Look ahead and ask.... why not?
Dear Providence Members, I hope this message finds you and your family, happy and healthy as we look forward to spring time in Charlotte. Have no fear, more consistent beautiful sunshine and warm temperatures will be here before you know it. Dining al fresco remains our top priority and it is our desire to keep everyone as safe and comfortable as possible. Our goal is to open the West Pavilion at the pool complex much sooner than in the past. We will open it this year in early March or mid-month at the latest. We are so grateful to have that facility and open space as it was our food and beverage Safe Haven last year! We are all looking forward to all the increased activity there and all over the Club as the weather continues to improve. Most members, if not all, understand there is to be absolutely no outside food and beverage brought onto Club property without specific permission from the GM, as is detailed in our MCG Policies/Membership Plan. This has been a club wide issue for some time and we can no longer turn a blind eye to it. Tailgating in the PCC parking lot or anywhere on Club grounds is illegal with alcohol NOT purchased at the Club. This is in direct conflict to the ABC liquor laws and could cost us hefty fines and or loss of our liquor license and the ability to sell alcohol. This is something that is being addressed across the board in all departments at the Club. This is not a message I enjoy writing or sending, however, it is my responsibility to share these concerns for the benefit of ALL PCC Members, Staff and McConnell Golf. Here are our current food and beverage opportunities. Our restaurant (Table 16) is open for dinner Tuesday thru Saturday(5:30p-9p) with limited outdoor dining on our veranda, weather permitting. The Turnhouse is available for lunch Tuesday thru Sunday (10a-5p). Our special Take Home & Pantry offerings are also available Tuesday thru Saturday from 5-8pm at the Clubhouse. The Card Rooms are open noon to 8pm Tuesday thru Saturday and Sunday, noon to 5pm. We would be happy to accommodate your F&B needs in any way that we can. So if you do have any special events, retirements, birthday parties or requests please reach out and we will do our very best to make it happen! AGM MESSAGE & EVENTS TIME FOR SOME NORMALCIES As we move into our Spring months it brings with it new hope. Hope that we can get back to living our lives and moving forward in this New Year. Hope that our kids can go back to school and have more social interactions and go back to just being kids again. Hope that we can get back some normalcies that we had been accustomed to pre COVID. It is with this hope that we want more than anything to bring back many of our weekly, monthly, and annual events. We have brought back our weekly specials in Table 16; Soup and Salad night on Tuesdays, Wine-Down-Wednesday, Member Birthday Night on Thursdays, $5 Fridays, and Prime Rib Saturdays. We are looking forward to bringing back our monthly Wine Dinners and other Club Events like Kids Easter, Easter Brunch, Mother Daughter Princess Tea Party, and our postponed annual Father Daughter Dance. All Club Events moving forward will still be executed with our new COVID standards of table spacing, limited seating/reservations, stationed attendants, and sanitation protocols. We want PCC to remain a safe haven for our Members where they feel safe to come dine and entertain. We have made some real strides in our kitchen during COVID that we are all very proud of. Our new Executive Chef John and his new Heart of the House Team have really put out some phenomenal plates already this year. We are excited to see what Chef John and Carmen Ganoe, our F&B Director, can put together for you the rest of the year!

BLOSSOM BY BLOSSOM THE SPRING BEGINS: Spring is usually synonymous with new beginnings and I think we are all eager for a fresh start, am I right?! Thank you for your continued support, I hope you’ve found a refuge at the club over this last surreal year; whether it be out on the golf course, over at the tennis courts, in the ballroom doing yoga or just grabbing a curbside family meal. GREENS AND GROUNDS
PCC GOLF COURSE Ahhhhh, springtime…..Such a breath of fresh air after a long, brutal winter. We often wonder why we do what we do, outdoors, in the elements, battling Mother Nature, especially during the cold spells wrestling greens covers. Then spring arrives and we are reminded of the pride and joy we take into molding and improving the golf course conditions throughout the growing season. The plants are waking up and the trees are budding. Color slowly makes its way back into the natural landscape. One of our goals this year is to add to, and enhance, the landscaping around the club and the golf course, so keep an eye out for these subtle changes. Back in January, we killed two birds with one stone with our bulk spread application. We took advantage of dry(er) conditions and actually pulled the trigger a week earlier than we originally scheduled due to heavy rains in the forecast. Perfect, because everything got watered in! In this application was our wall-to-wall spring fertility, along with our pre-emergence herbicide for summer annual weeds such as goosegrass and crabgrass. Studies have shown that earlier is better for this application because although it may seem early, the product is just sitting there until soil temps warm up enough for the microbial breakdown of the controlled release fertilizer to start happening. Also, after being watered in, the herbicide has formed its barrier against weed germination in the event of a quick or slow soil temperature rise. When the bermudagrass wakes up, it’s time to get the mowers ready to go. We are excited about our new John Deere equipment fleet. You will see marking paint on the golf course indicating fairway and approach lines. This paint is there so we can get grassing lines dialed in until there is enough definition of the turf that we can see our lines without paint. Also as the bermudagrass is waking, sometime over the next few weeks, we will begin to heavily fertilize the areas that have been overseeded in preparations to spray out the ryegrass for a smooth transition into bermudagrass. This fertility not only helps to jump start the growth of the bermudagrass, but also makes the ryegrass very succulent and easy to kill. As the growing season starts and plant processes begin, we also implement the agronomic plans which we have been developing during the offseason. These plans are similar year-to-year, but never the same as the variables that we deal with from year to year are never the same. Small adjustments to where resources are allocated can go a long way. This year, high traffic areas and greens surrounds will get a little extra love. Our greens fertility program started back in February with a few important soil spray applications. These applications make sure that there are nutrients readily available for the plant to take up once the plants wake up. Remember, during the winter the plants use and survive off of the nutrients/carbohydrates which are stored in the fall. Going forward, we will be applying foliar fertility, plant growth regulators (PGRs), and plant protectants on a weekly basis. We have added a few new products to our soil treatment program throughout the growing season which will help with minor water and soil issues, as well as enhance the plants nutrient uptake capacity and elongate the effects of our fertility sprays. Also, we have filled a few “gaps” in our disease prevention program in order to prevent an outbreak of Pythium Root Rot like we saw last summer. NEW PHYSICAL THERAPIST DR. SMITH CHRISTENBURY, PT, DPT, CERT DN Onsite every Monday throughout March from 9am-11am for questions and consults Dr. Smith Christenbury, PT, DPT, Cert DN Smith earned her Bachelor of Science degree from the University of South Carolina before becoming a Doctor of Physical Therapy through the University of St. Augustine for Health Sciences. While in graduate school, Smith was trained with a focus in hands on manual therapy techniques. She began her clinical practice in the field of orthopedics but soon began to explore specialty training through Herman & Wallace Pelvic Rehabilitation Institute. Smith found her passion in offering her patients a well-rounded approach to recovery through a full body evaluation and assessment, ensuring optimal return to a pain free lifestyle. Born and raised in Charlotte, Smith is active in her community and enjoys supporting other local, small businesses. Outside of work, she and her husband, John, are passionate about traveling and are excited to introduce their son, Thornton, to the world of different cultures and share with him their love of travel.

MARCH COOKIE OF THE MONTH: CRUNCHY CHEWY CHOCOLATE CHIP COOKIES James R. Patterson III – Sedgefield Country Club INGREDIENTS 8oz. Unsalted Butter, at room temperature 1 ¼ Cups Granulated Sugar 2/3 Cup Light Brown Sugar 1Egg 1/2 TSP Vanilla Extract 1 ½ Cups All Purpose Flour
1/2 TSP Baking Powder 1/2 TSP Baking Soda 1 ½ TSP Kosher Salt 3 Cups Cornflake Crunch (back page) 2/3 Cup Mini Chocolate Chips 1 ¼ Cups Mini Marshmallows
DIRECTIONS Using a Paddle on your Stand Mixer, combine the butter an sugars in the bowl and cream together on medium-high for 2 to 3 minutes. Scrape down the sides of the bowl, add the egg and vanilla, and beat for an additional 7 to 8 minutes. Reduce the mixer speed to low and add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than1 minute. (Do not walk away from the machine during this step, or you will risk over-mixing the dough.) Scrape down the sides of the bowl with a spatula. Still on low speed, paddle in the cornflake crunch and mini chocolate chips just until they’re incorporated, no more than 30 to 45 seconds. Paddle in the mini marshmallows just until incorporated. Scoop and roll 1 ½ oz. dough balls and place onto a parchment-lined sheet pan. Pat the tops of the cookie dough domes flat. Wrap the sheet pan tightly in plastic wrap and refrigerate for at least 2 hours, or up to 1 week. Do not bake your cookies from room temperature—they will not hold their shape. Heat the oven to 350°F. Arrange the chilled dough a minimum of 3 inches apart on parchment lined sheet pans. Bake for 14 minutes. The cookies will puff, crackle, and spread. At the 12-minute mark, the cookies should be browned on the edges and just beginning to brown toward the center. If they still seem pale and doughy on the surface, leave them in the oven for an additional minute or so. Cool the cookies completely on the sheet pans before transferring to a plate or to an airtight container for storage. APRIL COOKIE OF THE MONTH: KENTUCKY DERBY PIE COOKIES James Archer – Raleigh Country Club Growing up in Kentucky, the first Saturday in May was always one to remember. Rather than the traditional Derby Pie, this cookie was always around during my childhood. So enjoy a Mint Julep, a Hot Brown, and a Kentucky Derby Pie Cookie while you cheer on your favorite horse! Riders Up! INGREDIENTS 1 Cup Softened Butter 1/4 Cup Sugar 1/4 Cup Turbinado Sugar 1 ½ Cups Packed Brown Sugar 2 each Eggs 1/2 Cup Kentucky Bourbon 3 ½ Cups Flour 1 ½ TSP Baking Soda 1 TSP Salt plus extra for Finishing 16 oz. Bittersweet Chocolate, rough chopped 1 ½ Cups Walnut Pieces DIRECTIONS Preheat Oven to 350°F. Line a baking sheet pan with parchment paper. Cream butter and sugar together. Scrape down bowl. Add bourbon and eggs and mix until combined. Sift together flour, salt, and baking soda. Add to wet mixture, in stages, scraping down bowl between additions. Add walnuts & chocolate to incorporate. Let dough cool to allow butter to set back up. Scoop heaping Tablespoon onto lined sheet pan. Bake 10 to 12 minutes or until almost set. Sprinkle with desired amount of salt and let cool.

SWIM TEAM 2021 "PCC PIRANHAS" Happy New Year, Piranhas! We hope everyone is having a great school year and that you enjoyed the holidays. The 2021 schedule will be posted to Swimtopia site soon after our league meeting in February. Please note that meets will start after Memorial Day. School will be out for summer by then. We should have the final schedule posted by the end of February 2021. Also, we are excited to announce that Coach Emily will return this summer as Head Coach! We'll send an email when registration opens, late March/early April.
CORNFLAKE CRUNCH Yield: About 4 Cups
INGREDIENTS 6 Ounces of Corn Flakes 1/2 Cup of Milk Powder 3 TBSP Granulated Sugar 1 TSP Kosher Salt 9 TBSP Unsalted Butter, melted
INSTRUCTIONS Heat the oven to 275°F. Pour the cornflakes in a medium bowl and crush them with your hands to one-quarter of their original size. Add the milk powder, sugar, and salt and toss to mix. Add the butter and toss to coat. As you toss, the butter will act as glue, binding the dry ingredients to the cereal and creating small clusters. Spread the clusters on a parchment-or-Silpat-lined sheet pan and bake for 20 minutes, at which point they should look toasted, smell buttery, and crunch gently when cooled slightly and chewed. Cool the cornflake crunch completely before storing or using in a recipe. Stored in an airtight container at room temperature, the crunch will keep fresh for 1 week; in the fridge or freezer it will keep for 1 month.
