Thank You for Your Trust With a good part of the year already behind us, it’s an opportune time to take stock of our journey over the first six months of 2013. It’s been a very busy period for us at Philippine Airlines and PAL Express. Since January we’ve launched services to six new destinations in four countries – Basco, Batanes, Philippines; Kuala Lumpur, Malaysia; Darwin, Brisbane, and Perth in Australia; and this month, Guangzhou, China. Thank you for supporting us in all these new routes and look to us expanding our routes to six other new destinations before year-end. At PAL, we’ve been encouraged by the feedback we’ve been getting from passengers. Some of our passengers have been vocal in their support. Elvie Punzalan-Estavillo, inspirational author and columnist of the Philippine Star, has used her column to praise what she’s said are “cannot-be-ignored positive changes” in PAL’s service and our offerings, and best-selling author Julie Yap Daza wrote to say how PAL calendar was a source of inspiration, lauding our efforts to promote Manila as a tourist destination. I’m also proud of several recognitions we received over the last semester — ranging from our in-flight meals to our growing social media presence. Popular flight search engine Skyscanner ranked PAL’s in-flight cuisine fourth best among all Asia-Pacific airlines in the short-haul category. The criteria were taste, presentation, and choice. Another survey by the same site had PAL’s cabin crew placing among the ten most stylish in Asia-Pacific. Our FAs scored 3.76 out of a perfect 5 in a survey of 1,200 travelers from across the region. Then there’s Twitter, which earlier this year ranked PAL the second most popular airline globally on the widely used social networking service. With nearly half a million followers, our Twitter account @flyPAL has become an important link between you and this airline. It’s one more channel that we’re using to engage and interact with you, and respond swiftly to your concerns. Finally, I’m pleased to note that in a report by the Civil Aeronautics Board on passenger complaints in the first quarter of 2013, PAL received the least number of grievances among all Philippine carriers – just six in the three months surveyed. Of course, six complaints are still six too many and we take this as a challenge to further enhance out service delivery. We know that we have plenty of work to do to make sure we are No. 1 in terms of the special brand of warm and welcoming hospitality that the Philippines is famous for. The moment you board your plane, I guarantee you, a smile will cross your face as you say, “Hey, I did it.” Now that I hope you got going, do consider the new PAL route to Guangzhou where beginning last month, you don’t need a visa to visit. Upon arrival, you’ll get a 72-hour visa and off you go. What can you do in three days in Guangzhou? A lot. Our contributor Kevin Tsai designed an active 48-hour itinerary ranging from amusement parks to night swimming. You should also squeeze in dining, as Guangzhou is known for serving the best cuisine in China, and Kevin tells us where to find the city’s best dining spots. SAFETY FIRST: PAL’s continued inclusion in the IOSA (International Air Transport Association Operational Safety Audit) Registry is a testament to PAL’s robust Quality Management System. The registry only lists airlines in the world who have complied with the industry standards. In fact, PAL is the first and thus far the only Philippine carrier to be included in that list.

apt. Victor Acenas has just come from what pilots call the “360”—a walk-around or visual inspection that’s standard operating procedure before a flight. “We walk around the plane,” he says. “That’s the first safety procedure we do. We check for leaks, we check the tires’ condition, the fuselage condition, among others,” he explains. Settling into his seat in the cockpit of an Airbus 330 bound for Singapore, Acenas and his co-pilot First Officer Wynnford V. Martillana get into the rest of their preflight safety check. They check the buttons and switches before them. Next, they check a green book or maintenance log—their reference to ensure that the necessary maintenance checks have been performed and that the aircraft is in airworthy condition before the flight. They then review the flight plan and the load sheet, which appears on a small screen and gives the takeoff weight, fuel on board, and number of passengers. After that, they do a routine briefing for takeoff and their pre-takeoff checklist. Then they’re all set. Passengers can start to board after this.
The whole safety check takes about 15–20 minutes, says Acenas. Not that long, but it could very well be the most important time a pilot spends inside the airplane—even a pilot as experienced and confident as Acenas. NO SHORTCUTS Of course ensuring the safety of this particular flight started way before Acenas’ 360 check. Each plane undergoes periodic checkups—much like the regular tune-ups for cars—to ensure that they’re fit to fly. These maintenance checks are based on the airplane manufacturer’s requirements. A big difference between maintaining a car and a plane is the fact that most of the plane’s parts are time limited, says Capt. Enrique Jose M. Clemente, head of PAL’s Safety Sub-department. “Let’s say you have a part in an aircraft that’s only good for a certain number of hours. At or prior to the prescribed limit, whether it’s defective or not, we replace or overhaul it in order to ensure the airworthiness of the aircraft,” he says.
SPENDING SAFELY: PAL spares no expense in making sure all its planes are safe and airworthy. In 2012, the airline spent US$200 million on aircraft maintenance alone. That’s how committed the carrier is to safety. 30 I Mabuhay Magazine I July 2013
THE ABCs OF MAINTENANCE: Regular maintenance checks are of utmost importance in airline operations. Aside from the daily, weekly, and monthly checks, the more serious maintenance checks are the letter checks done at specific intervals: the A check after about 600 flight hours, the C check every 18 months, and the D check every 6 years. The D check requires about a month, and it involves stripping the plane—engines, seats, flooring, and cabin interiors. Sort of like an aircraft makeover.
“PAL is the only Philippine carrier that is IOSAcertified,” Clemente says. “We started getting IOSA certification in 2006, and since then have been successful at each re-certification, which happens every two years.” With their next audit coming up in 2014, the Quality Assurance Department has already begun preparations as early as the start of 2013.
That’s how strict aviation regulations are. Take it from the Aircraft Engineering Department (AED), which keeps PAL’s fleet of 45 airplanes airworthy: there are no shortcuts to maintaining a plane. “AED develops the maintenance program for each aircraft type or component according to the requirements of the manufacturer, aviation authorities, and PAL,” says AED Officer-in-Charge Ronaldo Lumibao. The maintenance program has to be in accordance with the requirements of the Civil Aviation Authority of the Philippines as well, he adds. IOSA CERTIFICATION PAL’s commitment to safety propelled it to submit to the International Air Transport Association (IATA) Operational Safety Audit (IOSA), an industry standard for auditing airline safety. To become IOSA-certified, an airline must comply with an exhaustive set of standards and recommended practices in eight areas: airline organization and management, flight operations, operational control and flight dispatch, aircraft engineering and maintenance, cabin operations, ground handling, cargo operations, and security.
COMMITMENT TO SAFETY PAL’s commitment to safety goes deeper than IOSA certification. “At the heart of the airline is the Safety Subdepartment,” Clemente says. “We are in charge of the Safety Management System (SMS) of PAL.” With an SMS in place, PAL senior management down to the lowest operational personnel, and even external parties providing operational services, are mandated to ensure the safety of all aspects of operations. “Safety is everybody’s responsibility,” as the saying goes. At the core of the SMS is hazard identification and risk management. Hazards are identified through various means, primarily the Safety Reporting System. “We require operational personnel to report to us hazards that could potentially affect our operations, not to mention errors, unsafe acts, and safety occurrences,” Clemente explains. The Flight Data Analysis Program is another source. With an average of 140 flights a day or a little over 4,000 a month, it’s impossible for Clemente and his staff to monitor every flight in detail. A tool called AirFASE helps them see potential problems during a flight by measuring parameters and generating what he calls “events,” or markers categorized as being of low, medium, and high severity. Marked flights are subject to an investigation so that the Safety Subdepartment can find out what caused the events. As part of the SMS, four Safety Action Groups— flight operations, cabin operations, ground operations, and maintenance—meet monthly to discuss safety issues affecting each area of operations. The highest management review committee is the Safety Council, along with the Quality Management
Safety in Numbers In the last 10 years, PAL has flown close to 500,000 flights with just one hull loss. A hull loss is an incident in which an airplane was damaged beyond economic repair. This safety record mirrors that of the entire airline industry. In fact, IATA, of which PAL is a member, will tell you that there’s never been a safer time to fly. Their fact sheet states that in 2012 alone, the industry’s accident rate—the number of accidents against the number of flights—was 0.20 Western-built jet hull losses per million departures. That’s one accident every 5 million flights, a 77 percent improvement over the last 10 years, and the best record in history according to IATA. Among IATA’s 241 member airlines, there were no Western-built jet hull losses in 2012.

Review Board, which holds quarterly meetings chaired by no less than PAL President and Chief Operating Officer Ramon Ang. PROACTIVE APPROACH PAL also has a Quality Management System (QMS) in place, which complements the SMS and gives an added level of assurance of safe practices, quality of operations, and airworthy planes. It’s a proactive approach to safety, in which prevention plays a big part. “An accident is a culmination of several errors,” Clemente notes. “When you analyze an accident, you’ll see that a lot of errors or failures had already happened. These can occur from the time the aircraft is designed to the time [it] takes flight.” “The pilot is the last line of defense,” he adds. He or she must be well trained and equipped with the right tools to mitigate risks that may be caused by such errors or failures. It makes sense then that PAL’s 483 pilots are required to undergo rigorous training to prepare them for different types of flying situations. They start out with ground training, then simulator training and flight training or what‘s called Simulated Line Flying (SLF). For captains, there’s also route qualification, in which they’re required to fly to a certain destination either two or four times, depending on the difficulty of the destination. Acenas says, “You cannot get away with not doing well in those trainings. Otherwise, ibabagsak ka nila (they’ll flunk you)!” It may be difficult to become a PAL pilot, but he adds, “That’s why PAL pilots are on top of the heap.” With every bolt securely in place and every part checked, computers monitoring a plane’s every move and maneuver, and well-trained pilots and cabin crew at the ready, safety takes flight. n

An Added Level of Assurance
Apart from its internal safety measures, PAL also observes a very stringent Quality Management System or QMS, which is required by aviation authorities. Requirements, policies and procedures in the implementation of the Quality Management System are documented in the PAL Quality Management Manual or QMM. The PAL Quality Management Manual is approved by the Civil Aviation Authority of the Philippines. In implementing its Quality Management System, the QMM serves as PAL’s guidance material. A Quality Policy and Commitment signed by the President and COO, is embedded in the front matters of the QMM to show the management’s support to the PAL Quality System. At the heart of it, Quality Assurance Auditors perform regular audits on the different areas of PAL operations (e.g., Flight Operations, Cabin Services, Aircraft Engineering and Maintenance, Cargo Handling, Security Services, etc.). The audits are done to ensure that PAL’s requirements are being followed by the different entities involved in PAL’s operations. The results are discussed during the quarterly Quality Management Review meeting with upper management and chaired by the President and COO, Ramon S. Ang. - Bernardo Menodiado PRACTICE mAkEs PERfECT: Pilots and cabin crew have to undergo regular simulated exercises for emergencies. Once a year, they have joint exercises on various emergencies, ending with the safe evacuation of passengers and crew. ou may not be aware, but the Chinese food as we know it is essentially Cantonese cuisine: from dimsum, wonton noodles, sweet and sour pork, to beef with broccoli in oyster sauce and roasted pork and poultry. But this shouldn’t come as a surprise considering that the versatile wok originated from Guangdong province, where the most common cooking styles are steaming, stir-frying, and roasting. In the mid 1900s, Canton’s (Guangzhou as was known in the West then) renowned chefs fled southeast to escape communist rule, inevitably influencing Hong Kong’s food scene. Cantonese cuisine, which stresses the use of only the freshest ingredients to preserve the dish’s natural flavor, eventually spread from Hong Kong to the rest of the world. Today, apart from being Guangdong’s capital and largest city, Guangzhou is also a major international hub and has a thriving foreign population. It is also China’s third largest city after Shanghai and Beijing.
No wonder the city is also home to several acclaimed restaurants of different cuisines. CANToNESE Founded in 1935, Guangzhou Restaurant is recognized as the number one restaurant in Guangzhou and for good reason. It trained many world-famous chefs, and offers authentic dimsum at very reasonable prices, and its signature dish, the Wenchang chicken. Call in advance to book a table at Pan Xi Restaurant (151 Longjin West Road), which is normally full on weekends. Situated near the picturesque Li Wan Lake, this garden restaurant hosted very important people, such as former U.S. state secretary Henry Kissinger and Deng Xiaoping. Try their steamed whole white gourd soup, rabbit’s head dumpling (created by China’s top pastry chef Mr. Luo Kun), pastries such as water chestnut cake and crisp three-flavored rolls, and other award-winning dishes.

n the beginning, there was no Philippines, but there was Butuan.” This staunch tagline in Butuan’s tourism may sound boastful, but nonetheless rings true.

ONCE UPON A TIME… Butuan was a place made of urban legends, noted in history books as one of the oldest settlements in the Philippines. Today, it is an exciting source of archeological finds in Mindanao, proving that not all stories of this ancient Philippine kingdom were tall tales. The city is now Caraga Region’s center and a strategic point for agri-aqua and forestry commerce in the Agusan River Basin. Butuan’s rich history goes back more than a thousand years. Earliest recorded trade missions from the Philippine islands to Imperial China date back to the 11th century, when its name appeared in the chronicles of the Song Dynasty. The Song Chinese manuscripts documented the Early Age of Commerce where a booming maritime trade occurred, referring to a Kingdom of Butuan as
BALANGAYS AND BURIALS At its peak in precolonial Philippines, Butuan was also perceived to be a flourishing civilized settlement—the center of trade and commerce in the 11th century. In the 1970s, accidental archeological digs revealed nine finely crafted balangays, the country’s old sea vessels, now called Butuan boats and declared National Cultural Treasure. Carbon-dated to 320 AD in Japan, the balangays established the Filipinos’ technically advanced seamanship and boatbuilding skills. Also excavated were coffin burials with strangely deformed skulls. GETTING THERE Located at the northeastern part of Mindanao, Butuan is about an hour and 45 minutes from Manila and 55 minutes from Cebu by plane. Via sea vessel, it

A unique community in Barangay Pagatpatan is blessed with a rich supply of flowing underwater stream containing methane. The locals refer to it as “miracle water,” and claim the water to be potable. Some hook up tubes and hoses from the water supply to their cooking stoves, saving on gas. A demonstration revealed fire igniting from the water source when lit with a match.

ALL IN A DAY Historical highlights are the National Museum, Balangay Shrine Museum, and a newly excavated balangay site, all rich with historical materials. Built in 1625 and burned down by Moro pirates in 1753, the Banza Church Ruins is the oldest stone church wreck in Mindanao. What remains of its former glory is a bell tower engulfed by a huge balete (banyan) tree. One can also view it from a river-boat cruise along the Masao River. The Bood Promontory Ecopark is a historic hill site where Magellan and his men were said to have built a cross celebrating the first Mass on March 31, 1521. The Magellan Marker or Landing Site was erected in 1872, located in Magallanes and recorded in the journals of historian Pigafetta. (Scholars still argue about the accuracy and conflicting reports between a legendary Mazua Island once connected to Butuan and Leyte’s Limasawa Island). The Bequibel Shell Midden (prehistoric trash pit) in Barangay Bonbon is an excavation site of shell

In 2011, the Kaya ng Pinoy Inc. group led by Department of Transportation and Communications Undersecretary Art Valdez and members of the all-Filipino Mount Everest team successfully embarked on an amazing journey. Aboard handcrafted balangays named Diwata ng Lahi, Masawa Hong Butuan, and Sama Tawi-Tawi, they sailed from the mouth of Manila Bay to the tip of the Sulu Peninsula and back. The boats were built under the guidance of master boat-builder Hadji Musa Malabong of the Badjao indigenous group of Tawi-Tawi, who worked alongside marine engineers and scientists. This project revisited the Philippines’ seafaring legacy. The group navigated the journey the ancient way—following the sun, stars, wind, cloud formations, wave patterns, and bird migrations. The Legend of The diwaTa MounTains
O
n the eastern seaboard of Mindanao is a rugged forest-covered range called the Diwata Mountains. They tower over the strip of the Pacific Ocean called the Philippine Deep. In their bowels they harbor rich deposits of iron ore, while on their crests are some of the most exotic specimens of Philippine plant and animal life. This is how legend explains the origin of those mountains. Once in the old times, there lived a beautiful maiden named Diwata. Her father, Kabusgan, ruled over a kingdom facing the ocean. Her mother was the beautiful Kagbanay, and Diwata grew up to be the fairest in all the land. Diwata loved the sea whose sparkling waters fascinated her even as a child. She never wearied watching the waves billow and dash against the shore, then billow again and recede into the horizon. But the sea was more irresistible to her in the moonlight. Reflected in the water, the moon broke into myriads of light which to the young Diwata were gems strewn on the surface of the ocean. When she was older, Diwata would wade on the edge of the shore and splash to her heart’s content, catching with her hands
the little gems of light. A whale who was her father’s mortal enemy had been watching Diwata for several evenings. The moon was fullest that night, and he was sure that Diwata would be at the surf gamboling among the waves. While the young girl was chasing a shimmering jewel of light, the whale would have pounced on her. But a huge wave arose and snatched her from his reach and carried her far ashore. When she came to, Diwata was in a strange island. She trudged north and south, east and west, looking for her father’s kingdom. But it was nowhere to be found. Could the huge wave have swallowed it up? At last Diwata dropped from exhaustion. She died, and what was sadder, she never found her former home again. Then a mysterious thing came to pass. The earth rumbled and rose to form mountains. These ran north and south, and east and west in an irregular chain. Old people say that these mountains rose from where poor Diwata had trudged the land, looking for her father’s kingdom. They call the mountain Diwata, after the hapless maiden. n

For the latter, simply take the shuttle from Xiangjiang Safari Park and be on your way to view not just crocodiles, but also sea lions, a 300-year-old tortoise, and a variety of snakes, other reptiles, amphibians, and flora. What’s more, the story of how all these parks came to be is equally inspiring. Su Zhigang, founder and owner of the Guangzhou Chimelong Group, really has come a long way from being an impoverished child with limited education. He has toiled as a peasant farmer and butcher, and from one restaurant he began to build his world-class amusement empire through Deng Xiaoping’s economic reforms in the 1980s. Today, all his parks aim to form a “World Class Travel Kingdom at City Center,” while the greatest value of his company is ultimately “providing happiness for millions.” Needless to say, he has succeeded at both. The Chimelong Group’s plans for expansion are made evident by a marine life park and hotel (opening late 2013) on Hengqin Island near Macau. Called Ocean Kingdom and Hengqin Bay Hotel, these upcoming projects are in line with the company’s plans to develop Hengqin Island into an international amusement park destination. unny days, sweeping the clouds away… can you tell me how to get, how to get to Sesame Street? In Singapore, that is. It must be nostalgia that brought out those famous lines from one of the world’s well-loved children’s program. But from the moment our group left the Resorts World Manila (the Philippines’ first integrated resort) to catch a plane to Singapore for the weekend until we reached Resorts World Sentosa, everybody was curious about Universal Studios Singapore’s newest ride, the Sesame Street Spaghetti Space Chase. There is always something to look forward to on a trip to Resorts World Sentosa, which aptly enough is Malay for “peace and tranquility.” Here you can do some serious hotel hopping, get into hypershopping mode, learn a trick or two at the baccarat table, pig out on delish eats, or get dizzy spinning round and round crazy adventure rides. First order of the day upon arriving at this fantasyland is to check in your bags. Resorts World has several choices, from the very expensive Spa Villas and the by-invitation-only Crockfords Tower, to the iconic Hard Rock Hotel Singapore and the uber-private Tree

Top Lofts (Equarius Hotel), as well as the family-friendly Festive Hotel (their family suite could fit around eight people or more, no kidding). We bet that no sooner had you deposited your luggage and freshened up a bit, it’s off to Universal Studios you go. Everyone will have the time of their lives in the theme park’s seven zones: Hollywood, New York, Sci-Fi City, Ancient Egypt, Lost World, Far Far Away, and Madagascar. The group’s verdict of the best ride around? Transformers The Ride: The Ultimate 3D Battle, where Optimus Prime takes fans into the ultimate wild ride. As for the scariest and heart-thumping, faint-inducing ride, it’s the Battlestar Galactica: Human vs Cylon dueling coasters ride winning hands down. A welcome respite from the heat outside, meanwhile, is the Shrek 4-D Adventure. The best and latest kiddie ride in town? Sure hits among kids and adults alike are the Marine Life Park, The Maritime Experiential Museum, and Universal Studios, of course. The world’s largest oceanarium, Marine Life Park, never fails to elicit oohs and ahhs from visitors with its rich collection of underwater creatures and water attractions. Consisting of the Adventure Cove Waterpark (you can zip your way down some of the more twisted water slides around), Ultimate Marine Encounters (you can get up close and personal with sharks, manta rays, and more), and the S.E.A. Aquarium, the world’s largest aquarium according to the Guinness World Records. Just imagine—over 100,000 marine animals and more than 800 species of sea creatures. When you’re at Sentosa, say goodbye to meticulous calorie counting for you won’t be able to say no to the Malaysian Food Street gustatory adventure.
Patterned after the famous hawkers’ food stalls in the region, the Malaysian Food Street gives you the best of Singapore’s street foods. Dishes that easily stand out are the Claypot Rice (made of three kinds of rice, salted fish steeped in sesame oil, and tender, flavorful chicken meat), the really hot Hokkien Prawn Mee (noodles that come in a broth flavored with fresh prawn and chili mixture), and, the easy favorite, Penang Ah Long Lor Bak (a platter of finger foods ranging from fried yam to prawn crackers and Lor Bak meat rolled in soya bean sheets). angkok is a city of temples, tuk-tuks, tourists galore, and, lest we forget, shopping. Glitzy temples to commerce scintillate along the sides of Rama I Road. Tailored gents and sophisticated ladies buzz through the malls alongside bubbly teenagers with K-popinspired dresses and ’dos. It’s a glamorous wonderland of designer goods and electronic trends. But it feels a little too shiny—maybe even a little too tame—for Bangkok. And you’ll be running the risk of sticker shock. For a memorable and authentic Bangkok shopping experience, you can’t go wrong checking out the Chatuchak Weekend Market, or JJ Market as the
locals have nicknamed it. You can’t pass up a visit to the biggest weekend market in the world. Once you get there, you may find yourself combating heat, crowds, exhaustion, and countless temptations to spend a little more baht on whatever’s just caught your fancy. But it’s a wonderland in its own way. The sheer scale of the market is amazing. Over 5,000 vendors and an estimated 200,000 visitors each day. It’s not possible to grasp how excessive it is, because your mind can only comprehend it in bits and pieces as you wander the countless stalls. But you’ll have an idea once you (inevitably) get good and lost. Or once you try retracing your steps to find that

one stall with that one hard-to-find item that you belatedly decided you want. The market will suddenly become a jungle; the hanging merchandise pressing in on you from all sides. The visual overload will begin to send your head reeling. And, of course, you’ll find yourself stuck behind an ancient fossil of a vendor pushing along a cart at the speed with which mountains form. You can get outside, in the open air, when you need some relief from the labyrinth of covered stalls. But you’ll be at the mercy of the cruel, cruel sun. Fortunately, you’ll find a lot of vendors selling
refreshments. Look out for those selling Koh Samui coconut ice cream—it’s very tasty and satisfyingly tongue-chilling. When you’re relaxed and refreshed, it becomes easier to appreciate the market as it is—a mini city that springs into existence for two days every week. Everything is here, or at least everything that’s obtainable for a few hundred baht or less: designer tees, secondhand shoes, woven silks, wooden crafts, fine art paintings, furry hats, Chinese medicines, voodoo dolls. n

Pratunam: A Bangkok district whose name has become inextricably linked with shopping. It’s only a few blocks away from CentralWorld. Most tourists are familiar with Platinum Fashion Mall, a sprawling commercial center packed with around 1,600 boutiques. On the 6th floor, the mall offers a topnotch food court, where all of the menu choices are conveniently labeled in English, including singleline descriptions of the meals. Ratchaprarop Road: Just across from the Platinum mall you’ll find a road lined with endless market stalls hawking clothing and accessories, mostly geared to teenage girls. Ratchaprarop Road also leads to the City Complex mall, which offers, well, more of the same that’s on the street. Patpong Night Market: It’s situated right beside Bangkok’s most notorious red-light district, but the Patpong Night Market isn’t especially racy—unless the thought of good bargains gets your heart pumping. Sure steals for good hagglers. Be sure to drop by adjacent Convent Road for a bite to eat, where the street food stalls serve excellent pad thai, tom yum, and Thai chicken noodle soups.

angkok is known for being a party town. And perhaps no “town” in Southeast Asia offers so many varied ways to party. From the glamorous perch of Sky Bar at The Dome to the plastic chairs of a cheap speakeasy on Khao San Road, Bangkok suits every taste and budget. WTF GAllEry & CAFé #7 Sukhumvit soi 51 (BTS Station: Thong Lo) Bangkok’s young and hip art scene has left more than a casual impact on Thong Lor, a neighborhood that’s home to a smattering of edgy yet cosmopolitan drinking spots. At the top of the list is the smirkingly monikered WTF Gallery & Café. (“WTF” supposedly stands for “Wonderful Thai Friendships.”) What appears to be just a cozy little bar with a warm and soothing color scheme is in fact one of Bangkok’s most vibrant contemporary art spots. The gallery recently showcased works by the late Tim Hetherington, a British-American photojournalist best

known for co-directing with fellow journalist Sebastian Junger the Afghanistan war documentary Restrepo. WTF Gallery is a tapas bar that offers cocktails to match, such as a Portuguese Manhattan. You’ll find an inspiring range of creative cocktail options. Try The Orchard: gin, lychee, lime, lemongrass, and soda water. Or sample the Muay Thai Punch, a concoction of dark rum mixed with sang som or Thai sugarcane rum. SpEEDy GrANDMA 672/50-52 Charoenkrung soi 28, Bangrak Where WTF Gallery is sophisticated, Speedy Grandma is decidedly “street.” You’ll pass through a cramped and cluttered alleyway to get to the “bar,” the narrow lobby in front of an indoor gallery space. First and foremost a contemporary art space, it features work by upcoming young talents. The gallery space is beautiful yet roughhewn. The unpolished gray floor seems to connect it with a factory, or at least a working studio. But it’s also a place for hanging around and drinking beer— though with an atypically artsy crowd: interesting, unconventional people who like to dance. I had more fun here than in any other Bangkok bar.

CosmiC Café RCA Block C, Rama 9 Road Bangkok’s liveliest rock joint can be found along “party central” pedestrian strip RCA, where the city’s fashionable young clubbers dance the night away. It’s an area largely devoid of tourists, partly because it’s not very accessible. The few foreigners who do make it there are more likely to hit the club side—the part of the block that’s lined with dance clubs such as Route 66, LED, and Slim. Cosmic Café is situated on the opposite side—laid-back, low-key, but comfy and (sometimes) smoky. See local bands skillfully tear through rock covers—from classic American crowd-pleasers to more contemporary fare (think The Killers, The Strokes, or Radiohead). At times, you’ll get dub or reggae. Once in a while, you’ll also get a Thai indie band that plays original music. Whoever’s playing, the lively and enthusiastic Cosmic Café crowd will help ensure that you have a fantastic time. Post Bar 161 Samsen soi 3-5, Phra Nakhon This bar’s name is annoying to Google, given that Bangkok Post is the name of a major newspaper. A surprisingly charming haunt located close to the tourist-coddling madhouse that is Khao San Road, it offers a delightful change of pace. Inside, the wooden slatted walls, the mismatched furnishings, and the miscellany of art pieces converge to give you the feeling of being in an eccentric antiquarian’s beloved den and hideaway. n

As a self-confessed tech geek, I love Sham Shui Po because it offers bargain-priced new and used gadgets, camera accessories, and mobile phone paraphernalia. On Ap Liu Street, there are outdoor gear shops, bicycle accessory stalls, and street vendors that sell a variety of electronic toys. Finally, for bargain foodies, Sham Shui Po’s rare bamboopressed jook sing wontoon noodles (Lau Sam Kee), kaya toast and pig’s liver noodles (Wai Kee), fresh silkysmooth sweet tofu (Kung Wo Dou Bun Chong), and snake soup (Shia Wong Hip) should not be missed.

My personal favorites are Tsim Sha Tsui and Prince Edward. While walking down Tsim Sha Tsui, you can feel the sophistication rubbing off on you. Here, I am always delighted with the amazing array of designer bags, clothes, and shoes. You’d definitely feel like entering each highend shop and then walking out with bags in each arm. But for more budgetfriendly shops, Prince Edward is my best bet. There’s a wide selection of local and international stalls selling the trendiest fashion pieces. The best thing here? f shopping were an Olympic sport, I would surely win in the 100-meter dash to the nearest mall, the high jump to find the best bargains, and the synchronized fitting of all the outfits. My shopping training would entail intense bargain-hunting skills and many hours of walking while carrying loads of shopping bags. Occasional nutrition and hydration breaks would be included, although done in the shortest span of time to remain focused on the goal. Having mastered the Philippine local scene for fashion merchandise, advance training is best in other Asian shopping destinations. In my quest for the ultimate shopping program, we compare Hong Kong and Bangkok. HONG KONG FOR LATEST IN LUXURY Branded Goods Most of the international brands have several branches throughout the main island, which is hands down the best for trend shopping. Stocked with the latest styles, these luxury shops often have a queue of shoppers eagerly waiting to enter. On the Kowloon side, Ocean Terminal Mall has got everything

under miles of retail shopping space. Its flagship department store, Lane Crawford, has most of the makeup brands and designer lines. Agent Provocateur also has a shop inside for the sexiest lingerie ever. Vintage and Unique Items Just outside the Mall are Peking Road and Mody Road for vintage finds like seconds or consigned, high-end designer bags. Granville Street is an exciting place to shop in small stores selling unique trendy fashion items. For the Mall Rats The best time to shop in Hong Kong is in July and August when all the luxury brands in the malls are on sale. Central has Pacific Place, IFC Mall, and The Landmark. Causeway Bay is ideal for the younger, shopping athletes that have the endurance to shop for long hours carrying all the bags. This area has young designers and trendy clothes. Hip boutiques like edgy French designer Isabel Marantetoile are found in this MTR stop.

For the Power Shoppers The Prada Outlet Store in Space, South Horizons, Aberdeen, is a great shopping discovery. The store sells a range of mainly out-ofseason fashion, shoes, and accessories under the Prada, Prada Sport, Miu Miu and Helmut Lang brands.
Malls, Malls, Malls! For mall-hoppers, the experience starts at Siam Center and Siam Paragon. The young Thai designers with edgy cuts and styles have shops in Siam Paragon. Time management is key to cover all shopping areas and still have time to catch the interesting nightlife of Patpong Road. The newest mall in Central Bangkok is Terminal 21. There are nine floors, each themed as a city with all its recognizable landmarks. In defiance of any sense of geography, there’s Rome above Paris, then Tokyo, London, Istanbul, San Francisco, and, at the very top, Hollywood.
BANGKOK FOR HOUSEWARE AND FOOD Silken Steals Known for its rich Thai silk fabrics, Jim Thompson on Sukhumvit Road has the richest array of men’s and ladies’ fashion and soft home furnishings, elegantly displayed on all four floors. There is a quaint coffee shop on the second floor. Just off the main shop is the Jim Thompson outlet on Sukhumvit Soi 93 that has an exceptional selection of fabrics for both garments and upholstery. It is the perfect place to buy assorted pasalubong for friends back home. Bargain Hunting With endless options for almost everything you can think of, the Chatuchak weekend market has several sections and alleys that are worth bringing home (despite overweight baggage issues). Buy highthread-count bedsheets and pillowcases, dining utensils and metal serving plates, and leather goods. Several sections of the furniture shops remain open throughout the week.
In-Between Bargaining… For your shopping workout breaks, do remember to check out the toilets in every floor as they are themed to the city as well. I liked the Roman bath and Japanese onsen-style restrooms. If that entire shopping marathon tires you out, Terminal 21 has a massage/spa salon that can get you back to your tiptop winning form to shop again. W
hen a staff offered me “a glass of OMG, Ma’am,” I didn’t realize that she was also handing out the acronym of the day. I took a sip of the deliciously cooling concoction made of orange juice, mango syrup, and grenadine, and mechanically repeated after her—OMG. Then she gave me a plate of crinkles and fudgy bar cookies, followed by a serving of churros with two dips—caramel and chocolate. OMG! A few minutes later, I keyed in to my room, excitedly swept my gaze across the king-sized bed, iPod dock, and flat-screen TV, then opened the sliding glass door to my private wooden deck with its own Jacuzzi. OMG! And for the knockout punch, I stepped into the bathroom and took a hot shower under the wide rainfall showerhead. As a curtain of warm water deliciously cosseted me from the cares of the world, I continued my mantra. OMG! This was exactly how I needed to feel. Coddled. And Two Seasons in Coron certainly knows how it’s done. I had my adventures earlier in the day. I revisited Cayangan Lake, a consistent winner in the Philippines’ cleanest lakes that it had been elevated to the hall of fame. With all that excitement and the equal thrill of a choppy boat ride to the resort, I crawled my way to bed after my shower and had one of the best siestas of my life. By the time I got up, the sun was hanging low on the horizon. I joined friends at the Sulu Restaurant for cocktails and a pizza, which
I hardly partook of, as I was nursing my appetite for dinner since crabs was on the menu. We moved to an al fresco table for a better view of the full moon and indulged on a gourmet dinner. The next day, I wanted to try paddle boarding but the wind wouldn’t permit so I opted for the HydroBob Submersible Scooter. It is similar to helmet diving, but better because your helmet isn’t harnessed by a rope. The machine is motorized so you are free to move around. I slipped my head into the helmet attached to the machine and rode it like it were a motorcycle. I didn’t realize how rich with marine life the shore reef was until I went under. Every direction I took took me to more fish. I needed a good knead before the day was over so I scheduled a massage just before dinner. My masseuse pressed all the right buttons in my body to ease me into a nap. I needed very little else before I retired for the night so the light dinner of paella soup was perfect. Cookies and fudgy bars were at my beverage counter when I turned in, both of which I could not resist. Still, I managed to sleep early, and wake up early for my morning flight. While taking my shower before dawn, I opened the blinds and saw a very pregnant moon casting a silvery light on the water. It was another OMG moment, and perhaps a fitting end to a sublime Two Seasons experience. n

rab your walking shoes and red bandana and head to Cavite, a province where you can take a trail that follows the struggle of Filipino revolutionary Andres Bonifacio. This November 30, 2013, the nation will celebrate the 150th anniversary of his birth, and in his honor the Department of Tourism and the National Historical Commission will have a bit of a scavenger hunt for the public to rediscover and visit the sites associated with his life. For more than three centuries, the Philippines was under Spanish rule and in its final years saw revolutionary Filipinos seeking independence from Spain. Bonifacio was born in 1863, in an era when Filipinos were still considered Indios. It was during this same period that Freemasonry and its doctrine gained popularity. Bonifacio is perhaps best known for being Supremo or leader of the Kataas-taasan, Kagalang-galang Katipunan ng mga Anak ng Bayan (Highest and Most Honorable Society of the Children

of the Nation) or simply, the Katipunan, a group of Filipinos eager for revolution and independence for the Philippines. South of Manila lies the province of Cavite, less than an hour’s drive if you take the recently opened Manila–Cavite Expressway. It is widely known as the birthplace of Gen. Emilio Aguinaldo, the nation’s first president, and whose residence was the site of the Philippine Declaration of Independence on June 12, 1898. Aguinaldo and Bonifacio were also known to harbor mutual dislike for each other. It was in fact Aguinaldo who had Bonifacio arrested, tried, and later sent to be executed. 1. ImUs PLAZA Tirona St., Poblacion, Imus On December 29, 1896, the councils of the two rival Katipunan factions—the Magdiwang and Magdalo—met in Imus to discuss the framing of the

constitution and the possibilities of merging the two councils under Gen. Aguinaldo. Imus is the provincial capital of Cavite whose plaza is now a public park just across the centuries-old Imus Cathedral. 2. Tejeros ConvenTion Gen. Trias Drive, Brgy. Tejeros, Rosario The Tejeros Assembly convened at a friar estate house, now a well-maintained shrine, on March 22, 1897. This established a central revolutionary government with Emilio Aguinaldo as President and Andres Bonifacio as Director of Interior. 3. Tribunal Gen. Antonio St., Poblacion, Noveleta Across the local public market is the old town hall of Noveleta, once the seat of the Magdiwang faction, which Bonifacio helped establish. On April 3, 1897, Bonifacio attempted to recapture Noveleta but was unable to dislodge the Spaniards. 4. Casa HaCienda de naiC Brgy. C. Nazareno, Poblacion, Naic Bonifacio stayed in this building after the Tejeros Convention and held the “Naic Military Agreement” or “Acta de Naic.” On April 29, 1987, Bonifacio and his brother Procopio were imprisoned here after their capture in Indang. The building presently houses the Naic Elementary School, and still retains its original narrawood flooring and staircase built by the Dominicans in the 1830s. 5. Pinagbarilan Brgy. Limbon, Indang On April 28, 1897, Bonifacio’s troops assigned to guard the fort were surprised by the sudden assault by Aguinaldo’s men. Bonifacio’s brother Ciriaco was killed and his troops captured. 6. Trial House Col. Riel St., Maragondon On April 30, 1897, the Bonifacio brothers were transferred to Maragondon from Naic. On May 4, 1897, Bonifacio and his brother Procopio were tried. 7. exeCuTion siTe Brgy. Pinagsanhan, Maragondon On May 10, 1897, Bonifacio and his brother Procopio were executed by Col. Lazaro Makapagal and his troops. The execution site has been transformed as ideal spot for a weekend family getaway, with camping grounds, a swimming pool, and tourist facilities. Despite the tragedy that took place in these mountains, it serves a space for recreation, as well as reflection on the life of Bonifacio. With Byaheng Bonifacio: Byaheng Bayani ng Bayan, those curious about the life and times of Bonifacio can follow a trail of more than 20 sites of importance. LET’S HEAR IT FROM THE BOYS: Trailmaster Haim who has been riding dirtbikes for 16 years and his team from Tech-X will get you padded up and guide you in exploring the different trails in Kasili in Rizal. The best part is that it’s an easy one-hour drive from Manila.
I
’ve explored nature trails by foot, but have always wondered what it would be like on a roaring dirt bike! It sounded exciting and dangerous but Tech-X bikes and “Trailmaster” cofounder Haim Katzav assured me that their bikes were developed to be relatively lightweight and outfitted with an automatic clutch—perfect for beginners like me. Finally, I could drive a dirt bike without the complexities of a conventional motorbike! Haim and his team took us to the newbie trail in Kasili in Pestano Farm Road in Antipolo, about an hour’s drive from Manila. At the jump-off, we geared up with body armor, shin pads, gloves, and a helmet. Then we had a short briefing on how to operate the bike. It seemed pretty simple since there was no clutch to worry about—as easy as driving a badass scooter. Haim allowed me to get a feel of the bike before we went on the actual trail and, although operating the bike was pretty simple and I could balance on a regular bicycle, I was still adjusting to accelerating and braking on a motorbike.
In 15 minutes, I got the hang of it. We hit the trail, which had gentle slopes and nice views of the countryside. We passed a little village with curious kids who went out of their houses to wave at us. I was feeling both exhilarated and scared at the same time. The downhills were pretty tricky but manageable. It was my fear of falling from the bike that was making the whole situation more difficult than it actually seemed. At one point, I hopped the back of Haim’s bike to see what it was like to ride with an experienced rider (he’s been at it for 16 years!). We were practically flying and I got to experience the bike’s full potential over the rough terrain. Some moments felt as if we were going to skid and tip over, but Haim would expertly shift his weight, keeping us balanced. When I finally got the courage to get back on my bike again, I gained more confidence knowing that even if the trail was rocky, I could still go fast and the bike could handle it. Yes, I finally conquered my fear and made it back to the jump-off alive and unscathed! n

hilippine Airlines increased its presence in Australia by adding Darwin, Brisbane, and Perth to its roster of exciting Aussie destinations, on top of Sydney and Melbourne. Since Australia is home to more than 300,000 Filipinos, the expanded flight frequencies augur well for them. Even Aussie expatriates living in the Philippines stand to benefit from these new air linkages to their homeland. For Australian tourists and business travelers, the new routes give them the chance to fly to the country via the national flag carrier and experience PAL’s “at home” service marked by warmth, hospitality, and professionalism. PAL flies between Darwin and Manila daily, between Brisbane and Manila (via Darwin) thrice weekly, and between Perth and Manila (also via Darwin) four times weekly. The flight to Brisbane marks PAL’s third return to Queensland’s state capital. PAL operated the Manila–Brisbane route between 1982 and 1998, and resumed briefly in 2009 until 2010 before this year’s return to

the Australian city. The inaugural flight to Sydney was October 6, 1965; and maiden service to Melbourne commenced on September 9, 1971. As the plane touched down at Darwin last June 2, 2013, a traditional water salute welcomed the PAL flight. “We are glad to welcome PAL to Darwin. Filipinos are the second largest minority group in the Northern Territory,” Airports Chief Executive Officer Ian Kew said. For his part, Northern Territory Minister for Education, Housing, Lands, and Planning Peter Chandler said, “PAL’s arrival in Darwin is most anticipated because of the expected economic boom due to investment inflow.” Darwin is the capital city of Northern Territory and is the flag carrier’s new gateway Down Under. Its business district projects the modernity of the big cities sans the fast-paced lifestyle. Tourists call Darwin a place “where one can go nature tripping in an urban
center.” From Darwin, the PAL flight journeyed to Brisbane that same day (June 2) marking the flag carrier’s return to the Australian city after a 2-year hiatus. On June 3, PAL touched down for the very first time in Perth. The Manila–Perth service links the Philippines with Western Australia’s capital city. A modern and cosmopolitan metropolis marked by gleaming high-rises and sprawling public parks, Perth is also one of the world’s most livable cities. For PAL President Ramon S. Ang, “The new connections are envisioned to increase passenger traffic between the Philippines and Australia and strengthen bilateral ties between these countries. Return flights from these cities make Manila an ideal gateway to popular Asian destinations like Hong Kong, China, Japan, and South Korea, and a jump-off point to the country’s top travel spots.” Indeed, PAL’s love affair with Australia continues. n

Safe Haven
