IN THE SPIRIT OF THE SEASON

W

e’ve made it. This year is coming to a close to give way to a new one soon. What better time to take stock of the past year and start preparing for the challenges of the next year, right? No matter how diifferent or unique we want to be, very few could argue with the virtue of that. 2015 has been a good year, if we may say so. And while others might argue that that it could have been better, I am not one for pressing our luck really. I’m just happy to count our blessings, and hopefully be able share them with others as we get in tune with the spirit of the season. It’s easy to be like good ole Scrooge these days, for so many reasons -- the bad news that the media has been bombarding us with lately, being one. The social media trolls, for another. But despite it all, one can hope find a way to find the spirit of this season, whatever his or her race, color, or creed. For me, Christmas is not just the birthday of Jesus. It is a time to spread cheers, love, generosity, and goodwill, so that maybe we can all start practicing them year-round. “Love thy neighbor,” is not just a Christian doctrine. “Peace to all men,” is not just a Christian wish. The spirit of the season matches our theme for this issue, which is “Bangkok.” Why? If there are places in the world where cheers, goodwill, and generosity rule, if there are corners of the world where peace and tolerance are a daily practice, one of

them must be Bangkok. And for travel and tourism purposes, Bangkok, arguably has few equals. The capital, while pre-dominantly Buddhist, is a popular destination during this time of year because, where else would you be for endless feasting and partying than in this “most exciting Asian capital” indeed? The fun, the parties in Bangkok are legendary! Bangkok is also emerging as a new gourmet hub not only because of the fabulous Thai food, but also because of the other international gourmet specialties now offered here by some of the world’s best chefs at some of the world’s most inviting restaurants. That explains our increasing focus on “Wine and Dine” every issue, which we can never really get enough of. This is a season of great shopping in Thailand too, of course, and year-end sales attract even the most discerning shopaholics around. And how about spa, health, and wellness treats? As the Thais make the Christmas season big deal, and follow the Christian world’s example of giving holiday discounts and seasonal joys, there is something here for now for everyone! I can go on and on and on! Anyway, elsewhere in the magazine, there is everything for you whether you are a first time visitor or a frequently returning traveler. We have all those insider information we try to regularly collect and provide to make the magazine more informative, interesting, and always

LONG LIVE THE KING Grand celebrations ready to mark His Majesty King Bhumibol Adulyadej’s 88th birthday on Dec. 5

D

ecember is a very auspicious month in Thailand for one reason: the birthday of His Majesty King Bhumibol Adulyadej – the longest reigning living monarch in history. His birthday falls on the fifth day of the month. The dearly beloved king, who ascended the Thai throne in 1946, will be 88 years old this year. To mark the birthday of the revered king, who is regarded as the “Soul of the Nation,” and “Father of the Land,” big celebrations are organized by both the public and private sector across the country every year. Grand celebrations are usually held in Bangkok at Sanam Luang, the Royal Plaza and the area around Ananda Samakhom Throne Hall, and Ratchadamnoen Road. But the entire country actually joins in the celebrations. The spectacle includes candle-lighting ceremonies, fireworks display, and public performances. Since his ascension to the throne, His Majesty has earned the respect and love of his subjects because he has proven beyond doubt that he sincerely cares for his people whatever their station in life. Considered as one of the most hardworking monarchs in the world, His Majesty never gets tired of visiting every corner of his kingdom, checking how his subjects are living, and initiating Royal

Projects to help uplift their welfare and livelihood. The many Royal Projects have in fact become the backbone of social and economic support for all the people of Thailand; they have helped raise the living standards of the people. His Majesty was born at Mount Auburn Hospital in Cambridge, Massachusetts in the United States on Dec. 5, 1927. He was the younger son of HRH Prince Mahidol Adulyadej and Mom Sangwal (later Somdej Phra Sri Nakarindhara Boromaratchachonnani), who gave him the name, Bhumibol Adulyadej, which means, "Strength of the Land, Incomparable Power.” The young Bhumibol came to Thailand in 1928 after his father, Prince Mahidol, obtained a certificate in the Public Health program at Harvard University. He briefly attended Mater Dei School in Bangkok but in 1933, his mother took the family to Switzerland, where he continued his education at the École Nouvelle de la Suisse Romande in Lausanne. In 1935 his elder brother, Ananda Mahidol, became King of Thailand. The family came to Thailand briefly in 1938 for HM King Ananda Mahidol's coronation, but then returned again to Switzerland. The young Bhumibol received his baccalauréat des lettres (high-school diploma with major in French literature, Latin, and Greek) from the Gymnase

Classique Cantonal of Lausanne. By 1945, after World War II ended, he began studying science at the University of Lausanne, and the family returned to Thailand. Bhumibol ascended the throne on June 9, 1946, following the death of his brother, HM King Ananda Mahidol. But he returned to Switzerland to complete his education. His uncle, Rangsit, Prince of Chainat, was appointed Prince Regent. The young king then switched over his field of study to law and political science to prepare himself more effectively for his new position as ruler. While finishing his degree in Switzerland, he visited Paris frequently. It was in Paris that he first met Mom Rajawongse Sirikit Kitiyakara, daughter of the Thai ambassador to France. He was 21 and she was 15. The two were engaged in Lausanne on July 19, 1949, and married on April 28, 1950, just a week before his coronation. Their Majesties have four children: Princess Ubolratana, born April 5, 1951 in Lausanne, Switzerland; HRH Crown Prince Maha Vajiralongkorn, born July 28, 1952; HRH Princess Maha Chakri Sirindhorn, born April 2, 1955; and HRH Princess Chulabhorn Walailak, born July 4, 1957. Regatta Time! On Dec. 5-12, Phuket Regatta sets sail again with more than 150 boats and 1,500 plus sailors participating

keelboats and multihulls amongst its competitive classes, and will feature a sail pass to celebrate His Majesty the King's birthday. Competing sailors travel from USA, Australia, England, Russia, Japan, Singapore, Malaysia, China, and Cyprus, with even wider international representation amid their crews. The regatta was inaugurated in 1987 to celebrate the 60th birthday of His Majesty the King of Thailand. Since then, the event has been held every year since, during the first week of December.

ne of the truly standout international sporting events in Southeast Asia, the Phuket King’s Cup Regatta prepares to set sail again, expecting to make a large contribution to overall Thai tourism performance and swell Phuket visitor numbers. The “Phuket King’s Cup Regatta 2015,” to be held off Kata Bay from Dec. 5 to 12, will host international racing classes across which over 150 boats and 1500+ sailors will compete for one of the sailing race’s most prestigious trophies. Consisting of five days of racing on challenging, scenic courses held amid the beautiful Andaman Sea islands, the regatta brings some of the world’s fastest independent racing teams, in addition to its famed prize-giving party series. A big draw for Thai companies and international brands keen to grow their presence on a highly visible cosmopolitan platform, the race series and parties are an essential event on the Phuket local calendar. The regatta offers sponsorship and media engagement opportunities as well as premier networking opportunities hosted across the party venues each night following conclusion of the day’s racing. Under Royal Patronage, the Phuket King's Cup Regatta is organized by the Phuket King's Cup Regatta Organizing Committee under the auspices of the Royal Varuna Yacht Club, in conjunction with the Yacht Racing Association of Thailand, the Royal Thai Navy, and the Province of Phuket. My favorite place: Ubon Ratchathani, a beautiful province in the northeastern part of the country. Bring there: Money. Must-do: Ubon Ratchathani has lots of temples, so make merit as much as you can if you are a Buddhist and believe in giving to others to get good things in your life, like I do. Must-see: Phu Phrao Temple at Amphur Sirindhorn is highly recommended. You should be there around 5 p.m., if you are to see the magnificent view from the top of the Sirindhorn dam in the evening. Stay until dark and you will see the fluorescent tree light up at the back of a Buddhist temple - very impressive! Must-buy: Fabrics from the local weavers, who are noted for weaving only one piece of fabric at a time, you always get something unique. Eat at: The night market in Ubon city where you can enjoy excellent dining, from local to international food. Drink at: Lae Khong Restaurant. My favorite place: Baannoi, close to Pichet-Sak Lek. It’s a great place to go back in history and to be among the mango farms, rice fields, and other gracious, authentic and natural scenery. Bring there: Your spirit. Your sense of adventure... Must-do: Be yourself at any restaurant. Drink and eat whatever you like. Must-see: For me it's the protected national parks in eastern Thailand. So much to see and experience! Must-buy: The local O.T.O.P. products, which are available all over Thailand. These products are creataed by the grassroots and not only are they creatively made, they are also supporting the local economy. Eat at: At any place; Thai food is amazing anywhere. It can sometimes be a bit spicy, but the Thais like it hot – and so do I. Drink: (and eat at) the Blue Sky Rooftop Bar – with amazing views over the skyline of Bangkok. Sleep at: In Bangkok, that would be Centara Grand @ Central Plaza Ladprao where else? Of course, Centara has several hotels -- for different categories of tourists -- in Thailand, so there is a choice for every taste and budget wherever you are!

My favorite place: This country is my favorite place. Bring there: I want to bring here all my family members from Singapore. It is something they would really enjoy; it would be an amazing family trip. Must-do: Shopping, shopping and shopping! Be it at Platinum or Siam Square, clothes are abundant and with a bit of haggling on the price, you can walk away with quite a few successful purchases. And then, of course, there is Chatuchak Market, and afterwards, Khaosarn Road. Must-see: The Grand Palace, the floating markets, and Chinatown, among others, are definitely "must-see." Also, Amphawa where you can see fireflies at night. To rund up, a Chao Phraya River cruise takes the experience to an entirely different level. Must-buy: Clothes that have come from somewhere special, souvenirs from night markets, or trinkets and cute gifts for the young ones back home. Eat at: Near my friend's place in Silom Soi 9 is a simple sidestreet stall with very affordable and delicious food. Drink at: Thonglor, Route 66, Central World, and Silom and Khaosarn roads. Sleep at: Nonsi Residence is a great place with very friendly staff.

“W

e are now descending to Don Mueang International Airport,” says the flight stewardess as she straightens up my seat. I look out over the window, and the first thing I noticed, in the still dark sky, is the glittering light. How their twinkle seemingly outshine the stars. “Wow, what a beautiful city even from above,” I say to the lady beside me. ”Well,” she replies, “it’s the most exciting city in Asia." Bangkok is indeed an exciting city to visit, live, and work -- I was soon to find out. It’s been years since that first touchdown, but to this day the excitement that is Bangkok remains. In fact, it has become even more exciting now than when I first visited it 20 years ago. Ah, how fortunate I feel to be here! Like all first-timers to Bangkok, my image of the city then was built on the reputation given to it by the media: Bangkok is mainly three “S,” if you know what I mean. But it didn’t take me long to realize that there is more to Bangkok that the three “S.”

And the more I stayed, the more my love for the city grew. I would go home to my native country, and then return. I would go home again, and then again, return. And now I’m here, again. What makes Bangkok eternally popular to people like me? What makes foreigners like me fall in love with the city deeply, madly? The mystique is not easy to crack. “There is something for everyone here, and surprisingly enough, there’s a lot of hidden corners to enjoy a quieter life with your family while still having all the conveniences of a modern city,” offers Alexander Stenrud Parry, the 42-year-old new general manager of Novotel Platinum Bangkok. I couldn’t agree more. Like Parry, I used to love strolling around Lumphini Park – one of Bangkok’s oldest and most beloved parks. I bring my family there when they are in Bangkok. Also like him, I enjoy going to Wat Pho, perhaps more than I do going to Wat Prakaew, if only because I can try an authentic Thai massage in this place, which is the oldest massage school in

the kingdom. And still also like him, I love Asiatique The Riverfront too, for its sights and sounds. Asiatique is not only great for tourists; it’s also great when you need to entertain friends and family visiting from abroad. But again, as any Bangkok old hand will tell you, there is more to Bangkok than meets the eye. There’s a lot more to see. There’s so much to buy. There’s so much to do. There’s so much to eat, drink, and enjoy. There’s so much to experience -- and everything seems to be relatively easy and affordable. One of the best things I love about Bangkok, though, is that it doesn’t stand still. Things are always changing. Edifices are being torn down and new ones come up. Products are being launched and then replaced with further improved ones. People seem to be always in a flux. The energetic, vibrant city is always going forward, forward, forward. At the same time, this home to some 10 million people (14 million if we include those in the

So for example, even if your last visit to the capital was years ago and haven’t been back since, when you do come back you’ll find those experiences that initiated you to this eternal city are still there. They just got a little better. Like the mainstream programs such as the temple tours – to the Grand Palace, Wat Pho, Marble Temple, Golden Mount, and other important temples in the city; the Chao Phraya River and klong explorations; the floating markets, night bazaars, street side eating, and other distinctive elements of Thai culture that has been passed on from the ancient times still welcome you with a smile, and often more add-ons and improvements. Some of the traditional festivals such as the Songkran and the Loy Krathong – and even the Christmas and New Year celebrations -- are far bigger now that you’ve probably seen them some 20 years ago. But there are countless new, modern attractions too, as the new campaign by the tourism bodies, “Discover Thainess,” focuses on. This campaign is an attempt to embbed this characteristic Thai uniqueness to the Bangkok experience, as another group of visitors – the so-called “millennials” -- who are more curious, apparently younger, more

adventurous, more tech-savvy, and with lots of money to spend too, surges ahead to boost tourism arrivals. “At my age, I yearn for the more adventurous stuff. But after a city tour by bike, some explorations by the river, or a ride to some exciting places where mainstream tourists fear to tread, I always like to enjoy the food and the local nightlife,” says Jomar Hermida, a 32-year-old Asian tourist. “But I want to experience the Thainess that distinguishes this destination too!” The “Discover Thainess” campaign is meant for tourists like him. The relatively younger visitors are fast changing Bangkok’s visitor profile that we can expect its tourism landscape to continue to change, continue to evolve, continue to expand in ways it had never before. Exciting isn’t it? Bangkok initially carved out a reputation for value (read: inexpensive), besides the variety of attractions of course. Food and accommodation facilities and service, even the transportation systems, are easy and affordable. Even going to other destinations from Bangkok is relatively easier as the city is a leading regional aviation hub as well. There are high-end sectors, of course, but even those are relatively inexpensive compared to those in other high-profile regional destinations. And with a fully developed tourism infrastructure that compares with the best in the


world, no wonder the city remains as popular as ever. Proof? The country’s 25th millionth visitor just flew in as we were writing this article. But you probably know that already. So perhaps it’s better to take you now to a tour to the “Insider’s Bangkok” as we know it now. Here we go:

SIGHTSEE

You’ve seen Wat Prakaew, Wat Pho, Wat Arun, and other major temples. Maybe you have even mapped out good old Rattanakosin – the site of the former capital of Siam after the Burmese sacked Ayutthaya – for yourself. Perhaps you have also taken a boat ride along the Chao Phraya River already, and has scoured the many canals and waterways that gave Bangkok the “Venice of the East” moniker in the past; you have even enjoyed a dinner cruise and saw the glorious side of

Bangkok by night. Maybe you have immersed yourself in the many living proofs of the kingdom’s treasures – art and architecture, dance and music, maybe even handicrafts and street food. Or perchance, you have already taken a peek at Khao Sarn Road – dubbed as the backpacker’s heaven – as well as similar notorious nocturnal districts of Patpong, Nana, and Soi Cowboy. Now what? Well, there are still pockets of attractions that are waiting for you to be explored, such as the Royal Barge shrine, Ancient City (Muang Boran), the Erawan Shrine in Samut Prakan, and Koh Kred – to name a few; and for fun, Dreamworld, Siam Ocean World, etc. In fact, beyond these are some attractions that are just beginning to make it to the recommended bucket list for tourists: Baan Silapin, Baan Krachiao, etc. If these are not for you, how about the modern Bangkok –

Many recent Bangkok visitors are saying that its nightlife has become “tamer” than it was a few years back. That maybe so; but the “hot and exciting” Bangkok hasn’t totally lost its touch. The early bar closing times may have limited the hours of fun somewhat, but there is still so much to enjoy as far as nightlife is concerned. The live bands, the worldrenowned DJs, the mini-concerts, the open bars, the beer gardens, even the cabaret shows. One of the hottest entertainment districts in the heart of town to date is Sukhumvit 11, where several bars, clubs and restaurants – Clouds, Above 11, Havana, Q Bar, Oskar, Levels, etc…operate for both locals and foreigners. On Sukhumvit 15, Four Points by Sheraton ups the entertainment ante not only with a reinvigorated Ambar and Drunken Leprechaun but also by outsourcing a space to Hooters. Soi Cowboy (Sukhumvit 23) is of course a favorite of those still look for the red-light district atmosphere, albeit tamer, that Bangkok was famous for. There are now several entertainment complexes that draw fun-seekers in droves, including Seen Space. Of course, we must mention how the major hotels are also cranking up notches as far as nightlife entertainment is concerned, with exclusive wine dinners, Michelinstar guest chefs promotions, and other culinary events. Oh by the way, Sathorn Soi 10 is an emerging foodie

hub by the way, dubbed as the new Thonglor. Oh, I haven't event mentioned the spas and wellness clinics! And before we forget, Bangkok also has a thriving art scene, and you should experience its vibrancy by visiting a few of the art centers and galleries around town. Then, there’s a new non-profit group called Bangkok River, whose main goal is re-establish Chao Phaya River as the heart of Thai tourism. Formed with the support of eight luxury riverside hotels and River City, Bangkok River has lined up a gamut of programs and activities to inject a new dynamism to the “River of Kings” and make visitors rediscover this very important district of Bangkok. A few more tips: While modern Bangkokians are generally exposed to what’s in and out in the international arena, visitors are advised not to push it too much by expecting them to behave as Westerners do. In general, common sense, politeness, and respect will help you build longer, lasting friendships in the city. Visiting the temples and

historical places are essential if a visitor is to understand the basic mindset of their hosts. Getting deeper into the lifestyle of the Thais – from exploring their riverine tradition to understanding their sanuk (fun) and mai pen rai attitudes are recommended. Observing the cultural dos and don’ts, and avoiding “cultural taboos” -- such as not pointing your feet in front of the person facing you, not touching the head of your friends, or getting properly dressing when visiting sacred places -- are highly advised. One has to overcome the language barrier of course. The Thais are not necessarily fluent in the global lingua franca but more and more are now finding confidence in speaking English. Especially in the travel and tourism sector, the “obstacles” are now being addressed. The Thais would love it more though, if you try speaking with them with their native tongue. Overall, just try to know more about the Thais and you will enjoy your Bangkok visit even more.

Composed of Pali and Sanskrit root words, it is listed in Guinness World Records as the world’s longest place name. In English, it translates to: “City of angels, great city of immortals, magnificent city of the nine gems, seat of the king, city of royal palaces, home of gods incarnate, erected by Vishvakarman at Indra’s behest.”

Bangkok city proper covers an area of 1,568.737sqkm; it ranks 69th among the 76 provinces of Thailand. Of this, about 700sqkm form the built-up urban area. It is ranked 73rd in the world in terms of land area by City Mayors.

FOR ART'S SAKE! Baan Silapin Artist’s House and its magical puppets are giving long-tail boat tours along Klong Bang Luang a reason to stop and take notice

W

hile present-day Bangkok culture can often be thought to be nothing more than the latest shopping mall, condo development, or iPhone, there are pockets of resistance that remain untouched by modernism, and spots that offer a glimpse into traditions of the past to keep historic Thai cultures alive. Once such place is the Klong Bang Luang canal village on the Thonburi side of the river, and the Baan Silapin Artist’s House and its excellent traditional puppet shows found there.

by Dave Stamboulis Klong Bang Luang is one of those sleepy wooden-slats-over-the-water communities that used to be the norm of Bangkok life and are now engulfed by high rises, malls, and sprawling concrete. The wooden shophouses here have been around forever, with the owners usually found sitting out front, watching the canal flow languidly past. More recently, longtail boat tours of the canals in Bangkok have sped past here as part of their itinerary, but now they are stopping due to the recognition of Baan Silapin. Chumpol Akkapantanon, a painter who bought and restored

several 200-year-old wooden houses along the canal, owns Baan Silapin, better known as the “Artist’s House”. As he says, “much of Bangkok has been destroyed by development but life on the canal inspires a more simple way of living and shows off how the city used to be.” In addition to restoring the beautiful old wooden home, Akkapantanon turned it into a local art center, as well as a coffee house where aspiring artists could hang out, learn, and create. The local community got behind the project as well, deciding that creative arts could

Thai theatrical puppetry, known as hun lakhon lek, has been around since the reign of Rama VI, and is really the only form of ancient puppetry (there used to be four) that is still performed today. The same attention to graceful manipulation of the puppets is still adhered to, with three performers needed to make the pulleys and levers on each puppet work smoothly. Men control the monkey and demon puppets, whereas women control the heroes and heroines. While the puppet show is the main attraction, the Artist’s House and Klong Bang Luang are attractions worth the trip alone. Local residents now hawk food and souvenir items along the wooden walkways, there are some tea and coffee shops, and in Baan Silapin; there are plenty of creative works available as gifts, along with a small eatery selling meals and snacks. For most visitors, it will be a side of Bangkok they have never seen, not to mention that the puppet show that is free by the way (although donations are highly encouraged) and deserves support so that this Thai tradition does not become a relic of the past.

steer its young people away from trouble and keep the tradition of local performing arts alive by teaching Thai puppetry, and getting the young folks to become performers and pass on the lineage. Another artist friend, Supasit Wongrom-ngern, moved into the neighborhood, rented a shophouse, and started teaching painting and making woodcuts. The traditional Thai puppet shows here are performed almost daily and now attract crowds of mostly urban Thais on the weekends coming out to play tourist along the atmospheric canal, although foreign visitors are also making their way here as well. Puppeteers dressed in black with black masks so as not to draw attention to themselves control the strings of lifelike marionette puppets, enacting Thai folktales and scenes from the Ramayana. The star of the show is usually the Hanuman monkey god puppet, who is always up to mischievous deeds,

and true to Thai comedy, there is plenty of bawdry joking and audience interaction/participation with the puppeteers. The stage inside the house sits in front of an abandoned Buddhist temple, which makes the performance all the more atmospheric. You can sit downstairs, but it’s also possible to wander upstairs where there is an art gallery full of paintings for sale. Here you can peer over the balcony and get a great vantage point over the puppets and performers. As opposed to seeing expensive National Theatre renditions of Thai puppetry, or dealing with the crowds at the more than touristy Joe Louis Puppet Theatre, here you can watch the performers making the black plaster masks, rehearsing the katas (mantras) used in the shows, and best of all seeing the young troupes of kids who are involved in the theatre learning about dramatic art and hamming it up whenever they can.

Vietnamese friend in Hanoi had promised me that Ninh Binh was the “real” Vietnam, more beautiful than Halong Bay, with the same mountain scenery (minus the salt water of course) and just a fraction of the visitors. I found that hard to believe, but it turned out that she was right. While the city of Ninh Binh itself is just a noisy pit stop for long distance buses and trucks along busy Highway 1, just 10 kilometers away the jagged limestone mountains appear and rise from a pastoral agricultural setting, with the languid Tam Coc River flowing through their midst. Locals here make their living growing rice, raising ducks, and rowing boats with their feet. Yes, that’s right: rowing boats with their feet. The Tam Coc River weaves its way through the mountains here, taking in some picturesque postcard scenery. Rowboats are the ideal way to enjoy the landscape, and the ride can be pretty exciting too, as they travel through pitch black caves and grottoes, and the locals have learned to navigate the small rowboats that travel the river with their feet. This stunt enables them to eat and drink while sailing along, or even borrow tourists’ cameras to take snaps of their disbelieving smiles. Vinh - a wise-cracking rower I’d used for several days - said that until recently, men didn’t do the rowing here, but with the growing domestic and foreign tourist scene more feet had become required to handle the boats. Vinh said that said he occasionally missed being at home farming, but that the money was good rowing. “Besides,” he quipped, “my wife doesn’t bother me anymore when I want to relax with a drink,” he said with a wink, and as we floated into one of the river’s eerie dark cave complexes, he pulled out a bottle of rice whiskey and several shot glasses, proceeding to show off the art of pouring DECEMBER 2015 | 33

a shot while still rowing. Feet first naturally. Back on land, I made my way by bicycle to the sparsely visited Hang Mua Temple, only four or five kilometers from town, yet a complete world away. Surrounded by rice paddies, the temple is named after a cave located in the mountain that the pagoda sits on top of, reached only by a climb of some 500 steep steps. Pilgrims come here during festival times, but otherwise the place is usually deserted, with just a lone caretaker standing by the entry gate to collect the THB 30 entry fee required from the few intrepid foreigners who make it out here. After parking my bike, I tackled the steep stairs leading up to the pagoda. The route up is relentless, broken up only by the occasional bench to rest on, with the sight of mountain goats looking out at you rather quizzically, wondering what brought you into their territory. The ascent is hot and sweaty, but the panoramas once on top are

one of Ninh Binh’s highlights. On one side, there are endless views of rice paddies, with limestone needles and pinnacles sticking up from everywhere, composing one of Vietnam’s most beautiful landscape paintings. From the other side, a precipitous drop overlooks the Tam Coc, languidly winding its way through the tranquil farmland and grotto scenery. The small village surrounding the boat pier at Tam Coc is fairly nondescript, with a tiny outdoor market full of vendors selling food and produce to the locals, a ticket counter, and a handful of simple restaurants and bars to have a meal and a few beers in. I ordered a plate of thit dê, Vietnamese for goat meat. In Tam Coc, they barbecue the goat with lemongrass and ginger, and often serve it alongside com chay, which is burnt rice. This might not sound overly appetizing, but it actually is quite delicious. The cooked sticky rice is taken from the bottom of a steel pot, molded into squares or circles,

and left to dry in the sun for several days. The squares are then soaked in hot oil until they become golden, and then combined with beef or pork, onions, mushrooms, and various spices. During the day, a good number of private tours make their way to the Tam Coc River for boat rides, but at night, the area is deserted. I made my way back to my guesthouse accompanied by the drone of frogs in the rice paddies and ducks quacking their way home, made all the more enjoyable by a dusky blue sunset with pink hues. As the darkness set in, the peaks surrounding me became huge shadows, standing like guardian sentinels. I gazed out at the dusk’s final beams of daylight, reflected in the irrigated rice fields and meandering canals, and realized that my Vietnamese friend was right. This was the real Vietnam, not to mention my own private Halong Bay, and one of Vietnam’s best-kept secrets.

Ninh Binh can be reached in two-and-a half hours with public buses from Hanoi’s Giap Bat bus station, or more conveniently with tourist minibuses via Open Tours (www.sinhcafe.com) from Hanoi’s Old Quarter. The caves and rivers of Tam Coc are seven kilometers from the city, and an overnight stay is recommended. Chez Loan (Tel: 094 857 7322, www. chezloantamcoc.com) is a great relaxing spot and it is a comfortable home-style guesthouse perched amid the rice paddies just minutes from the boat piers with plenty of peace and quiet. Make sure to try the aforementioned goat meat here; the owner of Chez Loan is a gourmet chef and even runs cooking classes if you’ve got extra time.

The premium emphasis is on space, for one: the rooms-in all categories-are spacious, with high ceilings, have a definitive uncluttered look, and are equipped with some of the cutting edge gadgets that even other five-star luxury brands in Bangkok do not yet provide. Most of the rooms offer great views, thanks to the hotel’s interior construction design, which was inspired by the blooming lotus. Similarly as one explores its facilities, it is easy to acknowledge that Grande Centre Point puts very strong emphasis on the Thai experience, and health and green tourism. They have created ecofriendly spaces with luxury trendsetting Thai design in the heart of the city. There is sprawling garden greenery on the 8th floor that makes the guest feel that he or she is not in

a highly-polluted urban center. The adjoining Terminal 21 is a destination in itself, but if you want to venture out a bit farther, Soi Cowboy is just across the street, and Sukhumvit 11 is just a stone’s throw away, among the many options you can choose from. We all have our favorite hotels – classic or boutique -- and often, it depends on what we want and need at the moment. For some, Grande Centre Point may not be the perfect hotel. But if I’m coming to Bangkok for just a few days and don’t want to miss any of its unique energy and spirit, I’d stay at Grande Centre Point. It’s one of the best places to stay whether you’re in Bangkok for business or leisure -- and you’re also going to get a great value hotel at that!

GREAT RAILWAY JOURNEY The popular railway along the Kyushu West Coast promises a truly great small railway journey in Japan by Andrew J Wood

I

've heard a lot about the Hisatsu Orange Railway in Kyushu (Japan's third largest island), and I was really looking forward to a unique, world-class experience. I knew that the train was often fully booked, sometimes a year in advance, and reservations for the small but popular railway along Japan's Kyushu West Coast were extremely difficult to come by. I took it as a good sign that this was truly a great railway journey in the making. Japan's rail system is legendary; the smooth almost silent Shinkansens that whisk you effortlessly at 250kph or more are testament to the importance of rail travel in Japan. The Hisatsu Orange Railway stops at 28 stations between Yatsushiro in Kumamoto prefecture and Sendai in Kagoshima prefecture, a distance of 117km along the coastline of Kyushu. And unlike the Shinkansen that travels straight and fast as a bullet, the Orange Railway takes a slow and winding scenic route, with many stops along the way. Onboard, with lunch in the Orange Restaurant, the journey takes approximately four delicious hours. For me this was heavenly: lots to see and do and lots of new tastes, and even new drinks. The Orange Railway is a private enterprise set up in 2004. The railway's shareholders include Kumamoto and Kagoshima prefectures (regional governments) and various towns and cities along its route. It has a very strong


focus on being a local railway for the people with a real drive to develop tourism and local gastronomy. On the train ride you can enjoy the spectacular coastline that borders the East China Sea, as well as take in the wonderful views as you traverse through the citrus fruit farmlands which gives the railway it's name. We were told that during the journey we would make a number of stops at various stations and we will

be presented with gifts. To receive these we needed to bring along our special gift vouchers that were beautifully presented, along with our boarding passes, at the start of our journey. The gifts in many cases turned out to be local food items, many of them being made at the stations that we stopped at and this was the beauty of a gourmet railway journey. We were treated to an array of absolutely delicious items, my favorite were Hinagu chikuwas (a kind of BBQ soft fish paste made into a roll); locally brewed beers and fruit juices; curry pan (a delicious deep fried breaded beef curry 'samosa') and in Minamata, Cremia soft ice cream famous throughout Japan. As well as the treats we were also going to enjoy a very fine lunch in the Orange Restaurant, which utilizes produce sourced from local communities. This was a perfect example of CSR: how larger corporate businesses can make responsible choices to support smaller local industries, in a caring and sustainable way. Rail travel is not all things to all men. For me I enjoy the luxury of kicking back, relaxing and letting

the journey and the day unfurl. Fortunately this time around with no deadline and time sensitive appointments at the other end. Unlike car and air travel I could thoroughly enjoy the journey with very few does and don'ts to restrict my movement or social interaction. I could chat with my fellow passengers or not. I could walk around or not. I could take pictures or just read, or not. The idea of taking a nap never really occurred to me, I was much too interested in the journey and the views outside. It was more a case of carpe diem - seize the day! The choice and space was mine and it was bigger than just a seat. It was a delightful journey and I didn't want it to end.

A

honeymooning couple decided to visit Thailand for the last leg of their trip. After checking-in at the Royal Orchid Sheraton Hotel & Towers (ROSH), the couple realized that they had forgotten their camera in the taxi. It’s not really about the camera they were concerned about; it’s the memories the camera contained. The couple had taken lots of pictures with it to remind them of their honeymoon, and suddenly it seemed that they had lost them all. So, what should they do? Worry not: Somkiat Laiklang came to the rescue. Somkiat, chief concierge at ROSH, did everything he could to find the taxi again. It was not easy but to make the long story short, the camera was returned with all the photos in it intact. That made Somkiat, in the couple’s eyes, a “hero.” Before they checked out, the couple gave Somkiat a card and a book contained a coin with the image of Wilhelm Tell, the couple’s national hero, as a token of gratitude. EXCITING EXPANSION After introducing Korea’s most well-known popcorn ice cream brand-- Sweet Monster--to Thailand, Jarujit Baiyoke eyes on expanding the master franchise with a few more branches around Bangkok and the provincial areas by Rich Kantita

T

he vice chairman of Baiyoke is the CEO’s daughter, Jarujit Baiyoke. She is in charge of the newest addition to the Baiyoke Group, the Hua Chang Heritage Hotel. But Jarujit has another passion: one that involves one of Korea’s famous icecream brands, Sweet Monster, which she introduced almost a year ago to Thailand. Now a master franchise license holder of the brand, she explains the coming together of this partnership to Look East. “My brother and I bring into Thailand things that we are fans of,” she says. “When I was studying at Le Cordon Bleu in Korea, I enjoyed trying all kinds of desserts there, and I enjoyed Sweet Monster the most.Sweet Monster not only has a unique identity in its animated cartoon designs; but also, it has many different flavors. As a dessert lover, I consider it the best.” Of course, she has tried other ice cream brands before deciding that Sweet Monster would worthy as a business investment. "Not too many people know the difference between the ice creams they are having." she explains. “Most of the ice cream catering companies in Bangkok are soft-serve. Softserve ice cream is light due to the special freezing process that is used in making them, and also because of the percentage of the milk fat ingredient.” Apparently, the ice cream's rich texture and flavor derives from making it with 75 percent good quality milk.

Sweet Monster was the first to experiment with popcorn and ice cream. The smartness of the concept is inescapable, as is the creativeness in the brand's graphic designs. People walk into a Sweet Monstere store and are excited to try out the ice cream because of the fun graphics used in the branding. But what makes them return is the rich taste, which is achieved through the quality of milk and the processing. People like Sweet Monster's texture and flavors, and enjoy the servings, which are larger than those in other ice cream places at about 200 grams per serving. The most expensive investment in this business, Jarujit adds, is the importation of equipment. "We import quality ice cream machines, the air-pop machine to make the popcorn, the popcorn, and other ingredients," she says. "That explains why we have such high quality product. "Intricate details are needed when mixing and putting the popcorn ice cream into shape,” she adds. “Some people do not like eating popcorn because of the trouble it gives them: chewing it and having it sticking to their teeth. Our air-pop machine makes the popcorn lighter and less sticky, another important aspect of this brand.” She admits that the ice cream market in Thailand today is huge and very competitive but there isn’t enough diversity. "Fortunately, Sweet Monster can provide now,” she says. Overall, there’s an overwhelming feedback (read: demand) for Sweet Monster. “Better than expected,” she

points out. “Not only is it popular with kids and teens but also many adults seem to enjoy it as well. Because it is neither too chewy nor too sweet, Sweet Monster attracts a lot of consumers, about 80 percent of whom are Thais. But Japanese and even Korean expats like them as well. And that is why Jarujit is excited about the expansion. The expansion plans are jumping out of the blueprint this year, and that includes adding new flavors to the menu, such as the green tea and raspberry,"to welcome in the holiday spirit," she says. Other Sweet Monster products are also being launched, to further diversify the offerings. Soon clients can expect not only ice cream and popcorn but also one of the highlights of this brand, gift products. Sweet Monster has already two branches in Bangkok: one at J Avenue, a community mall in Thonglor; and another at Siam Paragon. As Sweet Monster gains popularity, a third branch is opening up in a new mall that is still under development, set to open at the beginning of 2016. Jarujit also wants to expand the business into the provincial areas so that more people can enjoy the “new deliciousness.” Her main targets are the big-populated areas where there are many potential customers. The ultimate goal is to have at least 15 stores around Thailand soon. “The good thing about this brand is its quick turnover. Trends in Thailand are changing constantly," she concludes, "so it is important that each business can expand quickly."

o, another luxury lifestyle mall opened in Thonglor in August. What’s new, right? But The Taste complex in Thonglor Soi 11, built to the tune of THB 200-million, is being billed as “the new dining destination to be” in the city. And with restaurants such as the Iron Chef Table, which is under license from the famous “Iron Chef” TV show; Rosemary by Madame Tuang, which is the exciting first venture of the popular TV personality and cookbook author Madame Tuang; the legendary Tonkatsu Hamakatsu, which has over 106 branches in Japan; and the “terrifically tempting” Sweetery; the appellation seems just right. “The Taste Thonglor offers the best in urban lifestyle,” says Suarttachat Julphalang, executive director of project development for Tamlaythong Development Co., Ltd. “As you can see,” Suarttchat says, “we are very selective in choosing the tenants.” Only premium restaurants and shops - including the three mentioned in this article – call The Taste Thonglor home. Whether or not The Taste lives up to its promise as the city’s “new dining haven” is perhaps a little too early to tell, but a visit to its leading restaurant tenants is obviously in order.


Among the three restaurants at The Taste that are fast stealing the limelight from some of Thonglor’s major dining hotspots, Rosemary by Madame Tuang is an easy favorite of local foodies, thanks to the owner’s many years of hosting “Foodwork,” a Thai TV cooking show. Set at the back of Iron Chef Table, Rosemary by Madame Tuang boasts a gleaming all-white color scheme that lends the restaurant an airy, European elegance. A hands-on Madame Tuang is ever-present as the restaurant is her first baby, so to speak, and she wants to make sure that everything is flawless from the taste and the presentation to the service. And it was, based on our first visit there recently. The dinner, as expected, was a veritable feast as the “Cooking Momma” brought out one of her house signatures: burrata cheese with a fresh cherry tomato and wild rocket salad. It looks deceptively simple, but the fresh Italian white cheese with unusual, soft texture blends perfectly with the freshness of the vegetables that encircle it. I just love this one!

Next is the spicy spaghetti with Thai anchovies. Spaghetti in Thailand comes in many forms, but there is a unique twist that gives this dish a symphony of flavors that only a Thai can compose; a comfort food that will titillate your taste buds. But wait until she serves the “Seafood King.” This platter of mixed grilled seafood with some original Madame Tuang sauces really brings out the best in the seafood. More followed – from the grilled tiger prawns to the lemon rosemary cake, among others – and as we tasted them all, we were thinking about sharing the enjoyment with our loved ones for company. To sum it up, the food obviously veers away from more traditional Thai cuisine. But great food is great food, anyway, and it is all presented in a way that engages all of the senses, which fortunately they were successful with. So, we rewarded the kitchen team by enjoying their creations to the very last bite. In fact, to say that we just enjoyed them is a pure understatement, and it’s such a pity we don’t have

enough space at this time for a really elaborate review. But you must come to try them too. It took quite some time to persuade Madame Tuang to go beyond her TV shows and cookbooks and open her own restaurant, and those who have tasted her signature menus are asking: “why only now?” Madame Tuang reiterates how she loves everything about food, but she pointed out that she would not have opened this restaurant if not for her daughter. Well, Buddha bless her daughter; now we have another great place to visit in Thonglor when our hunger pangs strike! -- by Percy Roxas

Chopsticks were raised again, as a starter set arrived at our table. The premium pork was cooked in the style of the restaurant’s name and was delicious too. The sides of miso soup and vegetables were tasty accompaniments. The Hamakatsu house special greeted us next - cheese cutlets, pork loin cutlet, pork filled cutlet and deep-fried prawn - all a pleasure on the palate. We sipped on a glass of potent Shochu, which is a clear distilled spirit similar to vodka and actually more popular In Japan than the better known sake. Succulent broiled eel on a rice base finished the mains. I had barely heard the word ‘dessert’ and I was already up like Usain Bolt from the block, sampling some glorious handmade goodies from the buffet. Tiramisu, cheesecake, green tea roll cake, and short cake. Cute mini-cupped grape, green tea jellies, and moreish sherbets were also wolfed down. "Part of the secret of success in life is to eat what you like," commented great American writer Mark Twain. He was right, we thought, as we indulged unashamedly at Tonkatsu Hamakatsu, which is already building a strong reputation for the quality of its food and service. The name Tonkatsu means deep-fried, breaded pork cutlet. The company was established in Japan in 1962 and its restaurants are extremely popular there. This Thonglor branch is the first outside of the country and judging from our enjoyable experience it certainly won’t be the last. Stepping inside from a tall, glassfronted exterior, you see muted brown colors, minimalist décor’, comfortable long sofas, high-backed chairs, and groupsized tables. To the right is the extremely tempting "serve-yourself" dessert bar, but we will get to that later. Opposite the dining seating is the closed cooking and preparation area. I always look for that little extra something that gives a good first impression and this time it was the two packs of wet wipes for my wife and I - most welcome on a day that furnace-like outside. Sipping on some refreshing iced green teas

You know the expression “like a kid in a candy store.” Well, dreams sometimes do come true as when we visited the Sweetery on the second floor of The Taste. It is a confectionery heaven established by talented Chef Sutinee “Tinee” Suvatana, who is already renowned for her eponymous Eatery workshop in the city; she chose the name as a combination of “sweets’ and “eatery.” This is no china cup-clinking, raised little finger, genteel café, with soft jazz accompaniment, however. Sweetery is vibrant, playful, and creative, and that’s just the décor’ –from the patchwork orange and black exterior to the vibrant interior splash of bright colors, tribal art, and ceramic rhinos. An entire wall is adorned with them and they occupy key positions around the restaurant together with a ceiling suspended platform of plastic toys including dinosaurs and Barbie dolls. No fluffy cats or cute dogs here. Rhinos are in keeping with the aim of offering something bolder, stronger and far from

the traditional notions of a slow life type café’. Funky disco and dance music keeps the party feel, as do the numbered group tables, low and high stools, and cushioned lounge sofa. You are encouraged to “just dig in,” have fun, and get messy with the megasized dishes on the inventive menu, which uses high-quality ingredients, and visually stunning presentations all prepared from the large open kitchen. It also includes some gluten-free items. The culinary offerings are cleverly divided into various sections-Soft and Splash, Sweetery Toast, Hot and Sweet, All Time Favorites, and Drinks. Think big here, these are maximalist self-indulgent goodies: Jaffa Chocca Rhino. Chocco Biccy. OMG! The decadent highlights continued with Berry Bang Bang and next a wonderful Nuttella Banoffe. CITY GEARS UP FOR 'ASIA’S 50 BEST RESTAURANTS'

The annual award ceremony has been held in Singapore in the last three years. The fourth edition of the awards--expected to attract legions of the best chefs in the region’s leading restaurants, international media, and other distinguished personalities and food aficionados—will be co-sponsored by the Tourism Authority of Thailand (TAT). It will be held at Gaysorn Shopping Center on a still unspecified date. S.Pellegrino and Acqua Panna are the main sponsors of the award. “Thailand is becoming one of Asia’s key gastronomic hubs,” says William Drew, group of editor of Asia’s 50 Best Restaurants. “With its rich resources for authentic ingredients, the country is the new

ssaya Siamese Club, the award-winning restaurant from Bangkok, has opened a sister venue in Hong Kong: Issaya Siamese Club Hong Kong, located on the 25th floor of Soundwill Plaza II – Midtown, Tang Lung Street, Causeway Bay. Issaya Siamese Club Hong Kong will showcase the menu of its co-founder – international celebrity Chef Ian Kittichai - and will feature his unique signature Thai cuisine of traditional ingredients and flavors prepared with international and progressive cooking methods. ometimes the best things in life are discovered by chance. Such is the case with Monsoon Café’ and Restaurant, which we found just walking down Soi 49 on Sukhumvit Road, Bangkok. This is a sister eatery to the well-established and popular Monsoon Restaurant on Soi 8 (Tel: 02 653 1110; monsoonbangkok.com) on the same road. Monsoon on Soi 49 is a classy yet relaxed venue. There are lots of mixed light and dark wooden tables, suitable for both couples and groups. The large dining area has an open cooking section at the rear and an attractive terrace is available too.

Seating is a mix of chairs and cozy upholstered cushioned sofas and the illumination is subdued enough for those romantic evenings. A sprawling bar counter and well-stocked shelves of wines and spirits give a colorful extra dimension. There is often a temptation for restaurants to fall into the gastronomic trap of trying to please everyone by offering a menu that reads more like a novel but ultimately displays a lack of real identity or focus. Monsoon’s drinks and food lists are diverse and extensive, but it succeeds brilliantly in providing a balanced choice of Western, Mexican, and Thai dishes. ‘There is no sincerer love, than

the love of food’ was the quote on the menu and we were both eager to exhibit our devotion to this saying. A flavor-filled signature Monsoon crab salad adorned our table first filled with fresh crab meat, shrimp, avocado, and various greens packed in a crisp tortilla. Then yummy Phak Yang followed made up of grilled vegetables wrapped in bacon rolls. Moreish Tod Moo Kung was next, consisting of deep fried shrimp and marinated minced pork wrapped around lemon grass sticks. We sipped on a zingy passion fruit cocktail made up of triple sec, vodka, soda, lemon and syrup, then swiftly devoured a main of lamb shank with spices, taro mash, mojo tomatoes, shallots and pan jus. The meat was perfectly tender and the accompaniments were tasty. From the Mexican menu we ordered delicious chipotle chicken that came in a tortilla bowl, bursting with flavors and fresh ingredients greens, tomatoes, onions, jalapenos, quesea fresco and cheddar cheese. For fish we tuck into a panseared tuna with a wonderful fusion of coconut, lemongrass, a risotto base and a tangy mango and pineapple salsa. A divine dessert of passion fruit cheesecake was finished almost as soon as it arrived at our table. Monsoon has a memorable and inventive menu, with an inviting atmosphere, and slick service.

In a town where short skirts, partying, and heading out for a night of food and drinks with friends are the norm, Hooters should have no problem fitting right in and is a welcome addition to the Sukhumvit food, beverage, and nightlife scene. Vault in the Four Points by Sheraton on Sukhumvit Soi 15, and adds a lot of life to what was once a more austere spot. The two-level space features an island bar that’s home to a full party dining scene, along with extra-large HD television screens that show all the latest sporting events. The fabled restaurant recently celebrated its Bangkok launch, hosting a large party that featured its Thailand Brand Ambassador and noted model and actress, Aum Lukkana Tattanawongsiri, with DJ beats, and a smiling bevy of Hooter cheerleaders keeping the crowd happy. While the chicken wings are a crowd pleaser - coming with a variety of signature sauces like chipotle honey, parmesan-garlic, or Cajun

to name but a few - there are plenty of other selections to opt for on the menu. There are large Texas burgers with cheddar cheese, bacon, and Daytona sauce, as well as Philly cheese steaks served on French baguettes with Provolone cheese. “Hooterstizers� make up the brunt of the menu, with selections like cheese quesadillas, chili cheese nachos, and beef or buffalo chicken sliders to accompany all those pints of good beer and tasty margaritas. The restaurant features a dazzling selection of nightly specials at the moment, making it all the more enticing to come in.
