can not believe this is it the end of the year 2015 and I am writing our summer issue editors letter. It’s certainly life in the fast lane in media publishing, we literally don’t stop all year and all a sudden it’s the end. We are all looking forward to the summer holidays and some well earned time out. My perfect holiday is reading magazines in my Lujo hammock, clay bird shooting, fishing, swimming and eating delicious home-grown produce. To have time to spend in the kitchen and cook is also a treat, and of course eating with loved ones and just having ‘time’ to spend with them is a gift. This issue is packed with great ideas for travel, perfect gifts to buy, delicious new restaurants to try and an awesome Northland section. Woman falls asleep while having a Brazilian Wax

id this really happen? Yes, Lindy from Beauty Treatments and Training said a lady did fall asleep while having a Brazilian wax, although this lady also admitted to having a slightly higher pain tolerance than some, there are ways to reduce the discomfort associated with waxing especially when using sugaring for hair removal. Traditional waxes do have additional ingredients to help sooth the skin and recommendation is made to apply talcs and pre-wax oils to help put a barrier between the skin and wax product as the wax tends to adhere to the hair and the skin causing removal of live skin cell layers when wax is removed. Therefore the need for products you may have seen promoted for burned, lifted and irritated skin after waxing. Is there an alternative? Absolutely! While relatively new to the market, it’s not totally new, in fact it’s ancient. Sugaring has been used for centuries to remove unwanted hair on the body, so it also has a long history of safety but what else does it provide? here is a new Latin Dance that is taking the world by storm, and it is intriguingly different from the well known rhythm and style of Salsa. Brazilian Zouk is an exotic mix of a dance style that has evolved from the old lambada, using other Brazilian partner dance steps to make it a more accessible dance for all to try. They originally took Zouk music from the French Carribbean which has a slow sensual beat. Zouk music now includes far more current music genres such as soft lyrical, r’n’b tunes, dub step to even classical tunes. With music in Portuguese, French and English this dance is very current and is an internationally accessible ‘steamy hot’ partner dance, danced in over 150 cities worldwide! es, you really can literally double your sales very quickly. In fact, I’ve had clients that have more than doubled their sales within a very short time. How? Imagine instead of closing 1 out of every 5 or 9 or (X) number of opportunities with potential clients, you or your team now consistently close 2 or more. That’s at least a 100% increase in sales! And that sort of increase in conversion rate is often quite easy to achieve. Now imagine what doubling your sales revenue would mean to your business. I mean really think that through for a moment. To make this happen, your first step is to understand the various conversion points of your sales function. Conversion points are places where your potential clients or customers make decisions. For example, do they decide to call when looking at your website? Do they agree to an appointment when they’re called? Do they choose your

products or services over your competitors? Increasing these conversion rates is achieved by using wording developed specifically for each conversion point. You see, it’s the right wording, whether written, over the phone or in person, that makes the potential client take the next step more than any other factor. It does take a little time and effort to get it right. I use several very effective methodologies to help my clients to create phrasing that increases their conversion ratios and it’s always worth the effort. Now what should really excite you is that there is usually more than one conversion point in most sales processes.That means a small increase in each one has a compound and cumulative effect on total sales revenue. In other words, when we double the amount of people who call after looking at a website, all other things remaining the same, we’ve doubled sales.Then when we also double the conversion rate of those enquiry calls onto

the next step we’ve now more than doubled sales. If you’re currently converting 1 out of, let’s say 5, then 2 out of 5 is quite doable – and remember that’s for each conversion point. It is staggering how much money business and sales people miss out on as well as how much money is wasted on ineffective marketing and half-pie customer engagements. Start today by looking at the various decision points where potential sales are slipping through your fingers then quantify how much each of those misses would have been worth to you. Add them up, per week, per sales period and per annum. You’ll be amazed at how much money it totals up to. The good news is, it can be fixed if you don’t settle for the status quo. It’s worth it. his is a young man that is certainly one to watch. Current New Zealand Reigning Slalom Windsurfing National Champion for both the open men’s and youth division, Laurence Carey is rising steadily in the ranks in the world of windsurfing and his story is one to follow. In twenty sixteen, Laurence Carey will be the first New Zealander to compete on the PWA tour for over ten years, with the intention of bringing back the success New Zealand once had with the likes of Bruce and Barbara Kendall winning Gold at the Olympics and coming 2nd and 1st respectively on the PWA tour. Over the next three years Carey will work with one goal in mind, “crowned world champion”. Since he can remember the water has played a large role in life. As a child, he took for any excuse to get amongst the water, initially becoming a member of the Royal Akarana Yacht Club and learning to sail. Although he spent many hours playing land-based sports, he found that he was increasingly gravitated towards the ocean. It was from here his passion for Windsurfing was ignited.

Continuing to prove his skills in the national ranks, within three short years he has proceeded to move from world ranking number 11 to number 1. But Carey’s approach to the sport is much more than a competition. Windsurfing to this young man is a job and a lifestyle. Now aged 21, he teaches windsurfing, joined Team10 and is on the board for the Windsurfing New Zealand Association. Having taught hundreds of people, Laurence particularly enjoys teaching the youth because as he puts it “that is where any sport grows from”.

Recently voted onto the Windsurfing New Zealand Association, he now holds the position as Secretary, the youngest ever to have been appointed this role and due to this position he is in contact with over five hundred people weekly. It’s fair to say his profile within the sporting world is growing. And with that said we believe Laurence Carey is set to be a New Zealand sporting hero. n 1990 Serious Shooters started out as a small retail shop attached to one of the owners professional photographic studio. The owners decided that there had to be a better way to retail firearms in New Zealand; you either had fishing and hunting shops who were only partially interested in firearms, or specialist gun shops, who were only interested in lining their own pockets. The service from the two options were patchy, where only certain goods were available and only the ones they decided for you. Thus, Serious Shooters the Gunshop was created in 1993. It didn’t matter, at the time, that you used too many interchange players and had the two competition points for the win deducted (costing you a place in the finals). Love was blind. It was a rollercoaster ride, that first year of our love.There was a time when you were hopeless but you came back and won six on the trot. I saw only the six wins. ith the glitterati of the racing world and the social set coming out to play on course at Ellerslie, the New Zealand Bloodstock Karaka Million is an international showstopper. The biggest Twilight event of the new year, the New Zealand Bloodstock Karaka Million is a raceday event at Ellerslie you don’t want to miss. In January each year, the hammer goes down at the New Zealand Bloodstock National Yearling Sales in Karaka and hundreds of finelybred one-year-old horses are sold to new homes in the hope of becoming the next ‘big thing’ in thoroughbred racing. The New Zealand Bloodstock Karaka Million is a pre-celebratory event for the horse racing fanatics, from all over New Zealand and the world. It is a chance to relax before the big sales the week following; so join the fun, have a flutter and you could go home a little richer than you arrived. Chill vibes and high fashion will be on course throughout the afternoon, but no party is complete without some tunes to bring you and your crew to the dancefloor. After the fast-paced six races are played out, the HALO Band will take over from our resident Ellerslie DJ and play all your favourite songs well into the night. The top 14 qualified youngsters from the 2015 New Zealand Bloodstock National Yearling Sales will race head-to-head in New Zealand’s richest race, the $1,000,000 New Zealand Bloodstock Karaka Million. With General Admission only $5 per person and hospitality options including the Champagne Mumm Garden Party for $45 per person and the Karaka Clubhouse for $60, this has got to be one of the most affordable high-class parties Auckland has to offer. never tire of sharing stories about Tai Tokerau, Northland. Given that almost every nook and cranny was named by early Maori explorers and navigators there is no shortage of material. We call the east coast Tai tama-wahine, the female tide, offering calm harbours and islands to shelter from Pacific weather. However not so on the untamed west coast, known as the rugged male tide, Tai Tamatane. This wild sea batters the Hokianga harbour entrance. A fearsome sand bar causes the sea to churn, local Maori call it Kaiwaka meaning to devour vessels! Intrepid game fishermen cross the bar in pursuit of the elusive bluefin or yellowfin tuna and marlin. The local town Opononi buzzes with excitement when this rare catch is brought

back to land. Smoked marlin, yummy! Along this agitated coast one finds the kauri trees earning it the name Kauri Coast. As these mighty sentinels are above the land they can also be found buried underground. Prehistoric kauri trees preserved in peat for over 50,000 years. One can only imagine the ferocity of the natural event that snapped these trees and buried them well before humans arrived. Today this ancient timber is sought after for furniture. The swamp kauri stumps often contain kapia, kauri gum. Used by Maori as fuel for torches, the soot was also relied upon for tamoko, facial tattoos. From the late 1800s Croatian immigrants known as Dalmatians dug kauri gum from the ground around Northland. Later they developed large farms and our wine industry. Some of the men

married indigenous women. Thus many families like my own are a mix of the Tarara/ Dalmations, and local Maori. Recently members of the Maori tribe Te Roroa from Waipoua forest, home of our largest kauri, Tane Mahuta, took me to see swamp kauri. It is on coastal land at Waikara, owned by tribal members. No excavation was necessary. Gnarled stumps and logs protrude from sand and peat. Wind and weather has exposed their ancient form giving them a petrified aspect. Te Roroa is the tribe located between Dargaville and the Waipoua forest. One of their sacred sites is Maunganui Bluff, a traditional boundary between the tribes of Hokianga and Kaipara harbours. It rises 450 metres and through the rare coastal canopy one can see the top of Mt Taranaki near New Plymouth.

Nearby is Maringinoa, a coastal peak, revered by northern Maori as the resting place of Tohe, eponymous ancestor. These sites comprise part of Ara hikoi Aotearoa, our national walking access. It is a path which offers amazing views of lonely beaches and the roiling Tasman sea. Occasionally one will encounter Te Roroa families using their customary rights, picking toheroa, a rare seafood delicacy for special occasions. Sorry, not available to the general public! The local bushmen and elders of the Te Roroa tribe are modest and do not blow their own trumpet. However a visit to Waipoua forest and catching up with their local tourist guides is a bonus for travellers to Northland wanting to experience the rugged and uninhabited Kauri Coast!

A Night in Russell’s Best Kept Secret...

ith Russell being a hop, skip and a jump away from Auckland it’s a great destination for a weekend away or that last minute escape. We were fortunate enough to spend a night in one of Russell’s premium villas,Tahapuke, to sample what this hideaway had to offer. The Property As we approach the gates to the property, the villa itself is wonderfully hidden, giving no glimpse as to the beauty which awaits. Walking down the winding path the first thing which grabs our attention is the beautiful private beach at the front of the property – with the aqua coloured, serene water it’s hard to miss.

Greeting us as we enter the door is a chilled bottle of local Chardonnay and box of hand-crafted chocolates – together with the perfect setting to enjoy them in. The property itself has a wonderful large open plan kitchen, dining and living area (with three living spaces to choose from). All are luxuriously appointed with contemporary decor and furnishings and opens out onto a large decking and a portrait of stunning sea views. There are three bedrooms; all complete with TV, plus expansive windows and doors opening to your own terrace and of course the fantastic water views. All are fairly even in size - meaning that you don’t have to fight over who gets the master.

Things to do Itâ&#x20AC;&#x2122;s very easy to sit back, relax and zone out to the sound of the waves, however with access to your very own private island a ride over there is a must! Fortunately guests have complimentary access to both a dingy and kayaks so off we go. We opted for the lazier choice of the dingy (donâ&#x20AC;&#x2122;t judge us!) but for the more active types the kayak also provides guests with the wonderful opportunity to venture across the bay. Nearby fishing or sailing charters are also available, providing ample things to do. Guests also benefit from a 5 acre backdrop of native bush cascading down to the beach, which is not only incredibly beautiful but also stemmed in history; serving as a turangawaewae (or standing place) for Maori Chief Te Keemua and his people. Two Maori Pa sites are also located at the very top of the property. As the sun beings to set, the pink colours surrounding the property are picture perfect as we head out to dinner. We make the 5 minute scroll to the town centre, head to the Duke of Marlborough for a sumptuous meal and toast ourselves to our own private piece of paradise.

Wharepuke is a Complete Destination!

ive acres of award winning subtropical gardens are the setting for Kerikeri’s newest Sculpture Park which recently opened in December 2015. Wharepuke (“house on the hill” in Maori), is a family run site which contains a lot of history and is a must see when visiting Kerikeri. Complementing the Sculpture Park Wharepuke also offers 5 boutique cottages, an art gallery, a Non-Toxic Printmaking studio and a café. Passed through generations, Wharepuke has developed over time, which each individual having their own influence on the site. Originally bought in 1938 by Mr. Stan Booth, Wharepuke was initially used

as an orchid growing Tangelos and Chinese Gooseberries. Robin, the eldest son of four sons (who have all since made their mark on the property) moved back to the family land in 1993, he started a subtropical nursery and began the planting of the five acres of gardens for the public. When Robin retired from the Nursery business, his daughter Tania moved back to the family property after an extended O.E with her artist partner Mark Graver, who introduced the Non-Toxic Printmaking Studio. With so much to offer, in one location we wanted to find out more, so this issue we wandered the grounds of Wharepuke to learn more about the historically rich site

Éclairs with Blueberry Frosting and Crème Patisserie

For the éclairs — 250ml water, 80g butter, 150g flour, and 3 eggs. Add the butter and water to a pot and bring to a boil, whisk in the flour and cook gently until the mix no longer tastes like raw flour. Add the eggs one at a time and mix well with a wooden spoon until they have been incorporated. Place the dough into a piping bag with the star nozzle and pip onto a tray lined with parchment paper. Bake at 200°c for 25 minutes.

For the blueberry frosting — 1 cup butter, 3 cups icing sugar, 1 cup blueberry puree, and 1 tsp vanilla paste. Cream butter until pale, add icing sugar and beat until smooth. Add the blueberry and vanilla and fold together. For the crème patisserie — 435ml milk, 1 tsp vanilla paste, 3 yolks, 70g sugar, and 50g flour. In a bowl add the vanilla, yolks, sugar and flour and whisk into a paste. Bring the milk to a simmer over a medium heat. Add the paste to the milk and stir until thick. Pass through a fine mesh sieve and refrigerate. To serve — Fill the éclairs with the crème patisserie, pipe on the blueberry frosting and serve. We have added a torched meringue to this one as an added component; this is a standard Italian meringue recipe if you choose to add it.

However, consuming this delicious indulgence, does have it’s consequences; bloating, digestive issues, lack of motivation, tiredness and worst of all disappointment from a lack of satisfaction. This day and age has seen once traditionally made foods turn into fast, cheap consumables where essentially everything from handling ingredients to handing the finished product to the customer is made ‘fast’, without the love and care needed to create a great dish. The fast food industry is all about cutting corners with time, cost and traditional methods. Today’s standard fast food pizza is made with fast dough, allowing the pizza base to be cooked under a shorter period of time. This results in a pizza base that consists of raw gluten, which despite what your taste buds might say, leaves the digestive system in a uncomfortable state - whether you’re gluten tolerant or not, gluten is hard to digest. At Dante’s Pizzeria, a traditionally made sourdough base that’s friendly to all tummies, including those with gluten intolerance, provides the perfect base for tantalisingly delicious pizza made with only the freshest ingredients. Dante’s pizzaioli prepare the sourdough using a time consuming fermentation process. This process produces important nutrients

such as iron, zinc, magnesium, antioxidants, folic acid and other B vitamins essentially making the pizza base healthier and easy to digest. Additionally sourdough bread produces a lower surge in blood sugar due to being low in glucose, essentially this means the consumer will have a significantly lower insulin response - which is great for diabetics. My Balinese BBQ

Chicken Satay

850g Diced Chicken Thighs trimmed of excess fat 1 stalk lemongrass ¼ Thumb fresh ginger 1 Garlic clove ¼ tsp Tumeric ¼ Ground coriander ½ tsp Ground cumin 1 Tbsp Dark Soy Sauce 2 tsp Fish Sauce ½ Tbsp Lime Juice 1 Tbsp Soft Brown Pinch of Salt

y family moved to New Zealand when I was five years old so I’m definitely a Kiwi, but I was born in Bali and after a trip back there this year I was inspired to somehow bring the two cultures together this Summer. Nothing says Kiwi summer more than firing up the grill and BBQ is surprisingly widespread in Bali, so it just made sense to put them together.

Blend everything except the diced chicken in a food processor, marinate the chicken overnight then skewer (soak your skewers in water).

Lamb Ribs w Balinese Glaze 1 kg Lamb Ribs For the rub: 1 Red Chili 1 Shallot 1 Tbsn Tumeric ½ tsp Shrimp paste ¼ tsp Coriander seed Pinch of Grated nutmeg ½ Stalk of lemongrass 2 Tbsp Vegetable oil For the BBQ Sauce: ½ cup Kechap Manis (sweet soy sauce) 2 Tbsp Tomato Ketchup 2 Tbsp Oyster Sauce 2 Tbsp Lime Juice ¼ cup Coconut Water Blend all the rub ingredients to a paste in a food processor, rub over the lamb ribs and marinate overnight. Place the marinated ribs in a small roasting dish with a half cup of coconut water, cover tightly with foil and bake for 90 minutes at 170c. Chill the precooked ribs, brush lightly with bbq sauce and grill gently on the bbq, brushing more sauce as needed.

Snapper w Coconut Watermelon Sambal

1 Whole Snapper, scaled, gilled and gutted and brushed with coconut oil 100gm Watermelon, cut into small cubes 2 Shallots, thinly sliced 5 Red chilies, chopped 3 Kaffir Lime Leaves, thinly sliced Juice of 2 Limes 2 Tblspoons coconut oil ½ Cup of fresh grated coconut Coriander, mint and Vietnamese mint leaves 1 Tsp black sesame seeds Place the snapper on the hot plate of the bbq until colored, flip over with a fish slice and cook through. Mix all the sambal ingredients in a bowl and serve with the sambal spooned over the fish.
