Welcome to this special food issue of Mam'selle! A mini magazine for Sindy doll lovers, fans and collectors. I've had the greatest fun guest editing Mam’selle and putting this issue together with Penelope. I pitched the food themed idea to her - I mean, who doesn't love thinking about and creating food? So, I’m thrilled to share our alternative ‘love’ issue. We get to see Baking Sindy making an episode of her 'Sindy's Kitchen' TV show, then Russel and Clive from Deliciously Sindy arrange a coffee tasting session for Penelope and also give their tips for making the perfect coffee at home. Add to this a Miniverse Kitchen makeover from craft editor @stylemysindy, and a focus on the Hostess Trolley, and you have a super-sized edition to take you through to March. Enjoy!

Hello viewers and a very warm welcome to Sindy’s Kitchen
‘This week I’m going to make an easy delicious dessert of chocolate mousse with fresh raspberries and almond crumb.’
‘First, put the raspberries into your dessert dish. Then add the mousse - I’m using ready made as it’s delicious, easy and quick!’
’Spoon on the almond crumb, then add another mousse layer.’
‘Top with the last raspberry and, if you have it, some nice, fresh mint from the garden.’
Next, pop it in the fridge for at least an hour to set.
‘I’ve topped mine with some raspberry jam and a couple of squares of dark chocolate that I found in the fridge.’
‘And just look at that! Doesn’t it look yummy?’

Baking Sindy’s Chocolate Cherry Layer Cake
TODAY WE'RE MAKING A VERY SPECIAL CHOCOLATE LAYER CAKE
Baking Sindy’s Chocolate Cake INGREDIENTS 225g self-raising flour 225g butter 225g caster sugar 4 fresh eggs 2 tablespoons cocoa powder Whipping cream Fresh fruit to decorate (I'm using cherries) You will also need: Weighing scales A food mixer
DIRECTIONS This is a very easy recipe using the 'all in one' method and a food mixer. 1. First, put the dry ingredients into your bowl and then add the butter and the eggs. 2. Secure your bowl and use the balloon whisk attachment to slowly mix your ingredients together. 3. The mixture should be quite soft and a uniform chocolate colour. 4. Prepare three 20cm sandwich tins with foil or greaseproof paper and divide the mixture equally between them. 5. Pop the baking tins into the oven at 160c for 30-35 minutes. 6. When the cake is springy to the touch and slightly coming away from the sides of the tin, it's ready. After five minutes, take the cake layers out of their tins and let them cool. 7. When the cakes are cool, spread two of them with the whipping cream and layer them up. 8. Then fill your icing bag with the rest of the cream and pipe some rosettes around the edge. 9. Lastly, carefully place the cherries (or other fruit) in the middle. 10. Find your nicest cake stand to display it on and you’re all ready for tea time!

Whilst Mam’selle Editor Penelope was in Sindy Town she paid a visit to the much loved local cafe.

It’s Thursday at Deliciously Sindy and Clive and Russel have closed the cafe and are clearing up ready for a special visitor.
Hello Penelope, not at all! We’re all ready for you, please do come in.

We’ve set up a little taster session for you.
Clive and Russel explain that at Deliciously Sindy they use coffee beans from a local roaster, Chalk Hill, which only buys beans from small, sustainable farms.
’So, we grind the beans, put a scoop into the cup and then pour on the hot, not boiling, water,’ says Clive, as he fills the first cup.
‘There’s no filter?’ says Penelope, surprised. ‘Don’t worry,’ says Clive, ‘the grounds settle at the bottom.’ ‘Just don’t drain the cup!’ says Russel, with a laugh!
After tasting them all, Penelope comes back to the first cup of coffee she tried.. This one is definitely my favourite,’ Penelope says.
This one smells of cherries.
Mmmmm...that one’s almost chocolatey.

’That one is a darker, smoother roast,’ explains Russel, ‘and you can take a bag of that home with our compliments!’ He hands her the bag of delicious smelling coffee beans. ‘Thank you so much!’ she says, smiling broadly.
They make Penelope a cup of her favourite coffee in the machine, then they all sit down with a large slice of fresh Victoria sandwich. They happily discuss ideas for the Mam’selle article and the boys can’t wait to get started!

Hi, we're Russel and Clive from Deliciously Sindy and we're going to show you how to get the best from your coffee making at home.
1. ‘The most important thing is to buy a really good coffee. We buy ours from Chalk Hill, which is a local roastery. Not only does it buy from small coffee plantations, but it roasts small batches frequently, so you always get fresh coffee.'
2. 'You might have one of these at home. One is a hand grinder and one an electric (vintage Sindy) burr grinder. This means you can grind fresh beans every day to make your coffee. However, if you don't have one, just ask your roastery to grind them for you - small packets are best, that way the coffee will stay fresh.'
3. 'Now heat your water. We're using a drip kettle which tells you when the water is at the optimum temperature for making coffee. Don't worry if you are using a standard kettle, just boil it and then leave it for five minutes so that it's just off the boil. Then fit your filter cone on top of your jug, pop your filter paper in it and get your glamorous assistant - Clive, that's you - to carefully wet the paper.'
4. 'Add the scoops of ground coffee to your cone. The rule of thumb is one heaped scoop for each person, plus one for the pot!'
5. 'Now Clive's going to pour the water on very gently, making sure all the ground coffee is covered. If you are using a standard kettle, just go slowly, enabling the coffee to drip into the jug below.’
6. 'While he's doing that, I'll just cut us a slice of delicious chocolate coffee cake to go with it!'
7. 'And there you have it. Delicious coffee at home.

THE SINDY HOSTESS TROLLEY Never one to be left behind in the interior trends of the day, Sindy was the epitome of elegance and good taste when her ‘smoked glass’ hostess trolley arrived in 1983. The hostess trolley was designed in the 1950s, but only caught on in the 70s. These plug-in heated metal sideboards on wheels kept filled Pyrex dishes warm until you were ready to lift the lid and serve. What’s more, the plates were equally as toasty as they gently warmed in the cupboard underneath. These status symbols of the day allowed you to entertain your guests with ease.

Kerry @sindy_dreaming had an empty hostess trolley, so she enlisted the help of artist Michele @miniaturesbymichele to fill up those serving dishes.
The original Sindy hostess trolley came with four dinner servings; this included chicken drumsticks, piles of new potatoes, cauliflower florets, carrot batons and peas. For Kerry’s hostess trolley Michele handmade with clay a classic pie and mash dinner. Especially made to fit the white ‘Pyrex style’ serving dishes, she also crafted carrot rounds, broccoli and cauliflower florets, peas and green beans. The items are loose, so can also be used in Sindy’s pans. Michele makes a toad in the hole that fits the dish perfectly also.

Our resident craft editor Sindy-Jane has given it a glow-up for a more modern feel. Follow her steps to redesign your own kitchen playset.

... help me update my kitchen units YOU WILL NEED: Isopropyl or rubbing alcohol and cotton buds Spray paint – I used gold, silver and Chamoisee Rustoleum mode paint for the main colour Wood grain sticky back vinyl Black sticky back vinyl (optional gold sticky back vinyl for the window décor) Masking tape and a craft knife Patterned paper for the splashback. (I used dollhouse floor tile paper). Screwdriver

1. Use alcohol and a cotton bud to carefully remove the black dots from the windows. Do not use acetone as this will make the plastic cloudy 2. Remove all handles - these should come off quite easily. Spray paint with gold paint and set aside to dry. Remove the shelves by sliding them out and remove the printed backgrounds. 3. Take the unit apart by unscrewing the screws on the back. Separate the front cupboards from the back cupboards by unplugging the small red wire which links the two pieces. Unscrew the tap and spray paint gold. 4. Next up is a lot of masking. Mask the cupboard windows, the clock on the oven, the clear side panels. Remove the drawers. Mask off the sides and top of the oven and spray paint this silver and leave to dry overnight until fully cured.

Use the printed backgrounds as a template to cut pieces of patterned paper or card to create a new splashback. If you are using lightweight paper, glue it to a thin piece of card to make it easier to slot back in.
5. Use gold to spray paint the sink unit. Don’t worry about masking this and, once it is dry, cover the worktop with sticky back vinyl. Make a hole for the tap and screw it back on to the worktop. Cover the shelves and the shelves inside the clear fronted cupboards with sticky back vinyl to match the worktop. 6. Mask the sprayed oven and spray paint the rest of the unit, including the top cupboards. Leave to dry. 7. Remove all the masking tape and reassemble the kitchen. Replace all the handles. 8. Cut a piece of black vinyl or card to add to the oven front to look like glass. I also added a gold vinyl cut-out to the window, made using my Cricut. 9. Accessorise with all your favourite kitchen bits and bobs. I have used a Maileg bread bin, toaster and colander, plus lots of miniature food items from my collection.
