In focus INDIA’S FIRST BICYCLE HIGHWAY In a major initiative to boost eco-tourism in the state, Uttar Pradesh will soon have country’s first cycle highway. Covering rural areas of the stretch, the proposed cycle highway will start from the eastern gate of the Taj Mahal, in Agra, to reach the lion safari in Etawah. It will pass alongside the Yamuna and the Chambal rivers. The track will not only help villagers but would also facilitate tourists, cyclists and environmentalists to get a chance to see Indian gharials, which belong to the crocodile family, dolphins and a wide variety of birds en route.
The Spices Board of India will soon open the country’s first spice museum in Kochi to trace the history and growth of the spices industry. It will showcase over 30 raw spices and culinary herbs. With the help of paintings, pictures, brochures and books, it will showcase how these spices are cultivated, processed, stored and quality assessed. Aimed to attract sailors and foreign tourists as visitors, the museum will act as an information centre on quality spices.

TRUE TRAMM TRUNK: BAR DECODED Equipped with a much-needed wall for measuring drunkenness, adorned with payphones and splattered with graffiti, True Tramm Trunk in Juhu, Mumbai, definitely has a quirky vibe. Some tables have games of spinthe-bottle printed on them, while others are constructed efficiently with stacks of shaved ice that can be used to chill your drink. It adds a twist to conventional beer pitchers, serving them in miniature telephone booths and their famous Trunk Cocktails are a
selection of eight drinks. If you’re in the mood for a familiar street food served in an elegant manner, the ‘Channa Chor Garam’ won’t fail to impress. For something unusual, try the cheese stuffed mushrooms; tender, filling and accompanied by a tangy, barbeque sauce. One of the highlights of the meal was the creamy and delicious red velvet jar served for dessert. s we were trying to find our way back to the parking lot after visiting the root bridges in Cherrapunjee, we came across a couple of bikers who eagerly pointed out that we should take the road on the left to reach our destination. As we trundled along a kilometer up, we were greeted by a small signboard nailed onto a tree. ‘Welcome to Mawlynnong – Asia’s cleanest village.’ Asia’s cleanest village. Really? Out of sheer curiosity, we unanimously decided to walk on. The road became narrower with sharp bends and a troop of chickens popped out of nowhere and began to follow us suspiciously. As we cleared yet another bend after walking for almost a kilometer more, we saw a wide opening – like a large open courtyard –and a child hastily picking up a stray wrapper and promptly depositing it into one of the well-segregated waste bins. This small act was indeed a loud proclamation of where we had arrived. Mawlynnong! “Neat!” was my first reaction but I soon discovered that Mawlynnong had elevated neatness to a completely new level. The quaint little houses with brightly coloured roofs and doors were neatly arranged around the ‘courtyard’. The pots holding the blooming chrysanthemums and roses were neatly placed along the walkway. The trinket shops were neatly packed in clusters. Even the sole tea-stall had paper cups neatly put on the table.
FOR A BETTER FUTURE Around 90 km south of Shillong, Mawlynnong is a picturesque three hour ride by car. Declared as the
‘Cleanest Village in Asia’, it is said that the village was plagued by cholera around 130 years ago. The missionaries who had settled in the region suggested leading a clean and healthy lifestyle. This meant attacking the rot at the stem by cleaning up the village first and foremost. And this practice stays to this day as large signboards encourage

Mawlynnong, that greeted us with a burst of scents, had truly captivated our senses. Slowly we discovered that the place is not for those who have packed itineraries and long mustvisit lists. Time’s song slows down in Mawlynnong even as one can put up one’s feet on the balcony of the home of a gracious host and sip sugary tea. Do not miss: In Mawlynnong, climb atop trees secured by a crickety but superstrong ladder twined with bamboo. Once on top, you will be able to catch a glimpse of a massive green cover, with Bangladesh a handshake away. If there is something that one can learn from a visit to Mawlynnong, it is to refrain from littering. Remember, somebody in Mawlynnong is watching!
WORLD OF ROOT BRIDGES These bridges are constructed out of the massive aerial roots of banyan fig trees such as Ficus elastica (a type of rubber tree) with generation-aftergeneration of locals twining the roots of the trees around the trunks of the betel trees growing along the opposite end of the brook. And these roots are strong (and living!). To reach them, one has to trek downhill. This walk is a near half hour one, precarious due to slippery edges and moss-laden stones. On reaching the bridge, one is filled with awe at this partnership between man and nature. Welcome to Mawlynnong. Welcome home!

Ootacamund, Ooty or Udhagamandalam, as its known officially, is a popular hill station. The town is situated in the heart of Nilgiri Hills and the Nilgiri Biosphere Reserve, part of the biologically rich and eco-sensitive Western Ghats that has over 90 species of mammals, 300 species of birds, and vibrant flora and fauna. The weather in this hilly town is quite pleasant, offering a great escape from the heat of the plains. When in Ooty, visitors must take a trip on the Nilgiri Mountain railway, a streak of bright blue toy train that slowly chugs along the mountainside. From rice fields to rugged terrains, through tunnels and over bridges, passengers can get lost in reverie with the idyllic rhythmic movement.

MASHOBRA, HIMACHAL PRADESH Imagine vast undulating terrain of peaks and valleys and breathtaking green cover that shimmers in the sun, Mashobra is an enticing tourist destination. With fleecy mists wafting across the horizon, the cluster of houses offer a speckled view. Located in the Shimla district, it is home to one of the two presidential retreats in India, the other being in Secunderabad. At an average elevation of 7,041 ft from sea level, the oak and pine forests render the area an archaic appeal, and coupled with colonial style wooden houses, it offers the ambience of a beautiful retreat. With deodar and rhododendron, maple and apple orchards in the neighbouring vicinity, Mashobra makes for a perfect getaway that is nestled in the lap of nature. SAPUTARA, GUJARAT A beautiful hill station situated on a plateau, Saputara, also known as the ‘abode of serpents’ resides in the midst of the Dang Forest region of the Western Ghats. The region gets its name from the serpent god revered by the local tribes here, and are known for their traditional dances. At an altitude of approx., 3,000 ft above sea level, Saputara offers sweeping views of the lush landscape and is blessed with consistently pleasant temperatures year-round. nown as land of thunder, Darjeeling, this hill station of West Bengal has mesmerised all with its quaint character of narrow lanes and winding roads with the rail track of the Darjeeling Himalayan Railway (DHR) running on the right through most of Darjeeling and at places cutting across the narrow winding main road. Smiling hill folk walk on the side everywhere right from going to school to getting groceries. The homes along the edges of narrow lanes are lined with potted plants on their porch.
THE RISING GLORY The most popular experience of Darjeeling is viewing the sunrise from Tiger Hill. Believed to be one of the most beautiful sunrises in India, it is worth waking up at 4 am to see the sunrise. Note: It takes about 50 minutes to get to Tiger Hill from Darjeeling. Go there early to avoid traffic jams and also to get a good viewing spot. In anticipation of the sunrise and to beat the cold, you can enjoy hot coffee sold by local women in colourful attire. With the waiting crowd ready to capture the moment, the sun rises as a bright orange ball and depending on the weather, you can get to see the changing colours of Kanchenjunga snow peaks. From Tiger Hill go to Ghoom Monastery which is one of Darjeeling’s oldest Buddhist monasteries. Located in Ghoom area, it contains the statue of Maitreya Buddha which is the Buddha of the future. This statue is 12 feet in height. The monastery also has prayer Chortens and the happy monks who smile at you make you feel welcome.

BATASIA LOOP AND GORKHA WAR MEMORIAL The loop is an engineering marvel in itself as the toy train makes a double spiral loop as it moves to Darjeeling. The purpose of the loop is to help the train to climb the steep gradients. It is constructed in such a way that the railway track circles round and crosses over itself gaining the required height to chug on the severe gradients. The loop was damaged when the earthquake hit this region in 1934 due to which a temporary zig-zag was built. The War Memorial, which was inaugurated in 1995, pays tribute to the brave martyred soldiers of this area and is encircled by the Batasia Loop. Don’t miss the Padmaja Naidu Himalayan Zoological Park and
Himalayan Mountaineering Institute (HMI) which are on the same premises. Padmaja Naidu was a former governor of West Bengal and the daughter of Sarojini Naidu, who was popularly known as the nightingale of India.
MAJOR ATTRACTIONS Situated at an altitude of 7,000 feet, this zoo is the largest high altitude zoo in India. It has spearheaded research on endangered Himalayan fauna and is the first zoo in South East Asia to successfully breed red pandas in captivity and release them in the wild later on. The Samadhi carries a quote of Tenzing which reads thus- “I have been able to give my family a much nicer home and a much better start in life than I had foreseen before the great climb. This is what gives the greatest satisfaction; my family is my first concern and my greatest pleasure.” The HMI museum gives an insight into various aspects of mountaineering.

Railway (DHR) is a pioneering example of an efficient and ingenious hill passenger railway. Started in 1881, not only is it fully operational, it still carries many of its original features as they are. It has 13 stations and Ghoom is the highest station in India at 7,407 ft above sea level. A UNESCO World heritage Site, DHR has a length of 87.48 km. As you drive across Darjeeling, flaming red flowers in bunches catch your eye. These are Rhododendron flowers that are used to make wine. The markets here can be reached on foot. In the evening, local women sell corn on cob. The cuisine of Darjeeling includes both Tibetan and Nepali, so one can enjoy momos with vegetarian, mutton and chicken filling, thukpa, Nepali aloo dum made with potatoes and red chilli and churpee, a cheese based snack.

The energetic girl has got a penchant for success and already set new benchmark for her colleagues in the film industry.

Doesn’t she feel intimidated? “I have had the fortune to train in one of the most prolific film industries in the world. I never feel intimidated in front of the camera. Here, I have worked with some of the most talented film-makers. They have honed my skills in a way that you put me in front of any film star or director today, I would be able to pull off my part on screen. I feel confident,” she averred. In her illustrious career in Hindi cinema spanning almost a decade and half, she has worked with the biggest names, be it actors like Salman Khan, Shah Rukh Khan and Akshay Kumar or directors like Sanjay Leela Bhansali, Prakash Jha, Ashutosh Gowariker and Vishal Bhardwaj. She has risen like a phoenix but at her own terms and conditions. Millions of her fans couldn’t stop gushing about her when Dwanye Johnson, better known as ‘The Rock’, introduced Chopra into the Baywatch squad with a short video on Instagram. She clearly stole the thunder in a clip that lasted less than a minute. “I have almost turned Hollywood into Bollywood. I turn up late by 15 minutes on the sets of Quantico. Now they all know that I will be late. But that’s me. I can never change myself for anybody,” she roared.
REPRESENTING THE NATION Now that she spends most of her time abroad, shooting for Quantico and Baywatch, she is also happy to clear myths about India. She said her coactors are curious about her identity and largely India. “They think we are only about meditation, yoga and spirituality. Their knowledge is driven by stereotypes. India has much more to offer. I tell them how we are emerging in different avenues. Now they also watch my movies on Netflix. I find this cultural exchange really riveting. Has she said goodbye to Bollywood? “Hindi films are like my first love and as they say, nobody can get over it. My contract requires a commitment of six months for Quantico. So the rest of the year is spared for movies. I am finishing last leg of Baywatch and after that, I am all game for a Hindi movie,” she promised.

reen cashew tikka with tamarind pepper drizzle, Kadgi gujjo, a traditional Konkani style raw jackfruit masala dish and Dumroot Halwa, made from white pumpkin, may have an extraordinary presentation and look appealing. But what makes these dishes unique, is the fact that these are all made from seasonal ingredients and thus tastier, as freshness equals flavour. Seasonal ingredients today dictate menus, as dishes are all about ingredients. Chefs design their menus to reflect what is available seasonally and also build in flexibility, so that they are able to celebrate seasonal specialities with special dishes.

SEASONAL IS IN Raw mango in April-May, strawberries in June, carrots in December, and so on. Eating the right things at the right time makes a world of difference and chefs are increasingly realising this and thus opting for seasonal ingredients. Every bite of a dish made using seasonal produce is obviously more flavourful and healthy. Chef Jaydeep Mukherjee, Executive Chef, Indigo Delis, acquiesces, “Memories of my favourite meals and dishes revolve around seasonal ingredients. Be it mangoes or winter carrots, to cook with them and eat them, when in prime, is a beautiful experience. The natural sweetness and readiness of any seasonal produce, in that short window that it is available

in, is exceptional. It allows me the opportunity to pick my favourite recipes that showcase these ingredients the best.” In Goa too, chefs believe that indigenous flavours are best experienced where they originate and thus make use of Goa’s beloved fruit, the cashew, both in the apple and nut form, in cooking during summer. Executive Chef Vijay Malhotra, ITC Maratha Mumbai, explains, “In season, fruits and vegetables are always delicious and flavourful. The topography of a place determines the vegetation and the mere fact that something grows in those conditions, means that they are best suited to the inhabitants of that area. Seasonal produce is grown and sold locally, so it doesn’t go through the vagaries
of temperatures whilst being transported. They are harvested just at the right time and not prematurely.”
SEASONALITY FUELS CREATIVITY Seasonal produce gives chefs a chance to dabble in innovation, while gourmets get a respite from routine offerings. And the sheer variety of fruits and vegetables on offer each season, excite and challenge the chefs. Chef Executive Rakesh Sethi, Radisson Blu Hotel New Delhi Dwarka, opines that changing the menu as per the availability of seasonal produce, not only accentuates the tastes and flavours of a dish, but also helps chefs break the monotony of cuisines in a menu thereby offering a range of variety to guests.

with seared Andaman seabass, kairi curry, jamun pilaf, caramel tamarind pork belly, passion fruit chilli, all using seasonal produce. He is equally happy creating jackfruit fritters, jackfruit pie and jackfruit crème, ensuring variety. Truly, there is a lot chefs do with seasonal produce, but Chef Sethi cautions, “At least in each course there should be a different item, with a different taste and colour.” Using the cashew apple, one can make a salad, by cutting it into small cubes, adding salt, sugar and chili powder. The same cashew can be used for a cashew crusted fish or cashew fruit crumble as dessert. As long as a chef is imaginative, boredom can never set in.”

Chef Jaydeep sums up, “Local, seasonal and sustainable was not an attitude at the time of our grandmothers. It was a way of life. Thankfully, chefs today are heading back in this direction from an earlier path strewn with imported and cold processed produce.”
