MANAGER'S MESSAGE
DEAR PROVIDENCE MEMBERS, I hope this communication finds you and your family doing well in this brave new world. Good times will resume as we accept and continue to explore our new ways of celebrating in our community. Our wonderful pool complex will open, swim season will come, restaurants and bars will re-open, Tennis and Fitness facilities will come back to life, and however, there will be changes and variations. We may not yet know but the key to me is positivity and accepting the unfamiliar. Your Providence team of amazing employees fully accepts our role as leaders in our community. One of the suggested tools for emotionally getting through this pandemic, is to do something to help someone else. Well, our team takes that concept to a whole different level. We are actively planning, creative and entertaining events and activities for the upcoming season. Life has a way of moving forward and we all want to be part of this recovery! Down the road, when you reflect on this time in your life, what headlines will you choose to describe yourself? Doom and gloom, arrogance and denial or positive and supportive with a glass half FULL of gratitude? On that note, I am privileged to be part of this great team with a job in the BEST Club in a great MCG company. Providence is not just a place to me, the word alone drew me to this club just 10 short years ago and I have found gratitude in every day since. Again, we take our profession and responsibilities at Providence very seriously. We wish to nurture a culture of genuine respect and true hospitality. We would not have had any success over the past few months without our outstanding PCC Members. We cannot thank you enough for your understanding, encouragement and support.
DEAR MEMBERS, I first want to thank each and every Member that has supported the club throughout these uncertain and stressful months we have all just lived through. Your kind words and inspiring emails have truly meant more than you know to our Team. Your usage of our Curbside ToGo program has been nothing short of astonishing and have not only helped us keep some of our associates employed but also helped support our local community. I am proud to announce our newest addition to our Hospitality Team, Carmen Ganoe. Carmen comes to us from the BBI Restaurant Concepts Group where he was the Managing Partner at the Bonefish in Pineville for several years. He has numerous accolades throughout his hospitality career and we are proud to have him at our property. With the beautiful weather upon us we are excited to get back to our Member Events and outdoor activities. We are excited to give the PCC Concert Series another try. As I sit at home writing this message to the membership, I truly hope that by the time you read this we will be back to ‘normal’ life. These past few weeks/months have been so surreal and while I’m grateful for so many things it’s still hard to make the adjustment to all the distance… socially, emotionally, physically. The amount of gratitude I have to all those brave warriors putting themselves at risk to provide ‘essential’ services to the rest of us is overwhelming. They all deserve raises, vacations and hugs once it is safe to give them again! The team at PCC promises to make this summer one you’ll never forget! ! g n i r p S SOCIAL DISTANCING IS NOW A NEW NORMAL Staying 6 feet away from friends is always tough, especially when you just took them for $20 after pressing headed to the 18th hole. The best way to continue the practice of social distancing during this time is to work on your short game. Everyday all spaces at the range are full….The short game facility remains empty! I can assure you that putting, chipping, and working on short shots will keep you from having to press on the 18th tee….In fact, your opponent may be paying you double if your short game is sharp! Spring is the reason for the shopping season. Given the recent circumstances, shopping has looked a tad different to the average consumer. Like most brick and mortar stores, the Providence Golf shop is trying to stay ahead of the curve and offer a new online shopping experience for members while offering weekly deals. Until the golf shop is back open and fully operational, we would like to offer a sale to the entire membership. 30% off (the retail price) any one apparel item from the golf shop. The door may be locked but we offer curb-side pick-up Tuesday through Sunday. All you have to do is call the golf shop or email a Pro with your selection.

GREENS AND GROUNDS
CHAMPION BERMUDA GRASS I wanted to share again what our cultural practices for Champion Bermuda grass maintenance. Champion Bermuda greens require some type of cultural practice weekly. Those cultural practice may include: topdressing with light rate of sand weekly and lightly verticutting the greens weekly. We will be performing these cultural practices on Monday’s. The sand will be slightly visible on Tuesdays, by Thursday the sand will have worked into the canopy. The reasons for top dressing: 1. Increasing thatch decomposition. 2. Truing and smoothing of the playing surface. 3. Help to reduce grain. 4. Enhancing turf recovery from injury. 5. Encouraging a denser and finer-textured turf surface. A vertical mower is a powered unit with a series of knives vertically mounted on a horizontal shaft. The shaft rotates at high speeds and the blades slice rip into the turf and rip out thatch and other debris. Our weekly verti cutting mowing will be set to a depth of .125-.250 depending on what we think the depth needs that particular week. We will be incorporating rolling more often into our maintenance schedule. Our goal is to provide a firm, smooth and true putting surface. June 15th – June 18th the course will be closed. This is our schedule aerification of greens, tees and fairways. This is a necessary cultural practice to ensure good playing conditions along with good turf quality. The benefits of aerification: 1. Relives surface and subsurface soil compaction. 2. Allows for penetration of oxygen into the soil for plant roots. 3. Allows for atmospheric release of toxic gasses, from the rootzone, minimizing the occurrence of black layer. 4. Improves surface drainage to help dry out saturated soils and prevent formation of puddles. Improves penetration of water into dry soils 5. This practice encourages organic matter/mat/thatch control by stimulating those environmental conditions that promote healthy soil microorganism activity that naturally decomposes the components attributing to thatch development. This has been a very different spring compared to years past, this Covid 19 has been something to me that is surreal. We have had to make adjustments and social distancing is the new norm. I know the great researchers and drug companies will have a vaccine in a timely fashion. We will all have learned something about ourselves during this very unnerving Covid 19. In addition to the PGA TOUR’s schedule modifications, the Korn Ferry Tour recently announced the cancellation of the REX Hospital Open which was originally scheduled for May 25-31. The Country Club at Wakefield Plantation looks forward to hosting the event again in May 2021! The Visit Knoxville Open, hosted by Holston Hills Country Club, is postponed with a date yet to be determined.

FROM THE BASELINE I hope everyone is staying safe and healthy. I really appreciate everyone’s support and generosity during these unprecedented times. I know many of you are frustrated that we have not been able to play tennis for a little while, but thank you all for understanding that member and staff safety are our first priority. I know that we will all come out of this stronger as we look for the silver lining during these trying times. For me it has been getting to spend more quality time with my wife and kids and seeing them grow while learning at home. It has also been nice taking a step back, slowing down a bit and appreciating all that we have. This has without a doubt put things in to perspective for me, and I look forward to things getting back to normal, but holding on to some of the things that I learned through these times.With all of that being said, I am really looking forward to when we can all get back on the courts, and we have a lot of great events lined up for May and June!!! The tournament will be here before we know it!! Starting the evening of Friday, May 22th and running through Sunday, May 24th we will once again be hosting this great USTA event. Singles, doubles and mixed doubles will be offered for players ages 16 and over. We will have goodie bags for all participants along with dinner on Friday night, breakfast and lunch on Saturday, and breakfast on Sunday, and not to mention some great tennis. You will not want to miss out on this event!! Last year we had over 175 players participate and this year should be even bigger and better than last! LADIES’ FED CUP Friday, May 29 I 9am – 12pm. Cost: $30
This is a team-based event and is open to players of all ability levels. There are allmorning mimosas and bloody marys, lots of great tennis to be played, and lunch to follow. We will have our first 2nd annual Wimbledon Event on the back lawn behind the Clubhouse. We are putting up a net and lining a court in the grass to play some grass court tennis. We are asking that participants wear all white attire. We will be having a quick pro exhibition followed by the opportunity for all of you to get out and play some on the grass so wear your white tennis clothing and bring your racquets! We are really looking forward to this event and excited to be able to make this happen. We hope a lot of you will take advantage and come out and enjoy. Olando Quick holds a certification from the International Sports Sciences Association (ISSA) along with a Master in the Arts and a Masters in Public Administration. His goal is to change people’s lives in the best way possible. He believes everyone should be able live a healthy and happy life from the inside and out. Motivating and teaching others to have a strong mindset will take their performance to the next level. Olando has worked with people of different ages and different backgrounds. His fitness training consists of strength, weight-loss, working with youth training basics, and group personal training. He also participates in bodybuilding competitions and hopes to reach that pro-card status. HONEYDEW & CUCUMBER SALAD WITH BURRATA We doubled down deliciously - on the green in this summer salad, making it perfect for the summer. It would be lovely with grilled chicken or as part of a buffet.
DIRECTIONS Step 1Whisk lemon juice, oil, honey, salt and pepper in a small bowl. Stir in basil.
INGREDIENTS 3 tablespoons lemon juice 2 tablespoons extra-virgin olive oil 1 1/2 teaspoons honey 1/4 teaspoon salt 1/4 teaspoon ground pepper 1/4 cup chopped fresh basil 4 cups lightly packed baby arugula 4 cups cubed honeydew melon 4 cups cucumber batons (2 inch) 1 burrata ball (3 3/4 ounces), sliced 1/4 cup toasted pepitas
Step 2Place arugula in a large bowl. Drizzle with 1 tablespoon of the vinaigrette; toss to coat. Transfer to a platter. Scatter honeydew and cucumbers over the arugula; top with burrata slices. Sprinkle pepitas over the salad, then drizzle with the remaining vinaigrette.

CATERING AND EVENTS DEE WOOD 1. What are you currently reading? Does listening count? I have quite an obsession with audiobooks. My most recent favorite was The Nightengale by Kristin Hannah and most anything by Jodi Picoult. In my spare moments, I grab Untangled by Lisa Damour to help me better understand my two preteen daughters. 2. What’s your most embarrassing moment at work? At one of my first events, I grabbed a tray of bottled beers to pass at the cocktail hour in the courtyard. Little did I know, there’s an art to that—a skill I did not yet possess. As I stepped outside headed towards the party, as if in slow motion, each of the beers tipped over the edge of my tray, crashing one by one onto the bricks below. Nothing to do but watch it happen, and then take a bow to which the guests responded with applause. Ouch.

NEW FACES FOR PCC CATERING AND EVENTS Please welcome two new faces to our catering team, Dee Wood and Kendall Law. Dee, our new Director of Catering and Events, joined us in February, most recently from The Ballantyne. Does she look a bit familiar? She should! She served as our catering director from 2006 to 2008 and is thrilled to be back. Kendall, our new Event Manager, also has a familiar face as she joined us a year ago as an intern during her senior year at Western Carolina University and just recently became a full-time team member. Both of these ladies thrive on relationships, possess a passion for people and a drive to execute flawless and streamlined events.
1. One thing I cannot live without is coffee. In fact this is something Dee and I share in common. My favorite is a classic vanilla iced latte from Starbucks. However, if I don't feel like making the trip to Starbucks I will always use my keurig and hazelnut creamer. I love starting every morning with coffee time with Dee. 2. I would love to meet and have lunch with Walt Disney. He was always an inspiration to me since we are both dyslexic. I looked up to him because he was so creative and passionate. I think it would be super interesting to have lunch with him and learn about his story.
One thing’s for sure—these ladies are ready for a celebration. Whether you are planning a Wedding, Wedding Reception, Birthday, Retirement Dinner, Baby Shower, or Corporate Meeting, Dee and Kendall are your go-to team. UNDER THE SEA I July 20-24 Come visit Providence Island for the week as we bring the beach to you! This is the camp for children who love to get wet and are fascinated by water! During the week, we will be doing experiments with water, playing outside water games and making crafts with water. This week is sure to make a splash leaving your kids suntanned and smiling. OLYMPICS I July 27-31 Ever dream of being an Olympic athlete? This is your chance to bring home the gold! Campers will get to showcase their strengths and talents all week long in Olympic - inspired games & events. Time to put your game face on. SUPERHERO I August 3-7 Bam! Wham! Pow! In addition to learning about the superheroes who came before us, our training will involve fun (and funny) physical and mental challenges to help us become super strong, agile, fast and flexible. Our little marvels will have the opportunity to design and create their own cape, shield and of course get an awesome superhero name to match their SUPER hidden power. SPACE I August 10-14 This camp is out of this world! Join us as we travel to different planets and far off galaxies. Campers will end the week with many stories to tell about their awesome explorations around the sun.

MAY COOKIE OF THE MONTH: WALNUT SHORTBREAD Dennis Freeland - Porter's Neck Country Club INGREDIENTS 2 Cups AP Flour 1 Cup Cornstarch 1 TSP Salt 2 sticks Butter, softened 1 Cup Sugar 1 ½ TSP Pure Vanilla Extract 1 Cup Fine Chopped Walnuts 6 oz. Semisweet Chocolate Chips DIRECTIONS Preheat oven to 350 degrees. Sift together flour, cornstarch, and salt In mixing bowl, cream together butter and sugar till fluffy. Add vanilla and walnuts. Lightly stir till blended. Gradually add dry ingredients. Form into tablespoon size discs and place on baking sheet and bake until golden and firm to touch. Immediately drop chocolate chips on each cookie. When melted, gently spread and let cool. Traditional Scottish recipe, these are rich but not too sweet.

JUNE COOKIE OF THE MONTH: NEW YORK CHEESECAKE COOKIES Sean O'Neill - Treyburn Country Club INGREDIENTS 1 ¼ Cups Finely Crushed Graham Crackers 1 Cup All-Purpose Flour 1 ½ TSP Baking Powder 1 stick Unsalted Butter, softened ½ Cup Packed Brown Sugar 1 Egg Separated 3 OZ. Cream Cheese, softened ¼ Cup Granulated Sugar 2 TSP Lemon Zest ½ TSP Vanilla Extract DIRECTIONS Preheat oven to 350 degrees F, or 325 degrees F low fan convection oven. In a large bowl, stir together the graham cracker crumbs, flour and baking powder. In a medium bowl, beat together the butter with the brown sugar. Add the egg white and beat until well combined. Add to the graham cracker crumb mixture and blend until just combined. In a separate bowl, beat together the softened cream cheese, with the granulated sugar, egg yolk, lemon zest and vanilla until well combined. Set aside. Using a small scoop, scoop out the cookie dough and place on a nonstick or parchment lined baking sheet. Flatten slightly, pressing your thumb in the center of the ball to create a small bowl shape, repeat with remaining dough. Spoon the cream cheese into the indents of the cookies. Bake until the filling is barely set and the cookies are lightly golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before removing them to completely cool on a wire rack.

We have fresh baked breads, deli meats and cheese, pizza kits and fresh meats cut to order. Get them while they last. PCC FRESH PRODUCE BOX PROGRAM Members, we received several concerns about the inconsistent quality of the fruit and vegetable boxes supplied by one of our vendors. Therefore, we have decided to put together our own packages with hand selected items to help ensure PCC quality standards are being met. We will still be using our local farmers, however, we will hand pick the freshest items.
