I love winter, with it’s cold brisk mornings, cashmere jumpers and great red wine. Wool is a winter saviour check out our favourite items on page 30. I always say people that wear wool never get sick in winter! We are also excited about our new feature, The Apartment that EYE built - turning an average apartment into an amazing abode! We have chosen International Acclaimed Interior Designer Mal Corboy to do this, who is featured on our cover in his favourite Strangely Normal shirt. We will be updating you each issue with the developments and the final outcome. On a more serious note, today it seems rare not to know of someone who has been affected by breast cancer. It is a leading health issue with approximately 1 in 8 women and 1 in 719 men being diagnosed with the disease by age 85. It is a frightening fact. On the 9th May this year 2017 we lost our wonderful writer Denise Tuson. She was a bubbly fun woman who loved living and loved life. She was young and her death seemed so unnecessary. If you can do one thing to help yourself: slow down. You are nothing without your health. Take time with your friends and family. Enjoy eating together, enjoy down time away from your phone and appreciate each day. I am trying to read more - from an actual book - and to write more. Reading and writing stimulate your brain in a different way. The relative slow nature of reading and writing by hand demands more from our brains, which leads to a better grasp of concepts, ways of applying theses, concepts and remembering the information. Essentially, it is exercise for your brain! Having spent the last 25 years on a computer, I now find my writing has become a display of hideous letters that few can read, hence my love affair with Mont Blanc. My new love, the Montblanc Muses ‘Poudré‘ fountain pen, takes its inspiration from 50’s fashion and the ‘New Look’: sloped shoulder line, ultra-thin waist, flared skirts and fresh tones inspired by flowers. This line is addressed to the women of today, with an elegant but fresh touch aiming to express a special character and a certain lifestyle. Our cover features 2016 Parnell Waiters’ Race winner, Loran Paulich and 2017 Lewisham Outstanding Waiter Award Winner Des Dillion, both professional waiters’ in Auckland. Waiters’ are often unappreciated and we love that the Lewisham awards recognise the best of the best chosen by their peers and the Parnell Waiters’ Race gives them an opportunity to show their skills off to everyone.

T

he 2017 Parnell Waiters’ Race is a celebration of Auckland’s growing global food scene. Originating in Paris, waiters’ races are found in more than 53 countries all over the world. From Hong Kong to Washington DC, from Brussels to Jerusalem or from Buenos Aires to London, waiters take over the footpaths for a day to compete for the grand prize. This year, the grand prize is yet again up for grabs. One lucky winner will receive return flights to London in May 2018, a uniquely ‘London’ hospitality experience and automatic entrance into the National Waiters Race 2018 in London to represent New Zealand! The 2016 Waiters’ Race final, based on the traditional Parisian loaded waiter’s tray, was taken out by Loran Paulich of Paris Butter, who claimed the top prize. “Why did I enter? For a fun way to spend a Sunday afternoon with waiters from all around Auckland, getting to know the competition and catching up with old friends, the prize obviously had a part to play in my decision to partake!” says Loran. Will Paris Butter reclaim their throne? Or will it be a Parnell local who takes out the prize? ome chefs have even argued that service trumps food when it comes to customer retention.Yet the profession of waitering is hardly ever celebrated. The waiters’ races were designed to change this. Waiters’ races or the ‘course des garçons de café’ can be traced back to the early 20th century Europe, with footage of races in Paris, London and Berlin. The races were started as a way to improve the recognition of the waiter profession in Paris. Nowadays, waiters’ races are found in 53 countries across the world, as people line the streets to cheer on their favorite restaurant. Last year, Auckland’s very own Parnell Waiters’ Race was taken out by Loran Paulich, of Paris Butter. "A waiter to me is almost like a social worker. What I do and what my goal is to make people happy and in return a happy customer is a happy Loran,” he says. “There is no better feeling for me then seeing somebody walk into the restaurant looking all sad and grumpy, but then completely changing their mood and creating memories for them. Then seeing them leave the place with a huge smile!" Loran is featured on our cover along with Des Dillon, of Soul Bar. Earlier this year, Des was crowned the Crombie Lockwood Outstanding Waiter at the 2017 Lewisham Awards. “I’m close on 42 years in hospitality - it keeps me fit at 60!” muses Des. “It’s clean yet demanding work, you spend so much time preparing and then the chaos begins. I have been privileged to meet a great number of wonderful people, whether it's a special occasion, business or casual. You get to be part of their food and wine experience - it really is quite special - and work with some amazing personalities.”

The extensive menu also features a vast selection of local and fine wines from overseas and at home. Friendly and knowledgeable staff are on hand to help you pick out your favourite pinot noir or pair it with your meal for a gastronomic evening like no other. Those in search of a space for their function can look no further, whether it’s a twentyfirst or a corporate event, the Veranda bar is available straight through the week. Situated above the main restaurant, the private hideaway takes the stress out of an event no matter how creative, with all of the beautiful offerings of JDV’s main restaurant available for catering.

able Bay Vineyards has long been renowned as a go-to for good wine and food on Waiheke. Their first vineyard was planted in 1998 on the island, with the vision of handcrafting wines from the highest quality grapes in humble lot vineyards. Now they grow 9 different varieties, from two vineyard sites: one in the Awatere Valley in Marlborough, highly esteemed for its grape growing properties and the other, of course, on the island itself. Their Awatere range boasts a selection of fruit-driven single varietal

wines, which have held their own in the competitive New Zealand market. Their 2015 Reserve Sauvignon Blanc was awarded 5 stars (93 points) by Wine Orbit. Their 2013 Reserve Syrah also gained a 5 star rating (96 points) from noted Master of Wine Bob Campbell, and was ranked #1 Syrah on Waiheke and #3 in New Zealand in a write up in Gourmet Traveller Magazine. They have even managed to garner recognition overseas. 2012 Cable Bay ‘Sweet Gloria’ Late Harvest Viognier won Winestate Magazine’s ‘Wine of the Year’ in its category in 2014. Now they are taking lunches to new heights, with their all new: ‘The Lunch’. On the first Saturday of every month, in their award winning Dining Room, they will be hosting a series of beautiful afternoons of wine, food and live music. With an exclusive menu tailored

But it’s the pork belly with crispy crackling, hoisin sauce, peanuts and coriander, which is the signature dish of the bao selections. Patrón Tequila: the luxury spirit taking the world by storm EVERYONE HAS A TEQUILA STORY. SLOWLY SIPPING A LUXURY SPIRIT ON THE ROCKS IS NOT OFTEN THE FIRST IMAGE THAT SPRINGS TO MIND.

Creators of the 100% agave category, Patrón has been leading the way to transform the perception of tequila around the world and encourage consumers to be open to tasting the difference of Patrón. President and International and Global Chief Operating Officer Dave Wilson sat down with us to talk tequila & tonics, agave, and what makes Patrón, Patrón. What makes Patrón different to other tequila brands? I’ve been in the wine and spirits business my entire career - since 1979 and the last four years with Patrón. It’s a privately held company with an ownership that really values the employees, the culture and the product itself.

John Paul DeJoria is our owner and Ed Brown is our CEO and they truly treat the people who work at Patron so well, there are 1,700 employees in Mexico. Everything is simple if we’re going to do it, we’re going to do it the Patron way. It’s unusual to find this philosophy these days. This partly because it’s privately held and partly because he owns it. It’s all about quality, the Mexican environment. Many companies don’t value the countries they work in and we invest in water treatment facilities, education and that’s the Patrón way. I say I’ve got the best job in the industry - I really do believe that. Tequila has a certain association with it, especially in New Zealand. Images of shots with salt and lime come to mind! How do you change that image? It’s the biggest issue we’ve had to overcome. Everyone has a “tequila story” - and it’s usually not a good one! We’ve come across the same issue in the US, but most of these experiences are

derived from the cheaper categories. Patrón created the 100% agave category - it really is a beautiful spirit. The way we have to overcome it is through training and education, typically in small groups. Explaining to the consumer, the bartender, the difference between the 100% Agave category and the mixed category. And, of course, sampling. Once people have the chance to taste it then we win them over. We often hear people say, I was always a gin & tonic drinker - now I’m a Patrón Silver & tonic drinker. There’s no magic bullet, a lot of the times it is just training. We also have invested a lot into our digital platforms. Now, you can go online and find out how Patrón is made. Today’s consumer really values transparency - they want to know the story. Patrón is an easy story to tell and digital platforms allow us to tell it in a way that wasn’t possible 10 years ago.

To me, it’s the authenticity of the brand. I want them to know the backstory of how it’s produced - I believe it’s a really legitimate question to ask as many brands are just built upon their marketing. The quality of the product speaks for itself. Today’s consumer, whether they live in California or New Zealand, that should want to know. The other side of the brand is that are we good stewards with our people and with the environment? I think this is really important. So many companies talk the talk but don’t live it. We’re not just here to make a profit, we’re here to give back as well. If you see what Patrón has done in Mexico and throughout the company. We’re the largest employer in Atotonilco el Alto - we’ve changed that part of Mexico forever. We invest in orphanages, senior homes, and religion is so important there so we invested in rebuilding the cathedral. We don’t like making this part of our marketing - it’s just the right thing to do. What are your tips on the best way to drink Patrón? To me, there is nothing like experiencing Patrón Silver on the rocks. You really get a chance to taste the agave, and what makes Patrón unique. Silver, in particular, is an extremely mixable brand. Patrón & tonic is an extremely drinkable cocktail, especially with an orange slice. It is absolutely delicious! It’s really taking off in London - they refer to it as a “patronic”! After a dedicated ten years of working one day a week with – then owner – John Howell, Jeffers was handed the reins to the business by Howell on his own retirement. Whilst continuing to service Howell’s pre-existing customers, Jeffers has seen a significant growth each year in new clientele over the past seven years since becoming owner. His dedication to the craft has earned his jewellery a reputation of being both exquisitely and exceptionally well-made. The intimate means of craftsmanship in each piece of individual jewellery can be seen through the lens of Jeffers, who takes progressive photographs of his work as he forges it, using traditional goldsmith methods – starting from a block of gold. THE SUMMER ISSUE OF EYE SAW AN EXCITING PROMOTION THANKS TO THE TEAM AT EZGO. Tell us about your day at Kauri Bay Boomrock. Three of my friends and I joined the EZGO team at Kauri Bay Boomrock at 10am for some friendly Claybird Shooting and Archery competition down in the bunkers. I can’t say that I’m great at either but It was a heck of a lot of fun! Luckily for me the EZGO team had one more member than mine, so we had Ollie from Boomrock on our side to make up the numbers which helped a little bit in the competition. Team West won the shooting and team EZGO won the archery competition. At approx 12.30 we headed up to the lodge for some champagne and 3 three course feast - my compliments to the chef, I’m not usually a big pork belly fan but his was faultless and absolutely delicious. After lunch we needed to break the tie from the earlier competitions so had a final game, Giant Jenga. This ended up being a hilariously competitive game eventually won by team EZGO (we let them have that one). What was the best part of your day? The day we went was actually my birthday so it was awesome to be able to have such a great group of people to celebrate it with. The group shooting

was my favourite and my team won that challenge (even though they had me on it!). It was so amazing to be able to celebrate my birthday in such style and with some awesome people, after coming second place at the inaugural EZGO Boomrock Challenge competition... I believe lunch is on me next year!

STEVENSON RENOWNED MUSICIAN ADAM STEVENSON QUIT HIS DAY JOB IN MEDIA TO FREE UP TIME FOR FAMILY AND OTHER VENTURES, AMONG WHICH IS HIS BUSINESS OF PLAYING MUSIC FOR NEW ZEALAND’S ELITE. THE MUSICAL MAESTRO HIMSELF HAS SHARED WITH US HIS PAST, MUSES AND MEMORABLE STAGE ENCOUNTERS.

Please tell us about your background in music. Well when I was growing up, there were always guitars around the house and a piano to play. My mother was, among other things at the time, a music teacher, and got me into piano lessons at age five. At about eight, I picked up the guitar and taught myself to a certain point. From there I started playing music at local cafes around the age of 12. Music and playing for people has accompanied my life ever since – there wouldn’t have been more than a month go by over the past 20 years where I haven’t played some kind of public gig.

What’s your favourite style of music? I like so many different styles of music depending on the weather, the time of day, the mood. It could be classical, jazz, 60’s, or contemporary electro, with unprecedented accessibility and connectivity to new music, I’m always exploring. As a musician who performs for the elite, who are some of the more distinguished people you’ve played for? I am fortunate enough to play for great people and great companies. Rank Group, Russell McVeagh, ANZ, Barfoot & Thompson, Experience Group, Jucy Rentals, Pak ‘N Save, BNZ to name a few. One of the great things about this whole business is that I have never advertised. In fact I have made a point of not overly promoting myself. Instead, I’ve let word of mouth naturally filter through my target audience so the whole model becomes self-fulfilling and somewhat a natural qualifier. What is your most memorable gig? There have been a few that is for sure. We’ve played some very big gigs, such as the Barfoot & Thompson 90th Anniversary to over 3,000 guests at the ASB Showgrounds.


We created a full show with choreographed dancers and finished the gig with Peter Thompson coming up on stage and helping us sing ‘We Built This City” – it was a very special moment. Our band Whistlejacket has played at the Ohakune Mardi Gras to massive crowds at zero degrees, the coldest but most amazing experience. We have helped out where possible with charity events, one of the more special ones being the Starship Foundation’s 21st birthday where we played at a fundrasising ball at the Viaduct Events Centre. Playing music has created some of the most unique and special moments of my life. I’ve been invited to play on big boats, islands, in very grand and beautiful settings and have celebrated many important milestones with people. Music has connected me with wonderful people (if you’re reading this you’ll know who you are!). I am grateful for the longstanding relationships I have with the people I play music for. It’s a lot more like playing for friends and family than a ‘client function.’

THE MOTHERIN-LAW DIED A LITTLE WHILE BACK.

F

rom the “Herald”: “Act Party leader David Seymour says he believes he has the numbers to at least get his voluntary euthanasia bill past the first hurdle. Speaking after his private member's bill was pulled from the ballot today, Seymour said 40 MPs had indicated they would support it, while 27 said they would oppose it. Another 50 had said they were undecided.” And this, from a different edition: ‘Speaking to reporters after the caucus meeting, English told reporters he was an "active Catholic and proud of it". But while his Catholic faith was an important influence, it did not define him, he said.

He said his opposition to euthanasia and abortion remained the same. But his position on gay marriage had changed. "I'd probably vote differently now on the gay marriage issue. I don't think that gay marriage is a threat to anyone else's marriage."’ This article isn’t about marriage equality but, before moving on, I have to note that our Prime Minister appears to have voted against marriage equality because it was a threat to “anyone else’s marriage.” This is the problem with young William: he just isn’t any good at fibbing. John Boy, of course, was a master craftsman at fibs, evasion and memory losses yet I, for one, continued to vote for him. The sad fact is that Billy Boy is a bad fibber and voted against marriage equality because he believes that there is a loving and omniscient God who directs, via good old Leviticus: If a man also lie with mankind, as he lieth with a woman, both of them have committed an abomination: they shall surely be put to death; their blood shall be upon them. By the by, while wandering through Leviticus, I thought you should be warned that there are a number of offences, the penalty for which is death and having a bit of blood on you. For example, I’d be a bit careful around the parents: For every one that curseth his father or his mother shall be surely put to death: he hath cursed his father


or his mother; his blood shall be upon him. A menage à trois with Mumsy and daughter – oops: And if a man take a wife and her mother, it is wickedness: they shall be burnt with fire, both he and they; that there be no wickedness among you. Childlessness awaits he who bonks his uncle’s wife (or his brother’s wife): And if a man shall lie with his uncle's wife, he hath uncovered his uncle's nakedness: they shall bear their sin; they shall die childless. There is some good news: you only get exiled "if a man shall lie with a woman having her sickness." Back to my mother-in-law. She was an exceptional woman: a theatre nurse, a flight hostie on TEAL’s flying boats, AREINZ, Social Welfare Director, artist … . She had her peccadillos: a bit nuts over animals – various attempts to steal the neighbours’ chickens by feeding them a metre a day closer to our place, for example – but she had a sharp brain. Then, she started getting forgetful and, in the space of 6 months, went from forgetful to a serious bout of dementia. In the end, she’d be screaming if she were left alone. My father-in-law wasted away looking after her because we had this family obligation to keep her with us. There’d be episodes of getting out of bed, getting into bed, out of bed, into bed, out of bed … . Taking her clothes off; putting her clothes on – clothes on, clothes off. Screaming, not screaming … In the end, though, my bride and her father just couldn’t cope,

with all the will in the world, and she was hospitalised, followed by dementia care in a rest home. The point of all this is that there is this rump of baby boomers, just about to launch into the dementia zone and the story of my mother-in-law will be played and replayed in thousands of families. The emotional cost is severe. The physical cost is severe; fortunately, we saved the father-in-law because Nana’s departure for hospital allowed him to get some rest and to eat regularly but most European families don’t have two generations in the one house; pity the remaining spouse. The financial cost is ruinous. It was about $5,000 a month to have Nana in the rest home. Now, that $5,000 comes out of a family’s finances or out of the tax take but, wherever it comes from, it’s a total waste of money. In the rest home, Nana had no quality of life and it was scary to see all the others there in a similar state. One man, across the corridor, kept on calling visitors (not his) into his room and asking them to go and find his wife. Another man kept on crying out: “Joyce”, “Joyce”. $5,000 a month to have your loved one stare at the ceiling, regardless of whether you were visiting. These people are as broken as people can be, yet they have to live on as nothing more than shadows, at enormous expense. When I addressed the Select Committee on assisted death, my submission said:

Mental incompetency – my views on a definition: A. While mentally competent, I want to be able to define situations whereupon my life should be terminated or allowed to come to an end. B. In the situation where I am apparently functioning physically but I am demented, there would be a simple test: do I recognise my children? If I do not, I do not want to live. I accept that there are likely to be more technical ways of defining the requisite level of dementia for the purposes of an exit; I have proffered this definition simply to show the nature of the situation which I fear. C. If I am in a persistent vegetative state with no reasonable prospect of an imminent escape, I want to be able to provide that my life should be terminated or allowed to come to an end where two doctors diagnose persistent vegetative state with no reasonable prospect of regaining consciousness within the next 6 months. What has Bill’s God got to do with me and my desire not to be a vegetable?

On the 1st November, the renowned Langham Auckland will see itself rebranded as Cordis, Auckland. A

household name in the design industry, Mal has been designing for over 19 years, winning a plethora of awards, including the prestigious SBID International Design Award in 2014 for best KBB project. He is a professional member of DINZ (Designers Institute of New Zealand) and a Certified Kitchen Designer (AU). Mal Corboy is known for more than just kitchens though, designing sleek bathrooms, furniture and full interiors. His latest project, an apartment in the viaduct of Auckland, was an entire do-up of a dated apartment. Mal worked closely with the client to create his dream space. It needed to be gender neutral to broaden appeal when it came time to resell. However, the client’s favourite colour was Hugo Boss Orange, a bold hue that brightened the neutral tones, in small doses. Mal incorporated this orange tone into the kitchen splash-back with gorgeous Bisazza mosaic tiles, as well as in the soft furnishings. Corian Venaro white bench tops and gloss-lacquered cabinets were paired with planked oak throughout the kitchen. 36

The client is delighted with the finished interior, and with Mal’s focus on achieving customer satisfaction, he weighs this as a success. ‘Apartment renovations are always tricky as you are dealing with the body corporate as well as plumbing and electrical issues as most of the time what is on the original plans is never quite right.’ Despite this, Mal Corboy has outdone himself with this gleaming new apartment. 5 Top Tips from Bardsleys Lighting 1) Do your research before buying LED. LED (Light Emitting Diode) can offer fantastic benefits including low power consumption and long life, but there can be pitfalls, notably High Frequency Flicker (can cause migraines) and too much blue white light (can cause insomnia). The packaging doesn’t always tell the full story so it is important to speak with a genuine LED expert. 2) Any chandelier can be the “right” one. However, if you want the wowfactor, select the best option to match your space, texture, lighting needs and look. To size, a chandelier as the focal point of your space, measure the length and width of the room and add those figures together. As a guideline,

the sum, multiplied by 83, will equal the diameter in millimetres for the chandelier.

Zia was the first Afghani national to arrive in New Zealand, not as a refugee, but on a business trip via

America during the late 70s. He stayed, and being artistic, was drawn to the arts where he found himself surrounded by well-known artists of the day including Friedensreich Hundertwasser. Hundertwasser gave him legal authority to create rugs using his artwork, with the proviso a percentage of the profit was returned to environmental betterment. A later connection with developer, Les Harvey, expanded his already enviable eye for business and trade. Then a chef with his own restaurant in the Auckland CBD for many years, Zia still loved trading. “In school, anything

I could purchase and re-sell gave me great enjoyment and I still love it.” His understanding of arts and culture and business saw Zia identify a gap in the market for contemporary designer rugs. Utterly inspired by New Zealand and Pacific culture he recognised leaping into that gap represented an enormous risk since art appreciation is uniquely personal, but in 1987 he left his restaurant and began importing rugs from all over the globe. By 2010, noting that the popularity of Afghan rugs was waning, he realised it was because Afghan wool was being abysmally processed, washed by hand in river water. Having presented a proposal to USAID for assistance in setting up a wool-scouring factory in Kabul for professional wool processing, the project went ahead. It meant wool was properly washed, had no odour,

and jobs were created in Afghanistan. Initially lacking experienced staff to operate the wool processing plant, Zia was recommended a Napier-based wool-scouring factory. Internationally known for our New Zealand wool expertise, the Napier factory tested all the Afghani factory wool and assisted in many other ways, and Afghan Loom is still grateful today. Once the Kabul factory was working efficiently, they hired almost a hundred people to process local wool. The processed wool was sent for handspinning to individual families all over Afghanistan. The yarns, along with design instructions were then sent on to rug-making families to make rugs at home in their own time. The rugs this mainly female workforce produces utilise strong colours and contemporary as well as traditional designs. Each rug is handmade and takes a great deal of work, but they are the finest quality available. These carpets become heirlooms and last for lifetimes. “In Afghan society rugs are integral to our interior decor, and traditionally we had to make our own to decorate our houses,” says Zia. “That was the era of self-sufficiency but now with technology and internet we have easy access to everything.” Today Zia’s pleasure in his trading skills are augmented by the satisfaction he derives from introducing his clients to the right product for them, and seeing their obvious delight once their

choice of rug has transformed their space to something beautiful and elegant. “The idea of creating such an art piece from just wool, whether it’s sheep, goat, or camel wool, fascinates me.” At Afghan Loom they don’t just think inside the circle, preferring to explore design and remove the limits set by traditional rug dealers. Something high-modern, or something interesting in a more traditional style can be had, including a bespoke (made-to-measure) service. Zia’s clients can also design their own masterpiece for a more personal rug. “Our advice is always to have confidence in your own eye. Don’t hold back. It’s such a personal choice and you will live with it most of your life, so choose quality and the right colours. Our inspiration has been gathered from many of the world’s corners, including more recent Pacific-inspired designs, so we can help, but in the end, you must love your choice.”

Highland Paradise PROUDLY CELEBRATING 30 YEARS

H

idden in the dense bush for nearly 200 years, Maungaroa Mountain (meaning Long Mountain) was the ancient tribal settlement of the High Chief Tinomana Ariki and his people. When he and his tribe converted to Christianity during the early 1820’s, they abandoned their mountain fortress and settled on the coastline of Arorangi, Rarotonga, where they continue to reside. It was during the early 1980’s Raymond Pirangi Senior, a visionary subchief, set his sights on this once secluded mountain hideaway which he shared with his beloved wife Emma. He publicly promised to rebuild a thriving legacy for their young family, for the district of Arorangi and the people of Rarotonga. With the site based 600ft above sea level in the dense bush of the Maungaroa Mountain Valley, this was no

easy task. He sought village and tribal approval and with limited equipment and machinery, began clearing bush, constructing access roads, tapping a natural water supply and connecting power. The dream began to take shape and with Raymond’s candid personality and Emma’s green fingers on July 29, 1987, Highland Paradise opened her gates. The first guided day tours included an exploration of the restored ancient village and botanical gardens. Sadly, the dream was cut short, in 1997 when Raymond fell ill and passed away. With her soul mate gone Emma returned to her provisions store on the coast. Before long, the gardens and dense bush became overgrown and Highland Paradise reverted back into hiding. Thirteen years later, in 2000, Teuira the daughter of the founder returned from New Zealand and decided that the legacy must go on and single-

handedly began the laborious task of rebuilding Highland Paradise to its former glory. Without financial backing and the inability to mortgage on sacred land, she was forced to seek alternative means to begin restoring the site. She sought the assistance of a close network of friends and mentors. It was at this point, that the Highland Paradise Cultural Centre was born and the vision continued.
