Singapore Chingay Parade If a single event could capture the essence of Singapore’s unique multicultural personality, it would be the Chingay Parade – an annual marvel of dazzling floats, dancing dragons and stilt walkers. This wondrous event, taking place on 19 and 20 February, brings together people and performances from across the spectrum of Singaporean culture; celebrated by Chinese, Malays, Indians and Eurasians alike. With all its noise and gaiety, the parade was mooted over four decades ago as a way to compensate for the ban that had been placed on firecrackers, a customary Chinese New Year practice to drive away evil spirits. Today, the Chingay Parade is the largest street performance and float parade in Asia – a shimmering celebration that makes its way across the heartland of this country. For visitors to Singaporean shores, it also offers a glimpse into what makes Singapore so unique.

he first thing that crosses many minds with the first mention of this country is celebrities. For those fans of the 80’s and 90’s entertainment scene, of course the ever famous Jacky Chan, Aaron Kwok, Andy Lau and Sammi Cheng are iconic to this land whereby the country has largely earned its popularity beyond Asia and has captured attentions of many. While Hong Kong is still largely known for its entertainment industry, the country also serves as a ma jor port since colonial times. It is renowned for its economic strength and stands as one of Asia’s international financial hub. The convenient accessibility via air and sea makes it an enticing place to explore. This brings down to another advantage to business and leisure travellers alike with Malindo’s launch of weekly flights between Kuala Lumpur and Hong Kong starting this month.
This commercial island has strong influences of the Cantonese culture, hence the origin of popular cuisines and common language spoken. It has flourished beyond measure in the past two decades, that it has become one of the most popular choices for vacations, business conferences, honeymoons, food indulgences and, of course, as a ma jor high-end shopping paradise in Asia. When I visited Hong Kong for the first time, almost two decades ago, in 1997, it was a rather significant time for this land. This was when Hong Kong was peacefully returned to China by the British. The nationalism spirits was at its peak and foreigners visiting this island during this time had the advantage of experiencing the soaring initiatives that the government rolled out in celebrating this hardover. This included tourismboosting activities that further highlighted the unique heritage of the Chinese people.

Gone are the days when it is just a dream as the iconic Disneyland Hong Kong theme park, is merely a plane-ride away by air for those residing in Asia. Combined with the originality of Disneyland in the USA, and incorporated with subtle nuances of the Chinese culture, this internationally renowned theme park will surely capture your While Hong Kong is an urban city that reserves its rich heritage and flaunts uncountable attractions, here are those that were personally appealing. The Jumbo Kingdom Jumbo was initially renowned for its floating restaurant at Aberdeen Harbour serving the finest seafood Hong Kong has to offer. Today, it is not only a compulsory dining stop but also a modern day entertainment unit with the concept of theme park on the sea that includes sight- seeing and cultural attractions. Shopping For many, Hong Kong is undisputed fashion capital of Asia. The locals, especially those originating from the urban area, take pride in their appearance and ensure that they are garbed in the latest, if not the trendiest, in town. Shopping outlets are easily found in every nook and corner of the city island. However, the must-go place for designer labels is Causeway Bay. WANDERLUST LAHORE
MUST EATS Nihari Nihari is one of Pakistan’s national dishes. It is a type of thick and oily curry where a heady concoction of spices and meat, usually beef, lamb or mutton, is cooked gently for hours, sometimes even buried underground while it cooks overnight, resulting in an intensely flavourful stew where the meat is extremely tender. What makes Nihari different from other South Asian curries is the addition of bone marrow, or occasionally cooked brain, which is served alongside the steaming bowl of stew. Nihari may be garnished with freshly chopped coriander leaves, fried onions, green chillies, julienned ginger, lemons and sliced white radish. It is often enjoyed with a variety of local flat breads such as naan or taftan. Faluda Not only for the sweet-toothed, Faluda (or Falooda) is the best way to treat yourself and to cool-off when you are exploring Lahore under the hot summer sun. Faluda is made by cooking congealed milk or dried evaporated milk solids until the mixture is thick. It is then left to cool and then served with soft and jelly-like vermicelli or kulfi, which is a type of frozen dessert similar to ice cream that is unique to the Indian subcontinent, and then finished off with variety of toppings and sweet syrup. You can choose to add rose water, crushed almond, fresh fruits and jellies to make your Faluda a one-of-a-kind dessert customized to your taste and preference. Ubiquitous all over Lahore, don’t be shy to ask the locals to point you out to the best Faluda stall in the neighbourhood. Gowal Mandi, also known as the food street, is your go-to destination to sample the best street foods that Lahore has to offer.
With a population touching 8.5 million, Lahore is the second largest city in Pakistan and reigns supreme in its reputation as the culture, arts and history centre of the country. Words such as mystical, unique, beautiful and mysterious are often used to describe this ancient city. If legends are to be believed, Loh the son of Rama, from the Hindu epic Ramayana, founded Lahore 4,000 years ago. Legends aside,
the Lahore of today is a bustling and friendly city that admirably retains its old world charms from the Mughal and British era while keeping up with the winds of change that sweeps through the sands of time. Come and explore Lahore with these must-eats, mustshops, must-sees and mustdos. MALINDOMAG | 17

MUST SHOPS Anarkali Bazaar If you love history and a good bargain, then Anarkali Bazaar is a must-shop destination. Anarkali Bazaar is the oldest marketplace in Lahore and here you will find hundreds of stalls selling miscellaneous goods from traditional food items to handicrafts and exquisitely embroidered cloths, colorful gems and jewelries, books, crockery and even automobile parts! The market derives its name from a nearby mausoleum, thought to be that of the Mughal Emperor Akbar’s favourite courtesan named Anarkali, who was buried alive and entombed for having a forbidden love affair with the Emperor’s son, Prince Salim, later to become Emperor Jahangir. Sultan Qutb-ud-din Aibak’s tomb is also situated in this bazaar. Widely agreed to be a must-shop place for tourists and locals alike due to its cultural and historical value, please remember to practice your bargaining skills before you make your way here!
Fortress Stadium The Fortress Stadium, or simply known as Fortress, is a bustling and popular open space shopping area that consists of shopping centres, restaurants, cafes, entertainment outlets and a sports stadium. It is a popular spot for the urban youth in Lahore and is one of the busiest commercial areas of the city. Fortress has a large variety boutiques offering ladies and gents ready-to-wear garments where you can easily buy a richly embroidered and colorful shalwar kameez or a Pashtun dress to stun your friends back home. It also houses Fortress Square, Hyperstar superstore, Joyland amusement park, Sinbad play area for children and Sozo World cinema. In short, if you are in need of buying anything or if you just want to spend some time soaking up the feel of the city, Fortress is the place to go. The stadium itself provides the setting for the internationally renowned “National Horse and Cattle Show” which is one of the most important annual festivals in Lahore, which sees an impressive display of livestock and the many spectacular feats of horsemanship, tent pegging, dressage and so on.
MUST SEES Lahore Fort Inscribed as a UNESCO World Heritage Site in 1981, the Lahore Fort, or locally known as Shahi Qila, is a citadel in the city of Lahore. The magnificent structure was built during the reign of the Mughal Emperor Akbar, regarded as the most illustrious ruler of the Mughal Empire, between 1556 – 1605 and was used to guard the northwest frontier of the kingdom The chequered history of the fort is a living witness of the zenith and nadir of the Mughals, the Sikhs and the colonial rulers. At present time, the Lahore Fort showcases three small site museums within the area of Lahore Fort, which are the Mughal Gallery, the Armory Museum and the Sikh Gallery. You can easily be mesmerized as you walk along its ancient walls and feast your eyes on the gorgeous and elaborate mosaic decoration of the Pictured Wall, one of the many notable features and buildings within the fort. 18 | MALINDOMAG
Shalimar Gardens Another must-see UNESCO World Heritage Site is the Shalimar Gardens. The Gardens boasts 410 fountains, so ingeniously laid out and engineered by the Mughals with its complex water and thermal systems that they continue to baffle today’s scientists. Just as mysterious as its architectural blueprint is the meaning of the word “Shalimar” which is believed, but not confirmed, to be of Arabic of Persian origin. But one thing is certain: the three-level terraces of the Gardens, which are elevated by 4 to 5 metres above each other, called Bestower of Pleasure, Bestower of Goodness and Bestower of Life, could easily whisk you away to a period that time has forgotten.

MUST DO’s Sufi Music The Mystic Music Sufi Festival, now in its 15th year, would be a musical treat that you would not want to miss if you are a Sufi music fan. But if you cannot wait for this annual festival to take place, and you happen to be in Lahore on a Thursday, make your way to the Tomb of Shah Jamal in Icchra to watch devotees performing Sufi music. A Sufi is a member of the mystical, ascetic branch of Islam and Sufi music, the most well-known being the Qawwali, is the devotional music of the Sufis, inspired by the works of Sufi poets, like Rumi, Hafiz, Bulleh Shah, Amir Khusrow and Khwa ja Ghulam Farid. Play a game of Polo Lahories have long been known for their love for horses and an excursion to watch a Polo game or participate in one would be a perfect activity to make friends with these magnificent beasts that are so revered and admired by the locals. Head to Lahore Polo Club, where emperors, kings and common folks have been playing Polo for centuries. You can also sign up for riding lessons after sunset or participate in a Polo clinic if you would like to learn the game. Get Your Adrenaline Pumping If extreme sports and the outdoors are more your speed, head to EMAC, which stands for Extreme Manuevers Adventure Club located in Johar Town, Lahore. You can choose individual activities to participate in, go for the day packages or sign up for its very popular 3D adventure weekend programs. Activities range from cave exploration, rappelling, trekking and bonfire camping to target shooting, scuba diving and jetskiing.
Lahore Museum The Lahore Museum famously laid claim to having Rudyard Kipling’s father, John Lockwood Kipling, as one of its earliest and most famous curators. The Museum is designed by Sir Ganga Ram Agrawal, who also designed and built the Lahore General Post Office, Aitchison College, Mayo School of Arts (now the National College of Arts), Ganga Ram Hospital and the Albert Victor wing of Mayo Hospital. The bar is always full come sunset, as throngs of hotel guests as well as the public gather at the award-winning bar to observe the sunset and try out its signature drinks like Punch Rock, Rockberry
Martini and Spa on the Rock. With a regular line-up of world-class, international DJs dropping the beat, it’s never a dull moment when you’re chilling out at the Rock Bar. If you do plan to drop by, be sure to show up early to beat the crowd. It should be highlighted that priority is given to hotel guests staying at Ayana Resort, so if you’re not staying at the resort, all the more you should show up early to make sure you don’t miss out on the amazing sunset view. Wat Arun or Temple of Dawn, Bangkok, Thailand. Steeped in history and architectural grandeur, the Wat Arun (locally known as Wat Chaeng), or Temple of Dawn, is an iconic landmark in Bangkok that is located on the west bank of the Chao Phraya River, opposite of another well-known temple, Wat Pho. Believed to have been built during the Ayutthaya era, this stunning edifice from the past is often recognised by its massive prang (a usually richly carved tower-like spire) and its iridescence when sunlight reflects on the many porcelains encrusting the central prang. It’s no surprise that the structure made it into our list as it offers not just cultural beauty and impeccable craftsmanship in its own. If you brave the steep stairway on the side of the prang and climb your way to the top
under the blazing hot sun, you’ll be rewarded with a sunset view overlooking the winding Chao Phraya River and the Grand Palace that will be etched into your memory. Don’t let the name fool you. Though it is named Temple of Dawn, the Wat Aran is absolutely impressive during sunset, which explains why the temple is usually swamped with visitors from across the globe during late afternoons. While the temple is open to visitors, be mindful that the Wat Arun is an important place of worship to the Buddhist; therefore it is highly recommended that you are dressed appropriately and be respectful of the area. This is my second time with Malindo Air and it was a better experience than the first. Seats were comfortable as usual. Good legroom. Better cabin crew service, very friendly with smiles and efficiency. Highly recommended. Would fly this airline again. Adree (Malaysia)

My flight was this morning and the check-in staff was courteous, polite. Flight was enjoyably smooth. It started drizzling in Penang and thanks to your ground staff standing by to give out umbrellas, which is much appreciated. Overall, it was a good experience. I’m a frequent flyer with Malindo Air and as a whole I’ve been very pleased with your service. THANK YOU, Malindo Air! Ngiam (Malaysia)

In-flight entertainment is available with a personal TV on each seat! Understandably a low cost airline but in some ways, it seems to be more than ‘low cost’. Patrick Tan (Malaysia)

During checking in too - your ground staff was very helpful. I mentioned that I am a senior citizen (65 yrs old) and was having a bad headache and they let me go to the front of the queue, so there was no delay in boarding.

I flew to Penang on Thursday morning on the 7.40am flight and was very well treated by your girls. Your stewardess was very kind - told her I had a bad headache. She gave me a glass of warm water and Panadol medicine.

Definitely purchasing free tickets as advertised! Last week, I was on my way to Johor Bharu on the 5th and return on the 6th, and I only had to pay RM80 all-in-fare, that is for airport tax, GST and administrative fee. Thankfully, the flight was one time to and fro. Before this flight, I flew with Malindo Air to Bali, Indonesia from klia2. All-in-fare was only RM166 return ticket. Thank you, Malindo Air for making my travel experience safe and affordable! Raj Mosas (Malaysia)

JIBBY CHOW REFINED CHINESE CUISINE By C K Ng
A
mere 20 minutes’ drive from Subang Skypark Terminal is Jibby Chow, a brand new Halal Chinese restaurant under the Serai Group. Located in SS15 Courtyard (formerly known as First Subang) in the bustling and very popular Subang Jaya neighbourhood, one would be forgiven if you think that you have stepped into a modern and trendy western food restaurant, thanks to its minimalistic and functional interior design, combined with edgy lighting fixtures and neon signs. I was greeted by Mohd Na jib Abdul Hamid, who is the restaurant’s Group Executive Chef and Group Director and also whose moniker Jibby is derived from. A seasoned restaurateur who spent 12 years honing his skills at fine dining in Melbourne, Australia, Na jib is personally responsible for conceptualising Jibby Chow and designing its menu which is revealed to be a delicate balance of familiar, traditional, Chinese

dishes and contemporary fusion dishes that would not seem out of place in a high-end Hong Kong restaurant.
Jibby Chow can easily sit 200 patrons at a time and employs an open space concept where you can see the whole dining area at a glance and natural light is allowed to stream into the restaurant, giving it an airy and relaxed feel. A display cabinet at the entrance of the restaurant displays delicate Chinese porcelain pieces with blue trimmings which match the floor tiles in the private enclave area. Opening up a Halal Chinese restaurant is definitely an interesting challenge for Na jib especially in ensuring the taste and authenticity of the dishes are not compromised. For starters, Na jib and his handpicked team of staff visited many provinces in China such as Guangzhou and Shanghai to sample the food themselves. Then they formulated Jibby Chow’s own special blends of soy sauce, paste, mixes and XO sauce (which stands for extraordinary sauce) using Halal ingredients and conducted many tasting sessions with family,

friends and Chinese cuisine experts to ensure that the dishes that they prepare and serve are on par with the original creations. Quality, fresh ingredients seem to be the number one priority for Na jib. For example, instead of using regular spinach, Jibby Chow’s stir fry vegetable features
Australian baby spinach. Fish is flown in fresh from Sabah, while meats such as beef and lamb are sourced from Australia. The meal starts with Pulled spiced roasted duck, steamed mantao, XO sauce, julienne cucumber and preserved plum jam, a dish that is best eaten as soon it comes out of the kitchen in order for you to fully savour the impact. The soft, steamed mantao was the perfect casing for the roasted duck, which was crispy and fragrant and the julienned cucumber provided a fresh crunch. The Mongolian style woktossed Australian lamb ribs with chilli and cucumber ribbon deserves a special mention of its own. The lamb ribs are cooked for hours making it extremely tender and flavourful; the sauce has a smoky barbeque tang to it and the addition of a touch of cili padi gives it an added kick that simply burst in your mouth. This dish is definitely a must if you ever make
your way to Jibby Chow. The Golden crisp prawn with salted eggs and Mud crab in chilli sauce and egg drop are served with fried mantao and represent Jibby Chow’s nod to comfort food that you’d expect to see at a Chinese restaurant. In order to retain the colour and its solid texture, the salted eggs are steamed first before they are added to the prawns, giving the dish a vivid yellow colour and crunch, crispy texture. The succulent mud crabs are generous in size and the chilli gravy, a potent combination of sweet, sour and hot, is perfect to be mopped up with the fried mantao. A word of warning though, this dish can be addictive as well as messy so expect to do some pounding and crunching in order to coax the flesh out the huge crab claws. Rounding off the meal are Jibby Chow Cantontese-style fried rice with crab meat, made with basmati rice, wok-fried king oyster mushrooms, enoki, shitake and Australian baby spinach and the versatile Calamansi sambal chicken. For dessert, we had a serving each of Jibby Chow’s superb Cempedak and Coconut gelato. Hot and cold chrysanthemum tea was served throughout the meal. Jibby Chow certainly delivers the refine Chinese cuisine that it promises. The service is fast and attentive; food arrives at your table piping hot and your tea cup is never left empty for too long. It is a great setting for an affordable and delicious Chinese meal with family or friends, or even for special occasions like an office outing or Chinese New Year’s eve dinner. Most importantly, the food is excellent and generously portioned, making a meal at Jibby Chow one to remember for a long time.

you to try them all out and fall in love with a country that makes it its business to perfect the art of golf and embodies a tropical paradise. Hole 1 – Laguna Phuket, Phuket. Par-4 A delightful and testing opening hole that requires a perfectly placed tee shot to the left side of the fairway to avoid a Banyan tree blocking an approach to the green from the right side. Water to the right of the green and long left necessitates caution with the second shot.

Laguna Phuket

Hole 3 – Chiangmai Highlands, Chiangmai. Par-5 Chiangmai Highlands is renowned for its wonderful views, rolling fairways and bunkering. The third hole is relatively, flat but is protected by water on the left, out of bounds on the right and bunkers around the elevated green. At 550 yards from the blue tees it is long enough to require three shots to reach the green by most players. Hole 4 - Siam Country Club (Old Course), Pattaya. Par-3 A downhill hole that plays 148 yards from the white tees and 189 yards from the blue. Strong ocean breeze can come into play. A large bunker on the left guards one side of the green, with a small bunker and a tightly mown bailout area to the right gathering in errant shots.
Hole 2 – Thai Country Club, Bangkok. Par-4 A sharp dogleg with a sea of bunkers blocking errant tee shots to the right and those aimed at the green from the tee. Water in front of the tee and to the right of the green promotes a straight drive left of the green, followed by a short or mid iron.
Hole 5 – Siam Country Club (Plantation Course), Pattaya. Par-5 A classic uphill par-5 with heavy bunkering across a split fairway. Playing left is the best option, although another set of bunkers can penalise the second shot. Tee shots hit right necessitate a steep second shot. The highly elevated green slopes towards the fairway. Hole 6 – Thai Country Club, Bangkok. Par-3 Named as one of the great par-3 holes in Asia and playing 197 yards from the blue tees, this is both an
extremely testing and attractive hole. Water on the right of the green makes it imperative that the tee shot stays centre or slightly left. Hole 7 – Riverdale Golf Club, Bangkok. Par-4 This short risk-and-reward hole plays sharply left from a landing area off the tee that is well protected by bunkers. The short approach shot is risky because of a sloping green and water on the right. It is possible for very long hitters to cut the corner and seek to drive the green, but the chances of success are limited. Hole 8 – Muang Kaew Golf Course, Bangkok. Par-4 This is one of the tougher holes at Muang Kaew, the closest course to downtown Bangkok. Playing more than 400 yards from both the white and blue tees, the dogleg right hole requires two excellent shots to reach the green in regulation. A lake guards the right hand side, while the green is well protected by bunkers left and right. Hole 9 – Siam Country Club (Old Course) Pattaya. Par-4 This very long hole could easily be a par-5. It plays downhill from the tee, but requires a long and precise shot to reach or be close to the green. All but the longest hitters are forced to rely on one putt to make par. MALINDOMAG | 35

IN-FLIGHT HIGH FLYER
CONQUERING the SKY Flight Attendant Jasmine Pau Cheng Hee shares her journey to conquer the skies
48 | MALINDOMAG
IN-FLIGHT HIGH FLYER
Her desire to improve her command of the English language and to overcome her shyness became the golden ticket for Jasmine Pau Cheng Hee to break out of her shell and blossomed into the warm and sociable cabin crew that she is today. While Jasmine retains her gentle and sweet demeanour, being a flight attendant taught her to be confident and independent – a far cry from the Sibu girl who, by her own admission, hardly talked to anyone at all. What did you want to be when you were growing up? Originally I wanted to become a nurse, then a teacher. I am an introvert and was very shy. In fact, my old friends from school would probably use the word “anti-social” to describe me. While waiting for my Sijil Pela jaran Malaysia results, I decided to enrol in an English course. I believed if I were able to communicate better, I would be able to overcome my shyness. As my confidence grew, I decided to apply and enrol in a flight attendant school. The rest, as they say, is history. What do you love the most about your job? This job really opened my eyes and gave me the confidence in myself and my abilities. One of the things that surprised me the most is how much I love meeting and interacting with people. I love being able to build relationships – once a passenger steps into the cabin, he essentially becomes your ward and responsibility and I feel honoured to be able to serve them. Of course sometimes you face challenging situations, like restless children who refuse to sit properly or fasten their seat belts, or tired businessmen who are a bit grumpy and don’t want to put their hand luggage into the overhead cabin compartment, but it is all in a day’s job. I especially like the part when I serve passengers their refreshments because I get to talk and get to know them a little better and put
in my personal touch so that they feel comfortable and happy flying Malindo Air. Which is your favourite destination? I am attached to Malindo Air’s ATR 72-600 operations, which flies out of Subang Skypark Terminal. My favourite destination is Penang because I love the beach and also because we see a lot of business passengers on the flight. Once I asked a passenger his seat number and he answered in the form of a Math equation that I had to solve in order to find the right seat. I still laugh when I recall the incident. What do you like most about Malindo Air? This is my first-ever job and I am very happy I was given the opportunity join the Malindo Air family. The people here is very friendly and helpful; additionally the airline is growing rapidly and adding new routes into its network which means new destinations to explore and lots of people to meet! To tell you the truth, I have never been out of Malaysia (laughs) and I look forward to exploring the world with the airline. My ambition is to improve myself and my skill sets so that I can become a Senior Flight Attendant someday. My colleagues and seniors have been very helpful in providing encouragement and sharing their experience and knowledge. I still have a long way to go and to learn. I hope to have a long and happy “marriage” with Malindo Air. What is the hardest thing about being a flight attendant? The hours can be very long with little breaks in between. However, I like my work very much and I love flying. I am fortunate that I have a very supportive family and friends who understand that this job does not afford me with a lot of free time. I do fly back to Sarawak whenever I can; that’s when the staff discount becomes handy! When I started a little over a year ago, there were a lot of new things
that I had to learn especially in terms of safety, security, managing emergencies and so on. Each flight is different and I have to learn to adapt and apply what I have learned in real-life situations. The learning process is continuous to ensure that we are well-equipped to handle anything that comes our way. The job is not just about looking nice; I also need to be healthy and fit as the job requires me to stand up and walk for extended periods of time. What would be your advice to those who would like to consider being a cabin crew? Good communication skill is a must. As a flight attendant, you are expected to be able to speak Bahasa Malaysia and English fluently. You also need to have a warm personality and the ability to anticipate passengers’ needs so that they feel safe and well taken care of when they are flying with you. You need to be able to think quickly on your feet to help passengers solve their problems. For me, the best part of my job is when I stand by the aircraft door to bid our passengers good bye and they smile back at me and say thank you. It is a great feeling and I feel blessed that they choose Malindo Air to serve their air travel needs.
