Editor’s Letter

Hello EYE Readers Grateful is a word I use often. It reminds me of so many things: the country we live in, my wonderful family, great friends, memorable experiences and happy moments. We are the blessed ones. We live at the bottom of the world in a country that gives us so much. Christmas is a time to be grateful for all of those things. I am spending my summer in the far North at our beach house. Our Christmas is always a traditional day with an enormous roast lunch. We usually have all the roast meats: beef, turkey, pork, lamb, and chicken, with all the trimmings. I cook pavlova, trifle, and traditional Christmas cake. It’s a decadent day with an excess of delicious cuisine. It makes me feel very blessed! But even though our country is rich in many ways there are so many families that suffer at Christmas time. So while you are preparing and shopping for your day, think about buying a little bit extra and dropping it in to the City Mission or your local charity or even to an elderly neighbour that may need support. We have had a nonstop year here at Multi Media Magazines. With the launch of our new publication Chinese Eye magazine and deadlines always around the corner, our team has worked extra hard and has achieved a lot! I want to thank our team for being so dedicated and creative. Every day is a good day in our office. As a team, we wish you all a safe and happy Christmas, make memories and cherish your loved ones.

Wolfram Langer, who grew up during the early days of Kryolan now heads the helm, along with his wife, Malgorzata Langer. He discusses Kryolan’s beginnings, it’s triumphs and the strong sense of family that is shared across every store.

Kryolan began in incredibly humble beginnings. Can you tell us more about what the company was like in it’s early days? Kryolan started three months after ceasefire in Berlin ceasefire, not peace. Germany did not have a formal peace treaty until 1992, and so was technically still at war. The first memories I have in the mid-50s, I was five and my father would let me play while he was working. I still remember the different sizes of the company, for many many years I used to know every single name of every single employee - now that is simply not possible! Kryolan was founded in Germany in 1945 - how does it’s roots and it’s beginnings affect the company today? Are there values that have stood the test of time? The values have definitely stood the test of time. We have remained true to the roots of Kryolan, they are very important to us. We keep the roots very much alive today, it started as a family business and is even more so a family business today my father, he only retired at 92 years old! We have employees who have only ever worked at Kryolan, and continue to work for 20 years, some even 35 years.


My two sons are also working in the company, as are my daughters in law. I never asked, it was always by their own choice. We are all about family, from our beginnings, to our management, to the way every store is run. Kryolan makeup has been used in famous movies, such as Hunger Games, Twilight, and Cloud Atlas. What is one of the more memorable characters created using Kryolan? Halle Berry’s transformation in Cloud Atlas was an outstanding makeup result. However, you must always admit that it is a creation of an outstanding makeup artist. We provide the tools alone. Without the creativity and the artistic way of doing it, we would be useless. But of course, the artist needs our product as well! Johnny Depp’s characters are always incredible as well, he is another famous actor who will only use Kryolan. Unlike many cosmetic companies, Kryolan does not test on animals. How important is this to the brand and the company? My father always believed that the best guinea pig he can find is a human. A mouse cannot provide the exact skin tolerance that a human can and he wanted the most realistic results. It wasn’t a popular choice, nobody seemed to care at the time but he felt it was the right way to go. A path that I am proud to say we have never left. Kryolan’s famous tagline is “makeup is a science” - how important is it to continually research and develop? It is part of life to continually research and develop, without doing so, you will not survive. I never stand still, technology does not stand still, science does not stand still. If you are not going with the times, creating and following what people need, you will eventually disappear from the market.

We have a R&D scientific team that are constantly working to help the film industry and everyone to create new products, we have a huge variety of innovative solutions that we are currently working on. So far, we have never run out of ideas. In fact, we have more ideas than we can handle! This is what I like to call a luxury problem.

owever, once the wedding comes together and the hard work has paid off, it all becomes worth it. We sit down with those who have recently undergone this journey to steal their best kept secrets to staying calm and getting through the wedding day.

What helped you avoid the stress on your wedding day? Planning in advance to avoid any last minute rush. It’s all the little things and those things being well planned that make the day so amazing and perfect. The goal should be to be able to feel like a guest at your own wedding. Was there a piece of advice that you wish you had not listened to? Gosh, this is a hard one because I had so many people give me good advice! Maybe that it’s more important to pick a venue that you love and from there form the guest list to fit the venue. I really loved our setting and our venue will always hold a special place in our hearts, but it did come at the cost of culling numbers and that’s something I really wish I could have done the other way round. If possible, create your ideal guest list and then find a venue to suit that number of guests! It’s the people that make up the day, not the building. Did you find it difficult to merge yours and your husband’s aesthetics? What was the hardest thing to compromise on? We didn’t compromise on anything. We did what we wanted to and had fun with it all. Our styles are very

similar so a meeting of the minds of look and feel wasn’t an issue - our planning sessions were a lot of fun. What do you wish you knew a year before you got married? That the actual day goes by in a heart beat so it’s really really important to slow things down and soak it all in - after all it’s a once in a life time moment. If you could give one piece of advice to a bride-to-be, what would it be? Don’t underestimate the value of having a videographer! We engaged the most amazing photographer who canvassed the entire night and the photos are gorgeous however, someone said to us a few weeks before the big day that we should film our wedding and unfortunately we didn’t get that organised and regret that now. There’s nothing like being able to relive the moment via film and also see it from the eyes of your guests. We have a few clips from friends filming via their phones so we are lucky to have these but would love to have listened to the person that told us we should find a videographer!

Mitch is pretty laid back when it comes to things looking a certain way so when it came to making choices for the wedding he trusted that I would always make a good decision by having his and my best interest at heart, but we have a rule we call the 10/10 rule and if something is really really important to one of us then we have to rate the importance of something out of 10 and if it’s a 10 then that’s it no more discussing - it happens so if he pulled any 10’s then for sure he would have had that “thing” no discussion. What do you wish you knew a year before you got married? I took everything as it came and I didn’t stress about anything, I enjoyed every minute, there isn’t anything I wish I knew a year before getting married. It was perfect.

We actually both envisioned a wedding that was simple and timeless, and we were both very happy with

That’s the advice I was given and it totally worked for me...it didn’t matter if it was raining or sunshine or my shoes were too big or small or whatever...it is about you and your best friend committing to one another for the rest of your lives! Own that, be present and enjoy every moment.

The pressure of their opinions can start to weigh on you. Don’t lose sight of what the day is really about. Make sure it is the celebration that you and your spouse want, as it is a day you’ll never forget!

Barcelona

IT’S AUTUMN IN NZ BUT SPRING IN EUROPE AND A GREAT OPPORTUNITY TO DON THE TRAVEL GEAR FOR THE LONG FLIGHT TO EUROPE TO SEE THE LATEST BRIDAL AND EVENT WEAR COLLECTIONS AND CATCH UP WITH OUR COLLEAGUES ON THE OTHER SIDE OF THE WORLD IN BEAUTIFUL BARCELONA.

T

hese are alcohol-free flights as one has to hit the ground ‘onto it’ as there is no time to reset time clocks or pander to jet lag. We arrive to find that once again as a Premium dealer we have the top spot in our ‘Barcelona home’ the Juan Carlos hotel from where we know exactly how to get to the various fares, suppliers, best restaurants and shopping precincts. As an added bonus Catalan food is imaginative and the Juan Carlos coffee spot-on for the coffee spoilt kiwis. The Gothic architecture of Gaudi in the Latin Quarter delights every time. We have the most stunning environment in NZ but Barcelona, through the incredible work of Gaudi has the most inspiring architecture. After a quick sprint around town it’s time for the shower, hair, makeup and ball-gown to board the coach for the catwalk show and dinner in the grand ballroom of the spectacular castle on the hill overlooking Barcelona city. Tourists flank the red carpet entry and cameras click as the 2000 clients ‘dressed to impress’ from all around the world pass the beautifully lit fountains to enter the

themed giant catwalk. Paparazzi everywhere furiously click the invited celebrities in the front row. This year we spot Whitney Port and are impressed that our seats are nice and close to view the collection on some of Europe’s most sort after models. Apart from the excitement and anticipation, another highlight of the evening is a speech from Alberto Palatchi giving an update on the latest developments within the group. This time he is flanked by his son and daughter who are now heavily involved in in the business in true European style. It would be fantastic to party into the night as everyone is certainly on a ‘high’ having just seen the gorgeous gowns, consumed the delicious food and sampled some of the Spanish reds but the kiwis have to be in great hall at 9am ready with clip boards, cameras ‘brain in gear’ to go through the process of elimination. What colour? What size? What veil? What hairpiece? and of course what cost as there are gowns featured that are the price of a good car! Thousands of gowns in the showroom are all


lined up like soldiers on the mannequins awaiting decisions as to what suits our New Zealand make the best. Sometimes several trips to the same mannequin are required to assert which is the most exquisite lace, which has the most stunning back, which one would suit the more sporty, the fuller or the petite body, which gowns are more beach / garden wedding and which is more cathedral or black tie dinner. The dinner that night is a much more quiet affair as everyone is pretty exhausted and we are aware that the next few days involve our other collections so there is no time to be a tourist yet. After a quick “recky” we are delighted to find a couple of new designers to add a further point of difference to our collection. Once we know what page we are on with Bridal Mother of the Bride and red carpet we are confident making our head gear and handbag selections for the upcoming season and then able to relax for a day hopping on and off the ‘tourist’ bus exploring Gaudi’s works

and a little art fashion and footwear along the way. As much as we look forward to the trips to Europe, we also look forward to seeing the Manukau heads as there is still nowhere else we would rather live than clean green New Zealand. Which we know for sure punches way above its weight in many areas. The kiwis are well respected by our colleagues on the other side of the globe who have made the effort to tour down under contact. Apparently, we have excellent taste, are environmentally aware, show great empathy and common sense and have a wonderful sense of humour. We are fair traders and our word is our bond so a “delight to do business with” according to our suppliers. It is wonderful to be valued by such talented and professional companies that are extremely passionate about what they do and have been in some cases for 50 years.

Keep Your EYE on... What's your favourite place to eat in Auckland? I’m a big fan of the Wiley Boys’ eateries - Miss Clawdy and Kindred, both down at Wynyard Quarter. Kindred is for when I’m in need of a healthy, everyday lunch; Miss Clawdy is when I need a treat: cocktails, fried chicken and an ice-cream sandwich.

What can't you leave the house without? I’m the stereotypical millennial I can’t leave home without my phone. However, I also resist technology, and take a notebook or diary with me to meetings to avoid distraction. I write down everything, from letters and lists to business plans and article ideas.

What's your number one hack for brides-to-be? I have to say the little white book - the wedding organiser and diary I created. Instead, I had one diary, one wedding magazine and one personal journal all of which I filled in sporadically. It was inefficient use of time, and unsuitable to take all 2 or 3 with me to

Where is your favourite holiday destination? My husband Blair is a pilot, so that’s a difficult question. Our most recent holiday was our honeymoon in Hawaii - the Four Seasons Resort Hualalai on Big Island was the most luxurious and relaxing resort I’ve ever stayed at.

What do you do to relax? What is that..? I’m an ‘active’ relaxer, so relaxation means going for a walk or taking a yoga class at TRUE Food & Yoga - recently opened in the old Hammerheads building, just a 10 minute walk from our house. Those 5 minutes of Savasanah are the only time I’m truly doing nothing. appointments, so the result was that they were all forgotten about, leaving me disorganised (and now without a keepsake of my engagement). As soon as I had the time, I designed the all-inclusive little white book with planning and record pages, a 12 month countdown and checklists.

W

hen it comes to weddings, a date and a venue are often the first decisions. Many factors are taken into consideration, and people seek a venue that’s romantic yet can serve all the needs a wedding reception requires. Koko, from The White Rabbit on the Park, works with couples to create their dream wedding, using the rustic-chic setting of the Victoria Park venue.

What do brides often worry about most? Brides do worry. A lot. About almost everything! However, as a wedding planner it’s my job to alleviate their stress and I can honestly say we do that exceptionally. Having said that, there are certain things that brides worry about that we can’t regulate. Like the weather no matter how many rain dances we do we just can’t get a handle on it!

What is your favorite part of planning weddings? I love absolutely every aspect of wedding planning but if I had to narrow it down, I would say creating the design is my favourite part. Working on the various elements required to create an overall aesthetic while combining this with a client’s personal style and requirements is always so rewarding.

D

otted along Northlands gorgeous east coast beaches and bays are sites with exciting stories which link the Māori back to their Pacific roots. The names are often the same as those found in French Polynesia and the Cook Islands. Places of special significance to me are the Rangaunu harbour, Great Exhibition Bay and Houhora harbour. Rangaunu, a name for its abundance of shark, early missionaries marvelled at the organisation and discipline shown by Ngati Kahu chief, Te Waha Popata, as he controlled the yearly shark hunting expeditions. Toike, bronze whalers, ururoa, hammerheads, kapeta, school shark in the thousands were all on the menu. In January after the new moon, the cannon would fire and canoes sliced through the tide. Nothing was wasted and dried shark was a staple for winter bellies. The name Rangaunu originates from the Pacific and was bestowed upon this harbour when early Māori built fishing weirs and captured fish in the channels as the tide receded. Each bay or harbour has its own proverb. Within this shark rich harbour the saying is “He iti pioke no Rangaunu, he au tona”. The dogfish may be small but it survives against the massive tides of Rangaunu, otherwise explained by locals as “not the size of the dog in the fight but the size of the fight in the dog”. Beyond the harbour is Great Exhibition Bay or otherwise known as Te Rakautukaha. Within the bounds of safe fishing

the ahii or akuaku, Pacific migratory tuna are to be had. The Bay is also known as te ara kaiponu, kidnappers path. Young men would paddle or sail across to the Karikari peninsula from Houhora in search of hine purotu, hoping to find a maiden willing to elope. If lucky they would flee from the shadow of Puwheke, the prominent hill on the eastern side of the harbour entrance and take refuge at Tohoraha, Mt Camel, guardian of the Houhora harbour. We can thank Captain Cook for introducing camel into our local place names. However Puheke and Tohoraha, mean octopus and whale, these names concern ancient Pacific tales of pet whales and the mischievous octopus. Houhora harbour is a gem and standing in the entrance channel is the rock Tokoroa, definitely not big enough to be an island. Slightly further up the harbour however is a sandbank which is well known to the local tribe Te Aupouri as the final battle site of their warrior ancestor, Te Houtaewa. He was the tribal champion famous for running the 90 Mile Beach with breath taking speed, taking on all challengers but met his fate in Houhora harbour. Some say this is the origin of the harbours name, the slaying of Te Houtaewa others however, say it is the spread of the albatross feathers; both versions referring to a time long since gone. Fortunately however the stories remain, a cultural relish for visitors wanting to embrace these coastal jewels.

t Kevin’s Arcade has stood at the heart of Auckland at 183 Karangahape Road since 1924, presenting itself as a counter-culture focal point for many decades. Now under the new ownership of the Icon Group, the arcade has just completed an 18-month, $2.5-milliondollar restorative redevelopment sympathetic to its celebrated style and character. The historic landmark now boasts a magnificent new melange of food, fashion and giftware vendors to entice locals and tourists alike. Resplendent in new paint, tiling, infrastructure and tenants, the refurbishment of this pleasantly eccentric atrium has been carefully considered. Originally designed by architect William Arthur Cumming, its beautiful bones have been respectfully untouched. Original bevelled windows border shopfronts, while intricate wall and ceiling panels pleasingly draw the eye up to what is likely one of Auckland’s largest skylights. Looking into the arcade from K’Road is a beautiful juxtaposition in itself. Gaze down through the staircase to the basement and you’ll see the lush oasis that is Myers Park. Then tilt your head back up to eye level to view nothing but high rise buildings and blue sky views that make up


Auckland’s metropolitan skyline. The resulting vista is at once weird and wonderful. Magical, even; like you’ve stepped into an in-between world. Whether by coincidence or plan, the Alice in Wonderlandesque view upon entrance successfully represents the diversity you will find within the arcade. Presenting the perfect antidote to mega-mall fatigue, the lofty piazza is an ideal location to park up on a Saturday morning, with its heady mix of old and new to serve every shopper. Sit down for coffee and grab a breakfast bite at cafés Bestie or Fort Greene, before browsing though each of the curated stores. Where once upon a time they stocked fur coats and pianos, each shop has a history so rich you can feel it through your fingers as you trawl through the clothing racks. If you’re quite the fan of yesteryear, pop into pin-up boutique, Rita Sue Clothing, which specialises in vintage dresses for glamorous occasions. Or for a more street style aesthetic, try Royal Minke for its novelty print tees, shorts and gift items. When you have an hour or two to spare, let yourself slip down the rabbit hole at either of the arcade’s two well-loved book stores, and read through the countless spines discussing every topic known to man. If you find yourself in the same spot at dusk, you wouldn’t be the first. So why not finish the day over at Acho? The Japanese tapas bar serves delicious dumplings and steam buns that are just asking to be washed down with their premium Japanese beer, wine and sake selection. Then, if you really don’t want the fun to end, stick around for live music and a glass of red at the infamous Wine Cellar down the stairs. t is a day that has huge significance in our Kiwi culture and many will have fond memories of barbecues, backyard cricket and pavlova. We are lucky in Auckland to have a myriad of cultures, as almost every corner of the globe is represented in our growing population. While there are many similarities in how we all celebrate this holiday, every culture brings with it unique traditions. We talk to people from the USA, France, China, Fiji and India to learn more about different traditions across the world. Perhaps it will inspire you to try some new traditions this year - Merry Christmas from all of us at Eye.

Max Larbiose- Cable Bay Auvergne, France

A

s a chef, Max Larbiose spends Christmas in the kitchen. However even before cooking became his profession, his Christmases centred around the kitchen. Growing up in France, his family would come together for a Christmas meal very different to what you’d find at a Kiwi Christmas bbq. It’s not unusual to find amuse bouche, fois gras, oysters, and pheasant at a traditional Christmas feast. Perhaps the biggest childhood tradition Max can remember is the anticipated arrival of “Père Noël”. They’d leave their shoes near the fireplace in hopes of having them filled with treats if they had been well behaved. No milk and cookies left out either - instead Max’s parents would have them leave out a glass of wine, which they’d sneakily drink once he and his siblings had gone to bed! Nowadays, Max can be found in the kitchen of Cable Bay, where he’s Head Chef. Each year he tries to incorporate something special into the festive meals planned for the day. This year guests will be welcomed with a glass of bubbles upon arrival, an Ora Kind Salmon and Spanner Crab entrée, Angus Beef fillet main, and Strawberry Gazpacho and Christmas log for dessert.

ijian-India Ashika Raj sheds some light on how her extended family in India celebrates and shares some of her own family traditions. Ashika explains the diversity within India and that Christmas traditions vary from state to state, mainly due to the diversity of religions in India. Christians in India celebrate Christmas by attending church, gift giving, spending time with family, enjoying a delicious feast and decorating their homes, much like Christmas celebrations in other countries. Popular decorations in India are burning lamps and mango leaves to decorate homes. Banana trees are also often decorated as Christmas trees. People also make nativity characters from clay to display in their homes. Being Fijian-Indian, one of Ashika’s family traditions is to enjoy a meal by preparing a lovo. “A lovo is the word for feast cook cooked in the earth, (similar to a ‘hangi’, in New Zealand). This is a very popular

tradition at Christmas time for Fijian Indians,” Ashika explains. “The food is wrapped in foil and then in banana tree leaves and cooked with hot stones in the ground. The food is made up of lots of south pacific ingredients such as fish, Palusami (a spinach and lamb dish made with coconut milk, garlic and herbs) and different types of meat and vegetables such as cassava, taro and kumara. The texture and taste of the food is deliciously unique, it has a smoked barbeque taste but the meat is very tender and falls off the bone.” Another family tradition that Ashika remembers fondly is leaving any Diwali decorations up until Christmas. “As we are Hindu and the Diwali festival is usually around November we tend to decorate our house with fairy lights and all sorts of beautiful coloured decorations, so we’ve started a family tradition by keeping these decorations up until Christmas. Most years we even have our Christmas tree up at Diwali,” she says.

kykiwi’s Janet Chen tells us about her family’s Christmas traditions in China. Her parents (pictured) spent last Christmas in China and she explains that all of the shopping malls are decorated beautifully during Christmas. The word “apple” has similar pronunciation to “Christmas Eve” in Mandarin,” says Janet. “As a result, people love to eat an apple at Christmas Eve! It is a tradition unique to China”

Growing up in Portland, Oregon in the USA, Wendy enjoyed her Christmases surrounded by family and delicious food. Wendy has fond memories of waffles topped with maple syrup and bacon for breakfast followed by a full lunch with all the trimmings. Turkey with cranberry, homemade sourdough, mash with gravy, cinnamon rolls - and of course, dessert to match! No Christmas was complete with her Mother’s apple and pumpkin pie, gin fizzes and jello salad. For Wendy’s American Christmas, the day was all about family and good food.

o matter how you say it, the fact is that childhood heart disease is the most common serious birth abnormality in New Zealand and across the world. The number of heart babies born each week is 4 x the number of children diagnosed with a childhood cancer, a significant fact that is little-known. Not a day goes by when a child does not undergo open heart surgery at Starship Hospital’s Paediatric and Congenital Cardiac Ward or brand new parents don’t face the prospect of caring for a chronically ill child. Families facing this huge challenge need support, they need someone nearby who can listen and offer some practical advice, and they need to know they are not alone. This is where Heart Kids come in. Heart Kids is the only organisation in New Zealand dedicated to providing lifelong care and support for children, young people and families impacted by childhood heart disease (CHD). We walk alongside families whose worlds have been turned upside down by the news of their child’s heart defect or by the ongoing need for medical intervention and surgeries and the upheavals to family life those can bring. Bowie Macmillan (pictured) is one of these children. At 4 weeks old he was rushed to hospital where he was diagnosed with Tetrology of Fallot – one of the 40 different

Congenital Heart Defects that children can be born with. This meant he had a hole in his heart and there was an obstruction from his heart to his lungs. At only 3 months old he had to undergo open heart surgery. This was just one of the 450 open heart surgeries that are performed on children or babies every year. For Sarah, Bowie’s mother, this was a terrifying time and a time when she was so thankful for the help and support of Heart Kids. “They were there by our side every step of the way and during those days in hospital it was so amazing to see a friendly face and have a shoulder to lean on”. Bowie is currently doing well and is a bubbly vivacious 20-month-old. However, his journey is far from over. He will face continual medical check-ups and observations and perhaps more surgery. Once a heart child, always a heart child! Heart Kids receives no government funding and all the support and services provided are done so by the generosity of kind individuals and organisations across New Zealand.

Waiheke Wonder MAL CORBOY HAS BEEN DESIGNING KITCHENS SINCE 1988, AND HAS ONLY GONE UP SINCE THEN. BEST KNOWN AS NEW ZEALAND’S MOST AWARDED KITCHEN DESIGNER, MAL HAS GARNERED INTERNATIONAL REPUTATION FOR HIS EYECATCHING INTERIORS AND CUSTOM FURNITURE DESIGN.

A

long with creating award-winning kitchens, Corboy’s specialist set of skills extends to designing bathrooms, custom furniture and full interiors for both residential and commercial properties. His work can be found across the globe, from a recent whole home fit-out in Trinidad to bespoke kitchens and bathrooms in New Zealand, Australia and the United States. More recently, Mal was commissioned by the owner of a new build home right on the beach at Onetangi on Waiheke Island to design their kitchen, scullery, bathrooms, powder room, laundry bedheads and wardrobes. “The client had seen my work, purchased my book and asked me to create a relaxed beach feel, but with a sense of style and fun,” he explains in his latest book, ‘Mal Corboy Kitchens’. He goes further to explain the unique inspiration for the concept of the kitchen. “The concept for the kitchen was surprisingly based on a small beach pebble that the client had picked up. He loved the dark grey and white streaks of the pebble,” says Mal. Instantly, Mal knew that the kitchen and scullery benchtops would be made using Petra Grey marble. The owner of this Waiheke home loved the way Mal used colour in previous projects and wanted a similar ambiance in his kitchen. 30

As such, a deep blue was used in the glass while a resene black white lacquer was used for the cabinets combined with oak stained grey/brown to add a sense of refinement. Included in the home is a one-off space, the powder room. The curved room is tiled in Bizzara soft blue mosiac tiles with a ceiling LED strip lighting and a Corian freestanding vessel, which Mal esigned specifically for this space. The bespoke vessel is called The Onetangi Vessel and Coaster and this is the start of several items Mal will be offering for purchase on his website - malcorboy.com. “The inspiration behind the design was to create a beautiful sculptured bathroom vessel that can be used in a powder room or bathroom that has an organic feel,” Mal explains. “It is made from Corian® which has a lovely warm feel but also very durable. irsty and her husband Shane had just moved to the Bay of Plenty and were actively looking for a business to buy when the opportunity to become the owners of the Tauranga franchise of G.J. Gardner Homes arose. With a mutual love of the industry and the desire to be part of a highly-revered brand, it was the perfect fit for the duo. The timing was perfect, it all fell into place, and they have now lead this business for nine years. Initially part time in the business, Kirsty soon became full time and has recently taken on the role of sales manager. She firmly believes that happiness breeds happiness and success breeds success, and is passionate about giving people the opportunity to grow, learn new skills and expand beyond the parameters of what they thought possible. he Mt Eden based seafood and char-grilled meat specialist, turns two in January and is making a name for itself offering well priced and high quality food – while employing Auckland’s only Living Wage restaurant team. “We opened Ika to prove that fresh seafood and freerange meat can be affordable and sustainable” owneroperator, Laila Harré says. The Auckland eatery selects whole fish every day and encourages diners to share from its tapas and large plate menus. Laila describes the menu as “stolen from the beachside cuisines of the world” and customers often mention the meal reminds them of a sunset dinner in Croatia, Cape Town or the Caribbean. Laila, who grew up in Suva, Fiji, takes great joy in welcoming Pacific people to the restaurant’s heritage dining room. Ika has introduced Pacific Island favourites too - like kokoda (Fiji style raw fish) and a fragrant rourou soup made with taro leaves and a hint of nutmeg.

“So many Aucklanders have come from places where sharing food is the norm. And our more traditional customers are constantly surprised by the explosion of flavours you get from a whole fish compared to a mean and over-sauced fillet.” Head chef, Jess Dowlmans who, alongside Laila, leads the Living Wage team, brings youthful passion to the kitchen. Laila’s background in social justice make improving hospitality working conditions a priority for her. “As a family we decided we didn’t want to run a minimum wage business. Kitchen and front-of-house staff have just as much right as anyone to a living wage which is currently $19.80 an hour. You know that when you eat at Ika you’ll be supporting decent work.” Ika also regularly hosts a variety of events, including music, magic, speakers and current affairs discussions. These popular evenings are open to everyone and Laila says they have a fabulous club atmosphere.

Ingredients • 40g Butter • 100g Flour • ½ tsp baking powder • 100g castor sugar • 1 Egg • 1.5 Tbsp. milk • 1 Vanilla Pod • 1 lemon – Zest Method • Melt the butter until nut brown • Sift flour, baking powder and sugar • Whisk egg, milk and vanilla together • Combine both mixes together • Add butter and lemon zest and rest – 1 hour • Place into a piping bag and butter the moulds then fill them • Cook at 170 degrees C for 6-8 minutes until golden brown.

he opulent cocktail bar meets these expectations, and more, before one even enters It’s large wooden door. The perfectly placed bronzed Pineapple door knocker is the only hint to what lies inside the old Victorian building in the heart of Parnell. Inspired by the affluent lifestyle of the ‘80’s, Pineapple’s decor is carefully considered extravagance with plush velvets, chintz leather, smoky wood and golden accented design filling the space. The walls are a dark green and feature a large floor to ceiling mural of the countryside. If you are lucky, you will be there when their talented jazz pianist is playing, which only adds to the luxury of the place. Pineapple has an ethereal feel of a modern throwback to Auckland’s first nightclubs. Despite the casual culture of New Zealand, don’t expect to gain entry with jandals and hoodies. Pineapple comes with a rare dress code, including collared shirts for the gentlemen. Moreover, the overuse of cellphones (particularly selfies) is frowned upon. With the impressive cocktail menu, your IPhone isn’t likely to be missed. The real standout of the venture, the menu features classic and modern cocktails, as well as an impressive top shelf and wine list. The cocktail menu includes a bright red whiskey indulgence that is encased in an ice sphere. The bartender, suitably donned in a tie and waistcoat, will place your drink in front of

you on a silver coaster before using a tiny rubber hammer to crack it open. For something a little different, try the absinthe and olive brine cocktail. The salty and punchy nature is perfect for those seeking to change things up. Despite being inspired by the ‘80’s, Pineapple is distinctively modern. Creators Dana Johnston and JP Schmidt, are not new to the dining scene having found success with both 46 & York and Meadow. Pineapple is perfectly suited to Parnell, a district with a rich history that is experiencing a revival in recent years. It has already proven popular with a cult following after it’s quiet opening in spring which is only likely to grow as more people discover it over summer. Pineapple will be a clear go to for those yearning for it’s heyday and for the younger generation seeking somewhere different. If you are after an experience, head to Parnell Rd and look for the bronzed Pineapple - just don’t forget to dress the part.

estaurants across Auckland competed for the title of Auckland’s Top Waiter and Loran Paulich from Paris Butter restaurant in Herne Bay took out the title! Paris Butter opened in early 2016 with a roar and has fast become the local dining and social Herne Bay hotspot. Known for its fresh take on classic French cuisine, Executive Chef Nick Honeyman has created a bistro menu that has been praised by Viva as a “gallantly Gallic sensation”, while another review described it as “damn near irresistible” and “a knock out”. It’s easy to fall in love with the menu at Paris Butter, with guest favourites such as ‘Cloudy Bay Clams a l’escargot’, ‘Gin Cured Salmon’, ‘Sirloin Steak Frites with Paris Butter’ and ‘Dulce de Leche Crème Brûlée’. The wine list features both New Zealand and French wines that Chef Honeyman has personally curated during his summers spent living in South of France.

Congratulations to Loran Paulich, who claimed top prize thanks to Renault New Zealand. What made you decide to enter the Parnell Waiter’s Race? Seemed like a fun way to spend a Sunday afternoon with waiters from all around Auckland, getting to know the competition and catching up with old friends. The price obviously had a small part to play in my decision to partake as well as getting the word out there for our beautiful restaurant Paris Butter and amazing wait staff! What’s your favourite part of working at Paris Butter? I have worked in loads of restaurants and I can definitely say Paris Butter has one of the best atmospheres I have worked in. The team is super friendly - thanks to the General Manager Irene - who was the one in charge of putting together such an amazing team. Of course, it’s also a great honour to witness Nick Honeyman’s great talents

in the kitchen everyday and awesome to work at a place where you can be super proud of every dish that leaves the kitchen. Do you have any advice for next year’s entrants? Wear running shoes! My shoes were definitely part of a winning mixture alongside, of course, experience in working in crazy busy bars. The shoes I believe were so brightly orange, it blinded the opposition to the point of dropping their glasses! At the end of the day it’s all about the fun of the event and meeting new people of the industry.

A Century of Growth

IT WAS A LEAP OF FAITH THAT BUILT A LEGACY. Josip Babich

C

roatia in the early 1900s held little in the way of a future for the Babich brothers. They met a man who enthused about the opportunities to be had working in the Kauri gumfields of the new country of New Zealand, so the three oldest Babich brothers set sail for the South Pacific – followed a couple of years later by 14-year-old Josip. Digging for gum didn’t pique Josip’s interests, so he started planting grapes. His first batch of wine came about in 1916 which he sold to his fellow gumdiggers under the name Babich Bros. And the legacy was born. The following years saw the foundations built of Babich Wines. The first 40 years was sheer hard slog and determination, with the brothers purchasing some scrub covered land in Henderson Valley which they developed into orchards and vineyards. Josip’s sons joined the family business in the 1950s, expanding it into Hawke’s Bay and Marlborough. The Babich’s were quick to adapt to the tastes of New Zealand wine drinkers and were always at the forefront of technological, viticultural and winemaking developments. The appeal of NZ wines started being recognised internationally, and Babich Wines was launched onto the world stage. The past 100 years has seen Babich Wines grow from a one-man operation into an international award-winning, enduring family business. Exporting to more than 50 countries, they now have 12 vineyards in New Zealand’s finest wine regions with three generations of family winemaking experience. They have received multiple top awards for a range of their different drops, and 2015 saw both Peter and Joe Babich inducted into the New Zealand Wine Hall of Fame, with Joe made an Officer of the NZ Order of Merit. And they remain 100 per cent family owned - as Peter Babich once said, “These days everything seems to be for sale, but we are not. We love what we are doing.”

Turkey Sauce • 1 litre beefstock (fresh) jelly • 300 mls Rosso Vermouth (or sherry) • 135g Cranberry Jelly • 2 T chopped fresh tarragon • ½ T freshly grated orange peel • ½ tsp freshly ground black pepper • 2 cloves finely chopped garlic • 4 T tomato paste Put all ingredients into a pot. Bring to a boil. Reduce heat and simmer to reduce by one third. Taste for salt. If not to required thickness, mix a little cornstarch with red wine and thicken. If beefstock is not of good taste you may add a little enhancer (powdered stock), be aware of the saltiness!

Kumara Mint Currant Cous Cous Stuffing • • • • • • • • • • •

1/3 c (70mls) olive oil 2 c (350g) fine diced onions Grated (fine) zest of 2 lemons 2 T chopped preserved lemons 2 bay leaves 4 c (900mls) chicken stock (or vegetable) 80g butter 500g cous cous (or Israeli cous cous or Corn cous cous) ½ c chopped parsley ½ c chopped mint ½ c (75g) grated kumara

Place oil, onion, currants, lemon zest, preserved lemon, bay leaf and kumara in a pot. Saute for 15 minutes without browning. In another pot heat stock and butter to just boiling point. Stir the cous cous into oil and currant mix. Add stock and butter. Bring to a boil, stirring constantly. Place a lid on pot and let stand for 10 minutes. Stir in mint and parsley when cool.
