CLUB UPDATE A NOTE FROM YOUR TRIAD REGIONAL DIRECTOR

A NOTE FROM CHEF JAMES "JP" PATTERSON

Making memories is what life is all about and the memories made over the years with Chef JP have been simply priceless. His passion for life has positively impacted us all and will continue to do so even after he makes his way to Wilmington.

It’s not Goodbye, it’s see you later! I have gotten to know so many of you over the years! I have met almost every member, spouse, child, and friend that each of you has brought to the club over the past seven years. Each of you has had a major impact on me, my family, and my future. It all started in 2013 when Beverly was seeking assistance to make it through the Holidays after Chef Hollinger's departure, I had the best time. I was able to do things in those two and a half months that I had not done in years. Fast forward to March 2014, I received a call from Beverly again asking if I would consider coming back to take the Executive Chef Position. This was a very flattering proposition, as I had never been responsible for an operation the size of Sedgefield Country Club. Sedgefield quickly became part of me, I was beginning to see why the history within the membership runs deep. I was in awe, each time I walked through the breathtaking Clubhouse; but the best part was the front circle drive, the Tudor style Clubhouse Exterior and the Lobby, which is where I spent most of my time when not in the kitchen. This is where our traditional holiday events are held, our member socials, and it’s even where I learned we could plate up the Member-Guest Saturday night dinner. Giving back and being involved in our community has always been important to me. I jumped into opportunities with March of Dimes, Make a Wish, Cystic Fibrosis, Community Table, Cooking Matters, and so many more. I was also fortunate to inherit a tremendous staff that most are still with me today. These folks are the ones that constantly work to provide you with a quality dining experience. I can’t say enough about Joaquin Campos my Executive Sous Chef, Isaac Spencer who has been a part of Sedgefield for more than a decade, and Tracy Cottrell. Gabriela Palacio is your day time cold side hero, if you only knew how many sandwiches, salads, and desserts she has plated in her tenure here you would be amazed, and Yacouba Doumbia is the backbone of the PM kitchen. Sarah Sanchez Young, Scott Johnson, Doug Wolfe, Luis Narvaez, Christian Barham, Austin Christensen, and Robin Bilodeau our new Pastry Chef all play a huge role in the success at The Cardinal and Sedgefield. The club is fortunate to have this team in place, and I hope that the next chef will appreciate them and their many talents. My fondest memory of Sedgefield Country Club was back in 2016 when our “Culinary Crushers” team made it to the State Final Cooking Competition, we lost, but I think that is where we created the notion that Country Club food was back and we could branch out and share big flavors with our members! A new Executive Chef means that you will have new experiences, new flavors, new food, new creativity, and most importantly a new outlook on what food means to them. I’m jealous of what you are going to get to experience and envious of the changes that will occur after my departure. We’ve all gone through changes in our lifetimes, and with changes comes a wide range of emotions. I guess you could say our family is nervous, anxious, and excited, as well as loved and appreciated! For that, you will always be my Sedgefield Country Club Family! My family and I will soon be part of The Porters Neck Family and we expect there to be lots of changes for us, a new home, new members, new challenges, and new community involvement.

I'd like to provide a quick update on the search for the next Executive Chef at Sedgefield and then I will yield the rest of my space for JP to reminisce about some of the memories from his time in Greensboro. We received 50 resumes for the position with two coming from within McConnell Golf. The overwhelming majority of the applicants were quite good. That said, we evaluated every resume and began the interview process with the top six candidates. As of this writing the first round of interviews is complete and we have narrowed the field to the top four. The goal was to bring back the top 3, but the candidates were THAT strong. Once we complete the second round of interviews over the next two weeks, we will be in a position to bring back the top two and then make an offer to the finalist. It has been an exciting endeavor and while the next chef will have very big shoes to fill, Chef JP will remain involved in his role as Corporate Chef for McConnell Golf, ensuring success for our next chef at Sedgefield. Michael Flynn The Flynn boys retain the Boggis/Flynn trophy today at Sedgefield Country Club. The course was immaculate and the weather unseasonably warm for November. The Flynn’s jumped out early winning the first two holes. The Boggis boys mounted a furious rally but it was not to be, as the Flynn’s closed them out + 3 with two holes to play.

MEMBERSHIP WELCOME NEW MEMBERS Roddy & Lisa Akbari; daughters Mina (21) and McKenzie (16) Mr. Akbari founded a real estate investment company 15 years ago and after having 2 full-time jobs, decided to take early retirement from a 21year career as a college professor in Mathematics to focus on his business. Infinite Investments and Properties is a thriving and growing business and is doing very well! He plays lots of tennis and plans on playing a lot more at the Sedgefield tennis facility. He was also a professional volleyball player and coached volleyball at Campbell University, Winthrop University, and Guilford College. Lisa is a registered dental hygienist and is currently a dental hygiene clinical instructor at GTCC. She previously worked in private practice for 25 years. Lisa loves to run and spend family time with her family. Mina is a senior at UNC-Chapel Hill with a major in Biology and plans to attend a PA school after graduation. She has not yet decided as to which PA school. Mina played tennis for Ragsdale and was an all-conference player. McKenzie is a Junior at Ragsdale High school. She plays soccer and is too an all-conference player. She also played for Fusion soccer club for many years until 2020. The Akbaris have lived in Sedgefield for the past 5 years. They love to travel around the U.S and other countries and try to do so every opportunity they have. But their favorite getaway place is Charleston, SC. Please join us in welcoming the Akbaris to Sedgefield!

Nick Delgado Nick moved to Greensboro about a year and a half ago and works as a design consultant for Furnitureland South. His family lives in Colleton River in Bluffton, SC, but he moved here from Lexington, Kentucky where he attended the University of Kentucky. Outside of the club Nick enjoys going to the horse track and sporting events as well as fishing and traveling. He looks forward to meeting everyone and making new friendships. Please join us in welcoming Nick to Sedgefield Country Club! Shane & Taylor Hamlett While a new member of the club, Shane is no stranger to Sedgefield as his father Bruce is also a member. He has resided in Oak Ridge his entire life, outside of his time in Raleigh where he graduated from NC State University. Shane is a pilot while Taylor is a Realtor. When not playing golf at the club, they enjoy attending Carolina Hurricanes games, flying, and spending time at their home at Smith Mountain Lake. Please join us in welcoming the Hamletts to Sedgefield Country Club! Kyle & KJ Morgan; children Maggie (25), Ben(21), and Josh (17) As residents of Jamestown, the Morgans are very close to the club and know many other members. When not at the club, Kyle is a Senior Account Manager in the Audio/Video technology sector, while KJ is the National Sales Manager at Grandover Resort. MEMBERSHIP WELCOME NEW MEMBERS Aaron & Ashley Hughes; children Evan (13), Landon (11), Olivia (9) As the VP of Sales for Brady Trane, Aaron enjoys visiting with customers and checking on their HVAC, engineering, and construction projects. Ashley is a 5th-grade teacher at Shady Grove Elementary School and enjoys watching her students thrive. The family resides in Advance, NC. When not working, Aaron enjoys coaching football, volunteering for Habitat for Humanity, and traveling with his family. The Hughes family is looking forward to meeting other members, and Aaron is especially excited to meet those in the construction industry. Trey Swaim Although a new member, Trey is no stranger to Sedgefield, as he essentially grew up at the club with his parents, Don & Elizabeth Swaim, who have been members for almost 20 years! He knows most of the members already, being close friends with Kevin Herron Jr., Luke Heavner, and Brad McDonald. In fact, he even worked at the club on the golf course maintenance team under Keith Wood from 2012-2014! Although from Greensboro, Trey just moved back from living in Boston, MA for the past 5 years. A 2015 graduate of Elon University, he currently works in Software Sales for Buildium Property Management Software. He is an avid golfer and holds a membership at Crail Golfing Society in Crail, Scotland. When not golfing or working he enjoys travel, snowboarding, hunting & fishing. He is looking forward to growing his professional and personal networks and thinks Sedgefield is a great place to do so, and so do we! Welcome to the club, Trey!

Though many of us have a “love-hate” relationship with winter, there is quite a bit to enjoy about the season and everything it has to offer.

A quote that means more to me now than ever. 2020 started off just like any other year, but who knew the twist of events that would soon follow. It just goes to show that anything can happen at a moment’s notice and you have to take one day at a time. After all the trials and tribulations 2020 threw at us, I am confident we can make it through 2021 with ease. My hope is, as we transition into the New Year, restrictions will ease as we all do our best to stay safe and healthy. That being said, at this time, we are still able to host private events, birthday celebrations, bridal showers, and dinner clubs. With a few slight modifications and extra sanitizing, we can still create a memorable experience for your family, friends, and coworkers. Yes, masks are required and social distancing is in place but we can still celebrate life’s simple pleasures. If you have any reason to celebrate or simply need a night out with friends, don’t put your plans off any longer. Give us a call and reserve a dinner table for two or a private dining room for 50, we are here to assist with all of your food and beverage needs.

SUNDAY, JANUARY 31 2:00pm | $15++ per person Take the plunge! Come out and take part in the third annual companywide McConnell Golf Save the Polar Bear Plunge benefitting the World Wildlife Fund (WWF). Their mission is to conserve nature and reduce the most pressing threats to the diversity of life on Earth. For us, this jump will be a direct link to protecting the Arctic and the polar bear population by restoring the loss of sea ice habitat. On this day, all members will be jumping into the icy waters at their home club pool at the same time across three states. Make your club the leader in giving back by having the most participants and by raising the most money. After the jump, warm up with a bowl of chili and hot chocolate! Order a pint of chili to bring home with proceeds supporting WWF and the Polar Bear mission as well!

Several years ago, at one of our annual corporate meetings, an idea was brought to the table that we needed a Lagniappe of our own that would show our appreciation to members and their guests for dining with us. This idea quickly grew to a collaboration of our executive chefs, their staff members, and other club staff submitting cookie recipes to be used in our monthly rotation. These cookies would be a bite-size sweet treat for everyone who had lunch at one of our properties in the dining room. As McConnell Golf has grown we have been able to feature a club each month, in addition to recipes from our CEO John McConnell and COO Christian Anastasiadis, the Easter bunny, and Santa Claus. Beyond baking and serving these delicious treats in our clubs each month, we also share the recipe in our newsletter and online blog that includes a special story or meaning behind them. Our culinary teams have embraced this idea and continue to showcase their talents with these delectable sweet treats, from our kitchens to yours.

SUPERINTENDENT'S CORNER A NOTE FROM YOUR SEDGEFIELD SUPERINTENDENT I don’t think I have ever been so excited for a new year to start and we can all hopefully put 2020 behind us and look forward to a brighter future! Everything was not all doom and gloom in 2020 for our agronomic department. We were able to make quite a few improvements to your club last year. We continued to assess some drainage issues throughout the course and installed quite a few new french drain systems and catch basins that really made a difference. This really helped #5 fairway on the right side in the landing zone and also #14 fairway. We went through and resurfaced all our walk bridges throughout the course making them much safer and stable to walk on and also resurfaced the cart bridge on #17 that had several rotten boards. The new native areas on holes #1,#2, #3, #6, #8 we added have matured and started to look better. These areas will look much better as we get into early summer, as these plants will be mature enough to produce the tall seed stalk that makes our native areas look beautiful and rustic. Next, we purchased some land behind the #14 tee and cleared it out to install a new tee box on the new lot, and it turned out great. The new tee box allows for the hole to now play between 505-530 yards long. It was great to see the PGA Tour players this year hitting long irons and even hybrids into the green instead of the usual 9 or 8 iron. I saved the best for last which is the addition of our new short game facility that was funded by Mark Brazil and the folks at Wyndham. This project had lots of hurdles we had to jump over to get it completed in such a short time frame but it all came together and we were able to open the new facility for the week of the Wyndham Championship. The transformation of that area has been completely amazing and has gotten reviews from the Tour players and also from our membership. It’s great to ride by in the afternoons and see people there working on their different shots to help improve their short game. As we move into 2021 we plan on installing some additional drainage on the right side of #5 in the rough where there are 2 different natural springs that have newly surfaced this year causing some issues that we hope to resolve. There are some other small wet spots that we will address as well throughout the course this winter. We also plan on starting a project this winter to limb up some of our trees around the course that has unsightly sucker growth or low hanging limbs on them. This will not only help the health of the trees but also help with the turf growth. There are a couple of bunkers that we are going to address as they have become contaminated with stones and the bunker on #8 that drainage has been compromised and is not functioning properly. It will take several days to complete each bunker from start to finish, so please play these as Ground Under Repair until we are completed with our work. Lastly, we hope to start raising the sprinkler heads around the greens and making them level with the turf again. We did this 5 years ago but with the aggressive topdressing program we are on with the greens, these areas have risen to the point where we need to perform this task again.

A NOTE FROM YOUR CARDINAL SUPERINTENDENT As we are now in the heart of winter, I am sure most of you are ready to see some warmer weather, no frost delays, and green grass. Spring is coming, but we still have a few months of winter golf ahead which means we ask you to please remain mindful of a few key things. Please obey the cart rules daily and follow all traffic control signs and stakes on the golf course. All carts should be on the cart path around the tees and greens. This is one of the most important things that you can do to help minimize damage and prevent winter kill. Also, please be patient with us and the pro shop staff on any delays to your starting time. Frost delays are a part of winter golf in North Carolina and are only done to protect the greens from any damage. Hopefully, you have been able to come out and see the headway the agronomy team has been making on tree removals around the course. While we are mostly focused on removing the dead trees on the course we are also trying to clear some areas around greens to help with sunlight and airflow. This is being done not only to improve the growing environment in the summer months but also to help melt frost in the winter. There is lots of tree work to be done here at The Cardinal, and it is more than we can do in one winter. We have prioritized this work and we are starting with the areas we feel are most important. Once we get closer to spring we will be working on several drainage projects around the course. The reason for waiting is because these areas will need to be sodded, and waiting until we are closer to warmer weather is best for the sod. I hope that you are able to find some warm days to come out and enjoy playing some golf. Happy New Year and I will see you on the course. The next Greens Aerification will be March 1st and 2nd. TEE IT UP AT SEDGEFIELD A NOTE FROM YOUR HEAD GOLF PROFESSIONAL What a year it has been! More rounds of golf were played this year than any year since 1997. Tournament participation also hit an all-time high! Suffice it to say…more people played more golf than they have in the last 20+ years. So…what now? It’s time to get ready for 2021. As I have mentioned in almost every January and February newsletter article, it’s now that we develop a structured plan on what we are trying to accomplish. While many of us talk about losing weight, getting organized, or working on our golf games, it’s time to get serious. So where do we start? First things first, you need PROFESSIONAL instruction. Not from your friends or some guy at the range (Sorry Wayne!). If I’m getting sued I want the best attorney to represent me but I’m not going to take swing advice from him (Sorry Drew!). If you truly want to get MORE enjoyment out of the game, make an appointment with Eric, Josh, Craig, Chris, Logan, Jeremy, or myself to assess your strengths and weaknesses and then begin formulating a plan to have the best year of golf you have ever had. Sedgefield Country Club's Director of Golf, Rocky Brooks, was named the Carolinas PGA Golf Professional of the Year. We are extremely fortunate to have him as a part of the Sedgefield Team. Rocky has been with Sedgefield for 18 years where has spent the last years molding Sedgefield Golf into what it is today. He has been a member of the Carolinas Golf Professional Association for nearly 30 years. "He has dedicated himself as a professional through service on the Section Board for 10 of the last 14 years, development of community outreach programs such as The First Tee of the Triad, and maintained close collaboration with the PGA TOUR in hosting the Wyndham Championship. He strives to inspire his fellow professionals in his service as a CPGA Board Member. Rocky hopes every young professional he has come in contact with has gained some knowledge from him as well as some respect for the association they represent. TEE IT UP AT THE CARDINAL A NOTE FROM YOUR HEAD GOLF PROFESSIONAL

CARDINAL INVITATIONAL SHOOTOUT

Are you ready to swing? With the upcoming golf season just around the corner, it would be a good time to get yourself ready. Our season opener will be April, 3. Here are a few key questions to be ready when the weather breaks and golf is again in full swing: 1. Are my grips worn out? If the grips on your clubs have been on for more than 1 year, it is time to change them. New grips can make all the difference in the world. Remember, the grip is the only piece of the club you are actually touching during the swing. Grips that are slick could cause your grip pressure to increase. Grips that are too small or too large cause your hands to work inefficiently during the swing. A good rule of thumb is, when you think it is time to regrip your clubs, it’s already too late. Plus new grips just make your old clubs feel like new again! 2. Do I have the correct wedges? In my opinion, a player’s short game is more important than their long game. Think about how your score adds up after each hole. As you get closer to the hole your number of strokes tends to increase. Ask yourself 3 simple questions: a. Are the lofts on my wedges appropriate for my game? b. Do I have the correct bounce for my style of play? Do I play bunkers with fluffy sand or is it hard and compacted? Tight lies around the green or plenty of grass? c. Has my wedge or wedges been in my bag for more than 100 rounds? Why does my ball seem to always run out when it hits the green? Grooves do wear out!

3. Have the lie angles checked on your clubs. Over time lie angles do change. Just a slight adjustment in lie angle can make the ball move more left or right in the air. An easy way to check this is by “painting” the sole of your club with a sharpie. Hit a few balls off a lie board and notice where the “paint” has been removed from the sole. If it is closer to the tie, clubs need to be more upright or closer to the heel, flatter. Relatively close to the center of the sole, leave it as is. 4. How are my shoes? Whether you prefer shoes with spikes or without, take a look at the sole. Do they still provide the same grip to the ground as they did back when I bought them? I’ll use the same analogy I used with the grip, your shoes are the only piece touching the ground. You need a pair that will provide you with a solid base and great traction. You should also have more than 1 pair of shoes, and rotate wearing them. One pair with spikes for wet conditions and another pair, without spikes, for drier conditions. Having two pairs will ensure you have a dry pair ready for your next round. It is never a good thing to put on shoes still wet from the day before. These are just a few of my recommendations to get you ready for the upcoming golf season. Hopefully, Santa had enough foresight to have already helped you with a couple of these. If we missed anything, please do not hesitate to ask a member of the golf professional team at Sedgefield or The Cardinal for help. If you would have told me 3 years ago that I would be competing in a Pickle-ball tournament I would have laughed in your face. But now, it is one of the fastest-growing sports in America. It is a friendly game for everyone, whether you have a sports background or not. It is a game where an 18-year-old can play with a 65-year-old and still have fun. Once you play, you will be hooked! It was a cool fall day at Pinehurst where I and my high school doubles partner entered into our very first Pickle-Ball tournament. As former college athletes, we had overly optimistic expectations of how great we would be. Over-confident, we signed up for the best division where there were nationally ranked caliber teams. At first, we had trouble figuring out how high the ball would bounce since it was less bouncy than a tennis ball or ping pong ball. We found our stride in the later rounds and put together a couple of wins. Women beat us, 65-year-old men beat us, and little kids beat us. When I say anybody can play this sport I mean it! Even though my partner and I didn’t even get close to winning it was a great experience. We learned a lot and made friends. We are already looking for the next tournament to enter. COOKIES OF THE MONTH

JANUARY: COCOA-MOLASSES DROP COOKIES By Bruce McIntosh, Chef at the Country Club of Asheville

From 1985-2015, H. Robert Sharbaugh was a member of the Country Club of Asheville and had served time as a member of the board for a number of years. He was very well-known and admired by club members and staff alike. He meant a great deal to me, especially during my earlier years at the club. One memory of him that stands out to me, in particular, was the year that, this self-proclaimed chocoholic, gifted me a very old, yet pristine Hershey’s cookbook from 1934 that had been revised and reprinted in 1971. I think of him fondly every time I open the binding to see his name on the inside cover. Thank you for your service to our country and the many laughs throughout the years. This one is for you Mr. Sharbaugh! Yield: Approximately 2-3 Dozen Cookies Ingredients: 1/3 Cup Unsalted Butter, room temperature 1/3 Cup Granulated Sugar 1/3 Cup Molasses 1 Egg 1 cup All-Purpose Flour, sifted 1 TSP Baking Powder 3 TBSP Hershey’s Cocoa Powder or whatever you have on hand 1/2 Cup Chopped Nuts Directions: Cream butter and sugar; add molasses and the egg. Sift together all dry ingredients and add to wet ingredients. Fold in the nuts and scoop mixture into 1-inch rounds onto a greased and lined sheet pan. Bake at 375°F for 8 to 10 minutes.

FEBRUARY: CHOCOLATE DIPPED COCONUT MACAROON COOKIES By John Crawford, Chef at Providence Country Club

This has been one of my favorite cookie recipes for as long as I can remember. As a kid, my grandmother would make these for us when we would come and visit. While all of the others would devour the chocolate chip cookies, I had these all to myself. If you like coconut and chocolate, this recipe is for you! With the toasted outside, creamy inside, and smooth chocolate to tie it all together, it cannot get much better. Ingredients: 16oz. Sweetened Flaked Coconut 1 cup Sweetened Condensed Milk 1 TSP Vanilla Extract Pinch of Salt 6oz. Semisweet Chocolate Chips 2 Large Egg Whites Directions: Start by mixing the coconut, sweetened condensed milk, vanilla and salt thoroughly in a mixing bowl. Next, separate the egg whites from the yolk and beat the egg whites until they form a stiff peak. Gently fold the egg whites into the coconut mixture. Using a small scoop, scoop the mixture onto a parchment-lined sheet pan spacing each about two inches apart. Place the macaroons in a 325°F preheated oven for 25 minutes, rotating as needed to prevent burning. While macaroons are baking in the oven, melt the chocolate in a double boiler or microwave, stirring frequently. When cookies have cooled completely, dip the bottoms in the melted chocolate and place them on a clean sheet of parchment paper. Enjoy!
