So much can be said for dining in NZ. We have fresh seafood and meat, we have local orchards and vegetables, we import the best from all over the world, we have so many resources at our fingertips and to top it all off we are really well priced. It is not until you travel that you realise how amazing our restaurants and restaurateurs are! From North to South you will find genius chefs creating delicious cuisine for us to indulge in. In this issue you will find great restaurants and bars, most of which we have dined in and enjoyed. A tip, if you do experience less than satisfactory service or cuisine do the restaurant a favour and tell them before you blast it over social media and trip adviser. We are a culture of criticism and it is bad. If I was judged each day for my work I would live in fear. Give them a break and ‘talk’ to the restaurant if something is not up to your standard. Congratulations to Nick Harris and Antoine’s restaurant who this year won the Parnell Waiters’ Race brought to you by Renault. It seems Parnell holds the title again! Past winners 46 and York, Paris Butter and Non Solo Pizza. Nick is off to Europe for a wonderful holiday from the House of Travel and he will run in the London Waiters’ Race and Antoine’s restaurants gets a Renault car for a year! Well done!

A Day Trip from Auckland on The Red Boats to

The Riverhead

The owners know a thing or two about fine dining. Pedro’s House Of Lamb was established by two veteran restaurateurs of the Christchurch dining scene, Pedro Carazo and Iñaki Sanchez. Everdure by Heston Blumenthal BBQ range the 4K. Cooking on fire is an ancient old method used all over the world. Everdure by Heston Blumenthal and the latest 4k barbeque have been inspired by the 4,000 year tradition of Kamado-style and man-made ceramic clay cooking, the 4k was developed with the appreciation of this technique. Heston offered an entertaining speech and said that we must considering appreciating our breath, the trees and other people more, our lives have become too busy through technology which is meant to save us time. It was related back to sitting around a fire and talking to your fellow man.

“With summer on its way I’d like to share some of my key tips on BBQ etiquette.”

BBQ Etiquette with Mr and Mrs Manners I recently had the pleasure of attending a function with Heston Blumenthal for the launch of his new BBQ range Everdure from Heston Blumenthal. Heston has created the best modern BBQ with the ease of quick starting charcoal to the convenience of gas. Let’s face it BBQ’s really are the ideal way to entertain in summer and Heston certainly has made them even easier with the latest technology and design aesthetics. With summer on its way I’d like to share some of my key tips on BBQ etiquette. I know you may be wondering what could there possibly be to learn about etiquette around the BBQ but believe me, you may be surprised how you can offend. Just because it’s informal and relaxed doesn’t mean to say you can lose your manners. Check in with invited guests to see if anyone is vegetarian. That needn’t put you off as there are a load of great vegetarian recipes you can do on the modern BBQ and of course seafood can definitely be cooked on the BBQ. Otherwise there are always lots of salads. •

When you’re a guest never take over the cooking of the BBQ. This is the biggest faux pas you can make. The BBQ is the domain of the Host and is to be looked at and not touched. That also doesn’t mean that you can offer your advice on how to cook the meat.

As a guest ensure you RSVP so the host knows you will be attending and can cater for you accordingly.

If you have been told not to take anything then ensure you still turn up with a bottle of something or a small gift. It doesn’t need to be expensive or cost anything at all such as flowers from the garden.

Make sure guests have a drink in hand before you start BBQing.

Ensure adequate cutlery is out, napkins and somewhere comfortable to sit. It isn’t the most enjoyable when you’re trying to balance your plate standing whilst cutting meat and holding on to a glass of wine.

Offer to help clean up at the end of the night.

Don’t overstay your welcome and don’t forget to thank your host.

COOKING TIPS •

Check the BBQ is ready for use by ensuring it is clean. Did it survive the winter? There’s nothing worse than having a bunch of friends standing around whilst you cook only to notice that your also cooking last years BBQ. Also ensure there is enough gas and/or charcoal for the night.

The right utensils are important as you don’t want to look unprofessional using rusty or dirty tools.

Remove the meat from the fridge approx. 30 min prior to cooking to give it time to reach room temperature.

Salt the meat generously but don’t pepper at this stage as it will burn the meat.

Just prior to the meat being fully cooked remove it from the heat and let it rest to ensure that the fibres of the meat relax. It will still continue to cook in its juices. I know some of you just want to get your teeth into some good meat in a hurry but believe me when I say that if you rest the meat after cooking it will taste a whole lot better and won’t be so tough.

“Three restauranteurs from across New Zealand became the first in the country to be honoured by the Italian government.”

When it comes to Italian cuisine, diners are all looking for the same thing: authenticity. In order to create a global standard, the Italian Government instigated the quality standard, Ospitalità Italiana, in 2007 to be awarded to restauranteurs and Italian food distributors and producers around the world as a mark of authenticity. In November this year, three restauranteurs from across New Zealand became the first in the country to be honoured by the Italian government. Non Solo Pizza (Auckland), La Bella Italia (Wellington), and Casamassima Italian Fare (Christchurch). In recognition of their Italian food and products, these three restaurants have been awarded the “Q” plaque of Ospitalità Italiana to display at

the doors of their establishments. The awards were presented by His Excellency, The Italian Ambassador to New Zealand, Fabrizio Marcelli, in Auckland on 21 November at the Made In Italy Trade Expo for 2018. Q&A with Corey Hall, Harwood Hall Winemaker Corey, the ‘Hall’ from Harwood Hall Wines reveals… When and where did you start making wine? My first job out of University was as a cellar hand at Matua Valley Wines in Waimauku working for Bill and Ross Spence. I was 20. As a young kid I had jobs cutting and grafting grape vines for Barry Soljan in his shed in Kumeu. He grew the rootstock and we would prune the varietals to go on to them from a vineyard at the bottom of Brighams Creek. I think that vineyard belonged to Ivan Selak? But the first winemaker in my family was my sister Bridie, she made wine out of the guavas and feijoas that we grew at out house in Taupaki. She was about 9 or 10 years old. Your 2018 Harwood Hall Sauvignon Blanc just won a Gold Medal in the New World Wine Awards….what is special about this wine? I love this wine, the grapes were very ripe and clean when we harvested them and we managed to create a Marlborough sauvignon blanc that is full of bright fresh fruit with a juicy crisp palate. Do you have advice for pairing wine and food? Be brave and keep trying new things, and don’t eat and drink too much. What is your favourite varietal? My mum brought me up thinking ‘variety is the spice of life’ so I like to enjoy all well made wines. What are the highlights, or the most glamorous parts of the job? Travelling and tasting our wines with our customers. What are the most challenging aspects? Long hours with wet feet working through the night during harvest, and competing against the big corporate companies that have more resources than we do.

You have travelled overseas making wine – which was your favourite place and why? I have been lucky to spend time in the Sonoma and Napa Valleys in California and a couple of seasons in Burgundy, but the time I have spent studying and working in South Australia (Adealaide, the Barossa, The Vales) is really special to me and I have a lot of my best friends living there.

and the winning waiter is…

The 2018 Parnell Waiters’ Race went off without a hitch on Sunday November 18th and had Auckland’s best waiters battling it out till the very end in what can only be described as a nail biting and surprising Grand Final! With more Auckland-wide restaurants entered than ever before… restaurants such as The Grove, Prego, Oyster & Chop, Depot, Woodpecker Hill, Blue Breeze, Non Solo Pizza and Antoine’s (to name drop a few), the Parnell Waiters’ Race this year was set to be competitive from the get-go and the supportive spectators were not disappointed. With Woodpecker Hill, Oyster & Chop, Antoine’s and Blue Breeze being represented in the final by their top waiters, it was anyone’s guess who would win the trip to London thanks to House of Travel Parnell, and the Renault Captur for their Restaurant of course, thanks to Renault NZ. The last race of the day had us all on the edge of our seats due to a false start from 3 of the 4 waiters in the race. After a review of video footage, and serious deliberation between the Judges, the winner on the day was Nick Harris, from Parnell’s own Antoine’s Restaurant.

Aaron Carson and Fran Mazza of Fang sum up their menu in one succinct phrase. They are “pulling the pin on a Sichuan flavour grenade”. The pair has friends from the southwestern Chinese province and were, therefore, privy to an authentic iteration of its food during many dinners together. “We were attracted to the rich and layered characteristics of Sichuan food. There are thousands of years of culture in [Sichuan] food,” Fran explains, alluding to a deeper understanding of its sweet, salty and sometimes sour undertones.

The daytime high-tea offering, called a Bobo Feast, is a banquet-style affair akin to that which would customarily take place in a Chinese Palace. From 6pm onwards, the restaurant transitions to a degustation-only dinner menu — anything less and they would be selling themselves short.
