The client is Merivale, a successful leader in the Australian hospitality industry. Merivale aims to advance their customer dining experience by developing a retail aspect within their dining venues. By doing so, the Merivale empire can explore untapped Australian social and cultural aspects and appeal to a wider consumer. Thechosensiteis18-18aGlenmoreRoadPaddington, NSW. The heritage building is a part of the well known Intersection in Paddington and must appeal to the typical Merivale customer as well as residents and visitors to the Paddington area. The hospitality space is to combine a brunch/lunch unique dining experience with a retail element selling homeware and artisanal lifestyle goods. The new concept must increase the brands diversity and identity of creating “a little magic” in their immersive dining expereinces as well as complement their existing venues. The space must meet regulatory requirements for a hospitality space and be influenced by high end designer stores. An element of bespoke furniture and joinery must be created and ideas of sustainable design must be considered throughout.

The Area: Paddington During the late 1990s-early 2000s, Theo Onisforou created a unique Austraiian retail fashion precinct along Oxford Street. Inspired by the architectural forms of Glenmore Road, The historic Victoria barracks and the jacaranda trees, he developed The Intersection Paddington devoted to the display of high end Australian fashion. H I G H E R G R O U N D Case Study 1 Designer
Materiality
The lead designer was Mark Simpson of Australian architecture studio, DesignOffice. The project was commissioned by restaurateur Nathan Toleman who’s popular Melbourne cafes, Top Paddock and The Kettle Black are also apart of the Darling Group.
The original brick walls and pipework are left exposed with plenty of indoor plants. This base is incorporated with terrazzo, cork, painted steel and stone. A variety of furniture was selected in wood and industrial materials with soft fabric finishings.
Context
Limitations
The property is located at 650 Little Bourke Street Melbourne, Victoria. It is at the western edge of Melbourne’s CBD and close to the city’s Southern Cross Station. The establishment is open Monday-Sunday for daytime customers and ThursdaySaturday for nighttime customers. It is housed in a heritage listed powerhouse which has been converted into the cafe and restaurant. “It’s all about the nuance of the volumetric relationships to create a sense of intimacy...The two staircases are made of steel and painted a deep blue. We deliberately made them dramatic, weighty and sculptural”- Simpson (Ramsey, 2017) Whitehouse Institute of Design
The original building site had no air handling or kitchen facilities and limited access to waste and water. The existing walls and windows were heritage listed and the new thin slab could barely support any new structural loading. Simpson says “The big questions were how to get structure and services to work within the space, and how to create moments of intimacy in such a massive volume” (Ramsey, 2017). The solution was to create a series of connected platforms at different levels anchored visually by the stairs.
Concept
The space has a industrial yet earthy textured feel. The six connected levels wrap around the original brick building to create many intimate tiered platforms. The large open spaces also make it available for events. The dishes are made using local ingredients with specialty coffee and signature coffee. Smaller dining spaces are created using intimate seating and mismatched furniture .

U N E K E Case Study 2 Designer
Materiality
Concept
The lead designers and architects have not been documented. However the owners came from a country farm familiy and this leads one to assume that the designers and team would have been local as well. The local culture and ideaologies about country living,food and lifestyle thus permeates throughout.
Origianl brick walls are set next to high ceiling wooden beams. The character of the space is complimented by warm wooden furniture pieces and broken up with pots of greenery. Steel metal finishes and frames add an industrial element whilst the addition of wall art creates a casual yet lively atmosphere.
The building site is steeped in historical contexts and local social culture. The new space incorporates many of the older features such as the exposed brick and original high wood beamed ceilings. Homage to the past is paid in the artistic mural of the old building and the retail section which was retained and named the Crown Corner. The retail section contains local products and the entire space has an industrial farmstyle country feel.

Uneke Wagga is located in the Wagga Wagga CBD won the corner of Fitzmaurice and Kincaid Street. From the 1950s-1970s, the building was a popular local eating venue named “The Crown Corner” . In 2009, a local farmer, Chris, and his wife, Beacie, transformed and renovated the space into the Uneke Lounge. In 2016, they expanded further to create the Uneke Warehouse at the rear for larger events and functions.
Working with older pre-existing buildings had its limitations. Walls that would have been need to be demolished in order to expand the rooms would have to be checked for architectural stability and load bearing qualities. Also, the designers would have to been careful in considering and being sensitive to the locals and the historical significance of the site. It would be required to fbe appropriate for the street and town it resides in.

Villa Nemésis, Nisyros (La Collectionist, thespaces.com) . Used local stone and the cubism of traditional Agean houses to design this space. Use of arches, white wood and paint with earhty textiles is a key takeaway.
Recessed wall niches and nooks for retail display. Organic and unique display for various items influenced by typical Mediterranean architecure. Grotto inspired texture can be added by using a rollerwith textured plaster paint. Incorporating custom seating for better viewing is also an idea. Beta Bar in Sydney pays homage to the original Victorian building which it resides in by exposing the levels of rendering in the walls but adds a colour saturation in the furniture choices and metallic finishings. Part of Sydney’s Hellenic Club established in 1924, it sits above the modern restuarant, Alpha. The mezze platesdeconstruct classic Greek dishes and the cocktail menu has a similar spin. Estiatorio Keia, Hong Kong. 2019 was designed by Sundukovy Sisters and photographed by Mikhail Loskutov. The studio designed a Greek inspired restaurant which would also appeal to the people of Hong Kong. They used bright murals custom made by artists using Chinese marble which reflect Greek frescoe art and also allude to their motif, the sea. They used details and colours associated with Greece but reimaginged in the context of Hong Kong. They were unable to change the space or break walls so separation of spaces is made by glass doors and curtains. The outdoor space is separated using contrasting floor finishes and they choose atypical Mediterranean plants as well as a green wall to maximise space. Black Duck Garden in Athens was once part of King Otto’s palace garden. The palm tree planted by his wife Amalia still stands and their former residence has been transformed into a museum next door. Patrons can visit the museum and stop by the cafe for a light lunch, dessert and coffee thus adding to the whole experience of a visit. The integration of leafy grrens, sturdy outdoor furniture and back lighting add to the regal yet casual ambiance of the space. (Photo from Nuvo magazine)

Six D.o.g.s is located near the Monastiraki flea market and serves various coffee blends, milkshakes and cafe snacks. It utlises the different levels of the layout and has integrated benches in order to incorporate the building itself into the design. Closeness to nature gives the space a relaxed atmospher whilst the numerous power outlets and charging stations attract a tech savy younger generation. (Photo from Nuvo magazine)

Forburning man 2021, Polish team , Mateusz Góra and Agata Gryszkiewicz designed a spiral orchard shelter using rammed earth and called it The Source. This circular structure is a low energy alternative to greenhouses. The layering of the earth in this way to symbolise the layers of history has influenced my design. (Images courtesy of LAGI,2021) This Texan home by Jobe Corral Architects uses rammed-earth wall to conect it to the land of the ranch on which it was situated. The colour of the aggregate informed the rest of the houses colour palette in order to meld the organic with the modern. Integrating these walls intothe design in order to add accent and functionality is a key aspect of this project. (Photography by Dunn, C 2018) The Noma restaurant in Barangaroo, Sydney was designed by Foolscap studio and has a quintessential Australiana aesthetic to it helped largely by the rammed-earth walls and bar areas. The concept of fire both in cooking and the Australian landscaped is seen throughout from the black ceiling to the brown floorig. Combined with the modern Australian cuisine, the design of the space makes Noma an experience for customers. Using rammed-earth in creative ways for hospitality can be seen in this project. Kailo is a restaurant concept designed by Form Room and encapsulates the idea of the Indo-European word for “health”. Combinging luxurious interiors with contemporary sustainable dining, the space celebrates seasonal European cuisine and draws upon Roman influences in its graphic design and interior architecture.The spatial planning incorporates many areas including a kitchen, bathrooms, casual dining, a bar and a deli market. Semi-private booths, open plan seating and bar space mean the project has various areas to use for the customer. The central bar and staircase anchors the space whilst the Romanesque style with a modern slant connects all the spaces. The spatial planning of the restuarant design as well as the fusion of ancient and contemporary styles are key takeaways from this commercial design. (Photography from formroom.com)

S T A T E M E N T
The Agora Concept In ancient Greek times, the Agora was a crucial component of Greek cities, serving as an open meeting place. Similarly this design will become a multifaceted space for food, retail and social interaction in the Paddington area. Combining Greek inspired cuisine with a ceramics and local produce market section as well as a larger space for events means The Agora can be used by the locals for a number of purposes. Historically, the Agora in a physical sense has undergone many transformations through destruction and building in a cycle of rebirth and today the modern city of Athens surrounds these ruins. These layers documented in the soil strata symbolise our interconnectedness to the earth and are an echo of our past. The space will be a fusion of classical Greek forms with contemporary pastel colours and materials. By designing a space anchored to the spirit of the earth and reflecting our human relationship to time, The Agora will become a quintessentail meeting place for the locals as well as provide a sensory Greek experince with a visual and flavour twist which makes a visit to The Agora a unique affair.

Design Criteria Program The site will contain a retail section, a take away area, casual cafe seating, restaurant dining, an outdoor courtyard, event/meeting room(s), male/female/disabled bathrooms and a kitchen. This program allows for flow and various multiuse areas in order to utilise the space available and add to the brand of Merivale. Spatial Planning All levels of the building will be utilised. The first floor will be used for dining and also event bookings as they provide more pirvacy. The ground level entrances will have the retail section facing towards the street and also the point of sale and take away sections. It will contain an indoor and outdoor cafe area as well as male and female bathrooms and a small dining section. The basement will house the kitchen and employee areas as well as the garbage and recycling. Another bathroom will be on this floor and a bar section will

Materiality The main walls will be textured white stucco with plaster with pink and white marble tops, natural limestone and terrazzo tile accents. Custom designed rammed earth walls, furniture and bar areas will provide an earth textural element. The outdoor area and bathrroms will be tiled and light pale oak furniture will be used in conjunction with luxurious velvets and pastel cottons and linens. Detailing White matte finishes and tap ware will complement the cream white walls. Custom designed fixtures will add a smoothness and curve to the space. Upholstery will be stain resitent and antibacterial where appropriate. Acoustically sensitive drapery will be used in some doorways to bathrooms and private rooms. Typical mediterranean plants will be featured in the courtyard cafe and custom branding/logo will be printed on takeaway containers as well
