Editors Lett er FROM TEENAGE YEARS I’VE HAD A LOVE FOR MAGAZINES. I LOVED THE OPULENT GLOSSY FEEL, THE NOISE OF THE PAGE AS IT TURNED AND THE INSPIRATION FROM THE PHOTOS AS THEY BOUGHT A STORY TO LIFE. A MAGAZINE WAS SOMETHING GORGEOUS TO HAVE. I USED TO READ EVERY SINGLE WORD ON EVERY PAGE AS MY HEART FLUTTERED AT THE MAKE UP AND FASHION IDEAS AND I ALWAYS SAVED EVERY ONE! THEY WERE PRECIOUS TO ME. IT IS A LUXURY TO READ TODAY AS YOU HAVE TO MAKE THE CHOICE TO TAKE THE TIME TO SIT DOWN AND READ. Our society searches the internet now for everything from games, to work, to shopping and of course even relaxation - but should computers and relaxation go together? We have everything from calm apps to online meditation, yet surely having a device to help you relax is an oxymoron in itself? I see the internet becoming a dangerous place. There is always going to be something that makes it unsafe - blue whale and momo are prime examples. We have to constantly be aware of what link we are opening and I find I am always having to prove to the computer that I am a human! Of course we must also warn our children of the dangers. It’s like walking through a minefield of hidden bombs, and now that we are all addicted to our computers and phones, we are being told ‘less screen time’. I truly think its time for us to wake up and take on a different perspective, which brings me to my point - reading! Read books, read magazines, read, read and relax. It activates a different level of brain activity and you truly feel replenished and inspired afterwards.
Eye magazine has had a makeover this year and we are now a fashionable bi annual with sections on beauty, fashion, lifestyle, wellbeing, culinary, design, motoring and finance. We hope to inspire and motivate you but also provide you with some form of learning and a nice uffy rela ing read Our fashion shoot was held at the Grand Windsor hotel on Queen Street. It is a stunning location that is very central and boasts a fabulous bar and restaurant. The dress we featured is the stunning Carolina gown from Modes, a gorgeous piece of art! Ina Feni is our model and she is also the co owner of the Proper Pizza brand. See pages 32 to 37. Our 8th What Women Want 2019 is being held at the Cordis again and is sponsored by Bentley Auckland. If you have not yet been make sure you book your ticket, It’s an outstanding day of champagne, shopping, a 3 course lunch with wines from Clarks Estate, a fashion show by Shen and Silver fox models, a charity auction for the Heart foundation and catching up with friends. It’s one of my favourite days of the year.

Dancing with the Stars New Zealand CAROLYN TAYLOR HAS WORKED IN FRONT OF AND BEHIND THE CAMERA IN HER YEARS OF TELEVISION AND SHE’S JUST FINISHED SHOWING HER MOVES ON DANCING WITH THE STARS NZ. WE SAT DOWN WITH CAROLYN TO SEE HOW SHE GOT ON. How did you get along with your dancing partner? Johnny is fantastic. Luckily if we had met outside of this crazy Dancing with the Stars bubble, he and I would be great friends. We are ying and yang and our energies complement each other (aside from when he’s been working with me for hours on one thing that just doesn’t stick!) he is chilled, funny, serious when necessary and doesn’t get ustered by much. What was your favourite style of dance? The most comfortable was the Cha Cha. It’s fun, it’s irty and not a serious acting dance’ so you’re able to really focus on the movement of the body. What was your biggest worry about doing the show? Funnily enough I didn’t really focus on worry’ during the e perience. I was having so much fun learning how to dance There is always an element of the unknown’ in a competition like WTS so if anything; I guess that’s where the worry’ would sit. I just wanted to raise money for Cure Kids, represent myself authentically and give my best to onny and the - oor. I’m sad we didn’t make it that far but man, I’m incredibly proud of our performances each week. It takes real guts and courage to put yourself out there like that, and we loved every minute of dancing for the audience and the process behind getting a dance ready for the telly. Will you continue to dance? I absolutely think I will. How and where and what for? Not sure yet, but I’m already talking to Jonny about lessons. I’ve never felt so free and happy and vibrant, dancing seems to light up my soul and that was a totally une pected and magical thing to e perience through being a part of the show. What’s next? Good question! I do have to say, being back on TV lit me up. I didn’t realize how much I missed it aybe I’ll have a look in that direction ne t but I also love my job in Marketing and Communications for The Parnell Business Association it’s so interesting and diverse. There are a lot of possibilities of what’s ne t’ and I’m the kind of person who believes you shouldn’t limit yourself to just one thing. Do what makes your heart sing as much as is possible-while being responsible enough to be able to pay your bills.

A celebration of 20 years of ‘taylor’. This has meant a walk down memory lane and many smiles as we touch base with many of the people who have enabled us on our ‘taylor’ journey. I’m also working on building our new international brand, Symetria, which is designed and fully made in New Zealand yet sells to the world from Paris. It embraces the northern hemisphere and will celebrate another exciting season selling from Paris.
Latest thing you bought? My new Subdued Sweater – I love the versatility of the curved front, as I can tuck half in or wear it with the scoop at the back or front. What has been your most extravagant purchase? I just had to have this beautiful ivory Uma Wang dress to wear to an event.

We splashed out on facials and massages, which at the time was so extravagant, but the memories we had will last a lifetime.

This year actually marks 12 months since Storm comes full circle and returns to where it all began, to me, so it’s a very exciting time! What’s your favourite quote? “We learn from failure, not from success” I think its important to remember that it’s ok to fail, don’t be embarrassed to fail and make mistakes, they are things that often bring us most success in the end. What can we look forward to from Cecilia Kang Couture this year? I will be doing a solo show for New Zealand Fashion Week 2019 and my theme this year is ala y travagan a’. That’s a tricky one because most trends make a come back sooner or later, but I wasn’t a fan of the pleather trench coat trend last year, let’s hope that doesn’t make a come back any time soon! Latest thing you bought? Earrings – I love jewellery to wear with my PIA pieces. I have a massive earring collection. Obsessed.
Champs Elysees when I was last in Paris and I’ve worn them to death. I’m going back in June this year so will probably buy another pair because I love big sunnies with my PIA outfits. What’s your favourite quote? “Everything happens for a reason.” What can we look forward to from Pia Boutique this year? We have monthly drops which happen at the first of every month, 16 brand new styles with limited stock. We have also just launched PIA tees, which are exclusively designed. We do have some new styling coming through and a few other exciting things in the pipeline but we can’t reveal just yet so you’ll have to stay tuned!

It also helps being able to assess si e and shape at a glance so that the correct si es go into the fitting room – it’s incredible how many people actually don’t know what si e they are. It’s also interesting that 80% of what we sell is actually selected by us not the customer, so a bit of e perience clearly helps. We look carefully at peoples colouring, even when it comes to shoes and jewellery. We make sure that everything is age appropriate. The secret is making the client look and feel great and this ensures they and their friends, daughters, colleagues return, hence the longevity of the business.

Any part of it is is sublime. What do you do to relax? Hiking with my husband is one of my favourite ways to relax. A few hours walk up to a beautiful spot overlooking the ocean where we can sit and enjoy the view and have a sip of something special I’ve stashed in my backpack – bliss. What are you passionate about? I’m passionate about wine and talking about it in an approachable way. I take wine seriously but I think we should talk about it the way that we drink it, socially and without the alienating wine speak that some wine professionals rely on. What’s on your bucket list? That was a game changer for me. Like many women, I was incredibly tough on myself. When opportunities arose, if I didn’t tick every box in the skill set needed, I would think I couldn’t do it. After the course I realised I had quite a strong list of skills.” What stereotypes would you like to see challenged about older women? “I do feel mother nature plays a part in how people perceive older women. I think with our body clocks changing in late 40s and early 50s, society takes that as its cue … “well if Mother Nature has said enough, well enough then”. But for women in their 40s, who are hitting their stride, in the prime of their life, in their element – it’s the me time, growth time, more social time and often more money time. Mother nature be damned. Women themselves have to get
on board with questioning what beauty is? For too long we have seen beauty as an impossible 10/10. I myself see beauty in so many people when I walk out the door. But so many people don’t see it in themselves.” Have you seen a shift toward using mature models? Professionalism in this business counts for a lot, such as turning up on time, being prepared and getting the job done. My models have real life experiences, are aspirational, they have lived and they are relatable because of that. What inspired the brand New Zealand Secret? We were inspired by the beautiful landscape of New Zealand. How does TruSculpt ID work? TruSculpt ID employs a unique form of low frequency monopolar radio frequency energy that penetrates deep into the adipose tissue and is able to treat the entire fat pad. How is the procedure performed? An initial evaluation is performed to frame the desired treatment areas. They spent two years traveling all over the world, place after place, plane after plane, ship after ship; a contagious virus planted deep within them both. In the past, Ina would travel two-three times per year with family, friends or even alone sometimes but had never travelled with a partner.

Ina shares with us ‘I believe that if you want to know not only yourself better but your partner, travel with them. When you travel, you are out of your comfort zone, so you get the chance to see how the other half behaves in situation that are out of their control. You learn the do’s and don’ts faster than living together!’ Also this was Ina’s first time living with another person other than a family member. Sometimes she found herself thinking how ama ing it is, that two different beings with no ties of blood could co-e ist in a relationship without losing their own identities. Ina goes on to share, ‘Don’t get me wrong, I know that most people would say that’s love but come on, love is not always the answer when it comes to a longterm relationship. There are so many other elements needed in it, especially if both of them work in the same environment. Love mi t be t e c err on t e top but t e foundation fi ured in m case is to respect the other, knowing that they do their best and can have a hell of a lot of fun. From the start of our relationship, we agreed that we would work hard but also appreciate the company of each other and enjoy life.’
It’s this promise and est for fun and passion for travel that has taken the pair to countries and 94 cities and they tell me they have only just begun. But how do they do it you say with two busy businesses to run and all their money invested. Well Ina prides herself on doing research and finding out all the best deals and looking in places you might not have ever thought of She tells me you don’t need to be e tremely rich to enjoy regular travel and you don’t have to go to the most e pensive hotels or choose the supreme suites, as you’re often not in them for long ou also don’t have to travel on the most e pensive airline or only during the peak season. Think outside the square. Ina tells me to also not rely on company taglines like owest airfares guaranteed’ or massive search engine websites. es, they might have the cheapest on that day or quite often they don’t but they usually come with very limiting conditions leaving no e ibility. oing into a travel agent allows agents to link ights on one booking through their wholesale network, saving a lot of money rather than purchasing individual tickets.

? Most beautiful place on Earth: For a long time, I was vouching for Bora Bora or the Maldives till I saw Isle de pines in New Caledonia, and it’s so close to New Zealand. Mind-blowing beauty with waters of so many shades of blue like Bora Bora but more character. I can’t deny that Bellagio in Como and St Paul de Vance in Cote D’Azur haven’t left a strong mark in my memories too. Most beautiful country: Malta. Every country has beautiful places and cities but I have never seen a whole country with so many different faces, all of them beautiful in their own right. Rich in history, culture and architecture, it’s a joy for the heart and mind to visit all three islands of this little country: Malta, Gozo and Comino. The average spend there, is 50 Euros per day. I could have the breakfast in Valletta which is a UNESCO World heritage city with a massive number of historical buildings and it feels like Italy or France. Afternoon walking on the narrow cobble-stones street of the silent old City and my mind would be transported to 1001 Arabian nights or enjoy a modern evening vibe in St. Julian – a very cosmopolitan city. It’s the new IN place to go for the rich people from what I have heard, funny that it’s so cheap - almost everybody can afford the beauty of it. Places I would never return: Alexandria, Egypt and Phnom Penh, Cambodia. I enjoyed Cairo in Egypt and Siem Reap in Cambodia, but I really can’t bring myself to go back to any of these places it’s like once it’s done its done. Underrated places: Budapest, Istanbul, Langkawi, Saranda, Malta, Taormina, Rhodes, I would love to go back in these cities. Overrated places: Bora Bora, Cancun, Marseille, Zurich, St Tropez – there are so many other options out there that I find way better. It’s good to have a look at them but for me the hype didn’t match the reality.

Best place to go for Spring: Barcelona. The mix of Mediterranean culture with the Latin blood is irresistible. Drinking sangria, enjoying modernist landmarks, shopping on La Rambla for new items or enjoying food from Mercado de La Boqueria, it’s energising. Best place to go for Summer: I can’t decide between the south of Albania, the Greek Islands or Croatia. For the ones who haven’t tried it, those three places give you the vibe that Ibiza/Saint Tropez has but more relaxed and affordable. Amazing summer parties, astonishing blue crystal waters, music in the air, good fun, lots of adventures and bikinis everywhere. They are made for Summer. Best place to go in for Autumn: Paris. Nothing compares with Paris on an autumn day. It’s just pure magic. Best place to go for Winter: ueenstown NZ and Innsbruck Austria. Both these places transform during winter like a fairy-tale land. The harmony between nature and handmade landscapes is almost majestic. You have to pinch yourself to understand the surrounding is real. Favourite place to relax: Thailand, Koh Samui. The nicest people, not so crowded like the other islands, and beautiful white beaches with a city to entertain yourself during the night. Favourite place to go: Italy. An absolutely must go: Italy. No words – it has it all
Places that deserve their good name: Paris, Montecarlo, Nice, Vegas, Ubud, Rome, Venice, Val Paraiso, Hong Kong, Positano & Cinque Terre, Amalfi coast, ueenstown, Amsterdam, Seoul, New York, Bangkok, Vienna, Dubai and many many others. These are the places that you get what you expect. Unique experiences: Iceland and Cappadocia. They both are so majestic and mystic that you must give in to the place. So, after all of this travel and with so many more countries to check off their list, I ask Ina and Stuart the inevitable question, which is your favourite City? And they answer as you would expect and with such joy.

A few standouts for me on his set menu are the Market Fish Crudo with a divine kombu lime dressing or the Goat curd tortellini with honeycomb, walnut velouté, braised baby leeks and potato glass. As a kiwi, I have to recommend the Banoffee pie, and if you don’t know what that is – you HAVE to try it! The Boomrock concept was started down in Wellington by my family - Jonny and Mildy Eastwick. They established something exceptionally unique and special to host groups of guests on the coast just 35 minutes out of the city. In 2013 Jonny and I were discussing the possibility of doing another one in Auckland and that was all I needed to encourage me to y back from working abroad and get into it. We’d seen how Wellington had succeeded and that Auckland had nothing like it – so being the gentleman he is, he said I should do it as he was happy to possibly enjoy some more time off! o

and service. We love the idea that we showcase New Zealand, but it has to be with an element of international air too. However, I wanted to couple that level of service and cuisine with a genuine feel too. o

We tailor each day to suit whatever guests want to achieve and with that comes the opportunity for them to do things that they wouldn’t usually be able to do. I like to think of myself as inclusive, as broad-minded and certainly not racist. I also like to think of myself as well travelled but I want to share with you a few travel stories that opened my eyes to what I feel is the root of man’s fear of difference. When I would drive through south Auckland, although I have many Pacific Island friends, if I’m honest, I would struggle with the dilapidated houses with temporary structures and tarpaulins, yet with a digital sky dish and the latest commodore parked outside. It wasn’t until I travelled to Samoa and spent time with friends in their fale’s, observing their culture, that the light bulb clicked. Firstly, they rented these homes so they couldn’t update them or fi things themselves. Secondly, the temporary structures and/or tarpaulins were to separate festivities and such from areas of sleeping, food prep and prayer. It is taken very seriously that these should never cross over as that is considered disrespectful. As far as the sky dish and latest Holden goes, they don’t have these in Samoa, so this is the ‘go-to’ spoils they enjoy in the western world and are symbols of status and comfort. After understanding, asking, listening and observing, I got it, I understood and I’ve never had that irritation again when driving past. Because I understood. Similar story: many people dislike it when Chinese spit in the street, but it wasn’t till I travelled to China and learnt about their culture that I understood why. Often our spit is full of to ins or mucus and should be disposed of. The Chinese take their health and well-being VERY seriously, and the street is considered dirty and the street washers blast the curbs daily so whose right or wrong here?

Did you know that there’s basically only ONE major point of difference between Muslims, Christians and Jews? It all comes down to Jesus Christ and who he was and when. So, the whole treat each other well is the same, don’t cheat or kill etc etc is all the same. Yet religion has sparked so many wars over one point of difference! I pose this to you. Just try not to worry so much about what your neighbour is eating or who they’re praying to or sleeping with. Just be a good neighbour. Help when they need it, say good-morning, smile and be courteous and be a good human. Some like to drive, some walk, some take the bus – we are all different. But we all need to eat, we ALL need love, we all bleed and we all hurt. Let’s try to not make others lives harder than they already are. Imagine all the people, living life in peace. John Lennon

Wilderness Luxury …. Love Escape THIS SOUNDED THE TRICK. WE’D HAD ENOUGH AND NEEDED A BREAK – ESCAPE FROM THE KIDS, WORK, TRAFFIC, BUS LANES, BIKE LANES, WILSON PARKING, YOU NAME IT. PLUS WE WERE APPARENTLY OVERDUE FOR A BIT OF ROMANCE – AND I GENERALLY NEED HELP WITH THIS STUFF! SO LET’S DISAPPEAR, OFF INTO THE WILDERNESS – BUT IN COMFORT. A LOVE ESCAPE WEEKEND AT TREETOPS ESTATE MIGHT DO THE TRICK - REGENERATE THE BATTERIES, REKINDLE THAT LOVING FEELING, REJUVENATE THE SPIRIT, REBALANCE LIFE AND WORK – IT’S A TALL ORDER. It certainly started with style – we arrive via the impressive gate and driveway, climb up through the forest to the beautiful American style lodge which has a stream running right through it with trout! We get upgraded to a luxury villa on arrival, savour a glass of e cellent wine, and find the tranquillity and peace we hoped for. The villa is relaxed and comfortable a short walk through native bush. Then we saunter down to the lodge for pre-dinner drinks and canapes, a roaring fire, fascinating library, games room, hunting trophies, and a relaxed, private, fascinating degustation e perience. The philosophy is estate to plate ne t day I would understand this better), each course beautifully presented with clever combinations and subtle avours, and yes, fine wines. Time
slips by but the journey home is just a short torchlit walk or golf buggy, you choose – we are a world away already. The ne t morning up early for the 4W estate tour – self-in icted but is this a good idea In fact it was a real treat. Basically it’s a Land Rover tour with a real gamekeeper viewing the wildlife early when they think no-one is around – we see magnificent stags, wild boar, buffalo – and this is all on the menu later. It’s a great way to start the day, followed by a gourmet breakfast, your favourite coffee, with no parking problems here, no queues, and not a smashed avocado in sight. The air is clean as and there is a wonderful freshness from the forest. We take a walk to a beautiful

waterfall, and return for our outdoor under the forest canopy hot tub e perience. This is fantastic – and definitely scoring a few runs on the romantic front. It gets better. That evening we enjoy a candlelit fireside dinner in our villa with a fine bottle of New Zealand pinot noir and follow the next morning after a slow start with spa massages from the lodges Spa enu our cost, not included . ou can choose from a bewildering range of purposes - deto , boost your immunity, fight ageing, rejuvenate, polish or wrap your body, deep tissue massage. Failing to understand most of this I just enjoyed a
simple back, neck and shoulder massage – groaning for half an hour, perfect! So we spent hours wandering, relaxing, being pampered, enjoying the peace and nature, savouring excellent wine and food, and then sadly have to leave. It’s a wonderful place, and we have beautiful memories of the nature, the experiences, and spending such a special time together. What’s your favourite place to play?
Way back in 1999 there was a tiny underground radio station called ‘GeorgeFM’. I stumbled upon it and listened all day every day and was continuously winning prizes. After heading up to the studio so often to collect my prizes, I was dubbed a prize pig and subsequently struck off from winning! So the station manager offered me a show and I began to learn how to DJ on air on George FM. I also met my wife at the station so they’re responsible for the last two decades of good living! I worked there for nearly 10 years and since then I’ve managed to roll from one good time to the next as a full time professional DJ.
There’s been some pretty epic spots – Super yachts, on the side of Mt Ruapehu, six years at BlueSky Festival in Fiji or Rock Bar in Bali to name a few. My current favourite though is pretty much every time I play in Queenstown - every night is a Saturday night.
What’s your favourite DJ moment so far? Playing alongside internationals like Norman Jay MBE, John Morales, Crazy P, Claptone and local legends Nice n’ Urlich. If I had to pin down one moment it would be the wrap party of the World Masters Games 2017 at Shed10 where thousands of people were going crazy on a Sunday night.
What band or type of music do you love the most? At heart, its house music, but the roots of these tunes are often in disco, soul and funk, so the origins of the style are pretty high on the list! What’s a band or type of music you’re embarrassed to say you love? Lately I’ve been really loving the West Coast ‘Yacht Rock’ genre – tunes from the late seventies to mid eighties, and bands like Chicago, Michael McDonald, Hall & Oates, Toto, and Steely Dan. These are definitely my guilty pleasures.

New Zealand has followed in the footsteps of these larger countries by banning animal testing within the country from March 2015. For animal activist groups though, their fight is not over. Unfortunately, the shelves are still littered with products tested on animals, as the ban does not stop the importation of products from overseas that are not cruelty-free.
China has one of the largest cosmetic markets and has recently taken huge steps by working towards changing laws that require all products not to be tested on animals. It is not a ban of the testing but it is a massive step in the right direction for the country in becoming cruelty-free.
On the positive side, the ban has forced New Zealand based companies to find new testing methods, which push more crueltyfree products onto the shelves. Big brands such as Lush are paving the way by using modern methods that do not involve animals and instead focus on creating 100% vegetarian and hand made

I had blood tests, an C heart tracing , spirometry lung function tests , NA profiling, a body scan and more. From here, a series of user-friendly and easy-to-read reports were provided that gave clear data and reasons behind each recommendation, as well as recipes and advice. They were things I couldn’t possibly have known I was particularly pleased to note it was recommended that I drink one glass of red wine a day for my cholesterol. Who can argue with that The book-like report also looked at genetic profile, including the A 1 gene which codes for the digestive en yme amylase in our saliva. Our ability to process carbohydrates relies on how many copies of this A 1 gene we have, e plaining why some people are able to digest starchy carbohydrate dense meals with ease whilst others get bloated, lethargic and have digestive and weight gain issues. With a score between 1 and 20 possible copy numbers, I was given a 2; a hunter-gatherer type. This made so much sense to me, as I tend to feel bloated after eating heavy, high-carb dishes. The report also provided ways to upregulate or improve the gene e pression through lemon water before meals and foods rich in citric acid, such as tomatoes and citrus, helping my body to process my starchy carbohydrates more efficiently. When Gluten is Poison to your Body IN EVERY FULL RESTAURANT, CHANCES ARE YOU’LL FIND A HANDFUL OF PEOPLE WHO ARE GLUTEN INTOLERANT. FOR MOST OF THEM, THE CAUSE OF THEIR SYMPTOMS REMAINS UNCLEAR, BUT ONE OF THEM IS LIKELY TO HAVE A PARTICULAR MEDICAL CONDITION CALLED COELIAC DISEASE. It is estimated that about 65,000 Kiwis – one in 70 people – suffer from this permanent autoimmune disorder that causes the body to react badly to gluten.

“Worryingly, most of these people don’t know it,” says Dana Alexander, general manager of Coeliac New Zealand, a notfor-profit organisation dedicated to promoting the welfare of children and adults who have been medically diagnosed with coeliac disease.
“If you have a family history of coeliac disease or experience symptoms, it is vital you go to see your doctor as soon as possible to be tested,” says Dana.

This poses a serious health risk to them.” When someone with coeliac disease ingests gluten, their immune system mistakes gluten as a threat to the body and releases antibodies to fight the perceived threat. This causes in ammation that severely damages the small bowel, so it no longer absorbs nutrients as it should. This can lead to serious nutritional deficiencies. The symptoms of coeliac disease can vary a lot. Adults may experience diarrhoea, cramping, bloating, constipation, weight loss, lack of energy, nausea and vomiting. Less common symptoms can range from skin rashes and easy bruising to miscarriages and infertility. Children may also have these symptoms, as well as unusually large, smelly bowel movements and stunted growth. People with coeliac disease also have a greater risk of anaemia. If undiagnosed, the disease can cause long-term poor health and even osteoporosis, depression and an increased chance of cancers of the oesophagus and gastrointestinal tract.
Coeliac disease tends to occur in family groups – if any person has coeliac disease, 10% of their direct relatives usually have the condition too. It can develop at any age. “A simple gene test is available that may not necessarily provide enou information to confirm t at someone as coe iac disease, but it can rule out the disease,” says Dana. “As the symptoms of coeliac disease are similar to many other gastrointestinal diseases, diagnosis isn’t easy. If people have stopped eating gluten before the tests can be done, this may further complicate the diagnostic process.” Normally, tests for coeliac disease starts with a blood test, which can identify those requiring further testing. A bowel biopsy showing that the lining of the small bowel is damaged is the only way of establishing for certain if someone has coeliac disease. “If someone is diagnosed with coeliac disease, it is the start of a lifelong programme of managing the disease,” says Dana. As there is no known cure for coeliac disease, the only effective course of action for sufferers is to follow a gluten-free diet. As long as they can avoid gluten, people with the disease can have a normal life, with normal health outcomes.

COELIAC-SAFE Avoiding gluten is not easy, as this form of protein occurs in many foods. Apart from the obvious sources such as bread, pasta and cereals, gluten can lurk in food starch, preservatives, soy sauce and stabilisers made with wheat. Gluten can even be found where you wouldn’t expect it, for instance in medicines, vitamins and even in lip balms.
Living coeliac-safe takes a high level of care when you’re cooking at home, but when it comes to dining out t ere are p ent of a s t at uten can find its way into a meal due to cross-contamination. This causes uncertainty for coeliac diners, and also risks for restaurants. “To help give coeliac sufferers the assurance that they can dine out it confidence, oe iac e ea and insti ated t e inin Out programme. Ironically, avoiding gluten seems to exacerbate the problems when coeliacs do ingest gluten. To provide protection against the effects of accidental gluten exposure, medical scientists are developing a promising new vaccine called Nexvax2. Clinical trials are currently underway in New Zealand and abroad. “We’re watching this research with great interest,” says Dana, “as it could make a dramatic difference in the lives of thousands of people who suffer from coeliac disease.”

2019 - A Vintage Year at Nautilus Estate of Marlborough NAUTILUS ESTATE’S WINEMAKER FOR OVER TWENTY ONE YEARS, CLIVE JONES, WHO HAS MADE EVERY VINTAGE AT NAUTILUS ESTATE SINCE 1998, IS NOT A LITTLE EXCITED ABOUT THE 2019 VINTAGE, WHICH HAS JUST CONCLUDED. IN FACT, HE’S ECSTATIC. For any agri-horti-viti- fans reading this, Clive reports that the 2019 crop levels at Nautilus Estate were ten percent down. This may be re ected across the whole country, when the numbers are finally added up, from the nearly seven hundred registered wineries in Aotearoa New Zealand. The reason for this was the cooler weather during the spring owering period, resulting in bunches of grapes that were smaller than normal. Simply put, smaller bunches equals less juice. The summer of ’19 won’t just be remembered fondly by Kiwi holiday-makers and tourists. It delivered perfect weather during the all-important grape ripening period. These warm, dry conditions continued right through harvest, which meant that Clive and the Nautilus team were able to work with pristine fruit, free from any disease pressure at all. arvest started early in mid-February. The first handpicked fruit at Nautilus was Pinot Noir and Chardonnay, destined for the multi Trophy awarded Nautilus Cuvee Marlborough Brut NV and its sister wine, the delicious Nautilus Vintage Rose Brut 2019. These wines are made in the traditional way, whereby, like Champagne, the second fermentation takes place in the bottle. This generates a comple , brioche like aroma and that fine stream of bubbles that we look for, in great New Zealand sparkling wine. The Nautilus 2019 harvest continued at a steady pace, in glorious summer weather. In recent years, Nautilus has added Gruner Veltliner, which originates in Austria and Albarino, with its origins in Galicia, northwest Spain, to its range of white
wines. These classic, crisp, fruity but dry aromatic white wines, complement Nautilus Estate’s established varieties of Pinot Gris, barrel fermented Chardonnay and of course, Sauvignon Blanc. Pinot Noir is the only red wine made at Nautilus Estate. After fermentation in stainless steel tanks, the infant 2019 wines were transferred very delicately into small French oak barriques, where they will rest undisturbed, until blending at the end of the year. The aromatic white wines and Sauvignon Blancs from the excellent 2019 vintage will start to appear in wine stores and restaurants across New Zealand, in a few months’ time. Nautilus Chardonnay 2019 will be available in 2020 and the bubblies and Pinot Noir from 2021 onwards. These wines take longer to mature in barrel and in bottle but rest assured, patience will be well rewarded, when they emerge from their slumbers, in the tranquil, quiet cellars at Nautilus Estate of Marlborough. Crafting wines that match beautifully with great local and international cuisine, is a driving force for master craftsman Clive Jones. A stellar vintage is always welcome but takes on special significance, when like Nautilus state, you e port your wines to over forty countries, for discerning wine lovers and enthusiasts to enjoy in the top hotels and restaurants of the world. To drink or not to drink VANESSA BENNETT I FOUND MYSELF PRIVILEGED TO HAVE LUNCH WITH THE BEAUTIFUL LAURENCE ALAMANOS FROM THE HOUSE OF AYALA CHAMPAGNE. AYALA WAS ESTABLISHED IN 1860, IN THE HEART OF THE GREAT VINEYARDS OF THE MONTAGNE DE REIMS. Laurence is passionate about champagne and all things food and wine. During our meeting we were lucky enough to taste the new Le Blanc de Blancs 2012. This was her first visit to New Zealand and after discussing the normal where have you been’, and what do you like in NZ’ snippets, our conversation drifted to the glass we drink champagne from. This was where Laurence explained that it is logical to drink champagne from a wine glass, so you can then swill the champagne which will open up the avours and when you drink from a wine glass it gives you a fuller taste. I always thought a wine glass with bubbles was in bad taste but quickly learned that it is all about what you want to smell and taste. A tall ute sends the champagne quickly and sharply down your throat and gives you
lots of fi , which you may well want, but it leaves little air space at the top of the glass, meaning the avours and aromas will mostly be lost. Drinking from a larger wine glass allows the avour and tingles of the bubbles to settle all over your mouth and the aroma to waft up more easily. Drinking champagne is known to be stylish and having the right fashionable glass is important to drinkers. y favourite glass has always been the coupe or cup, which is disaster in every sense as it kills the bubbles and the delicious aromas oat away, but they do look so sensational. The coupe was the champagne vessel
of choice in the 20s 30s and 40s and everyone from Balmain to ate oss has designed a champagne glass for their fashion collection. In 2008, arl agerfeld created a breast-inspired bowl for Dom Pérignon that was a tribute to the beautiful Claudia Schiffer. What’s more is that to celebrate her 25 years in the fashion industry, ate oss lent her left breast to be used as the model for a coupe commissioned by London’s 34 Restaurant, sister establishment to The Ivy. There is great argument over whose breast the champagne coupe glass is modelled on. Was it Marie Antoinette or Madame de Pompadour? Or neither?

Legend has it that the coupe glass was moulded from Marie Antoinette’s left breast, and that she wanted her court to toast her health by drinking from glasses shaped like her bosom. But the glass was designed in ngland over a century earlier, especially for sparkling wine and champagne in 1 . No one truly knows the e act answer. rinking vessels shaped like a woman’s breast was actually used in ancient Greece and they were called ‘mastos cups’ – mastos being the Greek word for breast. Champagne is the drink to clink and toast with. It’s the drink of celebration and the drink that shows wealth, fun and fabulousness. I have never met a soul that does not like champagne. The 2012 Le Blanc de Blancs is a great delight and has low levels of sugar. It is elegant and luxurious and you can see the beautiful light gold bubbles in your glass, of which 100% is chardonnay. It is fresh and delicate with fine bubbles, and so tasty I could drink a lot of it. Simply delicious. We had the
pleasure of drinking both the Ayala Brut ajeur N and the Ayala Blanc de Blancs 2012 and they both are wonderful and a must try this autumn! Forbidden Recipes TRADITIONALLY WHEN YOU THINK OF CHINESE FOOD, YOU WOULD NORMALLY IMAGINE A TAKEAWAY SITUATION AND NOT A FINE DINING RESTAURANT. BUT FOR THAT EXACT REASON, RED WALL 1939 HAS OPENED IN THE STUNNING NEWLY RENOVATED HERITAGE BUILDING, LOCATED IN THE PARNELL ROSE GARDENS IN AUCKLAND, TO SHOWCASE THE HISTORY AND CEREMONY OF TRADITIONAL CHINESE FINE DINING. For 50 years, the late MasterChef Cheng Ruming, served famous World leaders such as U.S President Nixon, Clinton and Bush, UK Prime Minister Margaret Thatcher, U.S Secretary of State Henry Kissinger, honoured Generals and even the late N.Z Prime Minister Sir Robert Muldoon. Cheng was also the personal Chef of Chairman Mao, who was so impressed with Cheng’s cooking that he published a poem about his favourite dish from the Chef, titled ‘Zisu Wuchang Fish’. Cheng was only 1 of 16 Chefs in China to be named ‘National Pride Master of Cooking’. Considered a gastronomical national treasure, only the Elite could afford the famous ‘Cheng Banquets’. Trained in the culinary arts of English, French and Russian cooking, he knew how to bring Chinese dishes alive and make them relevant. His dishes are based on the Forbidden Palace recipes, some of them taking three or more days to prepare, but well worth the time and well worth the wait! In 1992, his grandson Liu Jian (Kevin Liu) began to learn from him and the ways of Red Wall Zh ngn nh i cooking method. Following in his footsteps, Liu made waves in the culinary world, which lead him to visit New Zealand in 2016. He stayed opposite the Rose Gardens in Parnell and fell in love with his morning view of beauty and tranquillity. This visit remained in his heart and became the catalyst to move to New Zealand and set up The Red Wall 1939 in those very gardens he loved so much. We talk with Kevin about this journey. e

When I first visited Auckland, I had to go to a mall to get some sunglasses. I was ama ed by the fact that everybody was so friendly. So much so, I had to ask the friend I was with, a local, Are you famous ow do they all know you ’ They explained that New Zealand is a welcoming country, and people greet each other in the street for no reason. I was overwhelmed by the sense that this is a lovely city, international, multicultural and modern, but also friendly and warm. Then, when I travelled around the country, I found the purest water, freshest vegetables and fruit and the most succulent seafood and meat, a recipe of paradise for a chef. A number of friends had suggested opening my first restaurant outside China in the S or Australia, but I had already fallen in love with Auckland. I had noticed there were a lot of e cellent fine dining restaurants, French, Western, Japanese and Indian for example, but there were no Chinese fine dining restaurants. I wanted to bring together the e ceptional Chinese culinary skills and traditional cooking methods with the superb New Zealand produce, which is what we’ve done at Red Wall 1939. o o

‘I remembered on my grandfather’s 70th birthday, after the dinner celebration, he passed a box which was full of all the hand written recipes, and I asked him ‘You have served Prime Ministers from around the globe, royalty, numerous dignitaries, VIPs and

celebrities, and they all love your food. What are your secret ingredients?’ He answered only this, ‘Always be clean and hygienic, always use the best local ingredients, and always be passionate and respectful’. I wasn’t quite sure at that time, but now I realise what the meaning of it was, and that is also our slogan of Red Wall team now.’ ‘He is more like a teacher in my life and my career has certainly been in uenced by my Grandfather. When I was 17, I travelled to Germany to build my skills in western cuisine. Over two years, I learned a lot about European cooking, and this era had a big impact on my career. It’s more about the classic and the modern twist.’ How have you transitioned the original re es o re e lo al rod e a d modern times? ‘As mentioned, ‘always use the best ingredients.’ When we design the menu and are doing the food tasting, it’s really tough but full of excitement; there is a lot of hard work done behind every degustation menu. Firstly, we have to consider what is the best and the freshest ingredients in season. Secondly, we think about the origin of the ingredient, why and where we choose the certain ingredients e.g. when we chose the lamb for our main course, I (Kevin) went to several farms to find the best lamb for Red Wall 1939. The interesting thing about the farm I found, is that it’s just beside the ocean, and you can taste the grass that lamb eats. I was told because of this special location, the grass has a naturally salty taste and that’s why the lamb is slightly salty. That really impressed me, and now that lamb has become one of our signature dishes in the Red Wall degustation menu. I was always joking but it’s true that every season we change the menu, all of us (team) will gain some weight as we keep changing, keep approving, keep tasting, every single dish which is actually tested and adjusted many times behind the scenes and it’s full of my heart and soul.’ Like your grandfather, do you have a signature dish? ‘Actually, I designed all the courses for the degustation menu as they all had my consideration and creativity behind them. For this summer degustation menu, I would say Oolong Tea Braised Fresh Crayfish with Oolong Noodle and Crispy Chinese Golden onuts which is my hero dish Crayfish,
hand-made Oolong noodle, hand-made fried donuts, water chestnuts, Zealong Tea, Sesame seeds). The cooking method of this dish was the Braised Prawns that my grandfather made when I was a kid, the taste always reminding me of my sweet childhood. I combine the beautiful NZ local ingredients with that authentic cooking skill and a slight twist. We select the crayfish from the Chatham Islands, and the organic oolong tea from Zealong estate Hamilton. We use crayfish broth and oolong tea to beautifully braise the crayfish, while the hand-made oolong noodle and Chinese dough sticks just balance the texture and absorb the avour from the crayfish. It’s definitely a signature dish for this summer menu and we got lots of good reviews on that dish from customers.’ What local produce have you been enjoying the most to cook with? ‘Apart from being so impressed with all the fresh vegetables and fruits and water in New Zealand, I have also been loving all the divine seafood. For our degustation menu, we use the Ora king salmon from Marlborough sounds, the Crayfish from Chatham Islands, super fresh, super clean and melt in the mouth with our secret sauces.’ What experience will New Zealanders who a ro se o r res a ra fi d a d ers from any other Chinese restaurant?
Rose Gardens represent. Each piece of the 8,700 collection is bespoke and crafted by Jian Ping G exclusively for The Red Wall. Jian and team consultant Yuan Hong Qi, from the Forbidden City ensure the correct protocols are in place and practices adhered and authentic. They combined tradition and custom with modernity whilst also working with New Zealand designer Mao Sheng Cai who showcased moody greys to capture the cloudy mountains. The menu style is a Chinese State banquet full of fragrant avours, offering savoury, sesame and sweet plus sachima pastry and Osmanthus. This is an authentic eight course degustation meal using recipes that are thousands of years old. With modern twists this feast doesn’t disappoint, tantalising all the areas of the tongue and taste buds’ pleasures, leaving you speechless, full and in awe. The chefs use the very best of local ingredients to create exclusive state banquet recipes that have been handed down from the Forbidden Palace exclusively to the Red Wall co-founders. They also offer a traditional Chinese High Tea and a lunch service all of which require a high standard of dress. They can cater for up to 70 cocktail guests for private functions and also have a VIP meeting room, styled in the vein of Mao’s study. We ask Kevin to elaborate on this:
‘We want to deliver a unique dining experience which people can’t get anywhere else in the country. Red Wall’s stunning degustation dinner menu is in uenced by the eight main styles of cuisine in China, from North to South. Recipes from State Banquets, Mao’s favourite dishes and a number of historic Forbidden Palace recipes are featured.
What was the idea behind creating a replica of Mao’s study?
The Red Wall experience is about elegant surroundings, quality local ingredients, unique Chinese cooking methods, avours and textures, and authentic presentation, with great matching wine, or tea if that’s preferred. We hope our guests will enjoy a unique and special dining experience with dishes that are steeped in Chinese history.’

The impression for Chinese cuisine can be ‘big plate, too much oil. No presenting’ but I don’t think that is the whole perception of Chinese Cuisine. We had lots of top grade restaurants in China.

Low price doesn’t mean Chinese Cuisine. I found we have top Western restaurants, Japanese restaurants, Indian restaurants in Auckland and I went to most of these top restaurants. The more top restaurants I’ve been to, the more I believe that we definitely can have this Chinese fine dining in Auckland. It’s taken a while to let the market get to know we are here, but I believe in this multicultural friendly country where, everyone has the same concept of best cuisine and fine dining’ so I love to put all my passion and all my culinary skills into Red Wall 1939, and I believe the food will tell. Many Westerners are afraid to try unusual a al ar s l ke ee a d fis eads re these ingredients just in street food or do o fi d s fi e d ‘Red Wall 1939’s roots are based on Chinese State Banquet dining which is a style reserved for dignitaries and royalty. State Banquet dining – and specifically for Chairman Mao –is what my Grandfather did for most of his career. For example, when Mao invited presidents, politicians or celebrities from other countries to dine with him, my grandfather had to consider each of the guests’ hobbies, religions, nutrition and preferences, and then create a menu fusing creativity with traditional
culinary methods and formal styles of dining. Just like the English royalty banquets in Buckingham Palace there wouldn’t be any feet and heads for the royalty family. Dishes in a State Banquet are based on the eight different types of authentic Chinese cooking methods: Sichuan (川菜 Chuān Cài), Shandong (鲁菜 Lǔ Cài), Jiangsu (苏菜 Sū Cài), Zhejiang (浙菜 Zhè Cài), Anhui (徽菜 Huī Cài), Guangdong (粤菜 Yuè Cài), Fujian (闽菜 Mǐn Cài), and Hunan (湘菜 Xiāng Cài). Desserts have also been an issue for many o sa ale es a o ela ora e o these pastries you speak of? ‘Red Wall 1939’s roots are based on Chinese State Banquet dining which is a style reserved for dignitaries and royalty. Guests can enjoy a ‘Bobo Feast’ (Chinese High Tea) for lunch, where the pastry recipes date back thousands of year’s. Royal recipes that were previously served to emperors and their royal families in Beijing’s Forbidden Palace. Back in ancient times, the Royal family got two separate kitchens, one for their formal meal and the other one called ‘BoBo Kitchen’, only prepared the tea items for the royal family. There are hundreds and hundreds of different types of sweet and savoury items and as well as these we have the dairy BOBO, consisting of over a hundred types of dairy BOBO

recipes custom designed for the royal family. What the royal families get served really depends on the different seasons ,different genders, different weather and different tea matching. For my childhood, my grandfather always made some cakes or puddings for me creating such a sweet memory, so I created a dessert in our BOBO Yan called ‘sweet almond memories’. When my local friend tasted it, he mentioned that it reminded him of the almond icing sugar on his grandmother’s Christmas cake, so it is amazing that my creations bring joy to the guests. When you combine family, history, pride, fine dining, beauty and legacy you know you have something special. From generations of tradition and protocol, culinary genius and service, this restaurant really is like no other. A true International experience on our own shores and teaching us more about Eastern ways. It’s regal, its delectable and its authentic, but you must book well in advance and as I keep telling you, the wait is so worth it.

A New World of Supermarkets NEW WORLD EASTRIDGE HAVE BEEN CREATING CHANGES TO ITS CUSTOMER EXPERIENCE AND THE WAY THAT IT OFFERS NEW INITIATIVES TO ITS CUSTOMERS. SHOCKING IT WAS, TO LEARN THESE INNOCENT, BEAUTIFUL CREATURES MISTAKE THE PLASTIC BAGS FOR JELLYFISH AND EAT THEM, KILLING THEM DAYS LATER. SO, IN TRUE KIWI FORM, WHEN SOMETHING MAKES REALLY GOOD SENSE AND AFFLICTS THE INNOCENT, WE ACT. New World was instrumental in driving the ban of plastic bags and many would say the leader. One of the most frequented retail stores throughout New Zealand; they stopped using these and started selling reusable bags. The exposure this had from even just one store, New World Eastridge in Mission Bay, was 25,000 customers per week, creating a tidal wave of support. The law was passed 18 months later – eliminating single use plastic bags from ALL retailers throughout New Zealand. Located in the heart of the Eastern Suburbs, they have a particularly diverse customer base, with a real mix in ethnicity, wealth and age. So, it’s their ‘real’ approach and initiatives, that see all walks of life rubbing shoulders and laughing together. They really are an inspiration, so I sat down with Owner, Kym Samuels, and Store Manager, Matt Hayward. Matt tells me “We talk to our customers and we learn what they need to make life easier or more inspirational. We’ve changed some of our offerings and we’ve also added lines that customers have requested.” Kym jumps in “The catering side of our business is growing and keeps us challenged in providing for our customers’ needs every day - so all the baked goods, prepared meats and deli goods are made onsite fresh every day!” Kym is referring to the newly created “209 KEPA RD” brand. Their hand-crafted products through the store is highlighted with the new branding, so that customers can be confident in the fact that these items have been made in store, by their experienced team members.

“The catering side of our business is almost as busy as the supermarket itself, so all the baked goods, prepared meats and deli goods are made onsite fresh every day, not just for the supermarket but for the catering orders as well.” They see so many ready-made meals not hitting the mark in either value or taste so they are now offering their own line of fresh ready-made meals, launching later this year. The Bakery is the heart of innovation in store, and the next project they are working on is an American Cheesecake. The Butchery is also one to watch, with Luka Young being the newest member of the NZ Sharp Blacks (NZ’s Butchery Team competing in the States in the middle of next year). He takes over from ex Sharp Black and Butchery Manager, Zak, on this team and we look forward to seeing how they fare. Luka and the team have been instrumental in providing inspirational solutions to our customers through our serve over - from ready to eat solutions to high end/rare cuts, the team are committed to challenging the status quo and WOWING our customers. The key word here is FRESH. We all like to have the freshest of produce but often lack time and inspiration. Once, where it was all about sauces and spices, it’s now about pre-prepared and ready to go. Kym elaborates “Grocery shopping has changed for most part, yes we still have the families that do the weekly shop, but more and more e find peop e stop in e er da on t e way home to select something fresh and ready-made, spending 15 minutes daily as opposed to an hour weekly. e e en find our on ine sa es from c ick and de i er or click and collect are growing. Time is something we are having less and less of, so we are doing our bit to help our customers save time and money.” 209 KEPA is really the upmarket side of the business - a catering solution for parties, meals, conferences, Christmas and more. A Touch of Spice AS I WONDERED DOWN THE MAIN STREET OF PARNELL, A SENSE OF FAMILIARITY CAME OVER ME. THE QUAINT ANTIQUE SHOPS, THE FASHION-FORWARD CLIENTELE AND THE CULINARY INSTITUTION THAT IS OH CALCUTTA. As I walk in, I am greeted by the warm smile of Anand. I’m beckoned over to join him in his office , the third table back from the road, visible but not a prime table that a customer might want; this man is always thinking about customer service! The intended 0-45-minute interview finished four hours later, with me having to pull myself away. I simply couldn’t get enough of this man’s charm, knowledge and humble stories. A man who looking at the cover, you wouldn’t think he had ‘done it tough’. Anand’s tenacity and sheer stubborn will was something his father identified with but he saw his restless son struggling with his purpose and reached out with an offer. ou ma ook ndian, ou ma a e an ndian name, but t ere is not in ndian about ou ou need to reconnect it our roots and ain some perspecti e and direction m sendin ou to ndia And it was in that moment that everything changed for Anand. His father did not sent him to the cultural hub or shopping district, his father sent him to a small rural village in Gujarat, disconnected to the world but connected to community and all things family. It’s there that he met his wife Meena and learnt how to be Indian, how to be respectful and how to have an incredible work ethic. Together with his wife, he learnt how to cook humble, rustic Indian food. eturning to New Zealand in 1994 with his new bride, they embarked on finding a space where they could open a restaurant and take Meena’s incredible gift of spice to the masses. The perfect spot opened up in Parnell and with his excellent negotiation skills acquired during his days in insurance, Anand secured a prime location. e set about fitting out the restaurant himself with friends and family and antiquities he’d acquired in India. The restaurant was authentic, full of character and would become one of only six Indian restaurants in Auckland at that time. But over time, some of those have come and gone and many more in their wake, but Oh Calcutta has remained in the same spot, with the same owners and the same traditional recipes for almost 25 years! Oh Calcutta is a must isit when you’re wanting to indulge in the culinary delights of spice and tandoor! Exploring the cuisine of several regions across the subcontinent, Oh Calcutta’s sophisticated menu, re ects an understanding and passion for good food and intense avours. With an emphasis on refined yet creative Indian cuisine, their menu incorporates both traditional-classic favourites and original new dishes that apply eastern avours with western produce. Their highly skilled chefs use only the finest ingredients, buying fresh spices which are painstakingly ground and mixed by hand, ensuring pure quality. Understanding the complexity of Indian dishes and the right balance of spices is something I feel many take too lightly, it’s a dance on the palette of hot, sweet, spicy and smoke and too far one way can make a dish bitter or overpowering. The experience of both the owners and the Chef and how long this popular restaurant has been running at full capacity, not only earns them the right but cements them as the best Indian restaurant in Auckland. And with the 25th year approaching Anand has rejuvenated the restaurant keeping its original antiquities for the regulars that he calls family, and upgrading the bathrooms with selfie-walls and a see-through glass kitchen with the motto – we have nothing to hide. But you can’t surpass the breath-taking linen ceiling crafted from German raw linen and sewn by the Americas Cup seamstress, creating a vault effect as if you were in the Maharaja’s tent! The entire restaurant has been fitted out with mood lighting that Anand can manage from his phone to ensure the right mood throughout the day and night. It’s details like these and exceptional customer service, including Anand and his wife Meena being so accessible to their beloved

customers, that sets this restaurant apart from the rest. This story could be about an Indian abroad or the prodigal son, it could be about the best Indian food in New Zealand or the best customer service in town or perhaps the décor and total experience you have when you are there, but my parting words are these. This is a man who any time he was knocked down, stood back up and carried on. He didn’t get a hand out, he worked hard and is so well respected amongst his peers and customers. You can see his spirit is rich and you can feel his heart is big and all of that passion, pride and talent is poured into every dish they serve. It is all these things combined, that makes this establishment not only an institution, but an iconic New Zealand landmark.

A raft of tempting dishes all made using the freshest local produce. Whether you’re after a taste-bud tantalising breakfast or brunch to kick start your day or perhaps a leisurely lunch, from 9am – 2.30pm, this lightooded room allows you to soak up the atmosphere and be a part of it all. Big palms and greenery allow the senses to rest and recoup providing a break from the man-made structure. The breakfast menu has a great selection of healthy or hangover dishes, some standouts being the fried brioche and the nourish bowl. But the day menu is impressive, with some real stand-outs like their homemade chilli and cheese bread to start followed by a dish many get wrong: potato gnocchi with pumpkin puree, butternut and burnt sage butter. But the talented kitchen team nails it, perfectly. Soft uffy pillows with a bite, and the right earthy blend of the pumpkin and sage with the sweet and salty burnt butter – oh to die for! From there, there are popular favourites and dishes to please all palettes. For me, it got interesting when I got to the larger meal’s menu, the talented kitchen team’s avour combinations whispered, I love you in my ear. Lamb rump served with shallot puree, peas, carrots and minted jersey benne, yum. Or the vegan fried tofu in prickly ash, chilli and shiitake mushroom with barley and greens. Or crowd pleaser, pork belly with cabbage and bean sprouts accompanied with apple, miso, maple and peanut sauce with a dollop of chilli jam – that is a good time on a plate!

Keep it in the Family HUSBAND AND WIFE DUO SARAH AND DANIEL, ARE A SEASONED HOSPITALITY COUPLE, MEETING BACK IN 2009 AT SPQR WHERE DANIEL WAS HEAD CHEF AND SARAH RAN FRONT-OF-HOUSE. It was an instant connection and they haven’t spent a day apart since. Working at some of Auckland’s most iconic restaurants and then moving to Sydney to show the Aussies how it’s done! Returning to New Zealand, they felt it was the right time both in their careers and in their lives, to venture into their own establishment and create a venue that embodied everything they have learnt and everything they stand for. With the level of experience they have and the right and wrongs of business and staff management they have witnessed first-hand along the way, they felt confident to take the leap. In a stunning location on Benson Road in Remuera, they have a prime corner site in an old 20’s inspired building. They have named their collaboration Morell. It is a combination of their two surnames Morini and Cornell and to add, its also the name of a rare divine mushroom grown only in the northern hemisphere (although with only one ‘L’) and Sarah has carried on the art deco feel throughout the restaurant with gorgeous peacock green velvet furnishings and the classic white marble and gold details. They worked with architect Kirsty Mitchell (Walker & Mitchell Architects) who interpreted their vibe perfectly, as its both warm and inviting but also chic and sassy. But despite this rich decadent interior, the menu and personalised service is anything but high-brow, as they pride themselves on being real, authentic and approachable. aniel, from a unique aori-Italian background, has a culinary connection, as his family were in restaurants also. His father who was Italian, born and bred in Bologna, started Pasta and Opera in Pt Chevalier and Daniel grew up watching his Dad make fresh pasta and sing opera to his patrons. He wanted to incorporate his family roots with his passion for simple, well executed food that both looks and tastes exquisite. Its that hilarious sense of humour and down to earth attitude that has made Morell so popular. The outdoor area with beautiful large pots and greenery is perfect for the 5 o’clock swill and trust me all the locals are there, but Friday night cocktails are just as popular at the cool inside bar with their ever-evolving mi ologist Ash, who has created the Morell signature cocktail “The Sloe Gin Sour”. But many just come to hang out with the paper and a coffee or feel safe bringing a first date, for an easy enjoyable meal. You can hear laughter coming out of the kitchen as Daniel and his Maori & Samoan sous chefs Jessie and Pharel actually boogie while they cook, infusing actual love and laughter into their food. Then there’s Gemma the restaurant manager, who has this Frida Kahlo look and a smile to match, that puts you at ease as soon as you walk through the door. They pride themselves on turning a customer’s day around, whether that’s from bad to good or from good to great! They are warm and unpretentious with personal service and being in such a leafy green pocket you feel you could be anywhere in the world away from the hustle and bustle of life. I poured over the menu and saw some exceptional dishes pass my eyes and I have to say my two picks would definitely be the Hawkes Bay lamp rump which is served with kumara, cavolo nero , pepperonata with a refreshing mint yoghurt to balance out the avours and staying with meat the pork belly with baby carrots and fennel ….so good as it comes with my favourite vegetable cauli ower which has been done in a crush style – yum They like to use local produce where possible, free range and organic, and Sarah adds she wants their customers to know and trust the traceability of all their food too, knowing it’s the best. This definitely needs to be on your places to try and I feel it will become one of your favourites, note bookings not essential – handy

The best bistro by the Bay BEING A RESIDENT OF THE BAYS FOR TWO DECADES I AM VERY FAMILIAR WITH THE FAMILY OWNED RESTAURANT ANNABELLE’S. Don’t let the name deter you, it isn’t prissy or offering archaic fare but it’s fresh, modern and welcoming and caters to all tastes with a vast menu that includes incredible cuts of meat and delectable seafood. Susan, owner and Maître D, has been providing memorable dining since she took ownership in 1998. Winner of the NZ Beef & Lamb Excellence Award since 2006, they take their meat dishes very seriously. Susan tells me “Kiwis love their beef and lamb and we know it’s a family favourite, so we always have the best cuts and offer seasonal changes that keep our customers coming back.” And come back they do, just speak to any bays resident and they all know Annabelle’s and Susan well. With the meals described as delightful, delectable and scrumptious it is essential you book to ensure a table on a busy night. Apart from the popular meat and seafood dishes, Annabelle’s actually start their menu with breakfast and all your favourites are there. Eggs Benedict, paleo options, and a popular choice, their corn and feta fritters, served with a yummy soft poached egg and lifted with a fresh green pesto. The perfect balance of sweet, tangy, earthy and herbaceous avours that create a delicious mouthful. This is a must try for diners. Annabelle’s also provide a special kids menu making it a perfect family outing with the beach and the playground only a few steps away. Following the breakfast and brunch crowd are the lunch goers and this spot is a bustling hive of activity come lunch hour. It may
have something to do with their clever menu options for 1 or 2 or the tapas style to share. I don’t know about you but with these finger licking options, I don’t think I would want to share. Starting with crowd favourites, crispy prawns and pork wontons, need I say more? Pork belly bao buns and duck spring rolls are where we start to divide the taste buds but trust me the e plosion of avour in your mouth is memorable. Then of course there’s their dinner service where there’s something for truly everyone. Clevedon coast oysters and west coast whitebait plus crumbed soft-shell crab take seafood lovers to a new height of ecstasy. Offered in classic subtle avours to let the seafood shine and the garlic drizzle down the chin, always pleasing the masses. So last but certainly not least is the dessert menu. Whether you want to have one to yourself, share or just grab a spoonful from someone’s bowl, they start with true kiwi favourites. Cheesecake served with Chantilly cream, sticky date pudding with toffee sauce, double chocolate brownie with vanilla ice cream and classic Bailey’s crème Brule with pistachio biscotti. And one of my favourites, the delicious waf es with warm sweet berry compote, a tart raspberry sorbet and uffy crisp edge, complimented by a nice strong espresso coffee – who would want anything else? A menu for any time of the day, produce and avours that make your palette dance, wonderful service with a family and local air, a view to die for and dishes to please everyone’s taste. Annabelle’s just went to number one on your restaurant list, don’t forget to book!

INGREDIENTS 30ml Juno Gin 90-120ml Fever Tree Mediterranean Tonic Water 2 wedges of lemon or lime Ice METHOD Fill a glass with ice. Add gin (add more or less gin to suit your personal taste). Your bathroom, your sanctuary BATHROOM RENOVATIONS ARE AN IMPORTANT PART OF ANY HOUSEHOLD MAKEOVER AND THERE ARE SO MANY THINGS TO CONSIDER BEFORE YOU EVEN START THE WORK. LUCKILY WE ENLISTED THE HELP OF AWARD-WINNING DESIGNER MAL CORBOY. WITH OVER 25 YEARS OF EXPERIENCE, MAL NOT ONLY DESIGNS AWARD-WINNING KITCHENS, BUT ALSO BATHROOMS, FURNITURE AND FULL INTERIORS THROUGHOUT NEW ZEALAND AND THE WORLD. HE’S THE GURU WHEN IT COMES TO A RENOVATION AND WAS AN OBVIOUS CHOICE. In addition, he suggested some companies that could help us out. amine New Zealand were our go-to for creating a seamless finish in both bathrooms. We used amine finished timber veneer for the cabinetry, giving us a sophisticated finish and featured Caesarstone anilla Noir for the countertop. Caesarstone is made up from 9 % quart , so it combines the beauty and strength of quart with the cool, tactile qualities of natural stone. Another benefit of Caesarstone is that it’s non porous and is therefore resistant to stains and easy to clean, fantastic for the bathroom As the leading supplier of high quality surfaces in New Zealand, amine New Zealand has beautiful options for bathrooms and kitchens of any budget. To cut our stone, we chose the wonderful ranite eaven from erikeri who were fantastic. When it came to tiles we chose Tile Warehouse, who provided us with stunning Bi -Art Sahara mosaic feature tiles and Oceanic rigio atte wall tiles. These mosaics are plastic faced, which is a unique advantage of these tiles because there is no netting on the back. This ensures 100% glue coverage which means they won’t fall off over time.
Paterson’s have been in the tapware business for more than fifty years and helped us out with our bath, shower, taps and toilet. They offer products that have one simple, common thread – they represent e cellence in design and functionality. We had the Subway 2.0 Toilet Suite installed which boasts a high quality slim seat and cover. When it comes to hygiene and cleaning, the suite is simple to care and clean for, allowing a precise, splash-free ow of water right up to the open rim. We wanted the bath to be a big feature in our bathroom and chose the Squaro from Paterson’s. ade from uaryl, which is composed of a fusion of acrylic and quart filling, this was the bath of our dreams and one we can’t wait to spend a lot of time in We also installed the Nivito hythm Pull-out i er Tap and basin, which is made of 100% solid stainless steel and chose a beautiful gold brass-look finish. We are obsessed with it and love showing it off When it came to the finishing touches, we enlisted the help of creative stylist onna Balasoglou who immediately connected with what we were trying to achieve. She purchased accessories from French Country and arrowset all to pull the final product together. Ethical fashion report Within factories all around the world, workers are being exploited while creating clothes for huge corporations. The ethical fashion report is produced by Tearfund as a way of exposing and assessing how companies are treating their workers. One main issue that they are fighting is the pay, only five New Zealand companies pay their workers a living wage in the factories. For workers to afford food, water, clothing and health care they must be paid a living wage, but according to the report hardly any of the companies they examined did. This has led to uprisings within factories such as in Dhaka, Bangladesh over 5000 workers have protested their pay resulting factories being shut down and people being injured. A fair wage is essential to order for workers to have a decent quality of life and allows them a chance to pull themselves or their families out of poverty.

Another 20% live off NZ Super and a small amount of savings. The reality is, we are going to have increasing numbers getting into retirement who will still have a mortgage on their own home. Divorce, redundancy, illness and business failure also mean a lot of people are approaching retirement with significant debt and end up with nothing in their 50s. Even if you buy a house at 35 and take out a 30-year mortgage to be paid off by 65, you might then have to work until 75 to save extra for retirement. About 54% of people aged 65 to 69 are still working either part time or full-time, and that is likely to grow in the future. Many will have to work longer because they need to. To get to $100k for a ‘no frills’ retirement you would need to put away nearly $50 a week after age 30 ….and for a comfortable retirement you would need to save around $200 a week to get to $400k.

Debt to Deliver THIS COUNCIL IS LOOKING AT THE LARGEST EVER CAPITAL SPEND ON PROJECTS TO BOTH CATCH UP AND PLAN FOR AUCKLAND’S BURGEONING GROWTH. These projects include significant below the ground infrastructure to cope with housing demand and to improve our water quality; along with public transport investment and local projects identified by local boards. A side effect of this investment is a rise in debt. Whilst this is eye wateringly large – $8.2b now and projected to rise to $14B by 2028 – this has actually lowered as a ratio to asset growth from earlier planning by Auckland Council. Our debt to asset ratio is the lowest it has ever been at 15.9%. PriceWaterhouseCooper were asked to provide an independent opinion on Councils debt raising strategy. I quote from their written opinion presented to our Finance and Performance Committee: “We believe Councils funding strategy and use of off shore debt markets is a consistent, prudent and efficient means of satisfying the above underlying statutory objectives to future proof Councils ability to access long term funding and in ensuring liquidity capacity.”
So, whilst I appreciate that these numbers can be mind boggling initially, they do in fact represent prudent financial practice. Credit rating agency Standard & Poor’s, consistently gives Auckland Council an AA rating. This is very good, second only to central government and higher than any other Council in New Zealand. When calculating the rating, Auckland Council’s ability to service their debt is considered. This means that they focus on the ratio between the revenue that Council receives and the debt level that it has. It’s important to ensure that as some of our big projects signal budget overruns we do not get too close as that would potentially downgrade our AA rating. A downgrade is a lose-lose situation for Council as the interest payments on our debt would increase significantly as a result. Careful management is required.
