PAL PRESIDENT’S MESSAGE

Heading Down Under This month, Philippine Airlines launches three routes in one of our most important markets – Australia. It’s part of our ongoing network expansion that began in November 2012 with the introduction of direct flights to Toronto, Canada and continuing with our return to Kuala Lumpur, Malaysia last month. We’re heading further south this time, to Australia, which will be the focus of our attention with three new destinations. Darwin in the Northern Territory is PAL’s primary gateway Down Under, with daily services starting June 1. The service then goes on to Brisbane in Queensland three times weekly and Perth in Western Australia four times weekly, on alternate days. These complement our longstanding services to Sydney four times weekly and to Melbourne thrice weekly. In all, PAL now flies to five points in Australia, deploying 7,400 seats every week on these routes. This makes PAL by far the largest carrier between the Philippines and Australia, a fact that will delight the 300,000 Filipinos who reside Down Under and the 5,000 Australian expatriates in the Philippines. Not to mention the throng of Australian holidaymakers who now have more direct access to the tropical lures of our country – endless beaches, splendid dive spots and some of the world’s best surf breaks. Australia is one of the Philippines’ major trading partners. Tourism, in particular, is booming, with double-digit growth over the last five years. Last year, close to 200,000 Australian nationals visited the country, making Australia our sixth largest tourism source market. In addition, PAL’s new services between the Philippine capital and Australia will also provide passengers from Down Under a convenient jump-off point to our key Asian destinations. Indeed, wherever you might be flying from throughout our network, Darwin, Brisbane or Perth, along with 29 other international cities and 32 domestic points, are all just a seamless transit stop away. We hope to welcome you onboard one of these flights soon. Mabuhay!

EDITOR’S NOTE

PAL’s Exciting New Routes

P

AL just might be reading your mind and delving into your travel bucket list to help make it happen. For starters, the airline recently launched regular flights to Basco, Batanes on PAL Express (formerly AirPhil, now merged with PAL).

Known for its rugged beauty, Batanes is often compared to Scotland. And if you really want to get away from it all, this northernmost province of the Philippines fits the bill. It’s ideal, raw, and uncomplicated. Our managing editor, Lynette Lee Corporal, writes her latest impression for this issue, accompanied by moving images taken by National Geographic Photo Award Winner, George Tapan. Although Lynette has been there several times, she never tires of it. George, also a frequent visitor, might make Batanes the subject of his next coffee-table book project. Surely, there must be something which draws them there, time and time again. It’s intriguing and it’s left for you to discover why. PAL is also opening up new routes to the Land Down Under, each with its own character. There’s Perth, the gateway to Northern Australia, famous for wines. Then there’s Darwin in Australia’s wild Northern Territory, with a crocodile attraction in the heart of the city. Finally, there’s Brisbane to match the sophistication of Sydney and Melbourne with its vibrant city life. You can’t say you have covered Australia unless you have seen these unique destinations. Of course, PAL isn’t ignoring a favorite travel activity: shopping! Bringing you phOTOgRaphERS’ paRaDISE: The Mabuhay to another new destinateam enjoys the scenery and fresh air in Vayang Hills, Batanes. Photo by George Tapan tion, Guangzhou in China we feature a shopaholic’s guide to this city’s temptations. What do they say about such harmless pursuits? Just give in and go with the flow (together with your credit cards). There’s a lot to look forward to. Best you get that bucket list and start crossing it off with PAL’s routes. We, at Philippine Airlines, are happy to have you on board. Please sit back and relax, and allow us to make your flight enjoyable. For your own safety and convenience, please observe the regulations listed on the back pages. “Mabuhay” is a Filipino verb in the form of a command: “Live!” It is also a wish: “May you live!” Whoever says it wishes you the great gift of a long and full life. It is both a blessing and a lusty cheer. “Mabuhay” (ma-boo-high) is such a large word that it lends itself to a wide number of secondary uses: Welcome, Congratulations, Thanks, Godspeed, Hello, Good Luck, Cheers, Posit, Sante, Viva, Kambei, Aloha, and many other expressions of goodwill. All these are a part of life, but it is the gift of life that makes them possible. “Mabuhay,” in other words, is an invocation and a celebration of life itself.

CELEBRATIONs

IN SEARCH OF THE PERFECT DIAMOND Bride-to-be or shopping for yours? Learn from premier jewelry brand Harry Winston about the qualities of the ideal diamond.

T

ying the knot is easily one of life’s greatest milestones. It’s also the most stressful, especially when hunting for the perfect ring. At Harry Winston, every engagement ring begins with a diamond chosen for its exceptional character and superlative quality. Each stone is cut and polished to release all its brilliance and distinctive beauty. Only then do the designers and master craftsmen fashion a setting that will reveal each individual diamond’s heart and soul in a way that is at once contemporary, classic, and impeccably elegant. So how do they arrive at the perfect diamond? Consider these four C’s: 1. CARAT A diamond’s size is measured by weight, expressed in carats divided into points. A carat equals 100 points or 1/5 of a gram. Diamonds of higher carat are generally more valuable because they are found less frequently in nature. But diamonds of equal carat may vary greatly in value because they differ in cut, color, and clarity. Therefore, weight alone is a poor guide for evaluating a diamond since it is a complex combination of factors that determines a diamond’s beauty and quality. 2. COLOR Though diamonds are transparent, almost all display some hint of color. A diamond’s color is assessed against a scale from D through Z

and based on a standardized color grading system. Diamonds with grades D, E, and F are deemed colorless and are therefore the rarest and most valuable. Harry Winston selects diamonds from only these top three grades. 3. CUT Although nature determines a rough diamond’s size, color, and clarity, the hands of the master cutter release its fire and brilliance. When a diamond is cut to exacting proportions, light will reflect inside it from one mirror-like facet to another and reappear to the eye in a flash of spectral colors. The best diamonds are cut and polished to maximize their beauty—even though such a strict standard requires sacrificing much more of a rough diamond’s weight. 4. CLARITY When magnified, surface characteristics can take various forms such as tiny crystals, clouds, or feathers. Diamonds possessing no such characteristics are categorized as Flawless (FL) or Internally Flawless (IF). In general, the greater the imperfections are in number and size, the lower the clarity grade. Each ring’s setting is custom designed to reveal the extraordinary character of the gemstones and to ensure the diamonds are perfectly set in relation to one another. Constructed from platinum, the settings tightly secure the stones using the minimal amount of metal in order to maximize the fire, brilliance and scintillation of each diamond. Each ring is then engraved with the HW hallmark, as well as a description of the metal fineness and carat weight of the ring’s center stone. With Harry Winston, no detail is overlooked. n

ONCE IN A BLUE MOON The Hope Diamond is a 45.52-carat dark blue diamond housed in the Smithsonian Institution in Washington D.C. This rare diamond was a gift from Harry Winston in 1958 to the American people. 32 I Mabuhay Magazine I June 2013

FILIPINO CUISINE

KAPAMPANGAN CREATION: Beringhe is, not surprisingly, a rice dish of the Kapampangans, who are famous for their culinary excellence. With its characteristic yellow color (because of the turmeric), the Beringhe is Pampanga’s own version of the Spanish Arroz Valenciana and Paella.

ERNEST’S PICKS: TOP 5 PINOY RESTAURANTS CHEF ERNEST REYNOSO-GALA shares his five favorite Filipino restaurants that are worth going back to. CABALEN Being in the industry for 26 years, Cabalen, which means “fellow Kapampangan,” has established itself as one of the best in home-cooked Filipino food. Best described as authentic and value for money, the dishes served are derived from Pampanga, a province considered the melting pot of Filipino cuisine. Indeed, Kapampangans are known for their innate cooking talent and passion for good food. The secret to their success can be attributed to the consistency of taste of real Kapampangan cooking, using only fresh, genuine ingredients and traditional methods of cooking that people come to expect. “Eat all you can, eat all you want” is their motto, giving a festive atmosphere, celebrating and enjoying with family and friends. Specialties include Kare-kare (oxtail in peanut sauce), Beringhe (sticky fried rice), Rellenong Bangus (stuffed milkfish), native lechon (roasted pig), and pritchon (lechon wrapped in tortilla bread that includes six different sauces), among others. www.cabalen.ph ABE The concept of making simple, home-cooked meals, and transforming them into culinary work of art has always been Abe’s trademark. There is nothing complicated about the dishes served,

but the taste has always been consistent and savory, reminding people that good food is easy, and that it’s all about using the best ingredients and bringing out the flavor. Crowd favorites include Binukadkad na Pla-Pla, a Bistro Remedios original, overgrown tilapia butterflied and fried to delightful crispiness, served with balo-balo relish and mustasa leaves; Sugpo sa Aligue ng Talangka or Prawns simmered in tiny crab fat with olive oil and lemon; and Abe’s Chicken Supreme Spring chicken stuffed with galapong rice, chestnuts, and raisins. www.ljcrestaurants.com.ph/abe/ ELIAS Whether it’s breakfast, lunch, or merienda (afternoon snack), the items found in Elias enhance the flavor of the food and will give the palate sensation you are looking for. This restaurant has the winning combination of the beautiful presentation and delicious dishes. Best sellers include Mechado a La Bonifacio, slowly cooked beef stew in native tomato sauce. The meat is so tender it melts in your mouth, while the flavoring is balanced (not too salty or sweet). Another masterpiece is the Binagoongan ni Pia, a crispy pork dish cooked in shrimp paste. Leave some space for dessert as the ultra-creamy and mouth-watering homemade ice cream is worth the wait. www.elias.ph

FIT FOR A STAR: In an interview with the Philippine Daily Inquirer, British actress Rachel Weisz admitted to have eaten plenty of adobo and lumpia while filming The Bourne Legacy in the Philippines. Part-Filipino actress Vanessa Hudgens’ favorites are halo-halo, adobo, and pancit. 34 I Mabuhay Magazine I June 2013

A SPREAD OF FLAVORS: (CLOCKWISE FROM TOP LEFT) Fely J’s Lola Ising’s Adobo, Elias’ Binagoongan ni Pia, Abe’s Binukadkad na Pla-Pla, and Elias Bonifacio Global City.

Sour Factor Filipinos love vinegar. Different provinces in the Philippines have their on take on this sour condiment. It figures in the ingredients of most Filipino dishes, such as paksiw (fish simmered in vinegar), adobo (meat stewed in soy sauce and vinegar), and kinilaw (ceviche). It’s also used to prepare dipping sauces for tapa, longganisa (native sausage), grilled pork belly, and crispy pata (deep-fried pork leg).

FELY J’S Bringing warmth and love in the restaurant industry is a rare commodity, but the owners of Fely J’s have established the art of making guests feel at home and served with genuine passion and care. Crowd favorites like Lola Ising’s Adobo (pork belly that has been boiled, deep fried, and simmered in flavored sauce) has a crispy exterior but melts in the mouth, juicy interior, while Dilis-cious Rice (fried rice mixed with black beans and topped with crispy fish) is a must-try and well loved by locals and foreigners alike. Spacious, cozy, and reasonably priced, Fely J’s is a gourmet extravaganza, awaiting to give the ultimate dining experience. www.ljcrestaurants.com.ph/fely-j KANIN CLUB The food is marvelous, with best sellers Crispy Dinuguan, pork heavenly deep fried to a crisp then set in a semi-dry stew of pork blood, and Sinangag na Sinigang, a sinigang-inspired fried rice complete with pork liempo and vegetable tempura drawing a jampack crowd making reservations a must. It has the three most important qualities you seek when dining: excellent cuisine, relaxing ambiance, and fast service. Guests are treated with great care and attention, allowing customers to feel at ease and simply enjoy the moment. n

LUXE ESCAPE NATURAL WONDER: The Taal Volcano, the world’s smallest volcano, is a sight which residents of Twin Lakes have privileged views of. Photo by Hannah Reyes.

TAGAYTAY: Life by the Lakes

We’ve uncovered Twin Lakes, a posh community with a real vineyard on site.

E

ver dreamed of owning a house with a nice view of a real vineyard? If so, Tagaytay City could be the perfect place for this, with its cool climate and relaxing view of Taal Lake and its tiny volcano. Twin Lakes, the country’s first vineyard resort community, adds something unique: as the city’s first integrated tourism estate—and it just might satisfy your dream lifestyle. This 1,149-hectare development has a lot going on. For starters, a 177-hectare area called The Vineyard includes a hotel and resort, sports club and spa, wedding venue, the development’s first condominium cluster The Vineyard Residences, plus a 10-hectare authentic vineyard that will produce real grapes to be processed, stored, and aged in a chateau. The residential condominium cluster occupies 2.3 hectares of the estate, and will comprise three towers: the eight-story Merlot, the seven-story Chardonnay, and the six-story Shiraz, each with oneand two-bedroom units. Twin Lakes will also feature four residential villages. The Domaine Le Jardin has 538 expansive lots (250 to 500 sqm) to

build the perfect vacation house on. Then there’s a lush botanical garden, an exclusive amenity area, and a man-made lagoon. Three other residential villages—the Domaine Le Montagne, Domaine Le Soleil, and Domaine Du Lac (“Lakeshore”)—are in the works. The 34-hectare retirement community will also have its own hospital and wellness center. On the 84-hectare Plantation, community members can enjoy bigger-sized lots. One-third of the entire estate will be devoted to a nature park, forest reserve, and nursery. Also coming soon: a 32-hectare university park and two commercial and retail hubs— The Village and Lakeshore Town Center—for shopping and dining. Getting there will be a breeze, as a road is in progress. The 15-kilometer-long Twin Lakes Drive will run from the Tagaytay– Nasugbu Road down to Talisay, Batangas. And next time you travel to Tagaytay, who knows? You might just end up wanting to stay. n

Twin Lakes is being developed by Global-Estate Resorts, Inc. (GERI), the sister company of real estate leader Megaworld. WELLNESS

ONLY THE BEST The exclusive Amanpulo is the only resort on a pristine island called Pamilican, in the Quiniluban Group of Palawan’s Cuyo Islands. Its 40 guest cottages are designed no less by the Philippine National Artist for Architecture, Bobby Mañosa.

THE BLISS OF AMANPULO When it comes to pampering guests, it’s hard to match the famous Aman Resorts, who have elevated this to an art form. EXCLUSIVELY YOURS Being spoiled begins en route to the resort. For starters, Amanpulo has a private plane to fly you in. Their waiting lounge offers everything – comfy chairs, snacks, cold towels, reading materials, and in the off chance that you are craving for a bath, there’s even a shower room. Upon arrival, the resort staff greets you with refreshments and cold towels. You are handed the keys to your cottage and to a golf cart, exclusively yours to tool around the island during your stay. If you’ve booked the beach casita (cottage), there’s a footpath leading directly to the beach. Anticipating your needs, the resort has already provided a beach set-up for you—a large white parasol, table, two cushioned lounge chairs, and towels. Forgot your sun block? No problem. There’s a complimentary one inside your cottage. Thirsty? There’s Evian, again complimentary. What’s the beach like? A glistening white stretch with crystal clear waters and very few footprints in the sand (after all, the cost is about $2,000 a night for the privilege). Talk about space and privacy! At any one time, you’d find only about six guests swimming in this glorious two-kilometer beach, so it’s easy to imagine it as your own. THE AMAN WAY Despite a range of guest activities to choose from, the resort doesn’t do any hard selling. It’s not their style. The Aman way is 40 I Mabuhay Magazine I June 2013

subtle, understated, and respectful of guest privacy, knowing that most of their patrons simply want quiet time to unwind. Their new spa is one of the more popular places on the island, overflowing with tranquility. Located at the highest point on the island, it offers stunning 360-degree views of the Sulu Sea. There are three pavilions with six treatment rooms, another pavilion for yoga and meditation, a Pilates studio, gym, and finishing salon. As always with Aman, everything is tastefully designed, neat, and wellequipped. NATURE’S HEALING This month, the resort offers a four-night “Alignment and Movement Retreat” from June 7 to 10 where three specialists will apply the benefits of cranial osteopathy and watsu. Sounds so esoteric, but osteopathy is an alternative treatment that helps the body heal itself by the gentle manipulation of the skeleton and muscles. Adept osteopaths like the ones Aman are bringing in can actually detect subtle rhythms and changes of a person’s body tissues, determine the state of health, and apply gentle techniques to restore a person’s well-being. With this spa retreat, this month may be the perfect time to visit Amanpulo for your tan and spirit. n

BOOK REVIEW

SOMETHING OLD, SOMETHING NEW: The evolution of Filipino furniture through the centuries is illustrated from preserved ancestral houses to contemporary houses built with a distinct Filipino theme inspired by past models.

PHILIPPINE STYLE, SHOWCASED ERIK AKPEDONU explores the roots of traditional Filipino architecture and design in Elizabeth Reyes’ latest book.

T

o those wishing to explore “Filipino-ness” in contemporary architectural design, Elizabeth Reyes’ latest book Philippine Style: Design & Architecture is a veritable guidebook. After her 2004 landmark publication Filipino Style (together with Javellana and Zialcita) showcased the best of Spanish- and American-era Christian lowland culture and architecture, she followed up a year later with 25 Tropical Houses in the Philippines, portraying outstanding examples in contemporary tropical design. In her latest work Philippine Style (Anvil Publishing, 2013) Reyes goes a step further by exploring traditional and contemporary furniture and accessories such as pottery, artworks and fabrics, with many colorful images expertly photographed by Luca Tettoni. Described in great detail is the typical make-up of a bahay na bato, its various rooms and spaces, and interior design components. Features included are exquisite and excellently preserved ancestral houses from Vigan and Taal, Art Nouveau gems in Malabon, and Victorian mansions of Sariaya, among others. Short of lingering in nostalgic admiration of the past, the book then switches to contemporary houses built with a distinct Filipino design theme adopted from or inspired by those past models. Elaborate mansions, such as the Zobel Residence, are showcased as well as smaller houses and even modest huts no less elaborately designed. Many houses featured are by renowned Filipino architects,

interior designers, and artists, such as Benji Reyes, Angelo Manosa, and Budji Layug. Most of these modern “dream houses” are set in spectacular natural locations, with lush tropical gardens surrounding them, and seemingly far removed from urban noise, crime, crowdedness and not least, mosquitoes. Thus, the common observation that, “where a location has a perfect view, half of the architects’ work is already done,” certainly applies here. The evolution of Filipino furniture through the centuries is described, and typical pieces found in ancestral houses, such as mesa altars, plateras and Ah Tay beds. Here again antique pieces are juxtaposed with modern furniture made from locally available organic materials by famous Filipino artists such as Yolanda Perez and Milo Naval. The book then moves on to portray exquisite pieces of pottery and ceramics by the likes of Ugu Bigyan and Lanelle Abueva Fernando, which imbue contemporary residences with a distinctly local, yet highly artistic touch. A comprehensive glossary of local tropical woods, fibers and fabrics completes this extraordinary journey through the evolution of Filipino styles. Elizabeth Reyes’ Philippine Style is a wonderful resource book and style guide, which will go to great lengths guiding architects, interior designers and artist, as well as their clients who wish to explore what it means to live in “Philippine” style in the 21st century.

Philippine Style is available at all National Bookstore branches. 42 I Mabuhay Magazine I June 2013

A House that Really Rocks Casa Hidalgo, constructed in 1867 in Quiapo, Manila, was considered the most elegant bahay-na-bato in the Philippines during the Spanish regime. So elegant that it was chosen to be the first campus of the UP School of Fine Arts. It was also the first architecture school in the country.

Regarded as the central shopping area by the locals selling all items imaginable, Beijing Road offers a bonanza of visual stimuli: brightly lit signs embellish the façade of shops; festive red lanterns adorn trees; preserved historical roads from the Song and Ming dynasties beneath thick glass panels—simply look to the sky to rest your eyes. TrENdy ShANgxIAjIU If you’re looking to overhaul your wardrobe, head on to Shangxiajiu Pedestrian Street and the nearby Zhuangyuan Fang, where the fashionable youth huddle. is unfathomably cheap, but the way going there is chaotic: narrow sidewalks meant bustling about with throngs of shoppers on the road while vehicles honk their horns for you to give way. It’s not necessarily stressful as it is exciting. To show how much bang you get for your buck: good quality leather shoes and sneakers are sold for as low as RMB50 (Php332); RMB20 (Php133) can buy you a trendy T-shirt; while RMB10 (Php66.50) gives you four pairs of colorful ankle socks. CuLTuRE In GuAnGzHOu Although there are many other wholesale shopping areas, you’ll find that Guangzhou contributes much to culture as it does to consumerism. Bask in the historical significance of the Buddhist and millennium-old Liurong Temple, the Taoist Sanyuan Palace, and the nationalistic Sun Yat-Sen Memorial Hall. Admire artifacts and collect art pieces as souvenirs while strolling within the relaxing confines of the palatial Chen Clan Academy. Go back in time to romantic colonial eras by visiting Shamian Island, a concession handed to the French and British in the 19th century by the Qing Dynasty. Immerse yourself where the most diverse of cultures converge in Xiao

Bei District, a harmonious international community of local Chinese, Africans, and Middle Easterners, and get to sample unique delicacies originating from faraway lands. EAT up Finally, a trip to Guangzhou wouldn’t be complete without partaking in some Cantonese cuisine. Visit one of the many branches of the established yet modestly named Guangzhou Restaurant and try their famous Wenchang Chicken and an assortment of authentic yum cha (dimsum). AS THE Sun SETS… Enjoy splendid vistas of the Pearl River in either of two ways: join an acclaimed yet reasonably priced night cruise while having dinner on board, or be surrounded by magnificent structures and brightly lit buildings from afar at the viewing deck of the equally illuminated Canton Tower, the tallest structure in all of China. There probably isn’t a more pleasant impression of Guangzhou to take back home than the reflection of alternating hues of light swaying heedlessly over the Pearl River. n

GREEN LIVING

A NEW LEAF: Get a guilt-free way of living at Elements Eco-efficient Residences with their environmental friendly commitment to comfort.

The Condo Lifestyle, Redefined Heeding the needs of eco-conscious individuals, this property sets the eco-living standards in Pasig City.

T

hese days, condo-living seems to be the answer to new families’ needs for a balanced, affordable lifestyle. And everyone wants the same thing: convenience, security, leisure. Taking it a notch higher are those who opt for eco-friendly lifestyles. This is a conscious choice, but not always an easy one. Thankfully, GFL Metro Communities Inc. has made a commitment to constantly innovate and provide exactly that. The developers of Seibu Tower at Fort Bonifacio Global City are geared up with another condominium project: the Elements Ecoefficient Residences. Located at Shaw Blvd., Kapitolyo, in Pasig City, this twin tower residential condominium merges comfort, beauty, cost-efficiency, and environmental preservation. They’ve managed to use energy, water conservation, and proactive recycling, yet still ensure the full

amenities of modern condo living. The two new towers are called Nerou (water) and Aire (air). Nerou Tower displays rippling water features at the lobby and the sky pool, providing a soothing, calming environment for residents and guests, while Aire Tower has both Sky and Hanging Gardens in the midsection of the building to enhance the positive effects of the green roof. If more residential buildings would follow this initiative, such roofs and gardens could, in fact, lower urban air temperatures. Elements Eco-Efficient Residences also comes complete with resort-style swimming/lap pools, a child-safe indoor playground, a theater room, a spa and wellness center, a fully-equipped gym, WiFi lounge and business center. Coming soon is a boutique mall with cozy restaurants and quaint shops at walking distance. n

EASY LIVING: (CLOCKWISE FROM TOP LEFT) Perth’s Central Business District is always abuzz, but not too far away is laid back bohemian haven, Fremantle South Terrace, and minutes away, sprawling grounds like the Fraser Gallop Estate Vineyard.

P

erth is transforming fast. Wonderful wines, excellent produce, and mining make it the key to economically successful Western Australia. HEART-OF-THE-CITY HIGHLIGHTS Drive up and down the coast on Ocean Drive, visit the Art Gallery of W.A. to see local indigenous art, and then stroll through pretty Kings Park. The King Street quarter of the city is where you’ll spot the Gucci set fluttering. Head to the urban city center, where Brookfield Place on St. Georges Terrace is on everyone’s radar. You’ll find superb bars and restaurants such as Bob’s Bar on the rooftop and Print Hall (www. brookfieldplaceperth.com/eat-drink-shop). Also in the city is The Aviary (www.theaviaryperth.com.au), Perth’s largest rooftop venue. The Crown Perth (www.crownperth.com.au), a casino complex, is the talk of the town. Its five-star attractions include luxurious accommodations, swanky pool cabanas, and new world-class bars. Dine

at Chef Guillaume Brahimi’s Bistro Guillaume. For a taste of Asia, head to Northbridge where good Vietnamese and Chinese cuisines are just some of the world-food choices. This area is popular with backpackers and the young crowd. Nearby is the trendy Beaufort Street in Mount Lawley. With its assortment of interesting bars, eateries, and plenty of great home-ware shopping, you can relax in style, before partying the night away at the popular Luxe Bar (www.luxebar.com). WINE COUNTRY Just 25 minutes northeast from the CBD lies Swan Valley (www.swanvalley.com.au), a gourmet wine region famous for hearty Shiraz and smooth Verdelho types. Smaller and more intimate wineries also dot the area. Mid-sized Lamont’s (www.lamonts.com. au) and Jane Brook (www.janebrook.com.au) are excellent, while many love the Little River Winery (www.littleriverwinery.com) for its French-inspired fare served in a rustic setting. WAY OF THE WEST: While keeping its Aboriginal heritage intact, Perth has managed to develop into one of the country’s leading cities, dominating the Western Autralia economy.

(www.thecheesebarrel.com.au) has opened recently, so be sure to pair your wines here when you’re in Swan Valley. SOUTHSIDE ESCAPES One of Australia’s most intact 19th-century towns is bohemian Fremantle, dotted with photography and art galleries, especially on charming High Street. Stop by the historical Fremantle Arts Centre (www.fac. org.au) for a dose of modern art. Nearby, the popular “Cappuccino Strip” attracts weekend crowds, and the popular Canvas Café offers a Mediterranean menu. The Maritime Museum is also worth a visit. Whisper Wine Bar (www.whisperwinebar. com.au) is a French-run, Provence-style wine bar located along Essex Street in central Fremantle. Enjoy all-you-can-eat tapas from $45—nightly live music included—at Gypsy Tapas House (www. gypsytapashouse.com.au). To explore the city even further, there are free bike services at the Fremantle Visitor Centre in Kings Square and E-Bikes R Us on Victoria Quay. Steer your wheels further south for a day trip to Rottnest Island. Cycle around the island’s secluded

beaches, and relax at pubs and restaurants (www. rottnestexpress.com.au). COASTLINE COMFORTS Hitting the beach? Cottesloe is number one among the beach-side suburbs, Floreat Beach is low key, City Beach is popular for waves, and surfers flock to Scarborough for the surfside lifestyle. Up north is Mettams Pool, which is actually a beach with a small reef. For fine-dining at the coast, try Cottesloe Beach Club (www.cottesloebeachhotel.com.au). The hotel’s turquoise, Ibiza-style décors and inventive cocktails seem to attract all the beautiful people. SUPERB SHOPPING Suburban Claremont, with its new smart Claremont Quarter (www.claremontquarter.com. au), houses the iconic David Jones store among other fashionable shops. Newly opened Billion Dollar Babes (www.billiondollarbabes.com.au) features elegant yet cool pieces, while next door is the 1970s-inspired Camilla (www.camilla.com.au) quite famous for floral kaftans and jumpsuits. n

Take Note! Visit Perth from March to April for a less windy, mild summer weather. Perth Airport has no train connection or public buses yet so your choices are the pricy taxi ($50++) or the Airport Connect shuttle service ($30++).

NEW DESTINATION | DARWIN

DUSK ’TILL DAWN: Beach life in Darwin is never dull with seaside markets and sunsets like no other along the Timor Sea. Photos by Julie Ihle.

DARE TO BE DARWIN From crocodiles to cocktails, JULIE IHLE finds plenty of reasons to visit Australia’s most exotic city.

W

ith a redeveloped waterfront, funky dining scene, and tropical climate, Darwin oozes lifestyle. But as gateway to Australia’s wild Northern Territory, Darwin hasn’t lost its frontier spirit and sense of adventure.

Outstation, and Tiwi Art Network, then cool down with a gelato at Caf Parap, a fave local hangout.

DAY 1 To Market, to Market Start your Saturday at Parap Markets, a popular weekend food and craft market set in Parap, one of Darwin’s trendiest suburbs. Down an organic coffee and sample an ethnic melting pot of tastes and treats. Cambodian pancakes, anyone? Then mingle with locals and bag a bargain to the ambient strains of live music.

Pat a Crocodile Where else in the world has a crocodile enclosure in the center of the city? Opened in 2008, Crocosaurus Cove is an urban wildlife experience, which offers visitors the chance to get up close and personal with Australia’s deadly crocodiles, plus see the world’s largest collection of Australian reptiles and a cute turtle sanctuary. Grab the opportunity to hold a baby crocodile and watch crocodile feeding. Adrenalin junkies can swim with the crocs, while locked in a transparent cage at the “Cage of Death.” It’s popular so be sure to book well in advance.

Gallery Hop While you’re in the hood, take a walk around Parap for a dose of art. With a gallery on every corner, Parap is the best place to snare some Aboriginal art, known for its vibrant earth tones and depictions of the mythical Dreamtime. Check out Nomad Art,

Lunch with the Locals Recover with a drink and bite to eat at Stokes Hill Wharf, part of the new Darwin Waterfront Precinct. This renovated wharf played a role in World War II and was featured in the movie Australia starring Nicole Kidman. There are al fresco eateries to suit

Outdoors Unlimited Charles Darwin National Park Known for its World War II-era bunkers and memorabilia. Holmes Jungle Nature Park Famous for its abundant wildlife, picnic-conducive surroundings, and panoramic views. Howard Springs Nature Park A great venue for picnicking, swimming, waterfowl viewing, and wilderness walking.

HISTORIC “HOUSE”: The Darwin Parliament House, built using materials endemic to Australia, has a time capsule buried in 1992 and which will be opened in 2048, the 100th anniversary of the sitting of the North Territory’s first Legislative Council. 52 I Mabuhay Magazine I June 2013

all budgets and tastes, but Il Lido is my pick for its tropical cool and tapas lounge. Cool Down Grab your cozzie (that’s Aussie slang for swimming costume!) and head to the Wave Lagoon, part of the Waterfront Precinct, for a welcome respite from Darwin’s steamy tropical heat. Waves up to 1.7 meters make for family fun and there’s a shallow area for toddlers. Go Cruising Dusk is an ideal time to take a cruise on Darwin’s harbor. Board a romantic yacht and cruise the sapphire-blue Timor Sea, champagne in hand. Too tame? Hop on a jetski for the thrillseeker’s version. Outdoor Cinema Finish your day at the Deckchair Cinema, part of the Waterfront Precinct. Grab a beer and bite to eat (think Indian, Thai, or fresh barramundi) and stretch out under the starry skies while you enjoy a classic movie or latest release. DAY 2 Morning Walk Get off to a healthy start with a walk on The

Darwin

Esplanade on Bicentennial Reserve, a 3-kilometer green space straddling the foreshore. Bookended by Port Darwin on one side and lush tropical gardens on the other, take a gander on the way at hand-painted tiles, which commemorate Aboriginal leaders and colorful local characters. Finish with brunch at the funky Curve. Cyclones and Crocodiles Spend the morning at the Museum & Art Gallery of the Northern Territory. Sweetheart, one of the largest saltwater crocodiles ever caught, welcomes you at the entrance and, even if stuffed and mounted, is still a formidable sight. The museum also houses the Cyclone Tracy exhibit. This devastating cyclone struck on Christmas Day 1974, and was the catalyst for Darwin’s rebuilding along clean, modern lines. Bayside Dining Replenish at Cullen Bay, a ritzy waterside dining area where yachts jostle for position in the marina. Choose from Greek, contemporary Australian, or Asian cuisine, but locals love Buzz Café, with wraparound views and Balinese vibe.

EAT, PLAY, DANCE: (CLOCKKWISE FROM TOP LEFT) At the Mindel Night Market, you will find plenty of culture and diverse cuisine to fill up your senses. Photos by Julie Ihle.

When to Go The best time to go to Darwin is from May to August (the Southern Hemisphere winter), when temperatures during dry, sunny days reach just 28 degrees Celsius. Where to Stay Chic Vibe Hotel (www.vibehotels.com.au), located by the Darwin Waterfront Precinct and just a short walk to city center, boasts contemporary fittings. Where to Eat Award-winning Pee Wee’s at the Point (peewees.com.au) offers an interesting

East Point Military Museum, which houses the Defence of Darwin Experience: an interactive, multimedia experience of the story of Darwin’s role during World War II. Unlike other Australian cities, Darwin was directly affected by the War (it was bombed by the Japanese 64 times). It was also from Darwin that General Douglas MacArthur launched his campaign to liberate Manila and to reclaim the Philippines from Japanese occupation. For a change of pace, afterwards photograph the tame wallabies (a small kangaroo) in the picnic grounds. Sunset Markets Mindil Markets, which run on Thursdays and Sundays from April to October, are some of Australia’s most famous markets. Offering a mix of music, performance, craft, clothing, and food, they are popular with locals and tourists alike. No one does sunsets like the Northern Territory and watching the blood-red sun sink below the Timor Sea is the perfect way to end your stay in Darwin. n

Opened in 1992, Hanuman (www.hanuman. com.au/hanuman_darwin.htm) specializes in Thai, Indian, and Nonya cuisine. Its signature dish is oysters with lemongrass, sweet basil, ginger, chili, and fresh coriander. For a bit of Australian, go to Char Restaurant (www.charrestaurant.com.au), an elegant eatery that emphasizes sustainably produced beef. Its signature dish is aged, grain-fed Wagyu rump with Tasmanian Wasabi, Japanese pickles, and shiso.

AUSTRALIAN OUTBACK

FAIR FORTUNE: While mining towns still thrive even after the goldrushes of the 1800s, the landscape is still rich in wildflowers. With more than 12,000 species, sixty percent of which cannot be found anywhere else, this makes it the largest collection in the world.

THE AMAZING OUTBACK: WHERE NOTHING IS EVERYTHING DOMINICK A. MERLE goes deep into the Outback and survived to tell the tale.

W

e actually had to slow to a stop while a python as big around as a fire hose ambled across the road. “We give way to animals out here,” said my driver, Katie, a Nicole Kidman look-a-like. “All animals.” The journey actually began a few days earlier when we left the Queensland coast and headed into the legendary Australian Outback, or “The Bush” as the locals call it. And if that wasn’t exotic enough, our drive would be practically astride the Tropic of Capricorn, that imaginary line south of the Equator that divides the Southern Temperate Zone and the tropics. The Outback has no set boundaries. There is also no agreement as to its size, but it occupies practically the entire interior of Australia, an island-continent almost as big as the contiguous United States or Brazil. From Brisbane, Queensland’s chic capital, and after spending some time exploring the historic towns of Seventeen Seventy and Agnes Water, the southernmost gateways to the Great Barrier Reef, we began our journey into the Central Highlands and the Outback. Our road was named the Capricorn Highway, but it was a misnomer because it was two-lane paved at best, often turning into gravel or dirt in the blink of an eye. INSIDE THE OUTBACK Without any fanfare, we were in the Outback. One can drive for hours here and see absolutely nothing in all directions. It’s part desert, part greenery, flat as a griddle and about as hot in the

summer, and as remote as you’re likely to ever be. We were headed for Rubyvale, Australia’s gem capital. We stopped at the only gas station/restaurant en route, whose specialties included a dingo trap sandwich (meat, cheese, eggs, salad, bacon) and spaghetti on toast (canned pasta of any kind heated and poured over plain toast), an Aussie breakfast favorite. Another day’s drive from Rubyvale is the colorful tiny town of Longreach. This seemed like stepping back into the old Wild West with saloons, cowboys, and even a bona-fide stagecoach ride. The six-horse coach reached speeds of 35 mph over bumpy terrain. A bit rattled, we headed for a more gentle candlelight dinner cruise on the nearby Thompson River. PYTHON CROSSING We moved to tiny Winton, the birthplace of Australia’s unofficial national anthem, “Waltzing Matilda.” The python crossing occurred after we left Winton for an overnight at a sheep farm tucked away in the central Outback. The 50,000-acre farm, known as Carisbrooke Station, seemed like it was the last place on earth. Cabins have been set up in the bush to give guests the feel of life in the Outback. We backtracked to Longreach the next day for our short flight back to Brisbane and the long flight home, slowing for kangaroos, emus, cows, wallabies, and even a few termite mounds smack in the middle of the dirt roads. “Beats dodging road trains,” Katie said. “So what do you think of the Outback now?” n

OUT IN THE BOONDOCKS: Carisbrooke Station, located deep in the Outback, has a “School of the Air” where pupils phone their teachers each morning for assignments and mail their homeworks twice weekly. This is also a place where the nearest hospitals are a six-hour drive away. 56 I Mabuhay Magazine I June 2013

EL NIDO WINS AGAIN The Philippines’ top eco island resort group shows us once more how sustainable tourism can be done.

E

l Nido Resorts (ENR) in Bacuit Bay, Palawan, was recently recognized as a global trailblazer in sustainable tourism when it recently won the World Travel and Tourism Council’s (WTTC’s) Tourism for Tomorrow Awards in Abu Dhabi. Named the Community Benefit Award winner, ENR was cited for “demonstrating the power of tourism to address poverty alleviation, improve local livelihood and protect the cultural and natural heritage for future generations.” Composed of four eco-resorts in the islands of Miniloc, Lagen, Pangulasian and Apulit, ENR was recognized for employing and training the locals. In fact, 90 percent of the properties’ staff are local residents mostly from the municipality of El Nido. The awards, which are considered the Oscars of the industry, highlight the efforts of travel and tourism businesses and destinations around the world to successfully balance their commitments to profitability, to uphold environmental best practices and to benefit the local communities that host them. ENR, which is owned by Ten Knots Development Corporation was one of four winners chosen from among 133 applications from 46 countries.

Laurent Lamasuta, president and CEO of Ten Knots Development Corporation, which counts Ayala Land, Inc. and Asian Conservation as principals, related that ENR’s win could inspire other Philippine destinations and tourism firms to see that “a tourism business can be successful while embracing sustainable principles and contribute to the development of the local communities they operate in.” n

The El Nido Way 1. Up to 90 percent of the staff is hired locally. 2. More than 60 percent of ingredients are sourced locally. 3. Annual skills training activities are given to the staff. 4. Livelihood opportunities are given to women. 5. Be GREEN Training program outreach is regularly offered at local schools. 6. There are mooring buoy installations at public dive sites. 7. Environment-friendly farming techniques can be freely replicated by local farmers. 8. College scholarships are given to deserving children of local staff. 9. Watershed rehabilitation efforts are supported by guest donations. 10. ENR is the main contributor to the Ecotourism Development Fund of the municipality.

f you think Philippine treasures are to be found merely on land, think again. In between those islands are some of the best coral reefs in the world. Our country is blessed to be in the heart of the Coral Triangle, the geographic center of world’s marine biodiversity. It covers just 2 percent of our planet’s oceans and yet is home to 40 percent of the world’s fish species and 75 percent of coral species. These reefs are very vulnerable to climate change and play a key role in keeping our oceans alive. TREASURES IN TUBBATAHA The best dive site is my favorite one: Tubbataha (www.tubbatahareef.org), ranked among the top eight dive sites in the world. Tubbataha Reef National Park is a World Heritage Site. In 2008, the reef was nominated as one of the New 7 Wonders of Nature. Here, divers can experience the reefs’ dramatic underwater terrain, awe-inspiring biodiversity, and a plethora of sea life. On a typical weeklong underwater safari, you can spot the big five of underwater animals: sharks, manta rays, turtles, tunas, and dolphins. Nothing beats the thrill of seeing one of these majestic animals underwater. The Tubbataha diving season is just three months long, around mid-March to mid-June. At this time, diving conditions are usually optimum with clear skies, calm seas, and underwater visibility between 30 and 45 meters.

Shortly after MacArthur returned to the Philippines toward the end of the war, the entire Japanese fleet was in Manila Bay. In early September, American bombers sank 15 ships in the bay, and so the Japanese decided to hide over 20 ships in north Palawan. A majority of the fleet arrived in the Busuanga area on the evening of September 23, 1944. These ships anchored in-between Busuanga and the hundreds of small islands and inlets surrounding area, including the islands of Coron and Culion. Apparently, American intel on the Japanese fleet was excellent. Early the next morning, bombers took off from the USS Lexington, anchored off Leyte, and

flew over 500 kilometers across the Visayas. That day, the bombing runs sank over half the Japanese fleet. My top choice for wreck diving in Busuanga is the Kyokuzan Maru, which sits in 70–150 feet of water in northern Busuanga, close to the Club Paradise Resort. This Japanese freighter is huge; about 500 feet long from bow to stern. Like all the Palawan wrecks, a buoy marks the ends of the ship, so finding it is not difficult. A line descent takes divers to the top of the ship’s masts, which are completely encrusted with coral. Following the masts leads to the main decks sitting at around 70 feet deep. There are many open hatches and cargo holds to swim through. The play of light at deeper depths makes this underwater scene magical. Indeed, in the Philippines, our underwater worlds are as diverse and beautiful as our island cultures. Visit www.tessaprietovaldes.com or follow @tessavaldes on Twitter.

UNIQUE TRAVEL EXPERIENCE

FINNED FRIEND: Kasbah Boracay Manager Paula Rosales moonlights as a mermaid during a class offered by the Philippine Mermaid Swimming Academy. Soon, PMSA will offer lessons in Manila. Classes range from Intro, Snorkeling, Scuba Diving, Fitness, and Mermaid Makeover.

FANTASY FITNESS: MERMAID FOR A DAY IN BORACAY Look at this stuff, isn’t it neat? See why IRA INQUIMBOY opted to exchange her two legs for a fishy tail.

ee that picture above, ladies? Admit it, you wished to become just like her at one point in your life, especially after watching Disney’s The Little Mermaid. And now, you can! The good news: it doesn’t involve any deal with an evil octopus. But just like any dream, you’ve got to work hard for it. It starts with a warm-up to make those limbs ready for some serious action. Then, you wear your tail, which is made of a light, stretchy fabric with built-in shoes attached to the tail fin. But before you dive into the water (and lose your poise), have your picture taken first. Here, our mermaid instructor Normeth Preglo of the Philippine Mermaid Swimming Academy in Boracay tells us to pull back our shoulders and stretch our torsos up for that perfect mermaid portrait. Then, off to the water! It seems easy to swim like a mermaid, but in fact, it’s more like a workout— disguised as your dream come true. You’ll learn how to do the dolphin swim, the backstroke, and the

breaststroke—all while moving your legs as a single unit. This is the difficult part as it goes against your instinct to kick both legs alternately when swimming. Don’t worry because you won’t be brought to the deep part unless you’re ready. You can also stand on the sand but it’s a challenge because of the waves. If all else fails, you can count on the friendly instructors who will gladly pull you. And there’s so much more than donning a tail in becoming a mermaid. Rule number one: suck in air as if you’re sipping from a straw. “Never like a whale shark with its huge mouth!” cautions Preglo. And rule number two: when emerging from the water, tilt your face upward so that your hair won’t cover your face. But trust mermaids to come up with the most photogenic underwater tricks like blowing bubble kisses and handstands. And if only for the amazing memories of your underwater dream captured on videos and in photos, it’s all worth it! n

NEW DESTINATION | BATANES

STUNNING BATANES The idyllic islands of Batanes never fail to take LYNETTE LEE CORPORAL’s breath away each time she visits. If a picture paints a thousand words, then these photos that pop up on these pages will tell you that the country’s northernmost islands have so many facets that are quite surprising even for this tiny province. For everywhere you turn you are greeted by a different landscape. One moment you’re happily hopping about green, rolling hills, and another moment, you’re either staring up craggy cliffs or tripping over a beach filled with boulders expelled hundreds of years ago by a dormant volcano.

NEW DESTINATION | BATANES

NAVIGATING THE ROCKY ISLES 1. Bring extra cash. There’s only one ATM (Landbank) in Batanes, which sometimes goes offline. 2. Bring caps/hats and raincoats. The weather in Batanes is unpredictable at times. One moment it’s a sunshiny day, the next moment, it’s dark and stormy. 3. Power outages in Sabtang occur from 12 midnight to 6 a.m. daily. If you’re the type who needs to go to the loo in the middle of the night, then a flashlight (and extra batteries) will come in handy. 4. You can buy freshly caught flying fish and have some instant sashimi. 5. Be courteous, smile, and happily greet the locals. They will smile back and return the greeting. 6. Although the stone houses’ doors are always open even with no one is around, don’t enter without first asking permission. The same goes for when you want to take a local’s picture. 7. Batanes is a generally quiet place, so take care not to shout or play loud music especially at night. 8. When riding a boat to and from Sabtang, bring a barf bag and lots of candies to combat dizziness. Better yet, take anti-motion sickness pills. 9. Visitors are not allowed to pick seashells and stones from Batanes beaches as these are protected items. 10. Do not litter on the beaches. If you want to help, bring along garbage bags and conduct impromptu beach cleanups. 70 I Mabuhay Magazine I June 2013

NATURE AT ITS BEST: (FROM TOP) Batanes’ varied landscapes make for exciting discoveries at Nakabuang Arch in Sabtang Island, and Basco’s Valugan Beach and Vayang Hills WHERE TO STAY If you want to stay close to the town center, yet be close to the coast at the same time, then Batanes Resort is your best bet. Its newly refurbished villas dot the landscape that slopes into a protected marine sanctuary. Rooms are simple and clean, and you’ve got views of rolling hills and the sea. Though the rooms are furnished with air-conditioners, we guarantee you that leaving your windows open is better. You can let the chilly seaside breeze in at night without worrying about your safety. The only surprise: you can sometimes spot a grazing cow up the hill fronting your room. Where else can you see that?

LIFE GOES ON: (CLOCKWISE FROM TOP LEFT) Sabtang women are known for their skills at weaving vakul, a native rain gear; The Sabtang Lighthouse stands mighty and proud; Basco’s Shelter Port protects boats from the storm; Sumnanga fishing village’s sun-dried dorado

TRAVEL TIP If you want a stress-free trip around Batanes, contact Batanes Ecocultural Tours and Travel Shop at +63919 3695341 or email jpcataluna@ yahoo.com. Local guide Juliet Cataluna will take care of all your needs from transportation, accommodations, and tours. With her insider knowledge, she can offer you a memorable and authentic Batanes experience.

This land of lighthouses, hedgerows, and stone houses has often been likened to Scotland, Ireland, or even New Zealand. All three islands that comprise Batanes—Batan, Sabtang, and Itbayat—are so picturesque that it’s become a photographer’s paradise. If you’re a true-blue nature lover who doesn’t mind being stranded quite suddenly due to a sudden storm, then this is the place for you. Batanes will gently remind you to silence the chatter of your mind, and force you to stop and breathe deeply, leaving all your city-made stresses behind. Hike up and down the seemingly endless trails of Vayang Hills or get into a meditative mode stacking up pebbles at Valugan Beach. Test your endurance climbing up and down the stone steps of the Chawa View Deck or roll around in absolute glee on the hills of Rakuh-A-Payaman, the province’s so-called Marlboro Country where countless jumpshots by giddy tourists have been immortalized in

photographs. At the end of the day, if you’re staying at Batanes Resort (+63927 582-9078), take time to look up at the countless stars and be thankful for life itself. Batanes’ exotic eats will delight any certified foodie. Known for its garlic and red onions, Batanes is home to the tasty coconut crab, as well as dorado and flying fishes. A traditional Ivatan meal will have you munching on uvud, a local dish made from banana pith, flaked fish, and ground pork and formed into balls, as well as luñis, pork slowly cooked in its own fat not unlike the famed duck confit. But perhaps the best part of any Batanes trip is its people. Peaceful and soft-spoken, the Ivatans have lots of respect for nature and are a resilient lot. If you do visit Batanes one day, talk with the Ivatans and you'll learn a lot about life and how it should be lived. n

ILOCOS NORTE ANEW CRISTINA ARZADON lists new ways to enjoy Ilocandia.

T

here’s always something new to explore in Ilocos Norte, whether it’s off the beaten path or in a reinvented iconic destination. The town of Burgos, for example, is always on the tourist route because of the Cape Bojeador Lighthouse and the Kapurpurawan (White) Rock Formation. But this largely agricultural town also boasts an adventure park, locally known as Palpalokada and considered the Grand Canyon of the North because of its rugged, brownish mountainsides carved by nature. The adventurous lot can do horseback riding, biking, hiking, and mountain and cliff climbing here. Farther north in Pagudpud, you’ll find the only resort in North Luzon that has a kite and windsurfing center: the Kingfisher Resort. Expect premium lessons offered by professional international kite and windsurfers Fabrice Beaux and Benoit Plancheon. But if sports aren’t your thing, the resort is still a perfect place to relax. It’s got tastefully designed casitas and huts that face Pagudpud’s famed beach. Near Laoag is Bacarra, a historic town that, because of its location, has been largely ignored by tourists on their way to the more popular attractions in the province’s northern section. Unless the trip is prearranged, motorists would be missing the town’s “ground zero,” where the locals’ pride, the Bacarra belfry ruins, stands. Near the tower and next to Bacarra Church is a museum of religious and cultural artifacts housed inside the restored Saint Andrew the Apostle Convent. The once-abandoned two-story convent was given a facelift, thanks to funds provided by the National Commission for Culture and the Arts.

72 I Mabuhay Magazine I June 2013

Museo de Bacarra opened in November 2012, more than a year after it started collecting artifacts donated by residents. A section of the museum is devoted to the town’s religious icons and church relics, including baptismal archives that date back to 1702. And who can miss the iconic Paoay Church? This UNESCOinscribed World Heritage Site has got a new attraction: the “Jardin de San Agustin.” Also called the “prayer garden,” the Jardin de San Agustin (named after Saint Augustine, the town’s patron saint) was built in February on an area where a multipurpose building and the priest’s official house used to stand. The prayer garden opened just in time for this year’s Holy Week, and was designed by local landscape artists who used plants that are indigenous to Ilocos Norte. And for those looking for authentic Ilocano food fare, one can go to Johnny Moon Café, housed at the ground level of the La Tabacalera Ilocano Lifestyle Center beside the provincial capitol in downtown Laoag. Johnny Moon Café (the name was inspired by Ilocano artist and political activist Juan Luna) also serves funkier versions of classic Ilocano fare, from their signature dishes bagnet sandwich and poque-poque lasagna, to crispy dinuguan, chicharon flakes, tupig (rice cake) con tsokolate, and dragon fruit rolls. Another play on signature Ilocano treat can be had at the Gian’s RestoBar in Batac City: the famous empanada pizza, an original recipe that blends Batac’s original empanada ingredients from longganisa, grated papaya or mungbeans, and egg. n

NITTY GRITTY: Sandboarding pods can test your skills down a 20-feet slope, but for beginners, you can start off by sliding down the dunes while sitting on your board. Photos by Marianne G. Pasion

STOKED ON SAND Make way for sandboarding, says CRISTINA ARZADON. It’s the newest sports craze that is proudly Ilocano.

F

rom Tom Cruise’s Born on the Fourth of July to local film Ang Panday, the La Paz Sand Dunes in Laoag, Ilocos Norte, have had iconic movie exposures in the past. This time, locals are claiming the city’s famous mounds of sand as their playground for a unique sand adventure sport: sandboarding. It all started with sun- and sand-loving couple Tina and Reny Tan. From “dune-bashing” (riding across the dunes and conquering steep slopes), a love for the outdoors led the sports trailblazing, eco-adventure group Laoag Eco-Adventure Development (LEAD) Movement, which the Tans cofounded, to explore a new sand sport in August 2009. Reny created a board—similar to a skateboard without the wheels—made from marine ply board with an elastic band to hold the feet in place, and wanted to try it on the dunes. “The board was a DIY (do it yourself ) thing, built from scraps. He then went to the dunes, rode on the board and glided on the slopes—and it worked,” Tina recalls. She says they wanted to develop a desert sport similar to that in Dubai, which has an extensive desert cover. “The La Paz sand dunes are the only extensive stretch of sand that you can find in the country. We found the slopes suitable for sandboarding,” Tina says. The Tans have developed more sandboards and are offering them for hire to enthusiasts. “The new ones [are] lighter and more stable. They feature Velcrotype foot straps to fit better. We painted them with 76 I Mabuhay Magazine I June 2013

bright colors,” Tina says. Most riders are foreigners and local tourists including professional athletes from across the Philippines. With the growing interest in the sport, the city government plans to package the sport as a year-round activity and establish a system that would look after the desert’s upkeep. The Department of Tourism and travel operators help promote the sport by incorporating it as a package to their tour itineraries. For bookings or for more information, contact LEAD through Reny Tan at +63919 8735516 or +63917 8415155, or through Benny Arce at +63917 5230331. n

GETTING STARTED Sandboarding is an all-year round sport. But Reny says sandboarding can be done even during the rainy season because the sand is more compact and sturdy for the board to glide smoothly. On hot sunny days, the best time to sandboard is from 7 to 8 am and 4 to 6 pm. When the temperature is too hot, the sand is loose, causing the sandboard to sink. But rain or shine, it takes balance to ride the board and make that first glide on the sand slopes. If you’re a newbie, don’t worry—you’ll be briefed before heading to the dunes. Tina says they advise beginners to take their first ride sitting down. Other boards feature two handles on opposite sides, which were designed for a rider in a sitting position. Once they get the hang of it, beginners can take their glide standing with their feet strapped. “The cardinal rule is for riders to wear their helmets at all times when they go for a ride,” Tina says.

THE HERON (ILOKANO)

I

n the olden times, there was an ordinary fisherman. He went to fish only when it was raining. While he was walking to the river one day, he asked himself, “Why did God not give me big feet and thighs so I can reach the fishing grounds easily?” Then he reached the fishing area. Whenever he caught a small fish he tossed it away saying, “Why did God not make all the fish equal?” When he caught plenty, he went to a log nearby. He sorted his catch. Then a short man appeared near him. He asked him, “Why did God not make you big?” And the short man retorted, “Why are you not contented with the many things that have been created?” Then he disappeared. Shortly afterwards, the fisherman noticed feathers sprouting all over his body, his hands becoming wings, his neck and feet elongated. He became a heron and can be seen on the river edge looking for food. n

ed has been Dr. Gwendolyn Pang’s signature color, ever since her work with the Philippine Red Cross (PRC) began. For almost 15 years of hard work and dedication, she has been advancing the humanitarian programs of the PRC by actively participating in providing aid to the most vulnerable. As the youngest Secretary General to be ever appointed in the PRC, Dr. Pang is also one of the youngest leaders of the Red Cross Movement today. A registered nurse by profession, her passion for service began with her involvement in the Red Cross as a Red Cross Youth (RCY) volunteer. She became a regular staff member right after graduating from college. Because of her track record and vision for the PRC, the Board of Governors unanimously elected her as PRC’s Secretary General. Now, she works to ensure that the Red Cross remains the country’s

foremost humanitarian organization. But how does she keep up with the demands of the job? Dr. Pang says that she maintains a fresh outlook and a healthy body through proper diet, exercise, and with a little help from the most potent product of the Moringa plant (malunggay): Life Oil capsules. “Dedication, passion, and a healthy body should go hand in hand. It is for this reason that I rely on the power of Life Oil. As the willingness to serve comes innately, complete nutrients should also come naturally.” So next time you’re in need of an energy boost to keep up with those lifestyle demands, try this superfood product and see if it won’t recharge your own passions! n

I

t all starts with aligning your image with your personal element (Wood, Earth, Fire, Water, or Metal). With your ideal match, harmonize your internal energies with external ones toward good relationships, prosperity, good health, better career prospects, and fame. Here are simple steps. 1. KNow youR kua NuMbER

Finding your personal kua number—your spiritual number based on your year of birth—is key. First, get the last two digits of your birth year then add them together to get a single digit. For example, for a person born in 1968, get the sum of the last two digits of the birth year (6 + 8 = 14), then add the digits of the sum to come up with a singledigit number (1 + 4 = 5). For women, add 5 (or 6 for those born after year 2000) to this number (5 + 5 = 10), then again add the digits of the sum (1 + 0 = 1). Thus, their kua number is 1. For men, deduct the number from 10 (10 – 5 = 5). Thus, their kua number is 5. Those born after 2000 should deduct the number from 9, instead of 10. 2. LIFE UNDER THE SEA (2013)

It looks like a scene from a sci-fi alien invasion movie but this surreal photo is actually that of a Calamian Tagbanua man tending to cultivated seaweed, which he will eventually sell in Coron town in Palawan, Philippines. Taken with a Nikon D700 and using a 16-35mm lens by Cebu-based American travel and documentary photographer Jacob Maentz, this image is part of the Katutubong Filipino project, which documents the lives of Filipino indigenous groups. www.jacobimages.com

Flying Makes it Happen

T

his year marks the start of the 100th year of commercial aviation, which began on January 1, 1914, when Tony Jannus piloted the first recorded commercial airline flight, carrying a single passenger on the 23-minute air journey between Tampa and St. Petersburg, Florida. This historic event, occurring more than a decade after the Wright Brothers’ first flight, has been all but forgotten outside of the aviation community. In a span of 100 years, aviation has truly changed the way the world works. In 2011, the International Air Transport Association (IATA) commissioned a series of reports from Oxford Economics to understand the impact that aviation has on our world. The purpose was to quantify the benefits of aviation, particularly on jobs and in fueling economy. Globally, aviation is a catalyst for jobs and economic expansion, supporting some 57 million jobs and $2.2 trillion in economic activity. When seen at a national level, aviation is an important contributor to the Philippines’ economy. It supports Php 35.5 billion of economic activity in the Philippines—equal to 0.4% of GDP—and created some 123,000 jobs. And if we add in the impact of aviation-

92 I Mabuhay Magazine I June 2013

related tourism, the numbers rise to Php 192.2 billion—that’s 2.4% of GDP—and some 874,000 jobs or 2.5% of the workforce. Aviation continues to have a big impact around the globe. Beyond the economic benefits, aviation has a role in facilitating business, connecting cultures, sharing ideas, supporting economic development, and providing emergency response, while being dedicated to higher levels of sustainability. To highlight the benefits that aviation brings to our daily lives, IATA launched the “Flying Makes It Happen” campaign. It consists of six short videos and an in-flight flyer to highlight the involvement of aviation in our day-to-day lives that we have come to take for granted. The short videos were broadcast over CNN, and are also available as part of the short film program of PAL’s inflight entertainment. The video can also be viewed online at www.iata.org/policy/Pages/ aviation-benefits-videos.aspx. Be a part of this campaign and share it with your families and friends! More information on the benefits of aviation can be found at www.benefitsofaviation.aero. n

Famous Filipino dishes include lechón (whole roasted pig), longganisa (Philippine sausage), tapa (cured beef), torta (omelette), adobo (chicken and/ or pork braised in garlic, vinegar, oil, and soy sauce), kaldereta (meat stewed in tomato sauce), mechado (larded beef in soy and tomato sauce), puchero (beef and plantains in tomato sauce), afritada (chicken and/or pork with vegetables simmered in tomato sauce), kare-kare (oxtail and vegetables cooked in peanut sauce), crispy pata (deepfried pig’s leg), hamonado (pork braised in pineapple sauce), sinigang (meat or seafood in sour broth), pancit (noodles), and lumpia (fresh or fried spring rolls). n

The largest helicopter in the film is a Mil Mi-26 (NATO reporting name: Halo.) It is also the largest and the most powerful helicopter ever produced.

This is the first Die Hard film where Bruce Willis’ character does not kill the main antagonist.

At 97 minutes, this is the shortest film in the series after Die Hard 2: Die Harder .

The film features some allusions to the Biblical story of David. David, like Jack, slew the giant, then married the King’s daughter to become King. David slew Goliath using his sling. In reference to this, one of the giants uses a slingshot to fire stones at the city.

Ethan’s failure to recite the Charles Bukowski poem was actually Alden Ehrenreich having difficulty remembering the order of the lines and making Alice Englert laugh. He performed the poem perfectly in all other takes. But Director Richard LaGravenese liked the idea of a “Romeo” trying to impress a “Juliet” and screwing up the poetry.

The multi-platinum-selling group from Canada is back with their highly anticipated second album. Lead With Your Heart is The Tenors’ album in over two years, following a successful tour and performances along music legends Andrea Bocelli, Celine Dion, Sting, and Paul McCartney. The 12-track album features covers of classic tunes and pop favorites as well as music composed by the quartet. The Tenors put their own twists on familiar songs such as Elton John’s “Sorry Seems to Be the Hardest Word” and Barbra Streisand’s “Woman In Love” in Spanish. Following the success of their first album, The Perfect Gift, this second record will definitely please music lovers, already soaring to the top 3 in their home of Canada upon its debut.
