TRAVEL CULTURE

RITE OF PASSAGE Witness the wildly colorful ‘Poy Sang Long,’ a novice monk ordination festival in Mae Hong Son

M

ost visitors to Thailand never make it to Mae Hong Son, which is a pity because the province remains one of the most unchanged and welcoming areas of the country in terms of tourism. But perhaps the best reason to visit Mae Hong Son at this time is to witness the wildly colorful “Poy Sang Long,” the novice monk ordination festival, which occurs each year between March 20 and April 15. “Poy Sang Long (Festival of the Crystal Sons)” is a traditional ceremony hailing from the Shan State in Myanmar. The Shan, known in Thailand as Thai Yai, brought this rite of passage across the border. While Chiang Mai and other towns in northern Thailand have similar celebrations, none is as colorful or as spectacular as Mae Hong Son’s version, where for three days young boys become ordained as monks in a gaudy pageant. During the festival, dozens of boys are brought by their families to the temple to make merit for themselves and learn Buddhist tenets and teachings. On the first day, known as “Rup Sang Long,” the boys enter the temple and have their hair

16

LOOKEAST | TRAVEL

and eyebrows shaved. On the second day the boys, freshly shorn of their locks, are given ornate and vibrant costumes to wear, emulating Prince Rahula, the son of Buddha, who sought to give up a worldly existence and follow his father’s teachings. From this point on, the young men are not allowed to touch the ground anywhere outside of the temple. To comply with this, the boy’s male relatives are used as horses and have to carry the young monks-to-be on their shoulders. A procession begins at the gates of Wat Hua Wing, with the boys being carried throughout the town amid great fanfare, with drums beating and cymbals crashing. Ponies, adorned in colorful ribbons, join the musicians, followed by the crowd of costumed boys and their caretakers. The procession weaves its way through the narrow streets of Mae Hong Son, everyone having a good time, oblivious to the 40-degree plus heat that bakes the town during this hot season. As the afternoon shadows settle in, the parade winds down and the procession slowly breaks up. The boys are carried into their prospective neighborhoods, paraded around the neighbors’ homes, and then brought into their own houses for the night. Each neighborhood then throws a giant block party, celebrating the young men and their noble path, as well as a joyous occasion to share good times. On the final morning (“Wan Kham Sang”), townfolks gather at the temple, where the head abbot gives a sermon about becoming a monk. At this point, the flashy celebrating grinds to a halt and everyone sits silently in the stilting heat getting the message about what this event really is about. When the abbot finishes speaking, the last stage of the festivities is reached. Bright orange robes are handed out to the novices and once dressed, the boys ask the abbot for permission to become monks. Thus granted, they pass into a new realm. Wat Hua Wing becomes an ocean of orange, with the families making their way through the sea of colors to congratulate the boys, as well as to offer alms, prayers, and words of thanks to the monks. The final step is a huge, sumptuous feast that has been prepared all weekend, and now laid out for the new monks. The boys, surrounded by their families, dig in with exuberance; famished and exhausted from all that they have experienced in the last three days.

TRAVEL INBOUND/ISLANDS

I

f you don’t want to shell out for a plane ticket to Phuket or Samui and you’ve got your own wheels, where can you go for a decent weekend island retreat not too far from Bangkok? The Eastern Seaboard remains a popular option for Bangkokians, with masses heading down to Pattaya and Rayong for some R & R. Problem is that neither of these places really have that nice beaches, and they just don’t quite have that island feel; the one of getting onto a ferry and being off the mainland. Not to fret though as there are some excellent choices without having to drive all night.

Koh Si Chang: Sleepy Koh Si

Chang gets bypassed in favor of the white sand on Koh Samet, but this is a great spot to see a real local slice of Thai life, and the small isle is rich in local history. At the southern end of the island is the Phra Judhadhut Palace, the former summer home of King Rama V, surrounded with

20

LOOKEAST | TRAVEL

immaculate terraced gardens, streams, fountains, and ponds, and is a superb spot to while away the hour, picnic, and watch the goings on of the Thai fishing industry in the Bight of Bangkok. The palace that used to be here was relocated piece by piece to Bangkok where it is now the famed Vimanmek Mansion. The island also features some very colorful temples, the best of which is Wat Tham Yai Prik, with its giant golden Buddha welcoming visitors, perched on the limestone cliffs above the sea. The temple is home to a series of cool meditation caves and is inhabited by monks and nuns. The west coast has one small beach, Hat Tam Phang, which has clear amazingly waters. Places to stay include Malee Blue, (www.maleeblue.com), which looks like a Moroccan palace, suitable for all your Arabian nights fantasies close to home. Koh Si Chang takes 45 minutes to reach by ferry from Sri Racha.

Koh Larn: While only seven

kilometers away from each other, Koh Larn and Pattaya feel like cen-turies apart. Pattaya is heavy on neon and nightlife where every inch of spare silty sand taken up by beach umbrellas and vendors. Koh Larn, on the contrary, makes you feel like you are down in Phuket. The small island is reachable both by speedboat and ferry, in less than an hour from Pattaya’s Bali Hai Pier, and has excellent white sand beaches, turquoise water, more reminiscent of Koh Lanta or Phi Phi. And if you decide to stay overnight, with only THB 1200, you can sleep in the bungalows that are available and have the island almost completely to yourself. Koh Larn is mostly mountainous jungle, and is extremely lush. There are several viewpoints from the top of the island that are well worth visiting, and the island’s narrow brick roadways make for some nice motorcycle or bicycle touring, although the grades in some areas are quite steep. The

Many islands have no development on them, and are great spots for Robinson Crusoe escapes.

largest beach on Koh Larn is Tawaen, a beautiful crescent of white sand, which is packed with cafes, shops, and an abundance of watersports and other activities, including banana boats, jet skis, and parasailing. Tawaen gets extremely crowded on weekends, but there are a few coves on either side of the bay that are a bit less hectic if the main beach is too busy. For something a bit quieter, head to Samae Beach on the west side of the island, or the even qui-eter Hat Tien (Candle Beach), which is tucked into a beautiful bay ringed by verdant hills.

Koh Kham:

Not to be confused with the small sand strip off of Koh Mak by the same name, this small island is the one that many travelers see from the air after taking off from Bangkok, and wonder what island the beautiful white sand beaches are part of. Also known as Koh Kham Sattahip, this island is a marine park with a fragile ecosystem, and is managed

by the Thai Navy (www.navy.mi.th/ coast_guard/under_sea_park_ kham_island/novels/), and is only open for eco-tourism, 9 a.m.-4 p.m. on Saturdays and Sundays and public holidays from November to April. You’re not allowed to spend the night on Koh Kham, but you can take the Navy boat out in the morning and come back at either one or four in the afternoon. The island is very well-managed, with only 300 visitors allowed per day, and there are glass bottom boats to go out on to checkout the coral reefs and abundant marine life.

Koh Samet:

While this is the darling of many island lovers from Bangkok, with a selection of white sand beaches and a real Koh Phangan or Koh Tao vibe to it, you might want to save Samet for a weekday. It gets really packed on the weekends, not to mention that prices go up, but if you do come during the week, it really is an excellent spot. The oil spill here in 2015 did some major dam-age to the beautiful west coast beach of Ao Phrao, but the east coast beaches and water are un-scathed. Activities range from mountain biking, heading down to the unspoiled southern tip of the island, where one can see some gorgeous sunsets (the island is much wider up north and it takes a bit to cross from east to west, whereas down south the land narrows to just a small strip), and just lazing on the beaches, which are the best you’ll find this close to Bangkok. Most of the east coast

22

LOOKEAST | TRAVEL

beaches have some nightlife, with excellent fire twirling shows taking place on Hat Sai Kaew, the island’s most happening beach hangout. The best and most romantic resorts are over on Ao Phrao, with luxury hideaways such as Le Virmarn (levimarncottage.com) an excellent choice for those seeking intimacy and ambience, but again, the oil spill has minimized swimming and you may want to wait awhile. There are also some lovely national park islands off the coast of Samet, which can actually be reached by boat charter from Ban Phe in the mainland pier where boats to Samet leave every 3045 minutes. Koh Kudi, Koh Kruai, Koh Kham, Koh PlaTin, and Koh Thalu have no development on them, and really are great spots for Robinson Crusoe escapes, but you will need to camp and check in with the national park, as there is no accommodation other than tenting, and you’ll need to bring your own food. If you want the whitest sand and a dose of full on island escape choices, you’ll need to go further east, to Koh Chang or Koh Mak, but both of these require a four to five hours drive from Bangkok, so it’s almost easier to fly to mainland Trat and go from there, and thus we didn’t include those islands here. At any rate, there aren’t too many capital cities in Asia like Bangkok, which boasts “Great Island Escapes“ just a short drive from one’s doorsteps.

SULTRY KOH-EXISTENCE Some island getaways in Southern Thailand that promise your own slice of paradise! by Percy Roxas

ABOVE: A beautiful beach on Koh Mook

T

hailand boasts countless island (koh in Thai) getaways where you can escape the crowds and enjoy paradisiacal seclusion. Here are just a few of them:

Surin: Mu Koh Surin, a protected

marine park in the Andaman made up of five islands with human habitation and park service facilities on two of them, are about as beautiful as it gets. See what you normally see only when going diving; by merely snorkeling, catch a glimpse of rare Nicobar pigeons and Malayan flying lemurs, and maybe even meet the Moken sea gypsies. Ferry service runs from Khuraburi, north of Phuket and Khao Lak, and only operates between November and May. The park shuts down during the rainy season and when the seas are rough.

24

LOOKEAST | TRAVEL

Similan: Similan Islands are

a group of nine islands, which are known as the most pristine in Thailand, sitting 50km out in the Andaman Sea. Come here for the best diving in the country and to see what protected and undeveloped Thai islands really look like. The Similans are only accessible from November to May when the national park runs a ferry out from Thap Lamu pier near Khao Lak, and speedboats make the journey in about an hour-and-a-half as well. The most ideal way to see the islands is via live aboard dive ships, which can be easily arranged in Khao Lak.

Mook:

Koh Mook has beautiful beaches, turquoise water, and is home to chao leh (sea gypsies) who make their living from squid fishing and rubber tapping. It’s a

great spot to enjoy limestone karst peaks and jungle scenery, but the main reason to come here is to visit Tham Morakot, otherwise known as the Emerald Cave, one of Unseen Thailand’s top attractions. The Emerald Cave is actually a sinkhole, where the roof of an underwater cave collapsed allowing skylight to flood in. The only access into the cave is via a pitch-black 100m-tunnel in the sea, reachable only at low tide. The opening is wide enough for a kayak or tiny dingy to paddle in, but most of the tours bring people out on longtail boats, from where they swim in, using flashlights and buoys provided by the tour company. Once inside, the cave opens up to reveal a pristine jungle, towering walls, and a white sand beach fronted by emerald water. Access to Koh Mook is via Trang, which can be reached

by air, and then direct transfer to the ferry pier at Pak Meng for the short ride over to the island. In high season, there are boat transfers via Phi Phi and Krabi.

Kradan: If you want to see what

Thai islands were like a decade or two ago, and if the idea of lounging on a gorgeous beach without the crowds appeals to you, head for Koh Kradan. Named “paper” island because it is relatively flat, the long brilliant white sand beach along Kradan’s eastern side is one of Thailand’s best, as is the emerald water fronting it that affords some excellent snorkeling. There isn’t too much to do here other than settling into a hammock with War and Peace or some other epic, or else just gaping at the phenomenal scenery. Koh Kradan sits just across from Koh Mook and is reached in the

Libong: While the unfazed and

untouched by tourism Muslim villages here might be a draw for those wanting to get a glimpse of rural southern Thai life, it is neither this nor the stony beaches that draw visitors to Koh Libong. Come to spot the dugong, sometimes known as sea cows, and cousins to the manatee. There are about a hundred of them off the Ju Hoi Cape in the Libong Archipelago Wildlife Reserve, and one can go on tours to try and see them. Fly to Trang and arrange transport to the pier at Hat Yao, where boats make the short crossing to Libong.

Lanta: Koh Lanta used to be an

undiscovered island paradise. While this is no longer the case, it still lures visitors with excellent white sand beaches, pretty bays, lots of nice resorts, and a chance to escape the crowds of Phi Phi and Krabi. Come here to enjoy the fabulous sunsets, visit old Lanta town, perched on stilts over the sea, eat fresh seafood, and to

Tarutao:

Not only is Koh Tarutao Thailand’s largest island, it’s also its most unspoiled spot, with rugged mountains and old growth jungle ripe for exploring. Come here to spot wild pigs, crab-eating macaques, hornbills, and dusky langurs, enjoy empty white sand beaches, go bicycling and hiking, and engage in a bit of Robinson Crusoe fantasies. As with Lipe, fly to Hat Yai, take a minivan to Pak Bara, and hop a ferry or speedboat to Tarutao.

Phayam: CNN wrote it up as“like

Samui in the 1970’s,” and while it is no longer an undiscovered paradise, it still doesn’t have cars, electricity, save for solar and generators, with most places only running them at night, and there are no 7-11’s or full moon parties. Come here to experience laidback island life, check out the prolific birdlife, go kayaking, and stay in an old-school thatched roof hut. Fly Nok Air to Ranong and catch a speedboat from Ranong pier, which takes 40 minutes.

While Koh Lipe has been well developed over the past decade, it still remains one gorgeous island, and if things get too busy, one can always nip over to the neighboring Koh Adang or Koh Rawi, which are both protected national park isles. Come to enjoy the beautiful white sand beaches, good choice of accommodations, go kayaking or snorkeling, or boast about the fact that you’ve been to Thailand’s most southern island (you can see Langkawi in Malaysia on clear days). Koh Lipe is accessed via the Pak Bara pier, most easily reached by flying to Hat Yai and taking a minivan ride for several hours. Speedboats make the journey to Lipe in about 90 minutes. Alternatively, Tigerlines (www.tigerlinetravel.com/) runs boats throughout the southern islands in high season.

THAILAND TO A TEE Thailand is Southeast Asia’s premier golf holiday destination and like a perfectly played chip-and-run shot onto the green, golf tourism in the kingdom continues to be on a roll by Paul Myers

Mountain was ranked first and Chiangmai Highlands is eighth. Already Asia’s leading golf tourism destination, Thailand’s 20 years-plus history of golf tourism has resulted in a level of refinement not found elsewhere in Asia – and one that continues to evolve. “More than 700,000 golfers come to Thailand each year, many of whom are repeat visitors,” notes Mark Siegel, owner of Southeast Asia’s largest and most successful inbound tour operator, Golfasian. “People come back because of value for money, friendliness of the Thai people, an unparalleled caddie experience, excellent infrastructure, and a huge choice of entertainment, shopping, food, and non-golf activities. “Although the cost of playing

golf has increased in recent years, Thailand remains the best value choice in Asia. As members of the Golf In A Kingdom collective (www.golfinakingdom.com), the leading courses compare very favorably in quality and cost with those in Malaysia, Vietnam, Indonesia, China, and other Asian markets. “The fact that new courses are always appearing, and facilities are constantly being upgraded shows that the kingdom is far from resting on its elite standing as a golf destination.” Golf In A Kingdom’s other members are Thai Country Club and Muang Kaew GC (Bangkok), Banyan GC (Hua Hin), Lotus Valley (Chachoengsao), and Laguna Phuket GC (Phuket).

tantalizing menu awaits golf tourists visiting Thailand this year, with new nine-hole additions at three of Thailand’s leading golf courses and the launch of an amateur 2-ball tournament in Pattaya. Two of the new nine-hole layouts – at Chiangmai Highlands Golf Resort & Spa in northern Thailand and Phoenix Gold Golf & Country Club near Pattaya – have opened, taking each course to 27 holes. The other, at Black Mountain Golf Club, Hua Hin, which also will have 27 holes, will be ready for play later in the year. Chiangmai Highlands and Black Mountain are in the top 10 courses in Thailand in the latest rankings by the world’s leading golf publication, US Golf Digest. Black

The new nine holes at Chiang Mai Highlands, designed by renowned golf course architects Schmidt-Curley, opened last November to widespread acclaim. Named the Mountain course, the new layout nicely complements the original award-winning 18 holes, also designed by Schmidt-Curley, and which opened in 2005. “Most comments begin with compliments about the playing conditions which lead to the wonderful mountain scenery, followed by discussion on strategy of how to best play the layout. They inevitably end with ‘Can we play nine more?’ or ‘Can you book us another tee-time tomorrow?” says general manager, Derek Schade. “Being a 27-hole facility makes it easier for golfers to choose Highlands for additional rounds and the courses’ wonderful scenery adds value to Chiang Mai as a golf destination.” Chiang Mai Highlands has a popular resort on site, comprising 19 private resort villas, the Spa at Chiangmai Highlands, condominiums and a housing development. The resort was voted runner-up as best golf resort in Asia Pacific at the 2015

Asian Golf Summit in Singapore. Phoenix Gold Golf & Country Club officially opened its new nine in January in the presence of the world’s 37th ranked male professional, Kiradech Aphibarnrat, and LPGA star Thidapa Suwannapura. Pirapon Namatra, a noted Thai designer who also remodeled the club’s Mountain and Ocean nine-hole layouts, created the Lakes course. Namatra (Khun Ope) designed Banyan Golf in Hua Hin, Santiburi on Koh Samui, Nikanti at Nakhon Pathom, and helped develop Siam Country Club’s Waterside course that opened two years ago. Black Mountain Golf Club has begun building a 3363m (3678 yards) nine-holes layout to complement the existing championship course that opened in 2007. The new nine, which replaces a par-three course on the site and will open in the second half of 2016, winds through a natural valley. Black Mountain managing director, Harald Elisson, says it will offer the same standard of playing conditions as the 7500-yard existing 18 holes, with spectacular views and water hazards. “Black Mountain has

built a reputation for outstanding quality golf as well as service and facilities and the new nine holes will mirror the high standards for which we have become renowned,” he said. Black Mountain has completed a suite of exclusive three-bedroom four-storey townhouses, each with a sun terrace and swimming pool along its ninth hole, that are now for sale. Each townhouse includes a lifetime membership to the golf club, which will host the second annual True Thailand Classic, a joint European Tour and Asian Tour professional tournament, from March 10-13. Meanwhile, the new 2-ball amateur tournament in 2016, the Mercure Pattaya Ocean Resort 2-ball Golf Championships, will be held June 19-25 at the Siam Country Club’s three courses near Pattaya and nearby Laem Chabang International Country Club. The event complements the highly successful Centara World Masters in Hua Hin, which will be held the week before, from June 12 to 18 (www. pattayagolftournament.comand or www.thailandworldmasters.com).

5 Main Golf Regions

Thailand has five main golf regions: Bangkok, Pattaya, Hua Hin, Phuket, and Chiang Mai. Other quality courses can be found on Koh Samui, as well as near Chiang Rai in the far north and at Khao Yai in the central highlands. Courses near Bangkok and those close to Hua Hin and Pattaya can be reached by car. Chiang Mai and Phuket are both just one-hour flights to or from the capital. Thai Country Club, on the outskirts of Bangkok not far from the international airport, is one of the kingdom’s best courses. It remains the most prestigious course in Thailand and one of the best maintained in Asia. It is the only golf course in the portfolio of the Peninsula Hotels property group, operator of the acclaimed Peninsula Hotel in Hong Kong and its sister establishment in Bangkok. The club has hosted six Asian Tour events and Tiger Woods, who won the 1997 Honda Classic at the course, has his name in the No. 1 locker. Bangkok has 36 courses in its environs, only three or four of which aren’t open to the public. Two new courses opened in the past year – Riverdale and Royal Gems City – have added to the city’s international appeal – among many other attractions – as a golf destination. An hour-and-a half down the highway, Pattaya – renowned for its nightlife – has also boosted its golf credentials with some 25 world-class golf courses. It was named Asia and Australasia’s best golf destination in 2012.

The seaside town of Hua Hin, on the western side of the Gulf of Thailand, 200km south of Bangkok, has become a popular destination for both Thai and international visitors. The holiday home of the Thai Royal family is in the region, along with eight excellent golf courses, of which Black Mountain Golf Club and Banyan Golf Club and Resort are the standouts. The island of Phuket, one of the world’s top tourism destinations, also has a worthy reputation for golf. Blue Canyon Golf Club and Red Mountain are the top golf courses on the island. Located near Phuket’s international airport, Blue Canyon became famous when Tiger Woods won the 1998 Johnnie Walker Classic there, and by driving the par-4 13th canyon hole, achieved a feat that amazes every visitor to the course. Red Mountain, opened in 2008 near Phuket’s main tourist location of Patong, is one of the most dramatic

There, Chiang Mai Highlands is literally a breath of fresh air. The atmosphere is cooler and crisper than in any other part of the country and the reservoir-fed course is invigorating, too. Mother Nature provided the design team of Schmidt-Curley with all the ingredients needed to create a course that is regarded by many as the best in Thailand. Natural contours of the hilly property dictate each hole, providing some challenges alongside superb vistas.

5th Asia Golf Tourism Convention in Chiang Mai

T

he eyes of the golfing world will be on Northern Thailand in April when the "5th Asia Golf Tourism Convention (AGTC)" comes to Chiang Mai. Organized by (www.iagto.com/agtc), the event is set for a record attendance by golf tour operators from across the world. Some 190 delegates from 36 countries have already registered and more than 200 are expected to attend. This will be the second time that Thailand is hosting AGTC and the event is expected to have a huge impact on golf tourism for the North and the surrounding regions. Pattaya staged AGTC in 2013, leading to a big increase in visitor rounds the following season. AGTC 2016 takes place at the city’s state-of-the-art convention center from April 24-27. Besides the tour operators, or buyers, it will also be attended by a wide range of suppliers comprising golf resorts, golf courses, hotels, golf specialist

inbound operators and tourist boards from destinations including Malaysia, Vietnam, Cambodia, China, Indonesia, Japan, Korea, the Philippines, Singapore, Australia, New Zealand, India, Sri Lanka, Mauritius, Brunei, Fiji, the UAE, Oman and Turkey. Thailand will be particularly well represented, with all the country’s best golfing destinations taking part, housed in the stunning Thailand Pavilion – the first time the host country will have its own dedicated show hall. The convention will be a wonderful opportunity to showcase the tremendous golf in and around Chiang Mai, much of it undiscovered internationally, as well as the incredible history, culture, nightlife, shopping, dining and other attractions of Thailand’s second city. More than 4,000 meetings will take place between buyers and sellers from across the Asia Pacific region but outside of the business sessions

there will be more evening social functions than at any previous IAGTO convention to ensure that delegates can maximize opportunities. The confab highlight will be the fabled AGTC Golf Tournament, which will be contested by 200 delegates on the Chiang Mai Highlands and Mae Jo golf courses on April 27, following two days of business meetings. THis will be followed by familiarization trips to discover the golf courses and tourism highlights of Northern Thailand around and beyond Chiang Mai. “AGTC Chiang Mai will be an extraordinary event where every golf tourism company in the Asia Pacific region will have the opportunity to increase their immediate and future business dramatically in the wonderful environment of one of Asia’s most popular destinations," said Peter Walton, IAGTO’s chief executive. "This is where the future will be formed.”-- by George Saharat Somapa

AT DAWN WITH GODS Slog up the slopes of Sri Lanka’s most sacred peak, Sri Pada, where pilgrims and travelers are rewarded with a morning knock on heaven’s door by Marco Ferrarese

rawling up this dark mountain slope, we all become part of a snake of lights. Step after step, the reptile moves sinuously, its flickering body hits bend after bend, twisting forever upwards. I’ve tackled more challenging mountains in my life but none was haunted by such solemn spirits. Ahead of me, pilgrims slog up barefoot in the cold of night. Women’s bangles tickle against tired ankles as swaths of maroon robes protect monks’ shaven heads from the frosty bites of night. We are all silently ascending to the peak they call Adam’s. But most importantly, this is Sri Pada, home to the Sacred Footprint, and the main reason of our visit. At 2243 meters, Adam’s Peak is one of Sri Lanka’s highest mountains. 150km east of Sri Lanka’s capital Colombo, it rises like a green fang from a viridian carpet where wild elephants and leopards dwell. Besides flocks of clouds, the peak attracts thousands of pilgrims daily. The Sri Pada, a 1.8m-long rock formation jutting from the summit, has a mixed bag of religious meanings: Buddhists believe it to be the Sacred Footprint of the Buddha, while Hindus believe it to be that of Shiva’s. To Christians and Muslims, it’s the sign of Adam’s passage. Myth says that the first person to discover the Footprint was King Valagambahu (104-76 BC): fleeing from marauding Cholian armies, he stumbled upon

it running after a deity disguised as stag. Marco Polo visited in the 14th century, reporting that his ascent was extremely arduous. Today, a stone staircase helps every Sri Lankan tackle the peak several times during their lives. Every night, from December to April, the mountain glows in full pilgrimage swing. Some climb in the afternoon to reach the top at sundown; but the most popular and spiritual route is to ascend in the middle of the night, catching the crack of dawn as it slamdunks a burning planet into a sea of misty grey clouds. I caught the rickety bus to Dalhousie, starting point of the 5kmNallathanni route, the shortest way to the summit. The basic facilities on offer seem perfectly attuned to the reasons of the climb, which is not leisure, but pure pilgrimage. I’m out of bed and standing in the cold at 3 a.m. to start the three-hour ascent. Groups of pilgrims in white dothis and sarees lead me through the dark and to the beginning of the incline, almost two kilometers into the ascent. “Each time feels like the first,” says Saman, a slender man from a village near Bentota. He and his wife are at their fifth climb, the first with their 6-year-old son. A monk from the Japanese temple that guards the start of the ascent comes forward to offer a blessing, tying a white string around my waist. With the eye of one of Sri Pada’s benevolent gods on me, I

proceed upwards as the incline slowly turns into a stone staircase. Sleepy mounds of blankets sprout under the neon lights illuminating the sides of the path. Their outstretched hands hold pans filled with soul-soothing chai over portable gas stoves. The peak itself comes into view a couple hours into the climb. Very few of the people we meet are heading down: their mouths are zipped up like aluminum flies, eyes pointed to the trail ahead as they shiver in pitch black. The darkness starts fading to blue tones when the path becomes one with the peak, and handlebars appear to help us pull upwards and reach the top. Arriving is surreal: just before the night shatters in cracks of burning red, we walk across a circle of shoes that surround the Sacred Shrine’s platform. It looks like an island of serenity floating above a sea of rubber and leather. Pilgrims walk in circles, reciting mantras as they queue up to get their opportunity to venerate the Sacred Footprint. Whatever god it

belongs to doesn’t matter. Buddhists, Hindus, and Christians stay together, rubbing elbows to keep the frost at bay and waiting for the sun’s good morning kiss. On the edge of the slope, young monks in woollen hats hold their robes tight under their chins with clenched, cold fingers. They wait to take in all the beauty of a new

day’s kicking birth. With the shrine glowing and the sound of bells tolling behind me, I join the line and observe thirsty clouds absorb shades of gold and deep red over the goose bumps of central Sri Lanka’s back. Gulping in awe, my tired legs stop aching. The spectacle makes us all forget that at some point we will have to return down to Earth.

There's also a wine tasting at the end of the tour. "To ensure an overall great experience for our guests -- that's our main job," says Atchara Lamonphrom Leblus, chief concierge at Dhara Devi Chiang Mai by Atthasith Khuparatakul

A

tchara Lamomphrom Leblus joined Mandarin Oriental Dhara Devi in Chiang Mai as a GSO in 2004. Now 33, Atchara is currently chief concierge at the resort, which had since been rebranded as Dhara Devi Chiang Mai. “My job is filled with daily challenges,” says Atchara, a marketing major from Chiang Mai University. “There is so much information to collect, there are so many questions to answer, and we have to learn so many things to make sure that we can perform our job as effectively as possible." Like most hotel concierges, what Atchara enjoys most in her work is seeing their guests enjoy their holiday time.“When I see happy honeymooners enjoy their surprise private dinner, for example, or when I see families having fun, I feel great," she says. "And when they reward your effort with positive feedback, you know you have done something good.” A concierge's job also involves a lot of perks, she adds, and that balances everything. Atchara particularly enjoys being a personal shopper for guests: “I remember an American guest who wanted to have a bed side lamp exactly the same as the one

in her villa, and also a red spirit house. One might say this request is already beyond the call of duty, but Atchara went out to track down the supplier, show them the picture that the guest gave her, and made sure the supplier provide her with two new lamps and a spirit house too. "It took some time as we have to recheck the specifications to ensure they are what they expected, but we were eventually able to ship them to the U.S," she says. Atchara shared some of the tips she would give to the guests at Dhara Devi:

shops, teahouses, wine bars, sushi joints, live music restaurants, art and craft shops, trendy clothes stores, and fashinable boutiques with silly names. Just walking along Nimman is great fun.

Where to dine out in Chiang Mai – Visitors should not miss Northern Thai food, Chiang Mai's very own cuisine, and I recommend Baan Rai Yam Yen, which is my favorite. The food is authentic food, price is good, service is friendly, and the atmosphere is fun -- there's even live folk music. Baan Rai Yam Yen also has exotic dishes, if the guests want to try them.

How to avoid pimps, hecklers, and scammers -- We give our guests the information they need: know what to expect or avoid, what is the acceptable rate when haggling for a fare or a bargain, etc. We also give them a hotel card with contact number in case they need more assistance.

Where to take friends for a chill-out – Definitely, Nimman (Nimmanhaeminda Road) is the place to go. This rapidly growing area is the chic quarter of Chiang Mai. The road is lined-up with coffee

Where to go for shopping -- If you are looking for high-quality cotton, silk, silver, gemstones, and celadon, visit Sankampaeng Road. The factories along the road feature an amazing array of products, from small souvenir items and knicknacks to the most precious keepsakes you could ever find in one trip.

Best way to enjoy their holiday -- I encourage our guests not to miss out on the activities provided by the hotel. They can enjoy the usual half-day tours, elephant rides, Lanna massage, or the local cuisine, but our activities will give them a more complete experience of Chiang Mai!

STAYING WELL If the buzz has anything to it, then the newly opened Well Hotel Bangkok is indeed the hotel to beat in the heart of downtown Sukhumvit

I

checked in at the Well Hotel Bangkok on Sukhumvit 20 not expecting anything. I checked out totally satisfied; among the very few times I have ever enjoyed an overnight hotel stay. Well Hotel Bangkok (10 Sukhumvit 20; Tel: 02 127 5995) is one of the newest hotels to open in the city. While the news of it started making the rounds late last year, it didn't open until January this year, and at the time of my visit, only 87

by Percy Roxas of the projected 237 rooms are so far ready to welcome guests. Yet amazingly, two days before Valentine’s Day, the hotel has already achieved hundred percent occupancy. It could have been because of the extended Chinese New Year holiday when thousands of Chinese descended to Bangkok for their break, or it could have been a just big stroke of luck and anything. But it could also have been because of the word-of-mouth publicity that the

hotel has been generating since its opening. If the buzz has anything to it, then Well is the new hotel to beat, especially among those in the heart of Sukhumvit. Well Hotel Bangkok positions itself as a lifestyle wellness destination. Managed by Well Hotels & Resorts, which is run by hospitality veteran Danai Wansom, it aims to deliver a “well-balanced combination of comfort and style as well as friendly service”.

All photos from Well Hotel Bangkok

Now, I wasn’t expecting anything because, in fact, there are so many other great hotels in Bangkok. And what can you really expect in an overnight stay? Surprisingly, that overnight stay was just what I needed. I was able to recharge, and refresh, and rejuvenated – overnight, indeed! It started with the welcome. Friendly staff, quite good-looking bunch too; received me like a VIP, even treating me to tea while I was waiting for my room to get ready. Not soon after that, I settled into my room – an elegant 50sqm-Executive Suite, one of the only four in the hotel that is fitted with a private exercise bikes and has a living room, two 46-inch Smart TV sets, a microwave (and I heard even a printer can be had upon request), and of course complimentary Wi-Fi access. “Just give us a call if there’s anything else you want,” the receptionist told me after my in-room check-in. Ah, I know I will be doing some office work here but I welcomed the different, more comfortable space. At lunchtime, I dashed off to Eat Well Café (ground floor of the Memory Wing), which I find appealing because of its 20th century Art Deco motif. I wasn’t sure what to order, but I gave in for

something healthy, as I was told the café’ specializes in this. Indeed, there’s an all-day dining menu of mouthwatering Thai and Asian delights created with fresh organic ingredients and exotic twists. I tucked into them like a hungry wolf. Since I would be here for just a day, I decided to check out the Pool Bar on the 7th floor and got into the tourist mode by ordering a delightful cocktail, and I thought I should take advantage of the healthy drinks, snacks and light meals. If you are one for juice therapy, this bar's for you. As I cozied up on my pool deck, I was thinking that this is a prelude to my visit later to The Twist Bar & Bistro (ground floor, Memory Wing), where I can enjoy more cocktails and choose from a divine wine list. But I soon returned to my room to check my emails and send some jobs to the office. I got so lost in the work I totally lost track of the time until I heard my door buzzer ring. I forgot that I had a spa session scheduled in my room at 5 p.m., as the hotel’s Well Spa is not yet fully operational. It’s nothing fancy, just an hour of aromatherapy, but I felt so revived and ready to take on the world again. The experience made me wonder what further enjoyment

awaits when the hotel spa opens fully! Then I rushed out for an appointment, but not before requesting that my dinner be brought in-room tonight. As I was leaving, I was thinking why I had not asked my friends to just meet in the hotel. Anyway, I was back as soon as I can. When I opened the door my eyes laid gaze at the special dining set of a scrumptious 4-course menu, awaiting me. I was told about the 24-hour rapid care In-room Dining service with selected menu and focus on personal request here, but when I was presented with one, I was genuinely amazed! Needless to say, I was flattered by the full service given me. Yes they know my name, and yes, I didn’t even really have to ask for anything to enjoy something. That night, I slept soundly like a child surrounded by soft pillows and smooth white linens, and dreamed that I was the Little Prince finding his own piece of Sukhumvit heaven. At the back of my mind I can still recall what the receptionist told me earlier, “Whether you’re here for business or for leisure, the Well team understands it all.” Well, indeed, they do!

Surprisingly, that overnight stay was just what I needed. I was able to recharge, and refresh, and rejuvenated – overnight, indeed!

Bangkok -- Thailand's six main airports reported a combined robust growth in passenger traffic in 2015. They reported just under 110 million passengers – or 21.3% increase year-on-year-- setting a new record. Airport of Thailand (Aot) officials say the impressive growth reflected the marked upturn in Thailand's tourism industry. Aircraft movements -- takeoffs and landings -- surged in tandem by 16.6% from the previous year to 727,750, according to AoT figures. The growth momentum is expected to continue through 2016, and AoT is projecting a conservative 11% increase in combined passenger throughput, which they partly credited with the expansion at the Don Mueang airport in Bangkok and the Phuket airport. AoT is the state operator of Thailand’s six airports.

Sukamal Mondal General Manager Oriental Residence Bangkok

Oriental Residence Bangkok

LIFESTYLE PERSONALITY

GM NEXT DOOR With increased focus on his team members and guest satisfaction, GM Sukamal Mondal aims to take Oriental Residence to more success

H

e may look like the boy next door, and indeed he must be one. But behind that boyish mien is a savvy millennial with authentic smarts (not to mention heart), which makes Sukamal Mondal, the 39-year-old general manager (GM) of Oriental Residence Bangkok, the hotel GM to watch in the city today. Originally from India, Sukamal was appointed GM of the 145-room Oriental Residence –one of the city’s most distinctive serviced apartments/ hotel --in October 2014, after holding the same position successfully at both the Shama Sukhumvit Bangkok and Ekkamai Gardens Bangkok prior. The guy who started his hospitality career as a waiter in Shanghai after hotel school called NIPS School Hotel Management in India had come a long a way, indeed, climbing up the ranks and fasttracking from his F&B background to high management in companies like Marriott where he has worked for eight years, and with Thailand’s ONYX Hospitality Group, with which he has been for 10 years already. It was not original dream, to be a hotel GM, but Sukamal feels grateful and blessed that he was given the opportunity to be where he is now. Had fate decreed otherwise, he could have been a flight attendant, or perhaps working in a fashion, clothing and design company, which are more in line with his personal passion and style. But though Sukamal’s priority these days veers away 360 degrees from those early dreams he said he could never be any happier: “If you are a hotelier, you dress well, you talk well, and you live well – it’s connected. So in a way my dreams are still alive,” he says.

by Percy Roxas A more pressing dream drives him these days though: to make Oriental Residence more successful than it currently is. Sukamal is largely credited for the increased guest satisfaction ratings that the property has been receiving of late, and even in its climbing up to the Top 6 today in TripAdvisor listings. Business-wise, this is backed up by a 40 percent increase in room occupancy numbers last year, and doing well revenue-wise as well -with some 35 percent hike in longstay guests. The property has also become a most sought-after venue for events and functions – a focus Sukamal is further concentrating on this year – so much so that Sukamal says they are going to open a new events room soon to keep up with the demand. These developments reflect Sukamal’s top priorities as Oriental Residence GM: his team members and his guests. ONYX honored him as the “best financial GM” in the group in 2015 but he prefers to give his team the credits. “They are amazing. I couldn't have achieved anything without them,” he says. In particular, he praises his events team, which he describes as “very creative.” “Give them an idea and they will that idea into something extraordinary,” he adds. “My team is my No. 1 priority,” he reiterates. “And that’s why I focus a lot on team member activities, not only working with them but also sharing with them and playing with them. I believe that if you make your team happy, they will transfer that happiness to the guests.” By empowering his team and giving them due recognition and appreciation, to balance his hands-on management style, Sukamal made Oriental Residence a winning luxury property indeed. “If you have the

basics covered, you can do no wrong,” he says simply. Sukamal was also quick to mention that he took over from a gentleman (the previous GM) who was very experienced. “I inherited a fantastic property,” he says, “and many things are already in place when I got onboard; it’s not like I started everything here. My job was to get things together, and this again this was made easier by me having been surrounded by an awesome team.” He is proud to be with ONYX, especially because being with the company allows him to pursue his personal devotion to CSR initiatives. “As a company, ONYX does a lot of CSR work and that works for me,” he says. “Having been brought up in India where sentiments and charity are important, CSR is a big thing for me, so I’m glad to be part of ONYX. CSR has always been a big thing for ONYX.” How successful does Sukamal think he is at the moment, and how successful does he want to be in the future? “If you ask me on a day-to-day basis when I get home if I am successful, I would say I am," he replies. "But I don’t really think much about personal success right now. I am happy where I am now. I am single, I can take good care of my mother, and I live a fairly good life so to speak. “So my immediate goals are for my team and my guests; for the property I run. As I said earlier, I want to make Oriental Residence more successful; maybe bring the property to the Top 5 in TripAdvisor circles, and in particular in the shortterm, I want our wedding venues to reap more success as they deserve. “Success is not a destination, it’s a journey. I’m just happy and grateful to be enjoying that journey.”

“Success is not a destination, it’s a journey. I’m just happy and grateful to be enjoying that journey.”

menities almost sound too proletarian a description for the dazzling array of hotel amenities and perks that the five-star accommodation experts provide these days. Each property claim that what they provide is better than their peers but with customers voting with their feet, the hotels know that they must offer much more than simply Thai silk draped beds, or teakwood interiors to lure guests, inviting though those and other features might be. In addition there is a broad range of amenities – from daily ice cream boy visits to soap concierges, and from personal pet buddies to 24hour personal concierges – to match the promotional packages that each property offers as each tries to entice more visitors. “In Thailand, there is a high cultural value placed on providing excellent service, and we are delighted to offer each of our guests their own personal St. Regis butler,” Krister Svensson, general manager of The St. Regis Bangkok, says of their unique service amenity: the legendary 24hour butler for all guests. “Our butlers stand ready to provide our guests with the highest level of service with the utmost care and discretion. We look

Some offerings are a reflection of a growing global trend, many are amazing novel amenities unique to some Thai hotels, while others are simply extravagant extras; flourishes that each hotel try to add to the stay experience of their discriminating guests.

Vana Belle Resort Samui

Sheraton Samui Resort’s leading guest amenity is probably the Signature Sheraton Sweet Sleeper Bed, a revolutionary bed

that introduces a whole new level of comfort, with luxurious sheets, a deluxe duvet, a selection of feather down and hypoallergenic pillows, and a custom Sealy mattress. But of course, that’s not the only one. Throughout the entire resort, guests are pampered with so many things, from the daybed areas at the beachfront pool to the luxurious products used in its Glow Spa and complimentary wireless broadband (Link@sheraton). So many things make staying at Vana Belle Resort Samui memorable as well. They include the Signature Concierge Service, Butler Service, and Benz Limo service. As a destination authority, the signature Concierge Team unlocks the hidden charms of Koh Samui, curates treasured memories and makes the guest travel experience effortless. The top tier suites and villas have 24-hours on-call butler service, including complimentary afternoon tea and evening cocktails served in the room, and luxury airport transfer and day-trip service in Mercedes-Benz C-Class, with Vana Belle signature amenities, are standard offerings. And yes, we must mention the Explorer Packs, which are lunch pack menus in Vana Belle branded ruck sacks, perfect for those out to explore the island.

The world renowned Mandarin Oriental's Oriental Spa provides a host of customized massages and cleansing experiences, private spa suites, and two unique "Oriental" treatments. Also, something you might be taking for granted, is the range of sporting and leisure activities with personal trainers and tailored fitness programs offered at its own dedicated health center. Sukhothai Hotel’s six acres of exquisite lotus ponds and gardens are a considerable selling point allied to the Spa Botanica, which is in a unique setting within the lush green surrounds. In the Deluxe studio rooms there’s a full service business desk along with an Apple iPod connection to the in-room sound system. Le Meridien, in the heart of Silom’s business district, is targeting guests by offering a number of ongoing packages to outdo the competition. These include ‘Long Stay,’ where you can book a suite at the price as a standard room and exclusive benefits such as 24-hour in-room high-speed Internet access and a daily signature breakfast buffet. Grand Hyatt Erawan has a number of exclusive luxury packages including one called ‘Romance,’ which offers a jasmine garland, roundtrip limousine transfer, a bottle of sparkling wine per stay, a box of heart shaped chocolates per stay, set dinner for two people per stay and a late checkout. Of course, there’s more than we can cover in this issue. But you get the picture. Guests now are increasingly demanding and expecting more of an ‘experience’ and not just a stay for their baht when they arrive, and hotels are only happy to meet their requirements. It doesn’t mean that the usual services, amenities, and facilities are obsolete but only that what is being offered now fits alongside new, contemporary needs and pursuits. t wasn’t long after I moved to Bangkok that I quickly discovered just how much jewelry circulates in these streets. From golden amulets, charms, and wards to your runof-the-mill garnet rings and semiprecious stones, Bangkok is one of the biggest jewelry trading hubs in Southeast Asia. Not only that; there are countless places with skilled craftsmen, which offer bespoke and made-to-order pieces at competitive prices; on the odd chance that you can’t find what you’re looking for. That said, as any quick Google search will also show you, there are plenty of horror stories, with countless fraudsters waiting to take advantage of the abundance of choice

and the lack of knowledge. Follow these four simple rules to avoid falling prey to scammers: 1. Never buy from a “government” official, tuk-tuk driver, or tout who promises to take you to somewhere where you can get a deal. It might seem laughable reading this now, but this is the No. 1 scam that many, surprisingly, fall prey to. 2. Never buy right away. No matter how tempting the deal appears to be or how much money you may think you’re saving, always take time to do research about the shop. A good seller will be persuasive but never need to pressure you to buy

Emporium & EmQuartier Sukhumvit Road (Phrom Phong) For all the top international houses and a few well-known Thai brands, look no farther than Phrom Phong’s two mega malls: Emporium and EmQuartier. With purchases exceeding THB 5000, be sure to pick up a VAT refund form, as you qualify for a rebate. Many tourists, overwhelmed by the sheer scale of choices for stones, designs, carat, etc. are put off by the idea of being scammed and simply instead opt for silver. Compared to gold or semi-precious stones, there are fewer risks involved with silver, and they can be found anywhere along Chareonkrung Road, MBK, Chatuchak Market (JJ Market) and even on Khaosan Road. But now worry not!

Jewelry Trade Center (JTC), Silom Road Silom in general is home to countless jewelry shops and sellers. However, JTC is where you’ll find the best deals and most competition. If you’re considering a customized piece, then definitely leave enough time to allow for the item to be made, and expect a great deal of negotiating. Yaowarat Road Bangkok’s bustling Chinatown area is the place to go for gold jewelry. The streets are lined with numbers of shops selling all kinds of gold trinkets and the designs are plenty. Mahesak Road This street, between Silom and Suriwongse, is famous for the abundance of gemstones and semiprecious stones. The Warner Tower is known as the most reliable place, and is definitely worth a visit.

3. Research your item. Ask the seller to write down the details of the item, such as: stone, size, cut, color, and quality. These greatly affect the price, so be sure to find these things out before you make your purchase. 4. Always ask for a certificate of authenticity. These should always come in the form of a recent laboratory report issued by the Gem and Jewelry Institute of Thailand (GIT) or the Asian Institute of Gemological Science (AIGS). Knowing all of this then begs the question: where can you find legit jewelry in Bangkok?

The Jewel Fest Club (JFC) Founded in 1995, the JFC was founded to ensure strict quality and service standards jewelry. This association is made up of about 100 leading jewelry manufacturers and wholesalers, and is the only one to have received approval from the Tourism Authority of Thailand. They regulate the prices so that they are fair and reasonable, but if you’re not satisfied, they offer a complete refund guarantee. Always look for their logo: a ruby ring with the name of the association inside.

From runof-the-mill garnet rings to semiprecious stones and the finest gems, Bangkok is one of the biggest jewelry hubs in Southeast Asia.

Bangkok Gems and Jewelry Fair 2016 The “57th Bangkok Gems and Jewelry Fair” took place Feb. 24-28 at the Impact Exhibition & Convention Center, Muang Thong Thani. A

n innovative playground for all to enjoy, Bounce.inc is described as “the ultimate trampoline universe.’ It is an infectious new way to exercise and enjoy different kinds of activities. The highlight of Bounce is the “Clip ‘n Climb,” a colorful indoor climbing wall that looks easy and but is actually very challenging and great for the adventure-seeker. There is also the “Vertical Drop Slide,” where you slip into a skydiving suit and a helmet and then get lifted at 8.4 meters while holding onto the bar. Participants can slide down whenever they are ready to do so, and experience how falling off a cliff might feel like. Other challenging activities include the “Leap of Faith” where participants do a vertical mid-air jump while hanging 7.2m-high, and the “Stairway to Heaven” of walking up to a 5.5m-pole as the highest point. Bounce opens daily from 10 a.m. to 10 p.m. and guests are recommended to make online reservation in advance; walk-ins are

Bounce offers a party package where kids can jump around while parents can sit and relax until the kids’ energy wears off for the day -- under the supervision of the party host, of course. Kids can enjoy dodge ball, slam-dunk, the Big Bag, and similar activities, and after an hour of free-jumping they can continue the party at a private party room where they can eat, play, and relax for 45 minutes. Kids then depart with a souvenir poster in their hands and a Bounce grip socks for the birthday celebrant. Reservations are recommended for anyone wanting to bring their kids to party at Bounce because walk-ins are not encouraged. FUN FOOD! Dining at Benihana Restaurant in the Avani Atrium Hotel is more than just a meal, it’s an experience by Christopher Scott Dixon

Atrium Hotel (1880 New Petchburi Rd, Bangkok; Tel: 02 718 2023) is the second branch in the city, the first being the one at the Anantara Riverside Resort and Spa. Despite being relatively new, the Avani Atrium version has already

forged a reputation for the quality not only of its food but also for the great entertainment that comes with it. The expansive dining area is comprised of open-plan seating and tables where the fun takes place and partitioned sections for more “conventional” eating. We sat on comfortable upholstered chairs in a semi-circle with rope surrounds forming a border. Large plateshaped illuminations hang aptly like spotlights over the cooking station where the chef execute his culinary skills and deliver his performance. There is a mix of blood red, dark browns, and black giving the entire environment a tangible feeling of intimacy and theatre. We began with a flavor-filled shitake mushroom and onion soup. A

tasty uminosachi salad-shirauo fish, vegetables, tobiko-salmon roe, and wasabi sauce accompanied this. Two signature drinks were enjoyed next: Benihana punchrum, peach, strawberry liqueur and pineapple and orange; and a saketinis-mojito with white rum, fresh lime, and mint dressing. Both packed a memorable kick. An impressive starter saw us tuck into succulent Alaskan king crab tossed in spicy black pepper and celery. The signature sushi roll resembled a giant caterpillar, which was a truly tasty marriage of crispy salmon coated with tiger prawns. By this time we could see the action and hear the chorus of laughter from a neighboring table as their own chef was giving his show, so we eagerly anticipated the arrival of ours. Then he appeared, wheeling his portable Teppanyaki counter to ease seamlessly in front of us. The phrase on the neat folded paper of chopstick instructions said, “My kitchen is your table.” There was a whirl of knives as he greeted us, warmed up and cleaned

the surface, something that he did after each different food preparation (top marks for hygiene indeed!). The interaction with guests is an integral part of what is called “eatertainment,” and while the cooking processes remain essentially the same among the chefs, each has his distinct personality and stage “presence.” Our chef, Bank, was a human windmill with lots of egg-juggling and tweaking of a toy chicken, twirling arms and skillful swishing of utensils, all while he indulged in goodnatured banter with my wife and two companions. We loved his “UFO,” as he called it: a green laser torch that beamed down as he held it with one hand, while chopping ingredients. His first concoction was delicious shrimps including crunchy tails individually served across the table to each of our group. “How do you want your steak?” Chef Bank then asked, and after we gave our preferences watched intently as he diced and sliced and sizzled the tasty waygu beef then served again

with a broad grin. His passion for his work was obvious and infectious. The unpredictability of what’s going to happen makes it fun as the chef suddenly stopped the cooking and produced some rings and coins, proceeded to do a magic trick, and made them disappear! Then, with us still trying to work out how he did it, we moved from meat to fish as he prepared some excellent and moreish Norwegian salmon that was speedily devoured by all. Smells, sights, and sounds continued to tempt and amuse us as the chef whizzed around his counter chatting and mixing, a master on his culinary stage. Aromatic and sizeable scallops were next on our plates. We sat back briefly as the chef then stopped and looked at us. What now? This time he brought out a pack of cards and asked one of us to keep a card in mind. My wife did so and several moments later he correctly drew the card she had mentally selected. “Unbelievable!” my wife declared, and I agreed. To a final crossing of his knives akimbo and a respectful bow, Chef Bank finished his brilliant show and gastronomic exhibition to our sustained applause and cheers. We were still reflecting on the delicious range of food and the multi-talents of the chef when dessert arrived. A scrumptious banana tempura was partnered with yummy vanilla ice cream. The top-quality, competitively priced menu and the stylish environment would be enough selling points but the super, unforgettable culinary show makes Benihana even more “unmissable!”

Interaction with guests is integral to what is called “eatertainment,” and each has his distinct personality and "stage presence."

NEW HOTSPOTS IN BANGKOK There has been no let up in the opening of cool, new hotspots in Bangkok and now we have more places to dine, drink, and chill-out. Here are a few more to take the culinary trek to: by Rich Kantita

Top Knot

Top Knot

(Charoenkrung 72/2, 02 688 2596; BTS: Saphan Taksin) Hotel Once Bangkok, a new modern boutique hotel with splashes of art deco, stands right on one of Bangkok oldest commercial streets, Charoenkrung. On the top of this charming place is Top Knot, an Italian restaurant, bar, and grill that provides a panoramic view while you’re dining under the shimmering skyline along the Chao Phraya River. Top Knot has a “Botanical Rooftop” concept on the bottom floor, which provides a cool oasis that complements the top floor atmosphere that features a modern art deco concept, with chic furniture and tiled marble floors. Recommended dishes include Pink Vodka and Pepper Shrimp Pasta, Barbeque Ribs, and French Fries and Cheese; and while the list of dishes may be relatively short the menu is no less thrilling. And so are the colorful and tasty cocktails, three of which we did try: the recommended and signature drinks called Once Sunset, Secret Love and Top Knot Punch, which are fruity but definitely not weak. The cocktail list is exquisitely delightful especially when enjoyed overlooking a 360-degree view of the “River of Kings.” Top Knot promises a menu that fits the atmospheric setting of the rooftop restaurant and bar, and will surely more than please hotel guests and visitors to the place. Top Knot is open for dinner only, 6-11 p.m.

722 Craft Experience

Ansel & Elliot

WINE&DINE RESTAURANTS

We look forward to hearing more about what the chef of this delightful restaurant and bar might whip up next!

Ansel & Elliot (19 Suthisan,

Phayathai, 089 530 9972) From a home and lifestyle magazine background, the co-owners of Ansel and Elliot became barista because of their shared passion for coffee and tea. With their passion for photography, a concept of a café analog was born and infused with a unique style in interior and exterior design. This place with a very friendly, cozy vibe has a very funny owner who took us through the petite size café that obviously has a few things up their sleeves. The small sections of the space offer customers to buy handmade goods such as notebooks, indie CDs, film, and other random goodies. Right at the counter sits a few homemade cakes that are fresh and tasty. We heard that it is best to call ahead and reserve those cakes

because they only have limited amounts each day. Their coffee is mainly from Pacamara coffee beans and on some occasions, friendly customers introduce to the owner new organic beans from the North, which he delightfully lets everyone to try. Ansel & Elliot also serves slow-bar coffee with a pour-over technique for lesser caffeine and Thai tea prepared with an Aeropress technique. This is not an ordinary coffee shop.

722 Craft Experience

(Ekkamai 12, Paradise Sukhumvit, 093 426 3591) This new rooftop restaurant and bar is one of Ekkamai's hidden gems. The neighborhood, branching out from Thonglor, is reviving itself to be again one of Bangkok’s hubs for restaurants and bar. As the sun is setting, 722 Craft Experience gears up for the night with fun music, ranging from pop, rock, 80s, 90s to deep house; soft glistening lights; and a 360-degree view that overlooks the city without

end. The co-owners have passion for beer and burger, unsurprisingly, and thus, created the 722 Craft with “Pop, raw, and industrial” as the theme of the place. Turning the vacant satellite roof of the Paradise Sukhumvit Hotel into a chill, spacious beer garden with bricks, steals, woods and rough edges, this restaurant and bar is definitely worth the visit. As for the food, the tasty American burgers, ribs, fries, quesadilla, and many more are prepared by the long residing chef from the States. Craft beers and imported beers are well preserved in the very cold room that would definitely give you chills, and a famous mixologist from Demo is there to make some delicious cocktails. One place you should not miss for a good sip!

as having a male model sit in a cage, fun dishes to dine in with your hands, or nitrogen cocktails that is deliciously strong, among them. Although this new hotspot may be known as a bar, there is a list of foods that should not be missed, sure to please both Thai and foreigners with their hot or mild flavors. We recommend the Spicy Prawn Yum for those able to take on the heavy flavor, as well as lollipop wings served with Cajun spices, chipotle sauce and blue cheese cream dip, Nashi pear and organic kale salad, grilled salmon steak, Baja Fish Tacos and roasted duck Hoisin tacos. Here, they make their very own ice cream with the flavors changing every week or so. Separately, the winter dessert plate serves up cocoa sponge, roasted walnut, caramel snow, chocolate sauce, roasted coffee bean, Kahlua jelly, chocolate garnish, white coffee ice cream and purple shiso. As for the cocktails, the Nitrogen cocktails are the highlight of Bon Bon. They are fruity and strong, so make sure you consume them wisely. The Mexican (Sukhumvit Soi 2,

Many Mexican dishes are filled with spices and herbs similar to Thai cuisine but there is a distinct difference in the types of chilies and spices. At The Mexican, they grow their very own jalapeno and vegetables, although they import raw ingredients directly from Mexico. wooded doors, bars, tables, and chairs. Even the lamps are made by the owner himself. Their motto is ‘Keeping the spirits alive’ and that is both in the design, food, and alcohol. A 100% Agavi Tequila & Mescal is served for an authentic Mexican buzz. For the must-try dishes, we recommend the Chile Relleno, which is Poblano pepper stuffed with cheese, and if you are into the hot and heavy flavors then trying the shrimp taco would definitely spice it up. The Mexicans are known for their tequila and therefore tequila and margaritas are the “must-drinks.”

Nadimos (Lower lobby level,

Amari Watergate Hotel Bangkok, Petchaburi Road; www.nadimos. com) You’ve probably been to Nadimos in Silom, a long-running establishment that serves authentic versions of all the best Lebanese favorites: Meze (antipasti) dishes include hummus, baba ghanouj, falafel, and stuffed

grape leaves, and mains such as shawarma and barbecued lamb plates, as well as kebabs. But besides the other branches in the city, there’s another Nadimos in Bangkok now and it sits right where the former Henry J. Beans Pub was, on the lower lobby level of Amari Watergate Hotel. The new Nadimos is relatively more spacious and elegant but the concept of laidback, easy-to-eat, easy-on-the-pocket, easy-to-enjoy ambience remain. The chef, who is also the acting manager, has been imported from Dubai, and under his skillful French-trained professional hands the dishes and drinks are getting a definitive flair than one might expect. The atmosphere is fun and casual, and there’s even a live band playing after 9 p.m. to add. We heard that they are unveiling a new tapas and cocktail menu, so by the time this article comes, head on to Amari Watergate, especially if you are in the heavily touristic Pratunam area. THE PAST AT PRESENT Re-invented with a sensational edgy twist, The Service 1921 offers one-of-a kind culinary experience in Chiang Mai

S

tanding proudly in the manicured grounds of Anantara Resort & Spa Chiang Mai, beside the Mae Ping River, is an elegant colonial house built in 1915 on a land owned by the British government. Opened in 1921 as the British Consulate, the former home of the British consul and his family is full of artifacts and memories, living testimonies of Chiang Mai's colorful colonial heritage. Today, this house is known as The Service 1921 Restaurant & Bar (Tel: 053 253 333 // email: chiangmai@anantara.com), the signature restaurant of Anantara Chiang Mai. When one visits the restaurant today, one can still imagine the constant stream of visiting British citizens in Chiang Mai who came to pay respects, register their presence, or seek help and advice. One can vividly picture days when drinks and meals are served in the consulate’s dining room, games of croquet being

by Percy Roxas played at the lawn, and parties being held for the British king's or queen’s birthdays. But a contemporary spirit has been added to The Service 1921 since its charming re-invention not a long time ago. While still quite a surreal, exciting experience, with all those artful diversity and drama that were formerly at work here, The Service 1921's edgy modern twist brings the elegant past of the house to the atmospheric restaurant that it is today. In short, it’s where history and modernity meet; it’s where fantasy and reality combine but also where well-planned, well-executed culinary offerings can be enjoyed. There is a distinctive menu of contemporary Thai, Chinese, and Vietnamese dishes, created by a team of expert chefs from each cuisine. Appetizers tantalize the palate with highlights such as locally raised duck breast salad with ginger, mint, chili lime dressing, and gourmet enhancements of green apple and goat cheese; a Vietnamese grilled eggplant

and snow crab meat salad with sweet and sour dressing; and a Chinese Cheng Du DanDan noodle specialty of minced pork, Sichuan chili oil and the chef’s special sauce. Aromatic soups, curries, and hot pots include a northern Thai-style braised pork sparerib with young jackfruit. Wok, noodle, and rice dishes feature gourmet ingredients in rich Asian sauces; while steamed, char-grilled and roasted meats, and seafood are laced in exotic marinades. And one can enjoy specialist Asian twist cocktails, wines, and champagnes presented by the resident mixologist and wine guru, not to mention the fine whisky selection and Cuban cigars. To add to the upbeat mood, contemporary soundtracks are played in the background, while enjoying Anantara’s personalized brand of hospitality. The Service 1921 -- it’s an invitation to savor the good life with historic fantasy; it’s a bellwether to Chiang Mai’s new 5-star dining-out reality.

It’s where history and modernity meet; it’s where fantasy and reality combine – while enjoying a well-planned, well-executed culinary offering.

READER'S TALK EDITOR'S PICK

THIS MONTH'S WINNER Congratulations to Khun Phantipa, a diplomat’s wife now living in Laos, recently visited Chiang Mai to embrace the short-lived Thai winter. She came back with some breathtaking shots of Chokecherry, which is supposedly blossoming up North, and shared them with us. Khun Phantipa will receive a voucher for one-night's stay for two at The Chill Koh Chang, our sponsor for this issue.

T

raveling around Thailand is amazing, and as a diplomat's wife, I can vouch for that. Thailand has amazing scenery and abundant nature to explore and enjoy, and especially Chiang Mai, which we visited recently. This year’s cold weather came and went by like the wind, and the flowers that were expected to bloom on Doi Suthep were not as fully blossoming as they were in previous years. But I came to

see them nevertheless. My other priority was to visit as many temples as possible within this three-day trip. We visited and paid respects to some of the most important and oldest temples in Chiang Mai. The Northern style architecture is simply breathtaking. Kept alive for hundreds of years, they embody the essence of the Lanna culture, faith, mores and values; and their hold was so deep that you can almost feel them

in the air. The serenity gave me the chills. My kids, sister-in-law, and I visited temples such as Wat Phra Singh (built since 1935), Wat Lok Moli (built in the 1500s), Wat Ban Den (built in 1894) and Wat Pan Tao (built in 1400s), all located closely in the inner Chiang Mai, except for Wat Ban Den, which stands farther from the city center. The temple images speak for themselves, sometimes even louder than we can ever describe. The amazing work and precise details on the staircases, doors, and floors are quintessentially Chiang Mai. They are definitely marvelous. Aside from the temples, we stumbled into amazing cafes such as the Fern Forest Café near Wat Phra Singh and Ann Coffee, on our way to Doi Suthep, where the owner recommended a chic restaurant for lunch: Proud Phu Fah. There were more that I could share here, but let me just conclude by saying that the trip can be perfectly described as an “Eat, Pray, Love” experience. Amazing!
