ctober 13, 2016 will go down in history as a singularly important day in that it marked the end of Thailand’s glorious era. It was the day that the King of Thailand, Bhumibol Adulyadej, left for his heavenly abode leaving behind millions of loyal subjects in great sorrow. The beloved King was the longest-reigning monarch in history, and during his 70-year reign, was the object of deep respect, love, and esteem, and has become a true inspiration – as Father of the Nation. His sincere regard for the upliftment of his country and people was manifested in the more than 5,000 Royal Projects that he initiated, encouraged, inspired, or suggested for their benefit. The King was very much revered not only by the Thai people but also by the outside world, as proven when millions from the foreign community -ethnic Indians, Chinese, Japanese, Europeans, Americans, and other nationalities -- turned out en masse to pay their respect to the great King.
King Bhumibol left a long list of legacies on many fronts. He was a great sportsman who excelled in many athletic pursuits. He even had the distinction of winning a gold medal in the sailing competition during the 1967 Asian Games. But King Bhumibol’s greatest leisurely interest was in the field of music. He was both a composer and musical performer. The King wrote dozens of songs and musical compositions, and performed many of them in the company of several famous international musicians during the 60s such as Benny Goodman. With his own musical gifts as well as his wide-ranging support for, and royal patronage of, the Music Association of Thailand, he played an important role in preserving Thailand’s musical heritage. The King initiated numerous development projects around the country. With a vision to make Thailand a rich, agricultural economy, he initiated the digging of ponds and wells, the building of manmade lakes, and the spread of irrigation systems to droughtstricken parts of the kingdom – the results of which are now
being reaped by a country that has become a food supplier to the world. One of King Bhumibol’s biggest advices to the Thai people, and one that reflects his visionary reign was the “selfsufficiency” concept, which led to many programs that eventually put Thailand in the forefront of economic sustainability. King Bhumibol did not only dedicate most of his time to the betterment of his country and his subjects inside the palace study or his research laboratories; he also spent a lot of time to be with his people. He actually lived a very common life, and spent most of his time visiting the poor, no matter how remote the area of the country they live in, to make sure that they also benefit from the country’s growth and development. King Bhumibol is not with us anymore but his teachings, his compassion and benevolence, his wisdom – and what he did for his subjects will be remembered for many years to come. In our hearts and in our minds, King Bhumibol Adulyadej will forever remain: the greatest of Kings, the King of Kings.

‘I
was born under the reign of the world’s greatest king,” echoes several posts by netizens in Thailand, reflecting the pride and reverence that the Thai people feel about King Bhumibol Adulyadej, who passed away on Oct. 13. Outpourings of grief flooded not only the social media but also other media channels far and wide after it was announced that the King had passed away peacefully in his bed, in what can be rightfully described as an end of an era. It ended the longest monarchial reign ever in the history of the world, a rule marked by benevolence, compassion, visionary foresight, generosity, and achievements that set the kingdom to the path of a solid future. The beloved monarch was not only a great King, leader, or head of state. He was a father to all Thai people, the rock that holds the kingdom during times of crises and uncertainties, a pillar of strength and stability -- the Soul of the Nation

indeed. His death was not only a great loss for Thailand but also for the world at large, for King Bhumibol epitomized the best example of true leadership that any country could aspire to. Throughout his long reign – 70 years, 126 days to be exact –King Bhumibol endeared himself to his subjects because of his deep concern and genuine affection for them beyond the call of royal duties. In both his personal life and in his royal role, King Bhumibol was a beacon of what a great human being should be; a paragon of grace, humility, and love; a shining inspiration for all to follow and emulate. Since his accession to the throne at the age of 18, the King dedicated his life's mission to the betterment of his country and his people. In his own words: "My place in this world is being among my people, the Thai people.” During his reign, indeed, Thailand grew and developed from
a sleepy Asian country to one of the most vibrant economies in the region. As a colleague from Bangkok Post describes his reign: “Amid rapidly changing and sometimes turbulent times, the King became a symbol of stability and continuity. Amid moral decline and social divisiveness caused by greed-driven development and money politics, the King was our center of honesty and unity. “Indeed, the King has left behind a long list of achievements as a testament to his lifetime devotion to the people,” the same writer succinctly said.
THE EARLY YEARS
King Bhumibol was born in Cambridge, Massachussetts in the United States on Dec. 5, 1927, the only Thai King to have been born on foreign soil. At the time, his father, HRH Prince Mahidol, the Prince of Songkhla, was attending Harvard University’s public health program.

He was the youngest son of the Prince and his wife, Mom Sangwan (later to become HRH Princess Srinagarinadra, the Princess Mother). His name was given by King Rama VII (Parajadhipok), and means, “strength of the land, incomparable power.” The young Bhumibol came to Thailand in 1928 after his father received a certificate from Harvard. His father passed away from kidney failure the following year when he was just two-years-old. In Bangkok, the future King attended Mater Dei but in 1953, his mother took the family to Switzerland where he continued his education at the École Nouvelle de la Suisse Romande in Lausanne. When his childless uncle HRH King Prajadhipok abdicated in 1935, his nine-year-old brother Ananda became King Rama VIII. But the family remained in Switzerland, returning to Thailand only for two months in 1938. King Bhumibol ascended the
throne following the death of his brother, King Ananda Mahidol, on June 9, 1946 but he returned to Switzerland before the end of the 100day mourning period. To prepare for his duties as head of state, King Bhumibol changed his major and enrolled in law and political science -- despite his interest in science and technology. While finishing his degree in Switzerland, the King visited Paris frequently and met Mom Rajawongse Sirikit Kitiyakara, daughter of the Thai ambassador to France, who was soon to become his Queen. A quiet engagement in Lausanne followed on July 19, 1949, and on April 28, 1950, just a week before his coronation, they were married. The royal union was blessed with Princess Ubolratana Rajakanya (former HRH); HRH Crown Prince Maha Vajiralongkorn; HRH Princess Maha Chakri Sirindhorn; and HRH Princess Chulabhorn Walailak. King Bhumibol was crowned
King of Thailand on May 5, 1950 and pledged that he would "reign with righteousness for the benefit and happiness of the Siamese people."
A KING OF TALENTS
King Bhumibol's innate compassionate and caring nature was complemented by a gift of various talents, especially in the fields of arts, music, and sports. For one, the King was an avid photographer. In his frequent travels to the Thai countryside, the King always carry a camera, as his photos show. He developed a passion for photography since he acquired his first camera in 1934; a passion that was to last a lifetime. King Bhumibol was also an accomplished musician. The King became an ardent jazz enthusiast in 1942, and performed as much as his busy time permitted. He played the saxophone like a true professional and even composed music – 49 in all. The compositions were mostly jazz
swings but also included marches, waltzes, and Thai patriotic songs. The King even formed a band so he could regularly share his love for music with his subjects. The King was also an accomplished sailor and sailboat designer. In 1967, the King won a gold medal for sailing in the 4th Southeast Asian Peninsular (SEAP) Games, together with (then HRH) Princess Ubol Ratana, whom he tied for points. The King has sailed the Gulf of Thailand from Hua Hin to Toey Harbour in Sattahip, covering 60 nautical miles (110km) in a 14-hour journey on the "Vega 1," an OK Class dinghy that he built. As an avid boat designer and builder, the King was credited for producing several small sailboat designs.
MOST HARDWORKING MONARCH
King Bhumibol was described as the most hardworking king in the world, and deservedly so. Throughout his 70-year reign, the beloved King initiated thousands of Royal Projects that continue to be viable and effective in improving the lives of many Thais today. In a speech at the Kasersart University Commencement ceremony on July 19, 1974, King Bhumibol explained: "The development of the country must be fostered in stages. It must start with the construction of infrastructure, that is, the provision of food and basic necessities for the people by methods which are economic, cautious, and conforming with principles. Once the foundation is firmly established, progress can be continually, carefully, and economically promoted. This approach will prevent incurring mistakes and failures, and lead to the certain and complete achievement of the objectives." King Bhumibol became deeply involved in many social and economic development projects. Even at the time (1951–1957) when the King’s power was still limited to a ceremonial role, King Bhumibol was already producing some films and operating a radio station from Chitralada Palace using his personal funds.

Between 1958 and 1980, his reputation as the "Development King" grew even further, and more and more royally ordered projects were implemented under the support of the government. Many of these projects have been greatly instrumental in the improvement of lives in the country’s rural communities. The royal projects increased even more in the following years as the government allocated budgets and manpower to support the royal initiatives. Among the most notable activities during this period involved the development of large-scale irrigation projects in the rural areas, such as the Bhumibol Dam. After the Chaipattana Foundation was established in 1988, King Bhumibol started promoting his "sufficiency economy" concept as an alternative to the export-oriented policies adopted by previous elected governments. In 2006, this "sufficiency economy" was enshrined in the Constitution as a primary goal of the government, boosting government financial support for royal projects. Among the many projects suggested by King Bhumibol was the construction of the Rama VIII Bridge and the Huai Ongkod land reform project in Kanchanaburi. King Bhumibol's most successful initiatives include the several Royal Agricultural Projects in the north of Thailand. In the past, many areas in the north were planted with opium but the Royal Projects encouraged the ethnic tribes to become mainstream farmers instead, with experts, specialists, and scientists guiding them so they can grow, sell, and earn their produce and wean them away from opium-growing. Today, opium growing has been totally eradicated and Royal Project products continue to thrive and increase; they have become available everywhere in the kingdom. King Bhumibol was also one of the most traveled Thai kings, and was known to spare no effort to get to know each and every corner of his kingdom. During his field trips, the King would bring an entourage to study
what the areas need to develop, and improve the lives of its residents. Often during his village tours, King Bhumibol would bring a Royal Medical Team along with his accompanying private physicians, who were also encouraged to provide medical care for local residents. King Bhumibol's royal initiatives are much too many to be listed here in detail. There are thousands of royal initiatives that the King initiated, inspired, encouraged, or suggested. As of 1998, there were already 2,159 royal development projects initiated by King Bhumibol and implemented throughout the kingdom. Today the projects number more than 5,000. As Prime Minister Prayuth proudly pointed out when he officially announced the passing away of King Bhumibol: "The King led Thailand to unprecedented development, progress, and modernization, during his long reign." He wasn’t exaggerating. For his unprecedented achievements – ranging from public health and numerous charities to his rural development projects nationwide and his efforts to create for Thailand what he calls a “sufficiency economy” -- the United Nations Development Program honored King Bhumibol with its first Human Development Lifetime Achievement Award on May 26, 2006. But perhaps no other honor can compare to the love, respect, reverence, and loyalty than those bestowed and accorded to King Bhumibol by his millions of subjects. Before his health declined in 2006, King Bhumibol was still working on many projects and research and development studies with an aim to further improve the lives of his subjects. With his passing away, Thailand did not only lose the longest-reigning monarch in its history. The world lost a great king whose intelligence, talents, wisdom, benevolence, and compassion showed us all – by example -- how we could help shape the world that we live in today: for the benefit of all.

chat. A place that might be considered a well-guarded secret is BKK Bar (Chaiyapoom Road). If you want to go where the locals go, this place is it. There is also the Chai Blues House and Tiger Bar (Charoenrat Raj Road), Blar Blar Bar (Nimmanhaemin Road, Soi 7), and JJ Market Zone (Assadathon Road).

– named after one of Chiang Mai’s oldest families – is now teeming with boutique hotels, restaurants, bars, art galleries, fashion and décor shops (Soi 1), and cafés, which has given it the monicker, “Coffee Street.” Visit Wawee Coffee Shop, 94 Coffee, and even Starbucks – among the about 90 or so cafés that line the street – and you will agree. A big highlight is the Nimman Promenade, at the intersection of main street and soi 4. Whoa Over Cuppa – Coffee shops are definitely the "in" thing, mushrooming not only at Nimman but also in other highly populated and more touristic areas such as Changklan. Apparently, a new coffee shop opens in Chiang Mai on average every 48 hours, with some doubling as art galleries (another hot trend). One popular new coffee house is Café de Oasis (202/9 Moo1 Route 4307, Changpuak, Muang, Chiang Mai // Tel: 053 414 190). Love the Nightlife – Chiang Mai is not Bangkok, but there are numerous exciting places in the city to hang out and bring your friends for a drink or

Music and All That Jazz – Music has always been a part of local lifestyle in Chiang Mai and today the pubs of Chiang Mai are playhouses of various musical genres. Bands can be easily found for some live musical entertainment, and especially in the riverside restaurants. The Good View Restaurant (Tel: 053 241 866// gv.chmai@gmail.com) continue to be a major hotspot for visitors who prefer to have some live music and al fresco setting. More Eating and Drinking – Two of the most popular hotspots are Le Coq d'Or Restaurant (Tel: 053 141 555), and Le Crystal (Tel: 053 872 890), which is in a beautiful garden setting beside the Ping River, making it a dining destination for the location itself. There’s also Giorgio (Tel: 053 818 236), which has built up a sterling reputation as a favorite of VIPs when they are in Chiang Mai. Of course, the five-star hotels and resorts are dependable venues for this kind of sorties. Oh, there’s also Sireeampan Resort, which might surprise you with its bespoke F&B offerings! Among the first restaurants we’ve visited here as tourists were: Antique House (081 724 6332), a beautiful 100-year-old teak-built house with good service and Thai food perfect for Western palates. If you are the healthconscious type, then The Whole Earth
(Tel: 053 282 463) is for you. These are just a few, of course. To Spa or Not to Spa – There are more than 40 legitimate spas in Chiang Mai to choose from for your own kind of pampering. And while on it, try to experience a traditional Lanna massage and healing therapy (Thai Lanna Spa Association Tel: 053 298 220; www.thailanaspa. org). “I think Chiang Mai is the most special place in Thailand,” says Toby Allen, CEO of the Chiang Mai-based Tap Technology. “This city is big enough to have everything you want yet small enough to be able to find it. If you need some more leisure, you can just pop into the outdoor infinity saltwater swimming pool on the 8th floor (access is free) for a dip, or go to the fitness center, which is open 24 hours a day, to stay in shape. As can be expected, breakfast is complimentary – and the buffet, on the 7th floor, is quite a feast. The 7th floor in fact deserves a special mention because this is where you enjoy indulgent dining. Prime restaurant offers topnotch all-day dining, besides buffet breakfast and
lunch. The adjoining Prime+, built to become a premium steakhouse, presents an intriguing new fine dining experience for gourmets. Must-try indeed. It’s a pity that during our stay, their Sky Lounge is still closed. From what we were told, this lounge offer spectacular views across the city, which makes a perfect backdrop for an evening of sophisticated unwinding. As will Mojjo Cuban Restaurant & Cigar Lounge, on the 32nd floor, which will offer a Havana-like ambiance, cigars and authentic Cuban cocktails, and Vanilla Club night club and Vanilla Sky rooftop bar, both of which are on top of the 35th floor with guest DJs from around Asia. Definitely great for leisure stays, Compass SkyView Hotel should also appeal to businessmen especially those who intend to host or join company functions or events as the hotel offers everything needed to fulfill such requirements. Of course being very new, the hotel is still fine-tuning many aspects of its operations and service, but hey, who are we not to cut them slack for their current efforts? Bangkok – Expedia, the world’s largest travel company, has revealed that international travelers are increasingly heading to a number of key destinations across Thailand. The group reported notable growth in Chiang Rai, Pattaya, and Hua Hin. Expedia group data for the first half of 2016 highlights a healthy growth in international demand across all the three destinations. Expedia’s hotel partners in Chiang Rai benefited the most with a yearon-year growth of 70%, followed by Pattaya (60%), and Hua Hin (40%). With over 450 million monthly visits across Expedia’s portfolio of travel brands, the United Kingdom and United States are two of the top inbound markets that make up almost one fifth of the total demand to Chiang Rai and Pattaya. Consistent across all three markets, international travelers are proving to be more valuable than domestic travelers as inbound visitors book over a month in advance, surpassing that of domestic Thai travelers by nearly two times. They are also staying 1.5 times longer than domestic visitors. International demand for Expedia’s packages rose across

MAGICAL GUILIN Modernity and mass tourism may have changed things a bit, but Guilin remains a mesmerizing spot, as the region is home to a host of stunning natural sights by Dave Stamboulis

T
here is an old Chinese saying that says, “The mountains and waters of Guilin are the best under heaven,” coined by the ancient poet, Hanyu, who also remarked that “the rivers look like blue silk ribbons and the mountains resemble emerald hairpins.” While modernity and mass tourism may have slightly changed things, Guilin still remains a mesmerizing spot, with the region home to a host of stunning natural sights. Guilin, one of China’s greenest and most pleasant cities and the capital of Guangxi Zhuang Autonomous Region, is set on a series of connecting lakes, and surrounded by phenomenal karst topography, with hundreds of vertical limestone peaks jutting up across the horizon. While the city itself is an easy place to spend a few relaxing days, wandering along the lakes and in the abundant city parks festooned with traditional stone arch bridges and tall pagodas, the real appeal of a visit here lies outside of town. I started a recent journey here with a visit to the ancient village of Xingping, which lies along the famed Li River. Immortalized in Chinese poetry and song, the Li flows for around 500km, of which the 100km stretch from Guilin to Yangshuo takes in the most stunning scenery. The karst peaks, reminiscent of Halong Bay in Vietnam or around Krabi here in Thailand, are everywhere, poking up into the sky, their jungle clad walls plunging straight down into the whirling currents and eddies of the fast flowing Li below. The Li scenery is considered to be one of China’s most riveting attractions, so much so that even the Chinese 20 yuan note has a section of the river and mountains imprinted on its backside. Boat trips, ranging from bamboo rafts to more luxurious cruise boats, are the most popular way to enjoy the sights, but for the more intrepid, renting NOVEMBER 2016 | 29

a bicycle or navigating on foot is a far more interesting way to go. The banks of the Li have centuries old walking paths that traverse through orange groves and verdant farms, and paths wind their way up and through the limestone, even giving access to the summits of some of the sharp pinnacles, such as that of Xianggong Mountain, a peak that required bicycling up to for an hour and then walking up a precipitous mountain trail to reach the entrance to the peak. The rewards are plentiful though, with views down to the boat traffic on the Li below, with stone peaks standing like sentinels in the shadow of the sun, with vistas more fit for birds than man. There is also a stunning view over Xingping and the hundreds of mountains bathed in the setting sun’s orange glow right above the village, accessible via a steep mountain path that requires clambering up several vertical ladders near the summit, and scrambling out on to some rock overlooks more suited for the local goats. Needless to say, some world class rock climbing routes have emerged from this area in the last few years, and one could spend months wandering through the little visited backcountry here, which most of the package boat cruise crowd completely misses. In addition to the mountains and rivers, the Guilin region is also noted for dazzling rice terraces,

which tumble down from exquisitely sculpted fields that have been worked by the minority Yao and Zhuang people since the Yuan Dynasty in the mid 1200’s. Known as the Dragon’s Backbone rice terraces, the fields are breathtaking year round, although at their peak in late May, when they are irrigated for planting, or else in October, when they turn completely golden prior to harvest. While the Chinese have built a ropeway cable car and made inroads into this gorgeous area, the best vantage points are still reserved for those who want to do it the old fashioned way, trekking on foot into the hills, and staying in large old wooden Yao houses, with creaky stairs, cozy rooms, and superlative views over the surroundings. The Yao
here are famed for their women’s hair, which they never cut during their lifetime. Not only do they don’t cut their hair, but also, they pick up strands that fall to the ground and save them to weave into their existing coifs. In their colorful hand-knitted dresses, the Yao add a vibrant cultural aspect to the magnificent scenery, and it is easy to spend several nights in different lodges here, hiking across the mountains to explore the different valleys and viewpoints by day, and chatting with the amiable Yao over local cuisine at night. Outside of coming here during the autumn moon festival or other public holidays, this is China at its best, far from the maddening crowd.
TRAVEL TIPS Getting There: Cathay Pacific and China Southern Airlines are among the carriers that fly from Bangkok to Guilin. All require a stopover, with the nearest connection being via Nanning. Buses, mini-buses, and privatevehicles are all available from Guilin City to Yangshuo and Xingping, where the heart of the river/mountain scenery is to be found. The same vehicles make the journey to the rice terraces at Ping’An and Jinkeng. If you are pressed for time and want to see both the rice terraces and the river scenery, it’s best to take a tour, which will go from one directly to another without having to return to Guilin. Even better, hire a private driver.
the Li River with excellent mountain views, and is by far the most luxurious spot to stay at in the region. For trekking in the rice terraces, the atmospheric old wooden Yao lodge Tian Ranju Inn (www. tianranju.info/) offers a fantastic opportunity to experience local hospitality as well as a breathtaking location overlooking some of the most scenic terraces. Do note that it is about a 45-minute trek up to reach the inn, although Yao porters are available to carry your luggage.
Do -- Trekking around the rice terraces of Jinkeng and Ping’An are a must-do highlight. Trails start from both Dazhai village and Longsheng Stay -- The Banyan Tree Yangshuo village. (www.banyantree.com/en/cn-china- For the most dramatic terrace yangshuo) has elegant villas set along views, walk an hour from Longsheng
to Ping’An village (which has plenty of overnight accommodation), and then a 45-minute steep climb up to the spectacular viewpoint above it. From Dazhai, there is the choice of a ropeway or else walking up to the Jinkeng rice terraces. Those with time can cross the mountains from Jinkeng to Ping’An in a day. The most spectacular Li River scenery is found between Yangshuo and Xingping. Most visitors take a boat cruise down the river, and Xingping has far more rural and authentic charm than Yangshuo. Bicycling is a great way to explore the region, and walking alongside the river is also easy. For the best views, either climb up Xianggong Mountain, best for sunrise, or else Lao Zhai Shan peak, best for sunset, right above Xingping village. NOVEMBER 2016 | 31

A FIT FOR ENOTECA Michelin-star chef Stefano Borra brings his culinary skills and passion to delight discerning foodies at Enoteca by Percy Roxas
W
hen it opened in 2004, Enoteca Restaurant on Sukhumvt 29 started out as “a place for wine and simple food” -- as owner Nicola puts it. But today it has been delighting discerning food lovers with consistently high-quality, gourmet Italian cuisine, thanks to the new breed of top international chefs who have been coming over to Enoteca to help make it one of the leading contemporary Italian restaurants in the city. Last month another top chef, Stefano Borra -- whose own restaurant in Italy has been reaping Michelin stars since 2007 – joined Enoteca to further bring up the restaurant to another level. A native of Turin, Piedmont, Italy, Chef Stefano belongs to a new breed of young chefs whose culinary skills and passion are too big to be confined to one geographic area alone. The chef specializes in meat, and Nicola believes this augurs well for the growing number of beefeaters in Bangkok today. Stefano's family actually wanted a law career for their son. But after just a few years in college, Stefano decided to follow his heart, and pursued his passion for cooking. At 23, he left for France to attend the prestigious Ecole des Art Culinaries et de Hotellierie in Lyon where Paul Boccuse was president, and the rest as they say is history. “I have always had a passion for cooking,” explains Chef Stefano. “Even as a kid, I would hang-out in our kitchen just to watch my elders cook and prepare great food. To me, food and cooking represent some of the most important things in life – like family, sharing, love, and
togetherness – and this I continue to bring into every dish I create wherever I work.” While unabashedly Italian, Chef Stefano is equally proud of his experiences in, and training from, high-level restaurants in France such as La Auberge La Feniere in Provence, Laperouse Restaurant in Paris, and La Pyramid. “The art of French cooking hangs on technique, discipline, and the essentials," he says with fondness. "It’s all about perfection – and that's what I adapt to my cooking.” When he returned to Turin after a long period in France, Chef Stefano easily wowed foodies at Le Meridien Hotel and La Pista with the new, elegant, Frenchy twist he incorporated in his cooking as chef de cuisine. He simplified some of the complex Italian dishes and made them even more appealing to both the eyes and the palate. Quite expectedly perhaps, when he soon opened his own restaurant in Turin (2007) it was only a matter of time before it gets Michelin recognition. His restaurant received the prestigious Michelin star for five years running (2012-2016). Despite his success in Turin though, Stefano felt a need to look for new experiences and so when by chance he met Nicola, the owner of Enoteca -- who persuaded him to come to Bangkok to join Enoteca – he decided to jump on what he says “another big change in my life so far.” Nicola says Chef Stefano is perfect for Enoteca, since the vision for the restaurant has always been one of “elegant simplicity.” Nicola says, “Enoteca will always be a warm, family place for great wine and contemporary Italian and Mediterranean cooking. But with
Chef Stefano on board, we’re not only bringing up the level of the work in the kitchen. We are aiming to bring up the level of our gourmet food even higher as well.” While Chef Stefano admits that having a Michelin-star can make the work even more challenging for a chef like him, he says “following his heart” in his cooking style has never failed him yet. And he refuses to accept the singular credit for everything. "It’s not just me,” he points out. “It’s all about teamwork in the kitchen. To make sure that the customer will remember the food that they have eaten, I need all hands to work harmoniously together like a symphony. I’m happy I have that at Enoteca.” He says perfection does not always come easy, even for a very experienced chef. “But I always try to do new things, to improve further, and to do better than the last time,” he says. “We should ever stop learning.” “I am still adjusting to the culture in Thailand, but I am just happy to be able to contribute what I can to the continuing success of Enoteca.” Any particular dream he wanted to achieve in Thailand? “Well, to get a Michelin-star in Thailand,” he replies. “That’s not too farfetched, isn’t it?”

Some of Bangkok’s best bartenders have opened their own speakeasies, while other bars just keep finding superb mixologists to shake up some of the best cocktails to hit Asia since the invention of the Singapore Sling. (Tel. 02 664 1445; www. qnabar.com/) Q & A was one of the first bars in Bangkok to fill a niche that wasn’t here before. As elegant as a distinguished fancy hotel bar, as hidden as a private speakeasy, and with drinks to match any of the finest mixology bars in Bangkok, it sets a pretty unmatchable scene. The master mixologists here were all behind the experimental hideaway bar Sugar Ray, and they have brought all of their alcohol expertise here to what looks like a private VIP lounge, with limited plush leather seats fronting the long bar, and a trio of extremely knowledgeable mix-masters behind the counter, who go out of their way to explain the several part menu, which features Questions (harder and punchier), Answers (sweet, simple, and easy), and Non Orthodox (classics with a bit of sophistication and upgrade) drinks. Every drink is a highlight, but the Koko is quite popular, with macaroon vodka, frangelico, cachaca, and coconut carbon powder. It’s a bit like a pina colada, except that this fruity drink

comes without color, and is served monochrome to confuse you further. If you are looking for sophistication, taste, and a cocktail connoisseur paradise, Q & A will fill all of the spaces and then some.
JBoroski Mixology
(Tel. 02 712 6025; www.josephboroski.com) It’s an interesting juxtaposition that on the one hand, the name Boroski touches virtually ever bar and great cocktail menu in Bangkok, yet at the same time, the personal bar of legendary “mixsultant” Joseph
Boroski is one of the city’s greatest secrets. This intimate, dimly lit hideaway serves up masterly crafted drinks to savants of fine cocktails, yet there’s not even a menu (one simply tells the wizards behind the bar whether one likes it sour, sweet, or fresh, and watches them work their creative magic). Boroski says the homey venue was originally part of his Bar and Hospitality School, then became a hangout for friends to drink and relax, and eventually expanded to the public. Well, sort of. The bar doesn’t openly display its address, has
no signage out front, and you’ll need to call, email, or have a drink-loving friend who’s been lead you down the rabbit hole. It’s not a place for partiers, but serious drink lovers will find themselves not wanting to leave. You will pay dearly for a drink here, but you most certainly won’t ever forget it.

(Tel. 02 001 0697; www.voguelounge.com) Inspired by fashion lifestyle giant Vogue, this is one of Bangkok’s top bars when it comes to combining swank venue, superb drinks, fabulous bartending, and probably the best happy hour special put forth by any of the city’s top mixology candidates. Francesco Moretti (of Shanghai’s renowned Bar Rouge fame) presides over an extensive cocktail menu that features playfully listed PreProhibition, Prohibition, and PostWar cocktails among others, with a collection of classic and signature drinks. The Delicious Sour (made with Berneroy Calvados VSOP, Martini Rosso, almond syrup, egg whites, and cinnamon) tastes even NOVEMBER 2016 | 35

better than it looks, smooth and silky. The bar features a setting right out of a black and white 1960s Vogue set, complete with Andy Warhol paintings and David Collins Studio vintage design, along with an airconditioned outdoor deck, which sits smack against Bangkok’s new tallest building, the Mahanakhon Tower.

Hailing from Japan, he’s plied his craft in Tokyo, and then did stints in London and New York before settling in at the aforementioned Vogue Lounge. Deciding it was time to do his own thing, Saito just opened up his first bar, an industrial style speakeasy in Thonglor that showcases his classic cocktail prowess along with a bit of creativity. Signature drinks all come with a particular bite of food that enhances the flavors of the drink. Take for instance, the

Saito thinks the Bangkok drink scene is ever-improving, with far more educated customers now caring about exactly what goes into their cocktail, as opposed to just wanting a good Instagram snap, and the drinks here all reflect that, intellectual, painstakingly crafted, and tantalizingly delicious.
02 637 8368, www.facebook.com/ MIKYSCOCKTAILBAR) Michele Montauti may be one of the youngest mixologists on the scene, but that doesn’t preclude a wealth of experience making snazzy drinks. The 23-year-old dapper Italian formerly mixed drinks at JBoroski’s and the House on Sathorn’s bar, and he’s now opened his own place. Tucked in next to the fine Italian restaurant Opus on up and coming Pan Road, Montauti draws a crowd who come for his outgoing persona and fashionable cocktails. There is a short menu of signature drinks such as the "Julie," a smooth blend of Broker’s gin, Mancino Bianco, Earl Grey tea, jasmine, and egg whites, topped with a fragrant bough of thyme. Montauti can also craft you your own personal drink. The checkerboard floor, mood lighting, and trippy tiger-cow skeleton painting behind the bar pair up with some pulsating beats spun by DJs several nights a week to make this place a party spot for the young crowd, and everyone ought to visit just to sample the Iberico bellota ham tapas that’s available to go with the cocktails.

“W
hat was your favorite?” I asked my wife after our splendid meal at Ciao Pizza in Silom, Bangkok. “Everything!” she replied, which succinctly summed up a really memorable visit. Opened in September and part of the Water Library’s burgeoning group, Ciao Pizza on Soi 3 (5 Sitthi Vorakij Bldg, 1st floor, Soi Pipat; Tel: 094 754 7777) In the center of this busy commercial and retail district is an authentic Italian gastronomic

experience. In a world where style often triumphs over substance, Ciao provides a simple rustic, easy-going atmosphere with its minimalist décor’ and focus on taste. No fancy fusions or culinary contortions here, only classic Italian favorites and meals with the freshest ingredients. It is already attracting repeat customers and it is easy to see why. The dining environment is small, but convivial. The prime site is ideal to attract locals, expats, and tourists. At the helm is Italian-born chef, Gerardo Calabrese, who brings passion and skills to his dishes with his aim to concentrate on traditional recipes and genuine cuisine from his homeland rather than the generic bland Italian diluted menus, which often abound in the city. There is a diverse and interesting range of appetizers, salads, pizza, pastas, main dishes, and desserts; and a good choice of Italian and world liquors, house wine, and smoothies. A signature Ciao Bella (cold tea with passion fruit, peach and elderflower), so cool and refreshing, began our food
tasting. Cold Cuts Burratina (burrata cheese, parma ham, mortadella, and cherry tomatoes) was a fine starter complemented with some superb Foccacia Tartufo (crispy bread stuffed with truffle cream cheese) -- so moreish. Next up was Strozzapreti Pollo, a flavor filled E Pesto-homemade pasta with chicken balls in pesto sauce. With a name like Ciao Pizza we had to try one of the chef’s creations: Pizza Croccante Burrata Crudo E Ricola (crispy and thin pizza base cooked just right with tomato, garlic, Parma ham, parmesan cheese and dressed with rocket). It’s a mouthwatering blend, indeed. A twin paring of panna cotta and tiramisu finished the afternoon. The former white panna cotta chocolate with strawberry was smooth and light, contrasting with the zesty espresso and mascarpone cheese tiramisu. Ciao Pizza is a true Italian pizzeria. You can visit it daily, 11:30 a.m.-2 p.m. and 5:30-10 p.m. Monday through Saturday.

MÉLANGE OF ELEGANT RUSTICITY Casa Nostra beckons to diners looking for unpretentious, fine Italian fare and quality wines by Dave Stamboulis
C
asa Nostra means “our house,” which is an excellent monicker for this new Sathorn Italian eatery, located in a warm, inviting house off a sidestreet near the Goethe Institute. La Casa Nostra (22 Sathorn Soi 1, Yak 2 (Soi Goethe); Tel. 02 287 2402; www.facebook. com/lacasanostrabkk/ ) sets out to win over diners by offering a superb mix of outstanding natural Italian cuisine sourced from some of the best suppliers in the world, along with distinctive and affordable wines as well as attentive service, leaving clients plenty of time to linger over a real culinary feast. While Italian restaurants in Bangkok are a dime a dozen, La Casa Nostra really excels way above the rest in the attention to quality that is paid to all the ingredients they use. Take for example the risotto olio, aglio e peperoncino served with red prawns. The garlic here is from the finest Italian cloves, the olive oil sourced from the best press in Tuscany, and
the prawns used are Mazara del Vallo, known as the “prince of shellfish,” from the province of Trapani and noted as the most sought-after prawns in the Mediterranean. The incredibly juicy prawns are squeezed over the top of the risotto to release their juice, and the entire dish is both a visual and tactual treat. Chef Nino Scognamillo, a native Sicilian, presides over the kitchen. Scognamillo spent years working in London, including a stint at Jamie Oliver’s Italian kitchen, which taught him to never ever compromise on quality, a credo that is at the base of all of La Casa Nostra’s cuisine. One of the brainchild's behind the restaurant, Chef Alessandro Frau (of the renowned Acqua in Phuket), sees La Casa Nostra as a mélange of “elegant rusticity,” meaning a mix of old and new cooking traditions, and placing the ingredients at the forefront above everything else. Another example of this is seen in the roasted Mediterranean octopus spiked with smoked Spanish paprika
on a soft white truffle potato velouté, which is incredibly tender, rendering it far more palatable to those who normally aren’t octopus fans. As Chef Nino informs us, “they say you shouldn’t have to chew good octopus more than four times.” Perhaps the piece de resistance at La Casa Nostra is the grilled U.S. Black Angus beef tenderloin, served with sautéed wild mushrooms and potatoes on a truffle gravy sauce. You’ll be hard pressed to find any cut of meat in Thailand as tender as it is served here. Again, Chef Nino talked about not compromising quality, and how the Black Angus they’ve sourced is so soft that it almost needs no resting. Wines are an integral part of the La Casa Nostra concept. There is a bunkered cellar on premise, which houses a fabulous collection of both rare and classic vintages. With just a small markup, the focus here is on allowing patrons to enjoy truly good wines as an essential part of enhancing the dining experience. La Casa Nostra is also unique in that they have a rotation of eight top wines per week that are available by the glass, truly a first in Bangkok on this level. Attention to detail is marvelous, from the forged iron flatware to hand-blown Zalto glassware, all aimed at pleasing the senses. Dining is available either in the intimate wine bar, a warm candlelit dining area; or alfresco on an outdoor patio. With a wonderful combination of food, drink, and surroundings, Casa Nostra is truly a welcome arrival on the Bangkok dining scene. La Casa Nostra opens daily from 5:30 p.m. till midnight

“F
reebird” is a modern Australian restaurant designed to create a comfortable atmosphere for enjoying authentic food. This new dining concept, which brings together the finest hospitality crews assembled in Asia, has become one of the most-talked-about restaurant since its opening in August. The culinary dream team comprises of Dallas Cuddy (executive chef), Marcus Boyle (general manager), Ben Lee (founder), and Alan Barr (architect and designer).

The name was inspired by the real story of the property's caretaker who has lived on the land for 27 years. During that time, he has cared for a number of local birds that live in the Freebird garden. Freebird (28 Sukhumvit Soi 47; Tel: 02 662 4936) is a stand-alone restaurant with a garden converted from a two-storey house. The colorful décor previews outstanding artworks by Steve Cross along the hallway and main dining room to create a fun environment. Indoor, there are different levels and styles of seating, with private dining room tables and stool chairs at the main bar counter. The large open kitchen is thoughtfully designed to allow guest to witness kitchen activities. The upper floor includes a wine room and a private dining room. The outdoor is for chilling, and guests can enjoy the view of green house where Chef Dallas and his team grow herbs used in the restaurant. All dishes are simply prepared using the fresh ingredients with local produce. To start things off, the golden organic sea urchin with
flaxseed cracker was intriguingly well balanced with Parmesan cream and fresh crisp sea grapes (THB 150 each). There's beautiful culinary artwork in the “Shaved Squid” (THB 290) with smooth oyster cream, served with cucumber and seaweed butter. These savory bites will get the party started. Also, the generous portion of “Braised Duck Tortellini” (THB 350) was delicate and flavorful, enhanced by the use of truffle vinegar and drizzled with broad beans, caper, and fresh kohlrabi. Next up was the main course, comprised of pan-fried “Ocean Trout with Wakame butter” (THB 1,600 for a 600g sharing portion), topped with Avruga caviar accompanied by mussel escabeche, as well as the “Slow cooked Kurobuta Pork Collar” (THB 450), served with pistachio, green olive puree and topped with shaved funnel. The desserts are extraordinary. Try the “Lime leaf posset”(THB 300), topped with fluffy whipped coconut, served with honeydew melon, and elderflower. The bar provides a unique cocktail menu invented by mixologist Liam Baer (previously with Evil Man Blues and two famous bars in New York). We recommend the “Nutbush” (THB 360), a mix of Madeira, apple liqueur, sweet toffee nut shrub and citrus. The wine list highlights the great offerings from Australia with classic Australian wines along with a ‘New Wave Australia’ section and also from “The rest of the world.” Why go: The culinary dream team will not let you down. The menu is full of tasty options and certainly has unique style. GM Boyle, who is also a sommelier, will help with drinks pairing guidance. All staff members are trained to provide excellent service. It’s a pity this place opens only from 5:30 p.m. till midnight!

RAMEN TO RAVE ABOUT A cool new culinary comfort zone has arrived in Bangkok – the Japanese eatery Kuku-Ramen in Silom Soi 3, just a short walk from BTS Saladaeng by Christopher Scott Dixon

tep into a spacious and welcoming environment with the furniture taking its inspiration from traditional Japanese designs and a menu that is a mix of classic Japanese cuisine with some innovative twists to cater for the indigenous customers – at Kuku Ramen. Part of the Water Library Hospitality Group, Kuku-Ramen opened in September, and is already proving extremely popular with local office workers and residents. Kuku Ramen (5 Sitthi Vorakij Bldg, 1st floor, Soi Pipat, Silom; Tel: 094 890 7777) boasts a skilled duo of native experts: Master chef Hitoshi Inoue and ramen ace chef Shije Hayakawa. The classic dishes have also been created to ensure the authenticity of the taste with all the soup stock from scratch, so diners are guaranteed the highest quality ingredients.
We started with some very tasty “Tsumami” appetizers -- gyoza classic and a gyoza tom yam version. While sipping on some refreshing tea, this was followed with delicious stir-ried vegetables and pork. The restaurant was filling up and we continued to fill up with flavorsome signature RamensBangkok and Tokyo. The first, pork miso with a fusion of Thai tom yam, had a good and tangy kick to it. Tokyo was pork shoyu ramen, washed in a distinctive smoked BBQ soup. Oodles of noodles occupied our table as we enjoyed an excellent Torio Shio-chicken shashu and seaweed. The Yasai curry ramen was a revelation -- a memorable combination of vegetable stock curry and dumplings. Both came with seaweed, Naruto, and bamboo shoots. For those wanting quick fixes, there are Gohan-
small rich dishes with a range of toppings and Yakitori grilled chicken skewers. We also sampled a refreshing Kaguya Japanese cocktail with whiskey, bitter, ginger, lime and a feisty mix of native contents too. There is also a good range of sake, Japanese whiskey and spirits in addition to the usual soft drinks and beverages. The lunch set is great value at only THB 145, which includes small ramen, gyoza, small rice bowl, and salad. Desserts are first-rate too and we finished with the yummy Kanmi chocolate ice cream and a KukuRamen special with moji, macha green tea ice cream, strawberries, and red beans in syrup Kuku-Ramen is a new kid on the gastronomic block with top and creative tastes, value for money, and a so-inviting interior. We shall return!
