocktails and some choice and mainly Thai cuisine. A patio garden and a rooftop lookout offer alternative seating and there are regular DJ events and live music. So, eight of the great to discover on Soi Thonglor (or “law,” or “lo”); It might be simpler just to call it soi entertainment.

BEST MAN FOR THE JOB


C

hao Phaya Park Hotel Bangkok is set for a repositioning of sorts. No, it’s not a rebranding as in a big change of name, a massive renovation, or anything similar. It is rather a re-alignment of priorities, a fine-tuning of existing strengths, and maybe a re-thinking of marketing strategies - overall, an effort to keep up with the times. The man at the helm to carry on the job at hand is Viranat Silananda, who assumed the position of General Manager (GM) at the hotel in December last year. Viranat, or “Vern,” as many fondly call him, seems to be the best man for the job, indeed. And why not? He has a strong rooms background, a solid understanding of standards, and specialized skills in revenue management systems, e-commerce, social media for F&B, guest satisfaction, and employee engagement. Vern also boasts a wealth of pre-opening hotel experience, and is known for his strong understanding for finding a balance between establishing what environment is best for employees, customers, and owners in the properties he has worked with. The 45-year-old hotelier, the first Thai-American GM of Chao Phaya Hotel Bangkok, started his career with Holiday Inn Brentwood Bel-Air (in Los Angeles, California) in 1984. Here, as guest services manager/area preopening support (room division), he was able to reduce guest complaints by 50 percent and was responsible for working out the incentive program for the department. Next, he was contracted to do the pre-opening for the MGM Casino Group, and stayed with the 509-room for the pre-opening of the MGM Grand Hotel in Las Vegas, Nevada (six months). He did a very good job there but he was not able to resist an offer from the Westin Group U.S. to do the pre-opening for Westin Chiang Mai, which was his first stint in Thailand. He saw it as a chance to return to his home country and reconnect with his roots. Indeed, he says the experience helped him to rediscover his own country and paved the way for his eventual decision to stay on. He was with Westin Chiang Mai for five months during the

pre-opening stages. By February 1994, he went on to become acting executive assistant manager/front office manager at Holiday Inn Green Hills, where he was mainly responsible for operations of the Front Office Division. By December of that same year, he moved to the Holiday Inn Resort Phuket, where he was promoted from room division manager to executive assistant manager. Vern successfully completed the re-branding of this hotel from a core brand to a resort brand, and helped develop a business plan for the hotel to achieve its financial goals in 1997 and 1998, among other achievements. His next move was to the Amari Palm Reef Resort in Koh Samui, where he became General Manager in July 1999. He stayed there for nine years and two months. Vern was at the helm when the resort planned and implemented a successful renovation in all areas of the hotel, and he oversaw the addition of 84 deluxe rooms, an Italian freestanding restaurant, and spa. He also developed and implemented service concepts and standards for the PREGO Italian Restaurant, as well as managing the serviced standard for the resort, for which the hotel won TTG’s “Best Beach Resort” in 2006 and 2007. But by 2008, he was back at the Holiday Inn Chiang Mai, where he stayed for one year and six months. He did return to the Amari fold in February 2010, when he became GM of the Amari Atrium Bangkok. After three years and 10 months, in October 2013, Vern moved to the Oriental Residence Bangkok also as GM where he developed sales strategies and branding for the property as a combined hotel/long-stay residence. This was done through a marketing company and they worked together to develop a free-standing restaurant concept, and F&B marketing strategies for Cafe Claire through social media. Vern brings all the experiences and KSAs (knowledge, skills, and abilities) of his long, checkered career to the Chao Phaya Park Hotel Bangkok. He describes his main challenge

at the Chao Phaya Park Hotel, as “keeping up with the fast-changing infrastructure.” He went on to explain: “Because this part of town is transforming into the new Central Business District (CBD) of Bangkok and with the Stock Exchange of Thailand (SET) and many corporate companies relocating here, we have to make the hotel ready for developments. These changes are not only in the hotel’s facilities and services, but also in technology and on the internet. We have to make the hotel cutting-edge.” Specifically, his plans for the hotel this year revolve around repositioning and strengthening the existing Chao Phaya Park brand and fine-tuning its existing strengths in the MICE market. “We are also repositioning our culinary offerings in all of our six Food & Beverage outlets, and positioning them among the wellknown hotspots on Ratchadapisek Road,” he adds. It is still probably too early to assess his achievements at Chao Phaya Park Hotel, but already Vern is making both the industry people and the market give the hotel a second look. Occupancy numbers are strong, and F&B revenues are rising up to their potential. But he wants to do more. Obviously, the hotel is making him use the strengths that made him a successful hotelier. Always a hands-on manager and with strong communication skills, he provides exceptional contributions to customer service. He strives for continued excellence in aspects such as marketing management, concept management, and financial management; and he is a leader who believes in developing people and leading by example. While Vern looks every inch a nice guy, he also admits he is tough to work with: “I always demand the best and nothing less from the people I work with. You’ll probably hate me when you’re working for me.” Hate him? Well, we don’t know about that, as his present associates at the Chao Phaya Park Hotel Bangkok all seem to disagree.

Enjoying Streetfood at Yaowaraj

Yaowaraj is the main artery of Bangkok’s Chinatown. While this area is hardly on top of the foreign visitor’s Bangkok to-do lists, local love this area of their city, especially in the evening when the gigantic neon signs are really alluring, and the streets are filled with food stalls, carts, and makeshift restaurants offering various goods and delicacies. If you like Chinese, try to find Soi Phadung Dao (Soi Texas) for the city's best selection of Chinese restaurants. If you’re not that squeamish, just on a tight budget, or simply willing to try what the locals do, take a seat in one of the numerous street restaurants and enjoy eating for no more than Bt50. You might enjoy yourself! You can even just go there for an exploratory walk, immersing yourself in the ambience and atmosphere, as our friend, the regional country manager of Japan Airlines Toshikatsu Kitano sometimes does on his free time because, “It’s fun, and interesting!” he said. You can take buses – 508, 48, 25, etc -- easily from anywhere in Bangkok to Yaowaraj; or you can take a boat from Saphan Taksin and get off at the Talingchan Pier.

Malling for arts and shopping

Bangkok’s fame as a shopping haven is quite justified, and with the proliferation of new trendy, plush mega malls within easy reach of tourists, shopping in Bangkok has become all the more an appealing proposition. Two of the major shopping venues that rank high as tourist favorites are CentralWorld on Ratchaprasong District, and Mah Boon Kong (MBK) on Phaya Thai Road. CentralWorld is on the heart of the city’s major tourist hub, where other glitzy shopping malls and five-star hotels are also located, and has a direct access to the sky train via a connecting sky bridge. Dubbed as a lifestyle-shopping destination of Bangkok, it is great even for just taking a break from the Bangkok heat. Both chic international brands and top-flight Thai brands are represented here, along with many other kinds of shops and stores. It also boasts a wide range of eateries, and there’s a cinema complex on the 7th floor. CentralWorld regularly holds events and exhibits that add to the pleasure of visiting it. Also, don’t forget to check out Gaysorn Plaza, Erawan Shopping Mall,


Amarin Plaza, Central Chidlom, Central Embassy, Siam Center, Siam Paragon, and The EmDistrict malls – all along the skytrain route. MBK is very tourist oriented, and indeed, it can be crowded day in and day out especially during the peak season of tourists. There’s a dedicated Thai arts and crafts section, aside from the department store, as well as sections devoted to computer, cell phones and other electronic gadgets. There’s a cinema complex as well and a number of restaurants to complete the “malling” experience. Some people say that prices of goods here are more inexpensive compared to other major malls on the route, but it really depends on what you are buying. These shopping centers are all accessible via the BTS skytrain.

Get trendy in Thonglor

They say, “When in Rome, do as the Romans do.” Well, when in Bangkok, go where the Bangkokians go for dining, drinking, shopping and sheer fun. And where is it today, but in Thonglor? Thonglor – more officially Sukhumvit 55 -- is the new hip street for entertainment as far as young Thai professionals congregate and the city’s chic crowd, including discerning expats and tourists are increasingly getting attracted to. Once simple known as Bangkok’s “Beverly Hills “of sorts – meaning the place where a great many well-placed, high-heeled people live -- Thonglor today (and by extension, Ekamai) has become a veritable true-blue entertainment hub with restaurants, stores, bar and clubs – often described as hip, trendy, chic -- proliferating since the 1990s. Here’s how Wikipedia describes it, “Thonglor considers itself as a place for a residential/commercial/artistic zone with eclectic neighborhood, creative designer, fashionable retailer, conceptual boutique mall, prime residential and entertainment district, surrounded by hip shopping venues, first-class supermarkets, cool entertainment spots, prominent restaurants and leading hospitals.” The main access to Thonglor, if you’re a visitor, is by the BTS skytrain

(Thonglor Station), but many streets from main Sukhumvit Road actually cut through it.

Chill-out in Khao Sarn

Who hasn’t heard of Khao San Road? This famous destination for travelers and budget tourists is like an icon in the world’s backpacker culture, that it is even said that missing Khao Sarn on a trip to Bangkok is akin to missing the Eiffel Tower on a trip to Paris. This short street on Bangkok’s Banglamphu area – dubbed as “The Place to Disappear” by Susan Orlean, offers relatively cheap accommodation (hotels and guesthouses), restaurants, pubs, clubs, shops selling all kinds of night bazaar items; travel agents, etc. It is very near the city’s major tourist landmarks (The Grand Palace is just 1 km away), and it is said that you can arrange your entire Asian trip from here. "Khaosan" translates as "milled rice" and indeed the street was a former major rice market. The street has become a popular chillout place among local residents in recent years, and especially among young Thais probably because it is close to Silpakorn and Thammasat universities, and probably because they have been infected by its growing fun reputation. One Thai writer has described Khaosan as "a short road that has the longest dream in the world."

Cruising along the Chao Phraya River

Bangkok at night certainly dazzles but nowhere is this more spectacular than from a river cruise along the Chao Phraya River. Imagine watching those shimmering temples, glistening skyscrapers, not to mention a rich stream of nocturnal traffic that greets the eye from all corners while you wine and dine in luxurious surroundings. Rivers and canals have always been vital forms of communication for Thais and the Chao Phraya River is especially central to the kingdom’s history. It was on this river that the Bangkokians first settled before gradually

spreading into the core of the country. Traces of this past history can be seen in the varying architectural landmarks along the river. As well, visitors can still get a glimpse of the Thais’ traditional riverine lifestyle even though Bangkok has become an ultra modern city. The river throbs with many river cruises that offer not only magnificent views but also delectable Thai food, topnotch service, and sometimes, even great live music. Tourists can book such a river cruise through travel agents or rent a boat at Tha Chang (Tel: 02 225-6179, 02 623-6169), a pier near the Grand Palace, or Tha Si Phraya (Tel: 02 2353108) near the River City Shopping Complex.

Take in the view – up on the rooftop restaurants

Scaling the heights is a continuing trend in the Bangkok wine and dine scene. Proof? The excellent rooftop bars and restaurants that have been mushrooming around the city, and there are many. Some of these fun places with great views are located at the major hotels – Vertigo and Moon Bar of Banyan Bangkok, 360 Degrees of Millennium Hilton, Red Sky of Centara CentralWorld, Rib Room of Landmark Bangkok, Rooftop Gastro of Siam at Siam, among others – but there are also stand alone places that offer unique experiences and justify being a bit extravagant during your trip, such as The Long Table. Besides the awesome city views of these rooftop venues, many also boasts stunning décor, fabulous food and drinks, and gracious service. One particular place to enjoy rooftop bliss, in a manner of speaking, is The Dome and Lebua at State Tower, which hosts a number of bars and restaurants with different names and themes such as Sirocco, billed as the world’s highest open-air restaurant. Of course, we can list some more, but as travel experts say, “Bangkok has many faces and exploring everything it has to offer is a lifetime endeavor.” It cannot be all accommodated in any simple 10 things to do list! A CIRCUS LIFE: SIEM REAP REACHES FOR NEW HEIGHTS The entire Phare circus is a feel good event – with fantastic performers who want to make Siem Reap and Cambodia a better place, and proceeds going to a great cause.

iem Reap was never noted for much other than those famous temples sitting right on its doorstep. For years, it was a hot, dusty, and pretty uninspiring spot, basically used for a couple of nights rest while touring the temples of Angkor. While it still is pretty hot and dusty these days, everything else has changed. The town has become the No.2 in the world on Trip Advisor, been raved about in countless publications, and while the temples are still pretty magnificent, what rocks the new Siem Reap pretty much happens after dark. Led by an amazing circus of astonishing background, and fueled by a renaissance in novel gourmet cuisine, it’s now a pleasure to spend time in town once the sun has gone down. Not too far down the road from Angkor Wat, a red big top tent has set up, the home of Phare Cambodian Circus (Tel. +855 (0) 15 499480, www.pharecambodiancircus. org). Wander over here in the afternoon and you’ll see the sweat streaming off the bodies of young acrobats as a group of young men and a lone woman stretch, go over choreographed routines, and spend hours performing flips, contortions, and other feats of bodily strength as they prepare for an evening performance. All the circus members have come here through Phare Ponleu Selpak, an association based in Battambang, founded by nine children who survived the Khmer Rouge genocide and found solace via

art therapy from a French teacher in a refugee camp in Thailand. The teenagers wanted to give back and empower other Cambodian youths the way they had been through the arts, so they started a school of visual and performing arts, along with a public school offering free education for impoverished and vulnerable Cambodian children, the results of which have been quite dramatic. Today, more than 500 students have graduated from the performing arts schools, almost double those enrolled in and graduating from public schools, with several performers going on to travel around the world, even performing with the prestigious Cirque de Soleil among other luminaries. The troupe in Siem Reap is picked from some of the most talented performers. They perform a unique blend of traditional Khmer stories, dance, and acrobatic circus arts each evening, and have become the most popular draw in town. The performance troupe writes and plays their own traditional musical accompaniments, and many of the performances focus on the horrors and effects of the war-torn past, yet all reveal plenty of optimism for the future and personal triumph of the human spirit. Pin Phunam, the sole actress in the Sokha dance performance, typifies the Phare success story. As a child, she picked scraps from a garbage dump to help support her mother and siblings. Her childhood is filled with untold suffering, and yet you’d never realize it watching her today.

She has toured much of the world, speaks very good English and French, and is strong and confident. In a still traditional country, where women are seen as loose if they engage in lots of physical contact with men, Phunam has had to resist family and social pressures to stick with becoming a contortionist and circus star. She proudly tells visitors coming to praise her after the show that times are changing, and that she’s proud to be a role model to young Cambodian girls as someone who’s lifted herself up. The entire Phare circus is a feel good event, as the performers really are fantastic, the proceeds all go to a great cause, and it is quite obvious that everyone involved is quite proud of what each one is doing, in an effort to make Siem Reap and Cambodia a better place. While the circus might be the top entertainment in town, it isn’t the only one. Siem Reap is also having

an incredible food renaissance that is a visual art of its own. This year, Cuisinee Wat Damnak, a small upscale restaurant, here became the first Cambodian eatery to be featured in the prestigious San Pellegrino Best 50 Restaurants in Asia list, and plenty of other unique spots are now making their mark. Over near the night market, Davy Blouzard, a Frenchman, and one of the owners of the Bugs Cafe (Tel. +855 (0) 17 764560, www. bugs-cafe.com), discusses tarantulas with his head chef Seiha Soeun, who worked at the Sofitel in Phnom Penh. Combining the market favorite, local insect treats, with gourmet French techniques has proved wildly popular at this new tourist friendly institution, where curious epicures can check out scorpions and green papaya salad, tarantula donuts, insect skewers, and silk worm chocolate fondue from the insect tapas menu. It might sound a bit ghoulish, but the bugs are actually great, and don’t worry, the stingers have been removed, so you’ll be getting more bug than bite. Farther across town at Georges Rhumerie (Tel. +855 (0) 96 8617448, www.georges-cambodia. com), a father and son team from La Reunion Island have continued their age-old tradition of making home-infused rums, using a variety of local spices and ingredients, from kaffir lime to passion fruit. The fine rums are served as shots, mixed into cocktails, or paired with the fabulous Creole cooking that is the

staple of owner Georges’ homeland, which is an eclectic melange of African, Chinese, French, and Indian influences. My tasting platter included badia (Yemeni version of a felafel), samosas stuffed with cheese, and homemade bouchon sausage served as dim sum. The restaurant and bar also does 6-course set dinners with rum pairings, and the popular rums, packaged in colorfully labeled bottles, make great souvenirs. Another great local spot is the pleasant Mie Cafe (Tel. +855 (0) 012 791371, www.miecafesiemreap.com), run by Pola Siv, an amiable young Cambodian chef extraordinaire, who gained experience studying at the Swiss School of Hospitality and working at the Michelin-starred Domain De Chateauvieux in Geneva before returning home to put European gastronomic touches onto traditional Khmer dishes. Standouts include the grilled prawns in amok butter with eggplant, coconut milk, and dried ham, or the carpaccio of fresh snakehead fillet cooked in fresh citrus juice with spices, served with a poached egg tempura. The food is truly outstanding, and the restaurant is located in a charming old traditional Cambodian house just on the outskirts of town. While those temple sunrises are still pretty nice, there’s a lot more beckoning in Siem Reap these days, enough to keep intrepid travelers returning a few times over.

SOMETHING FROM THE HEART A look at how one chef has revolutionized the kitchen in one of Bangkok’s top hotels: Chef Mathew Woolford at Regis Bangkok by Laurence Civil

hef Mathew Woolford from Sydney Australia brings two decades of experience to his new role as director of culinary at The St Regis Bangkok. He first discovered his passion for the culinary art at the tender age of 17 during his first hotel apprenticeship. Two years later, he won the prestigious "Le Torque Blanc Australian" by Tony Bilson. The name of the organization means "The White Hat" and it is the Executive Chef Association of Melbourne, Victoria. Mathew first came to Thailand 13 years ago with Evason Phuket. He then moved to Singapore to open his own stand-alone restaurant, which was where the management of Starwood's Southeast Asia Regional Office frequently had lunch. The food he served must have impressed them as they offered him the executive chef role at Rayavadee Krabi. Mathew there only for eight months because the management contract was coming to an end, but he recalls it was the most beautiful part of the world he had ever worked. Although not planned, it became a defining moment in his career. It introduced him to W Hotels. He was responsible for opening the kitchen of W Seoul Waterhill, which was Starwood's first W Hotel in Asia and then he went to W Koh Samui, which was their first retreat in the region. "W Hotels produced who I am as a chef," says Mathew. "It gave me the confidence to challenge the norm and to change the way we look at things."

In 2010, Mathew joined the ranks of the 15 Executive Chefs at the Starwood F & B Council where he became a Brand Champion for St Regis, W Hotel, Aloft and Le Meridien's cuisine concept. Ironically, it was in this role that he became involved in the planning of the kitchen at the St Regis Bangkok where he works today. So, when the General Manager, Krister Svenson, invited him to come onboard, he already knew his way around. In terms of branding, W Hotel and St Regis offer totally different experiences but what links them is luxury. Mathew's move from the party house of W to the refined mansion of St Regis isn't as revolutionary as it might first appear. The innovation required was in the thought process, as he had to think outside the box to find a fresh approach to the way things were being done. Having a fresh concept is the start but the next step is to deliver it in a way that is compatible with that brand's DNA. His first innovative idea was the new "Lunch with a View" menu at VIU, which captures the taste and texture of each dish through fine ingredients. His "Food from the Heart" philosophy is based on the concept of using interactive cooking stations that bring the culinary theatre to life. "Today's guest doesn't just come to a restaurant to eat," he says. "In addition to food and drink, they are looking for a dining experience. To meet that expectation, I am trying to

get my team of young talented chefs to get more involved and to produce something from their heart. Empower them to do what they want to do and to bring their core passion for their art of cooking to the table. Our chefs are there not just to cook, but to guide our guests through their meal. My biggest challenge is to maintain consistency. We want to encourage guests to ask questions about where the fresh ingredients are purchased and to tell us how to tweak the dishes to match their individual taste preference. I set out some basic guidelines to the culinary team; I leave it to them to experiment on how they deliver each dish to the guests based on their personal interactions." "Historically VIU has been perceived as the all-day dining restaurant of St Regis Bangkok," he says. "I am now working to build its identity. Daytime it is a cafe that uses ingredients from local markets to produce simply prepared meals and is ideal for meetings with family, friends and business associates. The change from day to night is an integral part of the DNA at St Regis, so in the evening it will change to have a New York Bistro feel." The afternoon tea ritual was inspired by Mrs Caroline Astor, wife of the founder of St Regis, and is now another key element of the St Regis’s DNA. "I am currently starting to work on our “Afternoon Tea” menu. It's not just about serving sandwiches daintily cut without the crust. I am looking at how we can bake the right

breads to go with different fillings. Freshly baked scones served fresh within 20 minutes of coming out of the oven, so they are deliciously moist. No whipped creams - with scones for afternoon tea it has to be clotted Devonshire cream served with homemade fruit jams. Getting it right is all about refining the products and training the team to use the right techniques." There was a more than subtle hint that there would be a change in the Champagne service but I was told I would have to wait and see what will happen, which I am doing with eager anticipation. However, he did confirm that the highly talented Stefano Merlo would be joining his team as Italian Chef at JoJo's after the Songkran holiday. HIDDEN TREASURES Discover the real taste of Italy in Bangkok at Enoteca Italiana Restaurant on Sukhumvit Soi 27

n life it requires effort to gain a reward, and the walk along the twisting, narrow back lanes of Sukhumvit Soi 27 offers a huge reward, as you will find a delightful gastronomic gem there. As the scorching Siam sun slips slowly below the horizon, we saw it - Enoteca Italiana - offering a welcome sanctuary from the steaming and teeming city streets. (Sukhumvit 27; Tel: 02 258 43386; www. enotecabangkok.com) It was like entering a secret garden, with its perfectly trimmed lawn separated by a stone path and lights glowing from inside the beautifully renovated house, with its four arched windows stretching from the polished wooden floors to

the ceiling. Greeted by the genial manager/owner, Bologna-born Nicola Bonazza, at the door, the conviviality was almost tangible and the senses were quickly engaged. In the main dining room, soft music seduces the ears and as we eased into wicker chairs at a mahogany table, our eyes took in a curved brick counter laden with Italian smoked hams, salamis and cheeses. Garlands of onions and garlic hung like edible chandeliers from the ceiling. An eclectic mix of advertising signs and assorted memorabilia adorned the walls and a whole side of the interior was devoted to quality wines of which there are more than 350. This makes it one of, if not the most extensive and diverse collection

in the capital. For those planning a party, there is a larger area at the back of the restaurant. Enoteca literally translates as “wine library” and after being established in 2004, it has developed from its original concept of simple food and wines to its present aim of providing gourmet dining with a new take on traditional Italian cuisine. ‘We like to transform classic dishes and elaborate on them in a creative and playful way, and give them a modern touch, while never compromising on taste!’ explained Nicola. The raft of awards and plaudits Enoteca has received since its inception pays ample testimony of how successful Nicola’s objectives


smooth carrot cream and peanut starter. An intriguing black ink cappuccino arrived at our table first made from parmesan cheese, cream of potato and squid ink. Nicola was quick to come over and advise us that many of the dishes need specific instructions to make eating them more memorable. Although I could not detect the cappuccino, this wasn’t important to the joyfulness of the meal, and the mellowness of the cheese and cream potato blended wickedly with the ink. I thought we had wandered onto the set of "Star Wars" for a moment with the next dish, as a spaceship-like glass container was presented with the Enocteca name on the top of the clear plastic covering. Nicola sliced the top open to reveal a smoked sea scallop with apple. The scallop was juicy and was a lovely combo with the citrus taste. A very pleasant Sicilian house red - Hiera-Nero D’Avola - was imbibed. Then the waitress offered us spaghetti

have been. It has been rated as not only one of the top ten restaurants in Bangkok but was runner up as restaurant of the year in Asia and Australasia. The mix of diners is as diverse as the objet d’art that decorates the environment, as we listened to Thai, American, German, and Middle Eastern accents all around us. Nicola is a very hands-on manager. We saw him slicing hams at the counter, taking orders, making phone calls and meeting new guests at the door. His staff too were attentive but allowed time for us to finish and relax before collecting plates and refilling our water and wine. We sampled the ‘degustation’ menu, which in culinary terms means a careful tasting of various foods and usually involves trying small portions of a chef’s signature dishes. While sipping on the refreshing house white - Friuli - we enjoyed some fresh Italian bread including ciabatta and focaccia as an introduction. Then we were treated to a gloriously

and tomato water with burrata. Nicola warned us to expect the spaghetti would be unusually crunchy because of it special preparation. He had no need for anxiety, however, as it provided yet another truly flavorful dish. Risottos are served as standard in Italian restaurants the world over, so we wondered what Enoteca’s talented Chef Stefano Merlo could concoct to shake us out of our complacency. His Risotto with Roccaverano-goats cheese, hazelnut, lemon and thyme did just that, with its zingy fusion sensation, which lingered for a long time. Delicious slow-cooked, succulent veal belly completed the main. As a self-confessed chocoholic I sat bolt upright at the arrival of the dessert – A Sicilian cassata hot chocolate foam nesting temptingly on a bed of crushed ice and laced with rum. It could inspire me to poetry, but describing it as wonderful will suffice. Enoteca is a place to go for high quality, exciting and inventive food, in a friendly and relaxed ambience, and as the saying goes: book early to avoid disappointment!

uestion: What do you do when you are not allowed to have a pet cat as a child? Answer: You wait a few years and then open a café where they are more than welcome. This is exactly what the owner Patcharanun Pokinpatcharawat (Beam) did three years ago when she set up the Cataholic Café and, what was then, the first feline-themed eatery in Bangkok. the end of Sukhumvit 39, close to Petchburi Road and based in the animal-friendly Ozono complex. Once there however, any anxiety is swiftly removed as you enter a small but perfectly formed single room that is light and airy. The room is home to funky objets d’art that fill the miniature shelves, a long sofa, plump cushions, small and low slung tables and, of course, the cats … and lots of them. “I got the concept from Japan and, with a friend, we decided to establish a café in Bangkok” explained Beam. The idea of numerous furry creatures crawling around as you eat may not appeal to all, so hygiene is very important and first-time visitors must bring a vaccination document if they want to bring their moggies. There are also signs on each table instructing patrons how to treat the cats. Just in case business is slow, Beam has 22 cats of her own, which

she brings in on different shifts. As with her pets, customers come in all shapes, colors, and sizes, with a mix of expats and locals. The environment is extremely relaxing; watching the languid grace with which the pampered pusses move around cannot fail to make you smile. Emphasizing the cleanliness aspect, we used spray soap for our hands before we ate. A pair of eyes, a cat’s, not my wife’s, peered curiously at me as we shared the signature dish which consisted of a gorgeous and generously thick slice of honeyed toast, a nest of whipped cream and topped with vanilla ice cream and more of the golden honey. Several more members of the feline population looked on enviously as we then devoured a chocolate brownie, which came with cute, cat-styled cutlery. An iced green tea with lemon soda to finish was most refreshing. The Cataholic café is cool for cats and humans too.

HOME OF ‘YADONG’ AND WORLDLY TUNES At Studio Lam, there’s always an international groove going on and not only because of the mixed crowd

n an old Japanese restaurant on Sukhumvit Soi 51 you can find some dudes listening to some grooves. You can find some girls sipping on yadong and you can find a great tube sound system. You can find old Thai records decorating the wall, and you can find a dive bar interior. Not far from WTF you can find Studio Lam (Sukhumvit Soi 51; Tel: 02 261 6661). There’s an international groove going on and not only because of the mixed crowd. Rare vinyls or cassette tapes are being produced behind the DJ booth, music that has its origin in Sumatra or Nigeria. Finding this place is akin to traveling

on the Niger to Krakow on a Thai train: from Kingston to Ubon, from Accra to Korat, and from Asmara to Bandung. It’s the music your distant aunt was listening to when she was having that affair with a black sailor in Mombassa. If you know Studio Lam and/or Zudrangma records, then you don’t need to read any further. If you don’t, please do. Studio Lam started as a Zudrangma radio podcast in 2008, broadcasting heavy Luk Thung and Molam across the Internet. In 2014, it became an offshoot record label of the Paradise Bangkok parties. The place is quite small and has seats for 10 to 15 people and during the weekends it can get packed, especially if they throw parties. They’re open from Tuesday till Sunday from 6 p.m. till 1 a.m. If you want to get a taste of the music they’re into at that hipster dugout, you should visit www. zudrangmarecords.com/ and listen to their podcasts under the radio section. That’s not the only stuff you’ll hear at Lam, but it gives you some idea. At some clubs, DJs are required to play certain songs. It’s good to know there’s another kind of party, too.

A night at MIXX Disco, Bangkok, promises to be a night to remember

I

n a city renowned for the quality, quantity, and variety of its nightlife, winning an accolade for top nightclub in any single year is a significant achievement. So, to do it for three consecutive years from 2012-2014 is even more remarkable. MIXX Disco located on the ground floor of the InterContinental Hotel Bangkok (Tel: 02 656 0383) - is the proud bearer of that distinction. After the success of its sister operation in Pattaya, the club was opened in 2010 and it has built a reputation as being the place to be seen in the capital. Enter through the solid double doors of the basement and you are in the non-smoking Hip Hop room.

Long sofas face each other across the open dance area and along the rear are several crimson-curtained VIP booths, which are reserved for groups or small parties. A collection of bar stools stand behind the sofas, offering more opportunities for intimate conversation. Billowing ruby drapes cover the low ceiling and below are large chandeliers with replica candles. The obligatory glittering crystal ball hangs over the dance area. The DJ station looks down on the floor and to each side of it are metallic-railed podiums, where the dancers perform. The dĂŠcor suggests unashamed opulence, with gold-colored cherubs adorning the four corners of the

substantial bar area and other statues perch above the sofas. Framed reprints of classic nudes occupy space on the walls, including the birth of Venus. As befits its the name, elegance is merged with modernity as TV screens play music videos blinking from all sides. MIXX comprises two rooms and moving through a small tunnel brings you into the House Music area, which allows smoking. This is a kaleidoscope of blues and purples as well as laser lighting, giving it a different feel from the Hip Hop room. Trance and progressive house music are pumped out here. Applying the correct ingredients of atmosphere, music, and environment and blending them effectively is easier said than done. Yet it is something MIXX has proved itself to be a master at, as General Manager Mate Vundac explains: “We believe we have created a great combination of sounds and a there is a terrific vibe about the place, but not only that, what I think is a major part of our success, is the attention to detail in how we treat our customers.” He is not complacent, however, and emphasizes that to keep its No. 1 position, MIXX will strive to keep improving and offer new events and surprises to its patrons. MIXX opens nightly at 10 p.m. but the party really gets going around midnight, when the volume increases

and much of the attention is on the entry of the sexy twin teams of coyote girls. Clad in skimpy lingerie and skyscraper heels they clamber onto their respective mini-stages and produce some wonderfully mesmerizing gyrations. Taking their cue, more people crowd around the floor below and bottles in hand, they shimmy and strut their stuff. The guests are as diverse as the range of cocktails available and include locals, tourists, and expats. It was interesting to see a spread of ages from young professionals to more seasoned individuals. The breadth of nationalities was also very pleasing to witness. There is a dress code and smart casual is in, but sandals, shorts, flip flops, and beach wear are out. The strong focus on customer service is evident with a small army of black and white shirted staff attentive, but never pushy. They take orders from tables and return with drinks, or you can get served at the bar where staff will advise guests on seating arrangements. Many are greeted as regular visitors by the waitresses and

there is a superb and almost tangible buzz to the venue. One of the cornerstones of MIXX is the variety of events and promotion nights on offer, including the popular Ladies Nights on Wednesdays as well as events featuring celebrity DJs. The energy of the guys playing the tracks encourages the audience to get up and dance. I am not a party pooper, but I declined to boogie on this occasion and using the excuse of middle-aged spread, I reclined Roman Emperorlike with my wife on one of the luxurious sofas, people watching and indulging in some choice drinks. We sampled a most refreshing Mojito and a signature Bangkok MIXX cocktail, which was a punchy union of gin, rum, whiskey, vodka and tequila. It is always fascinating to see the changing dynamics of a club over a period of time and from the quiet start at MIXX to the pulsating throng enjoying themselves a couple of hours later. When we reluctantly departed at 1 a.m. when the room was jumping but one thing’s for sure - we will be back!

W

hen the weather is hot, drinking wine is less pleasant than a good ice-cold beer. However, hard-core wine lovers won’t give up easily their favorite drink. Some wines are qualified as fresh. Actually, the sensation of freshness we have in the mouth when drinking a wine is given by the level of acidity. The more a wine is acidic, the more we have a perception of freshness. One of the most friendly wines to drink when temperatures are on the rise is Sauvignon Blanc. If you like bone-dry wines with aromas of green fruits, you can pick up a Sauvignon Blanc from such as a Sancerre or a Pouilly-Fumé from the Loire Valley. If you prefer a tropical fruit aroma, you can go for a Sauvignon Blanc from New Zealand. If you do not fancy white wines, you can choose a rosé. They are increasingly popular in most international wine markets, where their seasonal consumption peaks in summer. They can be made with

a wide range of grape varieties like Grenache, Cinsault, or Syrah. The classic region for the production of rosé is the south of France, especially in the appellation of Côtes de Provence, where it represents 80 percent of global wine production. High temperatures do not mean that you must avoid red wines, but you should skip Cabernet Sauvignon, Syrah and all full-bodied wines that might be too heavy to be enjoyed in hot weather.
