f you’re a frequent Thailand visitor, you probably know most of these spots; chances are you have been to some of them already. They are among the most visited spots in Thailand and visitors come in droves to enjoy them year in and year out. But don’t worry, in Thailand, things morph so fast that even if you’ve just been to, let’s say, Koh Chang just a few months ago, the place would still seem like an entirely new place when you make another visit. For one, you are likely to find new attractions and more activities, fresh (and refreshed) hotels and tourist-friendly facilities, new infrastructure and services, certainly many novel things to experience and enjoy – it’s like visiting them for the first time again. Even us who live in Thailand are amazed at the capacity of these destinations to re-invent themselves ever so quickly and frequently; we’re not at all surprised at why visitors keep on coming back to Thailand and still enjoy it immensely. For this issue, we decided to zoom in on some of these vacation spots – the hottest in Thailand indeed, temperature-wise and otherwise.

If you have a hard time not checking Facebook every hour, well, get ready as social networking takes another jab at your willpower. What next, you ask? You may have already heard of some but have you already downloaded and mastered each to full potential? First up, we have Instagram – the app famous for its buyout by Facebook for a whopping $1 Billion. This app has turned every next person into professional photographers in an instant click. The photo-sharing social media allows you to transform your images to give them a vintage or luxe feel by choosing from their 17 filters. It also lets you follow other users you favor from across the globe. Bangkokians are avid users and have already climbed up the ladder in their number of followers worldwide. Pinterest is a virtual pinboard but is also dubbed the "online hoarding" app. From art and design to food and travel, click on all your favorite images made available on their site that reflect each subject. This is particularly useful if you are a designer or for that moment when you’re redecorating your house and need to reference those images on the go. Spotify, the online music service, has teamed up with virtual dating websites, Tastebuds and Fellody.com, to match their users according to musical preferences. Search users based on your playlist or find users that listen to a particular genre and start ‘flirting’! Don’t wait till your first date to find out your potential partner actually hates Katy Perry – the horror!

We’ve seen red velvet cupcakes and cake pops take over the dessert scene in the last few years. And, although doughnuts are an old favorite, they have recently taken new form as mini gourmet doughnuts. With flavors such as crème brulee and chai latte, they are slowly easing their way in as a delectable alternative to the oversized and unnecessary highcaloric cupcake. With the recent opening of Above Eleven, in our favorite entertainment district of Sukhumvit 11, their Peruvian/Japanese cuisine has quickly piqued everyone’s interest. Try the Ceviche, a citrus infused, thinly sliced fish which is light on the palette and quick to devour. Pisco liquor heralding from the South American country is also gaining popularity amongst local tipplers. Whether it’s the fact that Machu Picchu celebrated their 100th year discovery anniversary last year or not, we are liking this cuisine trend. Organic and health foods have been popular in grocery stores for some time. Now, we are seeing the trend trickle out to a complete dining experience. Rasayana, in Sukhumvit 39, has pioneered this trend in Bangkok. But, the recent opening of Glow at the Metropolitan Hotel has patrons enjoying their food so much they don’t even realize it’s healthy too! Our fickle friend, fashion, never lets us beat the race. And, why would we want to? With designers constantly vamping and revamping – they have a tough job keeping us interested fall to winter, spring to summer. Yet they Dolce & Gabbana master it seamlessly, pun intended. Already halfway through the year and we are seeing a continuous trend on the runways and in our very own Bangkok boutiques. As entertainment continues to play its part in our threads, we are seeing a call back of the 1950’s and 1920’s, thanks to shows such as Mad Men and the upcoming movie remake of The Great Gatsby, respectively. From brands such as Gucci and Roberto Cavalli, we are seeing flapper references everywhere with slinky tops, art deco beading and glamorous geometric designs. Vintage is revived once again in this trend. Another key retro look is the peplum silhouette. This ruffled extension from the waistline, be it in a dress or jacket, is the ‘IT’ look to be sporting this season. However ladies, take note, as it is not always the most flattering look if not worn correctly. After all, it is extending your waistline for no reason but for fashion’s sake! A slew of designers are embracing the seasons literally – spring flowers and summer cool. We see here feminine florals in bright palettes as seen in the Louis Vuitton collection with exaggerated flower cutouts. Another key piece for the summer is the bra top or cropped top with a high waisted skirt. What better way to beat the summer heat than to bare some skin in a look that resonates the pin-up girl of the fifties. This look is best interpreted with Dolce & Gabbana’s enlarged floral prints. You can also greet the summer with graphics of tropical plants as a bonus – think birds of paradise in a myriad of colors. Men, this goes for you too – flaunt the Tropicana style. This summer also means two heavyweight sporting events – the London Olympics and Euro 2012. Occurring in the same season has certainly inspired the fashion scene. Getting away from ultra feminine looks means we are seeing the athletic influence everywhere. From hoodies, sports jackets and sports uniforms – this low maintenance attire is carried throughout the season and keeps your comfort in check. Think you need something less ordinary and rather more extraordinary? With Lady Gaga having graced Asia with such fanfare – it is only natural she is spawning a fan base of ‘mini-me’s’ all over the world. And sure, you are eager to sport her current look but what about something quick and easy without drastically changing your entire wardrobe? Hand it over to Thai designer, Moo Piyasombatkul, who has created a line of eyewear with a refreshingly new twist. Playing with borders and shapes, Piyasombatkul has even made a fan out of the grandmaster of eccentricity herself, Lady Gaga. Congrats to our local extraordinaire!
HANSAR SAMUI LAUNCHES BEACHWEAR COLLECTION Hansar Samui recently launched its own collection of beachwear and it’s selling like hot cakes! The collection consists of 10 different styles of beach dresses and caftans to fit all sizes, which can be worn over bathing suits around the pool or throughout the resort. Designed by Indra Budiman, the Resort’s General Manager and made at the hotel, the beach dresses are made of floaty silk crepes and cottons in a variety of colors and range from Bt1400 - 2000 (US$47-80) each. Currently there are over 40 colors available. Indra’s inspiration in creating the range was to offer ladies something chic, romantic and timeless to wear during their visit to Hansar Samui, and to take home as a memory of their visit. “They have quickly become a best seller amongst our guests, and we have had queries from other visitors to the Island asking where they can get them. More than a restaurant -- an eating movement
F
ood movements from the West can be a bit slow to hit in Southeast Asia. This is usually a pretty good thing as a lot of the fluff and annoyance of the newest trends will be tested and stripped away before spreading this way. We have been anxiously waiting, however, for one movement to land in Bangkok. Whatever you want to call it: locavore, slow food, responsible eating, or even Market Kitchen – the heart of the movement is what matters as this one’s focused less on fancy garnishes and Quince Bangkok presentations and more on the respect for one’s ingredients and knowledge of where the food you has taken a firm eat comes from. philosophical stand, Finally Bangkok has its Chez Panisse. In Hong Kong and Singapore something like this would only work as a novelty or for one small kitchen, but in the rich, abundant soil of Thailand this specially developed produce could one day become the norm for many restaurants and eaters across the country. Amazing produce doesn’t spring forth from the soil overnight however so the process will be an ongoing one as they work with skilled growers to find the best times and varieties for produce through the year. But Quince and team are committed to making this work, and for that alone the restaurant is already a success… even before they officially open their doors to the Thai public. But what about the rest of the restaurant? If you’re not a foodie with a cause does the restaurant still work? The exterior of Quince is impressive. Located directly behind Casa Pagoda off Sukhumvit, you’ll find a completely refurbished 1950s home. In years past if you heard refurbished Thai home it’d be teakwood and tacky art on the walls. This home is stylish, modern,

restaurant/where to eat
and open with lots of glass and concrete. The tables are large and long, more suited to a large family style dinner than an intimate escape. Looking at the menu, you realize even more that this is a place to come in a group. The menu is divided up not into apps, mains, and desserts, but into grouping of meal types such as sides, substantial offerings, and sweets. The idea is that you’re not locked into, say, a steak and potatoes but are free to assemble the meal you want. If it’s roast chicken and baked carrots for you or just a meal of veggies, you can assemble them into the perfect combo for you. Of course the chef or staff will recommend for you if you’d like a bit of guidance and there are some naturally classic pairings available. The food style here is described in-house as Market Kitchen, since the chef buys whatever looks and smells freshest at the market each day (peek into the kitchen here which is impressively large, but with one of the smallest walk-in fridges I’ve seen in Bangkok as they’re really about serving what’s freshest). You might have assumed already that the menu will change here often, and if so you’d be right. Another nice touch is that for parties larger than six people you can actually discuss the menu with the chef beforehand and he’ll arrange a menu that resembles a large family feast. If you can manage to read through the menu and not salivate a bit, there’s something wrong with your taste buds. I could feel myself getting healthier just reading through the list of offerings and I really couldn’t decide so trusted the chef to send out what was freshest or most notable to him that day. We started with a soft tomato and haloumi salad with a bit of basil and parsley and an astounding pork black pudding with quince jam. I’ve never liked black pudding as much as here which is a testament to the chef. Then it was on to a mountain of greens and veggies as we were all excited to get a break from the usual Thai restaurant fare (fried, deep-fried, or pan-fried), and into some proper veggies. We sampled the roast carrots with honey and poppy seeds, the green beans with sheep curd, and a smokey eggplant with labne sweet onions and edamame. While none of the dishes are outright standouts on their own, collectively they all worked nicely together. At this point we were pretty full, but had to sample some actual meat here as well. So we opted for the crab omelette with chive and sweet corn and the grilled wild tiger prawns with prawn mayo and leeks. We wanted to like the crab omelette more as it combined some
of my favorite all time ingredients but the local crab was a bit murky and it was just too much soft on soft. Quince also pays as much attention to the drinks as the food. There’s an extensive selection of cocktails and mocktails, and also some of the widest selection available of speciality Spanish wines for you to try. All in all we weren’t blown away… yet. There’s tons of potential here in philosophy alone, and it is also obvious Australian chef Jess Barnes is a highly capable one so the food will surely rise to the occasion. Part of not being overly wowed could have been us as our party was only two, and at Quince you really should come in a group and eat family style, picking small portions off of each plate and assembling a meal as you go from five-10 tasty portions. But also part of the problem was that it felt a bit too upmarket and formal, but they’re going for rustic freshness. The space, while lovely, was almost too modern sterile for the hearty family meals being served (though I’m betting it works gangbusters for a sprawling brunch spot and maybe this is how home feels for some people). We also had a bit of issue with the service, as there was tenseness in the air that was off-putting. At first we believed it to just be an off day though they were only serving one other table, but other friends who have visited left with the same slightly unwelcome vibe. This could very easily be attributed to the stresses of opening a new restaurant so please go see for yourself and we hope that our experience isn’t reflective. I imagine with the restaurant full of patrons happily clinking glasses and reaching for large plates of fresh ingredients the experience will be a lovely one. Text and Photos by Paul Cypert

culture fix Thai-Ing The Knot From getting hitched in a diving suit under the sea, on a powdery white beach in an exotic, high atop a remote mountain, or aboard an elephant in a traditional Lanna village-style ceremony -- Thailand offers an infinity of themes to add more flair to your perfect wedding By Dave StamBouliS

hile some folks are happy just to stroll down the aisle and say I do, those that want to do something truly special and unforgettable with their significant other come to Thailand and “Thai the knot” Siam style, taking advantage of one of the many outstanding wedding ceremonies available in the Land of Smiles. The options available for marriage celebrations in Thailand range from getting hitched while in a diving suit under the Andaman Sea to exchanging vows on a sandy beach or high atop a mountain, or perhaps doing something more traditional such as a northern Lanna-style wedding. Starting off in the south of the country, getting married while underwater is certainly about as novel as one can get. Underwater Weddings, an enterprise located in Trang, is now in its 16th year of arranging underwater marriages, which take place en masse only on Valentine’s Day each year. Underwater weddings (Tel: 075 225-353; www.underwaterwedding.com) started from the romance between a couple who fell in love in Trang at an eco-tourism event and decided to celebrate their special day by paying homage to the exquisite Andaman scenery that graces the region. The Guinness Book of World Records has recognized the submerged celebrations -- in which couples don masks and scuba gear -- as the world’s largest underwater wedding ceremony. Marriage certificates (presumably waterproof) are inked while diving in the beautiful turquoise waters around pristine Koh Kradan and Koh Mook islands, located off the coast of Trang, while guests watch the fun on closed circuit televisions.
In addition to getting wet, a traditional Thai wedding ceremony is also held on land (sans wetsuits) for all the happy couples. Traditional costumes are worn, and the age old Thai practice of rod nam sang where water is poured from a conch shell over the couples hands to unite them is performed. Before diving, couples release fish back into the sea, as well as planting trees to commemorate their love. While non-divers can take part in matrimonial ceremonies on the beach, only certified divers can get hitched underwater, just another reason to get one’s PADI certificate while vacationing in Thailand. If you don’t have your diving license, standing on a beautiful beach saying “I do” or even out on a boat in the middle of the Andaman or Gulf of Thailand is another way to enjoy the beautiful islands and sun drenched south of the country. Many upscale resorts in Koh Samui, Phuket, and Koh Phi Phi (Phi Phi Island Village Resort, Tel: 02 541-5722/24; www.ppisland.com) arrange traditional wedding ceremonies for their guests. While catering to all the needs of their foreign guests, these weddings are still steeped in old custom, such as the previously mentioned rod nam sang, as well as the sai monkhon, where a white thread is looped around the bride and grooms heads, linking them together as a couple, and also phiti bai sri su kwan where white threads soaked in holy water are linked to the marrying pair’s wrists and where the couples’ friends then tie sai sin white strings around their wrists to wish them luck. Drumming processions usually precede the ceremonial traditions, and Buddhist monks chant and do blessings throughout the event. For something a bit different, those who find the beach too hot to handle can head up to the cool mountains of Koh Samui, where the Thailand Wedding Company (Tel: 077-485-011, 080 700-5516; www. thethailandwedding.com) hosts marriage ceremonies atop the island’s peaks at the aptly named Jungle Club, an eco resort in the jungle made from all natural materials. Sunset views and much cooler temperatures suitable for that heavy wedding attire are some of the merits to be gained by joining in holy matrimony up high. If you enjoy cooler settings and a combination of age-old convention and modern luxury, you may want to consider a northern wedding, steeped in ancient Lanna traditions. The Mandarin Oriental Dhara Dhevi Resort in Chiang Mai (Tel: 053-888-888; www.mandarinoriental. com/chiangmai/) offers elaborate and exquisitely elegant Lanna style celebrations, in which decorated horses and elephants are used as transport and the marrying couples are decked out in costumes befitting royalty, made from the finest silk and inspired by designs from the Royal Palace.
At the Dhara Dhevi, whose palatial property resembles a Burmese chedi complex, complete with opulent villas made from restored traditional rice barns which front real working rice paddies, horses transport the groom to the bride’s quarters in a raucous procession made up of musicians and dancers, where the bride’s guardians keep her hidden behind “silver” “diamond” and “golden” gates, which the groom may only pass after some lively and high spirited bargaining between the two sides meant on ensuring that a “bride price” is paid for the lovely lady to her family and relatives. Following this, the couple go through the wrist binding and blessing ceremony, and are then transported by horse carriage to their private villa, accompanied by Lanna women carrying sugarcane juice signifying the sweetness of love. Talk about romantic! If getting back to nature isn’t your forte, your wedding can still be just as memorable, pampered, and splendid if you choose to celebrate it at one of Bangkok’s high-end luxury hotels. Places like the elegant lebua Hotel (Tel: 02-624-9999; www.lebua.com) put together boutique urban weddings for guests in which they can exchange nuptials high above the City of Angels overlooking the dramatic skyline and Chao Phraya River. Guests are feted in the renowned Sirocco and Mezzaluna sky restaurants, and elaborate attentions to details ensure an experience one will never forget. Whichever venue and celebration you choose, a tropical wedding in Thailand will be a long cherished memory and most joyous occasion. This skytrain station stops right at CHATUCHAK MARKET - the legendary “Weekend Market” that has become one of the “must-visit” places for visitors in Bangkok. This market is not just for shopaholics, but also for those with a fetish for out-of-the-blue stuff or for those who just wanted to get a glimpse of Thailand’s flea markets. Its sheer size and diverse collections of merchandise (more than 8,000 stalls) can bring even seasoned shoppers to their knees; this is where you can literally shop “till you drop.”

SIAM CENTER – is the hub of the latest
trends in Bangkok. It features not only the hippest fashion trends or the hottest international labels but also it is the birthplace of upcoming A-list Thai designers. Some 50 top Thai designer shops and 250 international fashion and leather goods, as well as trendy cosmetics, beauty salons, and extreme sports apparel and accessories, are housed here. It also houses several Thai and international restaurants, chic cafés, and ice cream parlors.

There are several ways to approach your mall crawl. One is via the skytrain (called BTS by locals), which connects to major shopping centers and malls at almost every station. At the main interchange (Siam Square) alone, there are at least four major shopping malls: Siam Paragon, Siam Center, Siam Discovery, and MBK – not to mention the mini-malls and shops in the area. If you are staying in hotels around this area, don’t have enough time for a more comprehensive mall crawl, or just don’t want to go much farther, these malls and shopping centers should be enough to fill your wishlist to your heart’s content.

While more comfortable at the pointy end, flying takes its toll, causing dehydration, jet lag, fatigue and aching joints and muscles. No traveler wants to begin a holiday this way. My brief was simple – find a solution - how to get buffed and ready to go. Bangkok offers a multitude of spas with many of the finest found at Bangkok’s leading hotels. Hotel spas such as The Coran Boutique Spa, Kempinski The Spa, and the Spa at the Mandarin Oriental Hotel, offer a long list of wellness solutions to choose from, treatments tailored to best suit your individual needs. I put them to the test.
From BTS Morchit, the next best stop is Victory Monument Station, where some not so big-name-but-also-worth-a visit malls can yield unexpected surprises. Right on one of the exits of this station is a mall called Century. From here, you can take a shuttle to the King Power Shopping Complex, from the same company that operates the duty-free shops at Suvarnabhumi International Airport. After Victory Monument your best mall crawl stop is Siam Square, which we already mentioned. The next stage of our mall crawl takes us to BTS Chidlom, right in city artery known for uppity boutique shopping experience. Even before you exit the station, you must already decide where you want to shop as all the major malls are connected by a skybridge. Follow Exits 4 and 5 (turn left) and you will be at Central Chidlom, one of the most reputable and oldest shopping enclaves in Bangkok. june 2012 | 43
Spa Cenvaree, Centara Grand Ladprao
A visit to any Centara hotel and resorts around Thailand is never complete without a sampling of the delightful treatments offered at their signature spa facility, Spa Cenvaree. This I have again proven when I checked-in at the newly rebranded Centara Grand in Ladprao (it was formerly a Sofitel) recently. While I wasn’t from a faraway country and have not just arrived from a longhaul flight, I was among those city folks whose regular routine can only be described as highly sedentary. Thus, an opportunity to relax, de-stress, recharge, and rejuvenate is always welcome. This isn’t my first visit to a Spa Cenvaree, but there are a few novel things that made my recent visit somewhat different. First, I haven’t been to the Centara Grand Ladprao spa ever. Second, I was curious about their new “Lifestyle in the Garden” concept that was part of the recent rebranding. Third, I haven’t tried the Balinese massage in a Thai spa. Setting aside all the usual spa courtesies: the olfactory awakening, garland and herbal drink welcome, and the usual procedures, I was taken to my room – one of the just seven signature treatment rooms. The room has muted tones that were perfect for me, and the minimalist Thai décor enhanced the feeling of “tranced” reinvigoration that began to set in as soon as I laid my body down. I felt so relaxed that made me realize I should have chosen a longer treatment than just this one-hour session. Balinese massage focuses on just the lower part of the body and the back, and I missed the entire toe-to-head pampering I usually enjoy. Nevertheless, the therapist was warm and friendly, and was very skilled in her job – running her nimble fingers to ease my tired muscles effortlessly it was almost musical. I almost fell asleep during my treatment and when the a small bell was clang to signal the end of the session, I feel like – to use a cliché – a brand new me. The historic and legendary Mandarin Oriental Hotel is one of Asia's finest hotels with its colonial architecture, expansive lush tropical gardens, romantic setting overlooking the Chao Phraya River, and exquisite decor. It is a favored haunt of the likes of Graham Greene, William Somerset Maugham, and Joseph Conrad -- who may not have visited The Spa -- although Elizabeth Taylor certainly did. You arrive at the spa by crossing the river in a luxury wooden boat from the main hotel. The Spa is beautiful, housed in a traditional heritage Thai residence with wooden interiors of carved teakwood, silk fabrics and exquisite antiques. Individual spa suites are equipped with

With highly trained therapists, the spa emphasizes on combining the best elements from Thailand, France, and Japan. Clients can choose aromatherapy treatments using essential oils or Thalassotherapy that includes invigorating body scrubs using only the finest products from Europe. Upon entering I was served tea while provided with a consultation to determine the treatments best suited to my individual needs. A private suite, with silks in muted tones, calming music, and softly spoken staff added to the enjoyment of the experience. The facial deeply cleansed my skin, while a soothing cream hydrated and left me feeling refreshed. The massage that followed demonstrated great skill, and the nimble finders of my therapist made all my muscle aches disappear. A visit to Kempinski The Spa begins with arefreshing lemongrass tea and hand-towel infused with herbs. The Spa, with direct access for hotel guests, provides an urban sanctuary of refined luxury with muted toned of amrble, scented candles, flowers, and wall features designed for a serene reflection. A comprehensive consultation to determine your preference and any problem areas are discussed with a thorough assessment of your skin and body type. The facial I chose used gentle soothing strokes that had the added benefit of eliminating the puffiness around my eyes that often results from longhaul flights and the inhalation of rosemary was uplifting for my senses. The treatment nourished and revitalized, the serum that good I could feel it penetrating my skin. My therapist Praenung then allowed me to choose the essential oils that resonated with me and prepared a unique blend for my massage. I chose a combination of lemongrass, nutmeg and rosemary derived from the purest plant, herb and flower extracts that aim to restore the body’s equilibrium and achieve rejuvenation. A soothing foot soak and scalp massage form part of this sublime experience, with the healing and nourishing effects lasting long after the treatment ended. My skin was replenished and my energy levels restored. I left the spa in an altogether altered state. The verdict: Praenung, my therapist, worked miracles. She was exceptional. She detected problem areas without promting and with gentle strokes and kneading made them diappear, and she provided reassurance and advice during the treatment. I also appreciated that staff allow you to spend as long as you wish in the relaxation room, steam room, and jacuzzi. Described as a temple of wellbeing, from the moment you begin your journey across the river you are one step closer to harmony in body, mind and spirit. The soothing aromas greet you from the moment you enter the oasis of peace and tranquility and staff welcome you with tea infused with local herbs; bale fruit or lemon grass. Treatments begin with a consultation to allow your therapist to tailor the therapy to your needs. I was given a facial assessment by Janthai to determine skin type with the jet lag recovery seeming a perfect fit. Products were then selected to create an experience tailor made to my skin's needs, in my case lavender, tea tree and orange flower. The jet lag treatment used Renew Rose and Damask Rose water to nourish and purify the skin. An energizing facial massage and hydrating mask complement the treatment while a gentle neck, scalp and back massage provided the perfect way to end it. The ideal massage chosen to rid the aches and fatigues muscles was the jet lag recovery treatment. Promising to banish dehydration, fatigue and sluggishness associated with jet lag, the therapist performed long slow movements to stimulate lymphatic drainage and reinvigorate. Special oils are used that blend pure essential oils and herbs followed by a stimulating leg gel massage with cypress oil and menthol. For the time I was there, the staff made me feel as though I was of the utmost importance to them, perhaps not unlike how Elizabeth Taylor felt, and I felt sensational when I left. There is no denying that while therapeutic, it is pleasurable to have an expert therapist provide gentle strokes and kneading to the muscles than need it. In Thailand, massage and the use of natural herbal remedies forms part of an ancient tradition and visiting a spa will do you the utmost of good and perhaps to know a country we need to go beyond the sights, natural wonders, history and culture. We can also better understand the people by experiencing how they achieve a sense of wellbeing.
