Editor’s Letter At a recent family gathering in the middle of a ‘what are we eating’ type of conversation (which happens a lot in my family), my nephew said “food brings people together”. He said it with such enthusiasm like it was a brand new idea . A simple fact that I have always known but it made me think a bit more about the power of food. Sharing food with family and friends helps us to socialize and stay connected. But further to this it allows us often to share in another’s culture – eating Italian pizza ,Turkish hummus or English tea gives us an experience from another land different to that of our birth, opening our eyes to new horizons and ideas. Sharing food brings a wealth of benefits to our soul. Eating together and talking about the day is not only good for your well being but it allows you to participate in each others lives. Studies have proven that the Mediterranean lifestyle is linked to long lives and their culture promotes and enjoys cooking and eating together, with the older members often teaching food recipes and talking about the history of food whilst eating. This issue of NZ Best Dining Guide has a huge selection of cultures. Take inspiration in finding new restaurants and enjoying the journey with others. So there you have it – food is the secret to happiness. Be sure to invite more friends and family out to eat with you.

As you enter LOUIS, you are greeted by well-dressed wait staff, then your eyes begin to gaze around the room at the ornate decor. A huge, stunning Italian-made crystal chandelier takes centre piece in the room above French style sitting with dignified, comfortable, soft covered chairs. The highlight is the food and wine. Louis has twenty different types of Champagne, alongside a full bar and cocktails, plus craft and tap beer. This is partnered with craft seafood; including oysters 12 different ways, each made to perfection. The music is of Dean Martin and Frank Sinatra that you can easily talk over. It’s a beautiful place. By contrast, next door has something quite different to offer for afterwards. Christchurch’s new brasserie and bar is open from 10am until late every day and features a contemporary, European style, with a focus on locally sourced food and wine. As an inhouse restaurant to Christchurch’s Art gallery, the menu boasts a variety of dishes, from simple choices such as steak and chips to exotic selections like Tigers Milk, a Peruvian version of ceviche. However even the humblest dishes are sophisticated treatment, ensuring every bite is met with excellence. One will also notice a few controversial dishes (but in a deliciously good way) with ingredients that one would never think to put together; that is unless you were Christchurch hospitality king Tony Astle and his head chef Mark Wilson. Take for example the warm salad of four spice duck confit with artichokes, mushrooms, crackling with liver, date and tamarind vinaigrette, on a bed of baby spinach and mint. At first glance the flavour is questionable but at first bite, it’s heaven. Offering diners a mix of street food, truffles, burgers and oysters, and a pleasantly relaxed atmosphere, Universo certainly befits its name as a universal dining experience suited for all.

Tell me a bit about Ninety-Nine Reasons. Events are about storytelling and taking people on a journey. At Ninety Nine Reasons I believe their experience doesn’t end when the door of the venue hits them on the butt as they leave, but continues to resonate, reminisce and relive over the following months. Sometimes people have crazy ideas and think that you need to throw everything at an event….you really don’t. A good event is about the experience, good service, fabulous food, great wine, and good company. What inspired you to start the company? I had been working in the corporate arena for four years and absolutely loved it. I was then approached to be the Head of Events for an agency and it just wasn’t the right fit for me. So in one day I went from being on a lovely big salary to wondering what the heck I had just done!

I have an eleven year old son and as a single mother I have moments where I wonder if I am being responsible to be starting this company and not finding another events role on a salary. 2017 Parnell Waiters’ Race The 2017 Parnell Waiters’ Race is done and dusted for another year, and what a race to the finish line it was! The event, proudly sponsored by House of Travel Parnell, Southern Hospitality, New Zealand’s Best Dining Guide and the Restaurant Association drew a crowd from all over Auckland who came to Fraser Park, Parnell, to watch some of Auckland’s best waiters battle it out with one of them taking home the coveted title of “Auckland’s Best Waiter”. Harwood Hall: Taking Great Grapes and making Exceptional Wine

Harwood Hall’s award-winning range of wines is well-loved within New Zealand and abroad. They have, and rightly so, earned themselves a special place among Aotearoa’s classic modern wines. Created by their owners and acclaimed winemakers Digger Hennessy and Corey Hall, the range reflects the philosophy of the company - adventurous, down to earth and personable. Digger was born in Australia and graduated from the University of Adelaide with a degree in Oenology. After stints making wine in Australia and the US, he moved to Matua Valley Wines as winemaker, where he later appointed Corey. In 1998 Digger moved to Mount Riley, where he spent 10 years as Chief Winemaker before developing his own vineyard in Marlborough. Corey was born and raised in West Auckland. He trained as a winemaker with a chemistry degree from The University of Auckland and a postgraduate Oenology degree from the University of Adelaide. In 2006 Corey made the move from corporate winemaking at Matua Valley (part of the Treasury Wine Group) to launch his own brand Gem Wine with his wife Meg. In 2008 the boys joined forces to launch Hennessy Hall Wine Company which in part wholesales within the wine

industry and also produces their own brand Harwood Hall. Digger and his wife Debra live on the vineyard in Marlborough while Corey and his wife Meg live at the beach on the West Coast of Auckland. “As I live in Marlborough, I look after the growing of our own and lease blocks. Both Corey and I source extra fruit required from selected contacts we have garnered over our years at other companies. We discuss where we are heading with the style of each wine and we decide how to achieve this, usually over a beer. Sales wise it is all hands on deck, to move the product in an increasingly challenging marketplace.” explains Digger. Comparatively, Harwood Hall is a small company which means everyone is involved in all aspects of the business the growing, sourcing, making and selling of their wines.

“Winemaking is not a job,it’s a way of life” winter. And all the while, there is a never ending stream of jobs that need their attention from the bottling line to warehouse! “We utilise a modern contract facility to process our wine and have access to the latest technology and analysis to help us achieve what we are aiming for,” notes Digger. And it shows. Harwood Hall has been winning awards both nationally and globally every year since they started. This has resulted in much of their wine being exported to high profile international customers such as London’s The Ritz Hotel, The Connaught Hotel and the Dorchester Hotel, and Tokimeitē, run by world famous Michelin starred Chef Yoshihiro Murata who is one of the World’s Top 100 Chefs. Both Corey and Digger note that it is good grapes and a great vineyard that makes a great wine. They explain that the best wines are the ones that you do the least to, but nevertheless, ensure the making and ageing get you the most out of the fruit harvested.

“In amongst that there should be plenty of sports with our two girls, school pickup and drop offs, birthday parties, dinner parties, late nights, great meals, sunset cocktails and bubbles, adventures, probably a few tears, lots of laughs and catch ups with old friends. I’ll ride a few thousand waves and hit a few thousand golf balls. And you never know, I might learn a new trick or two?” adds Corey. It’s a busy lifestyle but it’s one that they both do well, continuing to produce wines that are not only award winning and internationally sought after, but also simply taste great. “Winemaking is not a job, it’s a way of life,” notes Digger. “When a wine comes together as you hope, and you see the enjoyment other people get from your product - it is always immensely satisfying,” says Digger. With such a strong reputation, Corey and Digger could easily rest on their laurels. However, Harwood Hall is only going upwards, with big visions for the future. With the growing season well underway and the 2018 harvest looming large on the horizon, there is no time to rest for these busty winemakers. Work in the vineyard is in full swing, tucking, thinning, and mowing, with one eye always on the weather. Corey and Megan with be travelling to England, Ireland, Sweden and Singapore in January to help push along sales of Harwood Hall. Then straight back into the vineyards and winery for Corey and Digger as the harvest kicks off in March, with probably not a day off until the beginning of May. Megan then heads to Canada for another sales trip, while the boys start blending the new white wines and getting the reds to barrel for

Gluten-free dining programme better for business Coeliacs across New Zealand are enjoying a bigger slice of our food scene, thanks to the growing success of a gluten-free dining project.

The Dining Out Programme (DOP), created by Coeliac New Zealand, has already been adopted by top restaurants, university residence halls and large food chains. More than 160 locations have signed up to the programme, which provides accreditation, training and promotion for businesses that can guarantee at least some meals are gluten-free. “While it’s been fantastically liberating for our community, it’s also delivering significant numbers of customers to the hospitality industry,” says, Coeliac New Zealand (CNZ) general manager Dana Alexander. For some coeliacs the presence of even a small amount of gluten from a crosscontaminated cooking utensil can cause real illness. However that doesn’t mean they don’t want to eat out, and now as more restaurants become accredited with

the DoP they can do so safely.” Alexander says demand for coeliac safe gluten-free food is growing, as prevalence of the disease increases and more people choose to avoid gluten for other health and lifestyle reasons. National food chain HELL Pizza experienced double digit growth of its gluten-free offerings after joining the programme but fine dining establishments are also realising the benefits of signing up. “When someone with coeliac disease feels safe eating out, they’ll bring their family and friends along too and that’s great for business.

She says while many restaurants cater for food allergies, mistakes are often made by staff who were inadequately trained and unaware that a slip-up on their part could cause major health issues. The programme provides an independent endorsement and a simple, online staff training programme to ensure gluten-free food is produced and served safely. Accredited businesses are listed on the CNZ website and will be promoted as part of its ‘GF Dining Out Club’ which is under development. The Dining Out Programme (DOP) While it is estimated that at least 1% of the population has coeliac disease, there is an increasing number of people deciding to follow a gluten free diet for other health reasons. This has resulted in an increasing demand for gluten free products, as well as gluten free options at restaurants and cafes. Even though most restaurants now cater for food allergies, all too often a mistake can be made by a staff member who is not aware of these health issues and the customer suffers for weeks because of it. It is a serious condition and we are thrilled to see that Coeliac NZ who are a not-for-profit organisation that supports people with coeliac disease, dermatitis herpetiformis, and those that follow a gluten free diet, launched a new program for restaurants to gain acceditation. The Dining Out Programme (DOP) is a training and accreditation programme for the hospitality and catering industry to ensure gluten free food is produced and served safely for coeliac and gluten free diners. The DOP provides education, training and support for the catering industry on GF best practice and it gives the customer an assurance that they can dine safely. Being an ‘accredited’ venue will provide reassurance to a huge market of NZ and international gluten free diners that the venue has made an investment in providing safe gluten free food, and their condition is taken seriously.

The Language of Ice Cream Auckland ice cream chef Gianpaolo Grazioli of Giapo has an answer for anyone who wonders whether ice cream has boundaries; his ‘Discombobulating Menu’. All these creations are inspired by every day comfort foods from around the world. This is Grazioli’s way of paying homage to foods we know and love by translating them into the language he speaks fluently and poetically: the language of ice cream. Grazioli has a love affair with the reactions - the emotions - we experience through enjoying different foods. Grazioli takes these feel-good foods and translates them into the language of ice cream. So we have poutine ice cream - ‘curds’ of ice cream made with savoury, earthy KauPiro cheese from Whangarei and caramel sauce on a bed of Gisborne Agria potato fries for example. In Giapo’s translation of arancini, creamy, crisp on the outside saffron rice cossets a cloud of Italian meringue, crunchy amaretti and silky ice cream. In one bite from the Discombobulating Menu, you take a magic journey to two places: it could be to a street cart in Mumbai, to a trattoria in Naples, an izakaya in Tokyo, or to an old-school Maori family gathering. The other part of the journey is to somewhere new, a place where ice cream speaks to you in a new and thrilling language - a journey to a Giapo state of mind.
