How to survive and thrive in the spiritual Capital of India Varanasi is sacred, soulful, scrumptious and spectacular but most importantly, it is the spiritual capital of India. What Mecca is to Islam and Jerusalem to Christianity, Varanasi is to Hinduism. The Lord Shiva’s city has been known by many names such as Banaras, Kashi, Avimukha, Anandavana, Rudravasa, and Mahashmashana. The current name Varanasi comes from Varuna and Assi, the two tributaries of the Ganges that come together in the heart of the holy city. Here pilgrims come to wash away their sins in the sacred Ganges waters, to cremate their loved ones, or simply to spend the final moments of their life here in a hope to attain moksha (liberation from the endless cycle of rebirth and union with the divine). Varanasi is mystical and one of the most visited cities in India. However, it is definitely not for the faint heated. At first glance, it will enthral you with its intensity, colours and chaos. But once you get past the initial culture shock and explore deeper, you will see an immensely exhilarating and captivating side of the city. Here is an insight not only to survive but thrive through the thrills in the spiritual Capital of India WHAT TO EXPECT As one of the oldest continuously inhabited cities in the world, Varanasi appears to be crumbling, whimsical, and eccentric. The maze of pedestrian alleys or ‘galis’ can feel claustrophobic and crowded. But this is where the heart of the city lives. Very little has changed in these tightly woven streets since the medieval ages. They have been home to more than a hundred cultures, traces of many of which can be found in the labyrinth of little lanes occupied by 3.5 million locals who call this bustling city their home. The city might not serve you the upmarket creative cocktails, however, it might teach you a few things about the cycle of life and death. Besides the ghats, one must relish the food, architecture and weaving industry of Banaras. And, how can you forget the Banarasi paan. Here are the top things to do in Varanasi.

By Archana Singh Photos by Nakul Sharma

WHAT TO DO IN VARANASI There is no dearth of things to do in Varanasi. From doing temple trips, attending yoga classes to witnessing prayer ceremonies on the riverbank, there is always something or the other happening in the city. Here are the top ten things to do in Varanasi Stroll around the ghats: The heart of Varanasi lies along the river, on ghats — a series of steps leading to the river’s edge— each staircase divided by history, religion, livelihood, and legends. A linear walk through the ghats is the best way to see the city’s multi-cultural fabric. From early morning till late night, the ghats are flooded by devotees, sadhus (holy men), fortune-tellers, yoga practitioners, beggars, boat operators, trinket vendors, snack-sellers, and visitors. The ghats are most atmospheric at dawn, when pilgrims gather at the riverbank for morning Puja (prayers), offering water from the sacred Ganges to the rising sun and taking a dip in the river to cleanse their souls of sins. Start walking from Assi Ghat, via Dashashwamedh and Manikarnika to Schindia Ghat, where an ancient stone Shiva temple is slowly slipping into the mire, and Panchganga Ghat, crowned by a stone mosque built by the Mughal emperor Aurangzeb. Despite the crowds, the smell of spirituality is all-encompassing. While clicking of pictures is allowed almost everywhere, show respect to devotees and avoid taking photos of funerals. Attend the Prayer ceremony: Every evening a mesmerising aarti ceremony takes place at Dashashwamedh Ghat and the air is filled with prayers, chanting, music and incense. Bells ring, drums bang, cymbals crash, oil lamps are thrust skywards and floating lights are cast into the Ganges. A festival-style atmosphere pervades and the ghat is chock-o-blocked by pilgrims and sightseers. It is the best time to capture the spiritual essence of the city. Taking a boat ride on the Ganges often provides a better vantage point. Make sure to reach early to get a better place to see the prayer ceremony.

Take a sunset boat ride on the River Ganga - Photo by Nakul Sharma

Take a boat ride: Whether you love photography or not, a dawn boat ride on the Ganges is highly recommended. It will give you an unmatched view of the ghats and temples from a more serene vantage point than observing from crowded land. Watching the morning bathing rituals is a very surreal experience and provides a lot of good photo opportunities. Witnessing cremations taking place at Manikarnika Ghat is a poignant experience that is not everyone’s cup of tea. An evening ride for uninterrupted views of the aarti ceremony at Dashashwamedh is a must do. And, you do not have to go hunting for a boatman. Walk along the embankment anywhere in Varanasi and a boatman will be sure to find you. You can also request your hotel to arrange a boat trip. Get lost in the galis: Varanasi’s twisting, turning maze of alleyways can be perplexing, but getting lost is all part of the authentic Varanasi experience, and you only need to find the nearest ghat to get your bearings. The alleys are lined with shops, food stalls, tucked-away shrines, candlelit deities in alcoves and homes painted in vivid colours, plus you will definitely see the revered cows jostling for space in crammed lanes. Prepare yourself for the galis’ pungent smell of incense, spicy food, cow dung, and waste – it will certainly awaken all your senses.

Go on a temple trail: Although it is not possible to visit all the hundreds of temples in the holy city, make sure to visit the gilded Vishwanath Temple. With its goldplated spires, Vishwanath is one of India’s most revered temples. Other temples are scattered through the streets of the old city. Every few metres you will see the tiny shrines venerating orange boulders, worshipped as Hanuman. Escape to Sarnath: Varanasi is not just limited to Hinduism. The city has been a Buddhist city for almost as long as it has been a Hindu city. Take a rickshaw 6km north through Varanasi’s busy streets to an island of calm at sacred Sarnath, where the Buddha preached his first sermon after achieving enlightenment. It’s a welcome change from the crowded streets of Varanasi. Once the centre of a huge monastic community, today the ruins of 2000-year-old religious buildings sprawl across a peaceful park, rising to the 34m-high Dhamekh Stupa. Plug into Indian culture: If you are a culturephile, Varanasi is a great place to learn about Indian culture as it is one of India’s most important centres of learning. Take a visit to the learned precincts of the Benares Hindu University, join a yoga class on the riverbank, or enrol on a course in Carnatic classical music at the International Music Centre Ashram. There cannot be a better place to learn Indian classical music than here since Varanasi is the home town of sitar-maestro Ravi Shankar. Savour the street food: There are a number of street foods in India that are famous, but nothing can beat the hot and crispy kachoris and samosas from Varanasi. The city will turn you into a foodie even if you are not one!

INDI A

“There cannot be a better place to learn Indian classical music than here since Varanasi is the home town of sitar-maestro Ravi Shankar” Little shops line little streets with sweets of all shapes and sizes. And, there are free samples too. Varanasi is not big on sit-down restaurants. You will find those, but they are dull and ordinary in comparison to street stalls. Stick to the streets and eat like a local. The city is a paradise for vegetarians. Most delicacies are prepared in desi ghee and mustard oil, be it sweet or savoury. Walk the streets and you will find kachori sabzi—fried, flaky bread with steamy curries, tikki ke chaat—fried potato cutlets with chutneys and yoghurt, and other kinds of chaat: quick street food, usually sweet and sour concoctions of various deep fried snacks topped with onions and tomatoes. Other must-try snacks are Chena

Dahi Vada, Makhan Malaiyyo or Nimish, Choora Matar, Dahi Chutney Wale Gol Gappe, Laaiya Chana, Baati Chokha, and Tamatar Chaat among others. Gulp down all these lipsmacking snacks with a glass of Banarasi Thandai or Lassi. The desserts this city offers are sinful. Some of the most delicious ones are lavang-latika, rabdi and kesar doodh (saffron flavoured milk). And, do not forget to round off the meal with a Banarasi paan. The interesting secret that most non-paan eaters don’t know is the fact that the Banarasi paan, iconised by Amitabh Bachchan in 1978 through “khaike paan banaras Wala” song in the movie Don is not from Banaras at all. But that should not stop you from trying it. Banaras holds the highest variety of Paans and there is no gali where you could not find one. Paan is a Hindi word for Betel leaves laced with areca nut and Pickling Lime. A pan can cost anywhere between INR 5 to INR 5000, depending upon the ingredients and making of paan Splurge on Banarasi silk: A trip to Varanasi is incomplete without roaming the streets of the old city to find that perfect Banarasi sari. Gold and silver brocade work and intricate designs are handwoven on pure silk, organza, georgette and other fine quality materials. Do not forget to ask for the quintessential ‘ring test’ to affirm the quality of silk, where a whole sari is passed through a small ring. Also, look out for hand-knotted carpets and shawls from Mirzapur. The rhythmic sound of looms fill the tapered streets of Gowdowliya, Lalapura and Madanpura in Varanasi. It draws you into cosy shops, tucked into snug floors of weathered buildings. For quality products, head to Jaharlall & Pannalall, one of the oldest establishments in the busy Gowdowliya market. Other places worth checking are

Pandey Sari Industries near Manikarnika Ghat, Baba Black Sheep in Bhelupura Crossing and U.P. Cottage Emporium run by Nawal Kishore in Tripura Bhairawi. The city is also a great place to buy musical instruments and brassware. Marvel Varanasi’s architecture: The architecture of Kashi reflects diversity in construction and detailing. Ancient buildings falling to ruins, traditional balconies, red brickwork, sturdy pillars, connected congested lanes, indiscreet modern buildings, sootcovered temples and carpets of ash are what you will see when you explore the Land of Spirituality. The course of the River Ganges has lent itself to the step like constructions of the Ghats. Some ghats consist of buildings from the Rajput era - large havelis with big domes. Some are tall buildings from the Vijayanagara Empire. Sometimes modern glass structures can be found standing next to ancient monoliths. Unlike other ancient cities, Varanasi is not preserved or UNESCO-guarded, so buildings are built on top of others, and sometimes inside other buildings. Visiting Varanasi is no ordinary tour. It is a spiritual journey of time, emotion and transcendence. As the Beatles say: “Roll up!”

Malaysia’s east coast is simply beautiful. Home to the country’s largest denomination, these Malay states boast picturesque palmfringed beaches and bucolic kampung (villages). But what brings folks back to the region time and again are the tantalising tropical islands offshore Kelantan and Terengganu. Paradise barely does these gems justice, though that will likely be the word that comes to mind when you first lay eyes on the white sands and azure waters of Pulau Perhentian, Pulau Redang or Pulau Kapas. Snorkelers and divers revel in these crystal-clear waters featuring colourful coral gardens and myriads of underwater beings. Travellers prepared to explore beyond the island resorts will find a distinctive vibe in cities like Kota Bharu and Kuala Terengganu. These urban hubs have retained their Malay heritage and boast lively Chinatown districts, but are also developing rapidly and reinventing themselves. Nature lovers will want to spend time exploring the national parks protecting the remaining pockets of rainforest and best accessed along the famous jungle railway. However, these days, travellers look for

different ways to experience the country they are visiting, instead of doing the usual “touristy” stuff. Such experiential travel, although not something new, has been growing in popularity. In Malaysia itself, travel itineraries offered by local guides and tour agencies would include either a homestay visit or accommodation. A homestay programme gives tourists the opportunity to stay with a local family, and experience what daily life is like in the chosen community. What more if it is during the festive Hari Raya Aidilfitri, as you get to learn about the culture and lifestyle of that community and participate in selected activities. Kampung experience In Malaysia, what the tourism and hospitality industry usually promotes is the kampung homestay experience. This is where guests get to live in an actual kampung or village. When travellers opt for a kampung homestay experience, they get to try out activities that they otherwise would not have access to. Categorised into culture and

lifestyle; economic activities; recreation; and environmental preservation, the kampung experience is bountiful. Culture and lifestyle include activities like experiencing traditional music, dance, games, or even attending a traditional festival or wedding ceremony. Economic activities include rubber tapping, fish breeding, as well as agricultural activities like paddy planting/ harvesting, cocoa harvesting, oil palm harvesting, and fruit plucking. Recreation includes sightseeing and visiting nearby attractions, as well as outdoor activities such as jungle-trekking and white water rafting. Environment preservation includes eco-friendly activities like tree planting. All the activities that a traveller gets to engage in are authentically Malaysian, and many are also unique to the particular place they are staying at. They get to experience a day in the life of a local, from waking up in the morning to watch the sunrise, to spending time with the host’s children after they return home from school, and playing traditional games such as congkak, gasing or top spinning, and wau or kite flying. Travellers can also explore their natural surroundings and take part in outdoor activities. In some places, they get to learn how to make traditional handicrafts like basket weaving, batik painting and more. During festivals, guests to cook traditional dishes and local delicacies. Some villages would prepare nightly shows like cultural dances and musical performances. Hit the road The best way to experience the east coast of Malaysia is by road. From Kuala Lumpur, head towards the East Coast Expressway, making a pit stop in Kuantan for an introductory meal to traditional Malay cuisine. The capital city of Pahang, Kuantan is not exactly a place that has been geared towards tourism, but it has plenty of attractions that worth more than just a daytrip. From great museums, beautiful mosques and excellent eateries, you might be surprised to find out

what Kuantan has got to offer. Appease your hunger at Pak Lah Rojak & Nasi Ayam located in Taman Gelora. This renowned stall has been known for their flavourful rojak, chicken rice as well as shaved ice. The best part about this stall is that it’s situated right next to Pantai Gelora, so you can enjoy the sea breeze and a beach view while you dine. Three hours later, you will reach Kuala Terengganu. The city is home to Masjid Tengku Tengah Zaharah, or more commonly known as Masjid Terapung (Floating Mosque), a beautiful white mosque that combines the traditional Malay and Moorish architecture. It’s built on a platform surrounded by a manmade lake, which makes it appear like it’s floating on the waters, hence the nickname. Do not leave without having a hearty breakfast at Nasi Dagang Mak Ngah. Nasi Dagang, coconut milk steamed rice with tuna fish curry and pickles. Serving one of the best nasi dagang in town, this restaurant opens early in the morning and is a favourite breakfast spot for the locals before they head to work. Later, make your way to Kampung Losong, the centre of Terengganu’s favourite snack, keropok lekor, which is made from fish and sago flour and often described as Pulau Kapas

KUALA TERENGGANU 28x weekly KOTA BHARU 46x weekly

“Roti Titab, toast served with a soft boiled egg on top and kaya jam” fish sausage. Another three-hour drive will land you in Kota Bharu. There are a lot of museums in Kota Bharu, including the State Museum and Jahar Palace. Due to the close proximity with Thailand, you can also find many great temples in nearby towns like Wat Phothivihan, where the huge reclining Buddha lies. For lunch, have some hearty nasi air. It’s quite similar to rice porridge except that it comes with soup, which makes it watery. Start the next day early at Kopitiam Kita, probably the most popular breakfast spot in Kota Bharu. Every morning, this old-school cafe is thronged by locals. Kopitiam Kita opens at 7am and serves a breakfast menu that’s also perfect as brunch. Roti Titab, toast served with a soft boiled egg on top and kaya jam, is one of the more famous menu items. Also must try is their nasi kerabu or nasi tumpang, blue-coloured rice with dried fish or fried chicken, crackers, pickles and herb salads. Underrated, Malaysia’s east coast is filled with age-old culture, delectable food, eco adventures, and shopping opportunities that make it well-worth the drive from Kuala Lumpur. Time consuming but worth every minute, it is the perfect place to go to if you want to have an authentic Malaysian experience. JUNE 2 019 | M ALIND OM AG | 25

TravelTips Tips #1

Tips #2

Pre-plan for better bargain Pre-purchase you meal or snacks onboard prior to your flight. You can take you time to look through the selections and you will probably get a better bargain by pre-booking it

Learn the language Memorize a handful of word of the native language of your destination will be helpful. It will make your interactions easier, the locals tend to be warm to those who have made the effort to communicate with them.

Tips #3 Carry a travelling firstaid kit. Be precautious and always travel with a basic first-aid-kit. Essential items such as antibacterial cream, bandage tape may come in handy at times.

Did You Know? Airliners’ lifespans are not determined by years. Instead, they are determined by the number of pressurisations the plane undergoes. Every time a plane is pressurised during flight, it causes stress on the plane’s fuselage, and cracks.

Many of the earlier 737 models were made with what they called eyebrow windows. These made it easier for the pilots to use star navigation and it gave them better visibility when they were making turns with the aircraft.

The first orders for the impressive airliner were placed by the German based airline Lufthansa. We are certain that Boeing did not mind quickly agreeing to fill as many requests as they were willing to place for the new craft.

Awaken Your Taste Bud at Rock Bottom

Tucked away between the chic boutiques, hipster coffee stores, and breakfast spots that famously blanket Jalan Telawi is Rock Bottom Bangsar, a sports bar that’s easy on the eyes and gives you that authentic sports bar experiences. Sporting a live band setup, many big screens for major sporting events, and a fully stocked, massive bar, Rock Bottom Bangsar is definitely an eye opener from your usual night out. Leslie Gomez, founder and prominent Managing Director of The Olive Tree Group, fearlessly mixed two reactive and patently contradictory lifestyle concepts – North Indian haute cuisine, and live rock music venue-cum sports bar. The result was indeed explosive – but in a showstopping, launching-applauding-crowds-onto-their-feet kind of way. Rock Bottom Bangsar pans out amazing signature dishes such as their taste bud awakening, tender, melt-in-your-mouth Mutton Briyani, Chicken Tikka, the baroquely sumptuous Seafood Spaghetti Marinara; and the dazzlingly-plated, artfully-arranged, Crispy Skin Sea bass served with Balsamic Cream Sauce, Rustic Potato, Sauteed Spinach and Ikura As the night progresses, be treated to an eargasmic experience – the 7 day, 7 different rock bands that take center stage will blow you away. Couple that with a resident DJ that will play all your 90s and 00s music when the sun goes down, so if you are a 90s kid, it is a blast to enjoy some of your teen faves in a new context. Despite the name Rock Bottom, your experience here will surely be an uplifting one!

O IL

Sometimes, there is a gift from Nature where the creation is perfect for so many different uses without having to alter its natural biology. That natural gift is Palm Oil. It is near-perfection as a trans-free substitute but we still have to unlock more of its secrets and wonders as well as its immense benefits for mankind. What are trans fats? Trans fats are produced when polyunsaturated oils are hydrogenated in the presence of a catalyst. Hydrogenation primarily increases the melting range of the unsaturated fats and thereby enables their incorporation into many solid fat formulations. Trans fats are present in foods containing traditional stick margarine, vegetable shortenings, vanaspati, bakery and frying fats. They are widely distributed in the foods we consume. However, research has proven that trans fats are much worse than saturated fats in their overall impact on heart health. Studies conducted on a large population have implicated trans fats as playing a role in chronic diseases such as heart disease, type 2 diabetes, cancer and obesity. Trans fats increase the lowdensity lipoprotein cholesterol (LDL-C) and decreased the beneficial high-density lipoprotein cholesterol (HDL-C); both effects are harmful to the heart. Palm oil as the choice for trans-free fat formulations Shortenings, including bakery fats are used extensively in the food industry. Originally intended as a replacement for lard, hydrogenated fats became a mainstay in most shortening formulations. An important function of a shortening is its ability to incorporate and then hold air when beaten in a cake batter or creamed with sugar. The trapping of air facilitates the formation of a porous structure and increases volume of the cream and the baked product. Shortenings also contribute to

37 | M ALIND OM AG | JUNE 2 019

lubrication and give the dough the required final consistency. Such properties cannot be imparted by native liquid oils, which lack the appropriate solids content. Palm oil is an exception since it is natural semisolid fat. A variety of trans-free cake shortenings are possible with palm-based products and these can be specially designed for very specific applications. Margarine is defined as liquid or plastic emulsion containing not less than 80% fat, and not more than 16% water. Good physical properties necessary for quality margarine include emulsion stability without oil separation, nobrittleness, good spreadability and a clean, smooth melt in the mouth. Margarine must be firm but spreadable and these properties are related to the proportion of solid and liquid fat in the product at a given temperature. These requirements make it impossible for liquid oils in their native state to be incorporated in these formulations, unless a portion is also hydrogenated, giving rise to trans fats. With increasing awareness about the detrimental effects of trans fats, these trans fats-containing margarines are being

phased out in favour of natural fat based formulations. In such products, palm oil has become a favoured ingredient. Alternately, by suitably modifying natural semi-solid and solid fats through fractionation, interesterification or blending, it is possible to produce a variety of margarines that are trans fat-free. Vegetable ghee or vanaspati is a major dietary fat source in many developing countries of the Middle East, Indian subcontinent, Afghanistan and South- East Asia. Vanaspati is usually produced with a range of fat blends, including a very high level of hydrogenated fats. Any effort to reduce trans fats in these products will entail the incorporation of palm oil as a base ingredient. It is also possible to produce vanaspati using 100% palm oil and such a product has been found to be highly acceptable in many West Asian countries. Nevertheless, a number of formulations using blends of palm and soft oils have been tested for vanaspati applications with promising results in terms of consumer acceptance and reduced trans fat content.
